publisher’s dish So you may have noticed that we made a few changes... One of the first changes that was up for debate, was actually whether or not to scratch the editor’s/publisher’s letter all together. I mean does anyone actually read these things? I must admit that whenever possible, I prefer to hand over this assignment to pretty much anyone who will take it! It’s not that I don’t like speaking to our readers, it’s just that I am a horrible writer. I look forward to the day when I can find someone who can take over this duty and use the opportunity to impart some truly interesting information and compelling anecdotes to our readers, but until then, I’m afraid you are stuck with me. There is at least one thing I do have to share that always seems to be of regular interest to many of the people I run into: Where to Eat in Savannah? Most people assume that by publishing the largest dining guide in town, I can quickly and easily spout off my top picks. One might even assume that I can tell them with absolute certainty, which are the best restaurants in town. Problem is, that list honestly does not exist. What I can tell you, is where I tend to go on a regular basis. What I do know is, what I usually order and from where or what I have cravings for the most often. That’s the thing about dining out: To me, it’s not about who is the best overall. Not only is that a purely subjective question, but to me it is also nearly an impossible one. The best analogy I can come up with is like this: I would view a restaurant like a cable television channel: Some channels have really great shows, some more than others, but then they also have really crappy shows too. Now, I may have a frequently watched set of channels and also some favorite shows, but that doesn’t necessarily mean that every episode is going to knock it out of the park. What keeps me coming back is when I find a show (a menu item) that impresses me and can consistently be produced to the same quality every time. To me, the “channel” (restaurant) is not as relevant as the “shows” (menu items). Ok, so by now you may be wondering what some of my favorite “shows” are... While I do usually try and refrain from offering up this information in the magazine, just to try and remain impartial, I will offer this little bit up once, just for all of you who actually do read the editor’s letter: My single favorite menu item in all of Savannah has to be the California BLT at Green Truck Pub. With their pastured raised bacon and housemade ranch on some of the best sliced bread in town; paired with their already legendary fries and housemade ketchup... I crave this thing all the time. But remember, it’s all subjective. So, in lieu of offering up any more favorite picks, I encourage you all to take some time to explore our all new dining and bar guide. We put a lot of work and love into its redesign and we hope that it proves to be a continual source for you when making your dining decisions. I’d love to hear your thoughts on the new design and also what your own favorite picks are. Shoot me a line sometime via Facebook or Twitter. Eat Colors

from as wide a variety of vegetables, fruits, berries, nuts, 100% whole or sprouted grains and beans as possible. Each color signifies a different anti-oxidant, from the carotenes or flavanoids in fruits and vegetables. Red means lycopene, yellow-lutein, purple and blue anthocyandins, green-carotenes.

Consider buying a juicer

This is the easiest way to consume lots of colorful vegetables and fruits – raw with all the live enzymes nutrients, carotenes, flavanoids, vitamins and minerals in a single glass of juice.

Eat some sulfur

Eat a mixture of carotene rich foods For Beta and Alpha

by eating garlic, onions, shallots, leeks and green onions. The sulfur containing vegetables are very good for detoxification and supporting the cardiovascular system. Sulfur helps the body repair and build connective tissue.

Be berry good to yourself

Choose meat wisely Try to choose free range, maverick grass fed beef or certified organic whenever you can or can afford it. Look for hormone and antibiotic free and as lean a cut as possible. When a cow is grass fed only, or a chicken eats outside, the meat is high in the anti-inflammatory fat CLA. Bison tends to be much leaner than beef. Lamb, although fattier, usually has less hormones and antibiotics. Ostrich is leaner than any other meat. Take the skin off chicken and turkey. Eat antibiotic and hormone free organic eggs.

Carotene: Carrots, Kale, Collards, Sweet Potatoes, Winter Squash, Yellow Squash (Spirulina a micro algae is an excellent source of carotenes) Lycopene: Persimmons, Red Bell Peppers, Tomatoes and all tomato products, Red Delicious Apples. Lutein: Egg Yolks (free range eggs can contain up to 11x more), Spinach, Kale, Collards.

Flavanoids fight inflammation and glue you together – they help all connective tissues in the body resist aging. Take whole fruits – apples, pears, plums, peaches, mangoes, kiwi, persimmons, mangoes, and berries with you as a snack.

Get cultured with the help of yogurt and kefir. Both are high in beneficial probiotic bacteria which balance out the flora in the intestines – helping the absorption of vitamins and minerals. Probiotic bacteria prevent yeast and fungal overgrowth, prevent constipation and diarrhea and support the immune system. The probiotics in kefir support the production of serotonin in the intestines – which the brain uses as an anti-depressant.. Cottage Cheese is one of the best sources of high quality protein you can get. Go nuts. Nuts contain high amounts of protein, and the essential fatty acids Omega 3 & 6. Nuts are high in magnesium. Brazil nuts are the highest source of selenium. Seeds are high in zinc – especially pumpkin seeds. Studies have shown that people who eat nuts frequently don’t carry as much fat as people who don’t eat nuts. Change your oil.

Keep oils refrigerated or in the dark. Use a lot of olive oil. Sauté in olive oil and fry with coconut oil (it can handle heat without breaking down). Never eat any fat that contains the word partially-hydrogenated in it – use butter instead (moderately). Eat Omega rich foods, such as walnuts, flax seeds, hemp seeds, sardines and wild Alaskan salmon. Other cold water fish, such as sardines (that are not on the decline, get the list from the Monterey Aquarium website) and fresh water trout are good. But avoid tuna because of the mercury content.

Fiber out. Eat whole apples, pears, whole fruit, whole carrots, sweet potatoes and 100% whole grains or sprouted 100% whole grains. Fiber is critical to normal detoxification and cholesterol reduction. Eat cabbage, broccoli, broccoli sprouts, brussel sprouts, and kale. Flax seed meal is loaded with lignans (compounds that bind to estrogen

receptor sites in the body) that may help to prevent breast cancer and prostate cancer.

Spice up your life Spices are high in anti-oxidants (which is why they were used in the middle ages to protect food from spoiling) and are high in anti-inflammatory agents. Rosemary has a compound in it called carnisolic acid that is a“Redox” anti-oxidant that can recycle an anti-oxidant activity 3 to 4X before getting used up (Olives also have tyrisol a very potent redox anti-oxidant). Rosemary supports and detoxifies the liver and is great for supporting memory function. Rosemary’s anti-oxidants are considered much more powerful than vitamin E in protecting the fat elements in the body from going rancid. Turmeric and Ginger roots have strong COX-2 inhibiting effects. Use spices liberally and frequently in your diet. Drink a little red wine - red wine contains a compound called resveratrol one of the strongest COX-2 inhibiting factors found in nature. Resveratrol is also strongly cancer inhibiting. Eat a little dark chocolate.

Dark chocolate contains anthocyandins which protect the cardiovascular system. The darker the better.

Take a spot o’ tea.

Green tea contains catechins and flavanoids that are antiinflammatory and cancer protective. Also, green tea contains an amino acid compound called Theanine that calms, putting the brain into an alpha wave state (more calm and meditative). In green tea although you get small amounts of caffeine which gives you a antibiotic and hormone free boost, the Theanine counteracts the caffeine by calming you down. The combination of energy + calming is great for the American lifestyle.

Get your zzzzzzs. Get to bed a little earlier – 10pm – 10:30pm – The liver does its major detoxification work between 10pm and 2am simultaneously, during that time period, melatonin production is at its peak. Sleep in complete darkness to optimize melatonin – melatonin is a powerful antioxidant – it has powerful effects on helping the immune system and preventing cancer. If you take supplements to support liver function such as Milk Thistle extract take a dose at bedtime to support liver detoxification. Get out in the sun.

Up to twenty minutes of sun before applying sunscreen. Vitamin D is critical for bone health, sun (in sensible amounts) is a massive regulator of cellular function in the body. It helps prevent cancer, regulates blood pressure, is an anti-depressant (especially winter depression), helps auto-immune function, and helps other hormones such as testosterone in men and estrogen in women.

Get moving. Walk, run, play tennis, swim, bowl, dance, garden. Move in place when you’re on the telephone or watching television. Do whatever you can to keep fit as often as you can. Stay hydrated.

Don’t forget to drink plenty of filtered or purified water daily. If you drink coffee, drink a glass of water for every cup of coffee you drink.

Fermenting

Fermenting foods to preserve them for long term storage has been a human endeavor since before written history. You’ve been eating fermented foods all your life and maybe you don’t even think of these foods in that light. Some good examples are pickles, sauerkraut, yogurt, kefir, cheese, soy sauce, and miso. Historically, fermentation was a way to preserve foods without the aid of refrigeration, chemicals, or without a heat source for canning or dehydration. Often the only ingredients and tools needed are the vegetable, salt, water and a storage vessel.

Health Benefits

Current scientific research tells us that fermented food products afford more bio-available nutrients in our foods than are available otherwise. The reason for this is that the food is pre-digested by the beneficial bacteria that ferment the food. One of the most popular and easiest ways to ferment is with the use of Lactobacillus. “The proliferation of lactobacilli in fermented vegetables enhances their digestibility and increases vitamin levels. These beneficial organisms produce numerous helpful enzymes as well as antibiotic and anti-carcinogenic substances. Their main byproduct, lactic acid, not only keeps vegetables and fruits in a state of perfect preservation but also promotes the growth of healthy flora throughout the intestine,” says Sally Fallon, in her book, Nourishing Traditions.

Probiotic Power

In scientific terms, the lacto-fermentation process involves microbes that use good bacteria, such as Lactobacillus and Bifidobacterium spp, as well as other lactic acid bacteria called probiotics. The process enhances digestibility of the fermented food. Studies suggest that probiotics can help treat everything from diarrhea and irritable bowel syndrome to more serious 16

conditions such as heart attack and hypertension. Current evidence gives us good reason to consider getting a daily dose of probiotics from a tasty fermented food source.

How to Do it yourself

Whether keepers of culinary tradition, those interested in the health benefits or folks who simply enjoy trying new foods, fermentation enthusiasts are bringing new life to this ancient practice. Lactic acid fermentation, or lacto-fermentation, is among the most common methods and one of the easiest to experiment with at home. It is an anaerobic process whereby lactic acid bacteria, mainly Lactobacillus species, convert sugar into lactic acid, which acts as a preservative. Salt plays a pivotal role in traditional fermentation by creating alkaline conditions that favor the good bacteria, preventing the growth of pathogenic microorganisms, pulling water and nutrients from the substrate and adding flavor. I’ve chosen to share a sauerkraut recipe which can also be a mixed vegetable recipe by replacing some or all of the cabbage with other firm winter vegetables such as carrots, beets, turnips, and cauliflower; and also an Apple recipe for variety and novelty. Both foods are readily available this time of year. The apple recipe demonstrates a low-salt alternative to fermenting foods. If salt-sensitive, use whey instead, a little Google search will show you the whey (ha ha, get it?).

YIELDS: 1 QUART This lacto-fermented apple chutney is crunchy, lightly tangy and delicious enough to use as a side dish rather than a condiment. Plus you get all the awesome probiotic health benefits of lacto-fermented foods!

Ingredients:

1/2 cup filtered water (the chlorine in unfiltered tap water can halt the fermentation process) 2 tablespoons honey 2 tablespoons whey* (if you’ve got yogurt in the house, you can make whey, see note below) 1 tablespoon vinegar 2 tsp. kosher or other non-iodized salt 3 cups cored and finely chopped apples 1/2 cup raisins 1 tsp. ground cumin 1 tsp. slightly crushed coriander seeds 1/2 tsp. red pepper flakes (or more, if you like your chutney spicy) 1/2 tsp. dried thyme 1/2 tsp. caraway seeds

Preparation:

1. Combine the water, honey, vinegar, whey and salt, stirring to dissolve the honey and salt.

2. Mix the other ingredients separately and pack firmly into a quart-size glass jar, leaving at least an inch of head space. Pour the liquid mixture over the other ingredients. The liquid should come up to the top of the fruit. If it doesn’t, add a little filtered water.

3. Loosely cover and leave at room temperature for 2 days. You should see some bubbles on top by then, which is a sign of active fermentation. 4. Refrigerate and leave for another week before eating. Will keep in the refrigerator for 2 months. Serve with rice, meat, cheese, whatever suits your fancy. Combined with shredded cabbage, this lacto-fermented apple chutney makes an excellent winter salad.

Ingredients:

8-10 cups shredded cabbage, loosely packed (about 2 lbs), about 1 cabbage 10 juniper berries (optional- can be purchased at Brighter Day) 1 tsp. caraway seeds 1 tsp. yellow mustard seeds 1-2 tsp. un-iodized or pickling salt 1 c. filtered water mixed with 1 tsp. salt

Preparation:

1. In a clean, non-metallic bowl, mix cabbage, juniper berries, caraway, mustard seeds, and salt. Stir cabbage to release juices. (I like to mix & squeeze the salt in with my hands, this bruises and breaks the cell walls better than stirring) Let rest 10 minutes then mix again. You may let this rest longer (1-2 hours). 2. Sterilize jar and lid by boiling for several minutes in water and draining on a clean dishcloth. 3. Pack into a sterilized quart-sized, wide-mouthed jar, pushing down with a wooden mallet. Add filtered, or non-chlorinated, salty (1 teaspoon salt per cup of water) water to rim of jar and cap loosely with a sterilized canning lid. Place jar on a tray to catch overflowing juices. Keep jar between 65°F and 72°F for 2-3 weeks. 4. After bubbling stops, check container and top off with salty (1 teaspoon salt per cup of water, warm slightly to dissolve completely) water if level falls below rim. Skim any (harmless) white spots or film from the top, close jar tightly, wipe off outside of jar and store in the refrigerator until you use it up.

Show me the whey!*The whey in this recipe is already alive with healthy, probiotic bacteria and jumpstarts the fermentation process. To make whey, drain yogurt through cloth or paper filters over a bowl. The liquid that separates out is whey. Drained yogurt is thicker than regular, and delicious. If you let it drain in the refrigerator for a full 24 hours you have something with the exact consistency of a soft cream cheese, which is wonderful on toast topped with some of that chutney you used the whey to make. wellf edsava nna h. c om | feed 17

One Banana, Two Banana, Three Banana, Four.. by Rhonda Barlow, MPH, RD, LD, CLC … Five Lemons, Six Lemons, Seven Lemons More! In celebration of 12-12-12 Day, the second grade students at May Howard Elementary on Wilmington Island picked Crayola-color lemons, perfectly round oranges, spicy red radishes, and dark green collards from their school garden to make sorbet, lemonade, and cooked collard greens. Sunday Cafe on Tybee contributed to the day’s celebrations by cooking the collard greens for the students and staff. As the students rotated through the three work stations, they used fractions to measure ingredients and learned science facts about the fresh broccoli, mustard greens, and radishes they nibbled while listening to Ms. Freeze’s mini-lecture. The school’s garden grew out of a grant received five years ago from the local Junior Master Gardener Program (JMG) and has continued to thrive with financial support from the Wilmington Island Garden Club, from students/teachers practical learning experiences, and from beautification activities of the school’s Parent Teacher Association (PTA). Special emphasis is given to organic gardening practices. Mr. Amonette explained, “We do not want to expose the students to anything that may harm them while gardening at the school.” As a member of the United Nations Educational, Scientific, and Cultural Organizational (UNESCO) Associated School Project Network (ASPnet), May Howard Elementary uses the school garden and varied environmental and community projects to teach the students sustainable living concepts and lessons on peace and human rights across the curriculum. Junior Master Gardener Advisors at the school include Susan Daly, a science teacher and the head student JMG advisor, Rob Amonette, the Art teacher and Student Council Advisor, and all the second grade teachers. Mr. Amonette is responsible for organizing the service-learning efforts of the school’s older students around environmental and community involvement projects such as conducting nonperishable food collection drives, volunteering at the local food bank, America’s Second Harvest of Coastal Georgia, and ensuring that the herbs harvested from the school’s garden are donated to Kid’s Café for use in their food production. The students have also organized fundraisers to pay for two UNICEF wells.

oq au Vin, which means chicken cooked in wine (usually red), is a traditional French dish that is perfect for winter. The flavors are robust and the dish is hearty without being ‘fatty’ or too heavy. At Local 11 Ten, we strive to work with and support local farmers and build personal relationships with them. We get to know and care about the farmers/suppliers and in exchange we can trust them and be assured that we are getting the best quality and freshest local ingredients available. Buying from local farmers, even for a large restaurant like us, is still worth the extra cost. During farmers’ market season, I go every Saturday to the Forsyth Farmer’s Market to check out what the farmers’ are bringing and even picking up a few things to use in the restaurant. In this dish, the chicken and pork belly came from Savannah River Farms, a local family owned pastured meat farm; the carrots were grown by Walker Organic Farm; potatoes and herbs from Vince Baker Farm; and the mushrooms were supplied by a new regional soon to be local mushroom farm, am FOG. It really is exciting to see the ways that these wonderful local ingredients are finding their way into international cuisine. Coq au Vin has been a favorite dish of mine since the first time I tried it in culinary school, and so, I am pleased to have it on our menu here at Local 11 ten and to share this recipe with you. Enjoy!

Coq au Vin

ingredients

(serves 2)

1 whole, 2.5 to 3 lb. chicken, cut into quarters / seasoned with salt & pepper 3 oz bacon, julienned 3 c. red wine (burgundy preferred) 1-2 c. chicken stock 2 cloves of garlic, minced 2 sprigs fresh thyme 1 bunch fresh parsley, chopped 1/2 lb. of mushrooms, cleaned & chopped 1/2 lb. of baby carrots, peeled 1/2 lb. fingerling potatoes

preparing the vegetables For the potatoes: Cut in half lengthwise. Add to a pot of salted boiling water. Cook until potatoes are soft (not mushy!). Add to ice water bath. Remove from ice and allow to drain.

preparing the chicken Place a stock pot large enough to fit the entire chicken on burner, turn heat to medium and add bacon. Cook the bacon until it is crispy, then remove bacon and save for later. BUT keep the left over bacon grease in the pot and add chicken. Brown the chicken on all sides and remove. Add garlic and saute until fragrant. At this time, it may be necessary to add a little cooking oil to the pot. Return the chicken to the pot, add the wine and allow to cook for about one minute. Add enough chicken stock to cover the chicken. Add carrots, mushrooms, thyme, & bacon to the pot. While the chicken is cooking, prepare the potatoes by heating a large skillet with oil. Add the potatoes and sear on all sides until golden brown. When potatoes are cooked, remove from the pan and toss with salt, pepper, and parsley.

It’s just a few ticks before three on a Thursday afternoon. The lunch rush is almost over at The Five Spot, the newest eatery at the neighborhood-friendly Habersham Village shopping center. And yet guests are still filing in, eager to try out the eatery’s affordable, familyfriendly fare and stylish new digs. The word of mouth on the place has been outstanding, and it shows. A handful of diners sit at the bar, watching the closed-captioned highlights on SportsCenter. A group of friends sit in a corner booth and share a few appetizers. The restaurant’s staff, young and friendly, are in their spaces, all smiles.

Things are going well. Running smoothly. So the Huskeys -- Brian and Jennifer -- could confidently take a few minutes break.They relax and sit down at table 33, a four-top in the spacious back dining area that overlooks the bustle of East 61st and Habersham Streets, and start telling the story behind their wildly successful six-year restaurant run in Savannah. “This is fulfilling a need we had for the neighborhood,” says Brian, gesturing around to the restaurant space. “There aren’t many places like this in the community nearby.”

As the conversation begins, a few subtleties quickly emerge. In the parlance of relationships, it would not be a stretch to say that Jennifer and Brian are a good match. As husband and wife.As parents.As business owners and colleagues.They know each other well, and complement each other’s strengths. They often finish each other’s thoughts, and look fondly at each other while the other is speaking, flashing the half-smiles and knowing glances that only partners can share. Jen is passionate about menus and decor, Brian, with a degree in human development, is a people person and consummate networker, making sure the finely choreographed dance of running a restaurant hits the mark. A few days earlier, on a nondescript early December weeknight -- typically during a time of the year where locals-sensitive Midtown restaurants see a lull -- they were on a 45-minute wait. “The response has been awesome. We have seen lots of faces over and over again, which is what we’re wanting to see.,” Brian says. “It’s a perfect crosssection of all of Ardsley.” “Of all the neighborhoods of Savannah,” Jen adds, completing his thought. There is a certain deliberateness to the way Brian speaks, with precision but with a calm breeziness . His voice is soft but stern, the type you’d expect from a good parent or teacher. Wearing blue jeans, and a blue dress shirt -- sleeves rolled up for work -- his grownin beard and glasses gives him a sort a distinguished look that belies his youthful looks. They signed a purchase agreement with Clary’s in March, and rumors spread as quickly. “The word just got out,” Jen recalls. “Ever since we’ve taken the paper off the windows, people have been flocking in. It’s been awesome,” says Brian. But the story goes back much further with Brian, to his childhood in Tennessee.

Brian had always worked in food service, helping his mother, Louise, set up for lunch at the cafeteria in his elementary school. And later, serving food and drink concessions at University of Tennessee sporting events and concerts. “By the time I was 21, I knew this was the path I was going to pursue. Whether it’s selling popcorn, or beer and steaks, I’ve been doing something [in this industry],” says, Brian, who earned his degree from the University of Tennessee. “But I don’t have a culinary bone in my body. I can flip an egg.” “He cooks a mean egg,” Jen adds. Jennifer grew up in Arkansas, and transferred to Tennessee during her junior year in college. After graduation, she stayed in Knoxville, and eventually she was introduced to Brian through a common friend. “We were set up,” says Brian, who was managing a restaurant at the time. “It was love at first sight, as dorky as that sounds,” she says. “We were smitten,” he smiles. “We both went home and told our friends, ‘If I don’t marry him, I am going to marry someone just like him,” she adds. “And we’ve been together ever since.” You could say things happened quickly. They met in February 1997, married in May 1998, and their son Conor was born a year later. Years later, the love story that started in the Volunteer state, took a detour to Savannah while Brian and Jen were visiting some close friends there. Almost by chance, they found out B. Matthew’s Bakery was for sale. This seemed to be a sign. “I remember we didn’t have two nickels to rub together, but we discussed it all the way back to Knoxville, ‘How can we make this happen?’ “Can we do this?,’” he says.

“It was something we both felt really passionate about it -- we felt this was our opportunity.” The risks were obvious. They both had great jobs in Knoxville -- Brian as GM of a restaurant and Jen working for HGTV -- and felt they were settling into the sort of early-life stability most young married couples aspire to. “It was the most comfortable we had ever been,” Brian says. “We had a great house, lived in a great neighborhood, had great friends. Conor had just started school, and we just rolled the dice.” Like their storybook romance, the B. Matthews opportunity came together quickly. “It took us three months. By August 17, we were here closing on the space,” he recalls. “It just spoke to us. And next thing you know, it’s Saint Patrick’s Day.” They named their corporation The Gaslight Group, an homage to the welcoming oil lanterns that are displayed prominently outside their first restaurant. Their new community seemed to welcome them as much as they embraced it. “Everything was just so new, meeting a new group of friends and discovering Savannah. We just loved it. Absolutely loved it -- still do,” says Jen. “There’s just so many people here from elsewhere, and we just all find each other. People choose to live here. They make a conscious choice to call this home. And so they’re happy to be here.” At first, Jen continued to work remotely for HGTV, telecommuting from home. The restaurant continued to do well, and she noticed Brian falling in love daily with his new city and its people. After a while, she decided that she wanted to be a part of that too. “I remember seeing [Brian] go out every day to the restaurant, and [he’d] come back and say ‘I met this person. I met that person. This is fabulous. I love living here,’’ she recalls. “And I’m at home in my pajamas at the computer, I’m like this is not cool. I’m like ‘I’m

done. I’m quitting,’ and he’s like ‘Okay.’ I am doing it, and I did, … and I don’t regret it at all” After the B. Matthew’s makeover, opportunity knocked again. Next came Blowin’ Smoke, a Southern-tinged barbeque spot in the growing MLK downtown corridor. Then Abe’s on Lincoln, a friendly evening and early-morning watering hole just a few blocks away from B. Matthews. Then came the Blue Turtle Bistro, a go. The 5 Spot, as the name suggests, makes for restaurant number five in the growing Gaslight Group empire. The newest concept, the 5 Spot, replaces Clary’s Cafe, a diner-style eatery that had occupied the spot for several years. The Huskeys wanted to capture that same friendly neighborhood vibe, but with a unique blend of modernity and comfort. The space, designed by Wendy Martin, is a refreshing alloy of woods and metals, open and spacious while simultaneously clean and sleek. “We want people to feel like, ‘Oh, I can go there three times a week. I can go for breakfast, or at different times of the day, come with groups, come by themselves,” she says. “And not have that feeling like they need to have to reservation or have to think about it. We want to people just to stop in.” Perhaps by next summer, they can be settled in, owner of five successful concepts. And maybe, just maybe, they will even sit back and relax, or dip their toes in the sand and take that trip to Costa Rica. “Five is plenty,” says Brian. “Yes,” Jen agrees. “For now … She’s going to do her own thing someday,” he says. “And you’re going to try to play golf,” she laughs. steak tip chili ingredients (Makes 15-20 servings): 2 red onions, diced 2 stalks celery, diced 2 red peppers, diced 4 tbsp tomato paste 1 tbsp chili powder 1 tbsp cayenne 1 tbsp cumin 3 tbsp oil

16 oz black beans, cooked 16 oz red beans, cooked 6 cloves fresh garlic, minced 2 poblano peppers, diced small 4 lbs. skirt steak cut into Âź inch cubes 2 lbs. smoked pork shoulder cut into Âź inch cubes 1 lb whole peeled tomatoes, pureed Salt and pepper to taste

Directions:

1. Put oil in large pot and cook beef, add salt and pepper, cook thoroughly. 2. Add diced onions, celery, red peppers and poblano peppers. 3. Add cooked black and red beans. 4. Add smoked pork shoulder.

5. Add pureed tomatoes and tomato paste. 6. Add all spices, including garlic. 7. Simmer on low for 1 hour. 8. Ladle into bowls and top with shredded cheddar cheese and sliced green onions. ENJOY!
