Dinner With a View

In Downtown Phoenix, guests get a unique bird’s-eye view of the sprawling Valley below at Compass Arizona, the state’s only revolving rooftop restaurant. The unique destination, located atop the Hyatt Regency Phoenix, recently unveiled an entirely new look and feel after a multi-million-dollar makeover—and, has a new face at its helm. Brandon Drummond, now director of operations, pairs his culinary talents and creativity with inspiration from the beauty of the Southwest to offer a revamped lounge menu that spotlights fresh seafood, handcrafted cocktails, and similar elevated fare, as well as new selections at Compass itself. In the lounge, think Buttermilk Fried Quail with wilted greens and jalapeño honey, or a Charcuterie Board boasting the likes of local cheeses, meats, pickles, and jams. At Compass, main-course highlights include the Quick-Cured Duck, served alongside barley mushroom risotto, bok choy, and blackberry demi, and the indulgent Elk Chops, served with a choice of béarnaise, truffle butter, steak sauce, or a merlot or blackberry demi. 122 N. 2nd St., Phoenix; 602.440.3166; www.compassarizona.com

NEW MENU ITEMS AND A NEW LOOK AT MASTRO’S CITY HALL.

New Look, New Options

New chandeliers, lighting, chairs, flooring, furniture, live music area, art, a stunning wine wall display… Scottsdale’s Mastro’s City Hall Steakhouse recently underwent a floor-to-ceiling renovation, giving it a more modern look and feel. The popular destination is still serving the same top-notch steaks, seafood, and cocktails it has always been known for, but in a revamped setting. And, it aims to tempt with nine new cocktails added to the menu and several new dishes. Try the True A5 Kobe Beef, 100% Tajima Cattle, the most exclusive beef in the world; the Strait of Dover True Dover Sole; and the City Hall Wagyu Beef Roll, with avocado and asparagus inside, then nori wrapped, and the outside is topped with Wagyu beef and slightly brûléed. The roll is then garnished with serrano chilies, and finished with a cilantro vinaigrette and ponzu sauce. Complement your meal with the Hibiscus Glow, made with muddled fresh tarragon, Grey Goose le Citron vodka, Italicus, Hibiscus puree, and lemon juice; or the Jet Setter, made with Wild Turkey Longbranch bourbon, Meletti Amaro, and Aperol Lemon garnished with lemon zest. 6991 E. Camelback Road, Scottsdale; 480.941.4700; www.mastrosrestaurants.com

For a long time, Sonoran Brewing Company’s White Chocolate Ale and Root Beer soda have been staples on the Arizona craft beer scene—so when Phoenix Ale Brewery, which produced them, closed its doors last summer, it hit both locals and in-the-know tourists hard. But now, PHX Beer Co. purchased the brewing equipment and today is the exclusive brewer for the popular drinks. “The Sonoran White Chocolate Ale and Root Beer soda have a huge following, and we’re excited to brew it for the craft consumers,” says Adam Wojcik, brewery director for PHX Beer Co. Sonoran White Chocolate Ale is a wheat beer with a delicate aroma and a subtle taste of white chocolate, and is available in 12 oz. cans, draft, and soon to be in 19.2 oz. cans. The Root Beer is flavored with Sonoran Desert honey and is rich and creamy in taste. It is available in draft at select restaurants across the Valley. Along with the Sonoran Brewing beer and soda, PHX Beer Co. has its own line of more than a dozen different craft pints, including its flagship IPA, Arizona Gold, Bird City Lager, and Orange Grove IPA. Try any of the creations at its Brewery & Tap Room, 3002 E. Washington St., Phoenix; 602.275.5049; Scottsdale Restaurant, 8300 N. Hayden Road, Scottsdale; 480.571.8645; or at its new location at Phoenix Sky Harbor International Airport, Terminal 3, North Concourse, 3241 E. Sky Harbor Blvd., Phoenix. www.phxbeerco.com

DESTINATION

Delicious The Valley sees its share of James Beard Award nominations BY ALISON BAILIN BATZ

CHEF CHARLEEN BADMAN

PHXWM_200400_Features.indd 18

3/19/20 3:20 PM

T

here was a time when those interested in epicurean experiences while visiting the Valley likely focused on finding great guacamole and top shelf margaritas. And while the region surely still boasts both, Greater Phoenix has come into its own as a food city far beyond this more stereotypical regional fare. Case in point: Charleen Badman of FnB took home the 2019 James Beard Award for Best Chef: Southwest. This year, FnB is not only up for another honor, but the Scottsdale hot spot is joined by over a dozen other gourmand greats across the Valley of the Sun, each named among the 2020 James Beard Foundation semifinalists (winners will be announced during summer). Here is a sampling of the semifinalists, and the talent your taste buds are in for when visiting them.

FnB

Her name may be Badman, but don’t get it twisted: she is an amazing woman, not to mention one of the most talented chefs in the country. The flavor she infuses into FnB’s primarily vegetable-focused dishes is truly unlike any other culinary experience in the state. There’s both a global feel to it, with bold Asian and Indian spices, and cuttingedge cooking and plating techniques, but also a wholly authentically local vibe, especially given all of the homegrown ingredients she uses. A member of the Arizona Herb Association, nicknamed the Herbies, and an avid gardener, Badman uses both her own garden’s herbs and vegetables, as well as those from local markets and farmers across the state. www.fnbrestaurant.com

Co-owner and Chef Chrysa Robertson uses local ingredients to pay homage to the smells and tastes of everywhere from the Southwest and Mexico to the Mediterranean. A true culinary icon, Robertson got her start working under Carol Steele—widely known as the godmother of the local culinary scene—for nine years. In 1990, she moved to Los Angeles to work under James Beard Award winner Nancy Silverton at the acclaimed Campanile, and then made her way to Napa to work with Hiro Sone, also a James Beard Award winner, at Terra. By 1993, Robertson was ready to open her own concept, so moved back to the Valley and made it happen. Beyond innovating Arizona cuisine for nearly 30 years, in 1998 she also started the Phoenix chapter of Slow Food. www.ranchopinot.com

LITTLE RITUALS

Recognized for its outstanding bar program by the James Beard Foundation, at first look, Little Rituals may seem a surprising choice. But though it’s tucked into the fourth floor of the shared Residence Inn/Courtyard by Marriott Downtown Phoenix, it is in no way a stereotypical hotel bar. On one side of the seating is a bird’s-eye view of the buzzing city below, and on the other, a mural showcasing a who’s who of Arizona landmarks, politicians and pop culture references. Further upping the wow factor: a liquid CO2 glass chiller, nanofiltered ice cubes, and a cocktail menu divided into clever categories ranging from cooling to indulgent. www.littleritualsbar.com

A DRINK AT LITTLE RITUALS

VECINA

The newest kid on the block, Vecina, only opened in September 2019 yet is already causing quite a stir. The kitchen is led by past-Cooking Channel Taco Wars champion and 2019 Arizona Taco Festival People’s Choice award winner James Fox, who brings his experience from Zinc Bistro, Southern Rail, Buck & Rider, and The Mission. He delights in dreaming up modern American restaurant dishes with clever Latin twists for his constantly changing menu, and has quite the imagination when it comes to tacos. Most have to be tasted to be believed. Insider tip: Order anything that touts vegetables, chilies or peppers, as Fox is a magician with them. www.vecinaphx.com

TALAVERA

Talavera at Four Seasons Resort Scottsdale is a love letter from James Beard darling Samantha Sanz to contemporary Spanish flavors. Her passion for food began as a child in her native Mexico, where she would run through the kitchen of her family’s restaurant, tasting along the way. After culinary school, she worked her way up with positions at both Elements and Virtù Honest Craft. At only 27, Sanz took the helm at Talavera, dreaming up ways to make the most mouthwatering renditions of paella, dry-aged steak, jamón ibérico, and a selection of tapas. Many first visit Talavera for the nearly incomparable view the locale offers, but the sparkling city lights in the distance are dim compared to the fireworks Sanz creates through her culinary genius. www.talaverarestaurant.com

PRIME STEAK CONCEPTS

There are few names bigger in Arizona food than the Mastro family. Through Prime Steak Concepts, James Beard: Best Restaurateur semifinalists father Dennis and sons Mike and Jeff are the visionaries

behind Steak 44, Ocean 44 and Dominick’s Steakhouse. They are, of course, also the original founders of all of the Mastro concepts, and even owned the Maloney’s bars across Arizona back in the day. At Steak 44, expect cutting-edge cocktails and some of the choicest cuts of meat in the United States. Ocean 44 takes the same approach to quality, but with an eye toward redefining the seafood experience for Arizona residents and guests. And Dominick’s Steakhouse is the gold standard in service, both redefining the modern American steakhouse while honoring the best in steakhouse tradition. www.steak44.com; www.ocean44.com; www.dominickssteakouse.com Congratulations to all of the 2020 James Beard Award semifinalists, which also include Super Chunk Sweets & Treats, Pizzeria Bianco, Tratto, Nobuo at Teeter House, Citizen Public House, Shinbay Omakase Room, The Breadfruit & Rum Bar, and Barrio Café Gran Reserva.

There is only one AAA Five Diamond and Forbes Five Star restaurant in the state of Arizona: Kai at the Sheraton Grand at Wild

Horse Pass. In homage to the native peoples for which the restaurant is inspired, Kai is named for the Pima word for seed. True to its name, the awe-inspiring restaurant is rooted firmly in celebrating the essences of the Pima and Maricopa tribes using locally farmed ingredients from the Gila River Indian Community. Though there is an à la carte option, opt for one of the indulgent tasting menus—offered as seven or 13 courses, with optional wine pairings—from chef Ryan Swanson, a true kitchen wizard who apprenticed under James Beard Award winner Vincent Guerithault at Vincent on Camelback, and who is also known for helping open the acclaimed Chef’s Club at the St. Regis in Aspen. www.wildhorsepass.com

Spaaaaah DAY

Valley spas provide so much more than simply spectacular treatments

BY ALISON BAILIN BATZ

F

rom massages and facials to scrubs and wraps, there is a seemingly unending list of treatments from which to choose at the Valley’s leading spas. But, beyond cutting-edge services—ranging from tarot card readings and sound healing to acupuncture and meditation—several spas also offer something above and beyond: expansive spaces to relax and rejuvenate alone, with friends, and—in some cases—with a spouse or loved one. The Spa at CIVANA Wellness Resort & Spa in Carefree, for example, offers couples eager to enjoy a spa experience together several coed options. One of the newest spas in the Valley, this two-story, 22,000square-foot location centers around the theme of “healing through water,” and features a communal area of hydrotherapy immersions—called the Aqua Vitality Circuit—that includes a European-designed Kneipp hot/cold wading pool, therapeutic soaking pool, a cold deluge shower, and the five-climate KLAFS SANARIUM. Beyond the actual spa, however, the entire resort is set up as a wellness center

22

and restorative escape, often one that can be enjoyed together. There is a full menu of daily programming throughout the resort that draws upon varied disciplines and techniques, including fitness, culinary, and personal and spiritual growth, with everything from spirit animal workshops to aerial yoga classes. Similarly, 33,000-square-foot The Spa at the Boulders in Carefree provides so much to see and do, it can easily take up a full day or even a weekend. With sweeping views of the awe-inspiring 12-million-yearold boulder formations nearby, the facility incorporates the elements of feng shui and a Zen-like ambiance, while staying true to the natural environs and Native American influences of the region. All guests can enjoy the yoga studio, steam room, sauna and O’furo, which is a Japanese bath, as well as a coed outdoor pool and Jacuzzi. The facility also offers the Sun Suite, a 700-square-foot space tailormade for girlfriend getaways with a private whirlpool, terrace, fireplace and steam shower; indoor and outdoor

massage tables; and more. The custom-built, 31,000-square-foot Joya Spa at the Omni Scottsdale Resort & Spa at Montelucia in Scottsdale is another stunner. The only Hamman-inspired spa in the region, it not only features treatment rooms named for different Moroccan dances, monkey vines throughout imported from Costa Rica, and naturopathic services by a board certified naturopathic physician, but its bathing ritual circuit—which is not coed and therefore clothing-optional— dates back to ancient Rome. Beyond that, the coed Joya Spa Terrance, which features a pool, cabanas, and a dining area on the rooftop, just completed a refresh. About 18 months ago, The Phoenician also completed a refresh, its biggest in the storied resort’s 30-year history. As part of the multi-year, multi-million dollar project, The Phoenician Spa in Scottsdale was completely rebuilt from the ground up into one of the most stunningly beautiful havens for men and women alike. The now three-story spa features a glamorous rooftop pool with cabanas and full dining

menu, 24 treatment rooms, a massive salon, two relaxation lounges, and both men’s and women’s locker rooms with intricately designed steam rooms, saunas, oversized Jacuzzis, showers, and more. Each space is private yet inviting, and spacious enough for groups to enjoy together. While The Phoenician Spa is essentially brand new, The Spa at Camelback Inn in Scottsdale was built in 1989, then the largest and most comprehensive resort spa in the Southwest, and one of the first in the country to offer a fitness and exercise center, a unique blend of desert-inspired body and massage treatments, lifestyle-enhancing wellness programs, and Scottsdale’s first spa restaurant. As relevant as ever and always being refreshed, today the 32,000-square-foot spa features a heated outdoor lap pool, private poolside cabanas, separate men’s and women’s locker rooms, a massive coed Jacuzzi, a full-service hair and nail salon, a skin care boutique, a retail spa boutique, and one of the best juice bars in the state. The 44,000-square-foot ginormous Well & Being Spa at Fairmont Scottsdale

Princess in Scottsdale certainly has to be on this list as well. It not only has wellappointed locker rooms, a eucalyptus inhalation room, a rooftop pool, cold plunge pools, and indoor-outdoor whirlpools, but also an aromatherapy blending bar where guests can design their own specialty products to take home. For ultra-active visitors, last year the 28,000-square-foot Revive Spa at JW Marriott Desert Ridge Resort & Spa in Phoenix expanded its fitness center to almost 3,500 square feet, adding all new Life Fitness exercise machines, six new Peloton spin bikes, and cardiovascular equipment complete with WiFi capabilities and TV screens. An 870-square-foot movement studio was also added and expanded, and includes a Precor Queenax wall unit with TRX capability. Just outside the fitness center, the spa’s new 600-square-foot yoga lawn, lined with artificial grass, overlooks the resort’s 21,000-square-foot Chef’s Garden, and is able to accommodate group yoga classes in season. Beyond that, there are 41 actual

treatment rooms as well as a sanctuary pool, a bistro, hydrotherapy enclaves, cabanas, a relaxation room, saunas, whirlpools, and more. In the same vein, but wholly unique as well, late last year Alvadora Spa at Royal Palms Resort and Spa in Phoenix debuted a new look and offerings at its 11,000-square-foot locations. As part of it, they welcomed an in-house herbalist to provide custom botanical treatments as well as small-batch, hand-formulated products. The new botanical program and on-site apothecary, led by herbalist Rachel Sloat, utilizes plants, herbs, flowers, roots, berries, and citrus foraged locally, as well as sourced from the Mediterranean. Finally, in addition to spa day space, the AWAY Spa at W Scottsdale breaks convention with night-themed programming. Called Spa After Dark and ideal for groups, bachelorette parties and girls’ night outs, this service lets guests rent out the spa for a night of over-the-top pampering that includes a live DJ, juice-fueled cocktails, and bottomless bubbly, as well as face, beauty, and body treatments.

The ultimate eco-friendly dining experience is waiting at Bamboo Sushi (www.bamboosushi.com) at Biltmore Fashion Park. Everything on the mostly gluten-free menu is sustainably caught, humanely raised, or naturally grown. All the seafood you taste at Bamboo Sushi is farmed and harvested in accordance with guidelines from Seafood Watch and the Marine Stewardship Council. Downtown Phoenix is home to The Breadfruit & Rum Bar (www.thebreadfruit.com), which offers a sustainable take on Jamaican cuisine. Here, pair premium rums with fresh, sustainable seafood. The Breadfruit & Rum Bar serves sustainable seafood and local agricultural products. The restaurant is proud of its zerowaste and recycling programs. For a farm and pasture menu that supports farmers from around the Southwest, stop by Gertrude’s (www.gertrudesrestaurant.net)—just inside the Desert Botanical Garden—for some of the Valley’s best patio dining. Many of the items on the menu come from the garden itself, and the seasonal menu always offers the most sustainable items.

TO BE CONTINUED IS A LUXURY RESALE DESTINATION.

SHOP

Shopping is a big part of the Phoenix experience, and shopping sustainably is a guilt-free way to take home a little part of Arizona. Those looking for sustainable luxury can stop by To Be Continued (www.tbcconsignment.com), a luxury resale store, at The Shops at Hilton Village in Scottsdale. Find everything from that little black Chanel dress or Louis Vuitton handbag to vintage wear that helps you stand out from the crowd. More shopping fun can be found at the four Valley locations of My Sister’s Closet

(www.mysisterscloset.com). Started back in 1991 by two sisters, these stylish shops give you a chance to feel like a teenager, raiding your sister’s closet. Find the best name brands in clothing and shoes, all new-to-you. Looking for something for your home? The sisters also have three Valley locations of My Sister’s Attic (www.mysistersattic. com), which offer a sustainable way to flip your home style by offering consigned home goods. Find a great piece of wall art or home accessories that will help you remember your Phoenix experience every day. Looking for a way to support Phoenix-area artisans? Stop by Practical Art (www.practical-art.com) in the Phoenix Uptown area. Just north of Camelback Road and Central Avenue, Practical Art showcases local artists, with housewares, jewelry and other wearable art, wall art, sculptures, and more. Every fourth Friday is Charity Pie Night, where you can stop, shop, and sample homemade pie. If a lounge chair by a pool and a good book calls to you, the largest sustainable bookstore in the Valley is Bookmans Entertainment Exchange (www.bookmans.com). The first store opened in Tucson more than 40 years ago, and there are now two locations in the Phoenix area—one at 19th Avenue and Northern, and one on Country Club Drive in Mesa. Bookmans offers a creative selection of used books, games, and even musical instruments. Another favorite spot for finding great used books is Changing Hands Bookstore (www.changinghands.com). The original Tempe location is at McClintock Drive, while the Phoenix location is at 3rd and Central avenues. Both locations feature used and new books, gifts, and an ongoing lineup of author events.

There are many eco-friendly ways to enjoy the Arizona sunshine. Desert Botanical Garden (www.dbg.org) in Phoenix gives you a chance to explore what grows best in the desert. Take a hands-on family hike to learn about native flora. Other Garden programs include classes on desert landscaping, gardening, science, and photography. You can explore the majestic Sonoran Desert with your own private guide when you book a tour with 360 Adventures (www.360-adventures.com). Your tour guide will show you the best of the Valley’s urban adventures. There are half- and fullday hikes, as well as hikes that give you a chance to experience the majestic Arizona sunsets. Experience a “Behind the Scenes” tour at Frank Lloyd Wright’s Taliesin West (www.franklloyd wright.org/taliesin-west). This tour of the UNESCO World Heritage Site explores some of the ways that Wright created organic architecture, blending buildings with the environment. Stop by Cosanti (www.cosanti.com) in Paradise Valley to tour a historic site by architect Paolo Soleri. The earth-formed structures that once housed Soleri’s studio now house workshops for creating the famous bronze windbells.
