Strange Times This magazine last went to print on Wednesday 11th March in the usual fashion; slightly chaotic as the clock ticked closer to the deadline but ultimately, as always, we got it done. By the time it hit the shelves the following afternoon, most events had been cancelled and the landscape of all our lives was beginning to change very quickly. The Animation Dingle programme on the back page became obsolete overnight, the Comedy Club was cancelled, the County Clean-Up called off, the cinema curtains remained drawn, restaurants due to open left the doors closed, the music listings told us what should be happening rather than what would be happening, classified adverts from bars and restaurants seeking staff for the upcoming season were now from another world. All changed, changed utterly. Now we live in a new kind of reality where the streets are eerily quiet, most doors are shut and there are no visitors. We haven’t been here before and the unfamiliarity can at times be unsettling. The threat from the virus is very real and needs to be taken seriously, it’s a time to stay safe, to follow the guidelines and do what’s right for all of us. But the imposition of a kind of communal solitude can also bring a serenity and opens up new possibilities. Modern life has slowed way down and most of us aren't used to having this much time on our hands, but it's time we can spend well. Sheds and attics are being explored, gardens are being tended, books are waiting to be read and boxes of old photographs are there to be rediscovered. All those things that were put on the long finger because of a lack of time can now be faced and embraced. Then of course there's the great outdoors. We are blessed to live where we do, surrounded by such extraordinary beauty. There are new places to explore and old places to revisit. Of course this must be done in a responsible fashion, either alone or in the company of those with whom you live. Kerry Mountain Rescue are asking walkers to forego their enjoyment of the hills for the moment and to stick to lowland paths and walkways, while strictly observing social distancing principles. Even within these limitations there is much to savour.

None of us are unaffected by the drastic changes to our lives in these new strange times we live in. We truly are all in this together, and that in turn will help us through it. The common decency of people and strength of community spirit has shone through the crisis to date. Sports clubs, community organisations and individuals have risen to the challenge. For all its ills, technology and social media has played a part in keeping us in touch with each other. And we too in West and Mid Kerry Live will endeavour to play our part in keeping the community connected. It's a time of uncertainty but what we can be sure of is that it will pass. And when it does, we can walk away from our pristine attics and alphabetically ordered book shelves and come together again. Maybe we can take to the street and lay out the public table with food and drink, take our fill of all that is good and enjoy each other's company once more. Until then, stay safe.

Thanks to Padraig O’Gairbhí for his wonderful singing and musical contribution, to all the members of the choir who sang beautifully. Thanks to all who contributed to the Mass and to Niamh’s sister Cáit Uí Chonaill for her lovely eulogy. Thanks to all our close relatives, our neighbours and friends who showed immense kindness and support throughout those difficult days. Thanks to all the staff at Dingle Community Hospital who looked after Niamh so well, and for their support of the family. Ballyferriter’s St. Patrick’s Day Parade 2020 As every one knows all St. Patricks Day parades were cancelled nationwide, including the Ballyferriter’s parade, due to a virulent and unwelcome visitor who landed on our shores. Therefore we like to take this time to, thank the children who put in Trojan preparations for the parade, practicing music and making costumes. Thanks also to the parents who helped out with their children and whose patience, needless to say, was most probably, severely tested. Also gratitude to the volunteers who were to assist with traffic control, shepherding the parade amongst other things. With the general air of disappointment we should not leave everyone unrewarded. When this health crisis has blown over and life gets back to normality we should celebrate the occasion and hopefully stage a parade in recognition of a momentous victory over this nasty visitor by this community and the nation’s efforts in quashing this enemy. Watch this space and thanks to all.

Farming News Louis Murchan COVID-19 ANNOUNCEMENT In order to protect customers, their families and the general public, farmers like everyone else are being asked to avoid unnecessary contact with professional service providers, such as agricultural advisors, Department of Agriculture staff, Vets, Auctioneers, engineers, and a wide range of others. For most services, you can do your business by phone, email, text, whatsapp or snail-mail letter. Careless contact could cause serious illness, which could spread easily. People with immune-deficient problems, asthma, emphysema, diabetes, as well as our older friends and neighbours are highly susceptible to contacting a severe case of the illness. If your agricultural advisor contacted coronavirus from you, and had 30 or forty other clients to meet in the coming few weeks, each of them would also most likely contact the virus, and the exponential spread of the disease would be enormous. So, please be careful and considerate. All are asked to have NO contact with these providers, call them and do all necessary business over the phone. If you feel that a meeting is necessary, make a phone-call first, listen to the advice offered and take it from there. Most professionals have now adopted this approach, so please do not be offended if they ask you to stay away and work remotely. EXTENSION ANNOUNCED FOR NITRATES DEROGATION APPLICATIONS A short extension to the closing date for the 2020 Nitrates Derogation applications has been announced. Over 6,800 intensively-stocked farmers availed of the derogation in 2019. DEPARTMENT OF AGRICULTURE LABORATORIES TO ASSIST IN COVID-19 TESTING Regional Department of Agriculture Laboratories will soon be assisting in the efforts to detect and diagnose Covid-19 in humans. These laboratories will be used to assist the National Virus Reference Laboratory at University College Dublin (UCD), however they will still continue to provide laboratory services in the areas of food safety and disease control. MCDONALD’S & SUPERMACS TO CLOSE DUE TO COVID-19 McDonald’s and SuperMacs have both closed all their restaurant. This will have a massive impact on the Beef Industry, as SuperMacs buy €40 million worth of beef, annually. The news will come as a body blow to the Irish beef sector at this time, with McDonald’s claiming the title of the largest buyer of Irish beef by volume every year. The firm sources beef from 18,000 Irish farms for hamburgers across Europe. McDonalds also buy approximately 40,000t of beef which is then exported to other European markets, meaning that every year one in five hamburgers sold in McDonald’s in Europe is of Irish origin. The company also highlighted its Bord Bia certified member logo on its beef products to back its Irish quality credentials. SPRING GRASS IS HIGHER IN PROTEIN AND ENERGY; AND FOUR TIMES CHEAPER THAN MEAL This spring has not gone to plan in terms of grazing and grass growth on farms the length and breath of the country. Cold weather and prolonged heavy rainfall in recent weeks has hampered farmers chances of getting cattle out to graze early spring grass, which is not only a quality feed, but it also allows farmers to set up the grazing platform for oncoming season. While some farmers in select locations were lucky enough to get a proportion of the farm grazed in February and indeed throughout March, most were left waiting for a suitable opportunity which simply didn’t come. This was especially the case in West Kerry. However, as forecasted, weather conditions have improved and look to improve further. Farmers who have made provisions to move some cattle out to grass should be ready to grasp the opportunity, and perhaps begin letting stock graze during the day, or part of the day, to utilise the best possible feed available. Grass. As stated, it is the best available and cheapest feed for cattle and especially dairy cows. LAMENESS BEGINNING TO REAR ITS HEAD ON FARMS…WHAT CAN I DO ABOUT IT? Lameness is a serious welfare issue affecting almost every dairy farm in the country. Lameness issues on farms are likely influenced 8 West Kerry Live

by the wet weather conditions experienced across the country, causing the quality of farm roadways to deteriorate and become wet and mucky. Lameness can be a frustrating and costly issue for farmers. On average, one lameness case on any farm is costing a dairy farmer €300/year. This includes: €50 on treatment; €100 on loss of yield; €100 on increased culling (10% of lameness cases are culled); and €50 on loss in fertility. However, there are ways to prevent and combat the issue before it has a huge financial impact on your business – with some of these coming at no extra cost to the farmer. To prevent or reduce the risk of lameness: •

Improve the quality of roadway surfaces;

Have clean yards and passageways;

Allow cows enough time to walk from the paddock to the yard, meaning no shoving or pushing cows;

Keep a distance of 5m behind the herd when they are walking;

Avoid overcrowding in collecting yards;

When housed, ensure an adequate number of cubicles and feed spaces are available;

Footbath regularly if there is a need to do so;

Complete regular mobility score checks;

Treat lame cows promptly.

Farmers must be proactive about lameness. A lame cow should be promptly identified and treated accordingly to maximise the chances of the cure rate. It is also a good idea to complete regular hoof pairing on the herd. This will help you to identify the type of lameness on your farm, so that you can find a solution. Mobility scoring is a system whereby cows are scored on a scale of 0-3 based on their mobility, with zero being good and three being a severely lame cow. This is important because the earlier you treat a cow, the greater the chance of recovery. TAMS APPLICATION: HOW LONG DO YOU NEED WHEN APPLYING FOR A GRANT? With Covid-19 casting a huge cloud of uncertainty over the world, it is hard to think about anything else. However, for those who are thinking about applying for the TAMS II Grants, it is time to get cracking on before it closes at the end of this year. The scheme is intended to provide farmers with grant aid to improve and/or build a specific range of farm buildings or purchase equipment that may benefit their farm businesses. For many farmers, who haven’t applied for the grant yet, probably thought, or at least hoped, that it would be extended past 2020. However, due to the coronavirus outbreak, the chances of the scheme being extended look increasingly unlikely. The outbreak of the coronavirus has cast a huge shadow over the country and it could have a huge effect on farmers who are planning to build sheds or parlours in the coming months. If county councils close down, this will end up delaying planning applications and farmers may or may not get their applications approved in time to avail of the grant. The first thing you need if you are applying for a grant is full planning permission or a planning exemption cert. The planning permission process will take up to 13 weeks to complete. It will take eight weeks for the permission with a grant of the condition and a further five weeks for the final grant of permission, which is required for the TAMS II grant application. COVID-19: HOW IS THE DEPARTMENT COMMUNICATING WITH STAKEHOLDERS? Communications between the Department of Agriculture and both farmers and other other stakeholders seems to be uninterrupted in spite of the Coronavirus. Communication channels are very much open between the department and stakeholders such as farm organisations, though not in person. Channels including by email, telephone calls and video calls are being used and where possible, conference calls are made; but in the absence of this, regular phone calls continue. Local Department offices are still open, but not for face-to-face visits, so don’t drop into these offices until further notice. If people do have queries on LPIS (Land Parcel Identification


System) or different applications, the Basic Payment Scheme applications and so on, the phones are being answered by people, call your advisor. FINALLY………….. People are asked to be careful, responsible and considerate. Simple hygiene is essential, with people asked to keep 2 meters from others, wash your hands regularly, do not sneeze or cough in other purple’s space, Bulk buying is also a big No-No. It is selfish and inconsiderate. The rumours of a local man buying 150 chicken breasts are unimaginable, when other, elderly people were possible in danger of being left short. This sort of “I’m All Right Jack” behaviour is disgusting and disgraceful, and should not be tolerated. And fortunately, it is not now, by our local shop-owners. Thanks to our local retailers, and their staff, we in Dingle have not yet being left short, and it looks like we will not be, thanks to these courageous and accommodating people.

Finding Comfort in Comfort Eating! Irene Ní Fhlannúra

Yet again, this is a survival instinct to ensure that we can fight or flee from a physical threat, such as a hairy mammoth, without having to pull up on the side of the road for a cheesy snack! This is evident in extremely stressful conditions in which many of our health care workers are finding themselves. Working long hours, under immense pressure with the added call for action required, many will not even feel hungry until well after their shift is over. Under these conditions, the body will release glucose from liver and muscles to keep them going. Fat stored in adipose tissues can also be mobilized for energy. But again, these are short term measures. It is vital that these people are nourished, replenished and allowed to rest and recover between shifts. To digest food properly, we need a relaxed digestive system - warm teas and broths can help your body loosen up after a stressful period, while protein shakes and electrolyte packets provide energy when appetite is low. For those with children at home, who seem to be grazing non-stop, it is okay if they are grazing on the good stuff. Each morning lay out a little box with their snacks - fruit, veggie sticks, yogurt, popcorn and the occasional sweet thing to put a daily limit on snacking. Kids too are feeling the anxiety and also have that natural inclination to seek out comfort in food. Let them bake their sweet treat and clean up afterwards as the distraction will take their minds off things. Like adults, they too must learn that emotional eating does not fix the emotion but may leave them feeling jittery from too much sugar, adding to anxiety or leave them feeling low (after the sugar crash) intensifying feelings of sadness or loneliness.

If the queues in the supermarkets are anything to go by, there is a lot of eating going on! For most people, our calorific needs have not necessarily increased during this COVID 19 crisis yet the urge to eat has. This phenomenon is nothing new and much of it lies in our evolutionary ancestry in which the human body and subconscious mind have evolved to perceive weight gain as an indicator of improved survival. This was fine and dandy back in the day, when over-eating involved pigging out on extra roots, fruits and vegetables. But now, with our food supply burgeoning with junk foods, the consequence of survival eating may scupper its original objective. Food brings comfort to us, as it releases dopamine and serotonin into our brains, making us feel instantly better. However, this is short-lived, and as levels fall off again, the urge arises to comfort eat again. How do you tell the difference between emotional hunger and real hunger? Real hunger grows gradually and lasts longer unlike a craving which can come out of the blue or arises to change an emotional state. This is why some people eat when they are sad or anxious. True hunger is a result of a lack of food, no matter what emotional state we may be experiencing. Another good clue to tell the difference is that emotional eating is usually only satisfied by one type of food, such as biscuits, bread, crisps or ice cream for example. True hunger is satisfied with a much wider variety of foods, because the body is screaming for nourishment, and not too fussy from where it comes. The last two weeks have been extraordinary, the updates on the Coronavirus situation are constantly developing and understandably, feelings of fear and anxiety are high. We are in survival mode and naturally responding to the stress. While eating for sustenance is a good thing, experts say emotionally eating a lot of food with little nutrition can weaken our immune systems and worsen our moods at a time when protecting our bodies and staying positive is particularly important. One of the simplest ways to avoid eating too many junk foods at this time, is not to buy them. Stick to your ritual of three meals a day, even if your routine has changed and snack only on wholefood, if true hunger arises. Ask yourself “am I about to eat because I’m physically hungry, or because I feel stressed or sad?” If the answer is the latter, good advice is to consider turning to other sources of comfort: breathing exercises, movement, spirituality, social connections (from a distance), hobbies or time in nature, among others. With many of us now at home, we can spend more time in the kitchen. If you are new to cooking meals from scratch, now is a good opportunity to experiment with flavours and ingredients. Practice making a few homemade meals that you can enjoy making over and over again, long after this crisis passes. Seek real comfort in building on your cooking skills and creating a repertoire of recipes that you and your family will love. Although many people eat more in anxious times, some people lose their appetite and eat very little, if at all. We can go back to our evolutionary ancestry to understand that stress can shut off appetite and digestion. 12 West Kerry Live

These are exceptional times and while it is important to stay informed, do try to limit exposure to all the bad news. Take comfort in routine, in three square meals, in leisure time and self-care. From The Archives Edited By Ted Creedon Fatal Prank From – Kerry Evening Post, 5 May 1894 A tinsman named Quill, known in this locality as ‘Cowley’ came by his death yesterday in a sad and foolish manner. Deceased was fond of his beer, and under the influence he thought to amuse a number of bystanders, who were at a distance, by letting himself off from the pier at Ballydavid to float on a fish box. In this exploit he was quickly upset, but was observed too late, for by the time he was rescued he was scarcely alive. All efforts for his restoration were of no avail. He leaves a wife and two young children.

Castlegregory Rum From – The Scotsman, 1 November 1834 In the gale of wind last week, a puncheon of rum was thrown on shore near Castlegregory, in Bandon Bay [sic]; it was immediately surrounded by the country people, who drank to such excess that one man (John Mahony) actually died of suffocation. Five others are so dangerously ill that little hope is entertained for their recovery. [ puncheon - a barrel containing from 70 to 120 gallons – 265/450 ltrs.].

Death and Rescue at Valentia From – Cork Examiner, 1 July 1846 On Monday, a young man named Pat Sullivan, was picking seaweed near the light-house when a wave took him off and he was drowned within a few yards of the shore. He was the only support of an aged father.

Roving Swan was drowned in the same harbour on 6th June 1910.

Annascaul Fire From – Cork Examiner, 16 May 1868 A day or two ago a fire of rather a destructive character took place at the village of Annascaul, about 16 miles from Tralee. Three outhouses belonging to the Postmaster, Mr. Ashe, as well as some cattle, were consumed, and were it not for the vigorous exertions of the neighbours, Mr Ashe’s dwelling-house would have been also burned. The fire, a very rare occurrence at Annascaul, occasioned great alarm amongst the inhabitants. The damage sustained is estimated above £60, and it is thought that he shall seek before the Presentment Sessions to have same levied on the parish, in the form of a malicious injury claim.

Scottish Brig Wrecked From – Cork Constitution, 18 February 1826 In the severe gale of wind on Monday last, the brig Marquess of Wellington, of Greenock, Hewitt master, bound from Demerara [present day Guyana – South America] to Greenock was totally wrecked in Dingle Bay between Inch and Minard. Her cargo, consisting of sugar and molasses, is entirely lost, and only a few spars of the vessel saved. The vessel was 200 tons burden. Out of her crew of eleven men, one man only was drowned. The Water Guard [coast guard] under the orders of Lieutenant Bowie have exerted themselves to the utmost. A large quantity of butter in firkins marked “F” within a diamond, has been cast ashore all along the western coast, within the last fortnight, supposed to have been part of the cargo of some outward bound vessel.

On Tuesday, a boat belonging to a man named Flaherty, laden with timber and having six persons on board was leaving Valentia harbour for Dingle, when she capsized and went on the rocks. A boat from Begnis [sic] at once put off and rescued the whole six persons from their perilous situation.

Minard Rescue From – Cork Examiner, 10 April 1850 A three-masted vessel, laden with palm oil, having sprung a leak at sea, became a total wreck having struck against the west Blasket Island. For four days previous to the disaster the crew of 26 men, three of whom were Blacks, and the captain, were incessantly engaged at the pumps. Finding their efforts unavailing and 12 feet of water in the hold, they got into their longboat in a tremendous stormy sea. Coming up Dingle bay they were noticed by the lookout man of the Minard coast guard station who hoisted a flag and beckoned them into Minard. The ship’s name was the Commerce of Liverpool, having sailed from Boany [?] on the west coast of Africa. She was 449 tons burden and her cargo was valued at about £15,000. [A second report states that the Commerce struck a sunken rock in the Blasket Sound].

Accident Off Maharees From – Dublin Weekly Mail, 14 August 1847 An accident attended with loss of life occurred in the Sound of the Maheries [sic] on Monday last. Three men proceeded in a canoe to pick up a deal board which was floating with the tide. The sea, at the same time, was running very high. One of the men, when in the act of making fast the board with a rope, overturned the canoe, and all three were at once precipitated into the water. Before another canoe, which was a short distance off, could reach the spot, the three unfortunate men sank to rise no more.

Small Changes: Sustainable Isolation Sr. Stanislaus Kennedy, founder of Focus Ireland and director on the Immigrant Council of Ireland, wrote an opinion piece for one the national papers last weekend on finding the silver linings in the Covid shaped cloud. Chief amongst the silver linings is the hope that the virus will teach us to recognise our fragility and the need to change our attitudes to respect all people, the world’s resources, our environment and its ecosystems. I do not possess Sr. Stans eloquence so I will not try to compare and contrast two existential crises (Covid -19 and climate change). Instead, I offer a few small changes and ideas on making the things that are helping us all though social distancing and isolation, food, technology, nature and community, a little bit more eco-friendly and sustainable.

Food

Panic buying and stockpiling in times of crisis is a normal human response, albeit a selfish one (not so normal is panic buying toilet roll for a pandemic caused by a virus that affects the lungs and not the gut). As people have started to see that supply chains are secure, food producers are still producing food and shop shelves are still being stacked, this response has begun to ease. So it’s now time to turn attention to the mountain of food waste that could result from all the over buying. There are hundreds of ideas and tips on www. stopfoodwaste.ie. but to begin with focus on becoming friends with your freezer. Batch cook meals and freeze them instead of letting food go off (don’t forget to label everything!). Prepare vegetables appropriately and freeze them to use in stews, soups and stir fries. Cheese freezes well (grated for toasted sandwiches, quiches etc.), as does bread (toast, puddings, breadcrumbs for stuffing, gratins etc.), fruit (use in smoothies, jams, crumbles etc.) and items often overlooked such as milk and butter. Organise your fridge and presses so that you use foods before their use by and best before dates. Many parents are occupying children with baking at the moment but preparing vegetables and organising cupboards are activities that kids of all ages can do with the added advantage that your kitchen is not covered in flour and icing sugar. and encouraging us to socially distance while shopping so now is not the time to wander around supermarkets perusing the shelves and wondering what to cook for dinner. Take this opportunity to get into the habit of writing a list of what you need before you venture to the shops. This will not only reduce the amount of time you spend in them but will also cut down on the amount of food waste you generate.

Technology

The use of technology is a huge advantage in the fight against the coronavirus pandemic directly and indirectly. Doctors and scientists have medical devices, diagnostic tools and supplies that were not even imaginable at the time of the Spanish Flu pandemic in 1918. Technology is enabling people to work from home. It facilitates schools to teach in real time through apps such as zoom while streaming sites such as Netflix and Spotify keep us entertained. Communication apps and social media allow us to stay virtually connected while in isolation and of course that same technology helps to inform and update us on the latest coronavirus news. It is well recognized that being bombarded with so much information is having a detrimental impact on our mental health but what is less obvious is the huge energy costs of all our online activity. Each activity you perform online comes with an energy cost. The energy to run your devices is relatively small but can be reduced i.e., by being mindful of unplugging devices and Wi-Fi which are not in use or charging smartphones and tablets in flight mode to reduce the time it takes. Vast amounts of energy are however required to power the data centres and the huge servers needed to support the internet and to store the content we access and save (the digital communications industry has higher carbon emissions than the aviation industry). When data is stored in the cloud it is not whizzing above our heads but rather in enormous data centres all over the world which need massive amounts of electricity to run and cool the thousands of hard drives they house. Every photo, video and file you save is stored over and over again for security reasons and this consumes energy every time. Regularly cleaning up your cloud storage and deleting useless files saves energy. USB sticks and external hard drives offer a good alternative to cloud computing and also protect your private data. A digital spring clean of all your saved photos and files would keep you busy and reduce the amount of time spent refreshing news feed apps at the moment! A huge amount of all traffic on the internet is consumed by streaming moving images. Netflix alone consumes 15% of the worlds internet traffic and people staying at home can lead to almost a 60% increase in the amount of

content watched. Teleworking and streaming put internet infrastructures under such strain that Netflix announced that it would reduce its European network traffic by 25% to manage the surge in use expected due to the Covid-19 crisis. Anyone who uses streaming sites can also help reduce pressure on the internet infrastructure (and in turn energy usage) by downloading movies, shows and playlists you know you will be watching or listening to repeatedly instead of streaming them every time. Reducing the resolution of the videos you watch also significantly reduces the data required to stream them. Every mail and message that your send or that lands and is stored in your email or messaging app also requires computing power and electricity. Considering whether it is necessary to send a message (e.g. a thank you, thumbs up or another coronavirus themed meme), deleting junk and spam mail, unsubscribing from newsletters you do not read and regularly cleaning out old messages from your inbox all reduce energy usage. The same principles apply to messaging apps such as WhatsApp – think twice before forwarding unsolicited fake news on coronavirus both for your mental health and for the environment.

Nature

As long as we practice social distancing and avoid large crowds, the great outdoors is still open for business and going outside is always encouraged for our physical and mental health. While we are spoiled with choice with regard beaches, tracks and trails in West Kerry, engaging with the environment is something most of us can do by just stepping outside the front door. Just before schools were closed, Supervalu teamed up with the All-Ireland Pollinator Plan and the National Biodiversity Centre to help raise awareness of the importance of bees and sent Save the Bees packs to all schools in Ireland. All the information and resources such as how to identify different bees, suggestions for pollinator friendly plants to grow, how to maintain a small wildflower garden and how to submit sightings of bees and hoverflies to improve data and drive pollinator conservation are available to download from www.pollinators. ie and www.supervalu.ie. Engaging with some of the many activities suggested on these sites would definitely help occupy young and old for many hours over the next few weeks. If you are out scouring the hedgerows for pollinators or just going for a stroll on the beach consider bringing a bag to pick up a few items of litter. The county clean-up has been


deferred because of the coronavirus but that does not mean that individuals cannot make a start on the annual litter collection effort. The more energetic members of the community might even consider taking the up the Swedish exercise of plogging which involves picking up litter while jogging.

Community

Sr. Stan outlined that at the moment we are recognising ourselves not just as members of families and communities but also of networks and connected groups whose task it is now more than ever to support each other and collaborate even if it is from a distance. The exceptional

response from almost 30,000 applicants to the HSE recruitment appeal, the selfless offers of help from voluntary groups such as local GAA clubs and community groups and the consideration of neighbours for each is proof of this. Aside from the anxiety being felt at the thoughts of vulnerable relations becoming sick from the virus there is worry and uncertainty for so many self-employed people and those dependant on tourism for work. It has never been more important to support local and Irish businesses and producers than it is at the present. When grocery shopping consider the provenance of the products you are buying and also remember that there are many small independent shops open as well as the large supermarket chains. While many businesses are closed it is still possible to shop online for a lot of their goods and services and many are providing home delivery. Finally, there is the option to purchase

vouchers for services which can be redeemed when the pandemic is over, which will hopefully be sooner rather than later.

What’s Happening in the Hub? Deirdre de Bhailís What a distance we have all travelled since I wrote our last update. The world as we knew it is barely recognisable for many. The Dingle Hub closed on 21.03.2020 to protect the health and safety of staff and users during the Covid-19 crisis. It will remain closed until further notice. Many of us can continue a level of work from home for now but this crisis highlights more than ever the need to build on the diversification of jobs on the Peninsula to cushion in the future against the harsh economic impact we are now facing. Supporting safe, compliant economic activity through the weeks ahead will be important to help lessen this economic impact. Local businesses still in operation need as many ways as possible to communicate with local consumers to let us know what they can

safely provide and how they will provide it ie. deliveries, online services, opening times, payment options etc. I know many of you are using social media so please tag the Dingle Hub in your tweets & posts and we will share among our networks. Many of us are moving to online tools to host meetings and help our work to progress. It is encouraging to hear that technology seems to be working well for the most part although I’m sure there are some issues as we all vie for bandwidth within our homes. Zoom, GoTo Meeting and Whatsapp are the tools of choice among our users but there is a range of tools available, many with free tiers for limited use. The tools can host online webinars which could prove very useful for those of us who had planned events which cannot now be held in person. Some practical tips for hosting online sessions are as follows: Clearly outline meeting etiquette at the start so participants understand when and how they can contribute. Use Chat and Q+A functions to allow participants to submit their questions in writing. Some tools allow “like” of questions which is really useful to prioritise those to be answered.

Online poll features are a nice way to encourage participation among larger groups. Recording and evaluation tools are provided with many packages - just make sure to advise people at the start if you are recording. Finally, if we are to take some positives from all of this then the impact that our dramatic behaviour change is already having on climate change is encouraging. Can we implement some of these changes in the longer term to retain some of the positive effects? Could we all travel a bit less? Consume a bit less? Use online tools a little bit more. Perhaps we can move to remote working and cut out the daily commute? Now is perhaps not the time for this conversation but it’s worth capturing these changes and reflecting on how we can take the beneficial ones into the future with us. Camp Notes Brigid O'Connor As you all know by now we are in the midst of a worldwide pandemic. All we can really do at this time as a Community is to adhere to guidelines from the relative authorities. Please pay attention to information bulletins on tv and on the radio and ignore some postings on social media which can cause panic and anxiety. Closer to home please practice social distancing. Do please look out for neighbours and especially our elderly. Its probably advisable to phone people rather than visiting if making enquiries about their wellbeing etc. Please be aware that the people working on the frontline, Health Workers, Emergency Workers, Gardaí and essential services and everyone working in retail to keep our food supply working are putting themselves at risk daily for our benefit. Camp Community Council has suspended Thursday care of the aged gatherings for the foreseeable future. All other Community activities have been suspended or postponed at this time. If you have any concerns either about a vulnerable member of our Community or suggestions that might assist the Community at this time do not hesitate to contact a member of Camp Community Council. CAMP JUNIOR GIRLS SOCCER Camp Juniors had several girls playing with the Kerry U 13 & U 15 girls soccer squads recently. Grainne O Dwyer, Maeve Slattery, Orlaith Murphy, Eabha Lyne, Ave Meckle and Sophie O'Connor played with the U 15s and Suvi O'Connor, Miriam Sheehan and Anna Roberts played with the U 13 squad. Well done to all the girls and and to coaches Tommy O'Connor and Catherine Dineen. Camp Juniors have done a lot to encourage the growth of girls soccer in recent years. The club caters for girls from age 6 to 16.and new girls are allways welcome. Roast Beef and all the Trimmings Mark Murphy - Dingle Cookery School Níl faic chomh deas do dhinnéar an Domhnaigh ná mairteoil rósta. Nothing beats a really good Sunday roast. Even though most of us are probably cooking way more now due to being housebound it’s always good to have a real treat. One of my favourite meals is a roast beef with all the trimmings, so go all out and make sure that the beef gets a good gravy, some roast spuds, vegetables and definitely Yorkshire Puddings. There is a little bit of work in the whole dinner but it is worth it. Remember to make more than you need and you will have tasty sandwiches the following day.

125g plain flour ½ tsp sea salt 150ml whole milk vegetable oil

stage warm the tray by placing it in the oven with goose fat or duck fat. Shake the potatoes in the colander to roughen the edges. Remove the tray from the oven and add the potatoes and place back in the oven. After 20 minutes, you can add the rosemary, thyme and garlic. FOR THE YORKSHIRE PUDDINGS

FOR THE SAUCE 1 onion, diced ¾ garlic cloves bunch of thyme leaves 1 tbsp. tomato purée 200ml red wine 200ml beef stock

(do this while the beef is resting) Beat the eggs together in a mixing bowl using a balloon whisk. Sift the flour with the salt, then gradually beat this into the eggs to make a smooth batter. Whisk in the milk until combined. Cover and leave to stand at room temperature for about 1 hour. Preheat the oven to 200°C

FOR THE BEEF

Add a good dollop of oil or beef dripping or vegetable oil into each compartment of a deep muffin tray. Place the tin in the oven for 12-15 minutes to heat up the oil and tins until very hot. Carefully pour in the batter. Place the tins straight back into the oven and bake for about 15 minutes or until the puddings are well risen, golden brown and crisp. Serve immediately.

Preheat the oven to 200ºC

FOR THE SAUCE

Season the beef well with salt and pepper. Heat an oven tray over the stove, add some oil and add the beef. Allow it to brown on all sides. Once this is done add some chopped onion and garlic to the tray. Transfer the tray to the oven, allowing the beef to cook for around 15 minutes a pound (450g) for rare or 20 minutes a pound (450g) for medium. Once done take it out and allow it to rest for 45 minutes

Once the beef is cooked remove the beef and keep it warm. Pour out the excess fat (you can use these for the puddings). Add the onions and garlic to the vegetables in the tray and along with some fresh thyme.

FOR THE CARROTS 4 carrots, peeled and sliced 50g butter 100ml water bunch of thyme salt and pepper

Place the carrots in a layer in a wide pan, add the butter and enough water to come up to about ¾ on the carrots. Add the thyme and season with salt and pepper. Cook this over a medium heat for about 10-12 minutes.

Boil a large pot of salted water and add the potatoes, then cook for 15 minutes. They should be half-cooked at this stage. You can now drain them and leave in the colander for a few minutes to remove as much moisture as possible. At this

Cook this for about 5-10 minutes. Let it brown nicely. Add the tomato purée and allow it to cook for two minutes. Add in the red wine and let it reduce by half. Add the stock and let it reduce by half. Strain the sauce into another pot. Continue to cook this until it reaches the consistency and flavour you desire. Season with salt and pepper and add a knob of butter just before serving. TO SERVE Place some of the carrots in the centre of a plate.
