SYDNEY
Feasts and festivities sum up the smorgasbord of things to do in Sydney this September. As the spring sun rears its head and enlivens the city, the landscape and its regional areas come alive with activity, such as the nonstop feast that is the South Coast Food & Wine Festival (page 14), which fi lls the southern town of Berry with seafood, cheese and wine for one not-to-miss weekend. If you can’t make it out of town, the annual Pyrmont Festival (page 46) brings regional foodie goodness closer to home, while Oktoberfest turns The Rocks into one giant party (page 15). But it’s not just the stomach that gets the special treatment. One of the world’s most energetic musicals, “Chicago”, takes over the Capitol Theatre with a starstudded cast (page 10), while Sydney Fringe Festival (page 10) puts the spotlight on emerging artistic talent from near and far. Enjoy your stay!

A: Very close to Manly Beach is a hidden snorkelling spot, Shelly Beach, a 10-minute walk south from Manly Life Saving Club. A: Otto Ristorante in Woolloomooloo has an undeniable reputation as one of Sydney’s most-respected dining institutions. Approachable et refine talian white coat service meets modern Italian al fresco dining! Q: What is your favourite thing to do as the weather gets warmer?
A: The heritage-listed Sydney Cricket Ground is one of the liveliest arenas to watch sport. While
you're in town, look up the games that are being played. There’s Aussie rules, rugby union and rugby league from autumn until September, and cricket during the summer. Q: Which venue has the best rooftop in Sydney?
A: The Glenmore Hotel in he oc s ts roo top under Sydney Harbour Bridge, with views over Sydney Harbour and ne pera ouse is second to none when it comes to elevated outdoor dining and drinking experiences in the city. Q: If you spent a day on a road trip, where would it be?
A: I'd travel to the Hunter Valley wine region. If you've only got a day, head to Bistro Molines for lunch. Their French-style food is cooked expertly, with good wine and excellent service. Enjoy a view of vineyards from the terrace with a semillon and a plate of poached crustaceans while French music plays in the background.

TITUS ANDRONICUS A confronting exploration of power and paranoia. SHAKESPEARE'S BLOODIEST PLAY—and one of the success stories of his early career—gets an update by Australia's premier thespian theatre company, Bell Shakespeare, as they bring “Titus Andronicus” to the stage of Sydney Opera House. The play follows the story of Titus, who returns home from a battleground where 21 children are left dead, with the Queen of Goths, Tamora, and her three sons as prisoners of war. Political intrigue and corruption turn into a gory game of paranoia-fuelled revenge as these rivals descend into a spiral of murder, torture and mutilation, and characters become pawns in this torturous battle of wills. A terrifying tale of two families locked in a violent cycle of chaos and revenge, this grotesquely violent and boldly experimental play is a deep-dive into the most haunting facets of humanity. Until September 27. Sydney Opera House, Bennelong Point, Sydney. bellshakespeare.com.au
GHOST SONATA In this haunting opera, nothing is as it seems. Food is poison. The dead are alive. Paradise is rotten inside. In Opera Australia’s haunting new production of “Ghost Sonata”, nothing is as it seems, and everything conceals a sinister underbelly. This adaptation of Aribert Reimann’s 1984 opera—based on Strindberg’s moody text—follows a student who is bewitched by a woman’s beauty and led unsuspectingly into a stranger’s pernicious plans. At a doomed dinner party, secrets unravel and ugliness is exposed against a backdrop of otherworldly songs. The venue itself is a trip into creative guts of Sydney: down a non-descript set of stairs, behind a blank door, in a cavernous workshop filled with the half-finished props and set-pieces from a hundred different stories that have been created there by Opera Australia.

THROW A STONE in many areas of Sydney and chances are you’ll hit upon a good bar. But there’s a difference between settling in for a lone-ranger beer and a night spent walking the delicate line of romance. Is the music too loud? Or is it pin-drop quiet? Is it too bright? Or does the lighting lean towards the blindness end of the moody spectrum? Whether it’s the first date or the hundredand-ninth, these are the best bars in Sydney to nail down that balance of intimacy and ambience.
MISFITS Misfits is the kind of place that feels like a come-as-you-are local as much as it feels like a special treat. Walk up the relatively obscured stairs from the street and find yourself immediately feeling ten points cooler thanks to a delicate neon glow and a glamorous portrait of 1960s supermodel icon Twiggy looking down at you. Despite this glam aesthetic, a cooler-than-thou attitude is decidedly absent from the bar. Whether you’re leaning towards cocktails or a tinnie, a cheeseburger or smoked duck breast, the menu is a choose-your-own-adventure. And if conversation hits a lull, you can always resort to a game of chess. Just request your pieces from the bar and sit down to the long table, into which boards are integrated. 106 George Street, Redfern. misfitsredfern.com.au

SCOUT If nothing but the best will do for your night of romance, Scout is the obvious choice. This barwithin-a-bar, located on the upper level of The Dolphin Hotel in Surry Hills (another great date bar in its own right), Scout is the brainchild of Matt Whiley, one of the world’s most celebrated bartenders and owner of award-winning London bar Scout. Appealing to a sense of exclusivity, a code is needed to enter the bar, which can either be obtained on the night from the staff at The Dolphin Hotel or sent to you beforehand if you prebook. Behind the scenes, Scout is a bit of a nerd’s laboratory, with Whiley fermenting fruit to make his own wine, distilling his own gin, and sourcing native ingredients to add perfume to house-infused spirits such as strawberry gum vodka. From the visitors’ perspective, however, it’s a seamless experience— one with plenty of dark nooks and crannies in which to enjoy the cocktails and the company. 2/412 Crown Street, Surry Hills. dolphinhotel.com.au/scout

KITTYHAWK The French know how to do romance, and so does Kittyhawk in Sydney CBD. The venue is themed around the Liberation of Paris, the day the city was reclaimed by French and American soldiers during World War II, and the various intimate seating arrangements are organised around walls filled with nostalgic paraphernalia. No two ways about it, the food here is excellent. The menu is filled with Parisian-inspired items designed to share, such as duck liver paté, tuna tartare and steak frites, while the bar is biased towards rum-based cocktails. There is also a lengthy wine list featuring drops from France, Italy and Australia, and a substantial choice of craft beers on offer. 16 Phillip Lane, Sydney. thekittyhawk.com.au
ROCKPOOL Whether you’re grabbing a martini in the stately cocktail bar or settling in for a full foodie journey led by celebrity chef Neil Perry, Rockpool is a must-do Sydney experience. Architecturally, it is one of the city’s most impressive venues, situated within the City Mutual Building, an art deco masterpiece designed in 1936 by Emil Sodersteen. The interiors are dripping in green marble and illuminated by the glow of hundreds of perfectly polished wine glasses hanging upside-down above the bartop. Everything from the wine list to the up-market steakhouse menu is meticulously executed. Nothing here comes cheap, but it will hit the mark for an indulgent night on the town. 66 Hunter Street, Sydney. rockpoolbarandgrill.com.au

Fantasea Cruises
THE SOUTHERN MIGRATION of Humpback whales past the coast of Sydney is currently in full swing as whales make their way back to Antarctic waters until the end of November. There are many whale watching cruises in Sydney that allow you to witness these majestic creatures along their homeward journey. It is most common to see Humpback whales, but sometimes other species such as Southern Right whales make an appearance—and in September, it is not uncommon to see curious whales approach boats, circling them for hours. An experience of a lifetime!
Fantasea offers a range of whale-watching cruises to suit different customer needs, from their popular Circular Quay to Darling Harbour route to the indulgent three-hour WhaleWatching Cruise and Dine package. Knowledgeable crew are on-hand to answer all your whale-related questions on each of these fantastic wildlife adventures. For more great

Nature’s Own Fireworks Australian opal is not only the world’s most fascinating and colourful gemstone, it can also be a sound long-term investment.
28
WHE RE I S E P T E M B E R 201 9
CALLED ‘THE RAINBOW STONE’ by Australia’s Aboriginal people, opal is without doubt one of nature’s most remarkable gifts. It is now recognised as one of the five precious gemstones in the world, along with diamonds, emeralds, rubies and sapphires, and is an excellent investment. While small amounts of opals may be found in other countries such as Ethiopia, Mexico and the USA, Australia produces more than 90 per cent of the world’s supply. The romance of the opal is in the gem’s incredible ability to expose an infinite number of colours, forever moving with the light. Mined in the outback of Australia across three states, it is as much the
call of the outback that lures the opal miner and keeps them going. Scorched landscapes and blazing red sunsets, the night stars from horizon to horizon, this is a hauntingly beautiful country that penetrates one’s soul. The elusive opal was formed millions of years ago when liquid silica filtered down into the faults and fissures of sedimentary rock. When the water content evaporated, tiny spheres of silica remained and over time were solidified. The intensity and combination of colour occur with such variety that each gem has an individual character. In 1964 the CSIRO (Australia’s national research laboratories) unlocked the riddle of why opals have such colours.
T H E R A I N B O W S TO N E :
(Opposite page) Jewellery from Giulians. (Above) Earrings from Opal Minded. (Right) Jewellery designed by Fiona Altmann, Altmann + Cherny. (Top right) Jewellery from Vollé.
The intensity and combination of colour occur with such variety that each gem has an individual character. Opal is composed of minute particles of silica in closely packed spherical aggregates. It is the varying arrangement of these particles (and, of course, cavities) that causes the reflected light to be split into the full range of colours of the spectrum. There are three main production areas in Australia for mining opals. There’s the bright and beautiful Queensland boulder opal which is mined around the Quilpie area in Western Queensland. Lightning Ridge in New South Wales is the home of the famous black opal which derives its name from the colour of the nobbies or pieces of rough opal in which the gems are usually found. The third area is Coober Pedy and Mintabie in South Australia. Coober Pedy is an Aboriginal name, meaning ‘white man in a hole’, which describes exactly what miners still do today: live underground to escape the fierce
heat of summer. This is where the white or milk opals are mined. The value of an opal depends on the amount and brilliance of the colour, preferably being evenly distributed across the face of the polished gem. The greater the spectrum of colours from red to violet, the better, with crimson, reds and orange being rarer than the greens and blues. Milkiness, cloudiness or greyness detract from the value. Ideally, the greater the number of colours, the more prized the gem, and if these are arranged in a block pattern, more value is added. The extremes are pin-sized dots of colour (pinfire) to one large sheet of colour (broadflash) covering the whole stone. The elusive ‘harlequin’ -is the ultimate in this form but is very rare. Shapes of the finished opal vary according to the characteristics
of each stone. Boulder opal is usually cut in baroque or free form, whereas seam opal is at its best presented in cabochon (domed) form. If you are buying an unset opal, it is important to consider the way it will eventually be worn. For example, some opals will offer a better play of colour when worn vertically, as in a brooch or pendant, whereas others are best flat, as in a ring setting. There is a great deal to consider when investing in your opal, but expert advice is available for your complete pleasure and pride in an ever-inspiring piece of jewellery. Above all, buy the opal colour that appeals to you. Enjoy your purchase, knowing it’s geologically millions of years old, but will give you pleasure every day of the year. Opals—truly nature’s own fireworks!

SYDNEY’S ICONIC HARBOUR has pretty much seen it all since Lieutenant James Cook arrived aboard the Endeavour in 1770 and named it Port Jackson. The first settlers set up camp here in 1788 and the harbour has been an important part of city life ever since, used for transportation and recreation. Little wonder it is widely regarded as the greatest leisure harbour in the world. On any given day, the harbour is alive with boats of all shapes and sizes, be it passenger ferries, state-of-the-art yachts or kayakers. This is particularly true during the traditional Boxing Day launch of the Rolex Sydney to Hobart yacht race, when hundreds of craft follow

the racers out of the harbour. And on New Year’s Eve, there’s no better spot to be than on a boat beneath the Sydney Harbour Bridge as breathtaking fireworks displays take place in the skies above. While the Harbour Bridge and Sydney Opera House are its two most famous landmarks, the harbour has plenty more sights up its sleeve. Circular Quay, Luna Park and Anzac Bridge are all accessible and visible from the water along with hundreds of bays, coves, beaches and waterways. Several islands can also be found in the harbour, the most notable being Fort Denison, Shark Island and Cockatoo Island.

Scene Tandem One of King Street’s newest bars is as close as you are likely to get to drinking in a Copenhagen apartment within the cosmopolitan neighbourhood of Newtown. Owner Peter Lynn’s Scandinavian roots infiltrate every aspect of the bar—from the interiors, which are inspired by the Danish concept of “hygge”, referencing a typically cosy setting; to the drinks menu, which is dominated by Aquavit, a botanically heavy, Scandinavian alternative to gin. To date, Tandem is Sydney’s only dedicated Aquavit bar, and it does this title proud. The spirit’s diversity is showcased in a menu that spans everything from tasting flights to Aquavit-spiked mulled wine and an extensive list of cocktails. WHERE IN SYDNEY
The weather is getting warmer, but the full humidity blast of summer has yet to kick in. Which means it's the perfect time to strap on your hiking boots and take in some of the spectacular nature trails that surround Sydney. Here are our favourites. For more great hiking trails around Sydney visit wheretraveller.com
Bundeena to Otford Wildflowers, whalewatching and white-cliff coastlines are all part of the package when doing the 26-kilometre coastal track between Bundeena and Otford in the Royal National Park. Although it's possible to tackle in a day, the rugged beauty to be found along the walk is best appreciated spread over two. Bring supplies and camp overnight in the North Era Campground. Alternatively, the track can be done piecemeal in shorter sections. Royal National Park. nationalparks.nsw.gov.au

Tahmoor Gorge Walk The Tahmoor Gorge Walk—which will take you past the breathtaking Mermaid Pools—is well worth the 75-minute drive from Sydney. Starting from Rockford Road Bridge, there are two options. The first, from the bridge to Mermaid's Pool, will take approximately one-hour one way; alternatively, the Tahmoor Gorge Circuit Track takes 4–6 hours return. While Mermaid Pools is a popular cliffdiving spot, it's highly dangerous and is not recommended. Rockford Road, Tahmoor.
The Grand Canyon Loop The awe-inspiring Grand Canyon Loop near Blackheath in the Blue Mountains will take you past towering sandstone walls, abundant native flora and innumerable waterfalls. Setting out from Evan's Lookout, the lush track takes you through green tunnels of native ferns and wattle trees into the heart of a UNESCO World Heritage-listed landscape. 3–4 hours are recommended for the walk.
