To make the dough: Heat the milk in a pan until hot but not boiling. Remove from the heat. Add the butter stir until melted. When the liquid has cooled to tepid, beat in the egg and half the orange zest. Mix the strong flour, yeast, 1/2-1 tsp salt (depending on taste) and the sugar in a large bowl. Pour in the liquid and stir to make a soft dough. Knead the dough for 5-10 mins on a floured surface until smooth and elastic. (you can use a mixer with a dough attachment if you have one). Oil a large bowl and place the kneaded dough inside it, then cover with oiled cling wrap. Leave in a warm place for about 1 hr or until the dough has doubled in size. Place the raisins and half the orange juice in a small pan and simmer gently for a few minutes. Allow to cool completely. Mix the cinnamon with 2 tbsp sugar and the remaining zest. Turn the risen dough onto a floured surface and press it out to a large rectangle, approx 12” x 9”. Scatter it evenly with the drained raisins, and cinnamon-sugar mix. Roll the dough around the filling, then knead it well for a few mins until the fruit and spices are evenly spread. Grease and line a large baking sheet with baking parchment. Divide the dough into 12 equal pieces. Shape each piece into a bun making the top as smooth as possible. Place the buns, smooth-side up, on the baking sheet, leaving room for rising. Cover loosely with oiled cling wrap and leave in a warm place for 30-45 mins or until the dough has risen and doesn’t spring back quickly when prodded gently. Meanwhile preheat oven to 190C/170C fan - 375F/350F fan - gas 5. Make the paste for the crosses by gradually stirring 6-7 tbsp water into the flour to make a smooth, thick paste, then put in an icing bag or small plastic food bag then snip off the corner to about 0.5cm / 0.2”. Pipe the crosses, then bake for 20-25 mins until the buns are risen and dark golden brown. Mix the remaining orange juice with the remaining sugar and let it dissolve. Brush the syrup over the buns while they are still hot, then leave to cool. Eat on the day of baking or serve toasted the next day.

Cindy Baker: Crash Pad and Trucker Bombs Until May 5, 2019 This exhibition includes two distinct but related bodies of work. Crash Pad is a combination of drawing, video projection, and patterned wallpaper that depicts scenes of loving, domestic intimacy between everyday women with disabilities and chronic health issues. This is accompanied by Trucker Bombs, a series of lightbox installations that speak to the pressures put on even able bodies to perform productivity under capitalism. Each image depicts the kind of glowing, yellow water bottles often thrown onto highways when long-haul drivers, under pressure to drive ever longer hours, have to forego regular pit stops.

Classic 60s Folk Music Comes To Abbotsford The American folk music revival which began in the 1940s peaked in popularity in the 1960s. Songs such as Blowing in the Wind, Puff the Magic Dragon and Leaving on a Jet Plane have become beloved classic songs that are still heard on the airwaves today. On Friday, March 22, The True North Troubadours will perform at the Matsqui Centennial Auditorium. The group is a world class tribute to Peter, Paul and Mary the most popular folk group of the 1960s, as well as music from other artists including Ian and Sylvia Tyson, Bob Dylan, the Byrds and many more. The group consists of Joel Dietrich, Wayne Rempel both on acoustic guitars and vocals, and Diane Rempel on vocals. Steve Labish supports the trio on acoustic bass. How did the True North Troubadours come to be? Joel: Wayne and I had been performing together for many years in our band Byrd Dawg, a tribute to the Everly Brothers and Simon and Garfunkel. I had the idea to try a song by Peter Paul and Mary, and to have Wayne’s wife Diane come and sing. There was no looking back after that!

26

How do you choose the songs you perform? Diane: We like songs that allow us to use harmonies to their fullest capacity, are unique in some cases, and will evoke memories for the audience that will transport them back in time. What is your favorite song you perform and why? Joel: Puff the Magic Dragon has always been a favourite of mine. It’s a very moving tale of the inevitable loss of our young imagination as we grow older. Diane: The Times They are A-Changin, this great Bob Dylan song is a rallying cry that set the tone for the feel and spirit of the 60’s. Wayne: I like the Mama s and The Papas, California Dreamin`. What can people expect from an evening with the True North Troubadours? Diane: They will be taken back to their youth, to the memories of times of great change, peace and love and hope. Tickets available in person or by phone at: House of James - 604-852-3701 A&D Music - 778-880-0280 email: truenorthtroubadours@gmail.com

FACTOIDS 1. During the spring, birds are more vocal as they sing to attract mates and warn away rivals. 2. The word “season” is from the Latin sationem meaning “sowing” or “seed time.” 3. While December is the most popular time to get engaged, late spring (June) and fall (September) are the most popular months to get married. 4. According to tradition, if a groundhog does not see his shadow after emerging from his burrow on Groundhog Day (February 2), spring will come early; if he sees his shadow, winter will last for 6 more weeks. 5. While some people prefer not to feed birds in spring and summer, during the spring migration, a feeder might be a useful source of food for traveling birds.

6. Spring almost always arrives on March 20 or 21, but sometimes on the 19th. The reason the equinoxes and solstices don’t always come on the same day is that Earth doesn’t circle the sun in exactly 365 days. 7. There’s more daylight during spring because the earth’s axis tilts toward the sun at this time of the year. 8. On the first day of spring, the sunrise and sunset are about 12 hours apart everywhere on earth. 9. Spring fever isn’t just a saying – experts say the body’s makeup changes due to different diets, hormone production and temperature. 10. The first spring flowers are usually daffodils, dandelions, lilies, tulips, iris and lilacs.
