Feelin’ the love Just this past month, on a cold day in late January, a few dozen people showed up at Southern PIne Company in Midtown Savannah. They came with their children, their spouses, friends and loved ones; not to party or listen to a band, not for some fancy dinner or festival - they came to work. the well fed

family

This was the second event held at Southern Pine by Maven Makers, a two man team with a dream of starting a community “makers’ space” that would provide access to tools and materials for those who could not afford such devices on their own. The first event was but a handful of people, myself included, who came out to help build work benches for The Savannah Bicycle Campaign. With materials harvested from a demolished home by the nonprofit Emergent Structures, we worked most of the day at Southern Pine on this project, while learning some valuable lessons on woodworking.

For the second event, Well FED was the recipient of everyone’s labor. Working well into the night, outside as the temperature dropped, teams designed and built magazine racks using reclaimed materials. We tried to stay warm drinking Perc Coffee and only stopped once at the very end, to eat tacos provided by Flip Flop Tiki Bar.

It was amazing to see how unique each design was and watch as each team turned these random pieces of wood into a finished product, right before my eyes. Neighborhood kids came out to join us and entire families got in on the action too. Now here’s the kicker: they paid to be here! All their donations went to help the Maven Makers project and their creations they worked so hard on will be donated to area businesses. We encouraged everyone to build racks to accommodate not only our magazine, but our other favorite independent publication, Connect Savannah.

What is your favorite product that you make and how do you like to use it? Roasted Pepper Salsa is my favorite and I like to use it as a condiment for sandwiches.

Does your family have a history in the food industry? Yes, my mother had a catering business in Philadelphia when I was growing up and Franco’s family had restaurants in England and Italy. Now our sons Matteo and Allesandro work in our family business.

Any health benefits specific to your products or methods?

Where do your ingredients come from? Are they organic or local?

Frali Gourmet Pasta is artisanal dried in a slow air process that never changes the integrity of the pasta. By using this old world method the carbs are not separated from the proteins, therefore your body does not store the carbs turning them into sugar, but burns them as fuel. With this technique your body also doesn’t get that bloated carb feeling, the pasta is easier to digest and it lowers the glycemic index that lowers your risk of type II diabetes. We extrude our pasta thru a bronze die (a die is what forms the pasta dough into its unique shapes), verses a Teflon die. The bronze die leaves the pasta rough which makes it better to adhere to sauce and it isn’t toxic or doesn’t change the pasta’s composition like Teflon dies.

More than 90% of our ingredients are local and we also use organic ingredients from our gardens and the farmer’s markets of course. The whole wheat we use is even Georgia grown!

Tell us something about yourself or your business that you think would surprise people…. Franco and I are both pretty open books, but something a lot of people don’t know is that I owned a dance studio in the 80’s and Franco performed theatre mostly comedies in Italy in the late 70’s. As for something surprising about our products, we just recently were asked to be represented by a leading organic and natural distributor. They gave us a list of over 100 preservatives that are forbidden in the products they sell, and we are happy to say that our “all natural” products really are all natural as we don’t use any of ingredients they listed.

What have you learned from your years participating in farmers markets? I have learned that Savannah has a great community of very diverse people who really care about each other and come together to support their community. Also I love and thrive on the interaction with my customers it makes my work worth it!

“No Candy” Fun Ideas for Valentine’s Day in the Classroom by Rhonda Barlow, MPH, RD, LD, CLC

f you want to get to the heart of a classroom, February is the month to do it. Innocent expressions of love -flowers, greeting cards, and lots of candy – are the order of the month. Students look forward to the traditional candy laden classroom Valentine’s Day party and it is a very sweet treat indeed – maybe a little too sweet. The idea of a healthy school food environment is currently trending and its causing many parents and teachers to rethink their students’ Valentine’s Day class celebrations. The century old tradition centered around giving candy to students as an expression love is a thing of the past. Classrooms are now opting for the creatively fun nonfood and/or nutritiously healthier alternatives to the sweet stuff.

If you equate healthy with boring or just don’t’ have the time to think creatively, don’t worry – fun and easy ideas are plentiful, you just have to know where to look. Search the internet and you are sure to find tons of ideas. For example, the website Growing a Jeweled Rose has an article titled “No Candy Valentines for Kids”; Babble’s website gives you “20 Ideas for a Classroom Valentine’s Party”; Parent Magazine’s website has a list of “Adorable Valentine’s Day Crafts & Snacks”; The New York Times’ Learning Network Blog website has interesting non-candy ideas on their “Valentine’s Day Across the Curriculum” segment. Some of the non-food projects or crafts include friendship bracelets with a tag that says “our class would knot be the same without you”; glow sticks with an attached tag that says “you make my heart glow”; a mini race car with the tag “you make my heart race”; “flower power” vegetable trays or paper blooms that can be made from repurposed/recycled items found around the house or classroom. The student receiving a fresh plum with an attached tag that reads “You are plum perfect” or a banana with the tag saying “I am bananas over you” can’t help but have a warm smiley feeling. Therapy Dogs Working K9 to 5 Written by Colby Branum of TailsSpin

umans have a long and complex history with dogs. They’ve been our companions for thousands of years, so it’s no surprise they are attuned to our emotions and even facial expressions. Our bond is part of what makes dogs excellent service and therapy companions. We’re familiar with service dogs and what they do; you can see them assisting the blind or wheelchair bound, but what about therapy dogs? We hear more and more about them it seems, and rightly so. The number of trained therapy dogs and animal-assisted therapy programs has grown exponentially since the program’s inception in the 70s. Today, therapy dogs are assisting in classrooms, libraries, hospitals, hospice centers, prisons, nursing homes, college campuses and even disaster relief programs. Even locally, therapy dogs and animal-assisted therapy programs are making a positive difference in our community.

Therapy dogs are trained to provide comfort and affection. Warm soft fur, a wet nose and wagging tail can go a long way in providing us with a more positive outlook. That may seem like a natural aspect of the canine-human relationship, but therapy dogs must pass rigorous trials in order to qualify and become a registered therapy dog. Therapy training ensures that dogs can handle sudden noises, new locations and get along well with people with canes or wheelchairs, children and the elderly. Locally, therapy dogs and therapy dog-driven programs are making a positive impact on children, elderly and everyone in-between. Our own Live Oak Public Libraries have a Dog Days reading program in which children can practice their reading skills by reading to therapy dogs. Children with dyslexia, who are new to English or who may otherwise have anxiety about reading aloud in front of their peers find comfort in reading to their canine companions. Therapy dogs provide kids with a patient, nonjudgmental presence which helps to build their confidence and become better readers.

Therapy dogs can provide support to people of all ages and in many different situations. Hospice Savannah has a volunteer-based Hug-a-Pet program that brings Therapy Dogs International-certified dogs into hospice facilities to provide comfort, love and a pleasant distraction for patients. These dogs provide more than just emotional benefits, but also physical as research shows petting and talking to dogs can lower our blood pressure and put us in a more relaxed state. The Hug-a-Pet program has done wonders to brighten the days and liven the spirits of hospice patients, and the weekly visits give them something to look forward to. A new program through the Chatham County Sheriff’s Office and the Humane Society for Greater Savannah is offering therapy and rehabilitation for Chatham County inmates. While the dogs in Operation New Hope aren’t certified therapy dogs, they are certainly making amazing strides in rehabilitating inmates. The program provides unadoptable dogs with a second chance as they are paired with lowrisk inmates for a four-week training course. The dogs live with the inmates in their cells and are taught basic obedience skills in preparation for adoption. The dogs aren’t the only ones getting help, however. The program offers an opportunity for inmates to give back to the community while they are prepared with new skills and knowledge that can help them find positions in pet-related fields upon leaving incarceration. Similar programs are noting that participating inmates are far less likely to return to jail, making this a truly successful rehabilitation effort. Operation Saving Jake is yet another important program working to train dogs, but these aren’t for your ordinary adoptions. The Port Royal, SC-based program identifies dogs in shelters with suitable temperaments for service and therapy dogs. Operation Saving Jake then works to train these dogs and place them with veterans suffering from PTSD or limited mobility. Therapy dogs can help traumatized individuals to overcome emotional numbness and help with feelings of isolation, ultimately helping to save the lives of many veterans. 20

The impact an animal can have on us is truly amazing. They support us in all stages and walks of life, patiently and loyally providing emotional support, comfort and companionship. Dogs love us unconditionally and mitigate our fear, anxiety and stress - shouldering our emotions with total non-judgment. Therapy dogs and animal-based therapy programs are beneficial to our community, and supporting these programs isn’t just for ‘animal lovers’. We can see that these organizations, volunteer programs and dogs themselves help to make a difference within our schools, communities and, best of all, within ourselves. ebruary is home to one of our sweetest holidays, but Valentine’s Day is not the only major holiday of this month. It is only fitting that this holiday of love and passion coincides with Black History Month. So who more fitting to have as our Seasonal Chef, than arguably one of the most passionate southern restaurants around. Well FED caught up with the owners of Sisters (also known by their former moniker, Sisters of the New South). Kenneth and Vicky Brown started the business when the majority of Vicky’s sisters were involved and so was born the name. While Kenneth has been in the restaurant business most of his life, he has plenty of help from the family, including sisters, Betty, Dorothy and Esterline; in addition to nieces, Precious and Shireas. They have made Savannah their home, doing what they know: Southern Cooking at its best. So for this month’s recipe, they chose an ingredient that is not only abundantly in season right now, but also very easy to prepare. The sweet potato is synonymous with the South and is used in a variety of Southern dishes, including Candied Yams, Sweet Potato Casserole, Sweet Potato Fries, and of course, Sweet Potato Pie to name a few. What better way to spoil your loved ones, while also celebrating the heritage of the South, than to try this traditional recipe for Candied Yams. Sisters reminds us, “Always cook from the heart, start with the correct recipe, but always taste the food to allow for that extra special adjustment for taste.”

Candied Yams for a crowd (about 12 servings)

ingredients 5 lbs Sweet Potatoes (actual # of potatoes varies) ½ lbs Real Butter (melted) 8 cups Sugar 2 Tbsp Vanilla Flavoring ½ Tbsp Ground Cinnamon 2 Tbsp Ground Nutmeg

directions 1. Preheat oven to 350 degrees. 2. Lightly grease a large baking dish (9x13). 3. Boil whole sweet potatoes in large pot about 10-15 minutes or until just tender. You can also bake whole potatoes on a cookie sheet until slightly tender. Drain. 4. Once cooled, peel and cut into 1 inch - 1 ½ in large chunks. Place in baking dish. 5. Combine all other ingredients (except sweet potatoes) in large mixing bowl. Pour mixture over sweet potatoes. 4. Cover baking dish with foil and bake until fully tender, 30-45 minutes.

Sapphire Grill: takes a bite out of the big appple Sapphire Grill’s very own bartender, Matt Garappolo, was chosen by Woodford Reserve Bourbon as one of the five national finalists in its 2013 ‘Master of the Manhattan’ competition, which was held Jan. 13 in New York City. Garappolo captured the audience’s vote for best cocktail, but fell just short of the judges’ $10,000.00 grand prize.
