Happy birthday, well fed Each November i’m supposed to write something special here... I’m just now coming out of a solid 10 minute debate (with myself) over whether or not to call this a birthday or an anniversary. Well, according to wikipedia:

So technically, a birthday is an anniversary. I think the key ingredient here is whether or not Well FED was “birthed”. Now I don’t want to offend all the mothers out there, especially those who toiled in one of those 12+ hour labors. (Love you, Mom) - but anyone involved in the beginning stages of this magazine would agree that conceiving this magazine was no small feat in of itself.

In contrast, this makes me think about Janie and Peter Brodhead, owners of Brighter Day, who are celebrating their store’s 35th Anniversary. (Read more about them on page 18.) They opened their doors at an even younger age than my wife and I are now, and at a time when Savannah was a much different place. I think about the influence they have had on this city and both its inhabitants and its visitors. I think about the great kids that they have raised and the employees that they give a livelihood to. Much like their neighbor, The Sentient Bean, they have created a community around a business.

Just recently, at this year’s Savannah Food Day Festival, I was able to see this community in a way I never had before. Standing on the stage with my family, I looked out onto a sea of people. So many people, thousands really, as they enjoyed all that the festival had to offer. Between the groves of live oaks stood not only attendees, but virtually all my friends. All these wonderful people I have met over the years because of Well FED, all there; whether as exhibitors, vendors, volunteers or attendees - I could spot them out in the crowd.

Is your family involved in farming? Tell us about the processes involved with raising free-range, pastured chickens & eggs:

We get our chickens when they are bitty’s. We keep them warm with heat lamps until they are able to maintain their own body heat and when they are big enough they are moved to the chicken pen. Chickens do not lay until they are about 21 weeks old. They are fed grains that contain no hormones, no antibiotics, and no animal bi-products. They also have free range of pasture to feed on grasses, bugs, worms and other insects. They lay eggs daily except when they are moulting. Our dog shuts them up at night in the chicken pens to protect them from coyotes, owls and other predators. Eggs are collected six times a day and then washed, weighed, and packaged for delivery to our customers.

Yes, James and I were both raised on farms. His family farm was in Missouri and mine was right here in Georgia. Our families have always been farmers and that’s all we’ve really known. My father started out as a sharecropper who eventually came to own four farms, leaving one to each of his children. Also, our youngest son still works with us on the farm. We have 10 grandchildren and two great grandchildren and hope that someone in our family will continue the tradition.

How many chickens do you have and how many eggs are produced daily? We have approximately 1,000 Brown Layer chickens who produce about 50-75 dozen medium, large, and extra large eggs per day.

Tell us about being AWA certified. What does that mean? It is a complicated process to ensure

that all of our animals are treated humanely and well taken care of. They are particularly strict on the animals’ welfare guidelines and I really appreciate that because our animals depends on us to have a healthy life. Our process of raising chickens was already in line with Animal Welfare Approved guidelines and so the certification was a natural fit. It’s in our nature to be animal lovers and as farmers, we particularly know we have a responsibility to protect the animals’ well being.

Is there anything you would like us to know about farming in Georgia? Or about the importance of supporting our local farmers? There is a transparency with local farmers

husband and I went out into everyday life and worked normal jobs. I worked for the state of Louisiana while my husband worked as a truck driver. When we retired we decided we needed something to do so we began raising chickens on my family farm. Raising chickens is a full time job and they need to be tended morning and night. It is not an easy task, but we love it.

What is the best thing about what you do? I make my own hours and I enjoy my work. They say that if you enjoy what you do, then you don’t work a day in your life.

A newly constructed walk-up deli window and expanded menu, including the return of its beloved baked cheese sandwiches, are just about ready to please customers at Brighter Day Natural Foods Market.

ince Aug. 15, the popular organic deli has been undergoing about $250,000 worth of renovations by Carroll Construction of Savannah.The work includes almost doubling the size of the deli and installing new equipment such as a larger gas stove, a walk-in cooler and a modern ventilation system. One of the most noticeable customer-service additions is the walk-up window, which faces Bull Street and is perched below the market’s mural of a tomato wearing sunglasses. The window will allow on-the-go customers to conveniently order sandwiches, salads, smoothies and other foods, as well as receive free biscuits for their pooches, said Peter Brodhead, who with his wife, Janie, opened Brighter Day 35 years ago. Peter anticipates the deli reopening in early November. The deli expansion “is kind of like our 35th birthday present,” he said. “The deli was really getting too cramped and too old. (Employees) are going to have a lot more capacity to make a lot more stuff.”

more menu choices Peter and Janie’s daughter, Claire, is getting involved with the deli by sharing her knowledge of cheese. “We’re getting a new cooler that has really great capacity for deli items, and we’re also going to be adding quite a few new cheeses,” Peter said. “She’s looking at cheeses from farmers from all over Georgia.” With Whole Foods Market opening in Savannah this past August, “We realized we have to be more specialized,” said Peter, who is excited about his customers pairing Brighter Day cheeses with the fine European wines offered two doors down at Le Chai wine shop, 15 E. Park Ave. “A lot of people don’t realize [Le Chai proprietor Christian Depken] only works with Old World, European wines,” he said. “I really just thought, what a great way to bring together two independent, small retailers and be able to play on each other’s strengths.” In addition to the new cheeses, the larger deli will offer 10 new vegetable and fruit juice blends, as well as about 10 smoothies, or more than twice the number offered before the renovation. And Marilyn Sims-Fishel, who has served as the deli manager for about seven years, “is a fanatic about everything having to be cooked and made from scratch,” Peter says. “She refuses to use canned stuff.” “We’re doing all kinds of really interesting super foods: highly nourishing foods from all over that have all kinds of antioxidants,” Peter said about the smoothie selection. “We’ve got one smoothie that tastes like Ben and Jerry’s cookie-dough ice-cream, but there’s no added sugar.” Another new smoothie, called the “V8,” contains eight different vegetables. “It has a little bit of jalapeno in it and it tastes like a Bloody Mary,” he said. In addition, the deli will feature an herbal elixir shot bar – unique to Savannah - with 10 types of elixirs. The elixirs provide various benefits, such as boosting energy, building mental focus and providing a calming effect. They will be served in 2 oz. shot glasses and could cost around $3.50 each. “People can have the experience of taking some of the finest herbal extracts in the world for a reasonable price,” Peter said. While the new menu items are quite distinctive, the deli’s claim to fame could very well remain its baked cheese sandwiches. “People are addicted to them, and I didn’t know to what degree until we had to close the deli down,” Peter said. “We take a provolone cheese and bake it in the oven. It’s crispy, and the fat cooks out. It tastes like bacon. We make an avocado baked cheese sandwich and a regular baked cheese sandwich, and people are fanatical about them.” 20

Marilyn, in fact, is the main reason for the deli renovation. “I really wouldn’t have done this project if Marilyn had not been here. It’s almost an act of love for her,” Peter said. “When she came in, the whole deli transformed. Sales just started going way up and everybody wanted to work at the deli. They love working with her. Marilyn always wanted a good kitchen, so I’m giving her a good kitchen.” Marilyn describes the changes to the deli as “overwhelming and exciting.” “I’ve never been in a kitchen like this before,” she said. “It’s clean, it’s open, it’s bright.”

Peter said many of his customers did leave Brighter Day for a bit to explore Whole Foods when it opened. “Our deli actually drove a lot of people into our store,” he said. “The deli had to shut down right when (Whole Foods) opened, and there was a definite impact of them opening up. Everyone in town went to check it out. We lost a significant volume in our sales. But a lot of people are coming back (to Brighter Day). “We’re going to re-evaluate where we are in the marketplace, but we think (the deli renovation and menu expansion) will be so unique and different. school lunch Thrive Café and St. Andrews School launch area’s first healthy school lunch program – and the kids love it Written by Tim Rutherford

t all began as an exploratory e-mail, inquiring if Wendy Armstrong and her Thrive Café would be interested in taking on an innovative new school lunch program. Barely three months later, kids at St. Andrews School on Wilmington Island are queuing up for servings of chicken tetrazzini, farro and steamed squash. The bank of soft drink machines in the cafeteria is gone, replaced with nutritional water, fruit infused water and house made beverages sweetened with Stevia. Everyone is quick to credit Head of School Mark Toth with getting the ball rolling. Toth didn’t let warnings to stay out of the foodservice program deter him – and heaps praise on Assistant Head of School, Trey Adams and PR Director Scott Searcy for helping make the vision come true. “Parents were unhappy with the previous vendor regarding quality, preparation, responsiveness and much more. But it is typical of food served from a corporate/ institutional perspective at US schools,” Toth said of his motivation. “I was told when I took the job ‘don’t touch foodservice,’ nothing good can come out of that. But there was nothing to lose; parents were unhappy.

The definition of insanity is doing the same thing over and over again – but getting the same unsatisfactory results. Seemed low risk to me – but we needed the right partner.” In practice, Armstrong gets to do what she does best – prepare good-for-you meals using local and organic produce, whole grains and pasture and humanely raised meat and poultry. Along the way, the kids get to sample dishes that would typically be far removed from most school lunches. Still, Armstrong doesn’t get preachy. “We try not to say ‘organic” too much,” she explains. When primary school children wrinkle a nose at the idea of farro – something they admit never having eaten – Armstrong is quick with a story about Roman soldiers fueling their strength and bravery with the ancient grain. Still, it’s not all sticks and twigs and crunchy bits. “Their favorite menus are Mexican and Italian,” Armstrong said. “We still have pizza, but it’s with real tomato sauce and real cheese. Tacos are popular – but it good fish and fresh veggies.” Armstrong’s passion is not without value – and a trait that Toth says creates mutual benefit. “Wendy, Thrive and St. Andrew’s share the same values around making a difference. Wendy is so passionate and I believed in her immediately and thought we could help each other,” Toth said. “She took all the risk. We needed a solution, but with the right partner that shared our values over the long haul, meaning a 3-year contract.”

As the younger kids file out, older students come in. This is the crowd that finds the a la carte selection most appealing. They may be augmenting a partial lunch from home – or may just be finicky eaters – or not at all. One young man enthusiastically piles a plastic clamshell full of salad fixings, pours on a river of dressing and takes his seat to devour what is essentially an all-vegetarian lunch. Armstrong still winces at the amount of plastic and paper goods thrown away every day. One of her goals was to incorporate a more green operation into the lunch room and to incorporate menu ingredients and food sourcing concepts into the curriculum. To a degree, that’s happening naturally. A big basket of freshly picked basil sits in the kitchen waiting for prep – the result of the first graders working in the school garden that morning. “They are getting on board with the green thing,” Armstrong said. “It’s a work in progress, but there is an important first step: We have put in a dishwasher so we can get rid of the paper rand plastic plates and plastic utensils.” “We would like to revitalize the school garden and integrate it into the kids’ lessons,” Armstrong said of her plan. “We want to involve the kids in nutrition, cooking techniques and encourage them to try new things, all while still making the food kid-friendly. Lunch items can be paired up with other lesson plans. We will bring in our local farmers and teach green practices. We can show the next generation how it is all interconnected.” The private school has a history of being on the leading edge – it was among the first schools in the region to put iPads in students’ hands. Now, it’s at the forefront of what many – including the President – hope will be a national trend of putting chefs into school lunch rooms.

Scott Searcy handles media relations for the school and is a fan of the lunches himself. The effort is not wasted on him, as he recites the school’s slogan: “Tradition and innovation – and this program with Wendy is just another example of putting words into practice.” Some public schools have had the support of the Obama administration’s high profile initiative “Chefs Move to Schools” program. That plan calls on chefs to adopt schools and work with teachers and school nutrition professionals to help educate kids about food and nutrition. The 66-year-old private school owes its name to its Scottish heritage – not religious affiliations. As a private school it is ineligible to use federal monies to feed its 425 students. There are about 200 students who pay to eat lunch every day – the break-even point for the program to work. Armstrong’s plan is more grassroots and relies upon a forward thinking school administration, support of parents and the appetites of the St. Andrews’ students. And while Armstrong loves dishing out food from the line and meeting and talking to the children, she also relies on a solid crew to back her up. They include Melissa Templeton, head chef; Frances Smith, 2nd chef; Sharonda Wesley head, cashier/cold prep; Michael Knight, dishwasher/prep; and Susan Rowe, coordinator.

Farm to School Savannah: Growing is Knowing by Rhonda Barlow, MPH, RD, LD, CLC

t’s moving fast – spreading across Georgia faster than a dropped bowl of fresh green peas rolling across the classroom floor. Teachers, students, parents, and community leaders are getting caught up in the movement and learning that growing is knowing – -- knowing how to achieve academic success and improved health with learning to grow food. On October 1st, the Chatham School Nutrition Program Director, Lydia Martin, welcomed over 60 participants to a full-day Savannah Farm to School Workshop at the Eli Whitney Professional Learning Complex. Participants in the Workshop ranged from teachers and elementary students, to community leaders and local chefs. The primary organizer of the Savannah Farm to School Workshop, is Georgia Organics, a non-profit organization “working to integrate healthy, sustainable and locally grown food into the lives of all Georgians”. Other workshop sponsors included Action for Healthy Kids, Whole Foods Market, Chatham County Cooperative Extension Office, Chatham FFA, Chatham Parent Teacher Association, and Chatham School Nutrition Department.

Erin Croom, Director of the Georgia Farm to School Program, made “The Case for Farm to School in Georgia” as she encouraged participants to incorporate food, farm and nutrition education into the education process using the 4 C’s of Farm to School – Classroom, Community, Culinary, and Cafeteria. A few of the “Savannah Farm to School Stars” described their school garden program successes and challenges on a five teacher panel. As the teacher panel answered questions from the audience, they described how they teach Social Studies, math, and career ready skills to their students using the hands-on experience of working in the school’s garden. Workshop breakout sessions held in the morning and in the afternoon allowed the participants to learn how to create “Fun and Easy Garden Lessons”, use “Best Practices for Planning and Building Your Edible School Garden”, and experience the success of “Preparing Food with Kids: Hands-on Kids”. As the Workshop drew to a close, the opportunity was taken to begin the process of organizing the Farm to School efforts within the Chatham County School District. Their nutritional needs are much different than those of our dogs and ourselves, making their diets rather inflexible – as if we needed one more thing our cats are picky about. In comparison to a dog’s diet, cats require meat as their main source for protein. As cat owners we have to understand our feline friends’ specific needs and feed them accordingly to help them live happy healthy lives. After all, our cats aren’t small dogs and we shouldn’t feed them as such. Besides, our cats would probably get really offended if they were treated like dogs anyway.

It is much easier to find a wet cat food that contains zero carbohydrate sources and this can help to balance your cat’s diet. Wet cat food also supplies a much needed nutritional requirement in which most house cats are deficient – water. You’re probably thinking, “All this science-y nutrition stuff is great, but my cat is the pickiest eater in the world. I can’t force her to eat something she doesn’t want to eat.” While cats are notoriously finicky beasts, there are a few tips and tricks we can use to get our cats more interested in new foods. The first tip to get your cat to eat better is to have patience. You may have to test a variety of foods before you find the right ones your cat will eat. Speak with your local pet food store about their return policies on food. Some stores may offer to take back dry foods and unopened canned foods that your pet simply isn’t interested in. If that isn’t possible, the food your cat simply doesn’t like can help feed homeless cats if you donate it to a local animal shelter. You may also consider where you are feeding your cat. Their environments can influence their interest in eating, as sounds and smells can make or break dinner time for your cat. Dr. Jennifer Coates, veterinarian and author of many pet nutrition books, has a few suggestions to woo Whiskers into the mood for food. Considering the lighting, smells and sounds in your cat’s feeding area can go a long way to get them to eat. Cats are very reliant on their sense of smell, so avoid feeding near litter boxes, garbage cans or other highlyscented areas in your home. That wonderful potpourri you got from Pottery Barn might be the best thing you’ve ever smelled, but it might not be enjoyed as much by your cat. By providing a clean, dimly lit area without loud noises and with minimal interruptions are the best when meal time comes around. The more comfortable your cat is, the more interested they will be in eating. 34

Is that a can of wet food I hear? Another tip to consider is to gently warm your cat’s wet foods before serving. Adding a small amount of warm water to their food can help to release more of the food’s delicious aroma, which really helps to pique their interest. Cats may have quirky nutritional requirements, but that doesn’t mean we have to skimp on their diets. Regularly checking nutrition labels for any pet can go a long way in ensuring their foods are adequately meeting their dietary needs. When you’re shopping for pet food, just remember that your cat needs quality protein and doesn’t need a lot of carbohydrates. If you are diligent in checking, then there should be no worries about your cat’s health.

The coffee shop, especially in the 21st century, is a uniquely American institution, a respite for food and drink and a haven for friends and family to congregate. In the words of urban sociologist Ray Oldenburg, the American coffee shop has become a ‘third place’ - a venue between home (first) and work (second) that, much like a barber shop or a community center, becomes an integral part of community life and helps to enrich creative growth and interaction. Enter City Coffee, which opened earlier this spring on a popular downtown section of Savannah’s Martin Luther King Jr. Boulevard. With a focus on “culture, community, and coffee,” it’s a place where students can study, professionals can do work, and where those in between work and home can do, well, whatever. “We’re passionate about community here,” says Erik Carpenter, City Coffee’s owner and (often) day/night barista. “This is a place for people to do life.” And don’t be surprised if the welcoming staff knows your name -or even your order -- before you can say, “I’d like a large skim milk latte half caff, please.” “We like to call people by name when we recognize them,” says Courtney Carpenter, City Coffee’s house consultant. “We want to make people feel comfortable -- at home.” -Continued on Next Page

The store is managed by City Church Savannah, an ARC-affiliated church launched in February 2011 by new Savannah residents Carmen and James Simpson. The coffee shop runs as a non-profit, with its proceeds earmarked toward charitable causes. Walking into City Coffee, the interior is modern yet welcoming, with ample seating and wide open spaces. A multi-television art installation tells the story of the shop’s coffee provider on a loop. Elements of black, red and silver stud the walls of the main seating area. The shop offers free Wi-Fi and a spacious interior with ample space to get work done, enjoy a quick cup of coffee, visit old friends or make new ones.

A Coffee Revolution: City Coffee is the only local provider of Counter Culture Coffee, a sustainability-focused vendor based out of the Atlanta, Ga area. In most cases, the coffee berries that are served in City Coffee are harvested off the plant and are bagged and in stores ready for grind-and-serve within three or four days. “It’s really the freshest coffee you can get in Savannah,” she says. 38

Among the shop’s popular blends is the Ethiopian ‘Haru,’ an exclusive blend produced through the Yirgacheffe Farmers Cooperative Union with bright, crisp flavors of lime, jasmine, and sweet honey. City Coffee also stocks Bourbon Coffee, an heirloom blend known for chocolate and gentle fruit overtones, and Toscano, a ‘sweet’ Italian espresso blend that also doubles as an excellent darker roast cup. “Savannah is still considered a coffee desert. The coffee scene here is still developing,” Carpenter says. “We want to be a part of that growth.” A great brewed cup starts with superior equipment and City Coffee is the only coffeehouse in Savannah that uses a La Marzocco brewing machine. Named after the heraldic lion of its native Florence (‘il Marzocco’), La Marzocco has long been considered the ‘Ferrari’ of brewing apparati.

Menu and More: With the shop’s top-of-the-line equipment, City Coffee offers a full blend of all the classic coffee favorites -- brewed coffee, iced coffee, espressos, cappuccinos, Americanos, lattes and mochas. In addition to the everyday staples, City Coffee has its own line of specialty drinks for the adventurous.

Take for example, ‘Into Darkness’ an iced brown sugar latte with a chocolate drizzle or ‘The Midterm,’ an appropriately-named pick-me-up that combines Red Bull with a double shot of espresso. City Coffee also offers hot teas, chocolates and several blended coffee drinks. For those looking for more than just caffeineinfused concoctions, City Coffee has officially partnered with downtown staple Wright Square Café for an assortment of delicious edibles. Each day, Wright Square Cafe provide City Coffee with a fresh-daily supply of grab-and-go sandwiches, wraps, including a tasty roasted turkey and gouda on pumpernickel. Wright Square also supplies the shop with a smattering of sweets and baked goods -- chocolate cupcakes, cinnamon rolls, cookies, and breads and pound cakes by the slice in several flavors, including lemon, carrot, pumpkin and red velvet. “If you’re in a hurry to go somewhere, you want to be able to grab something and be on your way,” says Courtney. “That’s what you can do here.” Like many food and drink businesses in the Historic District, SCAD students are among the shop’s core constituency, and City Coffee accepts the SCAD Card for payment

A Global Community: City Coffee takes its responsibility to the world community seriously, and owner Erik Carpenter hopes to earmark a portion of the shop’s proceeds to Invisible Children, Inc., a 501(c)(3) nonprofit that hopes to bring worldwide attention to the activities of the Lord’s Resistance Army (LRA) in Central Africa, and its leader, Joseph Kony, whose practices include abduction, abuse and the military use of children. More locally, City Coffee has also begun sponsoring community events every Friday night, notably its Songwriters Night and Words at the City that alternate throughout the month. Songwriters Night provides a live music layout for a select group of musical artists to shine. Stop by on one of the event Fridays and you may see a violinist, or an acoustic guitar picker playing a tune. In the future, patrons can look forward to comedy, poetry and spoken word entertainment as well. “We want to give [these musicians] a chance to perform, especially for those who may have not debuted [for] the public,” says Courtney, who was recently married in June. “We want them to feel welcome here, to give another chance for people with that special kind of talent to connect with the public.”

Sweet Potato Gnocchi with sausage & red russian kale

Brought to you by Chef Lauren Teague of 22 Square Restaurant at Andaz Hotel At this time of year when the leaves are falling and the days are growing shorter, we are so very blessed to be harvesting wonderful greens such as nutrition rich kales, arugulas and hearty collards from our local farms. And of course, one of our favorite roots, sweet potatoes. This versatile vegetable is a super food filled with vitamins, beta carotene and anti-oxidants. In our restaurant, we love to really touch the food from hand rolling breads and rolls to making fresh pastas. We believe the more interaction you have with what you make, the more love will go into it. At 22 Square Restaurant, we bring food from the neighborhood

into our kitchen and prepare it in the most simple of manners. We believe when you buy high quality ingredients from the right people and places, there’s no need to fuss too much. On our menus we let the local farmers take the stage and the credit and you can do the same at home. Let the food you love be your guide. For this month’s recipe, the handmade sweet potato gnocchi is a great place to start trying to do that. Have your children help, invite your friends and make it a true family dinner. Most of all enjoy, laugh while you cook, smile with your friends and have a great meal.

Gnocchi ingredients

3 small to medium Sweet Potatoes 1 medium Russet Potato 2 Eggs, beaten 1 1/2 cups All-Purpose Flour, plus extra for dusting 1-2 tsp Kosher Salt pinch of Nutmeg

Directions

1. Preheat oven to 350 degrees. 2. Perforate potato and sweet potatoes on all sides with a fork and bake for about 45 minutes.

3. Let cool until they can be safely handled but still warm. Slice lengthwise and scoop out insides.

4. Add bea-ten egg and mash with fork till as smooth as possible. Add flour, salt and nutmeg. Mix together with wooden spoon or by hand until just combined.

5. Turn dough out onto a floured work surface. Gently knead

dough 3 or 4 times. Divide dough into two or three parts. Roll each piece of dough into a long thin roll about 1/2 inch in diameter.

6. Portion and cut the dough so you form pieces that are roughly ¾ inch in length. Press each rectangle down lightly with a fork. Remember to dust with flour liberally so dough doesn’t stick to work surface. 7. Bring a large pot of water to boil. Season with salt. 8. Drop gnocchi in boiling water. Boil for 3-5 minutes. They will

float once cooked. Strain and set aside.

Kale & Sausage ingredients

3 cups Kale, washed, large stems removed, cut into 1 inch sections 4-6 oz Sausage sliced (chicken, pork, smoked, Andouille) 4 Tbs. Butter ½ cup Chicken Stock Add Salt and fresh cracked Black Pepper to taste ¼ cup crumbled Goat Cheese chopped Parsley for garnish (optional)

Directions 1. Melt 4 tablespoon of butter in a nonstick pan and let the butter brown slightly.

2. Add sausage slices. Add kale and

stir till slightly wilted. Toss in the gnocchi that you’ve set aside. If pan becomes dry add a little chicken stock. Cook till sausage and gnocchi are well heated.

3. Adjust seasoning with kosher salt and fresh cracked black pepper.

4. Remove from pan and separate into bowls. Sprinkle with crumbled goat cheese. Serve immediately. wellf edsava nna h. c om | EAT
