Suzy and Canines: Suzy has been a dog owner for many years and is trained by Canine Studies College in Dog Behaviour and Training, who are affiliated to the Kennel Club. Suzy has a ‘softly, softly’ approach to training, communicating through play and exercises. For a Puppy / young dog, there is a suggested six sessions over six weeks, each of 1 hour duration, after an initial consultation. These sessions will be in the home, with progression to the garden and finally outside in the world. For an older dog, a consultation in the home is followed by a learning plan to devise a regime and put it into practice. Suzy is a qualified teacher with DBS status (CRB checked) and is fully insured.

Eastbourne Area Epilepsy Group was formed in 2005 by Andy Evans to support people with Epilepsy, and their friends and families, in the Eastbourne Area. The group now covers East Sussex, the group attend different events all over the county. They also have a youth group for 7-17 year olds with epilepsy which meet in Eastbourne on the second Saturday of the month. The group is also there for information and raise awareness with stalls countywide and to reduce the stigma of epilepsy. If you would like to help us spread the word and educate your group or club about Epilepsy, we are available for talks - call for details.

On Saturday 29th November Father Christmas comes to Battle for children to visit him in his Grotto. Santa will parade down the high street at 1.50pm after which he will be in his Grotto in the Memorial Hall from 2.15-4.45pm with cakes refreshments and entertainment. Santa will be switching on the Battle Christmas lights at 5pm on the Abbey Green.

The new Battle Winter Wonderland on The Abbey Green will incorporate some amazing igloos offering refreshments from 5pm. For the first time Santa is looking forward to children visiting him at Battle Abbey from 5pm with a unique opportunity to see inside the Abbey between 6pm and 8pm. There will also be carols and music ringing throughout the town, performed by Battle Abbey School Chamber Choir, Hastings Melodians, Lucy Ashton and friends and the Salvation Army. The Choir from Battle and Langton School will perform in the Market Square Bandstand from 6pm followed by a local D.J. English Heritage is offering free car parking in the Abbey car park on Thursday 11th and Friday 12th December.

Battle Christmas Gala Night Thursday 11th December The Battle Christmas Gala Night is one of the town’s favourite Christmas traditions and it will see the shops stay open until 9.00pm with the traders competing for the best dressed window. The awards for the best fancy dress and the best display will be chosen on the night and there will also be some exciting seasonal entertainment on the Abbey Green.

Paul Hollywood Professional baker Paul Hollywood became a household name after appearing as a judge on BBC series The Great British Bake Off, alongside home cook Mary Berry. However he’s been busily baking since his teenage years when he became an apprentice at his father’s bakery. The son of a baker, Paul originally trained as a sculptor before his father persuaded him to join the family business. He went onto become head baker at some of the most exclusive hotels including Cliveden, Chester Grosvenor and The Dorchester where he gained a reputation as an innovator and one of the country’s finest artisan bakers. Following his apprenticeship and success at some of the UK’s top hotels, Paul took the opportunity to travel extensively through Cyprus, Egypt and Jordan, visiting remote villages to discover ancient techniques for baking bread and, on one occasion, travelling to a Bedouin encampment and baking in the desert on an upturned cooking pot. On his return to the England, he launched the Paul Hollywood Artisan Bread Company and now supplies Waitrose, amongst others, with his own branded bread. Paul began his media career on Carlton Food Network and Taste in 2002 where he co-presented two tv series with James Martin.

In 2005 he authored a best-selling book 100 Great Breads which has been published in ten countries and seven languages, and was voted ‘top bread and pastry book’ by the Gourmand Academy. His second book How to Bake, published by Bloomsbury, came out in summer 2012 and quickly went on to the top of the bestseller lists. The book to accompany his Bread series came out in February 2013. In October 2013 his book Pies and Puds was a number one best seller and accompanied a 20 part BBC TV series. Paul makes regular contributions to The BBC Good Food Magazine, Olive Magazine, Waitrose Magazine and has written for both The Observer and The Daily Mail. He has a monthly column in the weekend Telegraph. Paul advises and trains at Corporate level, working extensively with the Flour Advisory Board as well as hosting and presenting large demonstrations and award ceremonies. He has a nationwide Theatre Tour in 2014.

What’s On Magazine met up with Paul at The BBC Good Food Show London for this exclusive. Paul, what are you currently working on? I am actually really tired because I am travelling around the country on a UK tour. I am visiting eight different cities. Tonight I am going up to Liverpool and then I am going to Dublin, Belfast, Aberdeen, Dundee and Glasgow. The whole idea of the tour is to create an interactive experience with the audience. It allows me to pass on the knowledge I have learnt through my baking career going right back from watching my mum make pastry, to now, making pies and cakes for Bake Off. If there’s one thing people pick up from my shows to improve their baking, then I’ve done my job. I will be back home from the tour on December 8th. Before that I will be at the BBC Good Food Show in Birmingham which is on from 27th-30th November. I really enjoy working at that show because it is the first time you get all the chefs together. We had Jamie Oliver here last night and it was good catching up with him as I haven’t seen him for years, he is a good lad.

The forms are available to download from the BBC website or from the Production’s website. After applying you could be approached within the next couple of months and you would be interviewed to see if you were suitable to go to the next stage. If so, I could be seeing you in the tent next year. How do you go about setting the technical challenges? It is a joint effort between me and Mary but it is always a challenging thing to do. One of the most challenging ones was the show where they had to produce a Lithuanian torte with 20 layers in it, that was a really good one. Actually it tasted awful, it is like making a pancake batter and we were looking for 20 layers. Nancy only managed 17 and I think Richard got to 20. The whole thing together is so dry, so it’s not good, but it was a fun task and really tricky. What has been your favourite show stopper? I think doughnuts would have to be my choice for that. I love doughnuts. I also thought Jordan and Nancy performed really well this year and of course Martha was very good. Is the film actually filmed over two days because we always see the contestants wearing the same clothes throughout? Yes it is filmed over two days, the contestants have to bring two sets of the same clothes with them, the reason being is that there is a lot of editing takes place between the two different days. When you see the interview with each contestant at the end of each bake, that is recorded on the second day, but shown as if it was on the first day, so for continuity reasons it’s much easier if everyone wears the same clothes for both days. It’s a bit of a nightmare for me because when I go into shops to buy shirts I normally end up buying eight of the same one. My wardrobe is just full of sets of eight clothes.

What did you think about the controversy over this year’s Bake Off winner - many people wanted Richard to win? The thing is, Richard won Star Baker five times during the show, so a lot of people thought he should have won. That achievement is obviously really good and he did really well, but if you follow that train of thought why have a final at all, what’s the point, if you had already given it to him there is no reason to have a final and of course he really messed up in the final with a scrambled egg lemon tart. Louis was also another contestant popular with the viewers. Yes, Louis was great, he’s actually at the food show today demonstrating some winter baking. He is a real talent, some of those doughnuts he made with the alcohol inside were just fabulous. Have you been surprised how successful the show has been? No not at all. I’ve been knocking on doors wanting to do a baking programme like this for years. When they told me about this one, and that it was going to be prime time on BBC2, I jumped at the chance. Of course I had no idea that so many of the great British public would find it so interesting. I love it, it’s what I do, but it’s now become a national treasure, everyone’s taken it to their heart which is incredible. Are you preparing for next year’s show? Yes, and people can now start applying to be on the show.

Do you ever worry about being harsh with your critique? No, definitely not, I have a responsibility to the product put in front of me. I don’t care who I am judging, it’s my job to look at what’s on the plate. Having said that, I am always constructive with my comments. If your bake is not good there is always a reason, it might be the oven was too hot, you baked it too long, or there may be a soggy bottom because you didn’t bake it blind for long enough. I have to be cruel to be kind. The standard last season was really good, it took me about four programmes to find the weaknesses. What three things should every new baker have in their kitchen? First of all of course they should have my new book, ‘Paul Hollywood’s Book of British Baking’. I think you also need a really good set of scales, not the old type of balance scales. My mother has still got an old set of those Salter Scales with the glass missing off the front. She weighs things on it, and when you tap it the reading changes each time. If you are going to bake you need digital scales, accuracy is key. The third thing would be a good oven, not only that but a clean oven. A dirty oven will have blockages in it, the heat isn’t evenly distributed which is why you end up getting hot spots in the oven. What are your favourite foods? Doughnuts or maybe a pork pie, I love pork pies. To be honest a packet of biscuits and a bucket of tea and I am happy. I have been eating a lot of popcorn lately as I have just bought one of those old fashioned popcorn machines.

he Vine is a charming pub that attracts a happy mix of drinkers and diners. Following an extensive and tasteful renovation, The Vine not only looks the part of a grand old building (it dates back to the early 17th century), it also benefits from being situated right in the middle of the pretty village of Goudhurst. The bar is an airy room, with luxurious armchairs, eye-catching works of art and a period drawing room feel. Here you can enjoy traditional beers, real Ales, carefully selected wines or even cocktails, all prepared by friendly and helpful bar staff. The dining areas are separated into different areas which creates cosy and intimate spaces ideal for couples looking for a little privacy. The atmosphere is very relaxed. Despite the high level of the cooking, you wouldn’t feel out of place if you wandered in wearing jeans. The music and light chatter is pleasant and not intrusive, and the clientele are mainly local couples and groups, with larger numbers heading for the upstairs private function room. The staff are especially friendly and the table service is offered with a high level of etiquette alongside genuine

smiles and warm welcomes. Dishes are beautifully presented, carefully crafted and packed full of flavour. The varied menu is predominantly British, with hearty home-cooked dishes that are sure to please. Dining gets off to a fantastic start, for starters, the whole baked Chaucer’s Kentish Camembert with homemade blackcurrant jam was incredibly well portioned with a plate bustling with salad leaves working well with the creamy, slightly tangy goat’s cheese, which is pleasantly warmed through and the jam acts as a nice texture and depth to the dish. The Grilled Mackerel Fillet with beetroot salad & charred bread was simply excellent. The fresh, crispy salad combined with the meaty flakes of fish had a wonderful delicate flavour and was beautifully presented on a wooden serving platter. For our main course the 8oz Sirloin Steak was juicy and succulent served with flat mushroom, grilled tomato, onion rings and a generous amount of triple cooked chips with a choice of sauce. We also selected glazed quarter chicken with savoy cabbage, chestnuts and pancetta, chicken fat rosti.

Both dishes were perfectly cooked and beautifully presented. If you have the room for dessert then the indulgent selection maintains the high standards created throughout the menu. The sticky toffee pudding with butterscotch sauce and vanilla ice cream is every bit as sweet, creamy and over the top as you might hope. A Cox’s apple and vanilla crumble with homemade custard finished what had been a filling but oh-so delicious meal. The wine list is extensive, with plenty of selection in both red and white. There are many old world wines plus a good selection of both English and New World selections available. The English wines range from Gusbourne pinot noir, Kent to Gusbourne Sparkling Rose and Chapel Down Rose. The Vine has a young and jazzy feel, great looks and a good menu selection. Friendly staff dish up much more than your average pub food. This is the sort of place that will have you coming back again and again. Definitely recommended!

Dreaming of Australia…?

Take a cruise to Rottnest Island and see the unique Quokkas, small ‘kangaroo rats’ that made the Dutch explorers give the island its’ name. Follow this with a trip up the Swan River, to visit the prestigious wineries, then have a relaxing day at Cottesloe Beach, completed by a visit to the ‘coffee strip’ in Fremantle.

On to Northern Queensland, home of the Great Barrier Reef. Arriving by air into Cairns, you can transfer by road to Palm Cove or Port Douglas, from where access to the Outer Reef is by catamaran. You can experience the reef either diving, snorkelling, via a semisubmersible boat, from a viewing chamber below the platform, or by a helicopter trip. Any way you go, you’ll be sure of memories and photographs to treasure forever. From Cairns, you can travel north by road to the Daintree rainforest, and Cape Tribulation, and a ride on the Kuranda Railway is a must!

Now travel into the ‘Red Centre’ to explore Uluru. Take a base walk at sunrise, followed by a walk through the Valley of the Winds at Kata Tjuta (The Olgas). We recommend that you stay for sunset cocktails. The next day, walk with the tribal elders to learn more about the Aboriginal legends of Uluru, and in the evening experience the ‘Sounds of Silence’ dinner in the bush, with the resident star talker. From Ayers Rock resort, travel to Alice Springs by road and visit the School of the Air, Flying Doctor base, and the Telegraph Station. The following day, take a tour to the Western MacDonnell Ranges before joining the Ghan to travel by rail to Darwin in real style and luxury. A tour to Kakadu National Park is a ‘must’! See some spectacular rock art at Ubirr, shudder at leaping crocodiles, and enjoy the tropical climate. Travel back to Darwin via Katherine Gorge, where you can take a guided cruise

By air down to Melbourne (it just takes too long to drive!) for your city experience, with lots of wildlife thrown in. Travel to the Dandenongs and Yarra Valley for vineyards, and a trip on the ‘Puffing Billy’ steam train, or take a day trip to the Great Ocean Road to see the Twelve Apostles (limestone stacks, famously eroded by the sea) and the Shipwreck Coast. Take a trip to Phillip Island to see koalas, kangaroos (if you didn’t see enough in the Northern Territory!) and the famous Little Penguins. Pick up a hire car or motor-home, to drive via the coastal route, to Sydney. We suggest that you stop on the way at Lakes Entrance, Merimbula, and enjoy a spot of glamping in the Aussie bush at Jervis Bay, where you can see dolphins, and (in the right season) even

whales. These are all popular beach resorts with lots of comfortable places to stay and plenty of sightseeing on the way. At last, you arrive into Sydney, with its iconic Opera House and Harbour Bridge. A spectacular place to end your Australian odyssey – but not before you’ve been to Bondi and Manly Beaches, taken a cruise on Sydney Harbour, braved a Bridgeclimb, or gone further afield to the Blue Mountains. Getting Festive at Home As an estate agents it pains me to say that the month of December is not the time to be moving house or deciding to put your home on the market. Christmas is busy enough and is already an organisational nightmare without extra hassle, however if you have had enough of your current home here are a few fun festive tips to perhaps make you fall in love with your home again over Christmas (feel free to fall out of love on the 2nd January and pop down your local estate agency immediately!) The tree: nothing brightens up a room like a lustrously lit and decorated Christmas tree and if you can I implore you to buy a real tree rather than opt for a fake one. Yes they make a mess and even the non-drop trees leave their needles everywhere, but

the smell of Christmas which they spread into your house will make it all worthwhile. Don’t stop at the tree, put a Christmas wreath on your front door which will put a smile on your face before you even get to your front door. Invite Friends and Family over: Filling your house with people you love will endear your house to you and if it doesn’t at least you will be surrounded by people you like, and it may make you appreciate how much space you actually have in your home once all the visitors have left. Baking: we are always told that baking bread makes your home more enticing to potential buyers so why not see if it does the same for you, the current occupier, however since its Christmas try baking mince pies, yule logs and anything else you can think of festive. Try combining it with heating up some mulled wine which will instantly fill your home with all the comforting aromas of Christmas.

Get inventive with decorations: Don’t just go to your local supermarket and buy some cheap decorations, try and be a bit more creative and make some handmade decorations, get the kids involved and create a sense of nostalgia. Covering the cracked paintwork with home-made paper snowflakes has got to be an improvement. Pray for snow: although snow can be an inconvenience and the brings the whole country to a standstill, over the Christmas period, not only will it make your home look more beautiful you will then be able to stay indoors and make it all cosy. If all the above fails and you are still feeling fed with your house over the festive period then I would suggest either a holiday or visit friends and family over the festive period, your house will be waiting for you when you get back and you can sort out instructing an agent on your return, just enjoy Christmas first.... Bexhill Lions - Family Santa Dash 2014 Following the success of last year’s event where entrants raised about £2000 for their own chosen charity, Bexhill Lions are holding their second family Santa Dash and are hoping that the promenade will again be awash with a sea of red and white as hundreds of Santas make a dash for their own chosen charity. It’s the perfect way to get into the Christmas spirit and a fun event for all the family to enjoy. The event it will take place on Saturday 6th December. It’s open to all ages and abilities and you can run, jog, jingle, push prams, walk or use a wheelchair on the flat, user friendly routes along the promenade. You have the choice of covering 5km (3.1miles) or 2km (1.2miles) starting near the fountains before returning to the DLWP. Adults and children over 5 years of age will receive a free Santa suit and youngsters a Santa hat. All participants will also receive a medal. o, Christmas is with us once again, the years seem to fly past. 2014 in general was a fairly good year for a lot of our breeding birds. Blue Tits and Great Spotted Woodpeckers seemed to have done well, while the House Sparrow, tho’ the No1 garden visitor is still some 60% down from the numbers we had 15 years ago. Song Thrushes along with Starlings are also still on the red list with a drop of over 80%, for birders the biggest disappointment is probably the massive decline in Turtle Doves, 95% down on previous years. On the bright side the beautiful Goldfinches are now regular on garden feeders, Sunflower Hearts and Nyjer seed seem to do the trick. A poor year for the Badger, many slaughtered at an unbelievable cost in a vain attempt to kerb the spread of Bovine tuberculosis, Whatever your views on this touchy subject surely there must be a more acceptable solution to this controversial, costly slaying of one of our most beautiful animals.
