re you feeling the heat yet? Oh yeah! Summer has definitely settled over Wilmington! This month, I plan to dedicate a block of time everyday to a water activity. The beach, pool, waterpark, or even a sprinkler is fine with me. Anything to cool down! If you need to find some activities for the kids on one of these hot summer days, carry a copy of our calendar with you at all times. Wilmington museums, our wonderful community libraries, and a multitude of other locations around town are hosting events all month long! No need to sweat it out, just pop into one of these cool spots for a quick storytelling, craft, and a little air conditioned fun! Every year, Wilmington Parent dedicates our July issue to the very special kids in our area. This year’s Special Kid’s section is full of resources and advice for parents and caregivers. One notable addition to Wilmington, a free community resource library for learning disabilities. This library was created by April Coggins, a Dyslexia Specialist. It has grown through the generous donations by members in our community.

ll the children racing down the sidewalk to their friend’s house, splashing and squealing in neighborhood pools, and late night barbeques and concerts - it must be summer! July is the month when everyone has fully settled into that relaxed summer schedule, and school is still far enough away to be of little concern. One of my favorite celebrations this month is the 4th of July, and nobody does an Independence Day party like Southport! Southport has recently been named the 2015 Happiest Seaside Town in America by Coastal Living Magazine. During the NC 4th of July Festival held July 1st-4th, they are definitely at their happiest! Live concerts keep the atmosphere pumping all day, and the food vendors offer a wide variety of tasty treats. The kids never run out of FREE activities during the festivities. July 1st: Beach Day Youth Activities, Games, and Sand Sculpture Contest July 2nd: Children’s Entertainment featuring - face painting, crafts, song, dance, and more. Sponsored by On Your Toes Dance Studio. July 3rd: Children’s Games for ages 5 and under on Fort Johnstons Garrison Lawn, and ages 6-11 in Waterfront Park. Free T-shirt while supplies last. July 4th: Festival parade starts at 11am. Fireworks at 9pm.

If you plan to do your own fireworks at home to celebrate the 4th of July, make sure everyone is participating in a safe way with these firework safety tips: • Obey all local laws regarding the use of fireworks. • Know your fireworks; read the cautionary labels and performance descriptions before igniting. • A responsible adult SHOULD supervise all firework activities. Never give fireworks to children. • Wear safety glasses when shooting fireworks. • Light one firework at a time and then quickly move away. • Use fireworks OUTDOORS in a clear area; away from buildings and vehicles. • Never relight a “dud” firework. Wait 20 minutes and then soak it in a bucket of water. • Always have a bucket of water and charged water hose nearby. • Never carry fireworks in your POCKET or shoot them into METAL or GLASS containers. • Do not experiment with homemade fireworks. • Dispose of spent fireworks by wetting them down and place in a metal trash can away from any building or combustible materials until the next day. • Report illegal explosives, like M-80s and quarter sticks, to the fire or police department. I love the excitement of colorful explosives in the dark sky, but I’ve also witnessed some scary moments during neighborhood fireworks shows that could have been avoided. Let’s all be safe this 4th of July!

Summertime for me is also a wonderful time to enjoy new experiences. Living in Wilmington, kids don’t always get a chance to see real farm life. When’s the last time your child collected an egg, picked some veggies, and then ate them for dinner? Well, at Greenland Farm’s Children’s Homestead Dinner they can have a chance to experience what “farm to fork” really means. Greenlands Farm has a special family-oriented dinner where you can see how and where our quality food is grown. You can also meet rescued farm animals who teach children many valuable lessons by the role they play on the farm. There are two dates left for this unforgettable event this summer: July 25th & August 29th Jr. Homestead Dinner Schedule Farm Tour 4.00 – 5.00 pm Dinner is Served 5.15 – 6.00 pm Final Gathering & Dessert 6.00 – 6.30 pm Visit www.greenlandsfarmstore.info or call the farm store at 910-253-7934 for more information. v

Trumpette Howdy Bouncy Rubber Cow Lily Nicole & Co is opening a new store in Mayfaire this August, and I’ve discovered that they will be carrying the Howdy Cow! The Howdy Cow is designed to provide young children a fun, bouncy ride while aiding in the development of your child’s physical abilities and coordination. The Howdy Cow is 22 inches long and 18 inches tall from its feet to the tip of the ears. It is made of a safe, super strong, soft material that is latex and phthalate free. Howdy Cow has extra long ears for easy grasping and is just the right height to hone those balancing skills. While there is no set age limit, The Howdy Cow would be a good fit for a child as young as 15 months old. I hesitate to give an upper age limit because honestly, this bouncy ride is tempting for older kids and Howdy has withstood weight over 100 pounds. The more weight on Howdy, the more you have to maintain the air inside, but that is the only effect I have noticed! The Howdy Cow is a good choice for children with special needs who need a fun way to develop coordination and balance skills. Howdy is available in grey, white, fuchsia, cobalt, blue or black. Call 685- 6080 or visit www.lilynicoleandco.com for more information about The Howdy Cow.

Endless Games is always on the cutting edge of games that are fun for the whole family! For ages 3 to 103, Endless Games new game, CRAZY LEGS, is a brand new game that gets players up and moving. Each space on the game board represents a new physical challenge for children and families to jump, twist, shake and exercise their way to victory! This was a fun way for the kids to get out of the summer heat while still doing something active. One of them thought it seemed a bit like Twister, but as they progressed through the moves it was definitely more interesting. Some of the yoga poses were a bit confusing, there are photos on the cards, but no instructions on how to get in the position. It was an easy obstacle to get past, with a little trial and error the kids usually found a position that mostly matched the card. This game was a nice change from the video games and typical board games. Endless Games also has some other great travel games and board games at www.endlessgames.com.

Insect Lore- Mail order Caterpillars

Your kids will be entertained watching the metamorphosis process of caterpillars and you can bring a little of the outdoors inside! The super hands-on and sensory rich Insect Lore’s Live Butterfly Kit arrives with four to five caterpillars and a specialty diet in a plastic, see-through jar. The caterpillars eventually bloom into beautiful Painted Lady butterflies, and kids can watch the entire process happen. Once the caterpillars turn into chrysalis they can be transferred to their mesh seethrough, reusable, pop-up mesh habitat butterfly garden. It’s the perfect DIY kit at home. Watch them grow, then let them go. Also, check out Insect Lore’s Live Ladybug Land! They’re cute, colorful and friendly and so helpful in the garden. Children will love to watch their very own ladybug larvae explore the paths and mountains of the Live Ladybug Land. The larvae will grow and molt several times, pupate and then emerge as adult ladybugs. This is also a great way to incorporate a little science into their summer! www.insectlore.com. v

Apps that Connect Families and Nature By Carolyn Jabs

D

o your children enjoy being outdoors? According to a recent study from the Nature Conservancy, 82% of American parents feel that spending time in nature is “very important” to a child’s development, second only to reading. Despite that sense of priority, 65% of parents in Brazil, China, France and Hong Kong, as well as the US, regard lack of time outdoors as a serious problem. The Children and Nature Network has compiled research connecting what it calls “nature deficit disorder” to attention problems and diminished awareness of the senses as well as physical inactivity and obesity. Ironically, both of these organizations responded to this problem by developing websites. Naturerocks.org, a partnership between the Nature Conservancy and Disney, offers a rich collection of activities that will get kids outdoors to engage with the natural world, as well as an interactive map that points families toward beaches, campgrounds, aquariums and zoos. The Children and Nature Network has a list of nature clubs for families. (childrenandnature.org). Admittedly, going online in order to strengthen your family’s connection with the great outdoors may seem counter-intuitive. Yet, in our wired age, it makes no sense to ignore the many websites and apps that promise to inspire and support a deeper involvement with the world beyond the screen. On the following list, all apps are free and function on both Android and Apple platforms unless otherwise noted.

Where to Go Yes, you can explore the natural world in your own backyard or in the park down the street. But when you have the urge for a bigger adventure, these apps can guide you. NatureFind pinpoints all sorts of places where families can satisfy an appetite for exploration. In addition to nature centers and natural history museums, the website provides descriptions and directions for zoos, botanical gardens and wildlife refuges. A mobile version makes it easy to find activities on the go. (naturefind.com) Oh, Ranger! Parkfinder provides concise information about city, state and national parks. A menu of activities allows you to search for parks where your family can pursue your favorite pastimes from bicycling, boating and birdwatching to camping, caving and climbing. (ohranger.com) All Trails is a source for comprehensive information about 50,000 trails in the US and Canada. In addition to information about level of difficulty and scenery along the way, you’ll have access to comments from other hikers. The basic app is free. For $50 a year, you can get very detailed maps produced in a partnership with National Geographic. (Alltrails.com)

Knowing What You’re Looking At Learning to identify living things is very satisfying, especially for children in elementary school. Many wonderful field guides are available as paid apps, and you may want to invest if your child shows an interest. To test the waters, try these apps that are both free and child-friendly. Merlin Bird App was produced by the scientists at the Cornell Ornithological Lab. The app encourages children to observe carefully and

8 | July 2015 | Wilmington Parent

zero in on a bird’s identity by answering five simple questions about appearance and behavior. (merlin.allaboutbirds.org) TreeBook is an app that includes photos, drawings, descriptions and range maps that will help kids identify the most common trees in North America. (tree-app.com) Mywildflowers.com is a website run by a wildflower enthusiast. A very simple key prompts kids to answer questions about flower color and shape, as well as blooming season, leaf shape and plant size. The National Parks Field Guide is an app crammed with photos that will make it easier to spot the flora and fauna typical of each national park. In addition to wildflowers and trees, the app covers birds, mammals, reptiles and amphibians. (wild.enature.com/apps)

Get Involved A number of apps encourage users to take the next step and become citizen scientists, reporting their observations and taking action to preserve threatened species and habitats. Project NOAH (Networked Organisms and Habitats) encourages wildlife lovers, young and old, to take photos of what they see and upload them to a website. The photos help scientists track wildlife populations. And a global community stands ready to help your child identify unknown plants and animals. (projectnoah.org) Nature’s Notebook takes a different approach to observation. Your family can sign up to record changes in a specific site such as a favorite park or your own backyard. Then use the app to make regular field notes. Specific questions encourage children to notice seasonal changes for plants, birds and other creatures. Those observations become part of a database, which helps scientists track changes in growing season and migration patterns. (usnpn.org) iNaturalist, an app and a website, is the brain child of college students who wanted people to be able to share the photos of the animals, reptiles, birds, insects, and plants that they were already taking. Their ambitious goal is a “living record of life on Earth that scientists and land managers could use to monitor changes in biodiversity, and that anyone could use to learn more about nature.” Younger kids may need help in uploading photos and other information, but they will have the satisfaction of knowing that they are contributing to a massive database that records life on the planet. (inaturalist.org) Of course, none of these apps are ends in themselves. Instead, think of them as bridges that will connect the virtual world in which most kids spend a lot of their time, and the natural world where there are miracles waiting to be discovered. v Carolyn Jabs, M.A., raised three computer savvy kids including one with special needs. She has been writing Growing Up Online for ten years and is working on a book about constructive responses to conflict. Visit www. growing-up-online.com to read other columns.

yslexia is a learning disability that can hinder a person’s ability to read, write, spell, and sometimes speak. Dyslexia is the most common learning disability in children and persists throughout life. The severity of dyslexia can vary from mild to severe. The sooner dyslexia is treated, the more favorable the outcome. In 2013, Wilmington Christian Academy started testing all their kindergarteners for reading struggles with the help of April Coggins, a Dyslexia Specialist and K-8 Tutor. As a parent of a child with learning disabilities, April understands a parent’s struggle with finding accurate information on learning disabilities. “When I went to the library to research and try to figure out what was going on, there were no books available on the topic and the internet was filled with all sorts of treatments and therapies that seemed amazing, but had very little research to back them up. I wanted to learn about research based methods and strategies that have a proven track record of success, so I started creating my own research library.” said April. April has now successfully opened up a community resource library for parents, teachers, or anyone in the community who would like to come in and check out books for free. The books mainly deal with dyslexia or learning disabilities but there are also sample homeschool curriculums, info on ADD & ADHD, Auditory Processing Disorders, Legal Rights, Info on IEPS, Autism and more. It is currently a small collection, but thanks to generous donations of students and parents, it is growing quickly. Items can be checked out and returned during certain hours. This free resource library is located at the tutoring office of Bright Minds Tutoring at, 108 N Kerr Ave, Unit F4. They also accept donations of books for the library. Call Bright Minds Tutoring at (910) 279-7143 for more information about the hours of operation. You can also visit www. BrightMindsTutoringNC.com to learn more about their specialized services. sometimes temporarily reduces autistic symptoms. Broccoli sprout extract and turmeric have shown benefits, along with steroids and other prescription anti-inflammatory medications. Abnormalities in intestinal function have included enlarged lymph tissue, high markers of inflammation, enzyme deficiencies, and elevated bacterial metabolites that directly influence the way the brain behaves. Eating a clean organic diet, providing engineered smoothies for the picky eater, and reducing constipation are common starting points for improving gut health. Just like autism, not all mitochondrial disorders are genetic. Some develop over time and are caused by drug reactions and environmental toxins. There is an interesting confluence between mitochondrial disorders and autistic regression in some kids. We can support the mitochondria with nutrients and dietary changes, such as adding coQ10, levocarnitine, vitamin E and adjusting the diet based on specific mitochondrial function. Early identification and treatment of autism, and its complicating medical conditions, are critical in stopping the inflammation, improving nutritional status, and improving brain growth and development. A complex array of therapies and medical treatments are necessary to reduce autism behaviors and improve outcome and clinical providers must remain on the cutting edge of research to expedite effective treatments. v Dr. Karen H. n this country and around the world there is a growing epidemic of autism spectrum disorder. In fact, diagnoses are approaching greater than 2% of the world’s children. Boys are disproportionately affected and are diagnosed five times more frequently than girls for reasons that are not clear. Amidst the unknown forces behind this epidemic, we know that Autism often occurs at the confluence of genetic vulnerability and environmental insults. Autism is a complex disorder of behaviors that is the manifestation of a proverbial “perfect storm” upon our children. The forces behind this perfect storm include various genetic predispositions, prenatal inflammation that impacts the growing fetal brain, early abnormalities in the developing brain that are due to inflammation, and environmental toxicities. Autism was essentially unknown prior to 1940, so these active forces are modern day phenomena and mostly related to environmental changes and changes in parental health. For these reasons, autism is not necessarily permanent. It’s a fluid disorder that changes with development and age. Normal infant development followed by regression occurs now in 30% of kids later diagnosed with autism. The kids who experience regression, in particular, are highly amenable to treatment and recovery. Autistic individuals have health problems that complicate their condition, including auto immune reactions, intestinal malabsorption, problems with bacterial colonization, mitochondrial disorders, and other deficits in metabolism that compromise cellular repair and DNA regulation. There are many described abnormalities in the immune system, including inflammation, auto antibodies against brain structures, allergies and immune deficiencies. The higher the markers of inflammation in the blood, the more severe the autistic symptoms. Interestingly, high fever

Tips to Make Summer Fun and Educational with In-Home Summer Camp

H

By Alexa Bigwarfe

ave you ever considered making your own at home summer camp for your kids? As a single income family, you may not have the resources to sign your children up for camps and activities over the summer. Or maybe you just prefer to have your own adventures with your children, making memories and learning along the way. If you’re home all summer with your kids and looking for ways to keep them entertained and in learning mode, consider having your own summer camp. Right at home. Tips for implementing a fun, successful in-home summer camp:

Set Goals. What is it that you would like to achieve by the end of the week/ month/summer? Perhaps you and your child want to write a short book or story, run a 5K, learn a language, learn how to play a musical instrument, read a certain number of books. Have a brainstorming session with your kids to determine their interests and incorporate them into your goals.

Use daily themes to guide your activities. Schedule a time for fun activities, physical activities, reading/writing and ways to move towards accomplishing your goals, and pick a day of the week to focus on each of these areas. As an example, your week’s themes could look like this: Make Something Monday: Mondays focus on building with toys or blocks, craft projects, art projects, sewing, writing stories, making new recipes in the kitchen, or anything related to using your brain to create something new. Travel Tuesday - Pick someplace fun to go! Focus on taking adventures to new places, or go to the park, a museum, splash pad, lake, zoo, and so forth. It doesn’t have to be elaborate. You could go to a nearby park and have a scavenger hunt, as an example. Wondering Wednesday - take all those questions your children have been wondering about, and try to find the answers. Make a list of their

biggest questions and curiosities and plan activities to attempt to help them discover the answers. Good activities include scavenger hunts, scouring educational sites, science experiments and so forth. Thankful Thursday - You can use Thankful Thursday to do activities to teach your children about gratitude and giving back. Perhaps visit a homeless shelter, or collect and deliver goods to a place in need. You could coordinate a litter pick up with other families, or visit a nursing home and sing to the residents. Fit Friday - focus the day on physical activities. Take walks and bike rides, go swimming, play tag or catch or other fun outdoor activities. If it’s too hot, do family dance parties (you don’t even have to buy expensive dance games - you can find many fun dance game songs on YouTube.)

Incorporate regular library trips and plenty of reading and writing. Don’t let your child forget everything they’ve learned by not having them read or write over the break. According to the U.S. Department of Education, students lose up to two months of math and reading skills over the summer. Kids should be reading every day for 20-30 minutes. This can be on their own or listening to stories read to them.

Keep a list of “Extras”: Have a list of things that can be done when you can’t think of anything else. You can even put these on slips of paper and store them in a mason jar - “The Bored Jar” for your children to choose from when you’ve run out of activities. These can include online reading or math games, playing a board game with siblings, extra reading or writing, painting or drawing, etc. v Alexa Bigwarfe is a freelance writer and the mother of three young children. She has implemented her own in home summer camp for her kids for two summers running, and is constantly learning new ways to make it more fun.

Additional online resources Scratch : https://scratch.mit.edu/, Scratch is a tool that teaches kids to be creative, reason systematically, and work in a group. The user can program your own interactive stories, games, and animations - and share them with the community online. Scholastic - chock full of activity ideas - covering reading, writing, outdoor activities, math, science, food... you name it. They have pages of free printables as well - great FREE activities by age range to keep your kid busy! Meet me at Midnight by the Smithsonian. If your kids liked the movie Night at the Museum, they are going to LOVE this! This is an animated program that takes you on tours and adventures of museums at night - when all the adventures come alive! Kids.gov - touted as a “safe place to learn and play” has some really cool programs, webcasts, games, activities. Now, I know I’m a little on the geeky side, but when I opened up this site, I couldn’t wait to jump in and start learning.

Muscle Pain Relief Using Supplements By Danielle Villegas

M

uscle soreness from exercise or injury due to microscopic tears in the muscle tissue is a common and frustrating condition. Many people resort to the use of ibuprofen and ice packs to relieve their pain. However, recent studies have shown that the correct combination of vitamin supplements can help you reduce these pains and possibly prevent the pain from developing. Here are a few vitamins that have proven muscle healing properties.

Vitamin C: This vitamin participates in several biochemical reactions in your body, including collagen generation, fatty-acid metabolism, and neurotransmitter creation. • Vitamin C helps with lactic acid removal and reduces recovery time. Increases collagen production. Collagen is the protein that serves as the glue that holds your muscle fibers together. By increasing your Vitamin • • C intake, you increase your collagen production, and the tiny muscle tears will heal faster.

Vitamin E: This is an antioxidant that is found in avocados, asparagus, milk, nuts, and a variety of other foods. This powerful antioxidant protects your cells from lipid free radicals. During strenuous exercise your free radical levels increase dramatically. Regular intake of Vitamin E can protect your muscles from damage and help accelerate the healing of damage that has already occurred. Vitamin D: This vitamin is required for the absorption of calcium for your bones and muscles. Vitamin D deficiency can lead to the weakening of your bones and muscles. This can cause chronic muscle fatigue, soreness, and increase the likelihood of muscle cramps.

Magnesium: This mineral helps avoid muscle spasms, weakness and back pain. Magnesium is found in green leafy vegetables, pumpkin and sunflower seeds, 100% wheat bran cereal and raw spinach. But these foods are a good source only if you eat them raw. Half of the minerals’ benefits are lost when cooked. Normal daily recommended dosage for adult women is 280 to 300 mg per day, taken with meals.

Fish Oil: Due to its omega-3 fatty acids, fish oil has terrific anti-inflammatory properties, which can help reduce muscle pain. Fish Oil reduces the body’s production of inflammatory hormones (prostaglandins), and that can mean less stiffness and soreness.

Supplement Smarts: Check with your doctor before taking these or other supplements. “Like prescription drugs, it’s possible to take too much. And many supplements have side effects,” says David Pisetsky M.D., Ph.D., a professor of immunology at Duke University Medical Center in Durham, N.C. Questions to ask your doctor: 1. What’s the right dosage for me? 2. Should I take it with food? 3. What time of day should I take it? 4. Will this supplement interact badly with my prescriptions? 5. Does it have side effects? v

Virgo Preparatory Academy recently received a $6500 donation from the North Carolina Holiday Flotilla organization. The money will be used to support Project Lead The Way and other science, technology, engineering and mathematics (STEM) curriculum at the school. This is the second year that Virgo has received a STEM donation from the NC Holiday Flotilla through their Corporate Cup STEM Challenge and supporters like CastleBranch, McGladrey, PPD and several other area companies. Plans are also under development to include Virgo students in several of the Flotilla’s annual activities. About Project Lead The Way The purpose of Project Lead The Way is to connect classroom learning to real-world situations. The program, led by Ms. Shemeka Shufford, introduces students to basic engineering concepts and computer programming through a series of fun and simple projects, such as creating rubber band cars to teach kinetic and potential energy. The goal of the program is not to turn students into engineers but rather to foster a curiosity for discovering how things work. Ms. Shufford plans to use the donated money to purchase carpets, beanbag chairs and whiteboards for brainstorming sessions. She also hopes to purchase a three-dimensional printer and materials for studying automation and robotics for the program. Ms. Shufford plans to expand next school year to include an Engineering Club, where students will have the opportunity to participate in community service projects like creating web pages for local churches. About the NC Holiday Flotilla’s Corporate Cup STEM Challenge The North Carolina Holiday Flotilla, widely recognized as a top 20 Southeastern U.S. holiday attraction and one of the area’s largest and most family-friendly events, announced the addition of a major philanthropic initiative, The Corporate Cup STEM Challenge. This new program supports STEM (science, technology, engineering and math) education programs in some of the area’s middle schools as an education and economic development tool. The Corporate Cup STEM Challenge also has benefits for participating companies as a fun team and community building effort. For additional information about the 2015 North Carolina Holiday Flotilla and Corporate Cup STEM Challenge sponsorships, please visit www.NCHolidayFlotilla.org or contact Pres Davenport, Board Chair for the North Carolina Holiday Flotilla, at info@NCHolidayFlotilla. org or (910) 256-2120.

Walking Games for a Family Hike Keep the whining and complaining away during a hike or walk with kids by playing a few distracting walking games. I Spy: It’s no wonder this is a classic travel game, and it works just as well when you are on foot. Make it more challenging by adding rules, such as “natural items only” or “pick something that has a name that shares your initial.” Count Off: Pick something to keep track of, from red cars to dead trees. Make it a contest or collaborate, whichever is more appealing to your crew of walkers. When You Hear ... : Pick a trigger sound, such as a car horn’s honk or a bird’s chirp. Line up in single file and start walking. When you hear the special sound, the first person in the line has to run to the back and become the caboose. Continue until everyone’s had a turn to lead the line. Poetry to Go: Take turns creating a poem-on-the-go. Start the kids off with a simple line like “I really love to take a walk” and have them add their own rhymes in turn (“except when I forget my sock” ... “and then I step upon a rock” ... and so on).

Healthy 4th of July Recipes Though this stunning red, white and blue American flag cake screams “Fourth of July Cake,” This flag cake recipe has a healthy twist, with less saturated fat and calories than traditional versions, by replacing some butter in the yellow sheet cake with oil. Plus, for the cream cheese frosting, use reduced-fat cream cheese and low-fat Greek yogurt instead of full-fat cream cheese and butter. And for decorations use fresh blueberries, strawberries and raspberries dusted with confectioners’ sugar instead of loads of piped-on frosting. INGREDIENTS CAKE 1 1/4 cups granulated sugar 1/3 cup canola oil 4 tbs unsalted butter, at room temperature 4 large eggs, at room temperature 2 cups whole-wheat pastry flour or all-purpose flour 1 cup cake flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 cup buttermilk 2 tsp vanilla extract 1/2 tsp almond extract Zest and juice from 1 lemon

FROSTING & DECORATION 12 oz reduced-fat cream cheese (Neufchâtel), at room temperature 1/2 cup confectioners’ sugar plus 2 tablespoons, divided 3 tbs low-fat plain Greek yogurt 1/2 tsp vanilla extract 1 1/2 cups raspberries 1/2 cup blueberries 2 cups strawberries, sliced

PREPARATION To prepare cake: Preheat oven to 350°F. Line the bottom of a 9-by-13-inch baking pan with parchment paper; coat the paper and sides of the pan with cooking spray. Beat granulated sugar, oil and butter in a large mixing bowl with an electric mixer on medium speed until well combined. Beat in eggs, one at a time, until just incorporated. Whisk whole-wheat (or all-purpose) flour, cake flour, baking powder, baking soda and salt in a medium bowl. Combine buttermilk, lemon zest, lemon juice, 2 teaspoons vanilla and almond extract in a measuring cup. With the mixer on low speed, add the dry ingredients to the mixing bowl alternately with the buttermilk mixture, beating just until incorporated after each addition, scraping down the sides as necessary. Spread the batter in the prepared pan. Bake 28 to 34 minutes. To prepare frosting: Beat cream cheese, 1/2 cup confectioners’ sugar, yogurt and 1/2 teaspoon vanilla in a mixing bowl until smooth. Then decorate with berries! Source: www.eatingwell.com
