The film tells the story of Roman Coleman, a convict in a rural Nevada prison who struggles to escape his violent past, is required to participate in an "outdoor maintenance" program as part of his state-mandated social rehabilitation. Spotted by a no-nonsense veteran trainer and helped by an outgoing fellow inmate and trick rider, Roman is accepted into the selective wild horse training section of the program, where he finds his own humanity in gentling an especially unbreakable mustang.

The following week on Tuesday 5th November the feature will be the film adaptation of Donna Tartt's globally acclaimed bestseller The Goldfinch, which won the 2014 Pulitzer Prize for Fiction. The film follows Theodore "Theo" Decker who was 13 years old when his mother was killed in a bombing at the Metropolitan Museum of Art. The tragedy changes the course of his life, sending him on a stirring odyssey of grief and guilt, reinvention and redemption, and even love. Farming News Louis Murchan N & P STATEMENTS TO 31 AUGUST. The Cattle Only N&P Statements as at 31 August 2019 are now available to view on www.agfood.ie The Department of Agriculture, Food & the Marine has announced that interim Nitrogen and Phosphorus (N&P) Statements for the period January to August 2019 are now available on the Department’s online system www.agfood.ie. These statements are particularly useful as they allow farmers to plan for the remainder of the year, in order to ensure compliance with the limits of the Nitrates Regulations, thus avoiding penalties for breaching the limit of 170 kgs of Nitrogen per hectare or the 250 kgs of Nitrogen per hectare limit for those who hold an approved derogation. Farmers are also reminded that all Nitrate Records Forms for 2019 must be submitted to Nitrates Section before 31 December 2019. 14 NEW BEEF PLANTS APPROVED FOR CHINESE MARKET Following the Chinese audit of beef plants last month, 14 further beef plants have been approved from today to export to the Chinese market. All of the beef plants which were audited in September have now been approved by the Chinese Authorities. There are now no outstanding plant applications. This is the strongest endorsement possible of Irish food safety standards, as Ireland was the first country in western Europe to achieve access to the Chinese market and now it is clear that these plants are meeting the “High” standards of the Chinese authorities. The key goal of industry had been to have more plants approved in order to meet the growing demand coming from the Chinese market. Ireland gained access to the Chinese beef market in April 2018, the latest approvals mean that 21 beef plants are now approved to export to China, increasing Ireland’s ability to supply a growing demand in China for premium quality, safe and sustainably produced beef. China is currently Ireland’s fifth biggest market for agri-food exports and has grown significantly over the years. Total agri-food exports amounted to almost €800 million in 2018. The amount of beef in tonnes exported to China January to August 2019 was 4,651tonnes, a total of €21.4 million.

Drystock sheds should be cleaned out by now and slatted tanks should be empty. Furthermore, sheds should be power washed thoroughly and disinfected. A few key points to keep in mind when preparing to house your cattle for the winter are: floor space; feed space; water; and ventilation. Floor space:- According to experts, suckler cows housed in slatted houses require 2.5-3.0m²/cow, while cattle weighing over 275kg require 2.0-2.5m²/ animal. Weanlings or cattle weighing under 275kg are required to have 1.2-1.5m²/animal. Lighter animals under 275kg, according to Teagasc, that are housed in straw-bedded sheds, require 2.4-3.0m²/animal with heavier cattle, over 275kg, needing 4.0m²/head. Feed space:- If pens are stocked to the maximum, then it is important to ensure that there is enough feeding space for each animal. In order to get the greatest liveweight gain from your cattle over the winter months, it is advisable to group animals in accordance to weight. This will stop heavier animals from bullying lighter animals for space at the feed face. In addition, significant gains can be made in finishing enterprises when all of the animals in a group are of the one size. Water:- Along with adequate feed space, cattle should always have access to fresh, clean water at all times. Farmers should check their water troughs to make sure they are working properly as the ballcock can easily break causing the water to overflow. If farmers are looking to replace their water troughs, installing ones that can be emptied by the pull of a lever are extremely useful to ensure cattle have access to fresh clean water at all times. Ventilation:- Farmers should ensure that there is a continual flow of fresh air throughout the shed. In addition, draughts should be kept to a minimum to prevent cattle from getting chills or pneumonia. By making simple modifications, such as removing some of the side sheeting of sheds, fresh air can then be circulated around the shed. Research has shown that animals perform better in well-ventilated sheds, as they are less likely to develop respiratory infections or pneumonia. Animals may not always show signs of pneumonia.

This now opens the opportunity or possibility of exporting sheep-meat to china also. Here’s hoping!!!

However, suspect animals should have their temperature recorded and treated accordingly if needs be.

Total Irish agri-food trade exports to China reached almost €800 million in 2018. In 2018, China was Ireland’s fifth biggest market overall.

Allowing weanlings or autumn-born calves to venture outdoors for a period will also help to reduce the risk of pneumonia.

Dairy and pigmeat exports were the two largest categories of food exported to China. China is also a growing market for seafood and other food and drink exports.

ANC & BPS PAYMENTS 2019

In 2018 dairy exports were €541 million making it the third largest destination for our diary exports. Pigmeat exports to China have increased from €37 million (25,000 tonnes) to €77 million (58,000 tonnes) between 2012 and 2018. China is now the second biggest export destination for pigmeat after the UK. Within the last 30 years Chinese demand for meat has quadrupled, and the country now consumes one quarter of the world’s meat supply. On average, Chinese beef consumption per capita is 4kg, compared to average Irish consumption of 19kg of beef per capita per year; consumer demand for premium imported beef is forecast to rise significantly, driven by increasing urbanisation, higher disposable incomes and health awareness. IS YOUR SHED READY FOR WINTER? Although grass is aplenty on many farms, poor ground conditions are preventing cattle from grazing these pastures. This, in turn, has led to many farmers being forced to house their animals due to the heavy and almost persistent rain experienced across the country. Therefore, farmers should turn their attention to their winter housing facilities and make sure they are up to scratch. Farmers should pay careful consideration to the size of the shed available, as overcrowding can lead to a significant reduction in animal performance. 10 West Kerry Live

Though many farmers have been paid in recent days and weeks, a large number have yet to receive payment. The reasons for this can vary. Regarding the Areas of Natural Constraint (ANC), payment will only be issued when individual farmers have reached their annual minimum stocking requirement. This is an average of 0.15 livestock units (or 1 ewe) per hectare over a 12-month period, or 0.26 livestock units (approximately 7 ewes per 4 hectares over a seven month period. Farmers who hold continuous stock for the calendar year need not worry, as long as they keep the minimum stock. Those choosing the 7-Month period option will have to wait, depending on when the livestock were purchased. If purchased in January, you should have received payment already, (if not, there is another issue at fault). But, if only purchased in late May, you will most likely not be paid until December. Some sheep and Horse owners will be required to provide proof of ownership of livestock. This would be a flock book or Horse Passport. Originals must be sent to the Department of Agriculture’s ANC Section, in Portlaoise. Those awaiting payment under the BPS, who have not yet been paid should have been paid in the last week. If you haven’t received it yet, there may be a fundamental problem with your application. These are simply resolved, and you should contact your adviser if this is the case. Many unresolved issues will just sit there, as the Department tend not to write to applicants outlining the issue, any more. It is up you to contact your advisor, as they do not know if you were paid or not.


BEEF ENVIRONMENTAL EFFICIENCY PILOT (BEEP) PAYMENTS COMMENCE It was announced yeaterday (22/10/2019) that the first payments to applicants under the 2019 Beef Environmental Efficiency Pilot (BEEP) will be issued immediately. The BEEP is a €20 million scheme being piloted in 2019 and has been followed up in Budget 2020 with a €40 million investment in a successor scheme. In a difficult year for beef farmers the €20 million BEEP and €78 million Beef Exceptional Aid Measure (BEAM), as well as the €45 million Beef Data & Genomics Program and increased payments under ANC, underline Government’s continued determination to support incomes in the sector. Payments have begun to applicants who have completed the weighing and submission of data in respect of all of their eligible animals. The Department will continue to pay participants who comply in full with the requirements of the Pilot in respect of their animals before the end of the year. From yesterday, payments to the value of €2 million have been paid out to 3,134 farmers, and the data provided under the Pilot will help to improve the environmental and economic performance of our suckler herds.

associated with death during Samhain helped to process grief and reassure those left behind to let go of negative emotions. Apples had a central role on the Samhain table as they stored well and were still plentiful. Before they were ever slathered in toffee and sprinkles, apples were split in two and the formation of the seeds inside represented the five elements of life in Pagan times – Earth, Fire, Water, Air and Ether (Spirit), their position and presence bore significance, sometimes good, sometimes not so good, for the one who split the apple. Bobbing for apples and swinging the apple from a string are well-known Samhain games that are still with us today. As Samhain marked the end of the year, many rituals looked forward to the coming year and what fortune lay ahead, usually in love or in prosperity. One such ritual was to peel the apple, making one long piece from its skin. When it eventually breaks off, leave to drop on the ground. The letter it most resembles when it falls is likely to mark the initial of a future husband/wife – who needs Tinder when Granny Smith is around! At Samhain, it is believed that the veil between the physical and spiritual worlds is at its thinnest. It is the best time to summon our ancestral spirits for advice and good news of the year ahead while warding off the evil ones with scary masks and Jack o’Lanterns. Turnips and mangles featured long before the pumpkin but again, some of todays spooky faces hark back to when these tough vegetables were carved, lit and placed on a window sill to ward off any dodgy or unwelcome spirits at Samhain. When Celtic pagans migrated to the US, they brought this tradition with them and were delighted to discover the pumpkin, which were in Season at Samhain and much easier to carve!

Seasonal eating has become trendy again and may help remind us of a time when each Season dictated the menu of the day. Samhain which means “Summer’s End” celebrates the last harvest of the growing season and prepares us for the colder, darker days ahead. At this time of year, our ancestors took stock of what food was harvested, killed off any livestock deemed too weak or costly to survive the Winter and gathered any remaining crops or fallen fruit in the fields. It was considered taboo to eat anything left in the growing fields after the 31st of October, the festival of Samhain, and so was left to the Nature spirit and returned to the Earth. Between the slaughtered animals, the rotting crops and the tradition of remembering our dead, Samhain, had a deathly air about it that is somewhat mirrored in the modern-day celebration of Halloween. It is a pity that many of our cultural and spiritual connections with the Seasons and the land have been hijacked by consumerism and retail vulgarity, because much of what our ancestors did at this time of year prepared them for the long, dark Winter that lied ahead. Despite the progression of time, health risks associated with Winter now were present back in the old days – colds, flus, tummy bugs, sadness and loneliness, but traditions and timely preparations of seasonal ingredients meant that communities then shared food and company which saw them through until the Spring. Samhain is the half way mark between the Autumn equinox and the Winter Solstice. Although it was the end of the growing season, there were still many foods left to be enjoyed throughout the Winter. Traditional foods include nuts (hazels and chestnuts), apples, berries, potatoes, dark bread (rye), barley, cabbage, root vegetables, sea vegetables and a good selection of dried herbs - rosemary, mugworth, mullein, sage, bay and many others that were used in food and as medicines for the Winter season. The livestock that was slaughtered around Samhain, was respectfully prepared, dried or cured without any waste, to last throughout the season. Depending on where you lived and if you had land, game and fish were also on the menu and came in handy when meat supplies became scarce. The tradition and lore surrounding these foods are deeply rooted in the rituals and remedies of the season, many of which helped to keep us connected with the land and each other for the good of our health and well-being. Rosemary has long been associated with remembrance throughout the World. Ancient Greek and Roman scholars wore garlands of rosemary while studying as they knew it would help them remember and recall their studies. More recently, studies concluded that students who worked in a room with the aroma of rosemary oil achieved 30% greater results in memory tests. It is also the symbol of remembrance of our loved ones. At Samhain, people hung a bunch of rosemary over the doorway in memory of their loved ones who had passed away. BOATS SUNK AT BRANDON

SHIPWRECKS From – Dublin Morning Register, 2 March 1833 The Elizabeth, from Limerick to Liverpool, is totally lost in Brandon bay, on the Kerry coast. The Robert Grote, from Limerick to Liverpool, with grain has put back leaky and must discharge. The sloop Phoenix, of Cardigan, with a cargo of wheat and oats, the property of Mr. Teahan of Killorgan [sic] in coming over the bar in Castlemain bay, on Tuesday last, it then blowing hard, struck on a bank on the bar of Inch. The corn was washed out, the mast went overboard and the vessel became a total wreck. The crew took to the boat and escaped to the Rossbeigh side of the bay. Three hands of the Janet of Rothesay, [Isle of Bute] from Limerick to Glasgow, passed through Tralee yesterday, and reported that they had abandoned the vessel when she sprung a leak in Dingle bay, and that she subsequently foundered and went to the bottom.

A Walk Through History: The Ballinclare Ambush and its Aftermath. Bank Holiday Monday 28th October

In August 1920, at the height of the War of Independence, an ambush took place at Ballinclare near Annascaul. A British army lorry was destroyed with the soldiers on board being taken prisoner. Although they were subsequently released, having been given tea, cake and cigarettes at a nearby farmhouse, reprisals by the Black and Tans saw local man, Paddy Kennedy, shot dead. On 28th October there will be a guided walk through key sites associated with the ambush with commentary by John Hanafin. The meeting point is Hanafin’s Bar at 11 am. There is no charge for this walk. Annascaul Historical Society has recently been set up, primarily to commemorate the centenary of Ballinclare Ambush. A site for a memorial has been obtained and the design of the monument is ongoing. Donations towards the costs of the memorial will be gratefully received. Bank details pending.

Little Changes To Tackle Food Waste

Seven hundred euro could buy you a luxury weekend break in a five star hotel. Alternatively you could use it to pay some household bills or even save it for a rainy day. It is a hard earned sum of money for the vast majority of us yet Irish families throw on average €700 into their household bin every year. Not literally of course, but rather in the form of thousands upon thousands of tonnes of food waste. There is huge wastage all along the food supply chain from production to sales but up to a third of all food waste is generated by households. Nobody sets out to do their weekly shopping with the intention throwing a third of it into the bin and while anyone who uses their brown bin will acknowledge they have food waste, few realise the extent of how much waste could be avoided. The evidence shows that over 60% of all food going into our food bins is completely avoidable and a further 20% is potentially avoidable.

Over 900 million people on the planet are starving yet enough food to feed 3 billion people is disposed of annually worldwide. Closer to home where we dispose of over one million tonnes of food a year, it is estimated that 1 in 10 Irish people live in food poverty (defined as the inability to afford or access healthy food). If food waste was a country it would be the third most polluting in the world. It is not simply a case of the wasted food but the huge carbon footprint created in producing the wasted food; water wasted for irrigation, wasted energy required to fuel equipment and transport, wasted fertiliser and the emissions released from its disposal to landfill. Deforestation and biodiversity loss are also issues that can be partly attributed to food waste as roughly one third of the worlds’ total agricultural area is used to grow food that is never eaten.

WRITE A SHOPPING LIST

Supermarkets are designed in such a way as to maximise how much we buy. If you shop when you are in a hurry, stressed or hungry you will undoubtedly end up with unnecessary purchases. Whether you shop daily or weekly give yourself a few minutes to look through your presses, fridge and freezer, write a shopping list and stick to it. Being thrifty with food and knowing how best to incorporate leftovers into future meals are skills that need to be learnt. There are countless resources in the library and online that can help in this regard and it is something I will return to again but the following approach is a good starting point. Cook the right amount e.g. weigh out pasta, rice and dried goods, count out potatoes etc. (safefood.eu offers information on serving sizes). Use serving bowls to let people help themselves and get in the habit of asking for ‘seconds’ (if required) rather than piling food up on plates as you are more likely to reuse food that hasn’t been on someone’s plate.

Local children played music on the street which added to a lovely atmosphere. People gathered for the Ram & Sheep show where the best of the best was picked out and cups were presented. There was something for every member of the family including Kids Zumba with DJ Nat in the Leprechaun bar. There was a great turn out for the pet competition & hard bargaining & mutton pies were the order of the day. The cottage market was in full swing with tea & cakes & a showing of Ashling O'Connor's animated 2D film. Music was enjoyed throughout the village with locals and visitors enjoying one of the oldest traditional fairs in Ireland. Well done to all involved.

Another business which opened its doors nice and quietly recently is Base Dingle in Bridge Street which incorporates a number of buildings that have not been occupied for quite a few years. Good luck also to Jerry O'Sullivan and all associated with this venture which increases the variety of accommodation which is badly needed particularly in the peak holiday periods. FOOD FESTIVAL. Due to my limited computer skills I did not include in our last edition the wonderful work which Darach Ó Murchu and the Transition Chorca Dhuibhne volunteers were involved in during the recent Feile Bia. The wash stations, segregation units for recycling and compostable and general waste and general education information went down very well with the thousands who took part in the weekend. Lets hope their efforts will be heeded and result in a greater awareness by the public and compliance by retailers and suppliers in the months ahead. Dingle Tidy Towns Committee wish to publicly acknowledge receipt of a grant of €1000 from Kerry County Council Community 2019 Support Fund towards the purchase, painting and planting of concrete flower/shrub tubs in various locations around town. Work Evenings continue on Saturdays meeting at the Bottle Bank at 2p.m. Bígí Linn. FOLK FESTIVAL. The Dingle Folk Festival takes pride of place this weekend with music song and dance in abundance on the programme and the main

The annual Maritime Weekend on November 2nd and 3rd is comprised of a series of talks aimed at maintaining an awareness of our maritime heritage and our marine environment. All talks are presented at Dingle Oceanworld and entry to talks is free. Speakers this year include Dan Graham on the Nobby fishing Craft, Ted Creedon on Wrecks and Rescues around the Peninsula Coast and Dr Conor Brosnan on The Spanish Armada 1588 and Kerry . DINGLE COOKERY SCHOOL. A Butchery Weekend will be held in the Dingle Cookery School on the weekend of November 2nd and 3rd closely followed on November 9th and 10th by a Food Styling Weekend also in the Cookery School. Looks like we are being reminded that Christmas is just around the corner!!!. ROAD SAFETY. Having witnessed a few near misses recently I am back to one of my hobby horses which is road safety. I appeal to all motorists to show courtesy and respect to fellow motorists. cyclists, joggers, walkers etc as the darker evenings really present a greater danger to all road users. My appeal also extends to cyclists, joggers and walkers to wear suitable high vis clothing at all times even on short journeys and help keep our roads accident and incident free. Yes we can all help by taking just a little extra care when venturing out at this time of year.

Killorglin Book Launch Author Christine Duffy Zerillo offered a reading and book signing of her new historical fiction novel called Still Here, at a book launch on Wednesday, 16 October, at 7:30 PM in Bunkers Bar, Iveragh Road, Killorglin. A wine reception preceded the reading in the restaurant with music provided by Tom O’Sullivan and the Killorglin Men’s Social Club Choir led by Myles O’Brien. The house was packed and books were sold out on the evening, but they can be purchased at the Crystal Cave Book Shop in Killorglin and on Amazon.co.uk. A copy has also been donated to the Kerry Library in Killorglin as well so that all interested might have a read. About the book: Still Here presents a sweeping tale of two strong women, Mary Rowlandson, a minister's wife captured in an Indian raid near Boston, Massachusetts during British colonization in King Philip's War in 1676, and her captor, Sachem Weetamoo of the Pocasset Wampanoags. Based on Rowlandson's own captivity narrative written in 1682, The Sovereignity and Goodness of God, this novel reveals how their independence, strength and spirituality supported and divided these two enemies through loss of home, friends, and family as their cultures collided in the deadliest war of its time. About the author: Christine Duffy Zerillo is an Irish American, who lived in Killorglin for three years while writing and editing her book with the help of Kerry writing group members in Thursday Night Writers-Tralee and KNIBS InflictorsKillorglin. Duffy Zerillo grew up in Nipmuc Country in Massachusetts, where she roamed the woods as she listened to her grandfather tell stories about the area’s native people and King Philip’s War in 1675-76. The stories led her to study the people of the time and eventually write the novel Still Here. Duffy-Zerillo worked as a freelance journalist for ten years for New Hampshire To Do Magazine and for fourteen years as a college administrator and writing instructor. She retired to Ireland in 2016 to write historical fiction and took classes with writers James Patterson, MJ Hyland, Annemarie Ní Churreáin, and Danielle McLaughlin. She earned a master of fine arts in creative writing from Goddard College in Vermont in 2006, received a Calderwood Fellowship for Teaching Writing in All Disciplines from the Boston Athenaeum in 2006, and was selected as a winner of National Novel Writing Month in 2017. She is published in Thursday Night Tales which was released in Tralee at Culture Night 2019. Recently returned to America, Duffy-Zerillo lives in Connecticut with her husband, Sam, and teaches writing courses for Franklin Pierce University in New Hampshire. She is working on a new novel about her greatgrandparent’s immigration from County Mayo in 1884.

Cumann Peil Ban Daingean Uí Chúis Daingean Uí Chúis senior ladies team captured the Division 4 county league final in Tralee recently. Played in Kerins O’Rahillys pitch in Strand Road in Tralee, Daingean Uí Chúis took on Clounmacon/ Moyvane in a tightly fought contest. The Daingean Uí Chúis took to the field with great blend of youth and experience and were backboned with Aisling Ní Shúilleabháin at full back, the Geaney sisters Deirdre and Aoife at centre back and centre forward, Kate Ní Shúilleabháin at centre field and Niamh Ní Ghrifín at full forward. Daingean Uí Chúis played into a strong breeze in the first half and this laid the foundation for the victory. Our backline stuck ably to their task and were only 4 points down at the break without conceding any goal chances having faced into a very strong breeze. The key play came in the second half when Aoife Geaney goaled mid-way through the second half. Clounmacon/Moyvane had been struggling to this point but were then awarded a penalty with 10 minutes to go which they duly scored. However Daingean Uí Chúis rallied well with the next three scores to secure the victory and go forward to Division 3 next year. The team improved hugely throughout the year and a great blend of experience and youth really combined well for Daingean Uí Chúis to secure the victory, which bodes well for the year ahead. Club Development Plan Cumann Peil Ban Daingean Uí Chúis will have hold a meeting on the 19th of November in Benners Hotel in Dingle at 7.30pm to put together a plan to develop the club over the next number of years. We would invite all players (current and former) parents and supporters of both the men’s and ladies club to attend this important meeting to have your say in how the club develops and progresses over the next number of years. The club is an important outlet for girls in the community to actively participate in sport and we want to do this in the best environment possible whether that be from a coaching or facilities perspective. What’s Happening in the Hub? Deirdre de Bhailís Following much consultation and relevant expert advice, we’re delighted to announce that the new pilot training course for Community Energy Mentors is ready to commence. This is an exciting opportunity for people to gain the knowledge and insights required to actively drive the transition to a low carbon society within their own community. The course will introduce and educate participants in the concepts of energy sustainability, renewable energy, the goals of energy technology assessment and the promotion of sustainable energy technologies at community level. The aim of the course is that participants will gain the knowledge and skills required to manage and assist in future Dingle SEC community awareness and information events including the proposed weekly Energy Clinic. It should be of particular interest to voluntary sector individuals who wish to upskill and support community transition to a low carbon society and individuals who have an interest in pursuing careers in the area of energy sustainability and will progress to further education on completion of this course. The course will take place in Údarás na Gaeltachta, Páirc Ghnó an Daingin and will start on November 13th. It will run for 12 weeks on a part-time basis for 2 days per week (Wednesdays & Thursdays) between the hours of 9:00 am and 4:15 pm. Storied Kerry STORYTELLERS FROM ALL EIGHT KERRY DISTRICTS The Storied Kerry annual conference on Saturday November 2 (at St Oliver's National School in Killarney) will be peppered with five minute Kerry stories. Storytellers from all eight Kerry districts will range over legend, landscape, flora, fauna, archaeology, history, folklore and our contemporary story. •

Danny O’Connor representing the Kenmare District tells an amazing story from his native Bonane on when he first noticed the alignments between features of the landscape with moon, planets or stars at different times of the year.

One of the few – if not the only - professional field bryologists in this country Rory Hodd, representing the Killarney District, has a story on the the unique Dr Thomas Taylor who produced the first comprehensive catalogue of our 450 mosses and 237 liverworts.

Bebe Lynch (17/10/1925 - 22/09/2019) Dr. Jimmy Lynch and his wife Caroline would like to take this opportunity to acknowledge all the help and support given to Jimmy's mother Bebe during her short illness leading up to her death on September 22nd. Bebe was well up until a few weeks prior to her passing and for the duration of her illness she could not have had better care and support from all the nurses, doctor, carers, friends, relatives and neighbours, for which Jimmy and Caroline are deeply grateful. To address the skills gap and staff shortage in hospitality and tourism sectors in County Kerry, a new fully funded course in DINGLE may be of interest. Applications are open for the upcoming Certificate in Culinary Arts (Food Preparation and Cooking) run at Dingle Cookery School which starts on Monday 25 November. This is a pathway course provided by Kerry College of Further Education and Training. It is targeted at those who wish to start a career in the culinary arts, food preparation or progression to the National Commis Chef Apprenticeship Programme. Each learner will be based in an industry standard production kitchen at Dingle Cookery School and with have their own workstation. The course is fully funded, so no fees are payable. It runs for 20 weeks full time and aims to develop a range of basic food prep, cooking and culinary arts skills. Only 14 places available. Seasonal Flu Vaccination Question I got the seasonal flu vaccine last year. Do I need to get it again this year? Answer Influenza, usually known as the flu, is highly infectious and anyone can get it. However some groups are at greater risk of complications if they get the flu and the flu vaccine is strongly recommended for them. They include people over the age of 65, pregnant women and people who have a chronic medical condition. The flu viruses that are circulating change every year. This is why you need to get a new vaccine each year. Vaccination is free if you are in one of the following groups: •

Are aged 65 and over

Have a long-term medical condition such as diabetes, heart, kidney, liver, lung or neurological disease

Have an impaired immune system due to disease or treatment

Have a body mass index (BMI) over 40

Are pregnant

Live in a nursing home or other long-stay institution

Are a carer or a healthcare worker

Have regular contact with poultry, water fowl or pigs

should get your flu vaccination from early October to be protected for flu season.You can get the vaccine from your GP (family doctor), pharmacist or Occupational Health Department. Children can get the vaccine from a GP. While the vaccine itself is free of charge if you are in one of the recommended groups, doctors and pharmacists may charge a consultation fee when they give you the vaccine. Kerry Association Dublin presents raffle proceeds to two Kerry charities and also seeks nominations for Kerry Person of the Year 2020 Pictured below at the Rose Hotel at the weekend is Tomás Garvey, 2019 Kerry Person of the Year, accepting a cheque for €4,500 on behalf of the Kerry Cancer Support Group from Keelin Kissane, Chairperson of the Kerry Association in Dublin. Kerry Cancer Support Group were Tomás’s nominated charity to benefit from the proceeds of a raffle at the Kerry Association in Dublin’s 2019 Annual Dinner, held earlier in the year in Croke Park at which Tomás was honoured as Kerry Person of the Year.

The Kerry Mountain Rescue Team, represented by Mike Slattery, Gerry Christie and Dermot Reen, were presented with a cheque for €1,610, also from the raffle proceeds on the night, in recognition of their selection as Laochra Chiarraí award winners for 2019.

Meanwhile, the Kerry Association in Dublin is actively seeking nominations for the 2020 Kerry Person of the Year and 2020 Laochra Chiarraí awards. The Kerry Person of the Year award, which began in 1979 is now in its 41st year and recognises an individual who has shown leadership, brought honour to the county, and performed services for the county to such an extent that could be described as being beyond the norm of everyday life. Previous winners include literary legends John B. Keane and Brendan Kennelly, as well as sporting heroes Mick O’Dwyer, Páidí Ó Sé and Colm Cooper. The Laochra Chiarraí award recognises a group for exemplary leadership in community activity. Nominations for both awards are now being accepted through the online forms on the Kerry Association website at www.kerryassociation. ie, and the deadline for all nominations is Sunday, December 1st 2019. The awards will be presented at the Kerry Association in Dublin’s annual dinner, Oiche Chiarraí, on Saturday, March 28th 2020 at the Red Cow Moran Hotel, Dublin.

Beef and Carraig Dhubh Stew Mark Murphy - Dingle Cookery School It is now the time of the year that we start to cook more stews and casseroles. This is a version of a beef and porter stew. Previously we might have reached for a more mainstream brand of porter but for this one I have opted for a stout or porter from one of our local breweries Beoir Chorca Dhuibhne (West Kerry Brewery). I have recently made a stew using their porter ‘Carraig Dhubh’ and the difference was very noticeable, much nicer flavour than from using a more mainstream brand. The more we taste and ask questions of each ingredient we use for any dish will always change how we cook and how our food tastes. To prove this all you have to do is pour yourself a little glass of this porter or stout and then ask yourself what are the characteristics or the flavours that are present and how will this taste in my stew.

rapeseed oil Method Dust the beef with flour and season with salt and pepper. Heat a casserole pot over a medium to high heat. Once it is hot, add a dash of oil and then add the beef. Allow the beef to brown for about 5 minutes. Remove the beef with a slotted spoon. Add a little oil to the casserole pot and add the onion, celery, bay leaf and thyme. Allow these to brown over a medium to high heat for about 3 minutes. Add in the carrot and leave for another 3 minutes, stirring occasionally to prevent from sticking / burning. Once they have browned add the parsnip and repeat

Turn the heat down to medium, pour in the porter and leave to reduce by half. Add enough beef stock to cover the meat and vegetables. Cook this over a medium heat for about an hour and a half. At this stage, the beef should be tender and the liquid should have thickened nicely. Season with salt and pepper, remove the bay leaf and serve with some creamy mash potato.

You see from the recipe I take about 10-15 minutes to start the stew rather than trying to throw everything into a pot together. The small bit of work at the beginning will always make your stews taste better. Remember to cover the meat and vegetables with the liquid and always keep it to a nice steady simmer. Serve it with a big bowl of creamy mash and you will never go wrong. Ingredients 500g stewing beef, diced 1 tsp. flour (optional) 1 onion, diced 1 stick of celery, diced 1 bay leaf small bunch of thyme 2 large carrots, cut into large dice 1 parsnip, cut into large dice ½ tsp. tomato purée 300ml Carraig Dhubh stout 1 litre beef stock
