In a nod to the area’s native heritage, the newest restaurant at Talking Stick Resort is named Tash (pronounced TH-O-SH), which in the O’odham language spoken by members of the Salt River Pima Maricopa Indian Community—who own and operate the resort—translates to sun, day, or time. Stunning in design, the interior features floor-to-ceiling windows that open, and colors that are inspired by the Arizona sunset. Booth, bar, and table seating provide the ideal space to reconnect with friends, while the expansive patio offers spectacular views of Camelback Mountain, or, on some lucky days, the opportunity to spy wild horses running through the Sonoran Desert. Tash has a Fine Spirit (alcoholic) and a Free Spirit (non-alcoholic) menu composed of artisan cocktails, while the eclectic, Mediterranean-inspired dining menu blends multicultural influences to create a regional passport of vibrant flavors that engage the senses. Nestled into Cave Creek is a new restaurant concept created by the minds behind the popular and award-winning Taco Guild in Phoenix. Named Ofrenda—which translates to offering in Spanish and is often used to describe the altars of remembrance—the destination is a feast for all senses. Custom artisan-crafted décor combines with modern touches for an aura reminiscent of luxurious villas in Mexico—including the handkilned stoneware commissioned from Mexico. A focal point of the restaurant is an ofrenda. An intricately designed metal marigold is the cornerstone of the altar, which also includes candles and photos. As for the menu, the Latin-inspired creations include everything from a variety of tacos to Fideo (housemade mesquite gnocchi, lobster tomato broth, lobster, mussels, and crema) to Huarache Nopales (grilled nopales, fried blue corn, black beans, vegan queso, pea tendrils, and huitlacoche). Dine in a Dome For a unique dining experience, reserve a private dome at Scottsdale Quarter’s Culinary Dropout. Available through spring, these private, partially-enclosed geodesic domes are located outside the restaurant. Each dome can seat a private party of two to six guests, and is styled with comfortable seating, desert-chic décor, and ambient lighting. ho says you can’t go home again? These Valley chefs are prov-

ing that there’s no place like home to build one’s epicurean empire. Each of these Arizona natives takes great pride in helping put their home state on the culinary map.

IAN ANDERSON, AHNALA MESQUITE ROOM While attending Barry Goldwater High School, Phoenix native Ian Anderson’s parents suggested he take a culinary arts class “because every respectable adult should know how to cook.” Though he planned on being an architect by that time, he obliged, and that class changed his life. Upon graduating high school, Anderson pivoted from his initial plans for a career in construction and instead took a position at Scottsdale’s Troon Country Club. The organization then sponsored him in pursuing a culinary degree at Scottsdale Community College. Armed with his degree in hand in 2013, Anderson got his start in a formal kitchen setting at The Scottsdale Resort at McCormick Ranch before honing his skills at eateries in California, New York City, and Washington D.C. In 2020, he joined We-Ko-Pa Casino Resort’s Ahnala Mesquite Room on the Fort McDowell Yavapai Nation Reservation, proudly developing fusion-style cuisine using local and regional ingredients. www.wekopacasinoresort.com

Today, Brent Menke is the co-founder and executive chef of The Mick, a modern French brasserie in Scottsdale featuring small plates inspired from regions once part of the French colonial empire (think Creole New Orleans, Africa, India, and Southeast Asia, as well as France itself). But, back in the 1980s, the Paradise Valley native was just another kid at Scottsdale’s Chaparral High School. After graduating from the University of Arizona in 1988, Menke made his way around the world, working as a deckhand a la Below Deck on Bravo. One day, he volunteered to help in the kitchen to cook for the crew, and the rest is history. By 1999, he was studying at the Culinary Institute of America, and then worked as a chef and restaurant partner across the East Coast before coming back home in 2016 to care for his father. While doing so, Menke reconnected with a friend who sold him on the idea of The Mick as a way to share flavors of the world in his hometown. www.themickaz.com

JEREMY PACHECO, GENUINE CONCEPTS Jeremy Pacheco, culinary director for Genuine Concepts, is a ninth generation native of Tucson in Southern Arizona whose first cooking job came courtesy of the Sheraton Hotel in that area in the 1990s. Pacheco ventured up north to Scottsdale after that, graduating from Scottsdale Culinary Institute in 1999, and then beginning his career at The Phoenician resort before gaining celebrity chef status during two different stints in Las Vegas, where he worked at Society Café at Encore Las Vegas and SW Steakhouse at the Wynn. Pacheco returned home in 2010 and took the reins at LON’s at the Hermosa Inn, providing a farm-to-table dining experience for nearly a decade before joining Genuine last year to flex his culinary muscles at the locally owned brand’s Ladera Taverna y Cocina, The Womack, and The Little Woody in Phoenix, as well as at each of The VIG’s five locations across the Valley, and at The McMillan in Flagstaff. Like Pachecho, Wetmore is a Tucson native. A varsity soccer player at Catalina High Magnet School, as well as captain of the men’s volleyball team and the No. 1 ranked golfer at the school, he was always building up an appetite. An avid home chef even as a teen, Wetmore also took part in the school’s culinary arts program, fueling not only his body, but his desire to pursue cooking professionally. After high school, Wetmore attended Scottsdale Culinary Institute, earning his Bachelor of Arts degree in less than three years. His externship took place at the Fairmont Scottsdale Princess, where he had the opportunity to work with some of the country’s great chefs—including Michael Mina and Richard Sandoval—and then he found his home on the culinary team of Spotted Donkey Cantina at the Boulders Resort in 2015, quickly making a name for himself for his tequila pairing dinners at the restaurant, and his wine dinners in its organic garden. www.thebolders.com

CHAD BOLAR, THE PEPPERMILL STEAKHOUSE + COCKTAIL Born and raised in Tempe, Chad Bolar’s first kitchen experiences happened extremely early on, thanks to his mom and the local Tempe Montessori School. After graduating from Tempe’s McClintock High School in 1999, Bolar tested all of his early recipes—often French Creole and Cuban cuisines as a nod to his family’s roots—on his great grandmother, whom he helped care for, as well as fellow students at culinary school, before training at a laundry list of Arizona hot spots including Christopher’s at The Biltmore, The Wrigley Mansion, Pesto’s, Veritas, and The Spotted Pig. After moving into the catering business and traveling the world, in 2019 he made his way back to Tempe to open The Peppermill in his home city with his mixologist wife, Becky. A modern steak concept with clear French and Asian influences, Bolar’s menu changes regularly, and is a blend of fine dining and comfort food, often with pairing options curated by Becky. www.peppermillaz.com

RYAN SWANSON, KAI People are often intimidated when Ryan Swanson tells them he leads the kitchen at Kai, Arizona’s only Forbes Five Star and AAA Five Diamond ultra-fine dining restaurant. However, Swanson is as unpretentious and approachable as they come. His modesty can be credited to his humble upbringing in Ahwatukee, which is just south of Phoenix, where he attended Mountain Pointe High School and fostered his love for cooking between hockey practice and washing dishes at his part-time job. Swanson went on to study at Scottsdale Community College, graduating with honors in 2006, and apprenticed at Vincent’s on Camelback under Chef Vincent Guerithault, one of the few James Beard Award winners in the Southwest. Finding his home at Sheraton Grand at Wild Horse Pass, Swanson worked his way up to his current role at the resort’s acclaimed Kai. In 2020, he moved one step closer to his mentor by being named a James Beard Award semi-finalist as Best Chef in the Southwest for his work in bringing attention to the native foods of Arizona, as well as honoring the Pima and Maricopa people of the Gila River Indian Community through his cuisine. www.wildhorsepass.com

CLINTON LOMAYMA, GUACSTAR KITCHEN AND CANTINA Clinton Lomayma grew up in Fountain Hills and became interested in cooking while attending Fountain Hills High School. He wouldn’t get into the kitchen in earnest, however, until he moved to California in 2015 and earned a job at Bohemian Grove under Robert Mancuso, one of less than 80 Certified Master Chefs in America. Lomayma would also study under Chef Beau MacMillan at Scottsdale’s Elements at Sanctuary Resort, as well as help lead restaurant concepts

at both Copperwynd Resort and Club in Fountain Hills and Trilogy at Verde River Golf Club in Rio Verde. In late 2020, Lomayma took on his biggest epicurean adventure and challenge yet as executive chef of GuacStar Kitchen and Cantina, a new, innovative, plant-based Mexican food eatery in Tempe designed to redefine the plant-based category by creating a dining experience typically associated with that of hip, mainstream restaurants found in New York and Los Angeles. www.guacstar.com

Sip your way through Arizona wines via Scottsdale’s Wine Trail

n the Valley, sweeping vistas of desert dotted with cacti often stretch as far as the eye can see—but in other areas of Arizona, lush, fertile soil and temperate climates provide the perfect destinations for wineries to set down roots. These destinations, primarily found in Northern and Southern Arizona, produce numerous award-winning wines. While a trip to each is always a welcome adventure, many wines can be sampled in the city along the Scottsdale Wine Trail. ARIDUS WINE COMPANY This family-owned winery is located in the heart of Southeastern Arizona. Using grapes sourced from Arizona, New Mexico, and California, winemaker Lisa Strid seeks to capture the tastes of those regions, creating awardwinning wines in its sustainable winery.
