Dingle Notes Richie Williams HARBOUR. Gary Brosnan introduced a new boat, Draíocht, to the Dingle fleet recently. The vessel will be used to offer both short inner harbour trips and longer sea tours including around the Blasket Islands. Happy and safe sailing to all involved. CULTURE NIGHT. An Diseart in Green Street will host a number of interesting activities during the afternoon and evening of Irelands Culture Night on this Friday September 17th. The Dingle Hub in Cooleen will also host a number of activities with full details on www.culturenight.ie. MENTAL HEALTH. The Kerry Mental Health and Wellbeing Fest will be held from October 9th to 16th this year. The programme includes 60 free online in person and Radio events with further details on www. healthykerry.ie. Please login to view the programme and advise others to do likewise as Covid has really tested the mental health of many vulnerable people who may not normally show visible signs of stress or depression. We all probably will look back at some time or other and on hearing of a sad case will say if only I had taken more heed of an unusual action or utterance by that individual I may have saved a person from injury or worse. Yes we can all help no matter how small an action one takes. PEIL. Dingle Club Teams are doing well so far this year on the GAA front in all age groups so keep up the good work folks both on and off the field. The under age blitz games brought out boys and girls from aged 4 upwards and proved tremendous excitement for team coaches, parents, grandparents, families and supporters of all ages. Certainly some aspiring players destined to wear the Kerry Jersey displaying great traditional skills and long may they enjoy their interest in our Gaelic Games. The unofficial Inquests at street corners following the recent defeat of Kerry in Croke Park by eventual winners Tyrone will probably continue for another few weeks. We all know that nothing can change the result now but public opinion seems to query why the semifinal was delayed when a team can come out so healthy after such a serious illness dilemma a few weeks previously. All we can do is prepare to do better in 2022 and bring Sam to its real home!!!. A word of congratulations to our neighbours Limerick on a great hurling victory and well done to Cork and Mayo on their heroic efforts in the playing fields during the year. ROAD SAFETY. Winter is approaching fast with darkness now falling around 8 p.m. each evening and at least 5 minutes earlier each day. The days are also not as bright as they have been so a reminder to always drive carefully and wear high vis clothing if cycling, jogging or walking on the road at any time. If we all play our part we can contribute in a big way to ensuring everybody gets home safely every day. COVID. The successful vaccination statistics around the country have allowed the Government to eventually slowly ease the restrictions and hopefully return to a more normal way of living very shortly. However it is most important that we all take PERSONAL RESPONSIBILITY for our actions and practice the few simple guidelines whether at home, at work or mixing in public places. SLAN TAMALL!!!.

Archaeologists and historians document ambush at Ballinclare The site of a significant event in the War of Independence i n we s t Ke r r y w a s investigated recently as part of archaeological works on the N86 road improvement scheme, the details of which have been produced in a short documentary which has been published online. Archaeological Management Solutions Ltd. (AMS), who carried out archaeological works on the N86 Ballynasare Lower to Annascaul and Doonore North to Ballygarret Road Improvement Scheme recently undertook a metal detection survey at the site of the Ballinclare ambush, which occurred near Annascaul in 1920. To showcase this work and provide an historical context to the archaeological survey, AMS have produced a film with contributions from local historian Noel Ó Murchú (author of ‘The War in the West’) and the landowner of the field in which the ambush took place, John Hanafin. The metal detection survey identified a number of metal finds across the site including buttons, a lead buckle, a lead bag seal, and other objects. Although these cannot be definitively linked to the ambush itself, the survey offered a fantastic opportunity to further investigate and record the historic site in advance of road construction. Mick (Michael Francis) O’Connell RIP Mick’s immediate family (wife Cáit (ní Chriomhthain), children Aodán, Eoin and Aoife & grandson Ernie) is grateful for the love and respect shown to our husband, Dad and Grandfather following his passing on April 18th. He would have been humbled but it was all he deserved after 75 years of being an honourable, caring, upstanding man of the communities he thrived in: The Pound, Portmagee, UCC, Kerry VEC and especially Killorglin Community College (Tech) where he taught and inspired thousands of students from 1969 to 2009. Also, the Rangue/Caragh Lake area where he brought up his family and Muiríoch in West Kerry where he became an adopted Corca Dhuibhne local, as well as a frequent Máistir ar Cursaí Samhraidh… among many other spheres where he shared his talents. His sisters and the wider O’Connell family are missing their ‘Uncle Michael’ and we all try to live with this enormous loss in our lives through the help of friends and our communities. Mick would have turned 76 on 21st September and to mark this an informal group intend to stroll up his beloved Mount Brandon on September 25th 2021 (11am, departing from An Bóthar, V92 E227 - weather dependent) with hopes for this to become an annual memorial event. With the long-anticipated Leaving Cert results finally out, many students who choose to continue into third level education, are facing some very expensive years ahead. The return to campus this September is a welcome development for the well-being of all concerned, but the downside to this is the cost of travel and living away from home. Living in Corca Dhuibhne, we are all accustomed to travelling long distances to avail of certain services, and third level education is no exception to this. According to an Irish Independent article (18.08.21), a figure of around €14,000 is given for the cost of an academic year for a student living away from home. The example given in this article is for accommodation in Dublin, and it represents a rise of nearly €2,000 on the cost for a student in the 2019-20 academic year. Rent costs are slightly lower in Cork, Limerick and Galway, but overall costs are still substantial. High rents and rising food prices are key contributors to this projected hike in living costs. According to the Independent’s article, food inflation will also hit students hard this year with an estimated grocery bill of €1,980 for the college year. If you are not eligible for a student grant you will also have the mandatory student contribution fee which is capped at €3,000 per year. As a typical third level course runs for 3 or 4 years, the cost of going to college is extremely expensive and is one of the biggest bills parents and students will ever face, particularly if there is more than one child in the household. According to the Zurich Cost of College Education in Ireland Survey 2021 (www. zurich.ie/savings-and-investments/education-costs/), unsurprisingly the cost of accommodation represents a substantial average annual cost. What financial assistance is available? Depending on your household financial circumstances, you may be eligible for a student grant. SUSI (Student Universal Support Ireland) is Ireland’s single national awarding authority for all higher and further education grants. They have an Eligibility Reckoner on their website (www.susi.ie) so you can check out yourself if you are entitled to a grant, before filling in any application forms. They have a sliding scale where students may be entitled to a full or a part grant, depending on the household income and on various other conditions, such as the number of dependent children in the household. On average 40% of students receive Higher Education grants, and their student contribution charge will be paid by SUSI. If you are not entitled to a grant, and if you feel that your own household financial circumstances may make it difficult for you to cover these costs, you may opt to apply for an Education Loan, for example from your local Credit Union. Even if you are entitled to a grant, you may need to apply for a bridging loan until the grant is paid. Terms and conditions do apply to these loans but it is worth your while checking them out. (www.cccdteo.com/Education-Loan ). According to a recent article in The Irish Times, 50% of families rely on loans or other borrowings to cover the cost of college. And finally, most colleges have a section on the cost of living on their websites and also a guide for students on how to budget. The Higher Education Authority (www. hea.ie/funding) also have a section on student finances with links to the SUSI website and also information on various bursaries and scholarships available. Giddy Up your Defenses with Horseradish! Irene Ní Fhlannúra

from its pungent aroma alone! Its use as a remedy involves grating fresh horseradish and ingesting it raw or mixed in apple cider vinegar (for preservation) and honey to sweeten the taste. Modern day medicinal recipes may add garlic or ginger for an extra punch! It is also used in a poultice, both the root and the leaves, for the treatment of lower back pain and rheumatism, directing heat into the affected areas. Tea made from the simmered root or the leaves can be used as a gargle for strep throats, tonsillitis and toothaches. It has both an antiseptic and analgesic quality that can relieve pain and fight infection at the same time. Horseradish, with its strong flavour and protective qualities complements the Autumn and Winter seasons perfectly, both as a culinary and medicinal ingredient. When colds, flus, respiratory ailments and tummy bugs are at their peak, a daily dose of horseradish might just be the “root” to a symptom-free season. Fresh horseradish is in season now and available in most fruit and veg shops. Horseradish looks like a small parsnip except its more gnarly and rough and may have brown marks on the skin. It should feel firm to touch with no soft bruises or mould. Prepare by peeling with a veg scraper and finely grate enough for the remedy or dish at hand. Store unwrapped in the veg box of the fridge. Add to mashed potato, meat sauces, stews or sprinkle on meat, fish and vegetables. Remember, you only need a little.

It is neither horse nor radish, yet the horseradish has enjoyed its wonderful name since around the time of the Renaissance! Perhaps a type of food renaissance during the Middle Ages brought horseradish out of the medicine cabinets and onto the tables of the good folk of Europe in the 1500s. It is thought its name came from a misinterpretation of its German name “Meerrettich” (sea radish), which was incorrectly translated as Mare Radish and from there became Horseradish. The ancient Greeks and Egyptians used horseradish as a medicine for a wide range of ailments including intestinal worms, coughs, gout, scurvy, food poisoning, tuberculosis, colic and rheumatism. They also held it in high esteem as an aphrodisiac! Not sure how that worked out considering its heat and pungency but those loved-up southerners seemed to be eager to try out all sorts of food items for those intimate moments! Whether they just liked food in the bedroom or courting in the kitchen, there was some aphrodisiac on the menu everyday! All that aside, much of today’s research into the health benefits of horseradish proves the Greeks and Egyptians were on the ball with most of their claims and there is much more to horseradish than beef and oysters! Horseradish belongs to the Cruciferous family of vegetables that also include broccoli, brussles sprouts, cabbage, mustard, cauliflower and kale. This specific group of vegetables are well noted for a compound known as Glucosinulates, which have been identified as being protective against cancer growth. Horseradish has 10 times the glucosinulate content of broccoli, meaning that just a little is enough to promote the identification and destruction of malignant cells. Fortunately for us, whether in medicine or as food, a little horseradish goes a long way! It is a root vegetable that acts like spice which has been served alongside roast beef and oysters since the 1700s. It is said that Inn keepers serving travelling horsemen back then used horseradish to disguise the fact that their meat and fish were long past the best before date! Little did they know, horseradish worked both ways promoting the secretion of mucous to coat the intestinal linings while providing protection to the weary travellers by way of its antibacterial properties, ultimately protecting them from the putrid meats. The Old Testament cites horseradish as one of the five bitter herbs along with coriander, nettle, horehound and lettuce, traditionally served at Passover. Its role as a digestive aid is well established down through the ages, however, those with colitis, ulcers, gastritis and inflammatory bowel disease should avoid it like the plague! Horseradish is also known as a remedy for urinary tract and bladder infections. It has strong diuretic properties that promotes urination, helping to reduce the risk of bacterial infections, kidney stones and fluid retention. Because of its effective diuretic qualities do not use if taking blood pressure medication or any other diuretic. More recently it has been used to clear congestion from the respiratory tract including the sinuses, for lung congestion and bronchitis. Again, it promotes mucous secretions, loosening congestion and clearing the airways of bacteria and viruses. Merely grating it will get your own respiratory juices flowing 8 Corca Dhuibhne Beo

As a remedy: Prepare the following ingredients: 125g grated horseradish, juice of 4 lemons, 3cm grated ginger,2 tsp cinnamon and 4 tbsp honey – whizz in a blender with enough cooled boiled water to make a paste. Transfer to a clean jar and refrigerate. Take 1-2 tablespoons daily before meals or dilute in a little boiled water to make a gargle. Fourth Annual Festival Will Celebrate Kerry’s Architectural Heritage

Kerry’s architectural heritage and the county’s architectural landscape will be celebrated during the annual Architecture Kerry Festival between 24 and 26 September. A wide range of events including free guided tours and exhibitions form part of the programme for the event which is now in its fourth year and which is part of the Creative Ireland Kerry Programme.

The aim of the festival is to highlight the wide diversity of the architectural landscape in Kerry and to make some of the best-known sites of architectural significance in the county accessible to all ages. Due to COVID-19, Architecture Kerry has adapted its programme to reflect the need to run many of its events online in addition to some physical events.

Architecture Kerry has reached out to the public, to bring the people of Kerry together to be part of the celebration. During August, Kerry County Council ran a public photography competition called Shapes of Kerry where people were asked to submit their favourite images of Kerry’s built environment. The top 20 winning entrants will be showcased for Architecture Kerry 2021. Kerry County Museum and Kerry County Library are also hosting exciting new events for Architecture Kerry exploring archaeology and the county’s rich archives and heritage. Kerry County Council’s Architectural Conservation Officer, Victoria McCarthy, said the programme of events has something for everyone, even those with a passing interest in architecture: ‘Following the success of Vehicle Testing for all Light Commercial Vehicles the event last year, we decided to arrange a series of events again this year to promote and highlight some of our unique and attractive architectural heritage in the county. ‘Throughout Saturday 25 and Sunday 26 September, Monday Saturday, 9.00am to 6.00pm. some festival favourites–will be opening their doors for free guided tours. Farming News Louis Murchan EQUINE CENSUS 2021 ANNOUNCED The Department of Agriculture will undertake the first annual equine census at end-November 2021. Any person who keeps any equines in the State will be required to submit a completed census return within a specified timeline. The undertaking of this first equine census in November 2021 is one of a series of measures proposed to initiate to support the welfare of horses and associated species. This is in an effort to enhance the equine identification and traceability system with a view to better supporting equine welfare, as set out in Ireland’s Welfare Strategy 2021 – 2025. The census will also facilitate compliance with new EU Animal Health Law (Regulation (EU) 2016/429), which came into force in April 2021 and which requires that the habitual residence of every equine kept in the State is recorded on the central equine database. This is generally the premises at which an equine resides for a period of more than 30 days. The census is designed to create an initial link between each equine kept in the State on census day and the premises where it is kept at that time. A profile of all equines present on a holding on that date will be created on the Department’s Animal Identification and Movement (AIM) system, which houses the central equine database. It is expected that the formal linking of equines to their keepers will increase compliance with equine legislation which places responsibility on the recorded keeper for ensuring the health and welfare of all animals in his/her care. Horse and donkey owners are asked to check their records and regularise any issues that might arise as soon as possible. In this regard, all premises where equines are kept must registered with DAFM for that purpose and all equine keepers are responsible for ensuring that any equines in their care are properly identified with a valid passport. The census will provide important information in the event of an equine disease outbreak, in addressing public health concerns and in dealing with lost, straying or stolen horses. Equine census details will be submitted online by equine keepers via agfood.ie. Keepers who do not already have an agfood.ie account must register at www.agfood.ie to obtain personal login details to submit their census information. This should be done in advance of November by logging on to www.agfood.ie and choosing the option to ‘Register’. Equine animals include horses, ponies, donkeys, mules, asses and zebras. To register with agfood.ie, the applicant keeper must provide his/her date of birth, email address and phone number to complete the registration process. For security reasons, personal log-on details are issued by post and are generally received within 3-4 days after completing the registration process. These should be kept safely as the system cannot be accessed without them. Anyone keeping any equines on a premises that is not registered with the Department for that purpose commits an offence. Applications to register a premises to keep equines should be made to the applicant’s local DAFM Regional Office. Keepers of equines are legally required to ensure that all equines in their care are properly identified with a passport. Failure to do so is an offence. Equine passports are issued by DAFM-approved Passport Issuing Organisations (PIOs). APPROVAL FOR ALL APPLICANTS IN MOST RECENT TAMS TRANCHE Recent approval has commenced for all qualified applications received under Tranche 22 of the Targeted Agricultural Modernisation Scheme (TAMS). On average weekly payments of €1.2m are being issued TAMS II with €2.6 million issuing this week alone. This year, to date, €43.4 million has now been paid in respect of completed investments. Total payments of over €305 million have now issued in respect of over 22,172 approved applications for completed investments since the opening of TAMS II in 2015. Farmers who have completed approved works and have payment claims outstanding should submit/upload all necessary documents, reports and receipts/invoices to the DAFM online system 12 Corca Dhuibhne Beo

as soon as possible, to speed up payments. There were over 43,500 approvals issued since its launch, therefore there are a considerable amount of outstanding approvals to be processed still. The current Tranche of TAMS II closes on 5th November 2021. Tranche 24 will open on 6th November 2021. BORD BIA CLIENT SEMINAR ON “DRIVING GROWTH IN WEST AFRICA Ever wonder where your excess food produce goes. We eat what we need, then we export to Europe. Originally, the primary market was the UK, but since Brexit, this has been spread around much more, in an attempt to lessen our dependency on this market, and to reduce tariff charges. Once we get as much of our food off-loaded to the EU, we concentrate on the Middle Eastern market, then the Far East. Finally, when we have exhausted all markets, we look to the more volatile markets, particularly those in Africa. Of these, West Africa tends to be the most secure. For anyone that gets the opportunity to travel to these countries, for business, (or indeed as an aid worker) they are a wonderland. To have missed such an opportunity will haunt you for the rest of your life, so quite simply, go if you can. To learn more about this unique market and region, one could do worse than look up and follow the goings-on of Martin Heyden, Junior Minister with Responsibility for New Market Development, He curated a virtual event “Driving Growth in West Africa” which featured insights from senior commercial stakeholders on trading with West Africa, focusing in particular on the dairy, seafood, and alcohol sectors. According to DAFM, Ireland has consistently supplied quality, safe and sustainable food worldwide. With a population of 320 million, markets in West Africa provide a significant opportunity for our agri-food exports. Bord Bia plays a critical role here in ensuring that Irish suppliers and customers continue to build and foster strong and enduring relationships in this region. West Africa includes 16 countries, with a total population of 320 million. It is an important export destination for Irish food and drink, generating €415 million in Irish exports in 2020. KERRY GLORY IN INTERNATIONAL SHEEPDOG TRIALS A Kerry farmer and his dog have won a coveted international sheepdog competition. Northhill Tess, owned by Kilcummin farmer Tom O’Sullivan, claimed the International Supreme Champion award at the 2021 International Sheepdog Trials, which took place in Wales. Co-incidentally, Northhill Tess was born in Wales. Her owner Tom O’Sullivan, who was also part of the victorious Irish team, says he knew of her potential for some time. BEAM SCHEME MAY BE FLAWED TO LITIGATION A solicitor and farmer based in Co. Cork believes that the Beef Exceptional Aid Measure (BEAM) scheme could be open to a judicial review if the Department of Agriculture, Food and the Marine “insists on a rigid adherence to the terms of the scheme”. That is, of, course if anyone has to cahooneys to take them on. Mícheál O’Dowd, of O’Dowd Solicitors in Glanmire, is himself one of the scheme’s participants who is facing a clawback of payments after being unable to achieve a 5% reduction of bovine manure nitrogen (N) within the scheme’s reduction period. O’Dowd claims that the implementation of the scheme “was deeply flawed”, due to what he said was a lack of clear information provided by the department on where farmers stood on their N figures over the course of the scheme. He claims in the letter to the department, that it was clear early on that the BEAM scheme was going to be unworkable and it was pure luck if any given participant could abide by its terms. While a farmer may be able to calculate a reduction in stocking density by reference to his or her stock numbers, it is largely impossible to do so by reference to notional computations and variables which can change on a daily basis. Also, the department did not have its BEAM calculator available until February 2021. It was not possible to work out with “any degree of certainty at any point” where one stands in respect of BEAM compliance. Different figures were provided at different times, leading to confusion over the target reduction to be met. It therefore must be asked how anyone can tell for certain what the correct figures are and how an average educated farmer


can be expected to be able to abide by the scheme. Any agreement (or law) where an individual cannot reasonably be expected to tell they are in compliance is problematic. O’Dowd claimed: “It was a hastily developed and badly planned scheme and taking money off farmers despite their best efforts to try and comply with it is scandalous”. €182M BEING ISSUED TO 85,000 FARMERS UNDER ANC SCHEME The Department of Agriculture, Food and the Marine (DAFM) has confirmed that almost €182 million euro is now issuing to 85,000 farmers under the Areas of Natural Constraints (ANC) scheme. The ANC scheme provides payments to people farming land in designated disadvantaged areas. It aims to support the continuation of farming in these area by compensating farmers for the additional costs involved in farming such land. In line with last year’s arrangement, the payments currently issuing are an 85% advance payment on the ANC Scheme. 15% balancing payments are due to commence in early December. Arrangements are being made by the DAFM to facilitate payment of the advance of 70% under the Basic Payment Scheme (BPS) with effect from October 18, 2021.

Teastas Eorpach na Gaeilge (TEG) gives the adult learner the opportunity to learn Irish in a structured step-by-step path to fluency at a European recognised standard, with definitive outcomes from year to year. TEG courses in the West Kerry dialect will be run locally during 2021/22 at three levels (as described here), depending on demand. • • • • • •

3/4 TEG Conversation Courses - levels to be decided based on learners assessment Oct. 2021 - April 2022 - 40 hour course, 2 hour classes per week, mornings from 8-12 per course - courses will run only with a minimum of 8 participants. Sweet Potato and Black Bean Chilli Mark Murphy: Dingle Cookery School

If you are always looking for ideas for midweek comforting meals, this recipe should help. Every bite of this will warm up any dark evening. It is easy to make and as always, I recommend slowing everything down and it will make a difference even by five or ten minutes. Take your time cooking the onions, garlic and chilli and you should notice that it is tastier. I have used kidney beans for this will work with other dried beans. Dried beans are always better but you do need to soak them the night before and then cooked the following day, saying that the tinned version will work well too. Serve this with fluffy rice. Hope you love this. Ingredients dash of oil 1 red onion, diced 2 cloves garlic, crushed 1 red chilli, seeds removed and diced 2 large sweet potatoes, peeled cut into large dice 2 carrots, cut into large dice 1 pepper, diced 1 tsp chili powder 1 tsp ground cumin 1 tsp tomato paste 250g kidney beans, cooked and drained (you can use tinned or dried) 400g stock 1 tin of crushed tomatoes bunch of spring onions, chopped

Cook this for 5 minutes, add the garlic and chopped chilli cook for another 2-3 minutes. Add the sweet potato, carrots, pepper and spices. Cook for 5 minutes. Add in the tomato paste and cook for another minute or so. Add in the black beans, tomatoes and stock. Cook this on a medium heat for about 25 minutes. Check to make sure that the sweet potatoes and carrots are cook.

Small Changes: The ‘Green’ Bin?

came into effect in January (it could cost the Irish State more than €150 million this year).

There was good news on the recycling front last week with the announcement that from the 6th of September all licenced waste providers can now accept soft plastics in the green recycling bin. Soft plastics are those which you can scrunch up in your hand easily such as cellophane, cling film, crisp and sweet packaging, bubble wrap and bread wrappers. Up until now placing these types of plastic in the recycling bin was prohibited due to poor recycling infrastructure and high levels of contamination but advancements in the technology that separates the different material types in addition to major investment in new recycling facilities has now made it possible. Simplifying waste segregation reduces confusion for householders and it is hoped that it will lead to a reduction in the loss of good recyclable materials which will help to achieve the government’s target to increase plastic packaging recycling to 50% by 2025. It should also lead to a reduction in littering.

As individuals we can exert influence through simple actions, such as, signing petitions (VOICE Ireland or Sick of Plastic Ireland) or by returning packaging waste to supermarkets (the more that is returned, the less packaging they will be inclined to use in their products). We can also choose to avoid packaging when we have the option e.g. reuse (coffee cups, water bottles etc.), refill, choose loose fruit and veg, bulk buy items instead of individual portions.

While this is news is welcome and essentially positive, it detracts the focus from tackling the source and scale of the problem. As I have outlined in previous articles, Irish people generate twice as much plastic waste per capita as the European average. Furthermore, recent figures show that the amounts of packaging waste produced in Ireland (plastic, cardboard, glass, wood and metal) are rising every year, with an 11% increase in packaging waste in 2019 when compared with 2018, a figure which is likely to be higher for 2020 due to the pandemic. In addition, it should be recognised that while waste companies now accept more types of plastic waste, it just means that they have an increased ability to sort recyclables. It does not necessarily mean that the soft plastics can be readily recycled or that it is economically viable do so. Much of this waste will be incinerated as a solid recovered fuel (waste to energy incineration) while around half will be exported. As discussed in previously, addressing this problem requires input from every level of society, from policymakers and legislators to producers and consumers. Manufacturers, supermarkets etc. need to held accountable for unnecessary and difficult to recycle packaging as well as being encouraged to move to reuse and refill alternatives. The minds of policymakers and legislators on this matter are being concentrated by the EU, which has embraced the concept of the circular economy, not to mention the tax of 80 cent per kilogram on non-recycled plastic packaging waste which

Returning to the green bin, as consumers we also have the choice to recycle as best we can. Card and paper, cans and tins, rigid plastic and now soft plastics (the colour of the plastic no longer matters) can now all go in the recycling bin. This effectively covers most packaging with the exception of compostable packaging (put it in the brown bin) and complex packaging (e.g. Pringles tubes (card backed with a metal) or trigger spray bottles with metal springs). An exhaustive list of what can/cannot be placed in your domestic recycling bin can be found on www.mywaste.ie. The most important recycling behaviour that should be practised is to stick to the mantra of clean, dry and loose to prevent contamination of your recycling. CLEAN - Give milk and juice cartons, tins and cans, food trays etc. a quick rinse. Cosmetic and cleaning product bottles can also be rinsed or just ensure the lids are closed tight on the empty containers. Avoid placing dirty wrappers (e.g. melted chocolate, grease, food residues) in your green bin as contaminated waste goes straight for incineration or landfill. DRY- ensure that all packaging is dry (leave rinsed containers to drip dry before placing in the bin) as wet paper and card is difficult to recycle and LOOSE - ensure that all items for recycling are loose/separate i.e. do not leave the plastic bag which contained cereal in the cereal box; do not stuff boxes with extra recycling; detach plastic films from rigid plastics. Bin bags and liners are not required.

What Are You Drinking With That? Go’on, Ya Will (tea and food)

We often think of tea here in Ireland as a comforting beverage after a long day at work, we offer it as a kind gesture when somebody is upset or feeling unwell, and we often turn to a cuppa hoping it to cure many of life’s woes, but do we ever consider it as a beverage to pair with a meal to enhance the flavours in the same way we might turn to a bottle of Bordeaux? Many food traditions across the globe involve tea. Chinese dim sum restaurants will usually offer a pot of strong jasmine green tea or pu’erh tea to help cleanse the palate. Sushi restaurants always offer a cup of konacha tea, strong green tea made of gyokuro and sencha leaf particles for the same reasons. Tea is offered to help the customer to enjoy every last bite of their food. A traditional afternoon tea always includes finger sandwiches, small cakes and scones with clotted cream and jam alongside a selection of breakfast teas. Breakfast teas have robust flavours that go well with hearty meals, or heavy foods. It is no coincidence that one of the best pairings here in Ireland is a good strong cup of tea alongside a full Irish on a Sunday

morning. A strong, tannic, black tea can slice through much of the fat found in a morning fry up. Try swapping your cup of Barry’s (or are you a Lyons house?) for a cup of Assam and get back to us. When you are pairing a dish with tea try to find one with the same flavour profile as the dish you are preparing and start to put your food knowledge to the test. Think of all the flavours you know for a fact complement each other and go from there. If you are preparing a walnut and caramel tart for dessert, think of how well chocolate complements those flavours and choose a tea with chocolate notes such as a Chinese black tea like Golden Monkey. There are generally a few rules when thinking of pairing food with tea. Black teas stand up to robust flavours, think of them as the full-bodied red wines of the tea world and try pairing them with roast meats, beef and lamb. Green teas do exactly what they say on the tin, they’re green, they have vegetal and earthy flavours that pair well with vegetarian dishes, salads and mild green curries. White teas are so wonderfully soft and light you won’t be disappointed if you decide to sit down with a plate of mild cheeses and a cup of Silver Needle or White Peony. You may think we’re mad to recommend cheese and tea as a pairing, but certain oolong teas can have wonderful smoky notes that they are a fine accompaniment to smoked cheeses and even shellfish dishes. Tea and food pairings are becoming so popular across the globe in restaurants that there are now tea sommeliers. So why not impress at your next dinner par-tea and think about pairing some of your favourite dishes with some teas from around the world. Not only will it be an interesting journey but you will be glowing from all the antioxidants and health benefits that come with drinking good quality tea. Sláinte mhaith duit fhéin agus dod’chlann. Sustainable Innovation Project We received a great response to our callout for farmers to participate in the Sustainable Innovation Project to test on-farm sensor technology. As part of an EU Horizon 2020 funded project, Dingle Hub together with Teagasc, Kerry Agribusiness, Net Feasa and the IFA are working together on this initiative to address and achieve early progress in hitting environmental/climate change targets; at the same time creating more profitable and sustainable farming systems through the introduction and use of sensor technology. We will be testing on-farm sensor technology, which will capture real-time data on the farms, with the aim of improving environmental metrics and precision management and also in reducing labour demand. We are delighted to be holding our 1st of three Workshops with participating farmers next week to introduce them to the technology being used and discuss how we can work together to address some of their concerns. We have two offices which have become available to rent; the offices have a stunning view overlooking Dingle Marina and access to eir 1Gb high-speed fibre broadband, a canteen, connection to the fabulous group of people already with offices and desks here and lots more besides. With our goal of supporting the creation of viable, sustainable, year-round jobs on the Dingle Peninsula, we’ll prioritise self-employed or companies who can offer jobs in the area. Tourism News and Community Updates: The Big E 2021 – September 17th to October 3rd The Big E begins this week and the Dingle Peninsula will have a Visual Exhibit at The Big E until October 3rd. It will mark 21 years since the inaugural Dingle Peninsula Pavilion in West Springfield in 2000 and it has, with the continuity of Brian de Staic Jewellery, Dingle Linens, Celtic Gifts and the Irish Cultural Centre, promoted the Dingle Peninsula to our diaspora, Western Mass and New England in that time. For 2021, the exhibit will include the Dingle Peninsula (DPTA), Brian de Staic Jewellery, who will thankfully have a small team there, Celtic Gift House, Dingle Linens, Dingle Crystal, Louis Mulcahy Pottery, Dingle Skellig & Benner’s Hotels, Dingle Golf Links Ceann Sibéal and My Ireland Box.
