Dining Delight The Valley has been making its mark on the national dining scene with innovative restaurants, and both celebrity and James Beard chefs have been opening locales. Last month saw a new milestone—the restaurant that had been the world’s first certified sustainable sushi destination, Bamboo Sushi, opened a location in Arizona at Biltmore Fashion Park. Aiming to set a new standard in the industry, Bamboo Sushi takes a deep dive into sustainability across the board, from the food it serves to the materials used in its design and build. The atmosphere here is modern and sleek, with a hint of sexy. The menu, while rooted in the art of traditional Japanese sushi, expands beyond classic dishes into signature rolls, vegetarian and vegan options, as well as Japanese-inspired small plates. Craveable menu items include the Miso-Cured Black Cod, Snake River Farms Wagyu Burger, and Salmon Skin Salad. Of course, some guests choose the Omakase option, leaving the menu up to the chef. SWEET TREAT The historically hip Hotel Valley Ho— known for its mid-century modern architecture and Hollywood celebrity legacy—is also home to restaurant ZuZu and its iconic “Show Stopper” Shake. The shake, which has its own trending hashtag (#zuzushowstoppershake), is recreated each month by LeCordon Bleu-trained Pastry Chef Clarissa Robinson. This month’s shake—the Tea Time “Show Stopper” Shake, is inspired by St. Patrick’s day. Its green tea and mint milkshake base is topped with mini chocolate chips, Lucky Charm crumble, a chocolate eclair ice cream bar, and a house-made crème puff. "I wanted to take the classic spring shamrock shake and create an elevated version of it with a twist. SUSHI ROKU DEBUTS THIS CBD-INFUSED DRINK.

One of the hottest trends right now is CBD. The newest place it’s showing up is in the latest cocktail creation from hot spot Sushi Roku at the W Scottsdale in Old Town Scottsdale. The CBD-infused The Green Fairy—a citrus whiskey cocktail with hints of mint and a rhubarb finish—is made with bourbon, absinthe, rhubarb, lime, mint, and the CBD oil by CBDFx. Derived from hemp plants, CBDFx does not contain THC or

have psychoactive effects. “CBD oil has a variety of therapeutic benefits, including a subtle, relaxing effect on the body, similar to meditating,” notes the description. MERCBAR After opening the original MercBar on Mercer Street in the SoHo neighborhood of New York City, Phoenix native John McDonald first brought the concept to Phoenix’s Camelback Corridor in 1996. Over the years, it was frequented by well-heeled residents and celebrities alike, including Michael Jordan and Charles Barkley. In late 2019, the space went through a floor-to-ceiling $1 million renovation, reopening in 2020 with a new look and menu, but still all of its iconic swagger. While keeping its charm and wit, the 3,000 square-foot space has been glammed-up. Luxurious fabrics, materials and surfaces create a seductive lounge, with a warmly glowing buzzy bar where you can grab classic cocktails. There’s also a 700-square-foot private event space nicknamed the Copper Room, newly outfitted with antique black steel and glass hope doors and curtains for full privacy. The remodel was designed by famed New York design firm Meyer Davis to be a warm, upscale living room for cocktails and conversations. In late 2019, Flint by Baltaire exploded onto the Phoenix food scene at the Esplanade, right next door to MercBar, in fact. The wood-fired restaurant features a stunning open indoor-outdoor layout with midcentury furnishings and brass detailing where guests can unwind and enjoy lunch, dinner or cocktails. But they didn’t stop there. Recently, the venue debuted the second half of the concept, Upstairs at Flint, an ultra-sexy rooftop lounge with sweeping city and mountain views designed with bold black and white accents, and an almost art deco design reminiscent of the Prohibition Era. To further create an ambiance true to the Roaring Twenties, Upstairs at Flint dawns a mural showcasing a mysterious pair of eyes that evokes a sense of exclusive secrecy, a nodding tribute to the great speakeasy culture of the time period. The lounge menu is exquisite, pairing chef-crafted bar bites and premium cocktails under the stars.

A swanky mash-up of a gastropub and cocktail lounge with rich woods, antique novels and candelabras throughout, The Beverly is equal parts Beverly Hills and Old Town Scottsdale. Nestled along the art gallery-lined Main Street in Old Town Scottsdale, the food menu offers shareable items and upscale salads, sandwiches, flatbreads and sliders, but the cocktail program is where The Beverly shines with its signature and classic options, as well as “Flexin’ Cocktails,” libations with ultra-premium and limited edition spirits ranging from $50 to $500. Yes, really. These cocktails include Deflowered, a dizzyingly delicious combination of Hardy Rosebud Cognac, lavender syrup, Peychaud’s Bitters, AZ Sunshine Bitters and a rinse of La Clandestine Absinthe ($450), and Ultimate Side Chick, with Hennessy Paradis Imperial Cognac, Grand Marnier Cuvée du Centenaire, fresh lemon and orange peel ($500).

LITTLE RITUALS

There are million dollar views, and then there are the views from Onyx at Four Seasons Resort Scottsdale at Troon North, which are priceless. Located at the base of Pinnacle Peak Mountain and looking southward from North Scottsdale so the entire city is within view, this indoor-outdoor second-floor lounge has the service and sophistication one would expect from the Four Seasons brand, yet a personality all its own. Dark, dreamy and romantic both indoors and out, inside the centerpiece of the lounge is its actual bar, which is custom-made out of a single mesquite tree bursting with amber-ribbons of color. Outside on the 1,000-square-foot elevated patio, there are unobstructed desert and city views as far as the eye can see, and live music on weekends. Barrel-aged spirits and locally sourced cocktails are always on the menu, as well as small plates ranging from oysters on the half shell and Hamachi crudo to brisket burgers and flatbreads.

Open just a year, Little Rituals has already been nominated for 2019 Best New Cocktail Bar on the West Coast by Tales of the Cocktail. And while the honor is impressive, what is perhaps even more striking is the bar itself, tucked into the fourth floor of the Residence Inn/ Courtyard by Marriott Downtown Phoenix. But make no mistake— this is not a typical hotel lounge. On one side of the seating is a bird’s-eye view of the buzzing city below, and on the other is a mural showcasing a who’s who/what’s what of Arizona landmarks, politicians and pop culture references. Further upping the wow factor: a liquid co2 glass chiller, nano-filtered ice cubes, and a cocktail menu divided into six categories ranging from cooling to indulgent. It also features a rather unique emphasis on fortified and aromatized wines, such as vermouth and sherry. The cocktail menu is complemented by a 10-item small bites menu designed by Bitter & Twisted Chef Bob Tam, as well as spirit-infused baked goods and sweets by Lauren Klein, Little Rituals’ in-house pastry chef.

The Thirsty Camel Lounge at The Phoenician reopened in fall 2017 following a gloriously triumphant redesign. Think that’s just hyperbole? The renovated lounge with floor-to-ceiling windows showcasing the entire property and Valley beyond was so impressive that it was named a 2019 World’s Best Hotel Bar by Forbes Travel Guide, just one of 44 to receive the honor across the globe. his year marks the 100th anniversary of the start of Prohibition, the era in American history when it was illegal to sell, manufacture or publicly enjoy beer, wine, spirits or cocktails of any kind, save for “medicinal” purposes. As a result, this era also marked the rise of speakeasies, which were more or less super-secret bars of varying shapes and sizes. And though the United States ended Prohibition in 1933, the nation’s love of at least a semi-secret bar remained intact. Today, in fact, there are several bars in the Valley that take great pride in making guests work to find them. Here are some of our favorites.

HULA’s Captain’s Cabin At HULA’s Modern Tiki in central Phoenix, there is a funky porthole on an exterior wall. Given the island vibe of the space, it fits right in. But, if one looks at it a bit closer, it is clear it is no mere decorative porthole. Instead, it is the location of a secret door to the Captain’s Cabin, the bar-within-a-bar inside HULA’s, open Thurs.- Sun. from 6 p.m. until close. Inside, the lounge has a vintage sailing vibe throughout and specializes in “Uku Nui” cocktails, a Hawaiian term that roughly translates to premium options. They also offer a bevy of rum

Pigtails In 2018, The Whining Pig—previously a small beer and wine bar with locations in more urban neighborhoods—opened a massive location at Desert Ridge Marketplace. Turns out they needed all that room because there was more than just a The Whining Pig inside. If you pass the main bar, which is still limited to beer, wine and bites, and head down the dark hallway past the bathrooms, there is a entirely separate bar entrance with no signage to be found. Upon sitting, you’ve found Pigtails. Dark with a full wall of greenery and succulents, an expansive bar and low booths, here you will find both traditional and more exotic drink options that incorporate barrelaged whiskies, house-infused spirits, and even “desert after the rain”scented mist. Straight Up Whiskey Bar So, there’s a telephone booth randomly sitting just off the main lobby at Hotel Adeline in Scottsdale. While fun to see when taking a break from staring at one’s smartphone, in 2020 it’s not exactly necessary hotel equipment. Or is it? Upon second look, there is an inconspicuous door that appears to be connected to the booth. Said door is actually the clandestine entrance to Straight Up Whiskey Bar, a secret bar that requires a password to enter (ask the front desk nicely and then use the phone booth to whisper said word for entry). Coup de Grâce In early 2020, Josephine opened next door to the similarly new Cambria Hotel in Downtown Phoenix. Housed in a former bungalow over 100 years old, the restaurant has a little something extra out back. Tucked away behind Josephine is Coup de Grâce, a dark cocktail bar lit by a red neon glow and covered in risqué art and murals. The intimate space is open later than the restaurant (midnight, most days of the week), and offers molecular twists on classic cocktails with a focus on whiskey and absinthe. 218 E. Grey Hen This Arcadia concept offers a fictionalized world based on a famed bootlegger during Prohibition and actually includes three separate experiences inside. The Platform 18 concept is a replica of a 1926 Presidential Pullman train car, complete with 16 “windows” that take guests on a journey through snowy Colorado terrain thanks to modern technology, with cocktails from the era served along the way. The second area is Century Grand, a Gatsby-esque art deco dining room with both food and drink. And then there’s the the third concept: Grey Hen. Tucked away toward the back, Grey Hen is a period-themed whiskey bar and retail bottle shop with 85 single barrels of whiskey from across the United States, as well as 500 different whiskies available for purchase. And, it is quickly becoming the “inthe-know” place to meet master distillers and sample some of the most unique whiskey offerings in town. 3626 E. UnderTow Undertow is a tiki-inspired, subterranean cocktail bar from the team at Barter & Shake Creative Hospitality, who also own Century Grand

(and Grey Hen) next door. The ultra-intimate space is located under Sip Coffee & Beer Arcadia in a re-imagined oil change bay, and is designed to whisk guests away on a journey in the belly of a spice trader’s turn-of-the-century Clipper ship. Through commissioned artists, Undertow’s signature décor revolves around the adventures of the revered Captain Mallory. Similarly, the menu follows the journey, moving both the story forward and displaying cocktails all in line with the chapter’s theme. Honor Amongst Thieves Hidden atop Stock & Stable on 7th Street in Central Phoenix, and with no discernable entrance (look for an exit sign once up the back stairs of the building to access it), Honor Amongst Thieves is a stylish, dark and striking cocktail lounge that tempts with an extensive list of handcrafted drinks that honor the classics, as well as small bites—and ample privacy. 5538 N. 7th St., Phoenix; www.honoraz.com

The Little Woody This gem attracts the “who who” in town. No, that is not a typo. It’s a hint on how to find the Arcadia bar as it’s housed in a sign-less, nondescript maroon building next to Camelback Flower Shop on Indian School Road and 42nd Street. Look for the little owl in the window. In fact, the bar relies almost entirely on word-of-mouth business. Lucky for The Little Woody, its cocktail program, combined with its dark-yet-welcoming, cabin-like ambiance (and games!), always has people talking. 4228 E. The USS Arizona Memorial Gardens at Salt River honors the brave US forces who were aboard the USS Arizona during the attack on Pearl Harbor, December 7, 1941. As a nation, we are forever indebted to those who serve and give their lives for our freedom and we are proud to honor them and share their stories in these gardens. Located just west of Salt River Fields, the Memorial Gardens includes a piece of the original boathouse from the USS Arizona that stood at Pearl Harbor for 10 years prior to building the memorial that stands at Pearl Harbor today.
