Aug–Sept Is there anything more heart-warming than snuggling up with a good red on a Winter's night? We think not! It is with this in mind that we give you our annual Big-Red Issue. Australia's red grapes are amongst its greatest assets – after all, who could imagine a world without classic Australian Shiraz? The world's classic premium red grape varieties are all found in abundance in the Hunter Valley, where some of the oldest vines and most prominent names in Australian wine can be found. This month we navigate the red wines of the Hunter Valley and take a tour of the best of the best. Of course, as our climate changes, so do the reds we produce, according to Hungerford Hill Winemaker Bryan Currie, who says the last decade has seen an expansion of Southern European reds like Tempranillo and Graciano that work in these hotter climates. Apart from being an exceptionally good sport for this issue's Big Red cover (that's Bryan on the cover with assistant winemaker Sarah Beilby), it's Bryan's passion for innovative winemaking that has seen Hungerford Hill become one of the most iconic Cellar Door's in the Hunter Valley. WOLLOMBI VALLEY SCULPTURE FESTIVAL WORDS DI VON ESSEN The annual exhibition of the Wollombi Valley Sculpture Festival, Sculpture in the Vineyards, returns to the beautiful Wollombi Valley from 10 to 25 September. The Festival highlights the historic Wollombi Valley's natural beauty and cultural heritage, attracting national and international artists each year. And they're celebrating something extra special this year as it's the Festival's 20-year anniversary! "We are officially the longest-running regional sculpture exhibition in Australia," said Susan Leith-Miller, Festival Director. "This year, we also have some of the finest sculptures we have ever exhibited. From 370 entries, we have selected 156 sculptures to display and sell in seven indoor galleries, two vineyards and many outdoor public spaces throughout the Wollombi Valley," added Susan. This year for the first time, organisers are also offering The Governor's Prize, with the winning Sculpture exhibited in the Sculpture Park at Government House in Macquarie Street Sydney for one year at the conclusion of the Festival. "This prestigious prize is unique to The Wollombi Valley Sculpture Festival and will undoubtedly add valuable provenance to the winning sculpture," said Susan. This year's Festival will also see visitors enjoy several unique experiences including Village Walks and Talk Guided Tours which are back by popular demand. "Our guides are passionate and knowledgeable about Sculpture and the village and will help you fully appreciate the sculptures on display and for sale. Whenever possible, an exhibiting sculptor will give an 'Artist's Talk' to further enhance your tour experience," said Susan. Other experiences include Bushwalking in Wollombi, Art N Sip at Hollybrook and a gravel cycling tour of the Festival. is the colloquial name for the vast, unpopulated, and mainly arid areas that comprise Australia's interior. READ ONLINE It's what inspires Max and gives him the themes for his paintings. The Red Centre is Max's heartland. Max Mannix paints slowly, adding more and more details to his canvas that you see the more closely you study his work. He paints on canvas board and stretch canvas with thirty different coloured oils. "Max uses more colours than any artist I know," says Trevor Richards OAM, owner of Morpeth Gallery for 36 years. "He doesn't premix his colours on his palette. Instead, he uses pure pigment of paint straight to the canvas - hence the vibrancy." Max can't start a new painting until he knows the title of the painting. It comes first before he puts a line or mark on the canvas. With every other artist, the name of the painting comes last. Perhaps this juxtaposition is how Max has a unique way of capturing the characters that inhabit country towns and regions – and the 'blow-ins' who visit them, escaping their busy city lives and careers. His paintings are full of humour, each one depicting country life, 'SACK RACE', OIL ON BOARD-STRETCHED CANVAS whether it be a yarn outside the local shop, a horse race, fishing, or drinking a beer with mates at the pub. You don't get Mannix until you realise that sometimes the figures that line the rails at his bush races and raise their glasses at the bush picnic are all ghosts. Long-Standing Tradition Fused with Contemporary Innovation

The history of Hungerford Hill winery is long and complex. Home to the only two-hatted restaurant in the Hunter Valley, Muse, the quality of the experience for visitors to the cellar door is second to none, backed up by winemaking tradition and innovation led by Chief Winemaker Bryan Currie. Hungerford Hill is tradition fused with innovation at its finest. HISTORY Originally a Hungerford family owned and run cattle farm that spread to the current site of Hunter Valley Gardens and Cypress Lakes Resort, Hungerford Hill was established as a vineyard by accountant and entrepreneur John Parker in 1967. The Australian wine industry was experiencing a renaissance at the time, with many professionals and investors keen to explore the new interest in table wine as an accompaniment to food, with sherry and port becoming less popular.

Parker opened a cellar door in 1970 and developed the first wine tourism complex a couple of years later. By 1985 however, Parker lost control of the business in a hostile takeover, and the winery was purchased by Southcorp, who also acquired vineyards in the Tumbarumba and Hilltops regions to add to the label. Despite this, the brand languished until John Kirby purchased the property in 2002. Under Kirby, the label flourished, and the current iconic cellar door at One Broke Road was built, designed by architect Walter Barda, meant to resemble a wine barrel. The next period saw the brand develop a reputation for premium quality wines, and then, in 2016, Kirby sold to Sam Arnaout of Iris Capital, now the current owner. Arnaout also acquired Sweetwater vineyard and Wyndham Estate in addition to the Dalwood brand. Dalwood was the original name of Wyndham Estate, which is widely recognised as one of the oldest surviving vineyards in Australia, having been established by George Wyndham in 1828. The opportunity to return the Dalwood brand to the property is an acknowledgement of the property's importance to the viticulture history of the country and is a wonderful legacy for Arnaout.

THE WINEMAKER When Arnaout took over at Hungerford Hill, he employed Bryan Currie as Winemaker. Currie had worked at Westend Estate and McWilliams for many years and had spent some time in China, where his wife was working. He was attracted to the role because it was based in NSW and utilised fruit from Tumbarumba. "I'd been working with fruit from this region all my career, and I wanted to continue to do that," said Bryan. "At the same time, I loved the idea that Hungerford Hill had fruit available from several different climates, enabling us to create a full range of wines." Bryan also spent his early career in Southern Italy, which has provided invaluable experience in working with fruit from hotter and drier climates. "The last decade has seen an expansion of Southern European varieties that work in these hotter climates. Our climate is changing, and I'm enjoying experimenting with varieties such as Tempranillo and Graciano. Most of our wines are single vineyard with a concentration of character that shows the terroir and place that it's grown in. It's important to me that the personality of the wine comes from the place, not the winemaker." THE VINEYARDS & WINES Each vineyard provides a unique climate and soil that affects the wines produced. Dalwood Estate's sandy soil and riverbank flats produce lighter style fragrant Shiraz. The Dalwood Estate cellar door was closed when covid hit and hasn't reopened. It has become a venue for hire and is extremely popular for weddings, with the river frontage creating the perfect backdrop. Sweetwater Estate has red clay over limestone and produces a heavier, richer style of wine with more body and depth. It doesn't have a cellar door and has never been open to the public, although private members-only events are held there. The unique beauty of the imposing French Gothic-style dining room, resplendent with original features and overlooking the magnificent Sweetwater Estate and residence, is reminiscent of a European chateau of yesteryear and makes for an exceptional members-only experience. Hungerford Hill has heavier dark clay soil that produces a blacker, denser wine and is home to the iconic cellar door, Muse restaurant and Sculpture Courtyard. Hilltops is a cool climate with granite-based soil and grows Sangiovese, Tempranillo and Malbec. Tumbarumba is a cold climate that produces softer fruit for Pinot Noir and Pinot Meunier.

"We're having a lot of fun creating Spanish-style wine using the early ripening Tempranillo and balancing that out with the late-ripening Graciano from Hilltops. It's a very different wine from our standard with no real oak influence. It's a balanced wine, and combining the two varieties; it works better." "We’re proud to offer a wine for every palate and every occasion with wines from multiple regions – the full NSW experience. In terms of red wine, we’ve got our Classic, Single Vineyard, Epic Shiraz, Heavy Metal and Museum Release. The Heavy Metal is a classic Aussie blend of Shiraz Cabernet - a richer, tannic style of red, and we blend from different vineyards for that one. Our Epic Shiraz is the best red wine of each year. It’s carefully selected and has hailed from Sweetwater for the last three or four years. It’s the best fruit, from the best batch from the best barrels – we really pick the eyes out of it to make it truly special.” In 2020 Bryan began experimenting with creating vegan-friendly wines. “Traditionally, when you’re fining or softening the wine, you use animal proteins like milk or egg white. With the number of people identifying as vegan increasing every year, we decided to create a wine that everyone can enjoy, including vegans. It’s an attempt to increase accessibility. We’ve been experimenting with plant proteins like pea or potato starch. It hasn’t affected the taste of the wine at all, and it’s wonderful to be able to offer a vegan-friendly wine.” “Similarly, we are aware that a lot of people are seeking preservativefree wines because they may have reactions to sulphites. Unlike plant proteins, going preservative-free alters the wine's taste and texture. It’s less fruity, loses intensity and is more textural and savoury. It’s almost a different category of wine altogether, but we’ve been creating preservative-free wines for some time now.” THE FUTURE Hungerford Hill has a strong foothold in the history and traditions of winemaking in the Hunter Valley and NSW as a whole, with world-class, award-winning wines representing the full range of styles and regions. (Continued) “I’m keen to push the envelope,” said Bryan. “What other styles of wine can we make? Some of the greatest wines in the world are often blends, so I’m excited to be experimenting in this area. In addition, we’ve got some impressive changes coming to the site at Hungerford Hill. We’re looking to develop the site so that it is closer in intent to the original design. Like the Opera House, the building at One Broke Road was never fully realised to the architect’s design; they ran out of money at the time. The architect, Walter Barda, had a grander vision which we’re hoping to achieve sometime in the near future.” “To be successful in these challenging times, it’s important to be flexible and to be able to adapt. The Hunter Valley has always been a tricky place to farm, and it’s no different with a vineyard. It can be subtropical in summer and dry and cold in winter. This variability in seasonal climate makes the Hunter Valley wines stand out, and the trick is to be relaxed and not too stressed about it. Our different growing regions, all within NSW, give our wines the character that defines them.”

Currently studying in the Institute of Masters of Wine Study Program (one of only 13 students in the country), he is passionate about his innovative work at Briar Ridge and excited about receiving the recognition. "It is an absolute honour to have our Hunter Valley Albariño be recognised as the best other white in Australia by James Halliday and the Wine Companion Tasting Team," said Alex. Considered a niche variety with less than ten producers in Australia, Albariño is from the Northern part of Spain in an area called Rais Bixas, where it is one of the country's most fashionable white wines. Lovers of Sauvignon Blanc should enjoy Albariño. "It's the melding together of the old and the new that makes Briar Ridge so interesting – it's certainly why I enjoy doing what I do. I have the creative freedom to play and experiment and build upon that tradition, respecting what has been done but also improving it as we move on," said Alex. Owner of Briar Ridge Vineyard, Jaclyn Davis, is excited about the winery's future with Alex as winemaker. "This is a humbling recognition of the work our family and the Briar Ridge team have been putting into experimenting with new varieties and wine styles," said Jaclyn. Or perhaps a good camping spot. Not for experienced pub operator Jason Gavin though. To Jason, it was – in one word – opportunity. "A friend showed me the site, and I liked what I saw. When I heard that Coles was moving into the growing township, it didn't take much more to make me decide to buy the land," said Jason. Fast forward five years, and that paddock has been transformed into a destination pub at the gateway to Hunter Valley Wine Country, close to several growing regional towns and with the new 7,500-home Huntlee

township on its doorstep. It's that centrality, in addition, to the bustling city of Newcastle, that has seen Huntlee Tavern become somewhat of a 'hub-pub' – the Hub of the Hunter to surrounding regional towns too. Big Win For Small Producer Judges at the recent Sydney Royal Wine Show have awarded local wine producer Boydell’s the top gong for Best Small Producer Wine of Show for its 2021 Boydell’s Reserve Chardonnay. A relative newcomer to the wine game, Boydell’s was established by Jane and Daniel Maroulis in 2017, having purchased the stunning Boydell’s property in East Gresford in 2015. Can you please tell us a bit more about your products? My products all share the goal of helping my customers (and their pets) deal with common ailments. For example, my Calendula Salve is a versatile ointment tough enough to take on the most debilitating of skin conditions but also gentle enough for our children and pets; it really is a miracle product that brings relief to so many people. I grow my own Calendula flowers and infuse them into oil, clean my own wax from local apiaries, and then add beautiful ingredients from all over Australia, such as lanolin, coconut oil, apricot kernel oil and tea tree oil. Unlike other calendula products, my unique blend leaves the skin feeling like velvet and with no greasy residue.

We love the name of your stall - how did you come up with it? The name came about as I've worked as a Bush Regenerator for over 15 years, plus my love of all things plants and our beautiful natural bush.

Who are your products created explicitly for? Calendula is for sufferers of a vast range of ailments like eczema, dermatitis, psoriasis, tinea, cold sores, skin grafts, burns, scars, acne, insect bites, hot spots, itchy skin, haemorrhoids, sunburn, cuts – even new tattoos! It's safe to use externally from head to toe as a salve or in soap. Pet Calendula also works exceptionally well for dogs that bite at their feet, grass irritation and allergy, crusty ears and ringworm. For horses, use it for rain scald, greasy heel, ringworm and dandruff. All animals can benefit from this product, and it's also gentle enough for cats. My Beetlejuice Insect Repellent is a unique blend of essential oils added to demineralised water that deters mosquitos, flies, leeches, ticks and bull ants. And it smells like a chai latte, so no chemical fumes or reeking of citronella! For decades, I've been using Calendula for myself, my family and my pets. The world of red wines is an adventurous, rich and wonderful world filled with everything from the subtlety of a big Australian Shiraz or South African Pinotage to the softness of a French Merlot or the truly excellent and exciting Mediterranean varietals of Sangiovese, Dolcetto, Nebbiolo, Barbera, and Tempranillo. Throughout the world, winemakers strive to make the best possible wine from the available resources. In Australia, for many wine aficionados, the quest for the "perfect" Aussie red starts in the Hunter Valley, where grapes have been grown for almost 200 years. The world's classic premium red grape varieties are abundant in the Hunter Valley, where some of the oldest vines and most prominent names in Australian wine can be found. The warm climate, deep friable loam and red duplex soils of the Hunter Valley produce superb examples of Cabernet Sauvignon, Pinot Noir, Shiraz and Mediterranean varieties, including Tempranillo, Sangiovese, Barbera and Nebbiolo, to mention just a few. The Hunter Valley is a mecca for lovers of quality wines renowned for their thoroughly unique, distinctive style and ageing ability. Shiraz is the Hunter's premium red variety. The typical young Hunter Valley Shiraz is a medium-bodied wine showing red and dark berries, spices and a great deal of tannin. However, its real character is seen in wines with longevity. With age, the wines become a far more complex, full-bodied, yet smooth and richly flavoured wine with some earthy tones. Cabernet Sauvignon is the world's most loved red wine and is renowned for its ability to age for decades. These wines can be medium to full-bodied, elegant, aromatic and a rich bouquet with fruity notes of black cherries and currants and herby notes of peppers and olives. Described as "the most romantic of wines,'' Pinot Noir tends to be light to medium in body with a broad range of textures and flavours, including a variety of complex aromas reminiscent of black or red cherry, raspberry, currant and blackberry. While widely considered to produce some of the finest wines in the world, it is also highly reflective of its terroir, with different wine-growing regions often producing very different wines. Originating from Bordeaux in France, Merlot is renowned for its wonderfully fruity, well-rounded, even fleshy character and is grown in just about every wine-growing region of Australia. The summer heat of the Hunter is considered to provide the ideal growing conditions for this versatile grape variety. In recent years, Hunter Valley Merlot has experienced a surge in popularity, with a vibrant bouquet providing one of the most pleasurable wine experiences. Originating in the Rioja region of Spain, where it is often blended with varieties such as Graciano, Grenache and to a lesser extent Cabernet Sauvignon, Tempranillo wine is now being made in many wine regions throughout Australia - including the Hunter Valley. This variety is exciting because it is an easy-drinking, medium to full-bodied wine with lower acidity and full fruit flavours that match well with a wide range of foods. The wine is ruby red in colour, while the aroma and flavours can have plum, cherry, strawberry and herb characteristics. Originally from the Bordeaux region of France, the bold-yet-floral expression of Petit Verdot is something that all red wine enthusiasts should have the opportunity to try. In Australia, Petit Verdot is planted in warmer climates such as the Hunter Valley, resulting in full-bodied wines with concentrated flavours and integrated tannins.

The upfront fruit aromas are of lifted and stewed red fruits of raspberry and cherry. This is supported by floral and herbal nuances of pot pourri and mixed dried herbs. Like Spartacus the gladiator from around 70BC, this wine is rebellious and fresh, with spice and texture. It is full of surprises on the palate and medium in body, with great length and a soft, flavoursome finish. TASTING A medium bodied wine with aromas of ripe raspberries and a hint of spice. This wine has a good depth on the palate, lovely flavours of ripe red berries, and a smooth chocolaty finish.
