FIND YOUR PASSION This month’s issue is all about the love. Fitting we start with one of the most passionate people i’ve met since coming to Savannah. I can remember the first time I met Ashley Workman, founder of BYOB (Bring Your Own Bag). She was so full of energy and optimism for her cause, so ready to give everything she had. That was back in 2013 and she has not relented one bit. But passion takes many forms, whether its a love for your craft, as in the case of the four artisan bread makers we featured this month or a tea shop that is dedicated to the art of preservation of one the world’s oldest beverages. For me, my new passion lies in the 7 pounds, 7 ounces, lying next to me right now. Everett William Harper Teran was born just this past week and my first child and son is about all I can think about right now. I focus on typing softly, so as not to wake him; rocking his bassinet with one foot, while listening to a lullaby station on Pandora. (Did you know there is an entire station dedicated to lullaby renditions of popular songs? I never thought i’d hear the instrumental lullaby version of “Nothing but a G Thang”, but I kid you not, it exists!) I think passion is about finding something that is bigger than yourself. Something that makes you get out of bed, and can keep you up at night. (Literally, in my case.) And that is what I love about the priviledge of being able to do Well FED. Its a constant reminder of the passion that is all around us everyday. So whether it a child, a cause, a loaf of bread or a cup of tea - I hope we can to do our part in helping you discover your own new passion. Savannah is full of it!

BAG IT TYBEE Local activist continues campaign to ban plastic bags in Tybee. Editorial by Coco Papy Ashley Workman is going against the tide. She’s been actively campaigning to create a ban on singleuse plastic bags at restaurants and retail outlets on Tybee Island. When I ask how that has been going here, she responds amiably “It has been an interesting ride to say the least.” Workman is tailing off of a national movement that has been building for quite sometime - Bring Your Own Bag, aka, BYOB, a movement that raises awareness of the wastefulness of to-go bags that are given away by restaurants, markets and shops. She promotes using reusable bags. Workman’s own BYOB Project began in a similar vein, but where does Workman’s real strength come from? She’s witnessed the impact on a personal level. “ I’ve worked to raise awareness of the unnecessary waste and dangers of single use plastic bags within the food and beverage industry where I have worked for the last 16 years.” she tells me over email. “ I’ve always had one eye on the planet and felt that it was such a simple and rational way to minimize the potential for plastic bags [ a known destructive force ] to end up in our waterways.”

As you can imagine, Workman’s cause has been both celebrated and pushed back. As Workman geared up for another City Council meeting, she sent out an email saying this: “There is great outside threats and pressures being made by lobbyist groups that have stalled our considerable momentum. No one likes to go to court or tangle with legal fees but we can not let these fears stop our progress to preserve our coastal community.” Savannah is a funny place: we drag our feet into the future while complaining that it isn’t here quick enough. And it is easy to understand the resistance because of the ease and access of plastic bags. Hell, there are plenty of times where I’ve left that designated canvas bag at home or in the car and then covertly used a plastic bag. Hell, I’ve tried to then justify it, but the fact remains that plastic bags are no bueno. -Continued on Next Page WELLF EDSAVANNA H. C OM | COMMUNITY 11

the Washington, D.C. based group of plastic bag manufacturers, aka, the lobbyists on behalf of the plastics industry. Plus, let’s not forget that here in the great state of Georgia, we happen to have a little company known as the Paper Chemical Supply. They are the second largest paper supplier in the US and might even benefit from the switch of plastic to paper.

Plastic bags account for an enormous portion of our waste in landfills and since they are a non-renewable natural resource (cough, cough-petroleum), they can take up to “1,000 years to decompose on land and 450 years in water”(BBC World News). Oh, and what happens during that 450 year time they are hanging out in the ocean? That’s 450 years of being accidentally swallowed by marine life, eager to get a jellyfish snack, who then end up choking on a bag. Also, can we just agree that they are tacky (so says my southern mama). I wont be unfair to Savannah about the plastic bag ban. The US is considerably behind the times when it comes to the plastic bag ban: Australia, Germany, even Pakistan gets it. And while the plastic bag ban movement is still blossoming in the US, it’s progress has been quick, hitting places like North Carolina’s Outer Banks, Hawaii, and most presently in California, where the movement arguably began. In October, the City Council worked towards several ideas. Lee Califf, the executive director of the American Progressive Bag Alliance, a name which seems semi-ridiculous once you realize that it just so happens to be a lobbying group made up of those from the plastics industry, argued that plastic bags are “actually a more environmentally friendly option than other methods of bagging.” I’m all for swaying an argument, but even this is a stretch for 12

Of course, using paper isn’t the magic bullet either, according to Worldwatch Institute, “the pulp and paper industry is the 2nd largest industrial user of energy in the U.S.” This is not that environmentally friendly, but a much-needed baby step to getting residents moving towards using their own bags. Especially when we have facts like these from the Department of the Environment and Heritage, they claim that “46,000 pieces of plastic contaminate each square mile of our oceans” and “only 1% of plastic bags are recycled annually nationwide from that same source” says Worldwatch Institute. Even the locals will even tell you, Buddy Brinkley of Captain Mike’s Dolphin Tours reported to the Savannah Morning News about witnessing an adolescent dolphin struggling with a plastic bag wrapped around it’s flipper. He’s also commented on the amount of plastic bags he sees underwater while diving in local reefs. Workman’s hurdles are two-fold: changing culture and the sweet siren song of money. Changing cultural norms is hard, but can be done. It is easy, far too easy, to get used to something and to think that just because it has worked, that it is the best option. This is obvious in the very honest fears of Tybee business owners, who believe that plastic bags provide more convenience. If that convenience isn’t there, then it’s negative effects will snowball: No plastic bags? No business? Then no local-option sales tax, no jobs, no property taxes, and Tybee just washes up completely and turns into a wasteland. Ok, I may be catastrophizing things a bit. Since when have locals ever had to pay for a plastic bag? Businesses are often generous with them and if you can look me square in the eye and say you haven’t had your groceries bagged so inefficiently, you’ve ended up leaving the store with 10 items and 14 bags, I’m calling malarky. This happens all too often. But while some might consider BYOB an “inconvenience” in the beginning, might feel differently five years down the line and wonder how they ever did without it. US EPA Lead Regulations, The Endangered Species Act, The Safe Drinking Water Act, were all born from inconveniences too.

So we can try to minimize our use of plastic bags, but what we need are regulations in place that actually ban them. Workman’s real fight will be going up against the super - monied lobbied forces. She will have to take on industries that might not have our best interest at heart, but certainly have a lot on the line when it comes to their own stakeholders. Why else would you name your lobbying group something that borrows so heavily from environmentally-inclusive language, i.e. The American Progressive Bag Alliance? Surely it isn’t because your lobbying group thinks that plastic is eco-friendly, but that the cultural tides are turning in the favor of a more sustainable future that is without plastic. Call Workman what you want, but folks, we all have a dog in this fight, even if we can’t see the long-term impact or the point. This issue affects us all. Think banning plastic bags will hurt business? If you feel like making tourists spend more money, nothing says happy vacation like a reusable shopping bag with Tybee Island on it! Don’t want to have to purchase a reusable bag? Workman with BYOB will send you two bags if you sign up with them. Think the hippies need to just be quiet? Tell that to Tybee locals who have bags floating around their island and tell that to the turtles and dolphins who are choking on them. Seriously folks, we got to do better- not just for the convenience sake (can we all agree to disagree that convenient does not always equal better?) but for ourselves, our kids, our beloved Tybee, our future. We can hem and haw, but at the end of the day, Workman is making a damn good point and we certainly could do right by ourselves and our community to rise to the occasion. “Long story short” says Workman, “once I really started seeing how bad the problem really was I couldn’t unsee it and thus my purpose in life became very clear - defend the ocean and all of it’s inhabitants.” The next city council meeting is February 12, 2015 at 7pm. How will you rise to the occasion?

Thinking Outside the Red Box Valentine’s Day for children doesn’t have to be so sweet.

ebruary is the time that children and adults think about matters of the heart. Simple tokens to express love – flowers, greeting cards, and the traditional red box of candy – are the order of the day. As the desire to have a healthy school food environment is gaining popularity among many parents and teachers – thinking outside of the heartshaped red candy box has become a must as Valentine Day class celebrations are planned.

Instead of offering candy to students as expressing of love and care, teachers and parents thinking outside the red box and opting for the creatively fun nonfood and/or nutritiously healthier alternatives to the sweet stuff. If you think non-candy treats are boring or just don’t’ have the time to think creatively, don’t worry – fun proven ideas are plentiful; you just have to know where to look. Internet resources for children are full of ideas. For example, the website Growing a Jeweled Rose has an article titled “No Candy Valentines for Kids”. Babble’s website gives you “20 Ideas for a Classroom Valentine’s Party”. Parent Magazine’s website has a list of “Adorable Valentine’s Day Crafts & Snacks”. The New York Times’ Learning Network Blog website has interesting non-candy ideas on their “Valentine’s Day Across the Curriculum” segment. The various ideas found include friendship bracelets with the tab attached saying “our class would knot be the same without you”, glow sticks with an attached tag that says “you make my heart glow”, a mini race car with the tag “you make my heart race”, “flower power” vegetable trays, and paper blooms that can be made from repurposed/recycled items found around the house/classroom. The student receiving a fresh plum with an attached tag that reads “You are plum perfect” or a banana with the tag saying “I’m bananas over you” can’t help but have a warm smiley feeling. ave you already started working on your annual resolutions? For most of us, these are about personal changes to make this year better than last. Here’s a suggestion that could really make the new year better – include your best buddy, your dog, in your resolutions! Obviously, I am a dog lover, but I must admit I have friends whose houses I dread visiting because their dogs are so poorly behaved. I get jumped on when I enter the home; the dog climbs on me once I sit down and begs for food while we are trying to enjoy dinner. Does this sound like your home? Your dog? Not to worry. Many people are overwhelmed by training a pet and simply give up as their cute puppy grows into an out-of-control adolescent or even worse… an adult dog. But contrary to popular belief, you can teach an old dog new tricks. So resolve in 2015 to form the respectful bond you’ve always wanted with your dog and be proud of the pooch you raised. Here’s a great way to start.The Humane Society for Greater Savannah offers Canine Good Citizen (CGC) classes and certification. Every six weeks a new class begins. Come in and reserve your spot now as the number of dogs per class is limited.The CGC Program is designed to reward dogs who have good manners at home and in the community. The Canine Good Citizen Certification is a two-part program that stresses responsible pet ownership for owners and basic good manners for dogs. All dogs who pass the 10-step CGC test receive a certificate from the American Kennel Club. -Continued on Next Page

As you work to teach your dog the CGC skills, like calmly greeting a stranger and walking through a crowd, you’ll discover the many benefits and joys of training your dog. Training enhances the bond between you and your dog, facilitating improved communication and understanding. Dogs who have a solid obedience education are a joy to live with. They respond well to household routines, have good manners in the presence of people and other dogs, and they fully enjoy the company of the owner who took the time to provide training and intellectual stimulation. Having a well-behaved dog makes it easier to rent, to find a pet sitter, to have company over or to travel. Wouldn’t it be nice to take your dog on a vacation with you? Or, relax with your guests while the family dog lays quietly on his or her bed? The CGC Class is especially beneficial to Pit Bulls and their owners. We all know that breeds are not necessarily “born aggressive”. Bad dog behavior is generally due to inadequate knowledge on the part of the owner. Dogs have their own language, and we, humans, need to understand it in order to communicate and modify dog behavior. The Pit Bull was once called the Nanny Dog, because it often looked after the children. Media scrutiny and a number of tragic incidents involving Pit Bulls, make it more important that ever to have ambassadors for the breed. Savannah should take pride in having the friendliest and best behaved “bullies” around. Showing off their CGC-acquired skills in public as well as providing the certificate to potential nay-saying landlords and friends who doubt their temperament, can help to change opinions.

Originally, HSGS offered the CGC instruction only to our Operation New Hope graduates (see: Well FED Issue #40, Feb. 2014) – training begins while the dogs are in jail. Adopters are then required to return for a couple training classes, free with the adoption, so they can be certified together. This proved hugely success for adopters, so we decided to offer it to everyone. Note: the Humane Society for Greater Savannah still offers free training classes for dogs adopted from us. Our goal is to promote a healthy start for every dog as it adjusts to its new home. HSGS adopters are encouraged to continue training by signing up for the CGC Certification as it is more structured and provides more training tools. The CGC classes are held on Saturday afternoons throughout the winter and on Wednesday evenings during the spring and summer. Call or stop by the Humane Society for more information. Only one dog per person. The six-week class costs $250, which includes formal certification. Breaking Bread “Where do you find passionate bread-makers in Savannah?” Story and photos by Chris Kubick f you ever talk to people from the northeast, we will vouch our undying love for our carbohydrates – our bagels, our pizza, our fresh loaves of bread. Having lived in Savannah for over seven years, I began wondering why the same passion for bread was not as prominent here. Often, when people think of the South, a barrage of food stereotypes simmers to the surface: biscuits and gravy, collard greens, fried chicken - but we never envision fresh, steamy loaves of artisan bread.

I began asking locals,“Where do you find passionate bread-makers in Savannah?” Their answers led me to four locations: Back in the Day Bakery, Twelve Tribes, The Florence and 22 Square.

Let’s start with the bakery that most locals and many eager tourists know by name: Back in the Day Bakery, owned and operated by Griff and Cheryl Day, The Days, like many Savannah business owners, are originally out of towners - turned locals. They settled down here and opened up their bakery over ten years ago, with the goal of bringing cooking from scratch with natural ingredients back into people’s lives. Their vision has withstood the test of time and now their business is heralded as the bakery to visit while in Savannah. Griff himself is a pensive craftsman with a forward focus, who understands that while trends in baking and service expectations change, that doesn’t mean your goals and values have to.

They provide a casual, grandma’s kitchen style atmosphere, full of baked goods and wide windows, making this kitchen/bakery a public space inviting to all passersby. If the atmosphere is not enough to lure you in, one taste of their sourdough bread will make you wonder if all baked goods really were better back in the day.

on Forsyth Park might not have the permitting it requires for a couple years, but he is not worried about the future. Perhaps a true artisan breadmaker has learned to master patience, learning that mixing pure ingredients and giving them time to come into their own will yield the strongest results.

While Back in the Day has been prominently located on the corner of Bull and 40th St. for a decade – another group of bakers have been working more privately in Savannah during the same time frame. Twelve Tribes is a Christian organization that has settlements all over the world, including a few lots near the downtown Kroger in Savannah. After selling bread to locals for years out of their own kitchens, the tribe has finally decided to open up their first Savannah bakery.

Head baker, Brian Fenster, invited me to visit the interior, which was still under construction. I immediately felt like I had stepped into an artisan village. Although it was an abundantly sunny day most of the light was filtered by trees or absorbed by the heavily wooded interior of the space. As we wander through the bakery’s calm darkness, Fenster’s grinning beard leads the way, while his small daughter plays in the empty spaces around us. It doesn’t feel like a business in the traditional sense, but rather a gateway into a baker’s secluded village. Fenster does not view business, or time, as most of us do – he just puts talented people to work and hopes for the best. Painters paint narrative murals on the wall while woodworkers handcraft seats, benches and shelves. The deli he aims to also open 22

Being patient does not always mean staying in one place. Chris Wilkins, the head baker at The Florence has followed his future up and down the east coast to Savannah over the past 10 years. Wilkins got his start at a small local bakery, The Red Hen in Vermont; then moved on to Asheville, North Carolina and Athens, Georgia. Wilkins was ultimately summoned to Savannah by The Florence after gaining popularity amongst a bustling network of east coast artisan bakers. He regards bread making as a craft, comparing it to his uncle’s career as a cabinet-maker. As he suits up in his dark rimmed glasses, tan apron, and crisp Yankees baseball cap, Wilkins reminds me “Food should be wholesome, if it doesn’t help your body, it should improve your mood, or your life.” He pulls me along through the kitchen so fast, I can hardly keep up with him. But his excitement is contagious, as we stare down at his bread starters, I envision them moving and growing even though they appear still. “I think of flavor, before nutrition … If I can give it to my wife, and she likes it, I’m happy.” Wilkins then proceeds to diagram the anatomy of a grain seed on his notepad, and even dictates the logistics needed to bake his bread, - oven temperatures, baking times, etc. It seems as if he had been waiting forever for an eager observer to step into his kitchen so he could share all of his exciting secrets.

Ryan Jacobs, 22 Square

My observations eventually led me to 22 Square, an open kitchen restaurant, located inside the Andaz Hotel. 22 Square is a showcase of simple, elegant dining, in what is arguably the busiest section of downtown Savannah. The restaurant has high ceilings, wide windows, and simple contemporary décor. Executive Chef Lauren Teague introduces me to Ryan Jacobs, a line cook who also mixes and bakes her dinner breads. Between the patrons dining at communal style wooden tables or the sleek glitzy bar in the hotel lobby, you might not even notice Jacobs, whose eyes are hidden beneath the rim of a black hat as he diligently prepares food in the public prep area. He leads me to through a door into the kitchen. He turns on his electric mixer, and starts blending caramelized onions and gouda cheese into his sourdough bread mix. Again I feel this experience of witnessing a creation come to life, that I did earlier with Wilkins. He notices my attention shift to the massive collage of magazine cut out food images covering the wall in front of us. He explains that the entire staff contributes to it, and draws inspiration from it everyday. A few hours later I photograph him behind a display of his fresh baked breads. The photo focuses on the fresh crust of the bread; the texture, focus and overhead lighting are perfect. But the photograph still feels empty. Jacobs is behind the bread, his hat covering half of his face. As I instruct him to remove his hat, he hesitates at first. Once he is exposed to the light, like his bread, he smiles from ear to ear. Seconds later a generic food photo about beautiful bread has become a portrait of a humble craftsman who is proud of his work.

And then I realize bread-making, just like any passion, comes in many forms – from ecstatic and outspoken, to quiet and humble. True passion requires time and understanding. How each craftsman gets there is their own unique journey. Wilkins was fairly accurate to compare breadmaking to cabinet-making, both are products of a design process. However, the process of breadmaking literally creates a living culture that spawns a product we can consume for energy. The craftsman, in this case, gives you life.

SERENITY HOUSE TEA Offers a Healthy Haven for Savannah Tea-Lovers Article and photos by Cheryl Baisden Solis Angela Cunningham really knows tea. As a tea-lover myself, I was so happy to see a new tea shop opening up, especially since The Tea Room closed, and called her to see what the store had to offer. After a 2 hour conversation that left me amazed at her vision and encyclopedic knowledge of the world of tea, I was eager to take a tour of the shop. Sitting on Abercorn St. in historic Savannah between Oglethorpe Square and the Colonial Cemetery, this little tea shop is a treasure come to town.

Getting to know Angela and her wares is a real pleasure. “The reasons I opened this store started a long way back, when I had a health food restaurant called ‘The Carrot’ in New York—in fact, the first one designated ’health food’ –during the 60s and 70s. I had come to believe in healthy eating and we sold vegetarian cuisine, as well as fish dishes, made from locally grown produce. There wasn’t much as much emphasis then on organic and I really had to search around to find what I wanted. We also made our own line of salad dressings, as well as tea and spice blends. After a while it got to be all-encompassing timewise, so I sold it to a partner, where it was eventually reincarnated as “40 Carrots” in Bloomingdales. This experience, though, had initiated my research into the connection between good health and tea.” Angela takes her quest for the perfect teas seriously. “Nothing goes in my store until I’ve researched it at least a year. Living in Germany I became acquainted with the Tea Council, which is not affiliated with the State or private Companies, and brings in their teas directly from the estates where they are grown. -Continued on Next Page

They very carefully monitor every tea, as well as spices and herbs, to make sure of their purity. The tea is zealously inspected for cleanliness, cut, fermentation, and appearance, and that includes the fruits, nuts and herbs used for flavoring. Nothing that comes from the Tea Council has been sprayed with flavor—if it’s Earl Grey, for instance, the flavor is pure bergamot oil, or a flower tea is made with pesticide free florals.” Angela is assisted in this venture by her son Max Ordemann, a gifted graduate specializing in computer technology, who has helped to design the flourishing website where anyone can order Angela’s teas and tea ware. The little store, with its natural brickwork , pristine shelves and gleaming glass, is filled to the brim with over 100 varieties of teas covering the full range from dark or black teas (known as Orange Pekoe), though Oolong (semi-fermented), Green and White Teas, as well as a large selection of Chai. Just look on the black canisters at the color of the logo to indicate which can holds which color.

Chinese tea lovers will be thrilled to know Serenity House carries many varieties including Pu’er, Dragon Well, Black Dragon and the vividly smoky Lapsong Souchong. If you’ve never experienced this tea before, you must come in and take a deep breath over the canister—the scent is reminiscent of autumn campfires, and the rich, dark flavor makes it wonderful for marinades from chicken to pork— there’s nothing quite like chicken salad made with Lapsong Souchong-flavored chicken breast! Japanese green and white teas and matcha make their appearance, and any tea implement from whisks to trays to special glasses are available. INSTANT CLASSIC: SLY’S SLIDERS & FRIES The location of the old Sammy Greens (and briefly The Southern Cafe), located on a small Abercorn strip in Midtown, recently opened to a concept not all too far from its predecessor. I can hardly even remember whether Sammy Green’s “sammys”, aka “sliders” were any good, but that’s also probably because this new joint has left such a stong impression with us already. Barely open a few months now and to hardly any fanfare or promotion, the place seems to keep a pretty steady crowd, every time we stop by. It’s a no frills, food speaks for itself, kinda place that feels like the burger shops I grew up with. While vintage burger joint posters hang on the wall, the place seems to speak directly to my more recent youth, with the Street Fighter vs. Xmen arcade game in the corner set to free play. The menu is split right down the middle with straight up sliders or dogs and a side of fries stands as the lone side. But the variety they’re able to accomplish with 18 choices will cover you for the entire gamut of cuisines: Pulled Pork, Vietnamese Bahn Mi, Caribbean Jerk, Falafel, Italian Meatball, Chicago Dogs, Cuban Dog - you get the picture. Even the lone side of fries can be loaded with over half a dozen toppings and these hand-cut babies (when fried correctly and eaten right away) are right up there with some of the best fries in town. We can easily place Sly’s in the same category as Butterhead Greens and Green Truck, tipping the scales and making Midtown one of the best places to grab lunch in Savannah.
