Sometimes I think that the foreign press are jealous of our enviable position. No hay duda, el verano definitivamente está aquí en España. Creo que la Costa del Sol es probablemente el mejor lugar para pasar el verano. El espléndido sol y la proximidad al Mediterráneo crean la combinación perfecta para un entorno saludable y de lo más agradable. Combine esto con la increíble cantidad de bares y restaurantes de diferentes nacionalidades, uno también puede relajarse sabiendo que es un lugar muy seguro para estar, lejos de las guerras y los problemas que afligen a tantos otros lugares. A veces pienso que la prensa extranjera está celosa de nuestra envidiable posición.

VEGAN PANNACOTTA By Chef Gabriela Giumba of Pura Vita Sotogrande PANNACOTTA INGREDIENTS
* 5 grs Agar Agar * 15 grs Cornstarch * 250 ml Coconut milk * 50 gr Caster Sugar * 5 gr Vanilla Bean * 200 gr coconut cream
COULIS INGREDIENTS
* 250 grs Strawberries/Blackberries * 30 grs caster sugar * 15 ml Lime juice * 15 grs Corn-starch * 55 ml water
Instructions METHOD PANNACOTTA
Add the corn starch to a bowl with the agar agar, add a 5 tbls of soya/coconut milk. Stir until combined. Add the remaining milk and caster sugar to a medium size saucepan and bring to a simmer. Add the corn starch slurry and cook for a further 3-4 minutes, whisking constantly until the agar is dissolved and the mixture has thickened slightly. METHOD COULIS
Add the selected berries to a blander along with the rest of the ingredients. Blend until smooth. Pour into a saucepan and simmer for 4-5 minutes until slightly reduced and thickened. 28

REVEALED THE BIG PUZZLE ABOUT DINOSAURS In the first instalment of Jurassic Park there was a scene that was highly criticised by scientists when a dinosaur opened its big mouth in front of a mirror and its terrifying breath was shown in the glass, something that is impossible in a cold-blooded animal. Now we could say that that scene was not a mistake. The indisputable first great enigma of the dinosaurs is their extinction. Even today articles continue to be published trying to give an answer to the reason why they disappeared forever. The last hypothesis is that they were already "mortally wounded" as a species before the meteorite and affected by climate change that has already been verified. But what now seems to have an answer is for the second great enigma of the dinos: were they warm blooded? REPTILES OR BIRDS The blood of modern reptiles is cold, but the blood of modern birds is warm, like that of mammals, like ours. So where do dinosaurs fit in? A new study of the thigh bones of Plesiosaurus, Stegosaurus, Diplodocus, and Allosaurus compared to those of modern hummingbirds posits that the extinct animals were warm-blooded.

OPINION Thus, fearsome predators like T. rex and towering telescopic-necked dinosaurs like Brachiosaurus were warm-blooded creatures in the same way that birds and mammals are, according to a ground-breaking new study published in the scientific journal Nature. By imaging the bones with infrared spectroscopy, the scientists found a large number of molecules produced as waste during oxygen inhalation, they report in Nature. The molecules are a sure sign of a high-powered metabolism that warm-blooded animals use to keep their body temperatures constant, they say. If they had warm blood they could survive the meteorite Previous hypotheses suggested that dinosaurs could not survive the consequences of the asteroid that hit Earth 66 million years ago due to their low metabolism; the new study supports this premise, say the authors. “This is really exciting for us as palaeontologists – the question of whether dinosaurs were warm-blooded or cold-blooded is one of the oldest questions in palaeontology, and we now think we have a consensus that most dinosaurs were warm-blooded. That’s hot!,” explains study lead author Jasmina Wiemann, a postdoctoral researcher at the California Institute of Technology, in a press release. THEY WERE MORE LIKE BIRDS THAN REPTILES Previous generations of palaeontologists had lumped dinosaurs with reptiles, leading to assumptions of a reptilian appearance and lifestyle. Today, most palaeontologists agree that dinosaurs were much more bird-like after the discovery in the 1990s of feathered fossils, which led to the understanding that modern birds are directly descended from dinosaurs. It has been proposed that having a high metabolic rate is one of the reasons birds survived the mass extinction that wiped out the dinosaurs 66 million years ago. However, Wiemann said this study indicated that this was not true: many dinosaurs with exceptional bird-like metabolic capabilities went extinct.

Dr. Vicente Albendiz, Allergology Specialist at HC Marbella Hospital, answers all your hay fever questions. 36

CAN YOU TELL WHEN IT’S HAY FEVER?
HEALTH
What is hay fever? When spring arrives, a large number of trees and plants begin to bloom and start to produce pollen. Pollen is made up of tiny particles that float in the air which we inhale constantly during the spring months. For most people this is not a problem, but for some their immune system overreacts when they come into contact with these allergens, causing known and uncomfortable allergy symptoms. How do we know if it's an allergy or a cold? Allergy symptoms begin with an itchy nose, itchy eyes, continuous sneezing and nasal congestion (rhinitis), in more advanced cases shortness of breath, wheezing or a dry cough may develop. Often these symptoms can be confused with other common conditions such as a simple cold, however, unlike a cold allergies do not cause a fever. Dr Albendiz recommends that as soon as the first symptoms start to appear, you should ideally visit an Allergology Specialist for diagnostic testing to confirm whether you are suffering from an allergy and if so which allergens are causing the symptoms. ALLERGY TESTS Many people are concerned that these diagnostic tests are very complex, with the Allergologist testing different allergens until the one responsible for the reaction is found. Dr. Albendiz explains that this method has now been simplified considerably, as allergens in each region do not vary greatly and do not change much. There are prepared standardised groups of tests to try to find the allergy, these groups of tests contain around 90% of the allergens common to the area. When the patient comes for a consultation, they undergo a full examination followed by a test known as a prick test. Prick tests involve introducing a minimum amount of allergen into the outer layer of the skin. After about 15 minutes there is a small reaction that manifests as the appearance of a small lump or redness indicating whether this substance causes an allergic reaction, if nothing appears then the particulars allergen is not the cause. Once the allergens producing uncomfortable symptoms have been determined, the specialist will recommend measures to alleviate them. Although most symptoms are not severe, they can significantly affect the patient's quality of life. Make an appointment to see your specialist to put an end to your allergies and enjoy the spring time.

Carlos le contestó, no bastante sorprendido, que sí. Y me apostillaba entre bromas: " Este tío empieza a comerme terreno en Estados Unidos y a quitarme admiradores. Habrá que hacer algo”.
