publisher’s dish Welcome to Savannah, again. Ah, nothing like Savannah in the Springtime.The weather begins to warm, signaling the azaleas to bloom.The crowds begin to appear in The City Market and Forsyth Park - and then begin to multiply and divide and multiply again - until the swarm reaches critical mass on St. Pat’s day. Not in so far from the biblical plagues of old, the swarm leaves devastation in its wake, leaving business owners and locals alike wondering, “why has thou forsaken me?” And therein lies the beauty of our fair city. It can take a beatin and keep on tickin.True to its Southern roots, the city shall rise again from the ashes and trashes of the city’s largest event. Of course, while all the downtown folks may have their own strong distastes for the whole debacle, they and everyone else knows that without this yearly swarm to start off the tourist season, Savannah would not be what it is today. The reality is that Savannahians love tourist. I venture to pit our city against any other, in terms of Southern hospitality and charm. I was a tourist myself, less than 3 years ago. My wife and I came up to visit from Florida, with that being my first time. By the second day of our trip, sitting in Forsyth Park; we had decided right there on the grass in front of the bandshell, that this is where we were going to settle down and raise a family. For some visitors, its the squares or the fountain; for others its the historic architecture; for me, it was the people. To me, I see Savannah as the San Francisco of the East Coast. (Okay, well its getting there...) I see the same inklings, the same ingredients, that were the recipe for the cultural renaissance experienced on the West coast from the late 50s to the early 70s. Now i’m not talking about cultural revolution here, but what I do see, is a city on the move. What I see, is a city steeped in history and then filled to the brim with the creative progression of youth and a urban population that is no longer satisfied to be sub-par to major metropolitan cities. Whether you are just visiting Savannah or maybe just a local who decided to deal with the parking and come downtown; as you are walking the squares and enjoying the dining and bars, I challenge you to take a moment and appreciate the beauty that this city has within its residents. Stop and say hello, start a conversation with someone in the park, and who knows - you might just be the next person who decides to call Downtown Savannah - home.

farmers’ market in Savannah is not an original idea. Our storied history of community design and maritime trade has equally fascinating side notes on experimental farming and a bustling City Market. Like the rest of America, we eventually transitioned to air conditioned stores and convenient foods and the fabric of our local food supply changed. However, there were always pockets of local produce and seafood for those who were willing to look for it or provide it for themselves. Slowly, over the last 15 years or so, we’ve circled back to a reinvigorated focus on local food in Savannah.

From the ground up In 2008, a group of women began regularly talking with each after various healthy initiative meetings about their hopes for local food issues and decided to merge their ideas and efforts around local food access in Savannah. After successful conversations with the existing Starland Market, they decided to collaborate and move their market to a location in north Forsyth Park, for access to shade, walking “traffic” and the proximity to a diverse mix of neighbors. The new Forsyth Farmers’ Market made its public debut in April 2009 focusing on farmers, food, access and healthy choices – the focus that it still holds today. Photos by Robin Nelson

The original founders had worked with various markets in Savannah and been involved in the “community market” approach, markets that welcomed artisans, community groups and a variety of food businesses alongside the actual farmers. This market model has worked well in larger cities but we noticed in Savannah that farmers often left community markets because the sales were diluted for their products. In founding the Forsyth Farmers’ Market, we wanted to position the focus on food, with an emphasis on farmed goods. This model, producer-only/food-only, is also not new but rare in our region today.

Like many communities in America today, Savannah struggles with issues of poverty, diet-related diseases and food insecurity. We opened our market with the goal of being a welcoming place for all to gather and access healthy food. The Forsyth Farmers’ Market was one of the first markets in the state of Georgia to accept SNAP/EBT (formerly known as food stamps). Shortly thereafter, we formed a partnership with Wholesome Wave Georgia and were able to start doubling the value of SNAP federal benefits. These early efforts consistently place us in the ranks of the top two farmers markets in Georgia for SNAP redemptions.
In honor of the good food producers in our region who bring us their best, week after week, next month we will start highlighting one farmer or food producer in our new column, Market Plate, and hope you’ll gain a new appreciation for the care and hard work they put into feeding Savannah. Until then, we’ll see you at the market!
But having healthy food doesn’t mean much if knowledge of what to do with the food isn’t there. To add value to our market, we also offer healthy education through our Bring it Home and the Mixed Greens programs and through partnerships with local health organizations. In an effort to support other non-profit organizations that strive to do good in our community, each week a different non-profit is featured as our Community Spotlight and is able to spread their message through outreach at the market. Now that you know a little about the background of the Forsyth Farmers’ Market, we’d like to turn our focus to our wonderful vendors. During our first market season we had an average of only 8 vendors per market with products like produce, pastured eggs and chicken, honey, plants and baked goods. Fast forward to today and the market averages 25 vendors who supply our community with farm fresh produce, pastured eggs and meats, honey, bread, dairy, preserves, pastas, grains, deserts, coffee and food producing plants. wellf edsava nna h. c om | feed 11

Blessings in a Book Bag
a True Testament of Triumph
E
ach Friday from August to June in West Savannah, a little after two in the afternoon, an unassuming car pulls in to a local public elementary school. Not a parent coming to pick up a child or a school system employee but a volunteer with an impactful purpose. Every Friday, she pulls in and unloads an entire weekend’s worth of food into the cafeteria. With military precision she sets up rows of stomach-filling edibles for fifty (yes, fifty) deserving young children. When set up is complete, she places a call to the main office,“I’m here. Blessings in a book bag are ready. Send my kids.” Moments later the rumble of rubber against pavement precedes excited faces entering the cafeteria to receive what will be their breakfast, lunch, dinner and snacks until Monday when they return to school. These children, many living well below the poverty line or in situations where there simply isn’t enough food to go around, have at least one positive constant in their weekends once they get that call to the cafeteria. They know that if nothing else, they will not go hungry. For the past two years, Mahogany Bowers has been the commander in chief of Blessings in a Book Bag, Inc. (previously Blessings in a Back Pack) in Savannah. Whether alone or with whatever other volunteers are available, she shops for, organizes, stores, and assembles

fifty book bags to assist some of the area’s underserved future educators, police officers, doctors, and executives. Sometimes Bowers receives gracious donations to fulfill her purpose but more often the mission becomes possible from her own purse. She funds the transport of the groceries; she pays for the storage facility; she pays for the operational costs. During long weekends and school holidays, the blessings do not cease. Bowers rustles up increased supplies to provide more food for not just the children but also their families during the breaks from school. She saw the need to help young children who suffer one of the same plagues she suffered as a child. This is a labor of love and necessity because Bowers knows that even with the greatest potential, if you’re unable to tap in due to uncontrollable circumstances, you risk becoming stagnant. Bowers grew up in West Savannah and used to walk to and attend this same elementary school as a child. It was the school nurse (who still works there) that helped change the trajectory of Bowers’ life; when she would share a sandwich every day with the often hungry young girl.

Mahogany would stop at nothing to get to the nurse’s office because that single sandwich renewed her literal and figurative strength. What the nurse might have originally thought was a simple act of kindness meant the world to Mahogany Bowers who lived in a packed house where the food supply and demand scale was hardly ever balanced and never tilted towards leftovers. Bowers can identify with the children who benefit from her weekly volunteer venture because she knows what it’s like to be hungry. Hunger differs from feeling “munchy” or not having eaten since earlier in the day. Hunger is when you may not have eaten for an extended period. For children this feeling is intensified. Hunger changes a child’s disposition and attention span, making it difficult or almost impossible to focus on school work. Each Friday when these children run to greet Bowers, they are looking at a triumph over tragedy. Because of that nurse extending herself and because of her own fortitude, Bowers made it to where hunger is no longer her reality and she can be a blessing to others in that regard. Who are we as people, brothers and sisters in humanity, if we do not reach back to help others rise? Recognizing the need for increased structure and resources, Bowers began the process to increase the longevity of her solo efforts in late 2012. Now a foundation, Blessings in a Book Bag, Incorporated, has a board of directors and volunteers committed to continuing the weekly project and eventually expanding the reach of services.

of the Day
by Rhonda Barlow, MPH, RD, LD, CLC During National Nutrition Month, lunchrooms across Chatham County will celebrate and promote the star qualities of eating the “smartest meal of the day” -breakfast. First celebrated in 1989, National School Breakfast Week (NSBW) was created to highlight the importance of not skipping breakfast and the benefits of making your first meal of the day a wholesome and nutritious one. Breakfast celebrations during the week of March 4th – 8th will include week long events, activities and contests. The theme for this year’s breakfast week is “Be a Star with School Breakfast”. This theme was created to help encourage students’ healthy eating habits and inspire them to reach for the stars, shine bright and succeed just like their favorite media and sports stars. With all the hustle and bustle we face each morning, the habit of skipping breakfast is common among students and their parents. But did you know that it has been scientifically proven that “star” students have usually developed the habit of eating breakfast? A study published in the May 2005 issue of the Journal of the Academy of Nutrition and Dietetics, found that students who consumed breakfast remembered what they studied better and scored higher on tests than the non-breakfast eaters. Breakfast eaters even missed less school compared to students who generally don’t start their morning off with a nutritious meal. If all of this is not enough evidence to convince you of a good breakfast’s benefits, think about this the next time you are feeling tired, grumpy, and end of up eating something really unhealthy for lunch. The common effects of skipping breakfast include low energy levels, consumption of high calorie foods that usually lead to weight gain/obesity, unstable moods, increased state of irritability, and nutrient deficiency. Breakfast can be a great tool for helping your students succeed in school and if you just don’t have time at home in the mornings, you can encourage your students to eat in the school cafeteria. Planned events, contests, and activities will vary with each school site, so check with your child’s School Nutrition Manager for a list of cool happenings during National School Breakfast Week. s children, we are taught that it is important to take care of our teeth. In the everyday process of brushing and flossing we remove the day’s buildup of food and plaque in an effort to ward off gum disease, cavities, tooth decay, etc. Just as it is important for us to take care of our teeth for overall good health, it is essential for your pets to maintain good dental hygiene as well. In honor of National Pet Dental Health Month, which takes place in February every year, the American Veterinarians Medical Association works with clinics and various pet organizations around the country in order to educate and promote dental health to pet owners. You may make sure your pet eats a high quality diet, exercises daily, gets their annual vaccines, but if you are not taking the extra steps to ensure their oral health, your pet could still be at risk for some major health problems. Dental care for your dog is very important for more than just a mouthful of reasons. Neglected dental care can cause health issues in your pet that otherwise could have been easily avoided. When a dog’s gums are not cleaned or stimulated regularly they will become inflamed, bleed and can more easily allow bacteria from their mouth (which is ever present) to enter into the bloodstream. In the event that this occurs, bacteria can settle on the heart valves causing heart murmurs. It can also settle on the liver and kidneys, causing hepatic disease and renal compromise.

If your dog has bad breath, it could be a sign of something serious. Bad breath can be caused by severe plaque and tartar buildup along the gum lines which leads to gum disease also known as gingivitis.The Veterinary Oral Health Council, states that gum disease is an infection resulting from build-up of soft dental plaque on the surfaces of the teeth around the gums. If gingivitis goes unnoticed or untreated, it will eventually develop into the most common oral disease among canines, periodontal gum disease. Periodontitis is an advanced infection in which the teeth and gums start to separate, bacterial growth forms, bones and tissue start to deteriorate. Sound familiar? The best way to combat any dental related problems would obviously be preventive maintenance. The California Veterinary Medical Association has a few simple steps, to ensure proper pet dental care.
Step One
: Visit a vet once a year.A program of home dental care may be established, and an examination of teeth and gums may be suggested.
Step Two:
Professional dental care. This deals with a deep cleaning depending on the animal’s age and physical condition. Some animals may require anesthesia if they are not cooperative.
Step Three:
Dental care at home. Some pet owners may be inclined to brush their dog’s teeth, but not all. There are many home dental care options available such as pet-specific toothbrushes and toothpaste. Specially-formulated foods and treats are also available that will help deter plaque build-up without having to brush your pet’s teeth daily. Other options include oral rinses, gels and water additives that can help control bacteria, freshening your pet’s breath as well as taking care of tartar build-up. There usually is not a “one size fits all” solution for lots of things pertaining to pets, so consider using a combination of dental hygiene products that fit you and your pet’s lifestyle. Brushing is important, but there are lots of alternative methods to help insure your pet’s teeth stay clean and healthy. Some treats and toys on the market can almost do the brushing for you. Teeth cleaning treats like Zuke’s Z-Bones and Bright Bites will keep your pet happy and occupied and will also help combat plaque buildup. These treats are a great wheatand corn-free alternatives to the popular Greenies chews. They are easily digestible, and won’t upset your pet’s digestive system.

The milk makes the difference with Claude Auerbach Cows may rule as the most iconic image of cheese, but in the truly global cheese marketplace goats, sheep and even lumbering water buffalos make up a well-rounded cheese board. -And it’s quite a world of cheese.
Even with our population in the US, American’s rank fifth in overall per capita cheese consumption behind, respectively, France, Italy and the Netherlands. Oddly, tiny Greece is the world’s No. 1 consumer of cheese where average annual cheese consumption is 68.1 pounds. Cheese is relatively easy to produce and is the perfect way to preserve large amounts of its more fragile parent, milk. Nutritionally, cheese mimics milk’s benefits for the body – and is often more digestible for dairy fans who are lactose intolerant. The enzyme changes that occur during fermentation can improve digestibility but vary depending on individual tolerances. Also, let’s not overlook the versatility of cheese – it’s a great snackable treat, a key ingredient to countless recipes and a showy addition to a cocktail party or wine tasting. All cheeses pair well with the milder acidity of dried fruits such as pears, apples, figs, cherries. Sweet or tart flavors from fruit chutney, honey and different mustards complement many cheeses. Marcona Almonds from Spain, which are higher in poly unsaturated fat, provide a rich, nutty pairing with Manchego cheese – and even relatively tangy goat cheeses. Until about the middle of the 19th Century, most cheese made in America was Cheddar. Since then, America cheese makers have branched out and created uniquely American varieties of virtually every style of cheese on the planet. With better transportation beginning in the 20th Century, the world’s cheese supply began to arrive on American shores. The welcome immigrants, along with small producer cheese makers in America, offer cheese consumers a remarkable selection of great cheese. cow Cheese Variety: Gouda Name: Boerenkaas aged Gouda Producer: Dutch Farmers’ Cooperative Origin: Holland “Boerenkaas” means “farmer’s cheese” and that’s the perfect description for this firm Gouda that gets a flavor inducing 2-5 years aging before release. This is not a soft Gouda, like most grocery store brands, but as firm as good Parmigiano. The full complexity isn’t revealed for about ten seconds after the first taste – then an intense caramel flavor bursts forth. The curds are made from raw milk and then rinsed of the acidic, watery whey before getting pressed into large, flat spherical wheels. This special treatment cuts out sharpness and allows butterscotch and cashew flavors to prevail over the aging period.Want awesome mac ‘n’ cheese? Try some Boerenkaas! Cheese Variety: Blue Name: Roaring 40’s Blue Producer: King Island Dairy Origin: King Island, Australia This Blue cheese, like all cheeses, is very much a product of its environment – the combination of feed sources, weather and water that give flavors to the milk. King Island is just south of Melbourne, Australia and give’s its herds a pollution-free pastures with a variety of grasses and an occasional meal of sea kelp washed ashore by the area’s strong storms known as “the roaring 40s”. Mostly a strong tangy flavor, a pungent aroma and a smooth and creamy texture. Superbly fruity, nutty blue. Rindless, it is covered with blue-purple wax. Pairing Notes: Pinot Noir, Pinot Gris, Sauterne-style dessert wines and Stout beers.
goat Cheese Variety: Cheddar Name: Snow White Goat Cheddar Producer: Carr Valley Cheese Co. Origin: La Valle, WI A Cheddar-style semi-firm cheese for goat milk cheese lovers. Snow White was formulated by Carr Valley’s master cheese maker to have a soft and creamy pliable body with a pleasant mild goat milk flavor. Café-aged for 6 months, this cheese took second place at the 2007 and 2009 American Cheese Society Competition. Carr Valley has been making cheese since 1902 and today produces more than 50 varieties of cheese. This goat cheddar exemplifies the creativity of its cheese maker who has crafted a very clean and not too acidic goat cheese for the cheddar aficionado. Pairing Notes: Pinot Noir or Sancerre and Stout of fruit lambic beers.
Cheese Variety: Chevre Name: Humboldt Fog Producer: Cypress Grove Origin: McKinleyville, CA This mold-ripened, semi-soft aged goat milk has a layer of ash in the center and all around the outside. Covered with a white mold that grows over the exterior ash gives this cheese a wonderful visual appeal – it almost looks like a cake! The ash actually affects the PH of the cheese, which in turn influences how the cheese ripens. Humboldt Fog is creamy and luscious; earthy and subtle when young; more complex and tangy with age. The name comes from the heavy fog that rolls into Humboldt County from the sea. This versatile cheese stands up to fresh fruit – like pears – but also pairs with wild mushrooms and other foods with earthy flavors. Pairing Notes: White or Red Sancerre or dry, crisp Sauvignon Blanc and most Lager-style beers.
sheep Cheese Variety: Feta Name: Sirene Producer: Castella Origin: Bulgaria The Greeks will tell you that only Greek-made feta should be called feta. Granted, the name Feta is without a doubt a Greek word; translating as slab, referring to the shape rather than a particular region or the style of cheese itself. The fact is that this style of cheese has been made far longer than current geographical boundaries; in an area that stretches from North Africa through the Mediterranean basin and down through the fertile crescent. Today that includes 13+ countries, pretty much all of whom make this “white cheese,” known in Bulgaria as “sirene.” To keep your feta moist, fresh, slightly sour/tart with a pleasantly salty taste keep it immersed in brine, it deteriorates quickly if not. Keep your fingers out of the brine though, as the bacteria from your hands can contaminate it. Pairing Notes: Sauvignon Blanc, Muscat, Beaujolais, Chardonnay, Ouzo, Pinot Grigio, Reisling or wheat beers.
Cheese Variety: Blue Name: Mirableu Producer: Spanish Cooperative Origin: Castilla-Leon, Spain This fabulous sheep’s milk cheese from Spain is a rarity. Most other blues from Spain (Cabrales, Valdeon and Monje) are cow’s milk and very aggressive. It is produced with milk from sheep grazed in the mountains of Castilla-Leon and then aged in El Escorial, the summer home of the King. The pasture raised milk really shines through in this cheese. Less aggressive than many blue cheeses and less expensive than Roquefort -- the blue it has been modeled after. Mirableu is soft with a crumbly texture with bone white and blue green parsley like veining; salty and lactic with a hint of mold; fullbodied, well rounded and fruity with a well-balanced salty finish. Pairing Notes: Pinot Noir, Pinot Gris, Sauterne-style dessert wines and Stout beers.
Water Buffalo Cheese Variety: Mozzarella Name: Mozarella di Bufula Producer: Bufalgaldi Origin: “Campania” Naples/Rome, Italy Unlike the flavorless cow-milk brands of grocery infamy, true Mozzarella di Bufula is produced ONLY from the milk of Water Buffalo; not the milk of Buffalo (American bison). A true luxury, Mozzarella di Bufula, is complemented by fresh chopped basil, quality extra virgin olive oil and balsamic vinegars – or a simple drizzle of EVOO and salt and pepper. Buffalo cheeses are generally higher in proteins (about 10 percent) than cows’ milk and up to four times lower in cholesterol than cow’s milk cheeses. In addition, calcium in buffalo cheese is nearly twice as high as cows’ milk cheeses and iron tallies about one-third greater. Pairing Notes: Pinot Grigio, Chianti and other lighter red wines and fruit lambic beers.
Cheese Variety: Casatica Given Name: Casatica di Bufula Producer: Quattro Portoni Origin: Lombardy, Italy This cheese is conspicuously rich and buttery with a soft, delicate lactic nuance. Styled after the Stracchino cheeses (young cows’ milk cheeses known for creamy texture and mild, delicate flavor) for which the area is known. Lightly bloomed – a soft, white rind -- when fully ripe the paste (the soft, sometimes semi-liquid core) is barely restrained and positively oozes once cut. The texture is custardy, heavenly, a soft-ripened wonder! Typical buffalo tang predominates and is balanced perfectly with the decadently creamy texture. Despite the difference in minerals and cholesterol it is an old wives’ tale that buffalo cheeses are more digestible than cows’ milk cheeses. Pairing Notes: Pinot Grigio, Pinot Blanc, Sauvignon Blanc, sparkling wines or champagnes and wheat beers.

rowing up in upstate New York, I was surrounded by farms and fresh produce. I was lucky enough to have a Papa (my grandfather) who had his own personal one acre garden that he tended by hand everyday during the growing season, right in my own backyard. You name it, he grew it. Every vegetable and fruit lined up like little soldiers in rows, not a leaf out of place.
Choosing leafy greens, such as spinach and chard is in homage to my Papa as well as the mark of the March growing season. Here in Savannah we are lucky to have a climate where fresh leafy greens are available to us year round, but March is when they really start to flourish. You can’t turn around in Savannah without finding the most beautiful greens at The Forsyth Market (our go to), Polk’s, Davis’, and even at road side stands. The “cherry on top”, so to speak, for this beautiful leafy green salad, would be the Wild Georgia Shrimp. And what better a way to represent our coastal lifestyle! Although the shrimping season is a month away, I am lucky enough to have a special reserve stashed away for me, all year round. My shrimp stasher aka supplier is none other than Mr. Hank Groover. Remove stems from the spinach & chard. Soak spinach & chard in a large bowl of water to remove any sediment. Do this 2-3 times, changing the water each time. Dry greens completely with either a salad spinner or a paper towel lined tray. Loosely chop into bite size pieces. Place all of the salad ingredients in a large mixing bowl. Place all of the vinaigrette ingredients in a container with a lid and shake. Before grilling the shrimp, toss the vinaigrette with the salad mixture. Grill shrimp to desired doneness. Depending on the size of the shrimp they should take no longer than 2-3 minutes per side. Place salad in desired serving vessel, remove shrimp from skewers and place on top of salad.

hen you hear “sports bar,” you know the drill: Small, dark rooms with a simple bar, maybe a dartboard or a foosball table. More TVs than there are hands to click the remotes. On draft will be the usual domestic suspects and a handful of imports as an afterthought. They used to smell like cigarette smoke before the smoking ban, but now the aroma is stale beer and man-sweat. And the food: Cooked by guys on the line who are as glued to the game as you are and served as an unrecognizable shade of fried. Nothing in particular to write home about. But Dub’s Pubic House is not like the rest. As a broke college student, I don’t have much occasion to eat on River Street, but my friend Jami and I were famished after class one day and stumbled in the former Conch House on the west end.We didn’t expect much, just some hot and tasty grub and a can or two of PBR. Coming in from a torrential downpour, first thing I notice about Dub’s is its warm and inviting atmosphere. Its three huge rooms are partitioned off by massive historic brick walls: First, an oldschool gamers paradise of ping pong tables, then the bar, and finally the sprawling dining area, its walls glittering with the ubiquitous TVs. All the rooms are marked with a beautiful bamboo details and dark, sturdy hardwood, chalkboards displaying the specials of the day and a preview of the food we would soon be treated with. -Continued on Next Page

the confederate Specialty cocktails and sports bars don’t normally go together, but here a sports fan can have sophisticated tastes. Try the refreshing Cotton Gin Mule, much akin to stepping into a perfectly temperate pool of water after a long, hot August day in Savannah, or The Fiery Orchard, a pear cider with a shot of Fireball whiskey; sweet with a bit of a burn and a bite. If nothing on the drink menu appeals to you, the resident mixologists at Dub’s enjoy creating new concoctions on the fly. We had the pleasure of trying their latest experiment in cocktails, a strawberry beer with Dub’s own houseinfused jalapeno vodka. Another sweet and spicy beverage had an intimidatingly large fresh jalapeno garnishing the rim, which added quite a delightful kick in the mouth. But the MVP at Dub’s is the food: Internationally inspired and impeccably prepared, the menu is the gastronomic genius of John Massey, former food and beverage director of Rocks on the River, inside the Bohemian hotel. Talking to John is like talking to an old friend. He was very open and honest, friendly and to the point. I remarked that a sports bar was an unlikely venue for him after the swanky Bohemian. He shrugged and admitted it was an adjustment, but he’s bringing his skills to the game.
chef massey “There hasn’t been a sports bar on River Street for years,” he said. “We thought there could be a demand for that.” He also explained how he and his partners have combined the sports bar concept and with a gastro pub sensibility, someplace “where you could come in, you could watch a game, you can get a killer craft beer, you can get a great sandwich, you can play some games if you want, you can hang out and do whatever you want.” He wanted to make a menu that featured the types of foods he would choose to eat, were they ever an option at a sports bar. The result is a wholly unpretentious foodie heaven with lots of TVs. “Lowbrow done right” is how he puts it. But with a plat du chef on the menu, lowbrow is hardly an apt description. No dry chicken wings or greasy fried pickles here. The wings are brined for at least a day, arriving at the table crisp and tender, with an inherent flavor, which is an unfortunate rarity when it comes to wings.
On the ample appetizer menu, the jalapeno beer cheese is a standout, understated when compared to most beer cheeses, flavors bold and distinct but not overwhelming, served with house-made pretzels that go toe-to-toe with their Bavarian cousins, and the creamy hummus plate is surrounded by crunchy, fresh veggies and pieces of crispy, buttery pita. While there is plenty of the American fare on the menu, some entrees are adventurous: Banh Mi, a Vietnamese sandwich served on toasted rounds rather than the traditional baguette. Layered with pork and creamy paté, the rich flavors were offset by fresh cilantro and jalapeno, topped with Dub’s own tangy, spicy “red rooster” sauce, and accompanied by a generous portion of their hand-sliced and masterfully spiced potato chips that have both the crunch of a chip and the substance of a fry. The chips also make an excellent utensil for collecting anything that may have fallen off the sandwich in the process of eating, which is handy, as every last bite demands to be consumed. I was beginning to see the careful method here, a balancing act of flavor profiles. Everything we had tasted thus far was understated but not underwhelming, bold yet subtle, a marriage of two things that perhaps were never meant to meet but fell in love under the guidance of chef John. A perfect example of this union was the wasabi peanut brittle, John’s answer to the traditional pretzel or nut bowl one might find at a sports bar; sweet, salty, sure to clear out your sinuses, and hard to put down.

Committed to using as many local ingredients as possible, John and his sous chefs can often be seen browsing the produce at the Forsyth Farmer’s Market every Saturday. They order most any of the ingredients they can at this point from local farmers and providers. Dub’s Pub is also conscious of its carbon footprint. They use cardboard or corn-oil utensils for to-go orders, and are hoping other River Street proprietors will follow suit and ditch the ubiquitous Styrofoam clamshells. “We try to go the extra mile,” said John. And so they do, with the extra yards to a touchdown. And the three-point basket. And the goal.

french simplicity Keep it simple, the oft repeated adage goes. At Brasserie 529, a popular French restaurant on East Liberty Street, co-owner John Roelle takes that truism to heart. “I have such an affinity for [French cuisine] -- the simplicity behind it,” says Roelle, who owns Brasserie with his wife Amber who runs the front of the house. “The [French] just use such simple things.” The French, after all, know a thing or two about cooking. And so does Roelle, a classically trained chef with the prestigious Johnson & Wales pedigree, and a passion for the French culinary lineage. “These are recipes that have gone on for the last hundreds of years, and they’re still trying to perfect them to this day,” he says. “We’re just trying to build off that.” 37

Though the menu at Brasserie changes seasonally (a new menu will be unveiled later this month), and is often an homage to several classic French recipes, with a nod to modernity, whimsy and using the local flavors of the Lowcountry. Dishes like Poisson en Papillote, fresh local fish delicately cooked in parchment paper and opened tableside, and Steak & Frites are staples of any French food lover’s dream. Roelle is the type of person who prefers books to the internet, a phone call or a conversation to the impersonal email, a bit of a throwback or a purist in this day and age. That same roll-up-the-sleeves handon approach appears in the way he approaches his restaurant and its menu. Roelle estimates that he has hundreds of cookbooks in his collection, and when looking for inspiration, he’ll often thumb through his library instead of searching the internet, get an idea and then make it his own. -Continued on Next Page
Roelle’s traditional approach to new menu ideas is often countered by and eventually merged with Executive Chef, Forrest Ison’s, contemporary influence before landing on patrons’ plates. One of the areas for experimentation for Brasserie 529 is its ever expanding charcuterie selections. Taking hand crafted to a whole new level as not many restaurants dare follow suit, the chefs at Brasserie make all of their own cured meats, sausages, and prosciutto. Even the foie gras torchon, named for the ancient technique by which it is made, is prepared in by their capable hands. “We may not get it exactly right the first time, but by the time we’ve done something [for charcuterie] a third time, we’ve got it down,” says John. They are proud of using local purveyors, including Sweet Grass Dairy and Hunter Cattle. They have even participated in the popular Forsyth Park Farmer’s, where Ison’s rustic baguettes have become a big hit. They will resume their post at the market at the end of March, Roelle says. The restaurant has also hosted a number of unique events, including Mardi Gras and Bastille Day celebrations, as well as one of the few places in Savannah to offer the annual Beaujolais Nouveau vintages.
A Chef’s Journey Like many who find career sanctuary behind a cutting board and a chef’s knife, Brasserie 529 Executive Chef Forrest Ison found his calling on his way to something else. “I was going to school for chemical engineering, and I was paying my way through school,” Ison recalls. “I just started cooking, and ended up [finding] a sous chef position pretty quickly.” He enjoyed the new work, and performed well, quickly moving up in the kitchen. He now had a dilemma on his hands. “I kinda had a quarter-life crisis of what the hell I wanted to do in life,” he remembers. Ultimately, just a year and a half away from his bachelor’s degree, he decided that his passion was in the kitchen, and made the switch. “I think I had a moment where I thought ‘I don’t think [engineering] is the right career,” he adds. An opportunity presented itself to quickly move up to a sous chef position and Ison did not hesitate. “My mom kinda disowned me for about two years,” Ison joked. His decision made, Ison spent time in some of the south’s most adventurous kitchens, with Jimmy Noble of Noble’s Restaurants (based in Charlotte, NC). Always attracted to French cuisine, he took a pay cut to do an apprenticeship with Rusty Meehan of Applegate Restaurants, LLC. After five years in the Carolinas, Ison moved to Savannah, and eventually found his home at Brasserie.
“I think my second day in here was when I made those baguettes,” says Ison, who worked as a sous chef at Sapphire Grill before moving to Brasserie. “You guys looked at those baguettes and said, ‘Oh cool, you want a job’. Despite differing paths on their culinary journey, Roelle and Ison seemed to click from day one. “I trust him more than anyone I’ve had here,” says Roelle. “I don’t have to worry about anything with him.” And in a profession where workplace dynamics can sometimes be adversarial, the type of friendship and mutual respect John and Forrest have for each other is a definite asset. Their enthusiasm and teamwork is contagious and seems to influence the entire kitchen’s morale day after day. “We’re very similar,” says John. “We actually enjoy coming to see each other. Well, we may not like everything,” he jokes. “It’s like a big weird family,” Ison agrees.

poisson en papillote ingredients 7oz Portion of Fish (any, cut thin) Handful of Mustard Greens 8-9 thin slices of potato 2 Roma Tomatos (quartered) 3-4 Sliced Jumbo Shrimp 2 Sprigs Fresh Thyme 1Tbs. Court Bouillon* (see note) 1 Tbs. Butter 2 Slices of Fresh Lemon (thin) Salt and Pepper Parchment Paper

Heat oven to 400 degrees. Cut parchment paper into a large heart. In the center of one side of the parchment paper, lay your greens down first. Add your tomatoes, potatoes, squash on top of the greens. Season your fish with salt and pepper place over vegetables. Next place butter and court bouillon around all greens. Top the fish with shrimp, thyme and lemons. Fold other side of paper over fish and roll all the edges tightly. Place papillote on sheet tray and cook for 12 mins (until fish is tender). Remove and enjoy. This is our spring season version of Poisson en Papillote. Feel free to change out ingredients as needed. ex. Spinach for mustard greens, Turnips for tomatoes, green beans, oranges for lemons; crab for shrimp or lobster. The options are endless.
