The highlight of the night is the burning of a yearly artistic creation on the beach, followed by a spectacular fireworks display that lights up the sky.

Welcoming the Summer Solstice
The revelry continues well into the night with singing and dancing, creating an atmosphere of joy and community. Various customs and rituals add to the enchantment of the celebration. One such tradition holds that the waters of fountains and streams are imbued with special healing and protective powers when touched by the first light of dawn on June 24. Bathing in the dew of that night is believed to offer protection for the entire year.
Another intriguing ritual involves facing the sea with one's back to it while gazing at the moon, a practice said to bring good luck and certain prodigious abilities throughout the year. People also throw objects that evoke bad memories into the fire or burn letters listing their fears and the names of those they wish to distance themselves from.
A Night of Renewal and Tradition
In addition to making wishes, participants write down their negative experiences or bad memories on pieces of paper to be burned in the bonfire. This symbolic act of burning the past signifies a fresh start, free from the burdens of the previous year. The beachfront along the Paseo Marítimo becomes a vibrant scene, with bars and restaurants fully booked, offering prime views of the festivities.
The night of San Juan, celebrated from June 23 to 24, is more than just a feast; it marks the arrival of the summer solstice. This is a time when many coastal towns come alive with bonfires and sea bathing. Sabinillas beach, located in the picturesque town of Manilva, is a focal point for these celebrations. Here, the traditional burning of "juas" takes place, illuminating the shortest night of the year. At the stroke of midnight, people gather at the shore to dip their feet, hands, and faces in the sea while making three wishes, embracing the mystical essence of the night.

Slow-Roasted Salmon with Walnut-Olive Vinaigrette
METHOD
Preheat oven to 325°F with rack in middle position Whisk together 1/2 cup oil and paprika in a small bowl. Set aside 1 tablespoon oil mixture; stir lemon zest and juice into remaining oil mixture in small bowl Place salmon in a large baking dish; sprinkle both sides with 21/2 teaspoons salt and 1/2 teaspoon pepper. Pour lemon-paprika mixture over salmon. 1
Bake in preheated oven until thickest part of salmon flakes easily with a fork, 30 to 35 minutes, spooning lemon-paprika mixture in baking dish over salmon every 10 minutes. Remove from oven; let rest 5 minutes 2

2 ¾ teaspoons salt, divided

½ cup finely chopped fresh parsley
¼ cup walnuts, toasted and finely chopped
¼ cup Champagne vinegar or white wine vinegar
¼ cup pitted black olives, chopped (about 1/3 cup)

Scientists have identified the optimal number of daily steps needed to counteract a sedentary lifestyle, and it’s different from what your fitness tracker might suggest.
You’ve likely heard that adults should aim for 10,000 steps a day This recommendation is straightforward, but it doesn’t consider the diverse lifestyles and body types of individuals. Interestingly, the 10,000-step goal originated not from scientific evidence but from a 1960s marketing campaign in Japan Prior to the 1964 Tokyo Olympics, a Japanese company introduced a pedometer called "Manpo-kei," which means "10,000 step counter," because the character for 10,000 resembles a person walking
Now, an international research team has found that even those with very sedentary lifestyles can protect themselves from the negative effects of prolonged sitting by increasing their daily steps But how many steps are needed? The number is surprisingly close to the Japanese recommendation.

The study revealed that more steps per day reduced the risk of CVD and premature death, regardless of other sedentary behaviours This is encouraging news for office workers, though researchers stress the importance of reducing overall sedentary time.
Matthew Ahmadi, a population health scientist at the University of Sydney, sends an important public health message: all movement counts, and people should increase their daily steps to combat the health effects of unavoidable sedentary periods.
Sedentary lifestyles are increasingly common and are associated with higher risks of cardiovascular disease (CVD), cancer, diabetes, and shorter life expectancy These risks are lower in individuals who take more steps and walk at a brisker pace However, until recently, it was unclear if very sedentary individuals could mitigate these health risks with daily steps alone.

Ahmadi and his colleagues analysed data from 72,174 participants in the UK Biobank, a comprehensive long-term health study initiated in 2006. Each participant provided an average of 6.9 years of health data and wore wrist accelerometers for seven days to measure physical activity, including step count and sedentary time.

The bet daily is optimal for countering a sedentary lifestyle, reducing CVD risk by 21% and mortality by 39% Interestingly, half of the health benefits were achieved with just 4,000 to 4,500 steps per day.
