Feb–Mar It’s vintage time in Wine Country, and there’s nothing more cheering than seeing the vineyards harvested for what we hope will turn into the best vintage ever! This year’s vintage looks full of potential, with high-quality fruit and reasonably good yields provided to us by Mother Nature and her hard-working vignerons. Hunter winemakers are incredibly optimistic about this year’s vintage – and for good reason. The above-average rainfall left the vineyards looking bright and healthy with solid canopies and good crop levels – and we can’t wait to taste the results! The Hunter Valley is known, and rightly so, for its world-class wines and stellar restaurants. Many vineyards are concentrated around the Pokolbin area, but discerning food and wine enthusiasts all know that sometimes it pays to go the extra mile for perfection. A detour to Mount View is where visitors can appreciate what is widely recognised as one of the most beautiful views in the Hunter Valley and where they can immerse themselves in a landscape and experience that evokes memories of Provènce or Tuscany.

Inspired by his father’s frequent trips to Italy, Tim Davis of Carillion Wines in Mount View became interested in the types of grapes grown in particular landscapes and climates and likened them to those of his own vineyards back in Australia. This has resulted in a whole host of trendy Mediterranean varietals such as Sagrantino, Aglianico, Vermentino and Fiano that thrive in our warmer climate, enabling them to ripen to their full potential. We are sure our story on page 12 will encourage all of our readers to take a trip over to Mount View to drink in both the views and the wines this Autumn. We saw live music return to the Hunter last month, and we will soon be treated to international live music acts when Under the Southern Stars hits the stage at Maitland in a few weeks. Hopefully, UTSS is just the start of a plethora of festivals and concerts that are surely just around the corner.

Finding Positivi-Tea each and every day INTERVIEW DI VON ESSEN

Most of life's problems can indeed be solved over a cup of tea. But even if you don’t have any troubles (said no one ever), who doesn't love a good cup of tea just for the sake of it! Jo Bambach from Positivi-Tea at Wine Country's Handmade in the Hunter Markets couldn't agree more! So this month we chatted to Jo about all things tea (over a cuppa, of course!). How long have you been brewing your dreamy blends, and what inspired you to start the Positivi-Tea store? Positivi-Tea became a reality after a naturopath recommended a herbal tea to me. It worked wonders - but it tasted dreadful. So, I started to create my own tasty blends. With the help of the covid lockdown, I had time to plan out the business and experiment with blends. What types of tea can we expect to find at Positivi-Tea, and what is special about your blends? Each blend is created not just for taste and health but with at least one flower. The fragrance provokes happy memories and feelings that make our teas a true cup full of positivity.

Traditional tea drinkers will enjoy our English Breakfast or French Earl Grey. Herbal tea lovers can choose from calming or uplifting blends. Green tea devotees have a fragrant lemon myrtle blend. We even have Hibiscus tea - its vibrant red is perfect for entertaining and aptly named Joy. What do you think makes the perfect cup of tea? What is your favourite blend? It sounds cheesy, but tea always tastes better when someone makes it for you! Fresh filtered or rainwater in the jug (not reboiled) results in a fresh herbal tea and, as every true English Breakfast tea lover knows, the blacker the teapot, the more flavour (have a designated metal teapot for this tea and give it a light clean, never a full scrub). As to my favourite blend - that's like asking a mother who her favourite child is! At the moment, my mornings start with Serenity (green tea/lemon myrtle). I enjoy a cup of my Calm Chamomile in the evenings and a cup of Courage (our liquorice root blend) to satisfy my sweet tooth. We see that your blends include a very romantic floral blend. Apart from making the tea divinely pretty, what benefits can we expect by drinking it? Remember how I mentioned the naturopath? He recommended passionflower for sleep. So to make it taste better, I added florals to create a bedtime blend where the relaxation starts the moment you open the lid, like fragrant flowers in a cottage garden. What is your best advice for getting the most out of each and every cup of tea? A cup of tea can bring you calm during the storms of your life, a time to create focus when turning plans into reality and the chance for special memories to be made over a shared pot of tea. So take your time and savour the moment. What do you enjoy doing when you aren't blending tea (and attending Handmade in the Hunter Markets)? Anything submerged in nature, from gardening to enjoying a walk through our great Aussie bush. Creating old-style high tea parties for friends in my cottage home and garden and writing letters of encouragement to others the old fashioned way with pen and paper. Basically, I'm just a younger version of a little old lady!

he Hunter Valley is known, and rightly so, for its world-class wines and stellar restaurants. Many of the vineyards are concentrated around the Pokolbin area, but for truly discerning food and wine aficionados, they know that it pays to go the extra distance out to Mount View and Carillion Wines. It is here that they can enjoy what is widely recognised as one of the most beautiful views in the Hunter Valley and where they can immerse themselves in a landscape and an experience that evokes the French Provence, with wines at the Carillion cellar door overlooking the vineyards and food at the renowned Bistro Molines, awarded a chef’s hat by the SMH Good Food Guide every year since 2010. There’s no need to travel to France when this very special place is right on our doorstep.

The story behind Carillion Wines goes back to the early 1980s when John Davis, a geologist who ran an oil exploration consultancy, started to get serious about his interest in wines. With his knowledge and understanding of geology, soil, landscape and climate, he set about owning and growing vineyards in optimal locations for particular styles of wines. He bought his first vineyard in 1982 and worked closely with Trevor Drayton to make wine. In 1987 he purchased what is now Briar Ridge in Mount View, which today is run by his daughter, Jaclyn Davis. He then purchased the neighbouring property, Tallavera Grove, in 1993, which had no grapes growing there until he planted it out. John was working in wine full time by this stage, and oil exploration was a distant but fond memory. The business continued to grow with the purchase of a more established brand in Pepper Tree Wines, plus the establishment of the Stonefields Vineyard in Wrattonbully, South Australia, as well as Carillion in Orange which his son Tim Davis ran. In 2007 Bistro Molines was established at the Tallavera Grove estate cementing the winery’s reputation as a destination of highquality standing. Each vineyard had its own brand, and in 2018 a decision was made to consolidate the branding of Tallavera Grove and Carillion under the name Carillion Wines. Today Carillion Wines is owned and operated by Tim Davis, who grew up on his dad’s vineyards. Although the family lived in Sydney, every bit of spare time was spent in the vineyards. Tim remembers fondly that in the early days, the family would camp on the property in the Hunter Valley before a home was built there. “I was obsessed with tractors,” says Tim. “I would hang out with the farm manager, Derek, every day. My own boys are now similarly obsessed – Felix is five and Hugo is three, and I’m reliving my childhood through

their eyes. I was always going to work in wine and agriculture, although I spent several years working in finance.” Tim studied an undergraduate degree in Agricultural Economics at the University of Sydney, majoring in Economics, Agricultural Economics and Finance before completing his honours thesis in wine marketing and demand modelling. After graduating, he worked for National Bank before being tempted back to his old University to commence a PhD. Naturally, his area of study was once again the economics of wine markets, this time with a view to studying Australian wine exports, using an innovative method not used before in the study of wine demand. After graduating, Tim began work at Australia’s central bank, the Reserve Bank of Australia, in its financial markets division as a senior analyst of foreign exchange and a senior dealer in both the Bank’s domestic and international dealing rooms. Whilst he enjoyed his work in finance, Tim’s heart was still on the land, and he was still involved with the running of the family business, regularly working on brands Tallavera Grove, Carillion and Stonefields. In 2012 he decided to step out of his corporate life and apply his full attention to winemaking, where he has overseen a major refresh of both the branding and product directions, with a focus on the premium end and smaller batches of high-quality wines produced from rare grape varieties and innovative winemaking methods. He is very excited about what the future holds for his wine brands and the industry as a whole. Working closely with winemaker Andrew Ling, they have concentrated on small-batch, high-quality wines with three main ranges – Expressions, Origins and Loveable Rogue, with the occasional Museum range and their sparkling, sweet and fortified wines. They enjoy a high reputation with the familiar Shiraz, Semillon, Chardonnay and Riesling varietals that their vineyards are known for including premium Hunter wines, cool-climate wines from Orange, and big reds from Wrattonbully. As a small producer, they can also be innovative, creative and ‘extra fussy’ – they have the luxury larger wineries don’t have to push their limits and insist on the highest quality. The pair love experimenting with single barrel wines. “The foundation of our wines is the quality of our fruit. So when we come across a barrel that blows our mind, we’ll bottle it separately. It’s decadent in every way – unplanned and exciting. We’ve done a couple already, and I love the sense of adventure it brings to our work and the unique offerings it enables us to bring to our wine club members and customers,” said Tim. This adventurous spirit is nowhere more pronounced than in the Lovable Rogue range, affectionately called the Italian Jobs. Inspired by Tim’s father and his frequent trips to Italy many years ago where he became interested in the types of grapes grown in particular landscapes and climates and likened them to those of his own vineyards back in Australia, Tim says his father had the foresight to understand how well those varietals would do and the opportunity it represented to create something new.

When Tim took over at Carillion Wines, he committed to the new varieties, developing a cheeky, trendy and bold new range using varietals such as Sagrantino, Aglianico, Vermentino and Fiano that thrive in our warmer climate, enabling them to ripen to their full potential. “We’ve just had our first crop of two more Italians – Montepulciano and Nero D’avola. We’ll do an ad-hoc series, maybe 30 cases only, similar to the single barrel. We sell most of our wines at our cellar door where they can be hand-sold, with someone there to explain to customers what they’re tasting. It’s a rustic, artisanal, craft wine experience focusing on quality. Introducing our Italian Jobs to the market is fun and exciting, and we think they’ve got a big future.” The future also includes a return to the Tallavera Grove brand with a small production of 2 to 3 wines either this year or next, depending on the vintage. This original brand was known for its exceptional Shiraz, Chardonnay and Semillon, and the new wines will draw on the solid heritage and reputation that the brand enjoyed. It’s ironic that in his down-time, Tim enjoys crafting homebrew beer. His best mate runs a brewery in Bulli called Resin Brewing that focuses on small-batch brewing of high-quality beer, similar to the Carillion philosophy of winemaking. “I confess to drinking more beer than wine,” says Tim sheepishly. “Maybe one day, I’ll bring my own beer to the cellar door – who knows?” Innovation in the way the business runs has been critical to survival in the last two years during the covid pandemic. Tim is grateful to his small team, who individually contacted all the wine club members to keep them engaged during the downturns. The Carillion customers are loyal and very supportive. Carillion did virtual tastings and a refresh of the cellar door fit-out. The push toward booking tastings is a positive development, although walk-ins are still possible at Carillion. The winery charges $10pp for tastings which is refundable on purchase. Largely unaffected by the trade situation with China, Tim is happy focusing on local markets over exports, focusing on his own backyard, and he believes consumers feel the same way – excited to discover new

experiences, places and products at home. Carillion Wines is well placed to take advantage of the new desire for people to explore their local regions. All it takes is a slightly further drive out to Mount View, where you can pretend you’ve arrived in France. Boasting the best view in the Hunter Valley that is consistently compared with Tuscany and Provence, there is even a place to stay. Australia's very own Cosmic Country Weekender, Dashville Skyline, like many a good festival, has certainly weathered the storm of cancellations over the last two years. So it comes with great joy for the Dashville mob to announce the complete updated program for its rescheduled return on 25-27 February 2022. In these frustrating days of modern electric trains and light rail, it's difficult to recall the smell of coal smoke, the hiss of steam, and the sting of cinders flying into your eyes as you hung out a window. John will be in the gallery signing copies and working at his easel, painting his next iconic train painting. "This is an epic book about the steam locomotives of Australia from the earliest days. A wine destination to call home A boutique vineyard, award-winning wines, five-star accommodation provider and unique residential community, Kelman Estate is the perfect place to visit for a day, linger for a weekend or stay for a lifetime. Established in 1996 and named after William Kelman, one of the founding fathers of Australian wine and one of the earliest vignerons in the Hunter Valley, Kelman Estate consists of approximately 100 acres nestled in a quiet corner of Pokolbin near Mount View. At the heart of the estate is the flourishing vineyard, which was planted in the rich, fertile soil of the property in 1997 and now covers 23 acres. Kelman has won hundreds of awards and medals over the years and is highly regarded by wine reviewers and judges alike with a range of exceptional wines that include Shiraz, Semillon and Chardonnay, Tempranillo, Semillon blends, Chardonnay Semillon, Tempranillo blends, Blanc de Blanc Sparkling Chardonnay, Rosé, Moscato and Liqueur Muscat. Their wines are made in limited quantities, depending on the availability of good quality fruit from that vintage. What is unique about Kelman’s vineyard and the wines it produces is the way it has been integrated into the broader community that also calls the estate home, with the vines purposely planted to meander between the estate’s privately-owned properties in a way that is no longer possible to replicate anywhere else in Australia. While residents own their land and their house, the community owns the vines and the fruit of the vines. And although residents are invited to simply enjoy living within the tranquil surroundings, many also choose to become more involved in the community and the operation of the vineyard. As you would expect from any quality winery, the estate boasts a beautiful cellar door set in a converted homestead, which is currently open Saturday to Sunday from 10am to 4pm and offers tastings and sales of all its premium wines. The cellar door also houses an extensive collection of historical artefacts and documents of wine pioneers, William Kelman (1800 -1863) and James Busby (1800 – 1871), which are on show in the Barrel Room, highlighting the history and influence both men had on the development of the wider Hunter wine region. ROCK & ROLL UNDER THE SOUTHERN STARS The announcement of new dates for Under the Southern Stars was met with major approval from fans all over the country who have been incredibly loyal as they patiently waited for the series to be rescheduled (following the year-that-cannot-be-named!) With the nation slowly emerging from the most trying period of our lives, organisers are incredibly excited to get the show back on the road and deliver one hell of a rock n roll experience for fans everywhere, including the first show in a series of twelve at Maitland Showground on Friday, 11 March. Headlining the spectacular rock music concert series will be international acts Cheap Trick, Stone Temple Pilots and BUSH, with supporting acts Black Rebel Motorcycle Club, Rose Tattoo and Electric Mary also taking to the stage. With over 5,000 performances spanning four decades, 20 million records sold worldwide, and inducted into the Rock and Roll Hall of Fame, Cheap Trick are undoubtedly one of the most influential classic rock groups of the past 50 years. The band was formed in 1974, and

while it has evolved throughout the years, Cheap Trick has continued to reach mainstream and critical success. Hits such as I Want You To Want Me, Dream Police, and Surrender have cemented the group as one of America's top rock 'n' roll bands of all time. BUSH has been a mainstay on Australian radios since the release of their debut album Sixteen Stone in 1994. The album was an instant smash, spending 43 weeks in the Australian Top 50. One of the biggest rock acts of the 1990s with over 50 million albums sold, Stone Temple Pilots broke out of the scene they helped to define into bonafide superstars. Locals, Rose Tattoo, need no introduction, but just in case you need a refresher, one of the pillars of Australia's distinct pub rock sound has been spreading its message across the world for nearly 50 years! These true rock n roll outlaws, led by the one and only Angry Anderson, who at 72 years of age continues to show frontmen a quarter of his age just how it's done, will pull no punches as they deliver a set full of classics.
