Film Crew sought in Kerry for TG4 Feature Film

Film crew are being sought in the Kerry region for a wide variety of roles for an upcoming Irish language TG4 film. The film will be shot on the Dingle peninsula from approximately mid August to early October. You must be available to quarantine for a period of 7 weeks with the cast and crew in accommodation in Dingle if necessary. Experience of working in film or television drama is desirable for the majority of roles. However, if you have worked in television/media or related areas please apply as some trainee roles will also be offered. The ability to work through the Irish language is highly desirable and will be prioritised, though for some roles it may not be essential. New Book Seeking GAA Stories From Keel Work is underway on an exciting new book telling the story of Keel GAA Club from the perspectives of the people who make up the Club. The aim of “Keel GAA Club, Stories from Our People” is to capture what the Club means to the many people who have been involved in any way over the years, both on and off the pitch.

-For older contributors, has training and match preparation changed much since your time as a player? -Can you explain what the Club means to you, how you feel about it and how important it is to you? -For people involved or with an interest in Scór at Senior or Scór na nÓg level, please tell us your memories and please tell us when you were involved, what act or acts you were part of, if you had success, how you found the experience and any special memories you have from Scór.

It is hoped that the book will be brought to publication later this year, including contributions from as many people as possible with connections to Keel GAA Club. The initiative is being spearheaded by three of the Club’s members, William Evans, Ailís Murphy and Brendan Griffin. William Evans says that they are looking for a broad range of contributors: “Players and members past and present, men and women, volunteers at every level, supporters, sponsors, Scór participants, referees, umpires, sandwich makers, grass cutters, ticket sellers, our global diaspora, new residents of Keel... all are welcome and encouraged to contribute. “We really hope that people will get involved and we want this to be a book for everyone.” Ailís Murphy says that contributing couldn’t be simpler: “We are providing a list of questions and asking people to answer any or all and return responses by email to keelstories@gmail.com or by private message to our Facebook page. “We are asking people to get their replies back to us by Sunday, July 19th with as much detail as people would like to give. “As an additional option, we are asking people to look through their photo collections and select any images, old or new, that they would like considered for inclusion in the book, preferably including a photo of themselves. Where possible, we are also asking people to include details of the image, such as names, date, location and the name of the photographer.”

Now is the time for constructive suggestions as to what people would like to see happen to the site .Already I hear people talking of an open amenity or some replacement multi functional building incorporating road widening which is badly needed at the adjoining stretch in Strand Street. Cromane News Jane Casey Cromane GAA SENIOR FIXTURES: Our seniors’ junior championship game will be the first senior football game played in Kerry for four months, ever since the Covid-19 lockdown in early March. Our seniors’ last competitive game was 20 weeks’ ago, on March 1, in the Mid Kerry League when they drew with Laune Rangers 1-9 apiece in Cromane. Our County Junior Football Championship preliminary round game against Ballylongford will be played on Sunday, July 19, at Strand Road, Tralee (Kerins O’Rahillys club pitch) at 2.30pm. Extra time if necessary. Best of luck to the team and management next Sunday. The winner of this game will play in Group 4 of the County Junior Football Championship, this group already contains Castlegregory, Tarbert, and Lispole. MINORS: There is a restart date for the Minor County League of Friday, July 17. Further rounds are pencilled in for Saturday, August 15, Saturday, September 5. POLITICS. Our local T.D. Brendan Griffin has been appointed as Leas Chief Whip in the shake up of the Dail following his tenure as Junior Minister for Sport and Tourism in the last Administration. Brendan certainly put in some tremendous work as a Junior Minister travelling the length and breath of the 26 counties and abroad also in promoting our county and country at every possible opportunity. Good Luck in the new position Brendan and keep up the good work. FOOTPATHS. Whatever about the new parking regulations the County Council Staff have been quietly doing great work in repairing the footpaths around town following on from resurfacing some of the streets during the covid lockdown. All these improvements certainly add to the presentation of our town for locals and visitors alike. PARKING. The scarce parking situation in town has certainly been highlighted since the covid restrictions have been lifted. The welcome influx of tourist traffic has filled every available space particularly at peak times during the day. The reduction in available spaces to cater for pedestrian 2 metre distancing guidelines should be compensated with the opening of 50 extra spaces in the Green Street Car Park very shortly. Kerry County Council are offering 30 spaces free in the Mart Car Park to employees of town centre business outlets for the summer months on a first come first served basis. BUSINESS. The Business Chamber appeal to all our outlets be it retail, accommodation or services to adhere to the reopening guidelines set out by the Health Authorities and the Government. If we can show we are properly managing the risk visitors and locals will be more at ease and really show the rest of the country why the Peninsula is one of the best destinations to either visit or live in all year round. Saffron – the Yellow, Mellow Elixir for the Mind Irene Ní Fhlannúra

Saffron has enjoyed some time under the microscope recently and researchers revealed the science behind the folklore and medicinal use of the World’s most expensive spice. These studies can finally validate some of the oldest medical texts which have documented the use of saffron as medicine going back thousands of years. Even before Hippocrates and Galens wrote about saffron around 480BC, the Arabs had it all chalked down in the Islamic Traditional Medicine (ITM) tomes many centuries before them. Not surprising though, as saffron has a long history in Persian culture, cuisine and medicine. Today, Iran (formerly known as Persia) produces 90% of the total global supply of saffron and is regarded as the best quality in terms of aroma, flavour and potency as a medicinal agent. Other countries producing saffron nowadays include Spain, Italy, Austria, Switzerland, Britain and Greece but its origins remain in Middle Eastern lands and lore. Throughout history saffron has been revered and used in food preparation, as a fabric dye, in perfumes, in religious rituals as well as a medicine. The many references in Islamic Traditional Medicine describe its use in the treatment of a wide range of ailments such as depression, anxiety, cancer, asthma, cardiovascular disease, eye disease and urogenital disorders. Women’s health issues are well referenced with saffron being described as having an oxytocin-like effect. It was used to facilitate difficult labours and hasten the delivery of the placenta after childbirth. Also used for irregular periods and PMS. Similar uses for saffron are recorded in other traditional medicine practices from China, India and Europe. Today, science has uncovered the therapeutic use of saffron in some of the above disorders. Clinical studies have evaluated optimum dosage and standardized extracts to maximise its use as a modern medicine. Saffron comes from a cultivated, perennial crocus, known as Crocus Sativus. The sowing takes place in the months of June and July. This has to be done by hand and the sower must walk in a bent position for the length of each ridge. The harvest is ready between the end of October and beginning of November. During this short window, the blooms are picked between dawn and 10am to preserve the colour and aroma of the stigmas. Once the flowers are gathered, stigmas are separated and dried. Each bloom has only 3-4 stigmas and it takes about 85,000 flowers to yield one kilo of saffron. It is no wonder that it retails in the shops for around €15 per gram (€15,000 per kilo). This labour-intensive crop makes spud picking seem like a fun day out in comparison! One of the most well-known effects of saffron is its exhilarant and anti-depressant activity which, according to ITM, leads to the sense of happiness and laughter. Once attributed to its flavour and fragrance, modern scientific evidence has identified a potent carotenoid, known as crocin (derived from crocus) which is the main active constituent. The positive effects of saffron in the improvement of depression symptoms have been confirmed in animal and human studies showing that a daily dosage of 30mg saffron (stigmas and petals) are comparable to those of standard drugs such as imipramine and fluoxetine – commonly prescribed anti-depressants. Crocin has been shown to have positive effects on serotonin levels in mild to moderate depression and has also shown benefit to those who overeat, most likely due to the link between serotonin and appetite. In another study, anxiety levels were reduced by 50% when female subjects were exposed to the aroma of saffron for 20 minutes – about 12 West Kerry Live

Much like the turmeric, investigations into the benefits of saffron is evolving and so far, have proven to offer great hope to many. On-going research is assessing its unique anti-oxidant content and its protective qualities on the linings of organs in the body. This type of study may lead to increased nutritional input for epithelial carcinomas, age-related macular disease, asthma and respiratory disease. Saffron spice is usually sold as strands (or threads) and is superior to its powdered form. It is red in colour but imparts a golden yellow hue to dishes. Thankfully, you only need a few threads of saffron in any dish – a paella for 8 people will use about a quarter gram (roughly 12 threads). It is best soaked in a little boiled water before adding it and the soak water to your dish. More is not better – too much saffron can leave a bitter taste and murky colour. Saffron can also be enjoyed in a tea infusion. Grind a few strands with a pinch of sugar in a mortar and pestle. Add the crushed saffron mix to white or green tea (they are milder than black tea). For a truly comforting beverage try adding cinnamon, cardamom, rose petals, mint, ginger or lemon to this drink, allow to infuse and enjoy it hot or cold – a real hug in a mug whenever you need one! Robbery, Outrage, Starvation and Harbour News

Blasket Sound Wreck From – Kerry Evening Post, February 1837 During the violent thunderstorm last week a large vessel, believed to be laden with timber, was seen to go down in the sound of the Blasquets and all on board perished. Since that sinking the area between the Blasquets and Ballyheigue has been awash with deal boards and oak staves. A poor man from Dunquin was drowned while attempting to recover some of the timber. Also last week another large vessel, which appeared to be in great distress, entered the mouth of Ventry harbour but the captain’s lack of knowledge of the harbour caused him to anchor in unsafe ground. No local boat could venture to her assistance.

Seamen Buried on Valentia From – Dublin Mercantile Advertiser, 30 October 1846 Following the recent wreck of the brig William of London, the bodies of four seamen were recovered in the waters off Valentia Island in County Kerry. There was no coroner available to conduct an inquest so the Knight of Kerry and James Butler, both magistrates, officiated at an inquest. A jury found that the unfortunate men had died by shipwreck in Dingle Bay. They were interred in the local churchyard.

Fatal Accident in Beenbane From Cork Examiner, 2 November 1857 A servant maid, in the prime of her life, named Hanora Kennedy died in a tragic and curious accident in a farmer’s haggard in Beenbawn near Dingle. Local farmer Patrick Deen, a tenant of Lord Ventry’s, was re-making a cock of hay in his haggard and his maid was on top of the haycock which was about eight feet high when completed. As the maid descended a ladder she fell and broke her neck.

Illegal Trawling From – The Kerryman, 24 July 1909 For years past the trawling grounds on the South and West coast have been very much injured owing to the depredations of steam trawlers. Those craft which are generally captained by unscrupulous men, take advantage of the darkness of night to come and fish within the prohibited area.

From – Cork Examiner, 27 N0vember 1846 Robbery: A pay clerk for the Dingle district was robbed while paying the labourers at Clogher, Dunurlin parish, on Saturday night. The robbery was carried out in a smoke-filled house which was lit by a single candle. One of the men, waiting with others to be paid, grabbed a bag of silver coins and a bag of coppers and made his escape. He was chased but avoided detection and remains unidentified. Outrage: On Thursday night last a stack of wheat was maliciously set on fire in the village of Reask. It belonged to a local farmer named Manning but the reason for the outrage remains a mystery. Starvation: On Monday last a man dropped dead while working on a road in Ventry. It is believed he died of hunger. Harbour news: While sailing out of Dingle harbour a vessel named Suffolk Hero encountered damage when she lost some stays. She returned to port for repairs. Two vessels, the Albion and the Palmyra, are unable to leave Dingle port because of gales.

Drowning Tragedies From – Cork Examiner, 27 February 1843 A boat from Dingle, with a cargo of potatoes, heading for Caherciveen capsized near Valentia and four of the five on board were drowned. The crew of the Knight of Kerry’s boat rescued the sole survivor, Michael Conway. Three bodies from the ill-fated vessel have been recovered. Five people were rescued but four others drowned last Friday when the Inny Ferry, in Iveragh, capsized after striking a weir while being driven by powerful currents.

Steam trawlers can do the work of several sailing boats and one can quite understand what harm is done to the local fishermen whose livelihoods depend on fishing. A captain of one such steam trawler was fined £20 and nearly £20 costs at the Petty Sessions in Tralee this week for operating on forbidden ground in Dingle Bay. Had we the power we would not let this pirate off so easily Great credit is due to Mr. John Ashe who went so close to the steamer to get the name and number of the boat. On a former occasion when the skipper of a local trawler told the captain of a steam trawler that he was within the prohibited area, an attempt was made to founder the local boat with its crew to escape detection. Those gentry should be severely dealt with as nothing will prevent them from doing mischief.

The Late Gale and Shipwrecks From – Kerry Evening Post, 18 October 1845 In our last issue we announced the ‘going ashore’ of the brig Princess Royal on Inch bar. We are happy to learn since that the master succeeded in working her into Dingle harbour where she will be repaired and refitted. Another casualty was reported to us on Thursday, on the Iveragh coast, in which a vessel went to pieces but the crew were saved, a sloop of about 80 tons, the Penquite, of Fowey, [Cornwall], with corn from Limerick to London,

Apparently not one to stay out of the limelight, the aforementioned Ms Hackett (Junior Agriculture Minister) has said culling the national herd cannot be ruled out if Ireland does not meet its carbon emissions targets. The Green Party wanted the programme for government to include a commitment to cull the national herd in five years' time if farming emissions reduction targets were not met. Now senator Pippa Hackett, who was appointed a Minister of State in the Department of Agriculture last weekend, has said culling the herd could not be ruled out "as a last resort" if the sector fails to reduce emissions.

FARMERS TO RESPOND TO BPS QUERY ASAP The Department of Agriculture, Food and the Marine is currently processing applications for the 2020 Basic Payment Schemes. As in previous years, this can entail queries being sent to farmers in order to complete their applications for payment. The Department would like to remind farmers to respond promptly to any notifications they receive regarding their application. A prompt response helps the Department to progress these issues in advance of the October 16th payment date. Those not signed up or who have not authorised an advisor will continue to receive postal notifications. This change will help to ensure BPS applications can be processed in an efficient manner as the Department continues to respond to Covid-19 related restrictions. Should a farmer receive such a notification, full details can be accessed on the agfood.ie system used for applying for BPS. Farmers who wish to contact the Department in relation to a notification can do so by ringing the Direct Payments Helpline at 076 106 4420 where a member of staff can advise on the matter. Where a query is not responded to, any follow up query will issue by post. COWAN MEETS FORESTRY INDUSTRY Every journalist that ever lived will tell you that a week is a long time in politics. That is certainly the case with our new incumbent in Agriculture House. Let us hope that he gets a good grasp of his brief, and we hope that he doesn’t make as many u-turns relating to agricultural business, as he allegedly has made in the past. Accompanied by his Ministerial colleagues, Pippa Hackett and Martin Heydon he met with the Coillte’s CEO, Imelda Hurley and Chairperson Bernie Grey for an update on current issues. The meeting was part of a round of discussions which the Ministers are holding with semi-state bodies under the aegis of their Department. As part of the meeting, the politicians made a commitment to the continued development of forestry in Ireland, as set out in the previous administration’s Programme for Government and that they will be working towards early implementation of these actions. It has also been confirmed that Ms Hackett will be the Minister with direct responsibility for forestry matters in Government, which should keep her busy and will suit her talents hopefully, as this is a growing and important element of the agri-sector. Forestry is a growing and important industry, and is long-term in terms of investment and returnsand it is also vital in controlling our carbon foot-print and balancing our carbon emissions. It's a sector which can deliver on an environmental as well as an economic level, and also has recreational benefits with the development of parks and walkways etc. If planted in a diverse manner, it can also have benefits for wildlife, (but this is an argument for another day). Coillte will be play a major part in this aspect of the industry’s development, as will all the other major (and minor forestry companies and consultants). Planting trees is only the beginning of the multi-functional benefits which forestry can offer and the future benefits must be balanced with other parts of our agri-sector. However, there is no point in allowing farmers grow small plantations that are no use to timber yards, etc. We need more and larger plantations to make it worth while and to really get to grips with carbon balancing. COWEN HOLDS TALKS “BIG” PHIL HOGAN AND NI MINISTER COVID-19 has not stopped the work, and hot on the heels of other controversies, the Agriculture Minister continues to drive along in his current brief at the Department of Agriculture. Only a wet week in the job and he has already met with European Commissioner for Trade, Phil Hogan via video-conference and spoke via telephone conference call with his Northern Ireland counterpart, Minister for Agriculture, Environment and Rural Affairs, Edwin Poots MLA. The discussions took place as part of a range of engagements by Minister Cowen with key interlocutors since taking office. The Minister was joined by his colleague, Ministers of State Martin Heydon TD. Minister Cowen took the opportunity to reiterate Ireland’s position that the achievement of increased environmental and climate ambition through the Common Agricultural Policy must be matched by an adequate CAP budget. This will perhaps open the door for a full-scale REPS Scheme, hopefully to that which was scrapped in 16 West Kerry Live

HERD CULL CANNOT BE RULED OUT

However, it is hoped that before she tries to bring regulation or legislation such as this to the Dail, she puts out some “serious” feelers, throughout the farming community. Though some farmers are tiring of the drudgery of suckler farming it is not for some new kid to tell them to get out of this business. If she thinks that she is going to organise a collective and mass ban on suckling, and reduce both a way of life and a way of farming with the stroke of a pen, both her political future and the future of our current government may be in jeopardy. The vast majority of our farming community come from either Fine Gael or Fianna fail traditions, and they will not allow the most junior partner in government to implement a policy such as this. Be warned. NEW CATTLE FEED ADDITIVE CAN ‘REDUCE METHANE EMISSIONS BY 60%’ With the government aiming to reduce greenhouse gas emissions by (an average of) 7% per annum, farmers are under more pressure than ever in Ireland to tackle the most contentious issue in agriculture – methane emissions from cattle. While it might seem that the answer to combat this lies in removing something from farming practices, a new study has shown it may actually be the opposite. Adding a non-antibiotic additive to cattle feed may result in reducing methane emissions significantly, while also improving animal performance. This involves the introduction of a Special additive to normal feed/nuts/ration/etc. Panatec Dairy, which is produced by a Mayo-based company was recently put on trial and supposedly has the potential to reduce methane emissions by 60%. The science bit is interesting. It works by inhibiting the micro-organisms that produce methane in the rumen of cattle. Methane was shown to be sensitive to a compound called LARS (long acting reactive species) that is produced by a new technology. A silage-based diet was mimicked in the trials and resulted in an “average of a 60% methane reduction on treated rumen fluid”. The company claims that there is the possibility that this additive will have benefits for everyone involved – lower emissions and increased animal performance. It was also apparently found to decrease the temperature in the rumen, which signals less biological activity, thus, producing less gas. At the same time, the pH in the rumen increased, which indicates a stronger rumen function in lactating cows. Large trials will begin later this year in a 400-cow dairy research centre at Harper Adams University in England. Might be worth looking into, eh Pippa, Martin or Barry. BEEF PRICES ‘DRIVING FARMERS OUT OF BUSINESS’ Quite simply, beef prices are appalling, and any farmers selling cattle at present are losing money. This equates to below-price selling in supermarkets, BUT, it doesn’t. These prices are forced on farmers. A TakeIt-Or-Leave-It approach. No type of business can sustain this as a business model. When supermarkets or other retail outlets do so, it is only with selected items, to attract customers. The current situation is as follows: • Prices in the UK have increased by (the equivalent of) 44c/kg since April 25. • UK authorities report that steer price is at £3.68/kg, equivalent to €4.29/kg including VAT, and continues to rise. • Cattle prices across the main EU markets are recovering, with retail sales continuing to show strong growth, • The Bord Bia prime export benchmark price has moved ahead of the Irish price over the last two weeks; • Factory agents and procurement managers are very active, buying finished cattle in the marts and online,


• Northern Ireland factories are very active south of the border, paying prices from 10c - 20c/kg above Irish prices; • The R3 steer price in Northern Ireland was £3.61/kg, equivalent to €4.20/kg; • Northern Irish authorities reported that 785 cattle were exported live from the republic to the north • DAFM shows that, on 1st May, there was a reduction of 83,000 in the number of beef cattle in the 12 to 24-month category, and a reduction of 10,000 in the 24 to 36-month category compared to 2019; • Retail consumption figures for Ireland continue to show strong growth on beef sales. For the most part, beef processors are now operating off a base of €3.60/ kg for in-spec steers and heifers. However, there is “more bite” entering the trade and deals of €3.65/kg have been achieved by some farmers with suitable numbers. While €3.60/kg is the common price on offer across the country, farmers with numbers of in-spec prime cattle, with a good factory-farmer relationship, are in poll position to achieve higher prices.

AND FINALLY . . . . . AGRICULTURE MINISTER SACKED Fianna Fáil's Barry Cowen, who has been at the centre of controversy over a drink-driving ban he received four years ago, was sacked as Minister for Agriculture. Taoiseach Micheál Martin said the garda file relating to Barry Cowen's drink-driving offence had raised issues that required more explanation. He said it was untenable for members of Government to address these concerns in the Dáil while Mr Cowen was refusing to do so. The issue, he said, had become damaging to the ongoing work of Government. Barry Cowen said he was "surprised and disappointed" by the move. He said the decision to remove him from office had undermined his entitlement to fair process. The former agriculture minister, who was in office for just 17 days, strenuously denies any allegation that he attempted to avoid a garda checkpoint in 2016. Three young entrepreneurs from West Kerry will voyage virtually to Europe next week in the hope that their new linguistic board game will crown them the Kings of Europe. ‘Rí na bhFocal’, a fledgling company founded by Liam Ó hÓgáin, Finn Daibhéis and Patrick Saunders from Pobalscoil Chorca Dhuibhne in Dingle, will represent Ireland at the JA Europe Company of the Year Competition 2020 next week (July 22-24). The competition was due to be held in Portugal but as a result of the COVID-19 pandemic it will now be held online. This is the second time that the winners of Údarás na Gaeltachta’s Clár na gComhlachtaí entrepreneurship competition will have the opportunity to participate at the European level of the competition. Rí na bhFocal is a new interactive Irish language board game for 2 - 6 players that can be adapted to be played by children and adults of all ages. The Corca Dhuibhne entrepreneurs fought off stiff opposition from more than 750 Transition students from Gaeltacht schools from Donegal, Mayo, Galway, Kerry Cork, Waterford and Meath to scoop the national Údarás na Gaeltachta Clár na gComhlachtaí competition in May. The national final, also held online due to COVID-19 restrictions, gave Rí na bhFocal valuable experience in competing in a virtual environment and they managed to come out on top based on the quality of their innovative business idea and overall performance on the day. The successful company from Pobalscoil Chorca Dhuibhne were mentored by their business studies teacher Trish Uí h-Éanacháin who helped them to develop their business idea along with support from Údarás na Gaeltachta agus Junior Achievement Ireland executives. Small Changes: Our Daily Bread

Over a third of all food produced globally is wasted. The methane emitted from rotting food waste accounts for almost 10% of all global greenhouse gases and 25% of the world’s fresh water supply is used to grow food that is never eaten. According to the world economic forum the pandemic has so far served to exacerbate the food waste problem. Mountains of food are going to waste globally due to the closure of restaurants and disruption of supply chains e.g. in the UK and US milk is being dumped while French farmers are being paid not to produce milk at the moment. Food waste is a topic that I have written about previously because as consumers our choices and actions have the potential to have a significant impact on this issue. Up to half of all food waste in developed countries is from domestic sources and Ireland is no exception. While there was a record increase in brown bin waste and a notable increase in unopened food waste in the black bin at the beginning of the pandemic, indicator reports from Bord Bia and the AIB sustainability index suggest that the lockdown has ultimately promoted a reassessment of the value consumers place on food with over 50% of Irish adults now consciously trying to reduce their food waste. It is difficult to break old habits so over the next few articles I hope to highlight some ways everyone can reduce food waste by considering the foods we waste the most. First up is bread! Despite playing a starring role in national emergencies (think of the supermarket shelves stripped of sliced pans during the beast from the east and the current obsession with banana bread and sourdough), over 20% of the bread we buy or make ends up in the bin. Aside from the financial, moral and environmental consequences of this waste, there is also the environmental impact of producing the loaf to consider. Wheat takes up to ten months to grow. Industrial farming requires use of fertilisers and pesticides which have a huge ecological footprint not to mention the loss of biodiversity, soil degradation and water used due to intensive production of a monoculture crop. Energy is required to plant and harvest the wheat, transporting it for processing (the majority of milling wheat and flour used in Ireland is imported), mill the grain, bake the bread and transport the final product. Highly processed sliced pans are also likely to contain additives such as palm oil, most of which is currently grown in a very unsustainable manner. Simple behavioural changes and some knowledge on how best to store, rescue and use up stale bread will go a long way in prevent and reducing this waste.

Buying Bread One of the main reasons why so much bread is thrown away is because people buy more than they need. While a full loaf may be better value per slice than a half a loaf of sliced pan, this will not be the case if you end up throwing it out. Paying a little more for good quality bread is also likely to reduce the amount you waste. We are spoilt for choice in West Kerry when it comes to options for freshly baked high quality breads and supporting the businesses that produce them has the added benefits of creating jobs, reducing food miles and reducing packaging waste.

Once the bread has cooled the starch slowly begins to revert to its original form eventually causing the bread to dry out and go stale (known as retrogradation and recrystalisation). This process happens faster in a cool, airy atmosphere which is why bread should never be stored in the fridge. Conversely, bread moulds thrive in a warm and damp environment so the correct storage of bread is a compromise of these conditions. Ideally bread should be purchased as an unsliced loaf and only sliced as required because the crust helps keep the inside moist. Bread is best stored out of direct sunlight in a bread bin, a linen bread bag or a paper bag as these provide enough ventilation to prevent condensation (and therefore mould growth) but not so much air circulation that the bread dries out quickly. Paper bags also absorb excess moisture preventing the crust from going rubbery. Most breads will be past their peak after 2 days at room temperature (sourdough and ryebread last a little longer) unless they are full of preservatives, so the best place to store it is in the freezer if you know that the whole loaf will not be eaten within this timeframe, as freezing stops starch retrogradation and mould growth. Pre-slicing bread before freezing means you can thaw slices as required (placing a square of parchment between slices will prevent them from sticking to each other; the parchment can be re-used indefinitely). Bread can be toasted from frozen but if you wish to use it for a sandwich it will take less than half an hour for a slice to defrost.

Bread Rescue Slightly stale loaves of bread or rolls can be revived by

sprinkling them with some cold water and baking in a hot oven (200°C) for a few mins until the bread is crusty again. These must be eaten straight away.

Using Up Crusts & Stale Bread Even people with the best

intentions will sometimes end up with stale bread. In a household with fussy eaters there may also be an issue with using up the crusts (heels of the bread). 1.2 billion bread crusts are thrown away every year in the UK alone even though they contain the most nutrients (and help your hair go curly!). There are loads of recipes and resources online on how to use up stale bread and crusts for those who don’t eat them (cinnamon sugar bread crust treats, herb garlic crisp bread or parmesan toasts for example) but if you prefer to consult a book then check out Darina Allen’s Forgotten Skills of Cooking which dedicates three pages to stale bread recipes. These include fried bread, French toast, apple charlotte, Tuscan bread salad, brown bread ice cream, croutons, bruschetta and strata (which is like a savoury bread and butter pudding using cheese - yum). If you have a blender or a box grater, making breadcrumbs (which can also be frozen until needed) is a great option for leftover bread. These can be used for coating fish, cheese, chicken and pork, bread stuffing, bread sauce, plum puddings, burgers etc. For the majority of readers, the information provided in this article is not new. The challenge is to put this knowledge into practice.

Storage The pandemic has led to a shift back towards a big weekly

shop which means many people are buying bread in larger quantities less frequently. In addition, safety concerns due to Covid-19 mean loose bread rolls etc. in supermarkets are generally no longer displayed unpackaged and so it is difficult to buy just the number you need. Furthermore, lockdown has led to an increased interest in home baking and many households around the country have more baked goods than they normally would have. For all these reasons understanding how best to store bread in order to keep it fresher for longer is key to reducing waste. The length of time bread will stay fresh depends on the type and whether preservatives have been added but the processes by which bread turns stale or goes mouldy are the same for them all. He has been heavily involved in its response to Covid-19 since January- with risk assessment, planning and implementation of correct procedures as they endeavour to reinstate their services to as near to normal as they possibly can. Damien has been involved with our club here holding the position of Chairperson and Secretary of Coiste Na nÓg. He has been involved in training teams from U8 to U16. He has also held the position of Mid Kerry Coiste Na nÓg and Central Region Chairperson and Secretary. Currently he is the PRO for Kerry Coiste Na nÓg. As our teams are returning, we need everybody to support our Covid Supervisors. Milltown Castlemaine GAA is very lucky to have so many members willing to help the club by acting as Covid Supervisors for the various teams. We wish to thank them for their volunteerism. Please be patient as they follow the guidelines from Croke Park, bearing in mind that these guidelines may change over time. We will endeavour to keep you up to date. Everybody has shown great sacrifice over the last number of months to keep themselves and everybody else safe. Our club’s future is exciting at all levels and especially as we see the fantastic work that is presently being undertaken with our impressive and expansive field development project. Obviously it takes a lot of them as they are paid by weight. So, I thought if we could add to his collection it would make Palliative care a bit more money. Camp Notes Brigid O'Connor ACKNOWLEDGEMENT At a recent meeting of Camp Community Council, the Council thanked and gratefully acknowledged the hard work and excellent commitment given by Minister Brendan Griffin TD Fine Gael to the Community of Camp during his term serving as Minister for State at the Department of Tourism and Sports. Francis Nolan in his homily spoke fondly of Jimmy and his life, a great gardener and gifted with his hands and a big GAA supporter and above all a family man. Jimmy's wife Kay predeceased him. He is survived by Marion (O’Halloran), James, John & Catherine (Finn), his grandchildren, sister Helen, sons-in-law Tadhg & Niall, nephews, relatives, neighbours and friends. Rest In Peace. And in the same townland of Derrymore West the Quirke family also suffered a sad bereavement. Patrick Quirke passed to his eternal reward on Tuesday, 30th June. Patrick was laid to rest in Camp Cemetary on Monday following Requiem Mass celebrated by Fr. Francis Nolan at St. Brendans Church, Curaheen. Again Fr. Francis in his homily recalled some fond memories of Patricks life, a farmer who loved working the land, climbing the hills caring for his sheep and cattle, Patrick was a lifelong member of Lispole Sheep and Lamb Co-op and member of The Irish Farmers Association and was a devoted family man. Sympathy is extended to his wife Phil, daughters, Siobhán and Niamh, son Timmy and his sister Mary, nieces, nephews, extended family and neighbours and wide circle of friends. Patrick was predeceased by his daughters, Patricia and Fionnuala, grandson, Jamie, sister Nellie and brother John. May they all Rest In Peace.

Lamb Chops with Harissa, Couscous with Mint Mark Murphy Dingle Cookery School

½ cucumber, seeds removed and finely diced 8 lamb chops (2 per person) rapeseed oil salt and pepper Method

By adding North African flavours this will help turn your lamb chops into a beautiful summer dish. Serve this for a Sunday lunch or even better take out the bbq. The harissa will add a little spice to the dish but the couscous and the yogurt will help to balance it. You will love this, I promise. If you don’t like lamb try this with chicken or pork and adjust the cooking times accordingly. Make sure to check out our new programme for Dingle Cookery School which is available online at www.dinglecookeryschool.com Ingredients 4 tsp. harissa paste ½ tsp. cumin 1 lemon, zested and juiced bunch of mint 250g couscous 500ml vegetable stock

Mix the harissa, cumin and lemon juice in a bowl, add the lamb chops, mix this well, season with salt and pepper. Leave this aside while you prepare the couscous. For the couscous, keep half of the mint leaves on the stalk, and chop the rest of the leaves finely. Put the mint on the stalk in a small pot add the stock and lemon zest, bring this to the boil. Put the couscous in a bowl and add the raisins, pour the stock over the couscous, cover the bowl with cling film and leave for about 15-20 minutes. At this stage remove the cling film, remove the sprig of mint, add the freshly chopped mint and lemon juice, stir this in gently with a fork. Season lightly with salt and pepper. Keep this warm while cooking the lamb. For the yogurt. Mix the cucumber with the yogurt, season with salt and pepper. Heat a pan over medium to high heat. Once hot add a little oil, then the lamb. Cook for about 5 minutes on each side. Allow them to rest for another 5 minutes. Put some of the couscous in the centre of the plate and place some pork chops on top. Spoon a little of the yogurt over the top of the lamb. Bain Taitneamh As!!

The language planning process is a national process now which has been given a legislative footing with Acht na Gaeltachta, 2012. Under the 20 Year Strategy for the Irish Language, the need for conscious language planning in the Ireland's Gaeltacht areas. As part of this, 26 Language Planning Regions were recognised to undergo such planning. Until now, around 18 plans have begun implementation, and further plans such as Gaeltacht Service Towns (Trá Li, Dingle, Cahersiveen) and Irish Language Networks (Ennis, Belfast, Clondalkin) to be approved. Award Winning News The re-opening of the Dingle Skellig Hotel was given a boost with a special delivery from the Irish Hotel Awards.
