The Making of a Bagel
It’s another big year for Don Guerra. In 2022, he took home a James Beard Award for Outstanding Baker. In 2023, he’s redefining bagels.
Guerra partnered with local deli and bakery Chompie’s to introduce a unique line of bagels that are scratch-made with intention, clean ingredients, and lots of love.
“It’s a sourdough leavened bagel made from Arizona Sonoran white wheat, with no sugars or oils,” Guerra, who is instrumental in the local grain economy, says. “I like to say I’m putting the health back in my bagels. I’m calling it a Sonoran-style.”
The bagels are different from what already exists in the market and focus more on being an Arizona-grown product than replicating a traditional New York-style bagel. They highlight the region of farming and production; the people who are producing, selling, and distributing it; and the way the bagel is built.
Three flavors are currently available—Sonoran Plain, Sonoran Sesame, and Sonoran Everything. Pick them up once a week inside of Hayden Flour Mills in Gilbert. For those heading to Tucson, find them at Guerra’s restaurant Barrio Bread.

BRUNCH BLISS
Ready to get your day started? There’s a new brunch hot spot in town—The Eleanor, a mid-century-inspired destination.
Set in the space of a former dry cleaner, the building has now been transformed with garage doors to the patio, high clerestory windows, light woods, retro colors, and an outdoor Polynesian-themed area with subtropical plants, lava rocks, and a large overhead shade structure.
The handcrafted menu features classic breakfast dishes like eggs benedict and fluffy maple butter pancakes, as well as unique dishes like its Breakfast Hash and Churro French Toast.
There is also a selection of local beers on tap, craft breakfast cocktails, and plenty of coffee options to get you caffeinated for the day.

Chinese Fare With a Korean Twist
Imagine a dining experience that transports you to the center of a Chinese lantern festival. Dozens of silk lanterns above, a striking red lacquer wall, and a jumbo gold fortune cookie sculpture are just a few of the design surprises that await at Jin Jia, the newest restaurant to open at Desert Ridge Marketplace.
Jin Jia offers traditional Chinese fare with a Korean twist in a setting that evokes the colors and sights of a traditional lantern festival. And, those at the helm are celebrity chefs and kitchen staff who traveled all the way from South Korea to provide an authentic taste of Korea here in the desert.
The menu includes bao buns, noodle options, and a variety of rich and complex dishes, such as Ghenghis-Kahn Beef, King Crab Egg Drop Soup, and Chili Garlic Fried Chicken.
Tip: Make sure to check out the bathroom—the mirror reflects the red lacquer wall and a dazzling reflection of the lantern display.

LOOK WHAT’S
Where to tap into Arizona’s craft beer scene
BY ALISON BAILIN BATZ
Uncle Bear's Brewery
The local beer scene is an Arizona attraction on the rise. According to the Arizona Craft Brewers Guild, it is now home to more than 95 brewers and 120 licensed breweries, many offering tours, tastings, drafts, beer flights, and growlers. Here, 10 must-try locations.
8-BIT ALEWORKS
With offerings ranging from a Mayan chocolate imperial stout and wheat wine that tastes like a Dole Whip to a boysenberry cobbler ale and a rice crispy treat cream ale, 8-Bit is all about infusing imagination right along with hops. The tasting room is as fun as the beer selection, themed after vintage 8-bit video games. There are even a handful of retro game consoles that you can play while you taste, and 8-bit music playing throughout the brewery.
1050 N. Fairway Drive, Avondale; www.8-bitaleworks.com
BEER RESEARCH INSTITUTE
Watch the brewing process from the dining room at this cozy spot. Settle in and enjoy flights and pints of core and seasonal creations paired with dishes from a scratch kitchen. The bestselling beer here is a West Coast IPA called 480G, but do not sleep on the seasonal brews made with locally sourced prickly pear and
peaches, either. Beer Research Institute also has an arcade bar in Downtown Mesa called B.R.I. Taproom & Arcade, which features 35 classic arcade games, 15 pinball machines, and all of its most popular brews on tap. 1641 S. Stapley Drive, Mesa; Arcade bar: 213 W. Main St., Mesa; www.thebeerresearchinstitute.com
FATE BREWING COMPANY
This ever-growing brewery started small in 2012, with Fate’s Tap + Barrel in North Scottsdale. What began as a seven-barrel brewhouse has since expanded to a 15-barrel brewhouse with three locations to keep up with fan demand. Each has at least a dozen options to taste, including its flagship Fateful IPA, which is bold yet balanced with bright notes of honey-soaked citrus and pine needles. If visiting in the fall, do not miss the limited-edition Candy Bar Milk Stout, a silver medalist at the Great American Beer Festival. 1312 N. Scottsdale Road, Scottsdale; 201 E. Southern Ave., Tempe; 4445 N. 7th St., Phoenix; www.fatebrewing.com
HUSS BREWING CO.
Huss Brewing Co. has three locations around the Valley, including its flagship taproom in Uptown Phoenix, an outpost in Tempe, and a taproom in Downtown Phoenix, each of which offers a wide variety of fresh, quality beers that can be served by the pint, pitcher, or in a flight of four 4-ounce pours. Among the beers on tap right now are Huss' flagship brew, the Scottsdale Blonde, along with newcomers to the family like Papago Blueberry Wheat and Rio Salado Mexican Lager. 100 E. KITSUNE BREWING COMPANY
In Japanese, kitsune translates to fox, and in Japanese culture, kitsune are seen as a symbol of a good omen. To Kitsune Brewing founder Tyler Smith—who traveled to Japan often while working for Nike in the 2010s—kitsune means all things good vibes, and maybe being smart like a fox, too. After home brewing for years, the University of Arizona graduate launched Kitsune in 2019 to great acclaim before COVID-19 delayed the opening of the formal tasting space. Now open, the full-scale brewery offers approximately a dozen beers on tap that are available for tasting, including a truly unique Kakigori Sour. Inspired by a beloved Japanese shaved iced dessert, this fragrant pastry sour is made with more than 1,000 pounds of blueberries, raspberries, key limes, and vanilla. 3321 E. Bell Road, Phoenix; www.kitsunebrewingco.com
O.H.S.O. BREWERY
Little-known fact: O.H.S.O. stands for Outrageous Home Brewer's Social Outpost, and in addition to its dozens of craft beers on tap and the selection of beers from across Arizona that are available, its Arcadia location offers homebrewers the chance to make a reservation so that they may brew on-site. Additionally, all three of the O.H.S.O. locations across the Northeast Valley offer customizable beer flights, where you can mix and match 3-ounce pours of up to four varietals. 15681 N. Hayden Road, Scottsdale; 10810 N. Tatum Blvd., Paradise Valley; 4900 E. Indian School Road, Phoenix; 8525 N. Central Ave., Phoenix; 335 N. Gilbert Road, Gilbert; www.ohsobrewery.com
ORO BREWING COMPANY
Housed in a historic building that dates back to the early 1900s, this nano brewery won 2022 Brewery of the Year honors from the Arizona Craft Brewer’s Guild and a gold medal at the 2022 Great American Beer Festival for its Café Oro, which is a blonde ale infused with cold-brewed coffee from Village Coffee in Scottsdale.
The taproom primarily features lagers and ales, and has some really stunning seasonal options that rotate every few months. 210 W. Main St., Mesa; www.orobrewing.com
PEDAL HAUS BREWERY
Known for its locally made craft beers like Day Drinker Light Lager, German-style pilsner, traditional Kolsch, and amber ale, Pedal Haus is a regular medalist at both the Great American Beer Festival and the World Beer Cup, and was named Best Brewery in the U.S. by Copa Cervezas de América. Its cycle-themed architecture and interior are by design, as the founder is as fond of biking as he is of brews. 730 S. Mill Ave., Tempe; 214 E. Roosevelt St., Phoenix; 95 W. Boston St., Chandler; www.pedalhausbrewery.com
PHX BEER CO.
PHX Beer Co. currently has 16 craft beers available at its Scottsdale restaurant and Downtown taproom, including the Desert Grifter Hefeweizen, which is ultra-approachable in its flavor, offering subtle notes of clove, bubblegum, and banana, and a dry finish. There are some excellent flight combinations here as well, with the most popular being 5-ounce pours of the Iron Horse Porter, Monsoon IPA, Sunset Sour, and White Chocolate beer, which arrive on a custom-made wooden block. 8300 N. Hayden Road, Scottsdale; 3002 E. Washington St., Phoenix; www.phxbeerco.com
UNCLE BEAR’S BREWERY
This family-owned brewery, which now has two locations, is named after the beloved black lab mix who belonged to the founders. It features 20 taps at any given time. Beer flights are offered on a board shaped like a dog bone and feature 4-ounce pours of five craft brews of your choosing. Those who love pups will love the Debo's Sour DBL IPA, which is named for the master brewer’s dog. Locations in Scottsdale, Paradise Valley, Mesa, Gilbert, and Queen Creek; www.unclebearsaz.com
