Hunter pride will be on the line this month when two of the region’s finest chefs line up against the cream of Sydney’s kitchens for one of the hottest events on the local culinary calendar – the annual Food Fight. This year’s event will see four chefs go head to head to create a classic meal with a modern twist. Responsible for carrying the Hunter’s hopes into the contest will be EXP. Restaurant owner Frank Fawkner and Crowne Plaza Hunter Valley Executive Chef Hamish Watt. We’ll all be hoping to have the hometown advantage when this event takes place on June 18th. Whether it was initially eschewing her heritage to forge her path in new industries or turning winemaking conventions on their head by focussing as much on the packaging as she did on the product, Lisa McGuigan has always done things her own way and with great success. This month we caught up with Lisa to talk about her life, her initial rebellion against the industry she felt pressured to join, and how her career eventually travelled full circle to become entwined in the wine industry. You can read her fascinating story on page 28.
Speaking of legends, this year, for the very first time, the Hunter Valley Legends & Wine Industry Awards - Tourism Legend Award was presented to two Icons of the Hunter Valley, Robert and Sally Molines. Robert and Sally have been delighting diners in the Hunter Valley for over 45 years with their culinary expertise and most recently at their onehatted restaurant Bistro Molines nestled in the vines at Tallavera Grove in Mount View. It is an award that is very much deserved, and we wish the inspiring couple our heartfelt congratulations. See all the winners on page 27. Historically, May and June are the months to celebrate wine and food in the Hunter Valley and this year's Hunter Valley Wine & Food Festival is already in full swing. 2018 Hunter Valley Wine + Food Festival The Hunter Valley Wine & Food Festival is continuing throughout June with so many wine and food experiences still on offer! The festival has something for everyone – from gourmet dinners at award-winning restaurants, vineyard tours, cooking classes and wine tasting experiences to cocktail masterclasses, and relaxing beside an open fire with a glass of wine and a cheese plate with friends. Hands-on Paella Cooking Class
At The Verandah Restaurant 3 + 10 JUNE This month you can get cooking with a hands-on, fun and festive Spanish Paella cooking class with Tim Suffell – owner and Chef of The Verandah Restaurant. The class involves cooking up a storm - and then eating it! On the menu is a 3-course meal starting with Spanish ibérico Jamón with freshly baked Spanish bread. Jamón is very simply, the Spanish word for Ham, with ibérico referring to the breed of pig (generally Black Iberian pig). Bring your appetite – because today’s hero is the Paella!

Paella is a Spanish rice dish that includes different combinations of vegetables and meats, characteristically seasoned with saffron, but also has other spices depending on the recipe and area in Spain it comes from. The Paella is served with “Sangria” – a wine-based punch traditionally consisting of red wine and chopped fruit, which pairs perfectly with the Paella. Dessert is, of course, Spanish Churros with chocolate dipping sauce and the grandefinale of the day's events. Classes start at 9am and conclude at 12.30pm. Peppertree Soap House WORDS Michelle Meehan There’s no better product feedback than a customer returning to buy it again. When that product actually prompts the customer to buy the entire business – well, you know you’re onto a winner. That’s exactly what happened when Kearsley truck driver Linda Hamilton encountered Peppertree Soap House at the Handmade in the Hunter Market two years ago. “I first fell in love with Peppertree Soap House soap after purchasing it from the previous owner Jo, at Handmade in the Hunter Markets in 2016,” she said. “I loved the products so much that my partner Callan and I bought the business in August 2017. “We also own a small transport business, so we drive trucks by day and make soap at night!” Retaining the same recipes used by the former owner but narrowing the range to 14 soap varieties, Linda and Callan have shifted the soap business up a gear by also creating a variety of new products. “We kept the same recipes that Jo had developed, believing if it ain’t broke, don’t fix it,” Linda said. “We did, however, narrow down the range of soaps and have added a few new products, such as bath salts, bath soak and scented wardrobe sachets.

Hometown Advantage for Hunter Valley Chefs Hunter pride will be on the line this month when two of the region’s finest chefs line up against the cream of Sydney’s kitchens for one of the hottest events on the local culinary calendar. WORDS Michelle Meehan
It will be saucepans and whisks at ten paces when the four chefs converge on Crowne Plaza Hunter Valley to battle it out during the ninth annual Hunter Culinary Association Food Fight on Monday, June 18. This year’s event will see the chefs go head to head to create a classic meal with a modern twist, with each taking one lunch course to showcase their own interpretation of a time-honoured dish or flavour combination. Among those responsible for carrying the Hunter’s hopes into the contest will be EXP. Restaurant owner Frank Fawkner. Known for his love of fresh, local produce and his willingness to experiment with seasonal flavours, Frank is one of the bold young chefs taking the region’s culinary experience to new heights. After discovering his love for food in high school, Frank started out as a kitchen hand at Mount Broke Wines’ The Cow Café when he was just 15. Once school was over, he entered into an apprenticeship at the Crowne Plaza Hunter Valley where he worked for three years as part of its launch team before his desire to expand his culinary horizons took him to London, where he scored a job as the chef de partie under Tom Aikens at Tom’s Kitchen.
After a year overseas Frank and his wife Emma returned home to the Hunter where he once again scored a role as chef de partie, this time at the acclaimed Muse Restaurant in Pokolbin under chef Troy RhoadesBrown. During the next three years, he worked his way up to become head chef, along the way helping the restaurant secure a two-hat status in the Sydney Morning Herald’s Good Food Guide. In 2015 Frank left Muse to open his own venture, EXP. Restaurant, at Oakvale Winery, with a focus on creating a dining experience that was delicious, entertaining and interactive. Last year he also launched another passion project, Fawk Foods, producing a range of black garlic products. Joining him on the Food Fight line-up this year is Crowne Plaza Hunter Valley executive chef Hamish Watt. Beginning as an apprentice at Rockpool under renowned chef Neil Perry, Hamish’s career took him to London for ten years where he honed his craft and love of cooking at various restaurants and kitchens, including Pissarro’s on the Thames and Kensington Place. Returning to Australia Hamish took up the executive chef role at the Botanical Garden Restaurant in Sydney, and then opened a restaurant in Surry Hills before a tree change drew him to the Hunter Valley. With both having worked at Crowne Plaza, Frank and Hamish will have somewhat of a home ground advantage for this year’s Food Fight, however the Hunter chefs will need to rely on more than just familiarity with the kitchen when they go up against their Sydney rivals, ACME owner Mitch Orr and Aria head chef Joel Bickford. Mitch has also spent plenty of time honing his skills overseas, with the 2010 Josephine Pignolet Young Chef of the Year Award winner working in some of the world's best kitchens, including the likes of Sepia, Osteria Francescana, Duke Bistro and a pop up at London’s Michelin star restaurant, Lyle's. Joel, on the other hand, was raised in the Blue Mountains but moved to Sydney to pursue his passion for cooking. He has trained under and worked with chefs such as Stefano Manfredi, James Viles, Anthony Mussara and Sean Connelly, and spent time at no less than eight hatted restaurants including The Gantry, Bel Mondo, Eschalot and Biota. If the quality of the chefs isn’t enough to have you snapping up a ticket for the Food Fight, the mouth-watering menu certainly will. The event will open with an offering of four different canapes prepared by apprentices from a number of Hunter restaurants, followed by a four-course meal that includes scampi cocktail, carpaccio parmigiana, lamb roast and strawberry Eton mess. Each course will be matched with a Hunter Valley wine and served up to a crowd of around 350 hungry diners-come-food critics, who will vote for their favourite dish at the conclusion of the lunch. HUNTER WINES The 6th annual Hunter Valley Wine Festival will be the perfect endof-year present for fans of Hunter Valley wines, as the annual event celebrates one of the region’s best-ever vintages. Legendary Hunter Valley vigneron, Bruce Tyrrell, has described the 2018 vintage as being “in the top 5% of the past 50 years of vintages” and the 2018 harvest follows three outstanding years in a row. Wines from over 40 of the Hunter Valley’s best large and boutique wineries will be available for tasting at the Festival, which is being held at the Crowne Plaza Hunter Valley on Saturday, 30 June between 11am and 5pm. In addition to wine tastings, there will be beer and cider tastings throughout the day, as well as high-quality local cuisine and entertainment. A feature of this year’s Festival will be a wine and cheese tasting session hosted by Bruce Tyrrell (at 12.30pm), who will be presenting cheeses from the acclaimed Hunter Valley Cheese Factory matched with wines from one of the Hunter Valley’s most famous vineyards, Tyrrells. After a year in the wilderness the fiery winter warmer, PigSty In July returns to Dashville in 2018, not bigger, but better! Considered the more sinister little sister to the famed Gum Ball, PigSty in July is a reduced capacity, exclusive day out in the bush at Dashville, with an equal measure of decadence and debauchery. A compulsory 'second-hand formal' dress code sets the tone for a laidback day of great live music and comedy, succulent food, top-shelf grog and a few toasty bonfires for good measure. Unfortunately, you'll have to leave the kiddies at home as this one is fully licensed, adults only (+18). This year the oversized outdoor dinner party will run a collaboration with MEET Restaurant, who will provide a succulent multi-course dinner full of their famous Brazilian style BBQ menu, included in the $95 ticket. Along with a complimentary drink on arrival, optional camping and a whole bunch of live entertainment, that all seems like a pretty good deal! Wine and cheese are two of life's great culinary pleasures and have a strong affinity, going back thousands of years. It’s no coincidence therefore that some of the best cheese tasting experiences can be found in some of the finest wine regions in the world. Both are fermented products and require patience, care and moderate temperatures to mature naturally. Perhaps the best method to pair wines with cheeses is to go by the same simple standard that applies to all regional cuisine and wine pairing – and that is location. The connection between the food of a region and the wine therein is a strong one and one that has been created over
While there are no hard and fast rules to wine and cheese matching, the following “rules of thumb” tend to work well: • Match white wines with soft cheeses and those with stronger flavours; • Match red wines with hard cheeses and those with milder flavours; • Fruity, sweet wines and dessert wines work well with a broad range of cheeses and therefore the safest option when presented with a cheese platter; and • The more pungent the cheese, the sweeter the wine should be. Below is a rough guide to the most common cheese and wine pairings. CREAM AND SOFT CHEESES (Brie, Camembert and Ricotta) Because these cheeses can be very rich, they need to be paired with wine that is high in acidity. When it comes to the white wines, Chardonnay is a good bet, as is a Sparkling White Wine, Pinot Gris or a Semillon Sauvignon Blanc. If you must do a red wine with these cheeses, try a Merlot or a Pinot Noir. GOATS CHEESE This cheese can be very tangy, quite salty and have an intense flavour. The tang of the cheese and the saltiness of it requires a high acid white wine as it would clash with red wine or another type of wine. The perfect wine for pairing with goat cheese is Riesling, Chenin Blanc or Sauvignon Blanc. MILD CHEESES (Mozzarella, Monterey Jack and some milder Cheddar) These cheeses have some flavour to them and go well with a variety of wines due to their texture and mild flavour. The best wines to serve with these cheeses are full bodied white wines such as Chardonnay, Sauvignon Blanc, Pinot Grigio and Viognier. If you'd like to match a red wine, make sure you stick to the lighter type of red wines because you don't want the red wine to overpower the cheese.

MEDIUM CHEESES (Cheddar, Colby, Edam, Gouda) A dry white Riesling or even a Pinot Gris are a good match, as well as light and moderate red wines such as Merlot, Pinot Noir, and even Shiraz. PUNGENT CHEESES (Blue Cheese, Parmesan, mature aged Cheddar) These cheeses have very distinct and intense flavours and demand a full, tannic red, such as Cabernet Sauvignon, Shiraz, Cabernet Merlot or Shiraz that will stand up to a strong flavoured cheese. Port is the classic accompaniment to most cheeses and goes particularly well with strongly flavoured ones. SMOKED CHEESE The salty, bacon taste of smoked cheese is so distinctive that it is tough to find a wine that can live up to it, without altering the flavour of the wine. An Australian Shiraz would be the most preferred match here. A sweet dessert wine (Sauternes) will also withstand the smoky taste. These are just a few examples of the hundreds of wonderful pairings between wine and cheese. Over the weekend of June 9 and 10, the small village of Broke Fordwich will come alive with all things low and slow barbequed. 2018 will be the first year of the Smoke in Broke Festival, and the line-up is shaping up to be one of the biggest country BBQ events of it’s kind. Organisers hope
that this event will soon be a much-anticipated event on the annual events calendar – and we cant help but agree! Broke’s McNamara Park will host approximately 30 BBQ teams – all battling it out for over $10,000 in cash and prizes. But you don’t have to be a barbie-connoisseur to be part of all the action - visitors are encouraged to come out and enjoy a weekend of fun activities, food trucks, craft beer, boutique wine and plenty more. Conducted over two days, entry is only $7 at the gate or $6.15 prepurchased online from Eventbrite. Children under 12 are free, and one ticket will get you entry for the entire weekend – so why not visit both days! Saturday’s event schedule includes cooking demonstrations, activities for the kids, market stalls, music from local bands, and a lot of low and slow BBQ. The evening is set to finish with a classic rock/country concert set by Firepits for all to enjoy. In the evening the teams will begin preparing for competition day, and the sweet smell of BBQ will begin to return to the air. Sunday will be a day all about BBQ! Smoke in Broke is one of Australia’s only BBQ competitions that allows spectators to taste the BBQ cooked by the teams, when Sunday visitors are given the opportunity to purchase a tasting plate and sample some of the mouth-watering treats cooked up by contestants (while supplies last!) Plate-tasters will receive two delicious sides and a vote in the people’s choice award. Tasting plates must be purchased to participate in team tastings. Official judging will be carried out by Australian BBQ Association judges, but at the end of each meat turn in, the teams are encouraged to let the public taste their extra meat and garner crowd support. This event is being coordinated by Smokin Hot ‘n Saucy and has the support of Singleton Shire Council and the Broke Wine Region. Food vendors over the weekend will include local brewer Dusty Miner Craft Brewery, Savannah Estate and Catherine Vale Wines, Smokin Hot 'n Saucy (Sydney Meatstock BBQ Champs), Ranga's BBQ, Crafty Street Eats, Good Food Union Burgers, and Whisked Away Pancakes – so bring your tastebuds!

AT GALA EVENT
It was another triumphant evening for the Hunter Valley wine and tourism world late last month when its industry greats came together to celebrate the 12th annual Hunter Valley Legends & Wine Industry Awards. Held at newly renovated Ben Ean, Lindeman’s Estate, the evening paid homage to those who have contributed significantly to the Hunter Valley wine and tourism industries. This year’s highest honour was presented to a wine luminary who has reached ‘Living Legend’ status through more than 30 years’ continuous involvement, and two hospitality greats that have made a significant contribution to wine and tourism in our region. This year, the highly-anticipated Wine Legend award was presented to Greg Walls, who has been a stalwart of the industry for almost
40 years; taking Hunter Valley wines to every region in Australia by providing a central location for local producers to sell their wines. He did this through his establishment of the Hunter Valley Wine Society in 1975, later evolving the business to Wine Selectors, which now delivers Hunter wines to a nationwide membership of more than 200,000. This year, for the very first time, the Tourism Legend Award was presented to two Icons of the Hunter Valley, Robert and Sally Molines. Robert and Sally have been delighting diners in the Hunter Valley for over 45 years with their culinary expertise and most recently at their onehatted restaurant Bistro Molines nestled in the vines at Tallavera Grove in Mount View. The evening was compered by Sally Evans, the daughter of the late Len Evans, and could only be described as a whirl of delicious cuisine, fine wine and bubbling personalities as the industry honoured the passionate contributors who make Australia’s oldest wine region the very special place it is today. Other award winners on the night were: Winemaker of the Year - Stuart Hordern, Brokenwood Wines Viticulturist of the Year - Neil Stevens, Glen Oak Wines Rising Star of the Year - Aaron Mercer, Tamburlaine Wines Cellar Door of the Year - Margan Wines Hunter Valley Wine Industry 2018 Heritage Award - Drayton's Bellevue Wine Label Hunter Valley Wine and Tourism Association Vice President, Brian McGuigan congratulated all the winners, noting their contributions to an industry which had reaped international recognition as a premier wine and food destination because of the hard work of its many passionate custodians. "The Hunter Valley is the oldest and most visited wine region in Australia by overseas tourists, and its incredible wines have found their way into the homes of many others, thanks to the hard work and vision of all our winners," Mr McGuigan said.

The best advice Lisa McGuigan says she has been given in business is to dare to be different and not worry about what other people say. If you take a look at the career of the fourthgeneration Hunter Valley winemaker, it is clear that’s what she’s been doing from the start. Whether it was initially eschewing her heritage to forge her own path in new industries, or turning winemaking conventions on their head by focussing as much on the packaging as she did on the product, Lisa has always done things her own way, with great success. WORDS Michelle Meehan “I never grew up thinking that we were renowned, just hard working. My family has always been passionate and committed to the region and the wine,” Lisa said. “My first memory was at the age of nine tasting wine from tank to tank with my father Brian at Wyndham Estate Winery. From recollection, my first taste was 1976 TR2 white. “But I was always pressured to join the wine industry. In fact, when I left school and enrolled in visual arts, my father sent me to a Swiss hospitality finishing school to knock some sense into me. “After 12 months I had nothing on my mind but the hotel industry that was when I entered my Hotel Management Studies.” For Lisa, who also trained as a chef, hospitality felt like the perfect fit, and not completely outside the parameters of her family’s own experiences. “My mum Fay actually opened one of the first restaurants attached to a winery in the Hunter. My sister, Vanessa and I worked in the kitchen for pocket money every weekend,” she said. “Also, having spent 12 months in Switzerland and starting hotel management studies in a country where everything is about service, I felt like I had found myself.”
Lisa spent the next ten years forging her path in hospitality, working in five-star hotels and restaurants across Australia. But with such strong viticultural roots in her blood, it was not surprising that her career eventually became entwined in the wine industry. “I’d worked in five-star for ten years. One of my roles at The Sydney Renaissance Hotel was curating the wine list,” she said. “Over several years seeing all the (wine) labels that came across my desk, I came to the view that there was something missing. “I saw an opportunity for a brand that had all the components that wine must have plus something new… a hot label design. “I started to imagine the ultimate brand coming across my desk. I visualised it all, from the sales rep walking through the door to the price list and portfolio they leave behind. I foresaw everything that I wanted and wasn’t getting. That was how I modelled my first wine brand that I launched in 1996.” That brand was originally called Hermitage Road, although it was later renamed Tempus Two following a ban on the use of the term ‘Hermitage’ outside of its French origins. Lisa produced her first wine in 1997 after leasing a small space in one of the wineries located on Hermitage Road owned by her father’s company McGuigan Wines (which later grew into the publicly listed company known as Australian Vintage Limited). Tempus Two was always destined to be a bold venture, from the striking pewter and copper labels hand-applied to every bottle, to Lisa’s vision to create a bespoke $12 million cellar door and winery for the brand, complete with its own amphitheatre. “I wanted something that would make people say ‘wow, what is that?” Lisa said. “Good wines traditionally had conservative looking packaging; at the time people tended to attack wines that looked good too.

I had to take my customers on a journey, making sure they had opportunities to taste the wine so they could realise for themselves that our product didn’t just look great, but tasted great too.
“Tempus Two launched in the UK in its fifth year. That’s when I thought it was time to open a winery and cellar door in the Hunter Valley to be the playground for the brand. “One night I was at a dinner party with my father and Bill Roche was there. He asked me how much money I needed to realise my vision, I told him $12 million, and he wrote me a cheque for $6 million on the spot. It’s amazing to have that vote of confidence.” The cellar door was sold to the Roche Group by AWL in 2009 and in 2015 was renamed Roche Estate. By that time Lisa had moved on from Tempus Two following a change in AVL management, with her next career move seeing her buy two retail wine stores in Sydney, which she renamed Lisa’s Wine Vaults. But that was far from the end of Lisa’s winemaking ventures. In 2011 she launched Lisa McGuigan Wines, once again fusing exceptional quality wine with eye-catching packaging. The wine is produced at a shared winery in the Hunter Valley, however, grapes are sourced from the most reliable and renowned terroir all over Australia and internationally for use in Lisa’s three different collections. The Silver Collection is made up of everyday drinking wines including a Victorian Pinot Grigio, Hunter Valley ‘Wilde Thing’ Semillon and Barossa Shiraz. The Blaec Collection presents wines from across the globe, with a Sauvignon Blanc from the Waipara, New Zealand, Grüner Blanc from Hungary and Silver Moscato from South Australia. The Platinum Collection is the top of the portfolio, representing Lisa’s favourite premium varietals. It includes a Chardonnay, Pinot Gris, two Pinot Noirs and a Maximum Shiraz. Lisa will launch her two newest wines and discuss her thoughts on the region’s 2018 vintage this month as part of the Hunter Valley Wine and Food Festival, appearing at the By the Fireside Winemaker’s Dinner at Hunter Resort on Saturday, June 16. “This year has to be one of my favourite vintages in the Hunter since I started Lisa McGuigan Wines,” Lisa said.

“There are only two wines that I have finished from this vintage, but they are both pretty exciting. Firstly, my wild fermented Semillon, I’m reinvigorating my Semillon style. Not all Wine Glasses are
EQUAL
There are many reasons why wine glasses come in different shapes and sizes, and it is important to understand the characteristics of some basic wine types and the way we taste. Apparently, wines have needs too, and all good wine glasses are shaped in a way that will direct the wine to that part of the mouth where its flavour can be most appreciated. Every wine glass will have a slightly different shape, depending on the type of wine that particular glass is to be used for, but it is the bowl of the glass that serves the most important purpose, and it is here you will find most of the variation in wine glasses. In all types of wine glasses, both red and white, the bowl must be large enough to swirl your wine, opening it up to more air and allowing its aromas to be released. Because sparkling wines are carbonated, sparkling wine glasses (or flutes) are tall and thin and designed to encourage carbonated bubbles to remain active in the glass. If sparkling wine were to be served in a shorter, fatter wine glass, it would be exposed to air more quickly, causing the sparkling wine to go flat. And where would the fun be then? White wine glasses are tulip shaped and are typically medium in size, ranging from 250ml to 420 ml. The bowl of this glass is more U-shaped and upright with the rim tapered inward to a slightly narrower opening directing the white wine's aroma to the nose, greatly enhancing the wine's flavour for the drinker. The complex aromas and flavours of red wine require a glass with a larger surface area to allow the wine to come into contact with more air. Because of this, red wine glasses are slightly larger than white wine glasses and hold up to 450ml. The bowl of red wine glasses also tend to be more full and round with a larger opening to allow the drinker to easily dip their nose into the glass to detect the aroma. A dessert wine glass should be smaller to more easily direct the wine to the back of the mouth - where it is less overpowering. In addition, dessert wines generally have a higher alcohol content, making the small glass perfect for a smaller serving.
