so much to do, so little time Oh, who am I to complain when everyone I know is so busy! Everyone from Jen, Josh, Jimmy to Jesus are getting their businesses ready for the fall season. When school is back in session and the tourist start flooding the city again, you know it is also time for some of the best events and festivals of the year. Living closer to downtown, everywhere you look are ever larger herds of thick rimmed glasses and skinny jean students. It amazes me that so many can live in what does not seem to be a very large area of town, but then I look up at all the three story Victorians and remember that you can basically call anything with four walls a bedroom. It is no question that SCAD has made its mark on the city, not just from a visual point of view, but also from a social one. Since moving here in 2010, I have met so many SCAD grads who have decided to stay and make Savannah their home. They work in the restaurants, volunteer in non-profits and some of them even start their own. I believe they have played an even larger role than they realize, in shaping the area that stretches from River St. to Habersham Village. These young adults, with the money they spend and the places they choose to support, have made an impact on the types of businesses and events that are florishing today. Looking at some of the events coming in the next couple months and being flooded with requests to support them, made me realize and appreciate what a vibrant and socially conscious city we have here. Every other event I see is tied into raising awareness for some cause or money for a charity and it made me realize that we could do more as a publication to help. While other publications like Connect - who we adore and are so thankful to have in this city - are already so on top of event happenings; we wanted to figure out how we could make it easier for someone to decide which event to go to and how to get the word out for their own. So, we decided to launch our own event calendar at our website and curate the events which are listed. All events listed would have to fall in line with the Well FED lifestyle of socially concious and sustainable living. We know everyone’s time is valuable: The decisions we make on where to spend our dollars and our time have a lasting impact on our community and our planet. So you can be assured that it will continue to be our mission to help you navigate those waters and make more informed choices. If anyone has ever wondered how to respond to our slogan question of, “Are you Well FED?” Well now, you only need to attend one of our listed events, get to know the people and stories behind them, and the answer will be a most definite, “Yes!” See you then...

Does your family have a farming or beekeeping background? If not, how did you become involved? My father was involved in beekeeping when I was a young man. Working one day I found a swarm and decided to pick up beekeeping myself. My brother was involved with beekeeping in Alabama and encouraged me to continue with my own hives.

Any health benefits specific to honey consumers should be aware of? Honey is the only product made by mother nature that is sustainable to the human without being processed. Honey has its own enzymes and antioxidants. Honey contains pollen from where the bee collected the nectar and pollen. -Continued on Next Page wellf edsava nna h. c om | feed 23


What is one thing that you wish people would ask you about your products, but don’t? I have a diversified clientele. Everyone asks me anything and everything that has to do with honey. There is no question that hasn’t been asked. A commonly asked question would be “do you flavor your honey?” This answer is no. The flavor comes from the nectar of the flower. Another question people ask is “Do you cook your honey?” Honey does not need to be cooked when the honey comes off the hive before it is filtered and bottled.

What is the best thing about working with bees? I like having a complete understanding of how the whole hive works together as a family. Bees can produce the most amazing product available for human consumption.

Your favorite use for fresh honey? Pancakes, waffles, banana bread, coffee, corn bread, and of course biscuits.

Anything else you’d like to share with oure readers? I would like people to know that honey bees are becoming an endangered insect. Pesticides are a detrimental killer of the honey bee. Other threats include hive beetles and wax moths which can destroy an entire hive in one day therefore losing the colony as whole plus the delicious honey it would have produced. We can help the honey bees by promoting the importance of them and encouraging the bee keepers to produce more bee colonies.

Bringing Community Radio To Savannah For the first time in over 15 years, the Federal Communications Commission is making Low Power FM (LPFM) licenses available for community radio stations. A group of local radio enthusiasts is helping the Unitarian Universalist Church of Savannah apply for a 100-watt license with a transmission radius of approximately 4 miles—enough to reach downtown and much of metropolitan Savannah. Named “Savannah Soundings,” the new community radio station will showcase the “Hostess City’s” cultural diversity & creative depth with a mix of music, news, and talk. Savannah Soundings will be community radio with global soul.

To ensure that community radio is not only heard by the community, but listens to the community, Savannah Soundings is asking for your input and donations. “We definitely need a lot of supporters to help out on the funding. That’s the beauty of a crowdsourced campaign. If everyone gives just a little, you can really make things happen,” Weeks notes. Referring to the community survey, team member Sarah Todd points out “over 150 people have already taken it, but that’s only a start.”

Asked why the group wants a new local station, lead coordinator, Vicki Weeks said, “Savannah stands out as a leading thought community for the New South. We have a vibrant local arts scene, a healthy nonprofit sector, and a thriving small business community. Our ‘local’ radio, however, is corporate radio, with little room to shine a light on local issues, ideas, and talent.” Savannah Soundings will be a community radio station to provide a voice and visibility for Savannah’s outstanding local organizations, that don’t receive enough airtime on commercial stations.

When you wish upon a

O

n a cool, overcast day in March 2010, a small group huddled at the corner of East Broad Street and East Gwinnett Street in Savannah’s Historic District. A camera crew from the Robert Wood Johnson Foundation had its cameras and boom mics at the ready. Bill Lynes fired up his tractor, put it in gear, lowered his roto-tiller and began chewing up the ground on this vacant lot. The newly turned earth took a deep breath of fresh air and Starfish Community Garden was born. That day was the culmination of weeks of planning and visioning by project organizers Kelly Lockamy, Francis Allen and Leslie Lovell. Lockamy secured the land from Union Mission, Inc., while Allen and Lovell scoured the neighborhood knocking on doors, handing out posters and holding meetings to build up interest in the garden and to attract its initial group of gardeners.


From the start, the garden faced challenges. “At the end of that first day, we had a bunch of turned dirt and that was about it,” Allen (the Garden Manager) recalls. The site had no water. There were no tools. No lawnmower. The soil was very depleted and full of the refuse of yesteryear: broken glass, bricks and chunks of concrete. But every plot in the new garden was spoken for and the gardeners soon set to work. Then, the reality of gardening set in. The site had its advantages—plenty of sun (rare in the Historic District) and an abandoned building that could be used as a tool shed. However, the lack of experience of the gardeners, the poor condition of the soil, the difficulty of growing vegetables in a heavily trafficked urban area and the brutal Savannah summer gave many of the gardeners second thoughts. Francis and Leslie are the only gardeners remaining from that first year. “I had always thought of sustainability as being only an environmental concept,” says Francis. “I found out that organizational sustainability can be just as important a concept in organizing and managing a completely volunteer effort like Starfish Garden.” Raised plots with organic compost and the addition of a Master Gardener to the garden roster have helped the current gardeners achieve much more success than in the past. Fencing and a newly installed hedge are helping to address the problems of theft and vandalism. Working with youth groups doing mission work in Savannah during the summer has helped with tending the common areas during those hot months. Finding, keeping and adding more gardeners has strengthened the resolve of the gardeners while expanding the skill sets available to the garden. The plot renewal process for this year occurred in March and Francis reports that only one gardener did not renew. Thanks to a grant from Healthy Savannah the garden is expanding by building an additional 10 raised plots, all of which have been rented and planted. A grant from the Downtown Neighborhood Association facilitated the extension of a water line to service the new plots and the installation of what will grow into a natural hedge.

There is an actively managed composting operation. There are monthly socials at which the gardeners gather to compare notes, to exhibit their prize-winners and to commiserate over their failures. There is a site plan that will allow for multiple uses for the garden property. Plans have been drawn for renovation of the building to allow for better storage and more educational activities. There are even mushrooms growing in a dark corner of the tool shed. Today, Starfish Garden is a green oasis in the Historic District. Passersby stop to check on the progress and to chat with the gardeners. The neighbors feel protective towards the efforts of those that have worked hard to turn that corner into something special. Allen notes that new leadership and team members are emerging from the ranks of the gardeners. Francis concludes, “I want this to be here ten, twenty years from now. I want this spot and all that it offers to be a permanent part of this community, something for everyone to enjoy and to appreciate.” Those efforts seem to be on track.

It’s back to school time

again and the excitement of a new school year is still in the air. Teachers have prepared their classrooms and filled them with new school supplies to help students learn and succeed. But these classrooms will have one thing that is sure to have students more excited than new pencils and ensure their success in the most basic way – a nutritious and wholesome breakfast. A 2007 study review conducted by the Massachusetts General Hospital and the Harvard Medical School found that students who regularly ate a nutritious breakfast containing at least “10% of the RDA (Recommended Daily Allowance) for energy and food from two food groups” had better overall health, could concentrate better, and made better grades in school than children who did not regularly eat a nutritious breakfast. When a student eats a nutritious lunch, the academic success and better health, started with the breakfast, continues until the end of the school day.

Thanks to a grant award from the American Association of School Administrators (AASA), several of the Savannah Chatham County Public Schools are now offering an Expanded Breakfast Program in their schools. The goal of the Expanded Breakfast Program is to make eating breakfast at school easier for its students by taking the breakfast experience out of the cafeteria and taking it to the classroom or to the hallways. Breakfast in the Classroom will be offered at several elementary schools and Grab-and-Go Breakfast will be offered at several middle schools and all of the high schools. Schools involved in the Expanded Breakfast Program will offer Universal Free Breakfast for all the students. Thanks to the Healthy, Hungry-Free Kids Act of 2010, this year’s lunch offerings will continue to have healthy whole grains, and fresh fruits and vegetables on the menu. The New District Wellness Policy and Regulations will ensure that the school food environment is healthier this school year by limiting the amount of nutrient poor high calorie foods/beverages the students are offered during the school day. Well FED knows as dog owners ourselves, that sometimes something your dog does that is funny or cute at first, like darting out the front door and running to visit your neighbors, can easily evolve into a dangerous and established behavior. With these thoughts in mind we asked two local animal trainers to share some of their top dog training tips and tricks. So let’s go back to school and learn what we can do as dog owners to help our dogs be the best they can be.

Training Philosophy: Family pet training is not simply teaching dogs to assume postures like sit or down. It is more than repressing unwanted habits like jumping or barking. Successful owners give their dogs a rewardable behavior to replace the unwanted one(s). Good positive training, clear cues, firm, fair consistent rules, and lots of praise, rewards and fun will make your dog eager to use their good manners, spend time with you, and be your best companion. 2. GET ENOUGH EXERCISE: With the cooler weather your dog will want to, and need to, be more active. While shuffling your kids to soccer practice, don’t forget that your dog needs activity too. Even a ten minute walk in the morning or evening will make your dog happy. If only your kids were that easy. 3. ESTABLISH A ROUTINE: Dogs are creatures of habit, and may become stressed with the changes in routine that occur during back to school time. In order to reduce this stress, establish a feeding, walking, and play schedule to help your dog adjust to the change.

4. ATTENTION GETTING BEHAVIOR: Like kids, when dogs get bored they may misbehave in order to get your attention. Behaviors such as barking, chewing, and jumping often occur when dogs are bored. WAIT AT THE DOOR

CLAUDIA’S TIPS

by Claudia Black-Kalinsky This is one of my favorite exercises. It teaches dogs to look to their people for permission to leave the house or car, and helps start walks off on a calm and organized foot. It is especially important for people who have Door Darters, dogs who try to wiggle outside like eels every time the door opens. Finally, it teaches Impulse Control which is the backbone of any training program.

1. THE POWER OF TOUCH: Your

sTEP 1.The setup - Ask your leashed dog to SIT

2. SOCIALIZE SAFELY: Dog parks

about 4 feet from the door. Reach for the door knob with the intention of opening the door. Your dog will probably pop up. Quietly close the door, remove your hand from the knob and ask them to SIT again. Do not say NO, WAIT, or STAY. Your only word in step #1 is SIT. Remain patient, do this as many times as necessary, until your dog can sit in front of an open door for one full second, go to step #2.

Training tip – If your dog goes crazy when the front door opens you can begin teaching this behavior with a less emotionally charged, interior doorway. When you move to the front door you will have to start from step #1 but it should be easier.

sTEP 2. Ending the wait and releasing your dog - Look at your waiting dog and say OKAY in a happy voice. Then turn and walk through the door together with your dog. OKAY means the WAIT is over, you can move forward.

sTEP 3. Adding the cue,WAIT - Tell your dog to SIT and WAIT. Open the door, release with OKAY .

puppy should enjoy being touched and gently restrained. Puppies that learn to relax when handled are less likely to guard objects, food and places as adults. Pull your puppy into your lap, pet gently. Don’t put them down if they are struggling. Be happy, make lap time pleasant. are not safe puppy spaces. It is not necessary for your puppy to be sniffed, knocked over and mouthed by strange dogs. Not all adult dogs treat puppies well. Arrange play dates in safe places with friendly, healthy, appropriate dogs. Puppy classes are a great way to socialize.

3. THE REWARD REACTION: What you reward happens more often. Don’t reward nipping, jumping, and barking. Ask yourself, “Is this attention seeking behavior? Do I want to encourage this?” If not, stand up and walk out of the room. Any attention, touching, saying NO or even a look can unintentionally reward bad behavior.

4. CORRECTING UNWANTED’ BEHAVIOR: Do not use your puppies name if you are upset. Say HEY or EH instead. If you yell, “SPARKY, NO CHEWING, SPARKY NO TRASH, SPARKY DON’T ROLL IN THAT,” when you shout, “SPARKY, COME”, Sparky may think you are angry and avoid you. Save their name for good things.

Question: Why did we not start saying WAIT back at step #1? Answer: Because the word WAIT had no meaning to your dog when we started. Dogs learn better if they learn the behavior first and then have a word linked to it after the behavior is understood. If you keep saying WAIT, before your dog knows what you want it actually weakens their understanding of the cue.

sTEP 4. Tell them to wait before leaving the house 100% of the time. It will teach your dog to look for permission before they run out the door and can save their life. To learn more or contact the trainers

step 5. Begin asking your dog to WAIT every place, before they get into and out of the car, before they follow you into the kitchen, before they move to their dinner bowl, before they go to fetch a ball. Eventually you can ask your dog to wait while they are walking, or even running. This is how WAIT differs from a STAY. In an advanced WAIT you don’t need to ask your dog to Sit or Down first, they should WAIT even if they are in motion.

ican Coffee Farmers a Q&A with Central AmerCup Coffee Roasters by James Spano of Cup to

T

he fact is coffee doesn’t grow in Georgia. Commercial coffee production requires climates not found in the contiguous U.S. but can found in Hawaii and Puerto Rico. So with all of the coffee farmers I purchase from producing their beans outside of the U.S., you may wonder how I can learn about the coffee I roast and know that what I’m buying is the real deal? As a local roaster, it has been an important part of my business to be in direct contact with many of the coffee growers whose coffee I roast every day. I’ve been very fortunate to correspond with them about their coffee and farms and have even relayed to them some of the questions asked of me by my own customers.

I’d like to share with you the responses to these questions from three different farmers I purchase from with additional commentary by your truly. First off, let me introduce you to the coffee farmers: Raul Valdez (RV ) of the Urias Estate in Antigua, Guatemala; Rodrigo Dumont (RD) of the Malacara B farm in Anapaca, El Salvador; Franklin Garbanzo (FG) of the Garbanzo Nunez Estate in La Violeta, Costa Rica. 36

Q: Is your coffee Fair Trade? Fair Trade has been a buzzword among conscientious coffee buyers for some time. Without writing a whole article about it, here are the basics:The purpose of Fair Trade is to provide very small coffee farmers a means of selling their crop by joining a co-op of other small farmers to sell one large amount of coffee, increasing the likelihood of their product being purchased by larger companies. It also guarantees that coffee sold under the Fair Trade label will receive a minimum floor price for their coffee. Fair Trade farmers are also required to adhere to standards of labor and wages for their workers as well. Here’s what they had to say about Fair Trade, community involvement, and social responsibility:

Rodrigo Dumont: “Good treatment of the

employees has been an important factor of the business ethics for the our family, in every coffee plantation owned by our family there has existed a school, a clinic and a sports facility for the free use of the employees” The Malacara farm provides vaccination campaigns to employees and family, as well as free housing to its full time employees. All workers receive 30%-40% higher wages than the national average of coffee workers in El Salvador.


Fair Trade requires a portion of the profits co-ops receive to be used in their community.The distribution of these funds are decided by the co-op as a whole, so each farmer cannot necessarily do exactly what they would like for their farm or individual workers.

Raul Valdez: “On fair trade, I think we’ve been hurt by large buyers of coffee in Guatemala, and we pay very cheap to give people like you who are at the end of the value chain at high prices. The gain remains in intermediaries in Guatemala, a situation that made me look for new alternatives in selling coffee.”

Half of the land owned by the Valdez family is used to produce coffee.The other half is used for field crops such as corn, beans, and yams for workers to keep for themselves to provide for their families. The Urias Estate is a pretty decent sized farm . If a farm is above a certain size, they are excluded from being able to be considered under the Fair Trade label. Franklin Garbanzo’s solution to fairness was gathering his neighbors to invest in their own processing mill to improve quality.

Franklin Garbanzo: “El Beneficio El Cedro was created nearly 15 years ago. Coffee prices were low, and farmers tried to find a solution, they tried with other crops, but it did not work. The only good for these lands was the coffee, then fifteen of the farmers decided to found El Beneficio El Cedro, trying to get better prices for their coffee, offering quality, not quantity.” While Fair Trade guarantees a certain price for coffees sold under the Fair Trade label, it does not guarantee that the all of the coffee will be sold. Each year as much as 30% of coffees produced by Fair Trade co-ops is not purchased, and must be sold without the Fair Trade label at lower prices.

Q: Is Your Coffee Organic? Many farmers opt out of organic certification because they simply cannot afford it. When talking about preserving the land, the idea that kept coming up when talking with my farmer friends was not organic, but sustainability. Here’s what the farmers say.

RD: “What better evidence of a sustainable farm than that of a farm that has been around for more than 120 years? Our farm has been in our family since 1888. All of our coffee is shade grown. By maintaining the local shade trees, the flora and fauna are sustained. Most of the trees are from a local species which generates abundant organic matter because of its large leaf. Generally there is a density of 70 to 80 mature trees, plus 100 to 150 younger trees in development. Our soil treatment uses minimum to no herbicides or pesticides. We developed an annual fertilization program based on the nutritional needs of the soil and foliage. This is done based on soil and leaf analysis and calculated by a fertilization program that estimates doses applied per plant per year. Controlling fungi and rust is done by shade management (reduces infestation due to soil solarization), the fertilization program (helps to nourish the plant and makes it less prone to disease) and a controlled fungicide and herbicide program is applied just where the infections occur.” Raul, as well as Franklin, are members of Thrive Farmers Coffee. A fundamental condition of that membership is that participating farmers are not allowed to use fungicides or herbicides. -Continued on Next Page


RV: “The farm is operated with high production standards, not using herbicides or chemicals that degrade the land. Sustainable management is rich in organic matter, starting from seedlings, production, good agricultural practices, good milling process using 100% pure water and drying yards as a natural process.”

FG: “The land, here, is all, is our

life, we work in the land every day. What am I doing to preserve it? Nestled in harmony with nature without the use of chemicals that could harm the life of both vegetation and animals”

Q: Where does the coffee come from and how do you know the farmers are getting paid fairly? I’ll answer this one! It has been my goal in sourcing coffees to work as directly with the farmers as possible. When I can’t work directly with farmers, I work with importers I trust who have those direct relationships. These farmers mentioned today are great examples of direct relationships. I also know how much, to the penny, they have received for the coffee I buy from them. I was introduced to the Dumont family through a coffee friend working in El Salvador helping small roasters like myself buy directly from farmers. With my purchase came a contract of traceability, showing each step from the farm to my door. As mentioned earlier, Franklin Garbanzo and Raul Valdez both are members of Thrive Farmers Coffee. Thrive guarantees quality and sustainability of its members. Thrive does not buy coffee from these farmers and sell it to me. I buy the coffee directly from the farmer and Thrive helps get it to my door.

Q: What is it that you want to know about us as consumers? What would you like us as consumers to know about you? RV: “I would love to know more information of end

consumers and what they want to drink, and their impression of coffee in Guatemala. And let them know that with each cup of coffee they drink, there are many families and communities that are being benefited that are generating employment for many people who get up very early in the morning to participate in the production of a good cup of coffee.”

FG: “I would like them to know where it is produced

and how it is processed, who produces the coffee they are consuming, and to be familiar with the variety they are drinking. Also the effort that all farm families make to produce the best coffee in the world and thanks to the coffee, our children can go to school and university. Also I’d like you to understand the little support that agriculture coffee in our country receives.” As for Rodrigo, his approach was to come to the U.S. and find out for himself. I love seeing each farmers answer to my questions, how they were different, how they were similar, and how they made me think differently. I also love their commitment to their community. For them, coffee farming is not just about them, but everyone around them; great thoughts for this little businessman and you the coffee consumers, to take to heart.

Autumn Apple Puffs

ack to school and back to basics in the kitchen is easily established with this family friendly dessert for all ages. This is a great project for parents and children to make together for an after dinner dessert or a holiday gathering. I love to cook with my son in the kitchen which allows us time to bond and discuss his day at school while at the same time getting him excited about trying different foods. We enjoy seasonal rustic foods that are grown locally or in our own garden. My upstate New York farmland roots always stir up creative food inspiration for me this time of year. The growing season in Savannah is quite different here and my family and I love to take advantage of this by shopping local farmer’s markets 42

and Davis Produce weekly. My husband and I also have a new spot for date night, Whole Foods! It’s okay to laugh; I did too. For this particular recipe I used organic gala apples and fresh pecans from a neighbor’s tree. The smell of the pecans made me think of when the maple trees are tapped in fall season. We have all heard that an apple a day keeps the doctor away; Apples are popular for convenience, flavor variety and availability. Apples have a great crunch value which comes in handy with younger age children and making eating healthy fun. We always listen for the loudest crunch followed by saying, “mine was the loudest!”


This recipe is also easily adaptable depending on your personal favorite flavor profile. Smaller sized apples work the best for wrapping with the strips Puff Pastry Dough. Most any nut can be substituted for the pecan halves and local honey could also be substituted for the caramel.

Apple Puffs ingredients 4 Gala Apples ½ tsp. Fresh Ground Cinnamon Stick ½ tsp. Fresh Ground Ginger and small cleaned nub ¼ tsp. Fresh Ground Nutmeg ¼ cup Sugar (could omit/substitute brown sugar) 2 Tbsp. Melted Butter infused with whole cloves (low heat and 3 cloves for one stick of butter). ¼-½ cup Pecan Halves 2 Tbsp. of Water or Egg Wash (Egg wash creates a softer texture and darker golden brown color) ½ Package frozen Puff Pastry Sheets, thawed. (Thaw in refrigerator over night, remove from fridge before peeling apples) 1 cup Caramel Sauce or Local Honey

Directions

1. Heat the oven to 400 degrees F. (If your oven runs hot lower temperature by 25 degrees)

2. Mix cinnamon, nutmeg, ginger and brown sugar in a shallow bowl and set aside.

11. Starting at the bottom, wind 1 pastry strip around 1 apple, slightly overlapping the edges of the pastry use water to seal. Repeat with the remaining pastry strips and apples. Top each with 2 or more pastry leaves. Brush the pastries with the infused melted clove butter. Place the pastries onto a baking sheet that has been oiled or covered in parchment paper. 12. Bake for 25 minutes or until the pastries are golden brown. If the leaves are browning before the remaining puff pastry, lay a small piece of aluminum foil over the top and continue baking. Let cool for 10 minutes before serving. Then enjoy the sweet autumn goodness!

caramel sauce ingredients 1 ½ cup Sugar ½ cup Water 1 tsp. Lemon Juice 1 cup Heavy Cream 1 Tbsp. Butter (do not use margarine; can be omitted but must use caramel right away)

Directions

1. Combine sugar and water in a tall saucepan. Place over high heat and bring to a boil. Brush down sides of pan with pastry brush and water to remove sugar granules.

2. When sugar comes to a boil add the lemon juice. Do not stir the sugar. Continue boiling until the sugar caramelizes. (This is the dangerous part, the sugar caramelizes at 338 degrees turning brown)

3. Remove pan from heat immediately and place on a dry towel, GRADUALLY whisk in the cream. (Be careful this will create a large amount of steam like you’re having a facial)

5. Place water or egg wash in a small bowl and set aside. 6. Rub the outside of the apple with a nub of the fresh

ginger. Coat the entire apples with the spice mixture and set aside (this will begin a process known as osmosis; you will see juice of the apple form at the bottom of your cutting board and inside the apple as well)

7. Prepare your caramel, with caution! (This is an ideal time for the children to plant the apple seed and eat the apple skins due to the dangers of working with sugar)

4. Add the butter if desired and stir in until it all melts completely. 5. The leftover sauce may be stored under refrigeration for 2-3 weeks. About the chef:

9. Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 10x9-inch rectangle. Cut into 9 (1x10-inch) strips. Repeat with 6 of the remaining pastry strips. Cut 8 leaf shapes from the last pastry strip.
