Environment Canada and Health Canada have identified many hazardous chemical substances in wood smoke, including:
PM2.5, which consists of a mixture of microscopic particles of varied size and composition, has been declared a toxic substance under the Environmental Protection Act
Carbon Monoxide (CO) - can reduce the blood's ability to supply necessary oxygen to the body's tissues, which can cause stress to the heart.
Oxides of Nitrogen (NOx) - can lower the resistance to lung infections
Hydrocarbons (HC) - can damage the lungs.
Volatile organic compounds (VOCs) - can cause respiratory irritation and illness.
Formaldehyde - can cause coughing, headaches and eye irritation and act as a trigger for people with asthma
Polycyclic aromatic hydrocarbons (PAHs) - Prolonged exposure to PAH's is believed to pose a cancer risk.

Never burn garbage, plastics, cardboard or Styrofoam. Burning garbage releases poisons.

METHOD

INGREDIENTS (serves 4)
1 kg mussels
2 shallots
2 cloves garlic
1 fennel
15 g of butter
½ bunch thyme
1 bunch parsley
1 cup apple cider
1 beer
2½ dl double cream
salt and freshly ground pepper
1. Peel and chop the onions, garlic and fennel roughly, and put them in a pot with a little butter.

Clean the mussels by scrubbing them thoroughly under cold water and remove the beard. Discard any mussels away that does not close by a light bank against the table top and those whose shells are broken.
Sauté the vegetables slightly, add the mussels and stir well.
Add the spices, apple cider and beer to the mussels, cover and steam the mussels for 4-5 min. until they have opened up. Discard mussels that have not opened.
5. Serve mussels with the hot broth and sprinkle fresh chopped parsley on top.
Sift the stock into another saucepan and boil it up with cream – reduce to taste. Keep meanwhile mussels aside in the pan with the lid on.
6. Serve eventually with butter fried breads.

Puerto Sotogrande begins spring with many activities

The Sotogrande Port is one of the most attractive tourist spots in the entire Costa del Sol and Campo de Gibraltar area. With its 1,382 moorings, it is a meeting point of seas, combining everything from sports to gastronomy and shopping. Located at a crossroads of cultures on the Costa del Sol and bathed by the Mediterranean Sea, this port majestically greets the Strait of Gibraltar and the Atlantic Ocean every morning. And with the arrival of spring, its activities have kicked off at full throttle.
At Bunker Beach, the Andalusian Beach Polo Championship was held with four teams, featuring players of recognized calibre from Spain, Argentina, and the United Kingdom. Despite the adverse weather conditions, the large audience present enjoyed the first time such an event was held in Sotogrande. Art, dance, and music were not lacking during the two days of the tournament

However they did not just open without first expressing their commitment to please, therefore just before the official opening, they extended an invitation to sample their food, which we accepted.
Upon arrival, we were greeted by a grand table adorned with a modest selection of dishes. Yet, as more guests streamed in, the table burgeoned with a diverse array of culinary delights. Tarifa, la ciudad de la luz y del viento, es el punto más meridional de la península Ibérica, último bastión de España o el primero, según se mire.
Es fundada en el año 711, el mismo año de la batalla del Guadalete, en el que don Rodrigo, el último rey visigodo es vencido por los árabes, que comienzan a construir lo que llamaríamos Al-Andalus, siendo Tarifa la primera ciudad erigida por los invasores.
Durante la Reconquista, Tarifa fue una plaza vital, muy codiciada tanto por los cristianos como por los moros, y en ella se vivieron grandes hazañas como la protagonizada por Alonso Pérez de Guzmán, Guzmán el bueno, que, no dudó en defenderla, a pesar de pagar un precio muy alto: la vida de un hijo, capturado por los moros, arrojándole él mismo desde lo alto del castillo el cuchillo con el que le arrebataron la vida.
Hoy Tarifa es la ciudad del viento, la capital mundial del Windsurf y, sobre todo, del Kitesurf, modalidad, en la que la extraordinaria deportista Gisela Pulido, tarifeña de adopción, ha sido campeona del mundo la friolera de diez veces. Tarifa posee un marco natural incomparable, siendo un privilegiado mirador del Estrecho, la precisa y preciosa confluencia de dos mares, el Mediterráneo y el océano Atlántico, y una joya, incrustada en pleno corazón del Parque de los Alcornocales y del Parque Natural del Estrecho.
