As we move into the back half of autumn, the temperatures are settling into a more comfortable autumn ambience. The leaves may be yellowing and falling from the vines, but there's no time to hibernate in Wine Country, with unique events turning up the heat in the cooler months, like Mega Creatures, A Little Bit of Broke and of course, the annual Steamfest celebration.

The Hunter Valley is a beautiful place to visit at any time of the year, but autumn has that special magical something – a charming collection of quaint, boutique accommodation, mountain and vineyard landscapes complete with numerous hues of brown and red, cooler days and nights, warm open fires, cosy restaurants and cafés serving up heart-warming dishes, welcoming cellar doors and of course the wine. It was 38 years ago that Bob and Maryanne McLeish established McLeish Estate when they planted Semillon and Chardonnay on their 16-hectare property on De Beyers Road in Pokolbin. In the years since, the winery has developed a global reputation of excellence, and with their daughter Jessica now at the helm and steering the family business into a bright future.

With Jessica's focus on enhancing the tasting

experience for visitors, there are now several different wine-tasting experiences on offer at the Cellar Door, with an expanded range of Hunter Valley produce that customers can purchase, creating their own packs and tasting boards. Picnics, barbeques, helicopter rides, fireside chats, history and education, are all available as part of the suite of cellar door experiences. Read more on page 12.

Enduring Family Heritage Fuels Lifelong Passion

It was 38 years ago that Robert (Bob) and Maryanne McLeish established McLeish Estate when they planted Semillon and Chardonnay on their 16-hectare property on DeBeyers Road, Pokolbin, in the Hunter Valley. Their incredibly successful story continues today, with their daughter Jessica now at the helm and steering the family business into a bright future.

The great family tale, with a definite Scottish flavour, began when Bob's father emigrated from Kilmarnock, south of Glasgow, Scotland when he was just a boy. The family settled in Sydney and maintained their Scottish traditions, with Bob learning the bagpipes from a young age and becoming a gifted piper and teacher of the instrument. This Scottish heritage is important to the family, and celebrating their culture has since become central to the estate's image, branding and events.

Bob began his working life as an engineer and first-grade rugby union player. He spent a lot of time in Adelaide and discovered that the wine was better than the beer in South Australia. Along with his Newcastleborn partner, Maryanne, the two developed a passion for wine and an interest in the industry. With the plan of a quieter life and being closer to Maryanne's family, they purchased the current property in 1985. They learned the industry from the ground up, working alongside Noel Martin as the Vineyard Manager. By 1990 the cellar door was opened, and their reputation as winemakers of exceptional wines was well on the way to being established.

In the years since, the winery has developed a global reputation of excellence, winning the prestigious trophy for one of the World's Best Semillons three times, in 2012, 2013 and 2016. The single vineyard winery produces quality and varietal purity that has seen it awarded over 300 accolades with over 60 Trophies, 76 Gold, 60 Silver and 80 Bronze since its inception. Over the course of 38 years, the vineyard expanded the range to six varietals, including Semillon, Verdelho and Chardonnay, along with Merlot, Cabernet Sauvignon and Shiraz, whilst evolving into an undisputed international leader for Hunter Valley Semillon.

In 2020, Bob decided to retire and felt that the business was in very capable hands with his daughter Jessica who grew up working in the vineyard and has been part of the business all her life.

"I have a wonderful relationship with Dad, who lives on the property," said Jessica.

"I see him most mornings, and because we're a family business, it makes sense to use him as a sounding board. We often catch up over coffee or wine. He's got all that historical knowledge and helps with the long-term visioning for the business and ideas for the winery."

"Growing up in the Hunter Valley, through the 90s on a mixed farm (cattle, vineyards, horses, wheat) and working with my Mum and Dad in the vineyard as a child, seeing them plant and establish a vineyard/cellar door means that this industry is almost second nature to me. I really started getting interested at 17, working at the vineyard before and after school.

"Initially, I followed a path into Human Resources, then took on a stint at Chateau Carsin, a bio-dynamic producer in Rions, south of

Bordeaux, France. When I returned to Australia, I graduated in 2014 with a Masters of Wine Business, then completed the Advanced Wine Assessment Course (AWAC) in South Australia and started judging at wine shows locally, nationally and internationally."

It was her time on the judging circuit that gave Jessica ideas about how to deliver best-practice wine-tasting experiences to the cellar door customers. Jessica felt that the pairing of food and wine enhances the wine-tasting experience and so set out to deliver the highest quality produce to complement the single vineyard wines.

There are now several different wine-tasting experiences on offer at the Cellar Door, with an expanded range of Hunter Valley produce that customers can purchase, creating their own packs and tasting boards. Picnics, barbeques, helicopter rides, fireside chats, history and education, are all available as part of the suite of cellar door experiences.

Developing ways to enhance the wine-tasting experience has led to the establishment of several very popular events, and this year, Jessica is excited to be offering a unique workshop that repurposes what already exists in the vineyards – the canes.

The Wreath and Wine workshop utilises vine cuttings to make your own Christmas wreath and includes wine tasting and grazing plates. Participants learn how to design and construct their own festive vine wreath with renowned Australian designer and creator Naomi Findlay using wreath weaving and decorating techniques. Taking place in winter on 24 June and 1 July, it's a beautiful time in the vineyards as the vines are pruned, and the cuttings repurposed. The workshop will emphasise the use of sustainable and natural materials, and the team will be helping to create a fun, creative and relaxing afternoon with more than a touch of the festive spirit. The cost is $145pp, and you can take home your very own handmade wreath.

The day will begin at 11am, with performances by Maitland Pipes and Drums, and highland dancers and guests are welcome to participate in the traditional caber tossing competition. Attendees will then be treated to a three-course feast paired with current and museum-release wine from McLeish Estate. The cost is $180pp, and early bookings are essential.

It was during Covid that the family took the opportunity to renovate and expand the interior spaces of the Cellar Door. The interior design takes inspiration from a wine oak barrel with exposed brick walls, concrete floors, warm timbers and cosy furnishings creating a rustic and convivial atmosphere. Outdoors visitors can enjoy vineyard views in the seated pergola area with a backdrop of the Brokenback Mountains or take advantage of one of the barbeque areas with an 'Enjoy the Grounds - BBQ & Vineyard Range Tasting' where you enjoy a seated wine tasting experience before being given full access to the grounds and barbeque facilities.

With over 30 wines featured in the cellar door, including the multi award winning World's Best Semillon and iconic aged reds, quality is guaranteed. McLeish Estate specialises in the classic Hunter Valley varietals, all the fruit is handpicked, and the wines produced are single vineyard with the exception of Sauvignon Blanc, which comes from Orange.

The family's commitment to the Hunter Valley and belief in the wines that come from this terroir is evidenced in the hard work that both Bob and Jessica have provided as a part of the Hunter Valley Wine Growers' Association. For over the past decade, Bob has been on the board of the association, and Jessica has worked on a number of committees across marketing and promotion, the Hunter Valley Wine Show and the Hunter Valley Legends Awards.

The absolute highlight of the McLeish Estate annual events calendar is the Hunter Highland Lunch, taking place this year on Saturday, 16 September. Bringing together the best Scottish traditions and local Hunter Valley wine and produce will be a fitting celebration of all things Scottish. F

"It's one of the reasons that we enter the large-scale international awards. Many small producers like us don't bother, but by doing so, we've been able to put the Hunter Valley on the global map – particularly where Semillon is concerned. The Hunter Valley has now become synonymous with Semillon. Of course, we didn't do that on our own, but by entering the international awards and being awarded World's Best Semillon three times, we certainly helped, and we're proud to be able to share that recognition with our local industry."

The biggest challenge for any wine grower in the Hunter Valley is, of course, the weather and how it affects the fruit, and this year has been no different.

"With each new vintage that passes, I just wish I was able to predict what mother nature has in store for us in the Hunter!" said Jessica.

"But I guess that is what makes wine and the wine industry so exciting - how we move through the seasons, and each year tells a different story."

"During La Niña, we had the wettest spring in ten years and cooler and milder conditions into January, so we've had to be extra diligent in our vineyard management. Fortunately, we had a lovely window of 30-degree days to allow for ripening and varietal flavour to develop, and the gap in the weather was the perfect opportunity to hand harvest the estate whites – classic hunter Semillon, Chardonnay and our everyday drinking varietal Verdelho.

"I am very pleased with the flavour of the whites. Leading into February, vintage flipped to being beautifully dry, warm summer days, which produced the perfect seasonal conditions across all red varietals. This year, the Shiraz and Cabernet Sauvignon colour and flavour brightness are exceptional."

All of which sounds very promising for this year's vintage of McLeish Estate wines. Striving for quality, not quantity, the winery maintains its exclusivity and control of the brand by only selling through the cellar door, wine club or at select fine dining restaurants. An Artistic Journey Like No Other

Having been diagnosed with Multiple Sclerosis in 2016, Hunter Valley artist Sally Moffat began her artistic journey as a form of therapy for her fine motor skills.

Sally suffered through a massive ‘MS Flare’ that took out her vision, mobility, balance, speech and cognition all at the same time. Sadly, she also lost the ability to embrace her son. It was this alone that motivated her to find something that would help her to wrap her arms around him again.

Figuring that if she focused on strengthening her fine motor skills first, the rest would follow, Sally embarked on a journey that would see her become one of Australia’s most talented glass artists.

Sally’s journey is far from over, but she feels blessed to now be able to share her passion for Dotalism and Glass Artistry with the world and with the lucky visitors to Wine Country’s Handmade in the Hunter Markets. We caught up with Sally this month, and fair to say – we are completely in love with her work.

HVMAG: Can you tell us how your artworks are created? What materials do you use and why?

Sally: All of my artworks are hand-painted on quality crystal glassware. I use a specialised French glass paint that, once properly cured, allows them to be baked and heat sealed. This process must be done to achieve maximum hardness and become dishwasher safe. The glasses are then washed, buffed, and gift boxed.

How long does it take to paint a piece of glassware?

This depends on the design and intricacy of the pattern I am creating. Most of my artworks are crafted over many days, as several layers of paint are required to produce the three-dimensional textured effect. With 24 hours of curing time between each layer, each piece takes approximately five days to complete.

What is your ‘top-seller’?

My latest collection, The Australian Ghost Gums, is very popular with visitors to the Hunter Valley, and my Duchess Collection is also a favourite with bridal parties.

What do you like most about Handmade in the Hunter Markets? The people, the atmosphere, the location, and the laughter!

Flavours Galore at SABOR DESSERT BAR

Local couple Renata and Fernando Antao have delighted visitors (and a good many locals) with their decadent desserts and tasty treats straight from the kitchens of Sabor Dessert Bar for over ten years. This month we caught up with the dynamic duo to discover how the business has grown and what visitors can expect when they dine at Sabor Dessert Bar.

HVMAG: Hi Renata and Fernando, Can you please tell us a little about yourselves and also when and how you came to be in the Hunter Valley?

Fernando: Renata and I were Sydneysiders that loved holidaying in the Hunter Valley and did so several times a year. When we decided we wanted a tree change from Sydney's hustle and bustle, we couldn't think of anywhere else we'd rather move to. We owned a pizzeria in Sydney before wholesaling our Portuguese chocolate mousse (made with my grandmother's original recipe) throughout greater Sydney and Queensland. So we brought that with us to the Hunter as inspiration for Sabor Dessert Bar, which we opened in 2011. It's been over ten years since we moved to the Hunter, and we've never looked back.

Tell us a little about what's available at Sabor in the Hunter Dessert Bar. What types of delectable delights do you serve up? With over 60 desserts on the menu, we try to accommodate different tastes and dietary requirements. We have Portuguese Tarts and Macarons for something small to have with your coffee, or we have our individually crafted desserts from your old favourites like Chocolate Mud, Lemon Meringue, Mars Bar and Snickers Cheesecakes, ice cream and waffles to more elaborate desserts like our Green Apple Royal, Lychee and Summerberry Cheesecake and Chocolate Mousse Crown (to name a few). All our desserts can also be paired with local wine, dessert wine, cider and much more or with a coffee made your way.

Do you have a favourite dessert? Can you tell us why it is your favourite and what we can expect to taste?

This is where Renata and I differ. When it comes to desserts, Renata prefers a dessert with fruitier flavours, whereas I love chocolate and caramel-based desserts. Renata's favourite is the Gluten-Free Lychee and Summerberry Cheesecake, and my favourite has to be our Flaming Chocolate and Caramel Brownie, both for the flavour and the dessert's theatrics. de Leite (Brazilian style caramel), served with salted caramel ice cream, strawberries and our housemade biscotti, served in a hot skillet. The server then pours whiskey over the hot brownie and sets it alight. Very dramatic!

It must be challenging for diners to choose just one dessert from the menu. Is there a way we can taste a few in one sitting (without sounding greedy!!)?

Yes! We have the SABOR tasting plate and the MEDLEY tasting plate. Both have a selection of 5 mini boutique desserts to savour. The Sabor tasting plate is more chocolate and caramel-based desserts, which includes our Biscoff Mousse, Sticky Date Pudding and Mini Black Forest, and yes, you guessed it, the Medley tasting plate has more of a fruitier selection, including Mini Lemon Meringue, Mini Green Apple and Chocolate Raspberry Dome.

Do you offer diners more savoury items or cater to dietary requirements?

We have a minimal savoury menu (which is still somewhat considered dessert), with plain and ham and swiss cheese croissants, housemade scones with jam and cream, raisin toast and a cheese platter for two. We know there are varying food allergies, and we do our best to cater to all, if not most, with a large selection of gluten-free desserts and a smaller selection of dairy-free, egg-free, vegetarian and vegan desserts. We also have a dedicated kids menu that is as much fun if not more than the adult's with our Oompa Loompa Sundaes and Willy Wonka Waffles –which are topped with smarties, marshmallows and popping candy. We also pride ourselves on having great coffee and teas.

Simple, Seasonal and Soul-Warming PESCARA

specialities. Head Chef Kelvin Foster and partner, Nicole Panetta are experienced restaurateurs who ran DCs in Mosman for over a decade, with five-star reviews and a solid local clientele that were devastated when they closed.

Nicole has Italian heritage and ran Carpaccio in Leichhardt with her father for several years before meeting Kelvin and establishing DCs in Mosman. The restaurant was so popular that during the first covid lockdown, they were forced to hire an additional chef to keep up with demand. Woolworths are currently redeveloping the site on which the restaurant was situated, so they decided to relocate further afield in the Hunter Valley and look for new opportunities.

The new opportunity didn’t take long to manifest when the couple met the new owners of Hermitage Lodge, and Pescara was born. The restaurant serves simple, seasonal and soul-warming Italian food with an emphasis on high-quality local produce.

“We’ve started out with a menu that’s completely true to us - fresh, simple and from the heart. Much like our loved menu at our Mosman restaurant,” says owner Nicole Panetta.

“We knew these dishes worked and that they were popular. We also recognise that others aren’t really using veal so much or Scampi. We also make our Gnocchi in-house, and the results are exceptional!”

Nicole refers to the popularity of the veal dishes on the menu, Impanato - crumbed veal cutlet, topped with rocket, tomatoes and parmesan cheese and Vitello Limone - veal scaloppine and potato in a lemon, caper and leek sauce as well as the Scampi served butterflied and baked then topped with a lemon, garlic and butter sauce. The housemade Gnocchi is pan-fried and served with spicy Calabrese salami, pancetta and spinach. Also worth a mention is the Spaghettini served with Australian Blue-Swimmer Crab meat, chilli, garlic and white wine.

The couple loves their new Hunter Valley lifestyle, finding it more relaxing than Sydney, with more space, less traffic and more cellar doors to build working relationships with. Keep an eye out on their socials for their BYO nights!

Environmentally Friendly Varietals MERCER WINES

Hunter Valley winemaker Aaron Mercer is a leading voice within the Australian Wine sector for sustainability in wine business. In his own words, he is “attempting to save the world, one bottle at a time.”

Alison and Aaron Mercer grew up in the Hunter Valley and attended High School together before setting off on their own paths. Aaron studied Environmental Science at the University of Newcastle while working in Cellar Door at Scarborough Wines, where he continued

scrubbing tanks, learning from local legends and realising the joy of making wine. Together the couple travelled the world, with Aaron learning his craft and continuing his education in winemaking in France, Germany, Canada and California.

Returning from their travel to settle once more in the Hunter Valley with their young family, Aaron became known for his impact on the quality of organic and preservative-free winemaking. In 2020, the couple established their own label – Mercer Wines, dedicated to working with sustainably certified growers, crafting in small batches, using emerging varietals that are better for the environment, such as Tempranillo and Montepulciano and promoting the power of sustainability in all aspects of wine business. Fruit is sourced locally and from higher altitude NSW wine regions like Orange, Hilltops and Tumbarumba.

Soon after launching the new Mercer Limited Release wines, Mercer Wines was awarded Gold at three wine shows - an impressive debut and multiple awards have followed. The 2021 Limited Release Shiraz, Semillon and Montepulciano have been standouts. “These wines are the result of working with local growers from esteemed vineyards who enable us to source the fruit to make classic styles that best represent the Hunter region,” says Aaron.

“The fact we are receiving such great accolades for our first vintages is a testament to the quality of the fruit and perhaps a little winemaking know-how.”

This year's festival is bigger and better than ever; there's a record number of festival offerings with 14 fabulous locations taking part in this multi-venue festival, and many with several great events for you to

Then opt to add a daily festival shuttle service with regular busses circulating both Broke Road and Milbrodale Road, stopping at each location in the festival program.

to Explore This Autumn Hunter Valley Varieties

As the air starts to chill and the days become shorter, it’s time to get cosy and move towards more warming, substantial, robust autumnal fare, and pair this with more substantial, fuller bodies whites and light to mediumbodied reds.

For many, autumn is a favourite time of the year, bringing with it a welcome reprieve from the summer heat and for many of us, the change in season comes with changing preferences in wine and food. It’s that time of year when our wine and food choices can be as varied as the days themselves.

The cooler months are here, but that doesn’t mean you need to stop sipping on a glass of your favourite Rosé. As a fantastic food wine, Rosé can be paired with a wide variety of foods and flavours and handles spices and heat very well – and ideal when paired with Middle Eastern dishes.

Those lighter-style reds you have been enjoying in the warmer weather remain an optimal choice for the cooler moments of autumn; however, now is the time to enjoy your Pinot Noir, Merlot, Sangiovese, Grenache, Cabernet blends and medium-bodied Shiraz at room temperature.

Delivering the amazing flavours of autumn, Pinot Noir has become very popular in Australia as an alternative to some of our famously big bold reds. Lighter in colour, with an aromatic nose and hints of cherry, raspberry and plum flavours balanced by smooth tannins, Australian Pinot Noir is a particularly flavoursome wine and ideal with roasted meats, salmon, and tuna dishes.

Medium-bodied but deceptively light in colour, Grenache is a varietal packed with raspberry, red plum and tobacco aromas. This crowdpleasing wine is excellent alongside cooler weather dishes such as grilled, stewed, or braised beef, veal, pork and chicken.

The typical young Hunter Valley Shiraz is a medium-bodied wine showing red and dark berries, spices and a great deal of tannin. The wines become far more complex and full-bodied with age, yet smooth and

richly flavoured with some earthy tones. The bold flavours give Shiraz the reputation as a very food-friendly wine.

Sangiovese is perfect for autumn sipping. Not only does it offer you flavour satisfaction, but it is the ideal match for the creamier and richer meals that you crave once the cool weather moves in. Like all Italian wines, Sangiovese is well-matched for the flavours of chicken, grilled red meat, lamb, slow-roasted pork, pasta, stews, or well-aged cheese.

Most Chardonnay lovers will drink Chardonnay regardless of the season, but it is the perfect choice for autumn. The style that has emerged today is all about letting the fruit take centre stage, with other elements, such as oak, taking a supportive role. A medium-bodied style is a perfect match for autumn’s classic characteristics. Enjoy with pies, buttery sauces and rich shellfish, risotto, pasta or chicken dishes such as butter chicken curry.

Viognier is another compelling white, with flavours that can include tangerine, peach, mango, honeysuckle and even roses. Enjoy a glass of Viognier with exotic dishes such as orange chicken, turkey with cranberry chutney, or any style of curry with a citrus garnish.

Semillon is proof that autumn is not just about red wines. This Bordeaux-borne grape is often blended with Sauvignon Blanc, giving an otherwise lush, mouth-filling wine a welcome hint of zippiness to make an excellent white pour for those autumn-inspired dishes.

Pinot Gris is another excellent choice for this time of year - it is rich and textural with notes of apple and pear, with just the right amount of spice from some time in oak. This is a great wine for transitioning from dry, crisp whites to something a little more complex and superb with a chicken pie or pork tenderloin.

Of course, Sparkling Wines can be enjoyed at any time of year – not just for celebrations. Prosecco is a fine friend for autumn-centric starters, including frittatas, pies and quiches.

So, if you have a cellar full of summer wines, then it’s time to give them a final send-off and start drinking!

An artists expression of the spectacular landscape surrounding Winmark’s vineyard in Broke, and similarly the wine an expression of the quality of the grapes Winmark can produce. This recently restored 50 year old vineyard is one of the Hunter Valleys most renowned Chardonnay vineyards.

TASTING Elderflower and white peach aromas beckon toward a palate of quince and ripe Meyer Lemon spiced with nutmeg. Fine wine requires reflection and time. Enjoy this classic expression of the site as she engages with you over time.

FOOD MATCH The perfect accompaniment to any seafood or seafood inspired pasta, prawn risotto or roast chicken. Its versatile and luscious so pairs perfectly with so many foods.

CELLARING Cellar for 3 to 5 years.

Hungerford Hill 2022 Classic Gewürztraminer

Estate grown, by our Cellar Door at the beginning of Broke Road in the middle of Pokolbin. Gewürztraminer has a storied and fascinating history in the cultural palate, and is settling in nicely in this off dry style for those looking to nibble and tipple.

TASTING Strong aromas of lychee and rose water. A fruit salad for the senses without the syrup textures or overly sweet flavours. Ripe apples and melon on the palate.

FOOD MATCH Soft shell crab, vegetarian Pad Thai, or some honey chicken.

CELLARING Cellar for 2 to 4 years.

A bouncy young Shiraz harvested early to capture the youth of the Hunter Valley. A blend of two iconic Hunter vineyards, this delicate style can be produced sustainably every year with a focus on purity of fruit and grape tannin rather than age and oak.

TASTING Medium-bodied, ripe boysenberry, juicy sour cherry and peppery finish of good length.
