Everybody missed Mike O'Neill, the founder of the event and it was with a mix of joy and sadness that the lovely stories and great times with Mike were recalled by all. Ar dheis Dé go raibh a anam dilís. CANCER WALK A large group of ladies walked the Dingle Way on Sunday 17th. October in aid of The Great Pink Breast Cancer walk. CAMP DEFIBRILLATOR The Camp Defibrillator Committee would like to remind Camp Community that the defibrillators boxes are always unlocked and ready for use. There will be two sessions of CPR and defib refreshers on Wednesday, 17th Nov 6pm to 6.45 and 7pm to 7.45.

ROSEMARY (Róisín), (retired Vice Principal teacher, St. Catherine’s N.S, Model farm Rd) was held in high esteem by all of the pupils who passed through the school in her time. Rosemary was predeceased by her father Liam and Mother Anne. She is sadly missed by her brother Liam, uncle Dermot, great friend Aidan, sister in-law Mary, nephew Cillian, niece Emily, relatives and many dear friends and neighbours in Cork and all the O Dwyer family who will dearly miss her regular visits to Camp that she enjoyed so much over the years. doorway in memory of their loved ones who had passed away. Many of the traditions associated with death during Samhain helped to process grief and reassure those left behind to let go of negative emotions associated with grief.

Apples had a central role on the Samhain table as they stored well and were still plentiful. Before they were ever slathered in toffee and sprinkles, apples were split in two and the formation of the seeds inside represented the five elements of life in Pagan times – Earth, Fire, Water, Air and Ether (Spirit), their position and presence bore significance, sometimes good, sometimes not so good, for the one who split the apple. Bobbing for apples and swinging the apple from a string are well-known Samhain games that are still with us today. As Samhain marked the end of the year, many rituals looked forward to the coming year and what fortune lay ahead, usually in love or in prosperity. One such ritual was to peel the apple, making one long piece from its skin. When it eventually breaks off, leave to drop on the ground. The letter it most resembles when it falls is likely to mark the initial of a future partner – no need for Tinder when Granny Smith is around!

Seasonal eating has become a buzzword for trendy chefs but it was not too long ago that the Season dictated the menu of the day. Samhain which means “Summer’s End” celebrates the last harvest of the growing season and prepares us for the colder, darker days ahead. At this time of year, our ancestors took stock of what food was harvested, killed off any livestock deemed too weak or costly to survive the Winter and gathered any remaining crops or fallen fruit in the fields. It was considered taboo to eat anything left in the growing fields after the 31st of October, the festival of Samhain, and so was left to the Nature spirit and returned to the Earth. Between the slaughtered animals, the rotting crops and the tradition of remembering our dead, Samhain, had a deathly air about it that is, to some extent, mirrored in the modernday celebration of Halloween. It is a pity that many of our cultural and spiritual connections with the Season and the land have been hijacked by consumerism and retail vulgarity. The food preparations and rituals enjoyed by our ancestors at Samhain prepared them both physically and emotionally for the long, dark Winter that lay ahead. Despite everything, we are still faced with similar health problems associated with the season that challenged our ancestors – colds, flus, tummy bugs, sadness and loneliness, but their traditions and timely preparations of seasonal ingredients meant that communities back then shared good food and company which helped ease the uncertainty and hazards of the gloomier days and nights during Winter. Samhain is the halfway mark between the Autumn equinox and the Winter Solstice. Although it was the end of the growing season, there were still many foods left to be enjoyed throughout the Winter. Traditional foods include nuts (hazels and chestnuts), apples, berries, potatoes, dark bread (rye), barley, cabbage, root vegetables, sea vegetables and a good selection of dried herbs - rosemary, mugworth, mullein, sage, bay and many others that were used in food and as medicines for the Winter season. The livestock that was slaughtered around Samhain, was respectfully prepared, dried or cured without any waste, to last throughout the season. Depending on where you lived and if you had land, game and fish were also on the menu and came in handy when meat supplies became scarce. The tradition and lore surrounding these foods are deeply rooted in the rituals and remedies of the season, many of which helped to keep us connected with the land and each other for the good of our health and well-being. Rosemary has long been associated with remembrance throughout the World. Ancient Greek and Roman scholars wore garlands of rosemary while studying as they knew it would help them remember and recall their studies. More recently, studies concluded that students who worked in a room with the aroma of rosemary oil achieved 30% greater results in memory tests. It is also the symbol of remembrance of our loved ones. At Samhain, people hung a bunch of rosemary over the 8 Corca Dhuibhne Beo

At Samhain, it is believed that the veil between the physical and spiritual worlds is at its thinnest. It is the best time to summon our ancestral spirits for advice and good news of the year ahead while warding off the evil ones with scary masks and Jack o’Lanterns. Turnips and mangles featured long before the pumpkin but again, some of today’s spooky faces hark back to when these tough vegetables were carved, lit and placed on a windowsill to ward off any dodgy or unwelcome spirits at Samhain. When Celtic pagans migrated to the US, they brought this tradition with them and were thrilled to discover the pumpkin, which were in season at Samhain yet much easier to carve! Báirín Breac (Barm Brack), another great fortune telling food item for the Samhain table. The fruit speckled loaf was baked with symbols representing insights for the year ahead: The Pea: No marriage for you this year The Bean: You will be prosperous and fortunate and full of beans The Stick: You will have an unhappy marriage, possibly involving a stick The Rag: You will be poverty-stricken and destitute The Coin: You will be wealthy and rich – beware of the one who got the Rag The Ring: You will be wed this year and live happily ever after unless you get the stick next year! Farming News Louis Murchan 8,600 MORE BEEF FARMERS TO HAND BACK BEAM Another 8,600 beef farmers are on course to join the 3,600 who will have to hand back payments from the Beef Emergency Aid Measure (BEAM) scheme. The scheme worth €77m required farmers to reduce their stocking rate and N-Production by 5% over two years. Easier said than done. BEAM was set up to help beef farmers get through the difficulties of 2019, with €50m of the €77m funding coming from the EU. Participating farmers were paid up-front in 2019, but the European Commission insisted they had to reduce their stocking rate, expressed as bovine organic nitrogen, as one of the scheme's terms and conditions. Almost 19,000 farmers have met the original scheme requirements successfully, by reducing production of bovine livestock manure nitrogen on their holdings by 5% in the year to June 30, 2021, compared with the year to June 30, 2019. But 8,600 failed to meet the nitrogen obligations they signed up to under the scheme. They included 2,396 who increased their nitrogen (stocking rate) during the reduction period. The 3,600 will have some or all of the BEAM money they received in 2019 recouped. Their total liability is €5.2m. Among the 3,600, almost 10% of cases involve less than €200 being clawed back, and almost a quarter involve less than €400. Of the 16,000, almost 5,300 participants successfully exited the scheme, which is little over 33%. A poor batting average in any game. It almost appears that the scheme was designed to fail, and the dogs on the street know that the largest proportion of entrants would not meet their requirements. And they were right! And now, this figure of €8,600 arises which is over 50%. Do we expect that all our schemes should have a 33 – 50% success rate. This harks back to the REAP Scheme whereby 50 of applicants were accepted, but we are still waiting to find out how many of those accepted, went ahead and joined the scheme, and how many of those were approved for full payment. NEW FUNDING FOR FARM SCHEMES UNDER CAP Following the recent announcements regarding new CAP funding, speculation has been rife, regarding what’s what. €2.3 billion in national funding and €1.56 billion of EU funding will be combined to funding farming from 2023 onwards. The total funding for the plan is €9.8 billion. This includes €723 million of carbon tax funding, and reflects the incremental nature of carbon tax revenues over the period to 2030. There is an increase in spending on the “flagship agri-environmental measure” which will replace the Green Low Carbon Agri-Environment Scheme (GLAS) and succeeds the Agri-Environment Options Scheme (AEOS) and Rural Environmental Protection Scheme (REPS). A total allocation of €1.5 billion is envisaged here, which represents a significant increase on the funding in the previous programme. The Areas of Natural Constraint (ANCs) will remain in place with a budget of €250 million. A further €260 million will be allocated for a new suckler carbon efficiency programme, which will replace and build on the Beef Data and Genomics Programme (BDGP), while another €25 million is allocated to a new dairybeef welfare programme and €100 million for a new sheep improvement scheme, while an allocation of €256 million is to go towards land to be utilised for organic farming. Capping of payments which will result in an effective cap of €66,000 and with no deduction of salaries. It is also proposing to continue BPS Entitlement Payment convergence on an incremental basis so that all entitlements reach a minimum level of 85% of the national entitlement value by 2026. The new Complementary Redistributive Income Support for Sustainability (CRISS), or ‘front-loading’, is to be set at 10% of the direct payment ceiling and paid on the first 30ha of every farm. This will give a total of approximately €118 million resulting in a per hectare payment of €43. 3% of the value of the Pillar I budget will be allocated to a young farmers’ 12 Corca Dhuibhne Beo

scheme and paid on a ‘per hectare’ basis. “I’m also going to implement the National Reserve each year of CAP Strategic Plan (CSP) to fund the minimum and mandatory categories of young farmer,” the minister continued. On a more cryptic level, The minister is proposing to allocate 25% of funding per annum for eco-schemes equating to about €297 million each year; and is also proposing to allow farmers to choose from a range of agricultural practices that would be beneficial in terms of climate, biodiversity, water quality and the wider environment. These schemes will be available to ‘active’ farmers and payments will be made on all eligible hectares. The EU budget agreement provided for a total CAP funding for Ireland of €7.5 billion over the five-year period from 2023 to 2027. The funding is split between Pillar I (direct payments and sectoral Interventions -€5.9 billion) and Pillar II (rural development – €1.56 billion). 30,000 SUCKLER FARMERS AT RISK FROM NEW CAP PLAN As we all await news on the new CAP proposals, and are being drip-fed, the was mushrooms are fed, we read between the lines and see that all is not rosy in the Corridors of Power in Brussles, or with the farming community and their representative bodies. The new CAP funding and Strategic Plan have been described as less than satisfactory (to use restraint). The design of the Strategic Plan and the funding levels allocated to Pillar II targeted schemes compound the impact of convergence, CRISS [Complimentary Redistributive Income Support for Sustainability] and eco-schemes on the suckler and beef farmers most dependent on direct payments for their family income. Suckler and beef farmers depend on direct payments for 160% of farm family income, while these plans are cutting this income by up to 50% through a combination of flattening in convergence, CRISS and eco-schemes. This will be exacerbated by additional compliance costs and reduced efficiencies, all taking from the pockets of the most economically vulnerable farmers. The government have the opportunity to directly support these farmers with meaningful, targeted suckler cow and cattle rearing and finishing schemes but has failed to do so. For example, one of the farming bodies proposed a €300 suckler cow payment and €100/animal payment for cattle rearing and finishing farmers to get CAP payments directly to the farmer, but these were ignored. They also state that ignoring this proposed suckler scheme will exclude 500,000 cows and 30,000 suckler farmers from allocated funding. It is possibly time for Minister McConologue to reconsider certain aspects of the new plan(s) BPS ENTITLEMENT VALUE UNSURE FOR THE FUTURE According to sources within DAFM and others close to the department, the average entitlement value set to drop further. While some farmers will benefit from convergence and see their entitlements increase in value, many farmers are set to take a big hit on their entitlement value. As part of the Pillar I interventions in the CAP reform, it is proposed that the value of payment entitlements will continue to be subject to convergence with the aim of reaching a minimum of 85% of the average by 2026. In 2019, the average entitlement value in Ireland was approximately €184 and any farmer with an entitlement value above this suffered a reduction in their payments. In line with the current proposed convergence, a new average payment entitlement value of €165 is envisaged by 2026 – a drop in the national average entitlement value of €19 on 2019 levels. This would mean that even in West Kerry, where the average BPS Entitlement value is low, these farmers would suffer a loss of entitlement value. Therefore anyone receiving €185 per ha or more are facing a minimum loss of €20 per hectare. On a more positive note for low-value entitlement holders (who are not young farmers) , the minimum payment entitlement value will reach almost €145 by 2026 under this scheme. Young farmers who are applying for entitlements from the National Reserve on eligible land for which they held no entitlements and/or are seeking a top-up to the value of existing entitlements held by them, where those entitlements are below the national average, will now see their payments allocated at a lower level than was the case in 2019. This will impact young farmers applying for entitlements on ‘naked ground’ or farming land with entitlement values


lower than the envisaged national average. While this may not suit some young farmers, there are a suite of measures available in Pillar II for young farmers which may be more beneficial to them and the Complimentary Income Support for Young Farmers (CIS-YF) has been allocated €35 million per year under Pillar I. This will be rolled out to qualifying young farmers on a per hectare basis under the new CAP as opposed to being linked to payment entitlements. €9M INVESTMENT IN HORTICULTURE SECTOR It is not all about commercial farming, other aspects of the food production also benefit from these recent announcements, including the Commercial Horticulture Sector. Like all schemes these days the word competitive is associated with the press release, and one wonders is it now becoming a competition to see who “wins” the funding. Let us hope not, and that the funding is for all within the sector. The scheme, which covers all horticultural areas including field vegetables, mushrooms, protected food crops, amenity crops, soft fruit, and apples, to beekeeping, aims to facilitate environmentally friendly practices, promote the diversification of on-farm activities, improve the quality of products and improve working conditions. The closing date for receipt of applications for the 2021 scheme is the 17th of December 2021. The horticulture sector generated output with a farm gate value of almost €469 million in 2020, with an estimated 6,600 employed full time in primary production activity and a further 11,000 employed in value added and downstream businesses. The industry continues to be very dynamic, where growers and producers are constantly improving sustainability through the adoption of lean technologies and energy efficient systems. The scheme is 100% funded by the Irish Government and comprises of €9 million. One would have thought that the sector was larger than that and deserved a larger slice of the pie, but one must take what one can get. Call it a stepping stone to achieve what one wants!

Celeriac, Ham and Apple Risotto Mark Murphy: Dingle Cookery School Meanwhile put a pot on over low to medium heat, add a little oil and add the shallots, garlic and some sage. Let this cook slowly for about 5 minutes. Add in the risotto rice and stir for about 2-3 minutes. Add in enough stock to cover the risotto. Stir it every now and then. When it dries add a little more stock and stir. Repeat this until the rice is just cooked and has a little bite to it.

Despite what people think, risotto is easy and so versatile. Learn to make a good risotto and you will find that you can use any seasonal vegetables that may have as the base. I always make a little puree from the main vegetable in the risotto. This helps to lighten the risotto and will save you from adding loads of cream at the end. The subtle creamy and nutty flavour from the celeriac will pairs so well with the cooked ham and then is balanced with the apple at the end.

Add in the puree, the cooked diced celeriac and the ham. Stir this well and cook for a minute or so. Taste and season (remember the ham will have some salt). Add a little stock to loosen the risotto before serving.

Once they have taken on some colour, reduce the heat and add a little butter, stock and some seasoning. Cover them and cook for about 10 minutes. Remove about 2/3 of them at this stage and keep cooking the rest until they are soft (you can add them to a small pot to cook if the pan is too big). Mid Kerry Minor: A massive congratulations to the Mid Kerry Minors who beat St Kierans in the Minor County Championship Semi Final on Saturday in Austin Stack Park by a score of 2-08 to 0-11. A big congratulations to the whole panel and especially to our club players Conor Spillane, Shane O Connor, Jack Teahan, Brendan Casey, Dara Hogan, Liam Roche, Ben Downes and Oisin Spring and to their coaches Cathal Moriarty and Mike Burke who are part of the management team. The Mid Kerry Lads will now go on to face defending champions East Kerry in the final after they overcame North Kerry in a tight contest that was decided on penalties. He became captain in 1992 and president in 2000.He played on many courses

Tom had many other pastimes.He loved to travel with his beloved Rosanna,he enjoyed a game of 31 during the winter,was fairly handy on the bosca ceoil and he liked to sip a quiet pint with friends in Krugers or in Pio’s establishment back the road or just relax at home. Being a Fear Fionntrá and an Ó Sé Tom’s fanatic interest in Gaelic football continued to the day he died and he took great pride in Páidí’s achievements on the playing fields as well as his nephews winning All-Irelands. Tom bore his illness in recent years with fantastic patience and dignity.He had a most positive attitude to the many setbacks he endured and always looked on the bright side. Tom’s funeral Mass in Séipéal Fionntrá was celebrated by an t-Athair Eoghan Ó Cadhla assisted by Fr Ahern and was buried in Reilig Chaitlíona beside his brothers Michael and Páidí on a beautiful August day attended by a large crowd from near and far. Tourism Talk and Thoughts from the Dingle Peninsula Caroline Boland A special day was had by all who could attend ‘A Community Celebrating the Life of Fungie’ last Sunday. The day began with the unveiling of a stunning mural of Fungie by Ciara McKenna on Dingle Lighthouse and visitors, both local and further afield, were all treated to complimentary boat trips out to the mouth of the harbour to view and enjoy the exceptional mural overlooking where Fungie once lived. All donations were made to Dingle Coast and Cliff Rescue and Mallow Search and Rescue in appreciation of their incredible work to those in need. Reverend Phyllis and Father Michael gave a Ceremony of Blessing of Boats with a poignant blessing to all those lost to us in the last year, to those in our community who earn a living from the sea and to all, safe passage at sea. The pier hosted live music sessions and special thanks to all the children across the peninsula for their wonderful essays and / or drawings of Fungie which were all displayed on the day. Murphy’s Ice Cream added to the fun and kept all happy with delicious tasters of their awardwinning ice cream. The legacy of Fungie’s spirit will live on as a Scholarship opportunity, to study Marine Biology / Conservation, is being created and will be made available to the pupils of our local secondary schools across the Dingle Peninsula. Tourism News and Community Updates: Covid-19 Public Health Measures for Hospitality from 22nd October 2021: “In line with public health advice, the remaining aspects of the hospitality, entertainment and nighttime economy sector can reopen only with the full range of protective measures in place and the wide and robust implementation of the EU Digital COVID Certificate (COVID-19 pass). The further easing of restrictions planned for 22 October can proceed with the extension of some non-pharmaceutical interventions including use of COVID-19 pass (as set out below) in light of the high level of disease in the community at this point in time and the uncertain trajectory of the disease. Protective measures include: • requirement for EU Digital COVID Certificate (COVID-19 pass) (vaccine or recovery certificate) for indoor hospitality and events; • social distancing; • face masks (can be removed for consumption of food or drinks as appropriate); • table service only in hospitality settings (max of 10 adults per table, and max 15 including children); • collection of contact tracing data; • for indoor live music, drama, live entertainment and sporting events audience/spectators should be fully seated (standing permitted at your seat); • specific sectoral guidance will be developed for nightclubs setting out appropriate protective measures. What’s Happening in the Hub? Deirdre de Bhailís Hope you are all keeping well and cosy. COP-26 - UN CLIMATE CHANGE CONFERENCE We’re delighted to be travelling to COP-26 as part of a group of Dingle Peninsula 2030 Delegates. From West Kerry to the UN Climate Change Conference in Glasgow, a team of delegates representing the Dingle Peninsula 2030 sustainability initiative are putting their money where their mouth is when it comes to sustainable travel, and making the trip in electric vehicles. On 1st November 2021 the representatives of Dingle Peninsula 2030 will depart Dingle for Glasgow to participate in COP-26, the UN Climate Change Conference. Travelling by electric vehicle they will visit communities in Ireland, Northern Ireland and Scotland who are working on similar sustainability and transition initiatives, to share learnings. The journey is being sponsored by Kerry Co Co as part of the Covenant of Mayors and by ESB Networks. The Dingle Peninsula 2030 team will participate in a side event on “Transforming climate solutions for business, cities and civil society in Europe & Latin America”at COP-26 in Glasgow on 2nd November 2021. The event will showcase stories of positive actions from around the world, bringing together voices of different stakeholders to illustrate how impact is being made at a global scale by an engaged network with common principles and goals to achieve a sustainable world. This year, COP-26 is orientated around the central goal of securing global net-zero by mid-century and keeping 1.5 degrees within reach. We’re delighted to be kicking off our Creative Climate Action Project which is funded by The Department of Tourism, Culture, Arts, Gaeltacht, Sport and Media in collaboration with the Department of the Environment, Climate and Communications, which was announced in July. Artists working in any discipline are invited to apply to become an Embedded Artist with Corca Dhuibhne Inbhuanaithe – A Creative Imagining. Funded by the Creative Climate Action fund, this project invites an artist or artists to creatively engage with the farming community and the Corca Dhuibhne Creativity & Innovation Hub to support participating farmers to identify climate action solutions that will work for them and wider society. The Embedded Artist will bring their unique perspective to the project, helping to generate new ways of thinking, fresh perspectives and alternative approaches to the challenges of addressing climate change. Applications are welcome from individual artists as well as groups or collectives. The selected artist(s) will be supported throughout by the Corca Dhuibhne Inbhuanaithe steering group and the Project Manager. Corca Dhuibhne Inbhuanaithe – A Creative Imagining is a recipient of the inaugural Creative Climate Action fund, an initiative from the Creative Ireland Programme in collaboration with the Department of the Environment, Climate and Communications that supports creative, cultural and artistic projects that build awareness around climate change and empower citizens to make meaningful behavioural transformations. The project is managed by Corca Dhuibhne Creativity & Innovation Hub, in collaboration with the Green Arts Initiative in Ireland (GAII) and MaREI (The Science Foundation Ireland Research Centre for Energy, Climate and Marine). There is never any fear of the Lispole crowd to support, and the West Kerry crowd as well, and from further afield too, thank ye very much for your incredible turnout. I suppose, I started working on this book five years ago, I was at home one night, reading Mcllvanney On Boxing, stories that Hugh Mcllvanney had written on boxing, obviously. I thought it might be a good idea to get what I thought were my best stories together, and I’ve done that now. It’s a reflection as well on five years with the Kerryman, five very enjoyable years. It all started with my first interview on my first day with Dara Ó Cinnéide who is here tonight to help me launch the book. The people I need to thank, firstly, and there are plenty of them. Orla Kelly Publishing, it simply wouldn’t be here without her. They say you should never judge a book by its cover – that’s true – but I wish an exception for my book – the cover is so good, and the credit for that is due to Emma Prendeville, a local girl as well, and Emma did an incredible job. Next, the contents of the book, I have to thank my Dad, firstly, he loves attention [gáirí geala] and a friend of mine from Mayo, Cathal Larkin, who couldn’t be here tonight, they gave it a good proofreading beforehand – Dad loves to pick up on my mistakes every week in the Kerryman, so I finally found use for him on that front, and ye did a great job and I thank ye very much. It was very important for me to have the launch here in Lispole and to have it here in O’Sullivan’s Bar in Garraí, and I’m very thankful for the wonderful setup here tonight. I’m a bit overwhelmed to be honest, thank ye all very much – Caroline Danagher is working away in the background on food, ye have that to look forward to, more so than my book! [gáirí]. I’d also like to thank Radio Kerry and Raidió na Gaeltachta, and all my friends who came here to support me tonight. Finally, the importance of family, thinking of the people who are not here, I have three grandparents who didn’t make it to this day. I have a story in the book about an uncle who died fifty years ago, and my Uncle Paddy who died six monts ago tomorrow, and one of the last times I met him was here in this bar, it’s poignant from that point of view. My Grandfather Tommy isn’t here tonight, but is here in spirit with us and is still going strong at ninety-two, and I’d like to give him a special mention, and all my extended and immediate family without whom this wouldn’t have happened. I hope ye enjoy the book. It’s been a tough eighteen/nineteen months for everybody, and I hope this will be some little bit of joy at the end of all that. Small Changes: Data Centres

the governments targets for electric car usage or residential heating etc. which will all place even more pressure on national energy supplies. It’s important to note that data centres are also placing a huge stress on the country’s water supply, especially in Dublin. A single centre can use 500,000 Litres per day and up to 5 million litres of water a day in a heatwave (the average person uses 129L of water a day). There are a number of reasons that Ireland shares more than a fair share of the burden of global digital activities. To begin with the Irish climate lends itself well to data centres as a cooler climate means less energy is required to keep the servers cool. We have a skilled workforce and low tax rates. A stable political landscape is important from a data protection (GDPR) and a legislative point of view. In addition, the Department of Business, Enterprise and Innovation has been pursuing a policy of promoting Ireland as a digital economy hotspot to attract tech giants like Amazon, Google and Facebook to boost job creation. Data centres are viewed as a key aspect of this plan as connections need to be in close proximity to the data and key markets.

Over the past number of months there has been quite a number of alarming headlines in relation to the security of the country’s energy supply. While it now seems that the lights will stay on over the course of winter this year, a shortfall of electricity supply is likely over the next five winters unless action is taken. Furthermore, Electric Ireland has recently announced its second price increase for residential customers this year and despite trying to reach a target of 70% electricity being generated by renewables by 2030, two gas fuelled power stations have just been recommissioned (Huntstown in Dublin and Whitegate in Cork) in order to alleviate pressure on the grid. There are a number of reasons for the current energy supply crisis, both global and indigenous, but a boom in the number of data centres built in the country in recent years is being highlighted as a primary culprit for the increased energy demand in this country. A data centre is where data is stored, managed and processed. We are used to being told that our data is being stored in ‘the cloud’ but this is a euphemism for extensive bricks and mortar buildings that need large quantities of resources such as water and energy to run the servers and prevent them from overheating. Everything we do using technology consumes data - every tweet, photo, audio and online purchase. The billions of WhatsApp messages we send and the YouTube and Netflix content we stream need to be processed. The Internet of Things (IoT), whereby our smart devices connect automatically and ‘talk’ to each other (e.g. updating software, autonomous farming equipment, and wearable health monitors) require vast amounts of storage space in data centres to operate effectively. There are around 8 million data centres worldwide at present, accounting for between 1 and 2 per cent of global electricity demand. If we are to continue with the technological revolution then they are all very much needed. Facilitating the increased use of smart devices also has the potential to aid in the decarbonisation of society i.e. remote working leads to less commuting. The environmental impact of the data centres can also be reduced with planning foresight by co-locating them near domestic homes or industries so that the waste heat generated from cooling servers can be recycled through a district heat network. The picture in Ireland however, is quite different, with data centres using a disproportionate amount Irelands overall total energy use. Dublin is the data centre hub of Europe and home to 25% of the entire data centre market (2018 figures). In the past 4 years alone the annual increase in electricity usage by data centres is the equivalent of adding 140,000 homes to the grid every year. There are currently 70 centres operating in Ireland (and 8 more under construction) accounting for 11% of the country’s total grid capacity at present. Acording to Climate Love Ireland and Dr. Patrick Bresnihan of NUI Maynooth, the energy used by data centres through existing connections will rise to more than 30% by the end of the decade as current centres reach their full processing capacity. As households are experiencing increasing energy bills and carbon taxes, the continuing granting of planning permission to data centres is perceived as an unfair distribution of costs and benefits. In addition, achieving the ambitious target of 70% renewable energy by 2030 seems highly unlikely if data centres continue to be added to the grid. This doesn’t take into account

So what can we do as individuals to address the problems we face with data centres? To begin with we can clean up our personal data use. Delete unneeded emails, photos, texts and audio. Unsubscribe from mailing lists and promotional websites. Use streaming services over Wi-Fi rather than using mobile data. These types of actions are the digital equivalent of using a reusable straws or a bag for life- the impact of individual action is negligible but it adds up to have a considerable impact if everyone does their bit. There is an obvious need for data centres so demanding an outright ban on their development would not be very beneficial in the long term. However, we should be very cautious of their growth especially in the light of the pressure being placed on all other sectors to reduce their energy usage and rising costs for everybody. As individuals and community groups we can lobby politicians constructively. We could follow the example set by Singapore which finds itself in a similar situation to this country. It has introduced a moratorium (as opposed to a ban) on the building of data centres which will remain in place until renewable energy capacity has increased sufficiently. Additionally, data centres are currently approved on a county council basis. We need to lobby for a national policy to respond to the planning of these enormous constructions so that they can be colocated to make intelligent use of their heat (e.g. the new Amazon web services data centre in Tallaght), be placed near water supplies under less pressure and close to renewable energy sources.

There, light beers (particularly wheat beers) and cool-weather white wines such as Riesling, Gewürztraminer, and Pinot Gris might accompany a Choucroute, Golubtsi, or Töltött Káposzta. Lighter red wines like Cabernet Franc (think Chinon), Beaujolais, and Hungarian Zweigelt also put cabbage in its place. Considering the season, and that pork costars with cabbage, apple-based drinks (such as sparkling apple juice, or freshly pressed cloudy apple) go down a treat!

Never let it be said of us that we’ve notions… at least not all the time. We might go on about champagne with oysters, hand-pressed ciders with your crab toes, and craft brews with your summertime burger. Sure, we love those classic pairings, but we’re now well into the season of Chorca Dhuibhne comfort food. Not much signifies that to us than a traditional plate of bacon and cabbage. Like all “simple” foods, there is no where to hide inferior ingredients in this iconic dish. Proper bacon (dried-cured collar bacon is best to our liking), a firm head of local green cabbage, carrots from the sandy soil below the hill, and freshly dug floury spuds elevate this dish from humble fare to a meal we serve to visitors from around the globe. Well-sourced bacon and cabbage is Ireland’s answer to the French Cassoulet, Hungary’s Goulash, or Adobo from The Philippines. We, therefore, think it’s time to upping the beverage pairing with this iconic repast. While a pint of milk (or, perhaps in days past, a glass of buttermilk) is right at home with the bold flavours and salted backbone of the dish, there are many other beverages which both pair and foil. Setting wines up to take on both cabbage and salt can be daunting to consider at first blush. This is where we consider how other cultures navigate the task.

The natural sweetness of carrots balances the bitterness of cabbage. What can sometimes be difficult to work with in a dish like this is the level of saltiness. We like to think of drinks that pair well with salty snacks when considering salt-cured meats. Again, light beers, fruity wines work well as do ginger ale and ginger beer, black tea (smoky Lapsang is an interesting accompaniment) and sweet or off-dry sparkling wines. A touch of sweetness – be it in wine, beer, soda, or juice – will seldom go wrong with this dinner. Whatever you’re pairing with your bacon cabbage, don’t let the alcohol content go over 12-13 percent. Beyond that, the balance goes off and you begin fighting flavours rather than cuddling up next to them. The one exception might be a small glass of dry Sherry. Fino or Manzanilla have a slight salinity as well as pleasant nuttiness which we’ve always loved with potatoes. So, the next time a Maharees cabbage calls your name or a joint of green bacon in the window of Jerry Kennedy’s catches your eye, we hope that you’ll remember that this humble West Kerry comfort has a rightful place among the provincial staples from around the world. Japanese Knotweed update—With the grant received from the Local Authority Waters Programme, we developed a professional mapping of the Cloghane / Brandon area, to note areas where there's Japanese Knotweed. In the future, when resources are available, we hope to use this mapping to apply for Leader funding for the treatment and, hopefully, eradication of this invasive species. Please get in contact: if you'd like to help us further this work. In the meantime, please remember—Do not cut, mow, or disturb Japanese Knotweed as this makes the plant spread even more. Film Review: Dune Tom Ó Neachtain Dune is Hollywood’s latest attempt at adapting the seminal 1965 sci-fi novel of the same name. The film centres on the desert world Arrakis, home of the valuable mineral known as Spice, and the multiple factions competing for control of the planet. Director Denis Villeneuve has proven his talent for mature science fiction epics over the last decade, making him the ideal option for a big-budget Dune adaptation. The film’s most noteworthy attribute, apart from the sizeable cast, is its visual scope. The expansive landscapes, intricately crafted sets and high

spectacle set-pieces are a joy to watch, bring the book’s world to life excellently. The stellar make-up and costumes add to the worldbuilding, and are sure to win the Oscar this year. Many recent films and series have crumbled under the weight their enormous scale, but Dune never lets its visuals pull focus away from its rich characters and world. The illustrious cast are all on top form, with Rebecca Ferguson and Stellan Skarsgard in particular making lengthy monologues feel effortless and palatable. A film of this scale always needed strong performances, and the entire cast here were clearly up to the challenge. The score is also one of Hans Zimmer’s best ever, and cleverly revisits elements from some of his previous tracks, as well as some new ideas. The score, paired with Villenueve’s visuals, creates a distinct and beautiful atmosphere that rewards cinema viewing. The book’s slow pace doesn’t always translate well to the screen, with maybe too much

of the film spent on down-time between the important plot-beats. The film-makers made the clever decision to adapt only half of the book, but that leads to the film’s greatest flaw, in that the story feels incomplete by the end. The important characters and plotlines are set-up well here, but very few are resolved. If the inevitable sequel is up to the same standard, this could be a perfect duology, but as of now it feels like only half the story has been told. Although it doesn’t hold together as a complete story, Denis Villeneuve’s Dune is a perfectly shot and designed, well-acted epic, worthy of its weighty source material.
