Vanilla Panna Cotta with Raspberry Sauce A Pretty Dessert For Valentine’s Day

Preparation time: 1-2 hours

Cooking time: 10-20 minutes

Ingredients....For the panna cotta 3 gelatine leaves or unflavored vegan jel by Natural Desserts 1 1/8 cup/250ml/9fl oz cows milk or plant based milk 2 1/4 cups/250ml/9fl oz double cream or plant based cream 1 vanilla pod, split lengthways, seeds scraped out 1/8 cup/25g/1oz sugar

For the sauce 3/4 cups/175g/6oz sugar 3/4 cups/175ml/6fl oz water Splash raspberry, cherry or blackcurrant liqueur 2 3/4 cups/350g/12oz raspberries

And to serve Sprigs of fresh mint and blueberries (optional)

Method To make the panna cotta, soak the gelatine leaves in a little cold water until soft. Place the milk, cream, vanilla pod, scraped seeds and sugar into a heavy-bottomed pan and bring to a simmer. Remove the vanilla pod and discard. Squeeze the water out of the gelatine leaves, then add to the pan. Remove from the heat and stir until the gelatine has dissolved. Divide the mixture between four pretty glass serving bowls and set aside to cool. Place into the fridge for at least an hour, until set. To make the sauce place the sugar, water and the splash of liqueur into a pan and bring to the boil. Reduce the heat and simmer, stirring until all the sugar has dissolved. Remove the pan from the heat and add the raspberries. Use a hand blender to blitz the sauce until smooth. Pass it through a strainer to remove the seeds. To serve, pour the sauce over the panna cotta and garnish with the blueberries and a sprig of mint. Alternative serving method - pour the panna cotta mix into oiled moulds rather than serving dishes, and set in the fridge as before. Blitz half the raspberries into the sauce and strain through the strainer, then stir in the remaining raspberries. When the panna cotta are set, dip the moulds in hot water for a few seconds and turn the panna cotta out on to a plate, spoon over the sauce and decorate with blueberries and mint. Touted as ‘a light, sweet romantic comedy’ by the Chicago Tribune and “hilarious and quite moving” by the Chicago Sun Times, Beau Jest will be presented live on stage January 25 – February 9, 2019 at the Abbotsford Community Arts Addition. All Sarah’s parents want is for her to marry a nice Jewish boy. But Sarah has been dating anyone but! To get her parents off her back, Sarah hires an actor to play her imaginary Jewish doctor boyfriend at a family dinner. Hilarity ensues as Sarah attempts to keep the charade going as long as she possibly can! A play about family, growing up and the extent we’ll go to please our parents, this delightful comedy will chase away those midwinter blues. “This play is a real charmer,’ explains Ken Hildebrandt, Gallery 7 Theatre’s Executive/Artistic Director. ‘Though set in the early ‘80’s, it explores family dynamics in such a real and hilarious way that transcends the decades since the play was written. Sarah’s brother, Joel, a psychologist, is played by Brady Moore while her actual boyfriend, Chris, is played by James Lam. Her mother and father, Abe & Miriam Goldman, are being played by Sue Backs and Andrew Abrahams respectively. Returning to the director’s chair following a very successful production of The Miracle Worker last season, is Jessica Garden. She is supported by a talented design team hailing from across the Lower Mainland: set design is by Calvin Baker, costume design is by Vicki Bolan, lighting design is by Michaela Freeman, sound design is by Ryan Scramstad, props design is by Maria Denholme and hair & make-up design is by Raelyn Schatz. Fraser Valley Stage, celebrating its 50th year of excellence in local theatre, brings the third installment of the popular Starlight Radio Theatre series to the Abbotsford Arts Centre for six performances in February. Garden View This month – the joy of a greenhouse

I

am an impatient gardener. By February I am always eager to get started and my greenhouse means that I can do just that. A greenhouse means that I don’t fear the weather, I can potter in my garden all year round and I can grow a range of plants that would not survive without protection. Most gardens have room for at least a tiny greenhouse and its well worth trying to incorporate one into your space. Before choosing a greenhouse, check whether your local planning authority places any restrictions in terms of size or position. Usually there are no problems. Ideally a greenhouse should be placed in a bright spot because poor light and heavy shade will mean sickly spindly plants. Buy as big a greenhouse as you can accommodate because I guarantee that no PDWWHU KRZ ELJ LW VHHPV DW ÀUVW \RX ZLOO ÀOO LW You can make a greenhouse from poles and polythene but it won’t last more than a couple of years and won’t be pretty to look at. Fully glazed aluminium greenhouses are good value, and if you like wood then go for western red cedar, which ages well and lasts a long time. It’s important to have level foundations

You don’t have to heat a greenhouse but I like to because it lets me get an early start in spring, and keeps my tender pot plants alive through the winter. When I had an unheated greenhouse my frost-tender plants rarely survived. I prefer electric heating, which doesn’t smell and doesn’t produce the excessive amounts of water YDSRXU DVVRFLDWHG ZLWK SDUDIÀQ 0DNH VXUH \RX XVH D TXDOLÀHG HOHFWULFLDQ DQG WKDW DOO WKH VRFNHWV DUH UDWHG for outdoor use. Fit a thermostat and the heat will only come on when necessary, making it very economical. At the other end of the year make sure you have ventilation, or your plants will cook. If you can afford it go for the automatic arms which open ventilators if the greenhouse reaches a certain temperature. Also consider blinds to help prevent sun-scorch. I arrange my greenhouse with staging on one side and a soil bed on the other for my tomatoes to grow in, and I’ve attached some guttering and a downpipe to a water butt so I can collect rainwater. It’s my little haven in February; where I plant seeds and imagine what my garden will look like in a three months’ time.

Easy Cheesy Delicious Valentines’ Dinner For 2 Shrimp (or Chicken) Alfredo Garlic Linguini

What you will need:

3 tbsp butter, divided 3 cloves garlic minced 1 lb raw medium or large (if you really want to impress) shrimp, peeled and deveined OR 2 raw chicken breasts chopped into bit sized pieces 3/4 cup 2% milk 1/4 cup chicken broth 1 cup shredded mozzarella 1/4 cup plus 2 tbsp freshly grated Parmesan WEVS Ă RXU Pepper to taste Salt to taste Pkg linguini 2 tbsp fresh chopped parsley, add a bit more for garnish

1. Cook linguini according to package directions. Drain (save Âź cup of pasta water) and set both aside. 2. In a large skillet, over medium heat, melt 1 tbsp of butter. Add garlic, shrimp (or chicken), parsley and season with salt. Cook until shrimp are pink. If cooking chicken, cook until no longer pink. 3. Transfer shrimp/chicken to a plate but keep the juices in the skillet. 4. Add remaining 2 tbsp butter to skillet and let melt, then stir LQ Ă RXU DQG VWLU IRU PLQXWH $GG PLON EURWK DQG EULQJ WR D simmer. Stir in mozzarella, Parmesan and season with salt and pepper. 5. Add shrimp (or chicken) 6. Add pasta water to the cooked linguini and toss until combined (this helps sauce stick to pasta). 7. Add linguini to mixture, if mixture is too thick, add a splash of milk. 8. Garnish with parsley before serving (optional but looks awesome!).
