it’s spring in the south, y’all! It may seem like a boring subject but I’m going to start this out by saying a little something about the weather because hey, it is important after all. It can determine so many things in our life; where we live, how we travel, where we travel to, what we eat, how we feel. After the drab of winter (and freak ice storms) slips away and just as soon as one of those crisp beautiful blue sky seventy-three degree days finds us, we (or maybe it’s just the optimist in me) think, “Woohoo! Goodbye jackets and boots, hello t-shirts and sandals. Spring is here!” Well, it may look and feel like spring but the official spring equinox doesn’t grace our presence until March 20th. Whether the calendar says it or not, you can find the signs of spring all over our beautiful city. Savannah’s first signs of spring start with the most obvious of all, the brightly colored azalea flowers that are emerging from their dormancy to temporarily fill our yards, squares, park and streets. You can taste spring in the offerings at the local Farmers’ Markets as hearty root vegetables begin to be replaced by harvests of strawberries, peas, peaches and okra. Oh my yum! Or even at your favorite restaurant that updates their menu with the changing of the seasons. That’s one sign of spring I am personally always most excited about...the food...who would’ve guessed? Another thing I’m exited about is this month, the month of March specifically. March happens to be a month of back to back celebrations for the Well FED family. We celebrate the anniversary of the birth of the idea behind this magazine, one wedding anniversary, four family birthdays including my own, and of course Savannah’s favorite holiday, St. Patrick’s Day. Which also means lots of long lost friends and relatives suddenly find a reason to visit, especially around the 17th. In part of our celebration of Savannah’s signature holiday and the thousands and thousands of visitors it brings with it, we have toiled night and day, hard and long to update “Savannah’s Largest Local Dining and Bar Guide”. That includes updating hours, descriptions, additions, subtractions and everything in between. If you think you know the Well FED Dining Guide front to back, I encourage you to look again. Let the spirit of the season inspire your dining choices and try something new and fresh!

Carolina Plantation Rice Does your business name mean anything special? YES, it does! From around 1700 to the 1880’s, (for almost 200 years!) South Carolina became wealthy and internationally famous for producing the most sought after rice in the world. Tell us about your farm: Situated on 24,000 contiguous acres of timberland owned by the extended Coxe family in Darlington SC, Carolina Plantation Rice is grown on 200 acres of rich alluvial soil beside the banks of the Great Pee Dee River which is our water source for flooding the rice fields.

Does your family have a history in agriculture and do they participate in the family business? Campbell Coxe is a fifth generation farmer of the Coxe property. Those before him grew timber, soybeans, cotton, corn, wheat, tobacco, and raised cattle. Meredith Coxe, Campbell’s wife, is in charge of PR, marketing, and searching out farmers markets. Their son, Cam Jr., 24, a student at the USC School of Law, and their daughter, Hagood,20, a junior at SCAD, work the farmers’ markets in Savannah, Charleston, and Columbia on the weekends and during the summer.

Did you know? A so-called “rice belt” runs around the earth from 50 degrees latitude in the southern hemisphere to 40 degrees latitude in the northern hemisphere. It is only in this “rice belt” that rice can be grown.

How is rice grown on your farm? We grow rice by building dirt dikes or walls around our fields to hold water in. We then plant the seeds in spring using a tractor called a grain drill. Once the seed has been planted and germinates and reaches a height of 3-4 inches, we begin flooding the fields by pumping water out of the Great Pee Dee River. As the rice plants grow, we raise the level of the water. In October, when ready to harvest, we drain the fields, let them dry out enough to support the weight of the combine, and begin the harvest.

Is there anything unique about of your products or are there any special health benefits? EVERYTHING we sell is grown, milled, packaged, and shipped right here on our farm! We serve our customers “ from farm gate to dinner plate”! Also all of our products are gluten free. Brown rice is full of B vitamins and fiber, when eaten together, cowpeas and rice make a complete protein…a vegetarian delight!

What is your favorite product you produce and how do you like to use it? Campbell and Meredith Coxe claim that they literally eat their original flagship Carolina Plantation Rice white rice 5-6 nights a week with dinner. “The meat and the vegetables may vary, but rice on the plate is non-negotiable. “ What have you

learned from your years participating in farmers markets? Farmers’ markets give farmers a platform and a spotlight from which to sell what they grow. They have helped bring farming back to the forefront of the consumer’s mind. Because of the markets, we farmers are no longer confined to sitting on the sidelines as the forgotten “middle-man. They personalize the situation and they educate the consumer in a way that benefits everyone.

Why participate in farmers’ markets? First of all, we love the opportunity they provide us to actually meet and talk with our customers faceto-face. We cannot do that anywhere else! Farmers’ markets are popping up all over the country; they are finally (in our opinion), becoming the new way to shop for those who are conscientious about the quality of the food they and their families consume. Also we are thrilled that markets like the Forsyth Market, through their partnership with the Wholesome Wave and EBT/SNAP programs, are making the freshest and healthiest foods available to those who normally could not afford to buy them.

Stand

This past January 25th, members of community joined Well FED and Maven Makers at Southern Pine Company of Georgia to design and build magazine racks that will be used in area local businesses. Using reclaimed materials from Emergent Structures, with supplies and tools from Closet and Cabinet Experts, attendees learned the basics of the design process from Teacher of the Year nominee, Tim Cone and Chief Design Cultivator of Maven Makers, Ty Donaldson. Undeterred by the cold weather, teams labored well into the night. Families, friends, couples and even neighborhood children came to lend a hand and participate in the competition. Prizes were awarded for “most original design”, “most sustainable design” (using the least amount of wood), and the grand prize went to the perfect combination of both (see photo on right). Everyone was a winner though and were treated to coffee, gifts and dinner from Flip Flop Tiki Bar. Take Time for

Breakfast the smartest meal of the day

uring National Nutrition Month, lunchrooms across Chatham County will celebrate and promote the “smartest meal of the day” -- breakfast. This year’s theme is “Take Time for School Breakfast”. National School Breakfast Week (NSBW) was first celebrated in 1989 to highlight the importance of not skipping a nutritious breakfast. School breakfast celebrations during the week of March 3rd - 7th will include recipe design contests, taste testing of various breakfast items, and other activities. This year’s theme encourages students to take the time to break the nights fast (break-fast) with a nutritious meal in the morning. Although the habit of skipping breakfast is common among students (and parents), taking just five minutes in the morning to eat a bowl of whole-grain cereal or a sandwich will greatly increase the brains ability to learn and the body’s ability to sit still. Scientific studies have shown over and over that children who skip breakfast on a regular basis do not learn as well as children who regularly eat a nutritious breakfast. A 2005 study published in the May issue of the Journal of the Academy of Nutrition and Dietetics, found that students who consumed breakfast remembered what they studied better than the non-breakfast eaters. The breakfast eaters made better grades on tests and came to school more often than the non-breakfast eaters. Low energy levels, consumption of high calorie foods, unstable mental moods, increased irritability, and nutrient deficiencies are common consequences of skipping breakfast. Planned events, contests, and activities will vary with the school site, so check with your child’s School Nutrition Manager for a list of cool happenings during that week. TEAMS SUPPORT THE HUMANE SOCIETY FOR GREATER SAVANNAH

n March 22, teams of dog lovers (most with their dogs) will gather at Messiah Lutheran Church to chat with neighbors and friends and walk a beautiful 1.5 mile course into Deer Creek with their team members. It’s the 8th Annual Dog Lovers’ Walk benefiting the Humane Society for Greater Savannah. Anyone who cares about the welfare of homeless animals in our community should get involved in this worthwhile event by forming a team. It’s easy! Choose a name for your team, then sign up online: go to www. HumaneSocietySAV.org and click on the Dog Lovers’ Walk photo, or call Lauren Grant at 912-354-9515 x106. Once your team is registered – and you have made your contribution – start recruiting family, friends, neighbors and colleagues to join by making their own contributions to your team. On Walk Day, fun prizes will be awarded to the teams that raised the most money.

Businesses can join in the fun, too by creating a company team. Encourage your dog-loving employees and favorite customers to join your team and attend The Walk. You might want to generate even more team spirit and create special t-shirts to advertise your business! The Humane Society for Greater Savannah is the only non-profit shelter in Chatham County. Its mission is to help ensure that all pets live in loving homes with responsible owners by conducting adoptions and providing education, owner assistance and affordable spay and neuter services. Last year, HSGS found loving homes for more than 2,200 pets.

Cauliflower Vanilla Bisque

hef Patrick Gilpin is the newly appointed Chef de Cuisine at the recently renovated Savannah staple Soho South Café. The restaurant was acquired & updated by the local Daniel Reed Hospitality Group in 2013 and joins their dynamic trio of establishments including Local 11 Ten (including Perch Rooftop Bar & Lounge) and The Public Kitchen and Bar which also graces the same block as Soho between Bull and Whitaker streets. The new look and feel is fresh and inviting and of course, the food lives up to the standard upheld by all three restaurant concepts in which they produce almost everything from scratch and include locally grown or produced ingredients. So without further ado, let’s hear what Chef Patrick has to say… I feel it is very important for me as a chef not to change some of the familiarities that belonged to the original Soho and its menu but to enhance the overall dining experience. I hope that the locals who once loved the “old” Soho and visiting tourists alike stop by to experience and taste what the “new” Soho has to offer. For this recipe I focused on the sometimes overlooked by versatile cauliflower. I believe that cooking seasonally gives the food its true justice meaning in that you’ll always get the best flavor from a fruit or vegetable when its fresh, ripe and in the peak of its’ season. Cauliflower vanilla bisque is a soup that’s just perfect for this time of year as the end of winter transitions to early spring. The recipe is simple, has incredible flavor, and can be adapted to fit your own tastes or dietary needs. If it happens to be humid and hot outside (as we all know lowcountry weather has a will of its own), try the soup chilled.

Cauliflower head (cut into florets) Makes 8-12 servings Garlic cloves (minced) White onion (diced medium) Vanilla extract or 3 vanilla For Garnish: beans scrapped Pinch of orange zest 1 Quart Heavy Cream Toasted almond slivers 1Â˝ Quart Whole Milk Chopped Parlsey Âź cup Honey

Sweat onion and garlic 6-8 minutes until translucent over medium high heat. Stir in cauliflower florets, milk, cream and vanilla. Maintain heat 8-10 minutes until cauliflower is tender. Turn off heat and add honey. Puree bisque in blender until chunks become smooth. Top with your choice of toasted almond slivers, pinch of orange zest, chopped parsley or a little bit of all three.

good drink is like a good story: high and low notes, a subtle and a well-rounded finish, all created by a person dedicated to their craft. It should surprise you, comfort you, and above all, a good drink should take you elsewhere, even if just for a moment. Like stories that take a while to appreciate, Prohibition-era cocktails are coming back, surprising people with big tastes and even bigger tales. From 1920 to 1933, when alcohol was illegal, many rushed to soften potent bootleg liquor with a wellcrafted cocktail that cut the burn and added a note of elegance to the underground speak-easy. While America’s ban didn’t last, the legacy of those specialty crafted drinks has lived on, gaining in popularity as many are looking to return to more authentic experiences, where food and drink are made with craft and love. Created by husband and wife duo Chef Hilary and Maureen Craig, Alligator Soul has been a Savannah staple for almost a decade, but it’s in the past seven years, that the restaurant has evolved into one

of the forerunners in local and organic dining. Like their name states, soul is about individualism, beliefs and values that you hold close, a family legacy passed down generation after generation. This is the mantra behind everything at Alligator Soul. When I’m walking down their steps, the brick walls vibrate with the feeling of the unknown and something different. Upon entering, I feel like I’ve already stepped into a Gatsby inspired party, complete with fireplace and a low-lit bar beckoning me with its sirens song: Imbibe. Over that faded light, the bartender is already fixing up cocktails for the tasting. Looking over the bartender’s shoulder, eyeballing each ingredient with a precision that comes with time and experience, is Alligator Soul’s General Manager, Jason Johns. Johns’ passion for sourcing local food from community farms

The restaurant divides its cocktails into two groups: Classic and Modern. One glance down the drink menu and you’ll see some time-honored classics: The OldFashioned, Moscow Mule, and The Manhattan. The other side? Classics gone wild. When I ask Jason what’s the most popular drink they have on the menu, he doesn’t even hesitate, “The Etta James.” “It’s a drink with soul. It’s got a jazzy, blues theme.” It starts with small batch organic gin, house-infused with organic cucumber and blueberries, finished with “just a splash” of effervescent citrus. When I ask, what is it about the drink that lends to its popularity, Johns mentions that it is the one drink that has stayed consistent over seven years worth of evolving menu changes. “It sounds so simple” he goes on saying. “But it has stuck. “ Equally on par with the drinks is the cuisine. Enter Chef Stephen McLain, whose dishes at Alligator Soul have been equal parts DIY and well-honed experience. “I pay tribute to Hilary and Maureen – a lot of the recipes we have are his.” says McLain. “It’s an honor.” McLain pays tribute to Hilary, keeping his legacy alive, while putting his own thumbprint into Alligator Soul’s culinary identity. “We keep it fresh, partnering with more local farms and organic ingredients. That’s really important and I’d like to see it continue.” 64

That’s really important...” - Alligator Soul Executive Chef Stephen Mclain Both Chef McLain and General Manager Johns collaborate on pairings, making sure that all ingredients are not only local and organic, but that they create a complimentary relationship - one that leaves the customer not feeling like they just ate a meal, but had “an experience”. It is a relationship that only serves to showcase a very specific environment. “Jason and I work very closely together” McLain tells me. “We get together and talk about the prohibition style of the place. Even when you go down those stairs, you have that feel. With the food, you just want to add to that even more. I like to call it eat-well, speak easy.”

I watch as our bartender glides to and fro, grabbing a little of this, a little of that, each move reflected in mirrors behind the gilded bar. He’s working on the house special, Bathtub Gin, a drink that’s equal parts citrus and smoke. “We take Kentucky Black Dog moonshine,” says Johns. “It’s made from corn that’s smoked in tobacco warehouses, and it gives the moonshine a smoky taste. We then add organic agave and muddled orange.” Of course, while Southerners are eager to abide by tradition, many might be skeptical of the old white lightning. Johns is quick to defend the good liquor. “People are put off by moonshine, but if anything, with the right perception, it can be beautiful. Plus, I took it as a personal challenge. Not a lot of people drink moonshine. It’s a shout out to the prohibition era when people made drinks and spirits in their bathtub.”

The bartender adds a touch of grenadine on the top of my Bathtub Gin and it’s a bit like watching the sunset. At first sip, you would swear you were knee deep in the tobacco soaked corn, but it soon fades, leaving a citrus blend on the top of your tongue that’s a bit like a Savannah summer. He also fixes a specialty cocktail that isn’t on the menu: The Speyside Highball. The challenge? Turn a scotch whiskey into a drinkable cocktail. With an 8-year organic spiced Scotch, the bartender adds organic pineapple and lemon juice, simple syrup, Creole bitters, and a full sprig of rosemary, finishing it with a splash of soda. The taste is a throwback to the formula that the Bathtub Gin relies on: smoke, then summer, seasons that mix in your mouth and leave a perfumed scent on your nose. It’s enough to leave you wanting more and that is exactly what Alligator Soul is after. Food and drinks, like good stories, are best when they can both surprise and comfort you. When you know for certain that they are born out of love. When I ask what the most important part in all this, Johns says this “You never want to get away from who you are and where you came from. That’s why this is so important.” I fade into the background jazz, senses heightening, and swear that this might just be the underground speak easy that members of my own family visited in Prohibition time. It’s not of course, but after sipping on my Speyside a bit more, letting the scotch linger on my tongue, I’d absolutely believe it. Alligator Soul is located 114 Barnard St. in downtown Savannah. The older generation of Legionnaires seems to have come to terms with sharing this space with everyone from the artists and hipsters, to the working class and everyone in between. Hardly a thing has changed in this place in over fifty years, nor does it have to. With the new addition of “Betty Bombers”, an allAmerican classic eatery, next door; nothing says local or speaks to the simple heart of Southern America, better than a pit-stop at this historic birth place of the Mighty Eighth.

The Rail Pub 405 W. Congress St. 912.238.1311 On surveying our readers and friends, this was one bar that always made the list for top local’s spots. With multiple floors and ample outdoor seating, The Rail seems the right fit for just about anyone and their brother. No gimmicks or themes here - just the kind of bar you can drop your peanut shells down on the floor because no one gives a damn and immediately feel like you’ve just found your new regular spot.

The Jinx • 127 West Congress St. • 912.236.2281 On first entry, a tourist might think that their lack of black tshirt or piercings could get them the boot, but beneath the exterior edge lies some of Savannah’s friendliest bartenders. Their patrons are as wide a mixture as their tatoos, as The Jinx is a bastion of live music for many musical genres, from hip-hop to hard rock and way way beyond. Larger metropolitan cities might have a dive like this on every corner, but locals appreciate that we at least have the one and it serves us well.

Abe’s on Lincoln • 17 Lincoln St. • 912.349.0525 As the publisher of this magazine, i’m supposed to at least give the illusion of being impartial, but I’ve got to admit that this is my go-to spot. My wife’s drawing of honest Abe accompanies the dozens of others that decorate the bar and this is where we usually start or end a night downtown. A long time holdout for locals, as it is a bit off the beaten path. Still, I spot tourists everytime I’m there and they say the same thing each time, “I asked a local where to go and they told me to go to Abe’s...”

With some of the most aggressive drink specials in town, available 6 nights a week, it’s easy to get more than your fill here. Extensive selection of craft beer and specialty drinks. The bars on each of the two floors accompany a double level interior courtyard, rarely seen anywhere in town and is a welcome treat for smokers or anyone wanting to take in the spring weather.
