There truly is only one word to describe this issue, and that’s sparkling! From Christmas Lights to things that go ‘pop’ – if you’re into celebrating in a shiny way – this is your issue! Those are the kinds of numbers that go into the largest Christmas lights display in the Southern Hemisphere: the annual Christmas Lights Spectacular at Pokolbin’s Hunter Valley Gardens. The Hunter’s favourite celebration of Christmas magic is back this year, bigger, bolder and brighter than ever. The Christmas Lights Spectacular (through to Australia Day in January) really is the event that’s for everyone – there’s a little bit of something that will appeal to the young, the old and everyone in between. Read more on page 20. More sparkles and just a little bit of magic Christmas spirit can be found at this month's Magic Christmas Circus. Featuring the talents of Circus Avalon, the Hunter region’s very own circus company and performed under the ‘little big-top,’ the 90-minute event will feature some

of Australia’s most awarded circus performers, with a magical Christmas twist. Find out more on page 16. Celebrations and sparkling wine simply go together like turkey and stuffing or Christmas pudding and brandy. But not all sparkling wines are Champagne, and not all sparkling wines are made the same way. This month we look at the ins and outs of sparkling wines and present our annual “Sparkling Dozen” – just in time for the silly season! Also this month, a galaxy of stars will converge on the Hunter Valley for the annual golfing spectacular – The Jack. The event will clock up its 41st year on the fairways when the players tee off from 16 – 18 December at the Crowne Plaza Hunter Valley, making it the longest-running celebrity pro-am golf tournament in Australia. As we go to print we have not just a new year but a new decade staring us in the face. So from our families to yours, we wish you a very happy holiday season and a safe and prosperous new decade – starting with 2020.

CHIPPING IN At The Jack Every year The Jack Newton Celebrity Classic or “The Jack” sees 54 professional golfers, 54 celebrities, 54 amateurs and 54 sponsors’ representatives gather together for three days of golf and good times – with a hearty dash of charitable goodwill thrown in as well! The event will clock up its 41 years on the fairways this December when the players tee off from 16–18 December at the Crowne Plaza Hunter Valley, making it the longest-running celebrity pro-am golf tournament in Australia. While Jack himself grew up in Cessnock and has lived in the Hunter for the past 40 years, The Jack had its origins hundreds of kilometres from his home with the inaugural event in December 1979 held on Queensland’s Sunshine Coast – with Jack, the winner of that year’s Australian Open, among the professional golfing contingent invited to take part.

He became a regular on the event line-up, taking out the title in 1980 and becoming more heavily involved along with his wife Jackie in helping it grow. Jack took over the running of the celebrity pro-am that had by that time been re-named in his honour, in 1985. Over the years, thanks to the Newtons, the event has continued to grow in size and reputation, relocating a couple of times before Jack brought the event home to the Hunter in 2006. While the players – celebrities, golfers and sponsors alike – do take the tournament seriously over what are two hotly-contested rounds of golf, there’s also plenty of fun to be had on the course as well as off, with many participants getting into the spirit of things by indulging in fancy dress while they play. The “tradition” has seen the event contested by everyone from Santa Claus, Scooby-Doo and Where’s Wally to superheroes, chap-wearing Cowboys, a bride (in a gorgeous white dress) and Kiss look-a-likes, complete with full wigs and make-up! Over the years the Celebrity Classic, along with separate Corporate Jack events, has raised more than $7 million for the Jack Newton Junior Golf Foundation and various diabetes charities. Both the causes are close to Jack’s heart. His father died from complications related to diabetes, and Jack himself was diagnosed with it a few years after his accident. Furthering the development of junior golfers continues to be one of Jack’s major passions. This year, the line up is huge with Wally Lewis, Shannon Noll, Busby Marou and many other big names. It’s also open to the public, so if you want to come and mix with your favourite stars, this might be a great time to head out to the Crowne Plaza Hunter Valley for lunch. For the past two years Trish Robertson has been pouring all of her spare time into her love of arts and crafts – literally. The talented Bellbird woman is the creator of Tresin Art – a range of stunning resin-coated homewares adding a unique pop of colour to households across the Hunter and beyond thanks to her stall at the Handmade in the Hunter markets. “I have always been interested in arts and crafts and over the years have undertaken a number of types of crafts from knitting, crocheting, cake decorating, patchwork and quilting, and folk art,” she said. “I saw an exhibition of resin art at work and was immediately taken with it and thought I needed to try it. So initially, I started with acrylic pouring and then ordered my first lot of resin. “I went through a very difficult time personally and found that I was able to de-stress by working with resin. I then discovered so many more objects I could work with, and so my art/ hobby grew from there.” Since 2017 Trish has been adding her own colourful touch to a range of products including cheese boards and serving platters, as well as a series of Mandela dotting pieces that she also coats with resin. “Colours and new shapes inspire me; I cannot go into a homewares shop without looking for items that I can put resin on,” she said. “I love experimenting with colours to see what they look like together, and I love how the colours react, as well as the different effects you get from the various types of colourants used in resin.

The best thing about resin is that you can never recreate the same piece twice as each piece is an original.

“I have several favourite pieces and for various reasons, whether they be because I made them for a particular person or because I was able to get the special effect I was looking for. I just love the process of creating and not really knowing what the final result will be.” Trish has been showcasing her work at the Handmade in the Hunter markets for the past 18 months and said she loves talking to all the people who visit the markets, as well as the sense of family spirit that exists amongst the stallholders. You can check out her designs at this month’s markets, which will be held at Kevin Sobels Wines from 9am to 3pm on December 7 and 14, and 9am to 2pm on December 27 to 29.

Twelve months of planning and preparation. Over 20 carefully designed displays. Three million (yes, million) lights. Those are the kinds of numbers that go into the largest Christmas lights display in the Southern Hemisphere: the annual Christmas Lights Spectacular at Pokolbin’s Hunter Valley Gardens. The Hunter’s favourite celebration of Christmas magic is back this year, bigger, bolder and brighter than ever. Unsurprisingly, organising an event like the Christmas Lights Spectacular isn’t just an end-of-year endeavour – it’s a year-round job. The HVG team is constantly thinking ahead, aiming to refine, improve and expand the experience with each year’s event. “Twelve months out, we look at what we want to do, what we want to change, how we want to evolve it into the following year,” explains Charise Foulstone, Event Manager at Hunter Valley Gardens. “Generally, by the middle of the year we have a plan in place, and all the ordering will be done, and then October is usually the final time when [the lights] arrive.” And these aren’t just any lights that can be ordered directly off the market. They’re specifically created for Hunter Valley Gardens after a comprehensive design process mapping out each year’s displays. “It all gets specially made for us,” Charise explains. “We have a plan, we do a drawing, we send our team out to research options and then come up with the right concept for our event.” Of course, once the lights arrive, there’s the business of actually setting them up – which is no mean feat. (Did we mention this year’s lights tally comes to three million?) The team begins the lengthy process of putting up the lights around three months before the Spectacular opens in November each year. “It’s quite detailed, and there are lots of little components to it,” Charise says. “So the team generally start in August, and then we are still literally putting up lights right till the very end, right up until the moment we open.”

While some displays and the general area traversed by visitors remain the same year to year, the event is always evolving. Layouts are changed, and new displays created, so the experience feels fresh for every guest, even those who make a point of return attendance. “Every year we change it so that when you come the next year, you’re not looking at exactly the same setup and exactly the same area where the lights have been,” Charise explains. “Quite a good amount of our time goes into looking at the layout, thinking about how we want to change it for next year, what new and interesting things we think people would like to see.” Several brand-new displays have been created for this year’s Spectacular. For those who fancy a taste of Christmas in the Northern Hemisphere, there’s a new White Christmas scene complete with snow-topped trees, arctic animals and a snow cave worthy of the North Pole. And couples looking to add a little romance to their evening at the Gardens won’t want to miss the new Lover's Corner experience. Take a starry-eyed stroll through a heart-shaped light tunnel, snap a picture with your significant other, and of course, share a kiss under the mistletoe.

We used to have a simple love heart that was a bit of a photo opportunity and was really popular, so now we’ve gone all out and made this brand-new Lover's Corner, which is very exciting. Plus it’s actually in a new area of the Gardens that we haven’t used before.

There are even proposal packages on offer if you’re ready to make it an extra-special holiday season by popping the question amidst the glittering lights! experience than in previous years, pairing the usual sparkling visuals with an even greater sense of all-surrounding magic and wonder.

. We’ve got a giant walk-through snow man, we’ve got a big walk-through castle, lots of brand-new arches… We’ve really tried to make it a lot more interactive this year,

For those who are regular visitors to the Christmas Lights Spectacular and are hoping to revisit previous displays, never fear – all your old favourites will be there. Santa’s Workshop is up and running as usual, with an elves’ photo pod and the opportunity for kids to write a letter to Santa himself (and post it in the nearby North Pole mailbox). Santa photos will also be available until Christmas Eve, and families won’t want to miss a merry DIY snap next to the eight-metre-tall illuminated Christmas tree. Kids can also step straight into a fairytale in the Princess Castle scene, while guests of all ages can take a trip across the globe with the Christmas Around the World display, which incorporates famous landmarks like the Eiffel Tower, Edinburgh Castle, London’s Big Ben, and our very own Sydney Opera House and Harbour Bridge. ‘Hunter’, the enormous light-up teddy bear, was a new addition to the Gardens last year and has returned in 2019 for more prime photo opportunities. Last year’s walk-through Christmas bauble is also back, as giant, gorgeous and glittering as ever. Some other classic displays have made a return this year as well, including the sweetest stop on the path: Candyland. “Everyone loves Candyland! It’s still in the same position, and of course, it gets added to all the time,” Charise says. “Another one is Fairyland – that’s always a huge favourite. And the Twelve Days [of Christmas display] has been

with us for as long as I’ve been here, an incredibly long time. We have that every year because people just love it.” It’s not hard to see why, with the classic carol combining with corresponding light displays to create an irresistibly festive atmosphere. The lights and displays are the main attraction, of course, but there’s plenty of additional entertainment to enjoy. Classic rides like the specially designed traditional Venetian carousel will delight visitors young and old, while the Ferris wheel offers visitors a unique view of the Gardens from 25 metres up. More adventurous thrill-seekers can take flight on the swing chair ride, or grab a mat and careen down the 12-metre-high, 35-metre-long super slide. Mistletoe Méthode Traditionelle Petillant 2014 A blend of Chardonnay and Pinot Noir grapes that were grown in the cool climate Hilltops wine region of South West New South Wales. The juice was barrel fermented and matured for 20 weeks in older French oak barriques, before being disgorged after nearly two years "en tirage". This is a virtually bone dry aperitif style which is perfect for festive season drinking and right through the warmer months. Mistletoe Christmas Cheer Mozcato 2019 This sparkling wine is the same wine as the 2019 Hunter Valley Mozcato but is especially dressed up ready for Christmas and the Festive Season and makes a superb gift. Hello, festive season! Its that time of the year when our wine needs (yes needs) are as diverse as they are intense as we celebrate the warmer weather and make the most of the holiday season. Since the late 1600's Champagne or sparkling wine has been the most prestigious celebratory wine in the world and, as we roll into the festive season, you can be sure that we will soon all be hearing the "popping" of corks as bottles of sparkling wine are opened to celebrate Christmas, the year that was and the new year ahead of us. Celebrations and sparkling wine simply go together – it’s like turkey and stuffing or Christmas pudding and brandy. One cannot be without the other – they simply go hand in hand. But not all sparkling wines are Champagne, and not all sparkling wines are made the same way. First of all, Champagne is a regionally protected name and can only be produced in the Champagne region of France. It can only be produced in one way, and that is in a bottle using natural fermentation known as the Traditional Method (or Méthode Traditionnelle) and using only three grape varieties Chardonnay, Pinot Noir, and Pinot Meunier.

Sparkling wines produced in other regions of France as well as other countries around the world are often referred to by their local name or region, such as Espumante from Portugal, Cava from Spain, or Asti from Italy (the generic Italian term for sparkling wine being Spumante) to name a few. Call it what you like – Sparkling Wine, Prosecco, Cava or Champagne – there's no sweeter music to one’s ears than the sound of the pop of a cork from a bottle of bubbles!

So, what is sparkling wine? When it comes down to it, Sparkling wine is simply wine with significant levels of carbon dioxide in it making it fizzy. The carbon dioxide may result from natural fermentation - either in a bottle, as with the Traditional Method, in a large tank designed to withstand the pressures involved (as in the Charmat process), or as a result of carbon dioxide injection. Sparkling wine is usually white or rosé, but there are many examples of sparkling red wines as well. In Australia, most sparkling wine is produced from Chardonnay and Pinot Noir and is usually white or rosé, but an Australian speciality is the Sparkling Shiraz – a sparkling red wine produced from Shiraz grapes. Young examples are usually refreshing, rich, fruity and juicy with a touch of sweetness. Older examples are typically rich and lush in style, and some high-quality bottles are suitable for cellaring and ageing. The sweetness of sparkling wine can range from very dry "brut" styles to sweeter "doux" varieties. Although wonderful on its own, when it comes to food pairing, sparkling white wine can be enjoyed with just about any meal, although pairing it with seafood, tapas or other hors d'oeuvres is the perfect way to get any party started.

Like all wines, there are tips for the correct way in which to consume sparkling wines and champagnes: 1. Sparkling wine should be chilled before drinking but leaving it in the fridge for more than a week before consumption can affect quality. It’s best stored out of the fridge, away from light, and in a cool place with a consistent temperature. 2. A perfectly chilled sparkling wine is something to savour. Between 7 and 10 degrees is recommended – but it really does come down to personal taste. 3. Choose your glassware wisely – the wrong glass can alter the aroma and the number of bubbles. Flute and Coupe are the traditional styles. 4. Don’t overfill the glass – one-third of the glass is best to maintain the chill.

STEP BACK IN TIME

It may have started as a simple project to record the history of the Hunter’s Coal River Precinct. But the University of Newcastle’s Hunter Living Histories initiative is now helping to bring the wider region’s heritage to life for future generations to learn from and enjoy.

For the past 16 years a group of academics, students and community members have been working to unearth forgotten stories and preserve our knowledge of the past, an activity Hunter Living Histories Chair Gionni di Gravio believes is incredibly important. “Most of our stories are either lost, incorrectly recorded or forgotten, and the location of important tangible physical and documentary evidence for our achievements need to be found, documented and made publicly accessible,” he said. “These achievements have helped shape the world we live in, as well as our land and the peoples of Australia. “The aim of the Hunter Living Histories initiative is, therefore, to help restore Newcastle and the Hunter Region’s significant history, and historic achievements back into the Australian story.” The historical research group, initially known as the Coal River Working Party, was formed in 2003 after Doug Lithgow, President of the Parks and Playgrounds Movement Inc. approached the university with the proposal to form a team of academic researchers dedicated to the investigation of the early history of Newcastle. With Dr Erik Eklund from the History Department as Chair of the group, their main aim was to research, document and protect the culturally important landmarks within Newcastle’s historic east end, the Coal River Precinct. But the work carried out by the group expanded to take on a wider focus over the years, and in 2016 it was renamed Hunter Living Histories to better reflect the university’s Cultural Collections historical

research collaborations across the Hunter communities. Mr di Gravio said collaboration had been the key to the success of the group, which meets monthly at the university to share resources and discuss potential research projects. “Members are invited to share what is going on across their communities, such as important historical commemorations, infrastructure, cultural issues, as well as community needs,” he said. “They are invited to share cultural resources such as photographs, stories, research and collections; it’s often surprising the connections that are made when knowledge is shared, and projects take shape to reflect the needs, as well as opportunities for the university to help. “The group is a valuable resource, a sort of ‘go-to’ for specific questions about the history and heritage of the region. “Projects undertaken by the group are collaborative and multidisciplinary, and tap into the region’s knowledge, linking students and academics with the wider community as well as experts in the field to explore the deeper history of the area.” One of the key activities carried out by the group includes the digitisation of archives and photographic collections, which are then made available to the community on the University of Newcastle Library’s Cultural Collections digital platform. But Hunter Living Histories has also been involved in some far more technologically advanced projects, such as the 3D Virtual Hunter Project and the Newcastle Time Machine, which created fly-on-the-wall fly-through videos and 3D immersive recreations of the early Aboriginal and Colonial Newcastle, up until 1830. Mr di Gravio said the most exciting aspect of Hunter Living Histories was seeing the community, business and government create opportunities for the region through work on historical resources. “Such exciting projects have been the recreation of Newcastle in 1825, and the broader project to create a virtual time machine for the whole region,” he said. “Others include the Virtual Victoria Theatre, as well as uncovering the world of women’s histories and the role they played in shaping the world. “People can go to the Hunter Living Histories website to learn more about the projects and also access the digital collections online at Livinghistories@uon. “Members of the community are welcome to attend our monthly meetings, and we are pleased to hear from people who are researching the region’s history to support and share projects on our website. “We encourage collaborations, as often students can also get involved in community projects and build their knowledge and expertise in a practical way. “We also encourage people to donate to our Vera Deacon Regional History Fund, to help provide paid employment for our dedicated volunteers, many who are young professionals, who help digitise and prepare materials for free access across our sites and digital platforms. “All our online resources and research are open to the community and available in high resolution, free of charge.”
