Welcome to ARRCC’s new Furniture Warehouse • ARRCC (activities, respite, rehabilitation care centres) is a charity working with a wide spectrum of disadvantaged and disabled adults of all ages. • Our Staff and Volunteers are full of enthusiasm, however funds are always desperately needed - we need to increase public awareness, not only to enable more people to hear about ARRCC but to help source funding. • The latest project is a preloved furniture warehouse. ARRCC hopes to be able to raise much needed funds by selling the furniture to local people in Kent and East Sussex. • The response in Rye and the local area has been incredible. Preparing your house for the winter months The rain is lashing down, summer seems like a distant memory and the majority of us have made the big annual decision to turn the heating on: Winter is imminent. Now is the time to start thinking about protecting your home against the elements. You don’t need to go berserk and prepare as though anticipating the apocalypse but there are a few small jobs which if done now can save you a whole load of bother later: • Get your boiler serviced; Ensure it is working properly now, trying to get someone to fix it in the middle of winter will be more costly. Likewise if you have a chimney, get it swept now, both for safety reasons and the ease of finding an available chimney sweep. Make sure you know how to run your boiler efficiently and cost effectively. There is no point heating rooms which you never go in nor heating the house during the day when no one is at home. • Clear out your guttering. • If oil fuels your home, ensure your tank is full prior to the onset of the cold weather. At this time of year the lead time is usually 3-5 days, come the middle of winter that time frame doubles due to demand not to mention the inflated costs you will have to incur simply to ensure your home is warm for Christmas. • Have a couple of sand bags at the ready in case the heavens open and you are in an area prone to flooding. • Stock up on salt; If you know that icy conditions makes your driveway more treacherous than an ice rink, buy some salt to spread so you can get out of your home without risking a broken bone. • Locate the water supply tap before a pipe bursts! Try to prevent pipes bursting while on holiday by leaving the heating ticking over on a low level. You can also try pouring salt down your sinks and wash basins as this will help prevent freezing. • Don’t ignore early signs of problems. The proverb ‘a stitch in time saves nine’ is never as apt as it is at this time of year. If you notice a leak in the Autumnal months try and sort it out now as the weather will only get worse, the builders busier and before you know it a quick repair has turned into a major job and a time consuming insurance claim. Speaking of which now is the time to check your home insurance has been renewed and is all correct. If the worst happens, it will feel a whole lot worse if your insurance company refuses to pay out.
Like everything a certain degree of common sense is required, try to be prepared without getting bogged down by neurosis, if your house didn’t flood during the torrential downpours of last winter it is unlikely to do so this year for example. however It is important to remember that no amount of forethought can cover every eventuality and freak incidents do occur so a final tip on how to survive winter: have the candles and an extra blanket at the ready, prepare to dust off a board game, crack open a bottle of wine and it will be spring before you know it! Heathfield Christmas Heathfield Christmas Family Fun Day Christmas is coming soon, so it is time to start planning your festive calendar. There are plenty of events in and around Heathfield, so you will be spoiled for choice for things to do this Christmas. Here are just some of our favourite events in your area in the build up to the big day. The Heathfield Chamber will be holding their annual Christmas family fun day on Saturday 22 November, when the Christmas lights are put on and one of the local primary school choirs sing. This is an ideal opportunity to start the Christmas season and take part in the many activities and attractions on the day. Shuna’s Vintage Clothes Shuna has worked on many films including Notting Hill (1999), Firewall (2006), Wish You Were Here (1987) and Richard III (1995) for which she won a British Academy Award for Film Costume Design. She was also nominated for an Oscar at the 68th Academy Awards for the same film in the category of Best Costumes. A graduate of the Royal College of Art, London, Shuna worked as a fashion magazine editor for for several respected magazines, including Harper’s Bazaar and a fashion illustrator working with many Newspapers and Magazines before becoming a costume designer. Her passion has always been collecting vintage clothes and antiques and she now enjoys buying and selling them at her shop situated at Heathfield Market on Tuesday mornings.

Tom Kerridge Tom Kerridge is the incredibly popular and loveable chef patron at the extraordinary two Michelin-starred Hand & Flowers pub in Marlow, which he opened with wife Beth in 2005. It was quite a moment for Michelin when the second star was awarded, and some say quite controversial. The world’s culinary press descended on Marlow following the announcement and discovered a special venue, team and chef there. Originally from the West Country, Tom is a great character with amazing presence, obvious warmth and an infectious laugh, so it wasn’t a surprise when Tom landed his own BBC TV show which was filmed in early 2013. The brilliantly popular BBC2 series Proper Pub Food became a huge overnight success when it transmitted in September 2013 and his first book of the same title fast became a best seller.

Prior to having his own show, Tom appeared on shows such as Market Kitchen, MasterChef the Professionals, Saturday Kitchen and has competed and won the main course twice on BBC2’s Great British Menu, something no other chef has achieved.
Beth, although a huge part of the original development of the Front of House and design of The Hand and Flowers, now can be found either in the office or in her studio. Having studied sculpture at John Moores Liverpool University and the Royal College of Art, and then apprenticed under Sir Anthony Caro, she is pursuing her first love, sculpture.

Tom, can you explain the concept behind your pub. We opened the Hand and Flowers almost 10 years ago as a place where people could go and enjoy nice food in a comfortable and relaxed setting where they didn’t have to spend loads of money on drinks. Somewhere you could just have a pint of beer and enjoy yourself. We never had any ideas about winning Michelin Stars, it was always about cooking the best produce we could find. It started off with myself and two other guys in the kitchen and we are now a brigade of 19 and we are looking to expand this to around 22. We are also currently looking to open a second venture. It is all about the team and the team effort and the fact that so many people put their hearts and love behind the whole idea. My right hand man is Nick Beardshaw who joined us from Midsummer House where he was working with Daniel Clifford. Nick joined us four years ago and he has grown through the ranks from Chef de Partie all the way up to Senior Sous Chef, managing the kitchen almost as a head chef. So my current team is myself, my head chef Arrun Mulice, Nick Beardshaw and another guy called Jamie May plus two other junior sous chefs, so it is quite a team of management and structure.
You must be pleased you are doing so well when many pubs are struggling in the current climate? We all see in this industry that pubs are having a hard time at the moment, but we have to look at the reasons why. It is no good opening at 11am in the morning, standing behind your bar and moaning that no one is coming in. You have to look at why that is and it is mainly because people don’t drink as much anymore. During the week people will often go out to high street pizza places where you are quite likely to sit with your friends and have a bottle of wine and a couple of pizzas which are often very good. For £9 you get an amazing pizza, so people are having a reasonable meal and a bottle of wine rather than having six or seven pints at the pub. I see my business primarily as being food lead, so we will run a breakfast menu from 8am in the morning with free wi-fi where you can sit down, check your emails and have a cup of coffee and the kitchen is situated behind the bar so the kitchen staff and bar staff are as one. They all take the orders and they are part of an interactive experience. The menu is flexible, so there are dishes from the Hand and Flowers which have been scaled down to suit. You could be having a lunch with just a bowl of soup, half a pint of beer and a cup of coffee and be gone in 15 minutes or you can sit there and order the whole menu of about 30 dishes. Mid morning between 11am and 12pm we have things like ‘Cake of the Day’. Mid afternoon it is things like Terrine or Pork Pies which are already prepared and chilled and around about 5.30pm/6pm the dinner menu starts again with around 25 dishes. We also have a garden nursery which we have taken on in the past couple of years with a full time gardener who is growing about 60% of our vegetables and in particular specialist items. Many of the stock items we still source from our veg suppliers. Our new rotisserie is another thing we are putting into place at the Coach, it is behind the bar and will be a beautiful big French Rotisserie which is costing an arm and a leg but it will look lovely. It is a focal point and will be used for slow cooked dishes cooking whole roasted vegetables and legs of lamb. People often just associate them with cooking chickens but they can be used for so much more. And you also have accommodation at the pub? Yes, we have a certain amount of accommodation, we have four rooms at the Hand and Flowers and we will have another four at the Coach. Any more than that and the whole business would begin to feel like a hotel which isn’t something that we would want. It’s meant to be a pub with rooms otherwise you start needing reception staff and lots of other things.
Consistency is key in this industry so everything is structured and maintained. Of course when you have a lot of people working for you and they get older, and grow in their responsibility you have to grow with them as a business, so we started looking for a separate venue. We wanted to keep it close, so we have brought a long lease on a pub called ‘The Coach’ which is actually in the same street as the Hand and Flowers, right in the centre of town. The concept

How far in advance do you have to book a table? We have just extended the Hand and Flowers with an extra four bar stools which are not available for booking. Being fully booked is something that is fantastic from a business point of view, but something that myself and my wife are really embarrassed about is the fact that if you want to visit us at a weekend, you would need to book about a year in advance. My whole concept was about being accessible but of course these things happen once you become more successful. Our new project (The Coach) will also be non bookable and will

try and be vibrant and active for the local community. We get the keys from the builders on the 20th November but I would like it a week earlier if possible. How have you got on over the years with your local planning department? There is always an issue with planning, usually around what people think you are going to do, compared to what you are actually going to do. The more you build a business and the more it becomes renowned they can understand more about where you are going. Planning for the Coach has been good so far. For 16 years it had been run as a Chinese Takeaway within a pub, we are refurbishing everything from top to bottom but they want us to put more extractors in to take away the smell. Why we would need to put extra extraction in after 16 years being a Chinese takeaway is beyond me but you just have to say ‘Okay no problem’ but in general planning has been fine. What about support from the rest of the community? Marlow has been a phenomenal town for us, it is a quintessential beautiful town on the River Thames and a lovely place to be. It’s a huge community based town and they have massively supported us from the start so this new venture at The Coach is our way of saying thank you to them, by giving them a pub they can go back into with reasonably priced food. All of the main dishes will be around the £10 to £12 mark. What about associations with Brewers? The Hand and Flowers is a Green King leasehold and they have been phenomenal from the word go. a lot of stick but you have to work into your business plan the fact that you are tied to a certain beer. If you work alongside the brewery in my experience they are usually incredibly helpful. They don’t want people to be moving out of pubs constantly. Our new place, the Coach is owned by Enterprise Inns and so far we have had good relations with them as well. What are you doing in terms of Marketing your establishments? We do a lot of marketing, whether it is in local magazines or anything else, everything generates business. Nothing is too small, whether it is an interview for a newspaper or turning up to an event, every little bit generates business, of course I am in a very different situation now because all of a sudden I have appeared on television, so I reluctantly have to say no to some things but I remember turning up for things several years ago where I would bring my own pans, show a demonstration where there was hardly anyone watching and then pack it all away myself and go home. What about sourcing staff? We work with three colleges now and regularly run apprenticeships. One of the biggest things in this industry is team work and ethics. We never have a front of house and back of house attitude, there is never an issue with the food pass, in fact one of the first things we did was to put the pastry section at the back of the kitchen so that waiting staff have to come in to pick the desserts up. They have to be comfortable and confident enough to walk into that environment and chefs have to be nice to them. They cannot turn around and burn them or be horrible and it means that everyone mixes. What do you get out of shows like The Restaurant Show? It gives me the opportunity to network and from our point of view it allows us to spread the word of our new operation ‘The Coach’, and allows people to see what we are doing. It also gives me the chance to thank people that have been so supportive to me. I also think that if people that are just starting in the industry see that someone like me can be successful then it inspires them to do the same. There are so many people who attend from a broad cross section, it gives everyone the opportunity to be inspired even it if is just with one thing. It’s also important for me to bring along my chefs to a show like this so they can meet like minded people and of course I am also judging The Chef of the Year which is an honour.... I am just glad I am not competing in it.

When it came to booking somewhere special for our “big do” we just knew it had to be Callenders on the High Street. They really do know how to look after you. Pets & Wildlife Birds of a Feather N ow is the time to be on the lookout for incoming migrating garden birds, many of our winter visitors pop over from Scandinavia to feast on berries, seeds and insects. The beautiful Redwings and Fieldfares are already being seen flying over the east coast, both these species love
berries. Blackbird and Robin numbers also increase, Scandinavian birds joining our residents to feast up on the garden feeders, Siskins also should be flocking in to devour the Sunflower Hearts and Nyjer seed. Another finch that hopefully blesses us with their presence is the Brambling, sadly a
