Heathfield Christmas

C

hristmas in Heathfield starts on Saturday 3rd December with the Heathfield Family Fun Day.

From 1-5pm there will be stalls in the Tesco Express car Park in Station Road, selling all kinds of Christmas treats, with entertainment from local children singing traditional carols. The Christmas lights will be switched on in the High Street at 4.30pm and there is also a window competition around the theme of ‘a Christmas Song’.

On 26th November there will also be a Heathfield Christmas Market from 10.00am-3.00pm At State Hall, Station Road, Heathfield. This popular event returns for it’s third year! The venue is easily located near to the town’s car parks and supermarkets. Over 30 exhibitors are expected at this event, bakers, artisans, crafters and businesses. This event has always been a great success and brings large crowds into the centre of the town and signals the start of the Christmas shopping season in Heathfield.

Devonshire Road will be closed off to all traffic between 5pm and 9pm as the celebrations get underway. Western Road will also be closed off for a Christmas market. Shining Lights is a local group from the community formed together to bring back the magic of christmas into Bexhill. Last year they managed to raise enough money to bring that sparkle back bringing to the town with 8-10,000 people attending the big switch on event. The group rely heavily on donations in order for this to continue. So if you are passionate about this Bexhill Christmas event and what it does for the local trade then they would be very grateful of any donations even if it’s just £1 it all helps. Bexhill Santa Dash on Saturday 3rd December

F

ollowing the growing success of the past couple of years, Bexhill Lions Club is holding the Town’s fourth Santa Dash on Saturday 3rd December.

This popular fun family festive event is open to all ages and abilities. The De La Warr Pavilion and Bexhill’s seafront will again be the setting for this sponsored event. So get into the festive spirit, whilst raising vital funds for your chosen good causes. You can run, jog, walk, push prams, walk the dog or use a wheelchair on the flat user friendly promenade. This year there will be awards for the best decorated pram, wheelchair and dog. Santas can dash along the Seafront towards Brookfields Road, returning to the DLWP terrace, a distance of 2km(1.2miles). Or for those Santa’s keen to get in training for their busy Christmas deliveries can go on to Galley Hill then turn back to West Parade Toilets and return to the terrace, a distance of 5km (3.1miles). Adults and children over 5 years of age will receive a free Santa suit and youngsters a Santa hat. All participants will also receive a medal. We would also love you to decorate your pram, wheelchair and even the dog!

Following his critically acclaimed headlining appearance at Glastonbury Festival 2016 performing to over 20,000 people, Charles Hazlewood brings his mesmerising project out on tour this December. The British Paraorchestra (BPO) is the world’s first professional ensemble of disabled musicians, founded by Charles Hazlewood and television director, Claire Whalley in November 2011. Following their world debut at the Paralympic Closing Ceremony in 2012 alongside Coldplay, the BPO is pioneering a global movement to recognise and showcase disabled musicians with extraordinary abilities. This intense yet celebratory symphonic journey, conducted by the award-winning Charles Hazlewood with a 42-piece orchestra, takes the musical essence of Bowie’s Heroes and Low albums and re-expresses them through Glass’s un-mistakable and hypnotic brand of alchemy to produce a night of reflection and wonder. Hawkhurst Christmas Festival

his year’s event will take place on Saturday 10 December, from 12 -5pm. It will be based in the Royal Oak Hotel car park, by kind permission of Nikki Podac, and along the Colonnade. There will be a Christmas market, but also it is an opportunity for local organisations and charities to raise some funds We would also be pleased to hear from any groups that have not attended in the past. Entertainment will be provided by Wadhurst Brass Band and we are pleased to say that we will be joined by the ever popular Hawkhurst Harmonies. Ken Hom with Co Author James Steen What’s On Magazine met up with Ken Hom to find out more about his new book. How did your cooking career begin? I started working at my uncle’s restaurant in Chicago’s China Town. My uncle was quite a debonair figure and he owned one of the best restaurants in town. We had a very loyal following of Chinese clientèle and he introduced dim sum to China Town which just blew everybody away. My uncle understood that he had to serve not only the Chinese market but also the Western market. You have to remember this was the late 60’s. I started working with my uncle because of my life of crime.... let me explain... I took my first bus trip at the age of 10 to downtown Chicago and I saw all these wonderful goods laid out in the shops. I took a small thing from one of the shops which at that age was thrilling, especially when you are poor and I thought, ‘well this is easy’. The next time I went, I took a bag as a gift for my mother for Christmas. Of course after a while I was caught and my uncle had to come and bail me out with my mother. My mother punished me, not

by yelling, but for two weeks she would come and make my dinner and then she would sit in the corner and cry for five hours. I cannot tell you how devastating that was for me. Now I won’t even take the soap from a hotel room. My uncle Paul agreed to put me to work in his restaurant so that I could make real money and buy what I needed. He became my mentor and surrogate father. He was a smart businessman and I learnt a lot of what I know today from him. I worked for him for four hard years. When I was about seventeen I moved to California and became a hippy. It was the time of the Vietnam war and I became very anti establishment. We didn’t accept the food that was being offered by these multi national food corporations which we thought was poisoning us and of course we were right. We wanted to eat good healthy food organically grown and started to explore flavours. I started cooking French food and hosted lots of dinner parties. At that time everyone smoked a ‘joint’ before eating so by the time the food came everyone was ravenous. People would bring brownies

made with marijuana which they grew in their back yards. I went to France for a year in 1973 and when I returned the USA in 1974. I didn’t know how I was going to pay the rent, so fortunately I was asked to do a cookery class by this woman who was married to a congressman. She was asking me to run an Italian cooking class which I knew something about as I had stayed with an Italian family during my time in France. It was a great success and she paid me 300 dollars which covered my rent for a month and a half. After that she said ‘do you know anything about Chinese cooking?’. So of course I could do this blind folded. I ran three courses for her and thought I had hit the jackpot, so I enlarged my kitchen at my house and started to run cookery schools from home. We held it like a dinner party so around twelve people would come along and enjoy both the food and wine. Pretty soon the world had spread and I was asked to write a book by one of the largest publishers in New York. This lead to a job at the California Culinary Academy which was a school for professional chefs. During this time I learnt that I really just wanted to be a teacher.

of my life. I have never had to learn lines before and for the series I had to specify exactly how much of each ingredient I was adding, and there was a certain pattern of speech you had to learn. They sent me tapes of Delia Smith and expected me to present in her style. There was also the issue that because my cooking was so fast I had to slow down to fill the time allocation they had for the programme. We had twenty eight people on the set including three firemen so it was quite pressurised and something I just wasn’t used to. It was much easier for Madhur Jaffrey as she was a trained actress, she was used to learning lines and working with cameras. I was so traumatised that I couldn’t do another series for another nine years, I should have had therapy. What other cuisines do you enjoy cooking? I enjoy very much cooking in Thailand, Thai cooks are so wonderful, you show them how to do something and when they bring you the food, it tastes better than when you make it yourself. Thai’s really have a sense of palette. In the early 1990’s I designed all the food for Cathy Pacific Airlines from Economy to First Class. That was a great experience because I went to all of their thirty five airports. One day I flew back from Sydney to Hong Kong and I was the only person from First Class. They had this tin of Iranian Caviar and the stewardess said to me ‘do you like Caviar?’ and of course I said ‘yes’. I told her to forget about the meal and just leave me the tin of Caviar, so for eight hours I slowly demolished that tin.

I hate this nonsense about celebrity cooks, being a teacher has always been more important to me. In the process of teaching how different dishes came about I found myself learning a lot. The University of Berkley had a wonderful library where I was able to research origins of dishes and ingredients. How did your first British T.V series begin? I was at a birthday party for the food editor of the New York Times. His name was Craig Claiborne and, at that time he was the most powerful food writer in the country. The New York Times was the voice of the nation and if they gave you their stamp of approval you knew you were doing something right. Craig asked to interview me for the New York Times and I had two full pages in the paper. My publisher who was just going to print 5,000 copies of my new book increased the print run to 26,000 copies and they put me on a book tour. It took me one and a half months to cover thirty five cities and it gave me wide exposure. While I was at the party I met Madhur Jaffrey who was also made famous by Craig Claiborne. She contacted me later that summer saying that English t.v. were desperate to talk to me. I had only been to England once before and didn’t have a good experience as far as food was concerned. I went to a supermarket and saw shrivelled carrots and dried up potatoes which shocked me. Anyway, the BBC had been searching for a couple of years looking for a presenter who could teach Chinese cooking and Madhur Jaffrey told them that I was that person. I was offered the series after my first audition. I was looking forward to it because they had agreed not only to film in the UK, but also at some of my classes in Hong Kong. The filming in Hong Kong was easy because I just had to explain what I did and how I educated people. When it came to the filming back in the studio it was the most wrenching experience

How did your famous Wok came about? After my T.V. series I was approached by about twenty companies, all who wanted me to slap my name on their wok. I couldn’t do that because I wanted complete control, I wanted to design it, I wanted to test it and I wanted to approve every single thing. Even Terence Conran approached me, but in the end only one company offered me what I wanted. I thought it was so important to be true to myself and have a product which delivered everything that I taught. I tried out all the samples and made sure it worked the way I wanted it to work. Wherever I go in this country now I always have people that come up to me and tell me they still have my wok from thirty years ago. Initially we expected to sell around twelve thousand but instead we sold around eighty thousand. I actually travelled around the UK giving demonstrations, which I think is one of the best things that I have ever done. I have a lot of love and affection for the UK. The people have taken me into their homes and more importantly into their kitchens to the point where I feel like a kitchen God. What British food to you like? I love fish and chips but I like my chips really crispy, I hate soggy chips and I don’t like vinegar on them, I prefer tartare sauce. Is there anywhere you haven’t travelled to yet? I would love to go to Iran because I have some wonderful Iranian friends and I would love to go to India.

Hailsham Street Market and Christmas Extravaganza 2016 This year’s event will take place on Saturday 3rd December on the High Street and Vicarage Field in Hailsham, from 9am4pm. A quick visit for lunch to Callenders of Hailsham yesterday led to us booking in for our family get together. The menu of all traditional festive local produce is amazing. As we sat under the fabulous stained glass window and just relaxed, it was the polite and friendly service that convinced us that this was the place for us. Our neighbours had their wedding anniversary do here and everything was wonderful. Menus start from under ten pounds for two courses and all wines and beers are sensibly priced too. Top quality, award winning modern British food and service, we can’t wait to go back. I think I shall have Prawns to start, or maybe the Smoked Duck, followed by a Steamed Venison Pudding, with a glass of Rioja, and the Light and Zingy Lemon Crème Brule to finish. I really can’t wait. Organizing and Planning Your Wedding Even though you’ve stocked up on all the most recent bridal publications you can find, it seems that they don’t really help you in organizing and planning your own wedding. Sure, there’s a multitude of pages gorgeous color photographs showing wedding gowns and rings along with lots of “how-to” articles on wedding planning, but all of that may just serve to confuse you even more. Before you panic, you need to realize that all you have to do is begin planning your wedding earlier rather than later. First of all, create a way to file every detail in one place. This can be a binder with tabs for each category. These categories should include Catering, Bakery, Florist, Photography, Ceremony, Music, Reception and Transportation. You can arrange these in order of importance or alphabetically, whichever is easiest for you. Another choice is an accordion file. With this, you can see all categories at a glance. Whatever system you decide upon, keep your receipts, brochures, pictures, business cards and other important items in this same area. When you’ve got your system arranged, start doing some research. The Kit Wilson Trust for Animal Welfare was established in 1976. A cornerstone of the Trust’s founding policy then, as now, was to promote the spaying and neutering of pets. Our Animal Rescue Centre in Hadlow Down, nr Uckfield in East Sussex, provides a base for the animal rescue and re-homing work. Over the years, the Rescue Centre has also become a permanent home to many animals that it is not possible or desirable to re-home. Funds are raised with the generous support of individual donations, legacies, local fund raising, animal sponsors and our charity shops in Uckfield, Hailsham and Heathfield. We receive no Local Authority, Government or Lottery funding. Please look out for our Christmas Food Appeal boxes, where any donation left for the animals in our care is much appreciated.

Birds of a feather.. I t is a sad fact that there has been a huge decline in our “songbird” numbers over the past decade or two.

A number of valid reasons have been suggested but one which has never been proved is the predation by Corvids (mainly Magpies) and Sparrowhawks. It is always going to be hard when you witness your garden birds being predated, attempting to stem this activity is never far from people’s minds. Unfortunately no amount of predator control will reverse or affect the sad decline in such birds as Corn Buntings and Skylarks. Magpies and Sparrowhawks are really just a smokescreen distracting attention from the effects of intensive farming which is widely believed to be the major reason for the devastating drop in numbers of these iconic country birds. So next time you are lucky and privileged enough to see a magnificent Sparrowhawk jet through your garden take a few seconds to wonder at its power and beauty.
