Up Close: From the Editor
Spring is in the air. You can smell it. You can feel it. You can hear it. You can see it. You can even taste it.
If you breathe deeply, you may be able to catch a whiff or two of the fresh breezes hinting aromas of a spring rain. The fragrance of anxious flowers budding through the soil floats by. Scientists claim the smell is the “geosmin,”an organic compound found in the soil.
Winds are not so bitingly sharp and cold. The sun streams through the windows more often, making my office feel warmer. Rain is much too wet to play in like we can insnow.

Cherry Blossom season is upon us and several festivals are scheduled. Our cover shows views of Washington D.C. where the National Cherry Blossom Festival is held. Made reservtions yet?
There have been no robins in sight yet, but I did hear the birds chirping last Sunday on my way to church. It was a welcoming sound to start my day out right.
I see sleeveless tops and swimsuits in the department stores. There are green shoots of crocus and daffodils in the back yard. No more frost on my windshield today.
Which brings us to taste. No more hot soups, warm cereal, cocoa, or muffins from the oven. They have been replaced with cold meat sandwiches or crackers and cheese with iced tea for lunch. The calendar says we must wait a few more days. The groundhog predicts two more weeks. Daylight Savings Time isn’t until March 12. But we can plan. This issue addresses all those delicious “tastes” of spring. They are there with the rising of maple tree sap for syrup, to the sweet cherry blossoms, and season changes in restaurant menus.
With a little St. Patrick’s Day “luck of the Irish” we may not have to wait too much longer for our next extended weekend getaway.

Have Become a Kitchen Staple in Many Homes, and an Entrée and Ingredient Option at Foodservice Outlets.
CHICAGO /PRNewswire-PRWeb/ -- The recent buzz about plant-based foods at retail and foodservice has many questioning if interest in plant-based foods is a fad or a long-term trend. Plant-based is a small but expanding category, and as more innovations and products become available and accessible, consumer interest broadens. According to The NPD Group*, about 25 million consumers eat plant-based beverages and foods occasionally or regularly, consuming these foods as part of a meal or as an ingredient. About one in five consumers say that they want more plant-based foods in their diet.
When it comes to eating plant-based foods, consumers are definite in which types of plantbased beverages and food they want to eat at home and which they eat from a restaurant or foodservice outlet. Although drinking dairy milk at home is still a more prominent behavior, about 93% of meals or snacks that include milk alternatives are consumed at home, and 7% are at/from a restaurant or foodservice outlet. Consumers eat more plant-based meat, poultry, and seafood analogues from restaurants because these foods are prepared in the same way animal protein menu items are, which means the consumer isn’t sacrificing taste for what they believe to be a healthier option.
At retail, the total volume sales of milk alternatives were down 3% in the 52 weeks ending January 1, 2023, compared to a year ago, according to IRI. Almond and coconut milk alternatives were among the top declining products.

Oat milk alternatives offset steeper declines for the total category, with volume sales up 22% versus a year ago. Volume sales of meat alternatives in the frozen aisle were down 3% from a year ago, with lunchmeat, meatball, and breakfast sausage alternatives the top decliners. Frozen meat alternative formats growing were wings, ingredient cuts, and nuggets. Fresh meat alternatives were down 15% compared to the prior year; breakfast sausage, meatball, and patty alternatives were the top declining categories. The growth formats in the fresh retail case during the period were wings, ingredient cuts, and nugget alternatives.
“Retail is likely in a transition period, following fast expansion before and during the pandemic. As consumers are returning to their pre-pandemic habits and living with high inflationary prices, we are seeing slower velocity rates and a higher number of lost buyers than new buyers,” Chris Dubois, executive vice president, Americas Protein Practice Leader, IRI. “As long as the big plant-based companies continue to deliver taste, texture, and innovations while working toward price parity with other protein options, the category can thrive, especially in the frozen case where the strength and base are consistent.”
In foodservice, plant-based foods represent less than 1% of all foods shipped through broadline foodservice distribution to commercial and non-commercial foodservice outlets, with many categories growing. Plant-based meat analogues have expanded from primarily beef alternatives to poultry, seafood, and pork. Pound sales of chicken and fish analogues shipped from broadline foodservice distributors increased by 38% and 5%, respectively, in the 12 months ending December compared to a year ago. Grain alternative pizza crusts, like cauliflower crust, grew broadline foodservice pound sales by 35% in 2022 compared to a year ago.
“Chefs and foodservice operators see the plantbased protein category as a versatile option to serve a greater diversity of guests,” says Darren Seifer, NPD
food and beverage industry analyst. “Plant-based provides the options to create center-of-plate recipes that delight guests and bring them back for more.”
NPD forecasts dairy and meat alternatives to grow through 2024, driven almost entirely by Millennials and Gen Zs, who choose these products because of their interest in sustainability, animal welfare, and better health. The deep-rooted values of Gen Zs and Millennials behind their choice of plant-based foods enabled the category to continue to grow throughout the pandemic. These plant-based consumers look for various meat, poultry, or seafood analogues, flavor profiles, and formats.
“Plant-based beverages and foods are growing and gaining loyalty,” says Seifer. “These products still represent a small share in the categories in which they compete but give consumers and foodservice operators more options to consider.”

I learned this poem in kindergarten. At the time, I was focused on the idea of a secret. Years later, I realized it was about the robin. Now when I think of it, I am reminded of the cherry tree because we had one in our back yard. Although for the record, when I say we had one, I am referring to the number of cherries. We watched and waited for that lone cherry to become ripe enough to eat. For two young children, it seemed almost as slow as Christmas, but finally it turned a beautiful shade of red.
Alas, that poor fledgling tree did not survive. We do, however, occasionally discuss it. For example, one of our most memorable conversations took place years later on my nephew’s first day of school. When he got home that afternoon, someone asked the obligatory question, “What did you learn in school today?”
His reply, “Oh, secrets,” sent all of us down memory lane as he shared with us a portion of this cute poem. Naturally, I felt duty-bound to share with him a story about his mother from when I was his age. You see, she was older than I, and had been showing just as much interest in that single piece of fruit as I had. While we were
discussing how we were going to share it, she solved the problem by picking it off the tree and chomp!
Okay, so the ‘chomp’ was an embellishment to make the story more interesting for a five-yearold. That’s not the point. No, the main point was how his mother ate the one and only cherry we were ever able to grow. I’ll leave my childhood reaction to your imagination.
At the time, I wasn’t sure what cherries tasted like, nor did I know if I liked them. Now I know. Cherry pie is one of my favorites, along with cherry gelatin, cake, cookies and jelly. Recently, I found a new recipe and look forward to many years of serving it.
CHERRY BREAD
½ c. vegetable oil
½ c. sour cream
½ tsp. salt
½ c. milk
¾ c. sugar
1 tsp. almond extract
1 tsp. vanilla
2 lg. eggs
16 oz. jar maraschino cherries
¼ c. maraschino cherry juice from the jar
1 ½ tsp. baking powder
2 c. flour
GLAZE:
1 c. powdered sugar
2 ½ Tbsp. heavy cream
½ tsp. almond extract
Preheat oven to 350°. In large bowl, combine sugar, almond extract, vanilla, oil, milk and juice. Add in eggs and sour cream. Whisk to combine well. In separate bowl, combine flour, salt and baking powder. Drain cherries, saving the juice. Roughly chop the cherries. Sprinkle some flour over cherries and toss to combine. (This will prevent them from sinking.) Stir the remaining flour mixture into the milk and eggs. Stir until

just wet; there will be lumps. Gently fold in cherries. Pour into greased loaf pan. Bake 55 min. or until toothpick comes out clean. Mix glaze and drizzle over the bread. Allow approximately 30 minutes for glaze to dry.
As always, you have options with this. The first time I try a new recipe, I follow the recipe exactly. I make notes and generally try variations or add my own special touches the next time I make it. This way, I can include various options and ideas for how to customize it to your own taste.
However, this time was a little different. While mixing my ingredients, I discovered a lack of almond extract just as I reached that point of no return. You know what I mean, when you don’t have time to go get some without wasting the ingredients already mixed. So, I used some butter flavoring and it was delicious. As prepared as I thought I was, I had also failed to make sure I had heavy cream in the fridge. Canned condensed milk to the rescue.
The final result was a hearty, delicious bread which was suitable for breakfast, a quick snack, or easily portable desert in a lunchbox. The delicate pink color is perfect for any type of fancy gather-

ing. What better way to celebrate the arrival of spring? I can just imagine enjoying a couple of slices of cherry bread at a sidewalk café during a cherry blossom festival.
While writing the above three paragraphs, I began to wonder what it would be like if I used a can of pie filling instead a jar of candied cherries. I thought about it for a few days and just couldn’t get it out of my mind. So, this morning I got up early and tried it again. I still didn’t have any almond extract or cream so the same substitutions were used again along with the pie filling replacement. Naturally, there was no need to put flour on the cherries.
The votes are in and so is the pie filling version of this bread. Compared to the first version, the only negative is the lack of pink color. This is easily fixable with a few drops of red food coloring. All other responses agreed this adaptation to be much more moist. One of my taste testers commented she thought it would taste good with chopped pecans or almonds in it. Either way, it is delicious with a glass of cold milk.
Go ahead. Whip up a batch. Add your own personal touches and share it with all your friends. Don’t worry. Tell them all about it. After all, this is not a secret.

The area has been an important trading center since 900 AD when the Mashona people traded their primary trade item, gold, with other cultures. Zimbabwe’s “stone houses” were the traditional homes of the rulers and although more than 180 of these ruins exist the most significant was the capital of the Kingdom, Great Zimbabwe. Legend has it that this was the Queen of Sheba’s capital. The 1,720-acre complex, located between the Zambezi and Limpopo Rivers, at its height housed more than 15,000 people and is the largest sub-Saharan collection of ruins on the continent. There are two main complexes, the Valley Enclosures and the Great Enclosure and at some points the walls, constructed of granite blocks without mortar, reach a height of 37-ft.and a width of 20-ft. Eight soapstone Zimbabwe birds were carved here atop a series of columns and are now depicted on the country’s flag. The birds have lips and feet instead of a beak and claws. Artifacts found at the site are featured in an on-site museum and feature Chinese, Persian and Indian trade items. The largest of Zimbabwe’s parks is the 5,657-sq,
mile Hwange National Park, once the hunting province of a Ndebele king, designated in 1929 the Wankie Game Reserve. Hwange has a variety of landscapes and more than 105 mammal and 400 bird species including 20,000 endangered elephants and the world’s largest population of wild dogs. Game drives here are spectacular because you are virtually guaranteed to spot some of the abundant wildlife, among them the giraffe, cheetah, brown hyena, zebra, leopard, lions, rhinos, wildebeest and buffalo. The park is on the edge of the Kalahari Desert and some of the animals move from there to graze in the parks natural saltpans.

A 90-minute drive from Hwange along a main road is Zimbabwe’s greatest jewel, Victoria Falls. White settlers began encroaching into the region in earnest in the 1880s and in 1888 the British South Africa Company, led by Cecil Rhodes, traded money and guns for the region’s mineral rights. Salisbury was founded in 1890 and is today the capital Harare. War was inevitable and the natives were conquered, the country colonized by the British and the land renamed Southern Rhodesia in honor of Rhodes. Na-

tives were forced onto reservations and their lands were given to white settlers. Two laws, in 1930 and 1969, declared it illegal for a black to own land in a white area. In 1965 Rhodesia declared the Unilateral Declaration of Independence when a division developed with Britain over colonial policies. On April 18, 1980 Zimbabwe gained independence.
Victoria Falls inspires awe even at a distance as if commanding your attention. The sound of the falls echoes for 25-miles and the 1,300-ft. rising mist can be glimpsed for 30-miles. The indigenous people called it “Mosi-oa-Tunya,” “the smoke that thunders”. The Falls, located on the Zambia/Zimbabwe border’s Zambezi River, are the only ones with a height exceeding 328-ft. Artifacts discovered there indicates that the region was inhabited 2-million years ago but it was not until 1855 that they were officially “discovered” by David Livingston the explorer and missionary. It was designated a UNESCO World Heritage Site in 1989 and is one of the Seven Wonders of the World. http://victoriafallstourism. org
Victoria Falls is spectacular in every season. They are more than a mile wide and nearly 145,300,000-gallons of water pour over the basalt cliffs every 60-seconds. Of the five falls, four are located in Zimbabwe, The Devil’s Cataract, Horseshoe, Rainbow and the Main Falls. A paved path allows visitors to walk along the falls and view
them from several vantage points. It can be completed in 90-minutes depending upon your interests and the number of stops you make and if you elect to take the 73 steps down into the gorge to the Cataract Viewpoint. The David Livingston statue provides a perfect spot for a photo op as is the rainforest portion of the path.

Blooming Flower Fields
If you find yourself on the United States West Coast between March and Mother’s Day 2023, I would like to suggest you build in a half day to view and frolic in a 55-acre field of blooming ranunculus flowers. Their brilliant color blooms dot the hillside, which you can see from a distance.
The Flower Fields are just a short drive from the beach and attract people from all over the world. This attraction is truly a family affair, for there are activities for every member of the family.
History
Luther Gage, an early settler and horticulturist, bought land in the Carlsbad area. He planted seeds that originated on the Asian peninsula, called ranunculus, and they thrived in the fresh ocean air.
Adjacent to his land, Frank Frazee had a vegetable farm. Soon he started planting ranunculus and, in 1965, expanded his farm with the acquisition of land from the Ecke family, who were cultivating modern-day poinsettia. He relocated his ranunculus fields to this property and brought in
his son Edwin Frazee to help him with ideas, for people were coming faster than one person could handle.
The ranunculus fields were overseen by Edwin, who brought in Mellano and Company, a renowned flower-growing company, to handle the flower fields. Meanwhile, Edwin saw the potential for tourism through the fields
and took over the day-to-day operations.
What to Bring
There is little shade, so wearing a hat, sunglasses, and filled water bottles would be good. The key is to take your time to soak in the beauty of these very special places where nature shows itself off to us for two and a half months.

Walking in The Flower Fields
Walking through the fields on the well-curated paths is truly a relaxing, lovely experience. Planted in rows of colors, the rainbow effect of the brilliantly colored blooms can be seen as you gaze up the hillside. If you don’t want to walk, a wagon pulled by a tractor will make strategic stops so you can get up close and personal with the flowers. If you want to get Instagram shots, you will certainly not be disappointed. There are benches you can sit on and be surrounded by flowers.

Sweet Pea Maze
I found out you don’t need a corn maze to get lost if you have a sweet pea maze. Who would have thought plants waist high could still have you puzzled to find your way through the grid, which the Manager delights in redesigning each year?
Music in the Gazebo
If you need to rest or would like to listen to
music, you will appreciate this covered area. Local musicians show off their talents while your surroundings are alive with color from the ranunculus flowers.
Orchids Display
Greenhouses still house poinsettias, but now their space is being taken over by exotic orchids. With a General Manager who has a background in orchids, you can imagine the variety that now exists and continues to grow.
Education Huts
Temporary buildings have been set up. You can eavesdrop on classes about plants and environmental issues taught to the hundreds of schoolchildren bussed in each year.

What is a flower garden without a Santa Village? Well, it may be a bit of

a stretch, but when owners heard a miniature Santa village was about to be destroyed, arrangements were made to have it moved to the grounds. Walking by, you can hear the laughter as children explore the buildings under the brilliant west coast sun.
Snack Time
There are several options to help care for the hunger bug. As a lover of strawberries, it was impossible for me to walk past the Strawberry Shack, serving fresh strawberry shortcakes, pile high with real whip cream. By the way, this is strawberry country, so make sure you purchase some to take home with you.
Rather have pizza? Food trucks are brought in, and I could have chosen from a variety of pizza slices. It didn’t take me long to spy the truck, shaped like a lemon serving freshly made lemonade. So good after walking in the sun in the open fields.
Explore Under the Arches
Each year, Master Gardeners are assigned an area where their creativity can be tested to the max. Here, they plan, design, and plant flowers that transform the area into one reminiscent of an Alice Wonderland scene.
Armstrong Garden Center
In 1999, the retail operation of The Flower Fields was turned over to the Armstrong organization so the family could focus more on the land’s flowers, olive trees, the sunflower test field, and the coffee plants.
Now an expansive garden center can be reached without going into the fields. If you are looking for a rare plant, there is an excellent chance you might find it here, or they will seek it out for you.
The aisles are full of gift ideas, a variety of flowerpots, books, and The Flower Fields’
colorful memorabilia. And yes, you can buy bouquets of ranunculus flowers, tightly budded so they can easily be transported to your home.
As I walked to my car, the words of General Manager Fred Clarke came to life for me. He said, “You cannot be around flowers without them elevating your mood.” I looked down at the two-dozen red and white ranunculus flowers bundled in my arms, smiled, and understood his words’ wisdom.

Four Spring Trails
Montana’s wonderful outdoor scenery is best experienced up close and personal. For early Spring days, turn in your skis for hiking boots and head for and of the following hiking trails throughout the state.
Lava Lake Trail
Lava Lake Trail is a popular hiking trail in the heart of the Custer Gallatin National Forest. It offers hikers a good, solid workout with a wonderful, calm lake at the end to sit, relax, and appreciate the beauty of Montana. The trail is mostly shaded and is always close to water, and is perfect for a summer hike. The hike is appox. 6 miles roundtrip. The trail is also open to dogs and horses.
St. Mary and Virginia Falls Trail
In Glacier National Park, begin from the St. Mary Falls shuttle stop. The hike is 3.6 miles roundtrip. All three of the waterfalls in the area are extremely popular during peak tourist season. Along the hike, you pass through an area that was burned during the Reynolds Creek Fire of 2015. The trail allows you to walk along the beautiful St. Mary River, eventually leading hikers to St. Mary Falls.
Hidden Lake Trail
In Glacier National Park is this beautiful hike that features gorgeous views all the way up. During the summer months and tourist season the trail is heavily trafficked. Make sure to carry bear spray if you plan a trip, as grizzly bears are known to frequent the area. The hike is approx. 5.5 miles roundtrip. The Hidden Lake Overlook area is one of the most popular destinations in Glacier National Park.
Avalanche Lake
at Glacier National Park, the trail begins from the Trail of the Cedars Trailhead, located 5.5 miles east of the Lake McDonald Lodge. The Trail of the Cedars, a wheelchair accessible trail, is a loop hike that begins and ends along the Going-to-the-Sun Road. Although the western segment of the loop is slightly shorter, the eastern side is far more scenic. Hikers on the eastern portion of the loop travel along a raised boardwalk as they pass through a forest of ancient western hemlocks and red cedars. Some of the trees in this area are more than 500 years old. The hike is 4.5 miles roundtrip.

Cherry Blossoms Spell Spring
Known as the “Cherry City,” as there were once cherry tree orchards throughout the area, Salem has been hosting Cherry Blossom Day for more than a century. The first took place in 1903 and today the best blooms can be enjoyed in State Capitol State Park.
It’s a celebration of both American cherry blossoms and the impact that the Japanese culture has had on Oregon’s capital city. Spring is Still Snow Season
Warmer temps and tons of snow make springtime in Wyoming full of adventures for every type of traveler
CHEYENE. – Home to a combination of deeply rooted culture, historic landmarks, western hospitality, cowboy culture, stunning landscapes and outdoor adventures, Wyoming’s “secret season” might be the best time to take in this great state. March and April are the snowiest months in Wyoming, making many of the state’s best winter activities possible well into the spring. Meanwhile, increasingly warm temperatures support a full menu of things to do like spring skiing, fat biking, snowmobiling, hot springs and more.
Spring skiing season serves as a “last call” of sorts before the slopes for area resorts close for the summer, typically enjoyed from late February to early April when temperatures begin to warm. Resorts tend to offer lift tickets at lower rates during this time. Spring skiing also can mean shorter lift lines, great powder and sunny skies
Snowmobiling: Many of the state’s snowmobiling areas receive enough snowfall to keep trails open until mid-March or later. The Wyoming Range, between Alpine and Kemmerer, has about 336 miles of trails that can have substantial snow for riding through May. The popular
Continental Divide Snowmobiling Trail follows the Wind River Range for 829 miles and has a grooming season that typically runs until mid-March. Visit the Wyoming State Trails website for maps and up-to-date trail conditions. Other places for sled heads to ride include the Snowy Range, Sierra Madre Mountains and Beartooth Mountains.
Hot Springs: The Cowboy State’s hot springs are open year-round, but are especially heavenly when there’s snow on the ground. Thermopolis’ Hot Springs State Park has free indoor and outdoor soaking pools, while Saratoga is home to the pampering Saratoga Resort & Spa and Hobo Pool, a locals’ favorite. My first stop was the city of Hays where our group visited the Sternberg Museum of Natural History. This is where I learned Kansas was covered by a series of seas, some deep and others shallow. According to a Kansas geological survey by the University of Kansas, it was during the Pennsylvanian and Permian periods of geologic history,
More than three million paleontology, zoology, and geology specimens that document life and environments in the Great Plains region of North America are housed at this museum. Many items are on permanent display while there are other various temporary exhibits. So you can return to see different items each time.
It’s A Spring Surprise
Veering off the main highways
(I suggest a guided tour), spend a whole day exploring the Badlands area. Get up close and hike along the trails to view the scenic chalklike rock formations at Little Jerusalem Badlands State Park. At Castle Rock Badlands, a narrow dirt road leads to the limestone, chalk and shale castle.
No, I don’t think Kansas is flat or plain - anymore.

Throughout, butterflies can be viewed drinking

The blue common morpho, whose iridescence impresses in flight, as well as brush foot varieties such as the clearwing, lacewing and zebra mosaic are expected to make appearances. Approximately 1,000 chrysalides are delivered to Meijer Gardens each week of the exhibition.

The whereabouts of Jesse James may have been mysterious in the latter part of the 1880s but scholars have successfully traced his movements from birth through his burials and exhumations. Across the country, from Texas to West Virginia, there are explorable sites and markers that refer to his domestic and his criminal lives.
He joined the Civil War guerrillas in 1864 and Post-Civil War he and his brother Frank formed an alliance with the four Younger Brothers and became the James-Younger Gang to continue the fight. James is estimated to have participated in approximately twenty armed robberies. www.visitmo.com
His legend began in Kearney, Missouri on September 5, 1847 on the 100-acre family farm. Originally a 2-room log cabin, the house was built circa 1822 by Jacob Groomer and purchased in the 1840s by Jesse’s father Robert S. James. He added a wooden building with 3-rooms in 1845. Robert, a Baptist minister, married Zerelda Cole and settled in the “Little Dixie” region of Missouri to become hemp farmers and owners of six slaves. Frank was the elder son. Robert died in 1850 of cholera.
Jesse James
Zerelda’s second husband, Benjamin Simms, also passed away and she married Dr. Reuben Samuel in 1855. On September 15, 1868 Perry Samuel was born. He was the son of the enslaved housekeeper in the James’ home and, historians believe, Dr. Samuel.
Perry is listed in the 1880 census records as a mulatto and a servant. He is included in family photographs, lived inside the farmhouse and not in a slave cabin or servant’s quarters and some family members referred to him as Uncle Perry. Upon Perry’s death his obituary lists him as an “aide” to the James Boys. He is interred in Fairview Cemetery in Liberty, MO.
Tours of The Jesse James Farm and Museum begin in the Visitor Center with a film and series of outstanding thematic displays that feature family artifacts, memorabilia, photographs and explanatory text on all aspects of Jesse’s life. Exhibited highlights are the boots he was wearing when he was killed, his saddle, Frank’s 1882 surrender letter to the governor and other personal items that comprise the largest collection of Jesse James objects in the world. One intriguing area is devoted to depictions of the outlaw in films. Movie aficionados will be thrilled to learn that “The Assassination of Jesse James by the Coward Robert Ford” is the most accurate of all the autobiographical films. Jessejamesmuseum.org
A short walk from the museum is a complex of sites that includes the James birthplace, slave quarters, a smokehouse and Jesse’s original gravesite. The house can only be seen from the outside and by peering in the windows. Zerelda had Jesse buried in the yard of her home so that she could keep the grave from being vandalized. A steady stream of people would visit the grave and she would sell them a stone taken from it for $0.25. Each evening she would re-

The arrival of the Federal militia at the James’ farm was a turning point in Jesse’s life. In May of 1863 they rode in to question the family about Confederate guerrillas active in the region because they were aware of the family’s links with and sympathies for the bushwhackers. When they gave no information Jesse was severely horsewhipped and his stepfather was repeatedly hung from a tree. Soon after, 16-year-old Jesse left home to join his brother in William “Bloody Bill” Anderson’s guerrilla band.
Losing the war left Jesse angry and poor but with ruthlessness and a criminal skill set to fall
back on. On February 13, 1866 he and the James Gang rode into Liberty, MO and committed the first successful, peacetime, daylight robbery. Only the banker and his son were there as Frank went inside the bank while Jesse kept a lookout on the exterior. They netted $58,000 ($1,085,990 in 2022). As they made their escape they killed a college student, the only murder victim. The men managed

He also robbed twelve banks, five stagecoaches and the Kansas City Exposition. There is no authentication of Jesse James ever having been a Robin Hood figure. He robbed and murdered for personal gain and as the war retreated into memory citizens grew weary of his lawlessness.
In 1873, in Iowa, he committed the first robbery of a moving train, holding up the passengers when the vault held only $2000 ($45,500 in 2022). The railroads hired the Pinkerton National Detective Agency to hunt down the gang and stop the train robberies. On January 26, 1875 a posse of Pinkertons rode onto the family farm. The men hurled a flaming item into the cabin through a window and someone inside pushed it into the fireplace where it exploded. The blast killed 8-year-old Archie James, a half-brother, and damaged Zerelda’s right hand causing an amputation.
Northfield, Minnesota was 400-miles from Jesse’s home but he felt that robbing a bank there would prove lucrative. It did not. On September 7, 1876 the Northfield Raid resulted in the capture of the Younger Brothers and their subsequent life sentences in prison. Frank and Jesse
escaped. The First National Bank of Northfield is now a museum.
Jesse, without Frank, started a new gang in 1879 but it fell apart after he killed one of its members. Tom Howard and his family rented a small house in St. Joseph, Missouri on December 24,
monument was placed on his grave. It expresses his mother’s sentiments on the murder.
His wife died in 1900 and was buried Mt. Olivet Cemetery in Kearney. In 1902 his mother no longer lived on the farm and could no longer watch over him and the decision was made to move his body to Mt. Olivet beside his wife. Frank, because he was wanted, could not attend the first burial. He did attend the second. The cemetery is open for respectful visitors.

Spring Fling in
Billed as the “Biggest Easter Egg Hunt West of the Mississippi,” thousands of prize-filled plastic colored eggs are laid out over an acre of land, waiting to be found and grabbed by hundreds of children of all ages. It’s all part of Spring Fling, a one-day festival the Saturday before Easter, hosted by Master’s Hand Boutique in rural Tekamah, Tekamah is about 45 minutes north of Omaha.
The family-friendly event, which is almost 15 years old, features inflatable attractions such as slides and bouncy houses, pony rides, games, and barrel train rides for children, as well as a petting zoo featuring farm animals such as goats and sheep. Animal handlers present shows starring birds and snakes. Clowns, team mascots, and make-up artists help visitors enjoy the eight-hour event, which begins at 8:30 a.m. and runs until 5 p.m. Musical acts often include clogger dance troupes and bucket percussion bands.
A popular event is the Peeps eating contest, in which people in specific age groups – mostly children - compete to see who can eat the most of the sugary marshmallow chicks in the quickest time.
Attracting thousands of people from across the Midwest, the festival features a variety of vendors, from jewelry to books, and more, that appeal to everyone. The event isn’t just for families.
Starting as a home school project making candles, Susie Robison has grown Master’s
hand into one of the most-popular boutique outlets in Nebraska. People from all over the Midwest visit to shop, enjoy lunch, pick up a few candies, and participate in the Spring Fling festivities.

With home décor, clothing and accessories, Master’s Hand became a popular stop for area residents, as well as people from as far away as Omaha and Lincoln, which is about a 2-hour drive from Tekamah. Robison continued to make candles – with the capability of 1,200 per day - selling them at the store instead of taking orders. The boutique is also a popular stop for flowers for Valentines Day, Mother’s Day,
and prom.
Adding Serendipity Chocolates, customers have options between housemade fudge and a variety of chocolates – dark or milk – with nuts, in the shape of Nebraska, marshmallows, or just about any style imaginable.
Master’s Hand is home to one of the best kitchen staffs you’ll find in a rural town. Featuring a delicious menu with items such as quiche, chicken salad, glazed salmon, a soup du jour, Master’s Hand is a popular destination for brunch or lunch. Dessert is a must, with a decadent chocolate cake or bread pudding on the menu.
However, during Spring Fling, the kitchen prepares its world-famous cinnamon rolls, topped with a sweet cream cheese frosting. You’ll want to order them ahead of time.

Community groups provide lunch during Spring Fling. Burgers and hot dogs, with chips and a soda, are usually on the menu for a reasonable price.
Robison has added leading a religious retreat that takes a busload of women to Waco, Texas, for a few days of camaraderie and bible study. They’ve also traveled to Mackinac Island, Michigan.
While Spring Fling may be the major attraction on Easter weekend, Tekamah offers a few other attractions and places to dine.
Since people are known to come and go as they choose during Spring Fling, you may want to check out a local eatery if burgers and hot dogs off a grill aren’t for you. The Tipsy Pig offers a sit down lunch or you can grab a quick sandwich at Subway. Then, head back to the spring fun.
While in Tekamah, a visit to the Burt County Historical Museum offers a look at the area’s past, from the days when Native Americans lived along the Missouri River, a few miles east, to the early settlers of the town, as well as some of the classic businesses, including a dentist’s office. You’ll find a charcoal-fueled iron among antique household items, all donated to the museum. The Burt County museum is located inside the E.C. Houston mansion, which includes a dance hall on the fourth floor.

Spring Into EPCOT’S
Spring is bursting with colorful possibilities. What better place to indulge your senses than Walt Disney World’s EPCOT International Flower and Garden Festival from now through July 5.
EPCOT’s flower and garden festival’s beautiful blooms and lush foliage are mixed with amazing culinary springtime delights. Outdoor kitchens dot the World Showcases offering small plates. One might find Ravioli alla Boscaiola, a sweet sausage ravioli with sweet corn, spring vegetables, and cream sauce in Italy’s outdoor kitchen. Drink a glass of pure liquid sunshine at the Pineapple Promenade.
These culinary delights and more were served at the 2022 festival, but be on the lookout for returning favorites and new additions for this spring. Every year, Disney Chefs craft special spring-inspired festival menu items (many only available during the festival). Guests can sample an appetizer in Italy, a drink in Japan, and then dessert in France– all while dining near blue lagoons and gardens. These are no ordinary gardens either, they’re Disney style.
Youthful spring optimism takes place around every corner– like the Snow White topiary in the Germany Pavilion. With the lagoon in the background, deep emerald and spring green sculpted shrubbery make it look as though Snow White is dancing. Not far behind, the
dwarf topiaries march surrounded with saturated hues of pinks and purples spilling out of every crevice. These character topiaries are scattered throughout EPCOT’s World Showcase. And if you’re inclined to learn more about how these horticulturists sculpt living plants into art, there are additional behind-the-scenes tours. Or just stroll the lands, and indulge in the
kaleidoscopic colors. Pockets of color that inspire home gardeners can be found with honey bee and butterfly gardens as well.

After our family went to the festival, I bought a copy of the Disney Festivals Cookbook by Pam Brandon and the Disney Chefs, published in 2018. A sip of this recipe from the book transports me to sunshine and sweetness—served with a side of Disney’s magic memories.
Honey Peach Cobbler Freeze
2 cups diced fresh peaches
1-½ tablespoons honey
2 cups frozen vanilla yogurt
½ cup milk
½ granola, for the topping
Blend the peaches, honey, frozen yogurt, and milk in a blender until smooth. Pour into two tall glasses and garnish with granola.
(This is the non-alcoholic version. The cookbook also offers this variation with 1-¼ ounces of blueberry vodka for a twist if desired)

Try Chinese Jianbing .

For the first time in South Florida, people can enjoy authentic Chinese Jianbing at downtown Fort Lauderdale, on a food trailer. Food truck business is for crazy people, especially when you tried to customize a brand new trailer during the pandemic with the heated inflation. And you have to strike all your efforts to study the city zoning map and regulation, get the inspection and all the paper work done like a DBPR certificate plus tax receipt.
So, what is Jianbing? It is a delicious mung-bean batter crepe filled with fried crispy cracker, egg, and scallions.
There is always something special in one’s destiny——Jianbing is mine.
Before moving to the U.S., I was a social science and ESL teacher at an elite public high school in Beijing, which is not easy at the point. After my wife luckily securing a working visa, I followed her to Long Island, NY in 2019 and then settled down in South Florida in 2021. My valuable memories and
skills of Jianbing dated back to my childhood.
For quite a long time before I got admitted into a boarding high school in the core city of Beijing, I was living in a suburban area and my neighbor was a Jianbing master. This kind senior gentleman, with his adopted a granddaughter, made a hard but sweet living by running a Jianbing cart every morning on a daily basis. I still remember that my mom would bring two eggs from home to save money, waiting for fifteen minutes or even longer to get me a fresh and hot savory Jianbing, while I was sleeping late on cold winter mornings. And I would help him fry crispy crackers after I got back from elementary school.
Those Jianbing fed me well and I always love eating Jianbing.
I feel like Jianbing can be well interpreted as an oriental quesadilla or savory crepe, just like how I put it on my food trailer’s wrapping. Apparently there are different variations of Jianbing, and since my Jianbing master friend came from a minor ethnic group of muslim in northern China, his recipe focus on the using of mung bean, which is also popular in Indian dosa recipe. Popular superfoods, like quinoa, chia seeds and hemp hearts are added as a twist to my current version of batter.
So far people like my food and I was really impressed by customers who had travelled to China and knew this type of street food. Some of them could even pronounce Jianbing perfectly. While I am helping advocate Chinese foods, I also realize that the past 20 year of “Made in China” story is actually helping me vice versa.

The best way to learn about history is by experiencing it firsthand. Exploring Brookgreen
When half the country is dealing with the remains of winter, there is a beautiful oasis waiting for you to explore near Myrtle Beach, South Carolina. With more than,100 acres of botanical gardens filled with massive art sculptures, animals to view in the zoo, and plenty of Lowcountry history, Brookgreen Gardens has activities for the entire family to enjoy. Only 16 miles from Myrtle Beach, Brookgreen Gardens allows visitors to experience something different than the usual beach vacation. Come and check out what Springtime looks like in the magnificent Brookgreen Gardens.
Brookgreen Gardens is more than a botanical garden. It is an art gallery on a massive scale, with over 2,000 pieces of artwork showcasing its giant American sculptures integrated with nature. And it is a walk through an important slice of history which is part of why it is a National Historic Landmark on the National Register of Historic Places.
Opened in 1932, Brookgreen Gardens was built on four rice plantations, one of which was called Brookgreen Plantation. Since 1711, rice has been the major crop grown in this area. At one time, the owner Joshua John Ward was one of the
wealthiest planters in the nation due to the development of longgrain rice, with the plantation yielding 3,900,000 pounds of rice from the land cultivated by over 1,000 enslaved laborers.
The entrance has two larger-than-life horse statues, a
prelude to what awaits you as you explore the theme gardens. Make sure to pick up a map of the gardens; you will need it as the hedges are taller than most people, making it feel like you are the only person there. The tall hedges give you a constant surprise as you turn any corner.

My favorite area is the Live Oak Allée. Brookgreen Gardens has several Live Oak trees planted in the early 1700s with Spanish moss hanging down from the branches lined up to walk under and take tons of photos.
Once you have your fill of art, plants, and flowers, head to the Lowcountry Trail. The trail has interactive stations where you can hear stories on the daily life
of enslaved laborers on the rice plantation. There are also viewing platforms and overlooks
for the Lumpkin rice field. Besides walking along the trail, you can also sign up for several excursions that take you on a boat or overland to learn more about the historic rice fields and Oak plantation to understand the role of enslaved workers.
Right after the Lowcountry Trail, you enter the Lowcountry Zoo. First up is the Floyd Family Heritage Farm, where you will see milking cows, horses, sheep, and chickens. As you follow the path around the zoo,

you will encounter alligators, birds, otters, deer, and foxes in their natural habitats. Seeing the alligators sunning themselves behind the fence was comforting after seeing the “Watch Out for Alligators and Snakes” signs around the bodies of water earlier in the gardens.
A bit further on the path, you come across an area that moves you. You will see several birds and other native animals that were either bred and raised in captivity or have sustained a major disability due to injury.
When I visited, I could see a great horned owl peek out of an enclosure. The great horned owls in this aviary are survivors of injuries but haven’t fully healed and are only partially flighted. The zoo workers provide exceptional care for these broken animals and give them a great quality of life. Unsurprisingly, the Lowcountry Zoo is one of five institutions accredited by the Association of Zoos and Aquariums (AZA) in South Carolina.
And last but not least is the Children’s area in Brookgreen Gardens. There is a large butterfly house for them to wander through. Will a butterfly land on your shoulder? Expect to hear squeals of excited kids in this area. Around the butterfly house are the Children’s Sensory Trail and Children’s Storybook Forest, providing
the little ones in your family something to discuss on the ride back to the hotel.
If you are interested in experiencing the beauty of Brookgreen Gardens on your next vacation to Myrtle Beach, make sure to visit early in your trip. Your admission tickets are valid for seven days. You can keep returning and spread out your exploration of Brookgreen Gardens, especially if you need a break from the touristy side of Myrtle Beach. Springtime in Brookgreen Gardens is worth a visit or two.

Finding authentic Cajun and Creole cuisine in Tennessee is getting even easier. Cajun Steamer Bar & Grill is opening its third Middle Tennessee location on Tuesday, March 7, bringing Louisiana hospitality to Hendersonville.
