editor With summer round the corner, expectations of a good summer trade are running high. I know the weather has not been kind so far, but one thing is certain summer is coming and it will be hot. This is as predictable as”tomorrow is another day”. This reminds of the story about the ant and the cicada, so let’s work our hardest in summer to be able to benefit from it in winter. On a different note it was a pleasant surprise to be recognised by the Mayor of Manilva as a foreign resident who has integrated into the way of life and worked 15 years to build this business from within the district. Let’s look forward to the start of summer in June.

Con el verano a la vuelta de la esquina, las expectativas por un buen trabajo vernal son muy altas. Ya sabemos que el tiempo no ha sido muy amable hasta ahora, pero una cosa es cierta el verano se acerca y será caliente. Esto es tan predecible como “mañana será otro día”. Esto me recuerda la historia de la hormiga y la cigada, así que debemos trabajar lo más duro posible en verano para poder beneficiarse en invierno. Por otro lado fue una agradable sorpresa el ser reconocido por la Alcaldeisa de Manilva como residente extranjero que se ha integrado en el pueblo y trabajando por 15 años para crear esta empresa desde dentro del distrito. Dressage Competition The bar and restaurant “El Abrevadero� was finally reopened to coincide with the Copa ANCCE and Doma Classica championship that took event during the week-end 19th to 21st April. It certainly was nice to see the restaurant back in business with loads of people attending.

Where would you find 7,000 m2 of riding arena computer controlled for sand moisture? And a covered arena for good measure with 1200 seats? It is of little wonder it has been chosen for some of the competitions that take place in Spain. Of course there are more competitions yet to come, some will be friendly, others regional and higher levels which includes an exciting national jump competition in July. We are hoping to announce these in due time as and when we are informed. It makes a fantastic week-end to relax within this luxurious oasis while watching the competitors riding some magnificent horses.

I have been involved in business for many, many years and it never fails to surprise me how thick some business owners and managers can be. Where on earth do they get this God theory where they know everything and their staff know nothing. I have met with many employees in various businesses recently just to find out how they interact with their bosses. It is quite amazing to me just how many bosses are bullies by being intrusive, controlling and picky. Bosses who take credit for all the hard work that the staff may have accomplished and who never provide any positive feedback. This type of employer makes for a bad Boss, bad to the core! This in turn is really bad for the business as a whole. Staff cheerfulness is paramount to a stable operation. Bosses need to be hands on and to take a real interest in all their staff as well as the day to day running of the business. I can give you an example of this as a few days ago I was enjoying a coffee and a snack in a local restaurant and mentioned to the waitress, who was charming and helpful, that they seemed to be really busy on that day. She replied that they had been double-booked with a party and it was 10

all hands needed to complete the work. I asked where the Restaurant Manager was and she told me that he had decided to take the day off to play a round of golf! Any employer in his right mind would realise that by doing this and not being there to help out will definitely spread discontent amongst members of staff.
No business can support dead weight It is obvious to me that in this instance the boss lacks training and is so overwhelmed with his job requirements that he can’t provide support for his employees. Perhaps he has been promoted too quickly or his reporting responsibilities have expanded beyond his reach. Being an Owner/Manager means, in many cases, working at the business. Many people open a Restaurant thinking they will pay a Manager to run the front of the house and a Chef to run the back of the house, while they sit at the bar with their friends and count the money. Wrong! Restaurants can’t support dead weight for very long. Some other points I would like to mention here; if you are operating your business as General Manager and have appointed department Managers whether it be a Head Chef, Senior waiting staff or Office Manager, then for goodness sake let them do the job they have been given. Work with them, let them do the job they have been trained for and are experienced in and let them grow, then the business will grow with them. Bosses who use demeaning behaviour tend to forget that staff require civil, professional treatment at work. Help them advance their career and you will find that your business will benefit and that your Staff will stay with you and be keen to help you expand.

People who are made to feel badly about themselves perform as they feel—badly. They will tend to treat the Customers poorly and have little care about the company or the job. Take time to develop your team and you will create true loyalty and the chance for your business to thrive.
Finally Any business is only as good as its employees. Of course hiring the best staff is important, but so is looking after their interests once they’re part of your team. Always remember whether you are an Owner or a department Manager, once you’ve hired your staff you have a duty of care to them.
Pay wages on time Remember also that there are one or two extremely important things necessary for a contented organisation. Always pay wages on time. People rely on their wages to fulfil their own commitments and you have no right to damage their financial structure. COCOMO As far as good English restaurants go, you must definitely go to Cocomo. It is really, really good and certainly very price conscious. Many make it their regular restaurant at least once a week, if not more often. (Definitely book a table first).
Peggotty’s on the other hand provide what we believe is the best traditional Fish & Chips on the Costa del Sol. They claim their method of preparing the fish and the chips is unique to the Costa and their portions are so large you may want to order a small one before you start.
If you fancy a Chinese meal, The Slow Boat to China at the Puerto de la Duquesa can be recommended without hesitation. They have been there many years and they do their utmost to please their patrons.
If your taste buds move you on to Italy, there are two good restaurants that can me recommended. Pavarotti, at the Paseo Maritimo in Sabinillas and Parapiro, at the Puerto de la Duquesa. Excellent food and good value. Moving on to Spanish cuisine, we certainly have fallen in love with El Molino in Sabinillas. It’s like walking into a wine cellar. Here you will get a good selection of tapas or larger portions all prepared in traditional Andalucian style however some of the dishes are out of the everyday “ordinary”. I liked the fact that one can choose the more private tables enclosed in alcoves. Considering the cozy setting and the food the prices are quite reasonable. www.webexpressguide.com

LÍNEA DIRECTA REPORTS ON NEW LEGISLATION FOR PAYING FINES On March 4th this year, new legislation governing the payment of fines for traffic offences was introduced in Spain. According to the new law, drafted and passed by the Spanish Directorate-General of Traffic (Dirección General de Tráfico) and the Ministry of the Interior, the payment of traffic fines in cash will no longer be accepted, and only payment by debit or credit card will be allowed. The authorities have cited security and economic efficiency as the reasons behind their decision due to the fact that once this new measure has been introduced, the risks and expenses involved with transporting money, will no longer exist. According to the DGT, the measure will only apply to the payment of fines. All the other administrative operations carried out at Provincial Traffic Headquarters, such as processing or renewing a driving licence, can still be paid for in cash. In order to make the payment, drivers must access
the DGT webpage, www.dgt.es, or call the number 060. Although Provincial Headquarters will no longer accept payments in cash, drivers can still pay their fines in cash at any post office or Banco Santander branch. In this case, drivers will still be required to provide and attach the fine reference number.

Andalucia’s Liquid Gold It is known as liquid gold and is a staple of Spanish food. Apart from the taste, part of the attraction of olive oil is due to the supposed health benefits, which have been the subject of several studies carried out at Spanish Universities. It is thought that there is a direct correlation between high life expectancy in countries like Spain, Greece and Italy, and the large quantity of olive oil that people consume here. It is believed that there is strong evidence that people who have a healthy amount of olive oil in their diet are less likely to have heart attacks, or to suffer from some forms of cancer. However, to get the best health benefits, olive oil connoisseurs will tell you that the 16

oil has to be “extra virgin”, which comes from the best quality olives, and accounts for roughly 20% of the oil produced in Spain each year. It is thought to cure illnesses and rejuvenates your skin giving you a pleasant complexion. What do the Spanish have for breakfast? Olive Oil spread on bread! They also use olive oil rather than butter in their bocadillos. You will also see them dipping bread in olive oil while waiting for their meal to be served in a restaurant.

Spain is the world’s biggest olive oil producer Spain is by far the biggest producer of olive oil in the world, accounting last year for around 50% of the total production worldwide. Wherever you drive in Andalucia, there are olive fields, stretching as far as the eye can see as the province accounts for around half of Spain’s total production. Spain normally produces between 40 and 60% of the world’s olive oil, even so, there might not be enough this year to meet demand worldwide. The demand for olive oil worldwide is growing, especially in fast-growing economies such as Brazil, India and China.
Harvesting Olives are harvested from trees. There may be several different harvests throughout the year. The time of the harvest definitely affects the flavour. The earlier the harvest, the greener, stronger and more bitter the flavour of the oil will be. The later the harvest, the more mild and buttery the oil will be. Once the olives arrive at the mill, they are crushed with their pits. This makes a thick paste called mash. This mash is then either pressed or centrifuged to separate the oil. If pressed, the oil is allowed to stand until the oil floats to the top, thus separating it from any impurities. If centrifuged, it is centrifuged for a second time to eliminate the impurities. Once free of impurities, the oil is aged from 3 to 6 months. The natural bitterness is reduced through this “ageing” process.
Harvest Time Affects the Oil Green olives that are mature and harvested in the early fall makes an oil that is green and has a sharp flavor. Some use
adjectives like “grassy,” “peppery” or “woody.” Fruit that is harvested from early winter to early spring is riper and has a purplish or blackish color. The oil produced from this later harvest is generally golden in color, with a fruitier and smoother taste.
Confusing or Unnecessary Information you may see on Virgin Olive Oil Labels: • First Cold Pressing – This is unnecessary
information. When olives are pressed, no heat is used. No heat would be used in producing virgin oil. The only time heat is used is for “refined” oil.
• Cholesterol Level – Olive oil IS healthy oil,
olives are a fruit and no fruits or vegetables have cholesterol, anyway!
• All Natural, Unrefined, No Preservatives – Of course, there are no preservatives and it is all natural, if the oil is virgin olive oil.
• No Heat or Chemicals Used – Again,
unnecessary information if the oil is virgin.
If you stick with Extra Virgin Spanish Olive Oil, you really cannot go wrong. Of course the colour and flavour of the oil may vary from brand to brand. So, try buying several different brands of Spanish olive oil and use them on salads, in recipes and for frying to see which you prefer.
Olive oil festival celebrates harvest in Andalucía This is definitely one for the diary because in November, there is a three-day festival celebrating the end of the harvest in Baena, Codoba which is one of only two places in Andalucia to have ‘Denominación de Origen’ (Denomination of Origin) recognition. As a matter of interest the oil from this area is considered as some of the best in the world. It makes a great family day out as there are food and wine markets held in the town, along with cookery classes, tastings and live music. And for true olive oil aficionados, Baena also has the Museo del Olivar y el Aceite, in an old mill, where two floors explore the onethousand year history of the olive oil tradition.

Pavarotti is indeed a genuine Italian restaurant in Sabinillas There is no question that Pavarotti is a very good Italian restaurant, despite what Tripadvisor might say. I am not talking of some cheap spaghetti Bolognese or roughly made lasagne that anyone can do, I mean an excellent Italian cuisine, reflecting the true taste of Italy. I would rate Pavarotti as one of the very best restaurants in the area, Enzo, the owner and chef is very proud of his cuisine and he called me following our article on Tripadvisor last month. I could not believe some of the comments which seem to be made by the same person in as many languages as possible. I know the restaurant, I have eaten there many times and found the food exceedingly good, the service very attentive and courteous with prices quite reasonable for the quality. I do not
find it difficult to agree with Enzo in saying that the comments are a complete fabrication probably placed there by a competitor or a malicious person. What I found most annoying and frustrating is that on searching the internet, the comments in different languages covered the whole first and second page of the search, knowing thet searchers very rarelky go past the firt few entries of the first page. Don’t take my word for it, I suggest you pay Pavarotti a visit and find out for yourself. I did suggest that a complaint should be made to Tripadvisor as well as the Internet. Meanwhile I am pleased to pass on the information that shortly Enzo is introducing live music “Pavarotti” style. I am looking forward to it.

manually, are taken to the cellar in an ideal state of maturity. The grapes go into a crusher de-stemmer and are the pressed in a pneumatic press. The must is kept in stainless steel vats for one day to settle. After that, the clear part of must is separated for fermentation and the heavy lees are filtered with a vacuum filter. After fermentation, the wine is racked in order to separate from the yeast lees. It is kept in the vat for one week and then filtered. . Tuna, Tomato, and Avocado Tartare Japanese food is really popular right now and with this in mind I have produced a Tuna Tartare with a French twist. A really easy to do recipe that will impress your friends. Great for dinner par-
ties and ‘al Fresco’ dining. Really fresh tuna, tomato, basil, avocado and shallot, with a splash of olive oil and sea salt. This is really simple and with the help of a few pulses on the food processor you can produce a stunning dish. It is best served with some toasted baguette rounds and it makes a perfect summer meal or appetizer. Remember that adding vinegar will cause the tuna to ‘cook’ and turn white. You can make this ahead of time by preparing everything as explained, but omit the vinegar. Cover in cling film and keep in the refrigerator until you are ready to serve. Stir in the vinegar at just the last minute. Serves 2 to 4 as an appetiser. Serve time: 10 minutes Equipment: Food processor.
Ingredients 10 to 12 ounces (280-340 grams) of really fresh Tuna, sinew removed and roughly chopped. 1 vine-ripened tomato, seeds discarded, roughly
chopped.
1 small shallot or onion, finely minced (about 1
tablespoon)
15 fresh basil leaves, roughly chopped. 1 ripe avocado. Salt and freshly ground black pepper. 1 1/2 tablespoons olive oil. 1 teaspoon white wine vinegar, plus more to taste. 1 teaspoon fresh lemon juice. Use lemon also for decoration. 1 baguette, sliced into thin rounds, toasted
Method Combine tuna, tomato, shallot, and basil in bowl of food processer. Season to taste with salt and pepper. Pulse a few times. Scrape down the sides with a plastic spatula, and pulse until roughly chopped, about 10 more 1-second pulses. Toss with olive oil, lemon juice and white wine vinegar. Season to taste. Before serving, peel the avocado and cut it into (13 mm) cubes. Put a layer of the mix in the ramekin dish or ring, then a layer of avocado and another layer of the mix. Turn out and serve immediately with the toasted baguette slices.

Too many failed
Presidents!! Spain’s mild climate, cheap cod liver oil and erratic driving habits have been luring British wrinklys to its shores like flies to a cow’s nether regions for decades now. So what do these lovable Silver haired, old angels do with themselves in the twilight of life? I’ll tell you what they do, they become a f***ing nuisance!! Now don’t go getting me wrong again, I have nothing against the average crumbly, as long as they stay just that, average, but there is a long held misapprehension that, once a person gets to a certain age, they will turn into a sweet little old man/lady, but I see no reason why, if a person was a b++++d in younger life, old father time should wave a magic wand and turn them into Mother Teresa and Catweezle when they are old. So back to the question of what these “saga louts” get up to in Mediterranean retirement and the answer is that they become “El Presidente” of their “urbanization” and, hey presto, just like in “Cocoon”, they start to turn back into the neighbourhood watch, Women’s Institute, canal cleaning, disabled parking vigilantes that they were before June Whitfield and her “Equity Release” scheme had them cashing in the poor grandchildren’s inheritance and scurrying over to Spain. There is a certain kind of person who would want to wander around, being called “El Presidente” yet, like politicians, the desire to be one should instantly knock you out of the running. But as with anything, it is only a certain 32

type of old menace that needs some kind of grandiose title to feel that they still have “cojones”. There can be no country better than Britain for turning out these stiff upper lip, stand by your beds, bulldog spirit, fight them on the beaches “a…holes” and every urbanisation from Malaga to Mars has one, usually a retired copper, screw or Colonel Mustard. Now “urbanisations” are just like your estates back in Blighty and an “urbanisation” in Kingston-on-Thames is not going to be quite the same as one in Basildon. I say this because it works the same here, those that have a nicely spruced up native in a neat little security man’s uniform are the “urbanisations” where the more well heeled have chosen to settle and, I might add, the worst to live in if you happen to be a spunky pensioner with a bit of life force in you and want to still be up after 8 pm. Well let me tell you, if you are a bit of a funky fossil don’t invest your kids’ inheritance in any “urbanisation” that looks too well manicured. The trick is, before you buy, drive on to the “urbanisation” at 10 pm and if all the lights are out and you can’t hear anybody playing their Cliff Richard albums, turn your car around and get out of there! However it is not just old people who live on these “Stepford Wife Urbanisation”, some younger, well
heeled folk opt for the straight jacket estates. Mind you they are usually young couples something big in “IT”, called Meredith and Simon who don’t mind 8 pm bang up so they can stay in and bore each other for longer. Having said this, it may be a bit of sour grapes on my part, I did try to buy on one of these better-class “urbanisations” recently and found myself “Black Balled”. I wasn’t welcome being the wrong colour, I am not orange, you see. Mind you, I think I did have a lucky escape there. On the way out I passed what I took to be a queue for the swimming pool and it turned out to be a firing squad. So I opted for the other end of the market and now I find myself happily hidden away in “Pueblo Cucaracha”. No early nights here, being favoured by folk from the rocky outposts. So, from my balcony of an evening, as the sun dips down behind the pitch and putt, sorry I mean golf course, I can look out on a leopard skin sea and imagine myself in Kenya, watching the herds of wondering weekenders whooping and chattering their way to the “watering hole”, sorry, swimming pool. And, on the big plus side, there is no “El Presidente” in “Pueblo Cucaracha”, Daktari may be, but “El Presidente” no!

The essence of boho is to mix colours and patterns, the key thing here for boho is to mix but don’t match so you might wear your floral tunic dress with gladiator shoes. Gladiator sandals are the perfect way to update the hippy chic-look, and don’t hold back on the accessories; the more the better. The change of season is always tricky after being seriously wrapped up inour cosy clothing all winter, the idea of introducing some lighter, brighter colours into your spring style is as rejuvenating as it is refreshing. If you´ve got black, dark or olive skin, the switch to colour is relatively easy because whether pale pink or vibrant orange, vibrant shades look amazing on you girlies. If you’re pale and interesting you may find that some shades make you feel a little washed out, if that rings a bell with you then I´d suggest you layer pastel colours with tonal shades such as navy and grey (Black is too harsh for this time of year) so you might wear a coral vest top with a navy cardigan. The perfect look for ladies who love the romantic look soft feminine and oh-so are pretty florals, they never go out of fashion with designers or fashion lovers. If you have great legs, go for short tulip skirt in a medium floral print and wear it with a simple white vest and some flat pretty sandals or go for a chiffon maxi dress with big painterly splashes of pastel coloured florals and chinch at the waist with a wide tan leather belt, and wedges, If you’re a real jeans girl then pair them with the most fabulous print shirt you can find. Keep Accesories to a minimum with these outfits; dainty glit chains will heighten the prettiness of these looks and hoop earring will work too. Public Recognition Foreign residents acknowledged for their contribution to local society and their integration. Totally unexpected, I received a phone call from the local council asking me to attend a presentation at 11 am the next day on the occasion Manilva’s Cultural Week. I really did not know what to expect and when I got there I was personally greeted on the door steps of the Manilva Ayuntamiento by, none-the-less, the Mayor herself Dña Antonia Muñoz who welcomed me in good old Spanish tradition to inform me that I was to receive a diploma in recognition of my 15 years in Sabinillas and for the work I did in creating the Web Express Magazine and Portal right here all those years ago.

The occasion was in fact a public recognition of foreign residents who integrated into the Spanish way of life and made a noticeable contribution to Manilva. In addition to myself, there other candidates received the same accolade Garry Walters of “The Resident”, John Chappell for his contribution to improvements at Los Hidalgos and Malcolm Sexton for launching his travel website. This was also an opportunity to meet other members of Council such as Eva Galindo and Diego Urieta. Of course this was just part of the whole ceremony; various other presentations were made but what is important is that certainly this occasion marked an official public recognition of contributions made by foreign nationals residing in the area.
