Welcome to 2023 and another year of life in the beautiful Hunter Valley. The new year no doubt has some (hopefully great) surprises in store for the Hunter, and we can't wait to continue on our quest to bring you all the news about what's new and happening each month.
The warmer months are here, and relaxation, festivities, and lots of sunshine abound. This is the time of year when lighter, brighter styles of wine come into their own. Think Summer Lovin' Wines -crisp, refreshing white wines that are lighter, simpler, fruit and acid-driven dry or slightly off-dry whites, served well chilled. Is your mouth watering at the thought? It's a head-turning property, one that visitors drive past regularly on the wine trail around Pokolbin, and now the team behind Spicers Tower Lodge is on a mission to return this Hunter gem to its status as one of Australia's top five luxury lodges.
The iconic, Spanish-style property in the heart of Pokolbin reopened in July 2022 after extensive renovations and is now hitting its stride as a taste of exclusive European luxury and epicurean delights. Add to that an extraordinarily talented

Matt is well known in the Hunter Valley as a talented chef, committee member of the Lovedale Long Lunch, the saviour of family celebrations during covid and the talented tour guide hosting travel groups on food and wine tours to Tasmania and Italy. What started as a hobby with a single bee hive has become a thriving business for Chris and Julie of Beelish! With a range of products made from honey and all things wax, Beelish is a regular at Wine Country’s Handmade in the Hunter markets. This month we caught up to talk all things beelish-ious!
HVMAG: Can you please tell us a bit about what you do? How did you come up with the idea?
Julie: In 2009, Chris came home one day enthused about meeting a beekeeper who showed him his beehive and now he wanted one too! After completing a variety of courses and training days provided by the local Amateur Beekeeping club, he felt confident to purchase his first beehive. His ‘hobby’ was successful, and soon his one beehive grew to 2, 4, 6, 8, 10 and then 20+ hives. We suddenly had more honey than we could give to family and friends and a growing box of beeswax.
So ‘Beelish…. for all thing honey and wax’ was born, and we have enjoyed using our raw honey to extend our range of products. Our honey is sourced from our own beehives, and our products include Raw Honey, Creamed Honey, Cinnamon Honey, Ginger Honey and Roasted Almonds in Raw Honey.

What types of products do you sell? What is your top-selling product? Who is your typical customer?
Apart from our honey, we also produce candles and food wraps. Beelish Beeswax Food Wraps are a natural, easy and cost-effective way to reduce your use of single-use kitchen plastic wraps. Beelish Foods Wraps are made from our beeswax, which has been blended with tree resin and organic coconut oil and then infused onto bright, colourful 100% cotton fabric. Chris is also busy in the shed making a variety of Wooden Gift Boxes for the honey, which make wonderful gifts, and I use the pure beeswax to make Beeswax Candles. When you burn these beautiful candles, you enjoy the natural honey aroma knowing they are free from toxins and additives.
What is an interesting fact about bees that our readers might not know?
There are just so many interesting facts about bees! For starters - bees have four wings, six legs and five eyes, flap their wings up to 200 times per second, and they communicate through dance. A worker honeybee will produce about one-twelfth of a teaspoon of honey in its lifetime, and there can be between 40,000 and 60,000 bees in one beehive. Just to name a few!

European Luxury
The team behind Spicers Tower Lodge are on a mission to return the Hunter icon to its status as one of the top five luxury lodges in Australia. This iconic, Spanish-style property in the heart of Pokolbin reopened in July 2022 after extensive renovations and is now hitting its stride as a taste of exclusive European luxury and epicurean delights.
Originally built in 1999 by the late Hunter Valley wine legend Len Evans AO OBE and a coterie of his high-profile mates, it was their commitment to quality that saw Tower Lodge win the global luxury lodge category at the World Luxury Hotel Awards in 2010 and then continue to win it five years in a row. Tower Estate was Len Evan’s last business venture before he passed away in 2006, and a testament to his life as a pioneering, inspiring wine judge, ambassador, restaurateur and
In 2013 the property was purchased by the owners of the neighbouring Hope Estate, Michael and Karen Hope, who continued to run it for a couple of years until they converted it to a private residence, in which they lived for seven years. As the family grew older and moved out, the Hopes entered into a collaboration with Spicers Retreats, who added it to their portfolio of Hunter properties. A $6 million renovation later and the newest incarnation of this luxury accommodation promises to be even more divine than its highly successful predecessor.

landscape. Handmade Mexican terracotta tiles line the floors, and thick adobe-rendered walls catch the sunset over the Brokenback Range. High ceilings soak up the summer sun, and open fireplaces keep you warm in winter.
Massive, ornate, late 19th-century French coach-house doors give entry to the retreat’s central hub, an enclosed courtyard paved with limestone, circling a dramatic fountain pond. Cloistered walkways framed by timber beams disappear toward suites and a labyrinth of spaces to explore.
David Assef, Spicers Retreats Managing Director, loves the simple, robust design, spacious rooms, and high ceilings.
“We are honoured to be the new custodians of this iconic property. Tower Lodge has a wonderfully earthy and natural design; it’s in harmony with the changing seasons around it, as the vines bud, flower and eventually drop their leaves for a winter display,” says Assef.
The 14 rooms at Spicers Tower Lodge all feature a large bedroom, lounge, dressing room and gorgeous new bathtubs, and some host a private courtyard, open fireplace, or outdoor hot tub from which to gaze across the lawns to the winery and vineyards in the distance.
Assef says, “Tower Lodge is something unique in the Hunter. There will never be a design so personal or esoteric in the area again. Think of Morocco meeting Athens and going on holiday to Spain!”
Indeed, the interior design is winning accolades, with Spicer’s designer Katherine Young taking out the recent HM Award for Hotel Interior Design. The awards recognise hotel and accommodation excellence in the Asia Pacific region.
Such a high-quality property demands the best staff available in Australia, and Spicers have lured Patrick Rodgers to take over as General Manager of the property. Rodgers has a food and beverage background with previous experience including the management of such prestige properties as Bangalay Luxury Villas, Prospect House Private Hotel in Hobart, The Glass House Restaurant, Marrawah Hospitality on the waterfront in Hobart, Restaurant and Bar Manager of the MACq 01 Hotel for the Federal Group and Restaurant Manager at Saffire-Freycinet Luxury Lodge. His background in food and beverage ensures that the customer experience is the number one priority of the team.

The guest journey with us begins at time of booking as Rodgers and his team get to know people before they arrive.
“We take great care in creating lasting moments for our guests. It’s about connecting with people, pulling at heartstrings. Our team meets twice a day to ensure that we provide the most personalised relaxation experience possible. A lot of our guests come from Sydney. They have two or three days, and they’re time-poor. We aim to have them leaving here feeling as if it’s been two weeks of luxurious relaxation with unique experiences, not just two days.”
Helping to create this epicurean experience is another talented recruit to the Spicers team, chef Gianni Moretto who runs the onsite restaurant, Sebastian. Moretto is an extraordinarily talented young chef carving a name for himself globally. The food experience he offers has been inspired by his work in San Sebastian in the Basque region of Spain, with a focus on the highest quality ingredients sourced as locally as possible.
Moretto has worked in Santiago in Chile, Mexico, San Sebastian in Spain, Perth and now the Hunter Valley, and he’s only 30 years of age. It is his time in San Sebastian that has perhaps proved most inspirational in his work, although there are also South American influences at play. Moretto was Head Chef of Rekondo in San Sebastian overlooking Concha Bay from 2017 to 2018. The focus was on the highest-quality ingredients, and their cellar is reputed to be one of the world’s best.
There is already a contemporary Spanish mission style to the retreat, a water feature in the hacienda style central courtyard, a striking stucco tower and warm terracotta tiles so that it is easy to imagine yourself in Basque country and it is the Basque country traditions of pintxos bars that are part of the dining offering that Moretto has created at Sebastian.
“In the Basque region of Spain, it is the tradition to move from place to place, bar to bar, eating one small dish at each stop, enjoying a drink and then moving on to the next,” said Moretto.
“This is called Txikiteo (pronounced chee-kee-tay-o). Each dish is a micro version of a main course with concentrated flavours. The food is unpretentious, healthy, hearty, seasonal and as local as possible. It’s all about fun, gossip, socialising and movement, and we try to give this to our guests.”
“At Sebastian, we present the food to our guests, and we move from one environment to another. We talk about the origin of the food, what is good to try, where the inspiration has come from, and how it’s been prepared. We try to keep the ambience casual, relaxed, and less structured. Our salads are harvested on the day we serve them. We use F

aged beef because the flavours are more developed. We use whatever we have here, sourcing many wild and foraged ingredients locally. A great example is wattle. It was one of the first things I noticed about the Hunter Valley – there was wattle everywhere. I now create a wattle dessert with the flowers: wattle flower miso ice cream with burnt honey and milk textures.”
Sebastian is open seven days per week for lunch and dinner to guests and visitors, with the set tasting menu at $95 per person for lunch and $135 per person for dinner. A la carte is also available.

First Accessible Balloon Flights In NSW
Balloon Aloft (in conjunction with Cessnock City Council) has announced that a wheelchair-accessible hot air balloon will soon be available in the Hunter Valley. The first of its kind in NSW, the hot-air balloon will provide wheelchair users and those with reduced mobility the opportunity to experience hot-air ballooning over the picturesque vineyard region, with flights to commence mid-2023.
The specifically designed balloon basket has an access door, seat, and harness to ensure passengers with various mobility considerations are safe and secure during the flight.
To ensure the experience is inclusive at every point, a wheelchair-accessible minibus will transport passengers directly to their accessible hot air balloon flight.
"The idea behind this project is to increase the number of inclusive adventure tourism options on offer in the Cessnock LGA, which will also bring more visitors to our area," said Cessnock City Council Mayor Jay Suvaal.
"The other amazing thing about this accessible hot air balloon is that people with disability and reduced mobility can enjoy the experience with their family and friends as it will fit up to eight people."
Matthew Scaife, Pilot, three times Australian Ballooning Champion and Director of Balloon Aloft, believes this project will provide a muchneeded service for the Hunter Valley and Cessnock City Council Local Government Area and will enhance the inclusive tourism products available to visitors.
"As a company, we are passionate about bringing the joy of ballooning to as many people as possible, and we are looking forward to making accessible balloon flights available to those people with mobility impairment issues or those who require mobility aids, including wheelchairs," said Matthew.
The new accessible balloon flights have been made possible by a grant to Cessnock City Council from the Regional Tourism Activation Fund (RTAF). The $30 million RTAF aims to accelerate the development of new and enhanced tourism infrastructure, providing visitors with unique and high-impact experiences while visiting regional NSW. The Fund focuses on projects that increase visitation, expenditure and length of visitor stay and supports projects that improve accessibility, inclusion and enhancement of the visitor experience for people with disability.

Matt Dillow is the driving force behind The Deck Café and Gartelmann Wines, set amongst the idyllic landscape of Lovedale. The chef, restaurateur and vineyard owner is well known in the Hunter Valley as a talented chef and a committee member of the Lovedale Long Lunch, which attracts thousands each year to the Lovedale wineries and restaurants. Add his status as saviour of family celebrations during covid with the home delivery and virtual cooking classes of his Degustation to your Door offering and his talent for hosting travel groups on food
and wine tours to Tasmania and Italy, and you have one very busy fellow. Throw in several awards for the winery, and it’s quite simply mindblowing!
Matt ran both The Verandah and Twine restaurants to great reviews and loyal followings before settling into The Deck Café Lovedale on the Gartelmann Wines estate in July 2013. So when the opportunity came to purchase the winery in late 2020, Matt didn’t hesitate.
“It makes a huge difference to be the owner rather than a tenant,” said Matt.
“It provides certainty for the café and enables everything we do to gel perfectly. I’ve invested heavily in the buildings and the property; we’ve got a new juice bar, and we make sure the grounds have massive street appeal. There’s so much to do for those who visit, with plenty of space for the kids to run around and enjoy the farm animals – we’ve got alpacas, chickens, ducks, lambs and a new baby mini foal plus we’re also dog friendly.”
Matt can be found just about anywhere on the property – shovelling dirt, making arancini in the kitchen, hosting a wine degustation, serving breakfasts in the restaurant or wine tastings in the cellar door.
“I don’t really stop, but I am blessed with my team. We are a big family. I make sure I look after them, providing everything they need to excel at their work and lots of team bonding. It’s important to me that they enjoy what they do and are happy to come to work, and I think it makes a big difference for our customers.”
The café regularly hosts popular Locals Nights once a month and raises money for a local Cessnock Church that hosts the homeless and needy at Christmas every year.
“We’ve been doing this for ten years, and I’m very proud of our involvement. It really touches my heart. The other local businesses support it, and we run raffles during our December Locals’ Nights. We usually raise about $5,000 that buys food and equipment for the church,” says Matt.

“I’m still getting emails about it. People were so thankful. They were stuck at home on special occasions with no way to make it memorable.
On Father’s Day alone, we delivered to 790 people. We didn’t say no to anyone. It was almost like survival – people looked forward to it, and the reaction has been absolutely heart-warming. We even won the 2021 Hunter Business Award for Excellence in Innovation and Adaptability for it. Taste The Season at Tintilla Estate
When it comes to boutique vineyards, family is often the lifeblood of the operation. From growing the grapes and making the wine to serving in the cellar door to managing the books, it’s usually all hands-on-deck at a family-owned and run winery. For almost 30 years, this has undoubtedly been the case for one of the region’s best-kept secrets – Tintilla Estate – a picturesque 25-hectare estate located at the heart of Hunter Valley wine country on Hermitage Road, Pokolbin.
The vineyard, winery and olive grove were established by Sydneybased vascular surgeon Robert Lusby in 1994 and have grown into an award-winning destination producing distinctive, individual, singlevineyard wines and olive products.
Tintilla is an Old-World term for red wine used by Samuel Pepys interchangeably with claret for the red wine of Bordeaux. The winery cellar door has that wholesome family warmth that keeps people returning. Tintilla, The Dionysian dancer on their labels, draws on the Greek wine tradition of women, followers of the god of wine, joined in the communion of drinking the wine of the Gods with dancing.
A truly unique experience, at Tintilla you can take a seat across the table in their tasting room and sip from a large Riedel glass while eating a cheese platter with an assortment of Tintilla condiments, all whilst looking out over the magnificent rolling vineyards. Olives are also an important element of this grand estate, with over 500 olive trees planted in parts of the property that were not so suitable for grapes.
Interestingly the olives were planted in 1994 before the vines, with the picturesque site surrounded by native trees and lined by olive trees. The olive grove has been extended in stages over the years, with varieties including the initial Spanish varieties of Manzanillo and Sevillano, as well as Verdale, jumbo Kalamata, and the most popular olive, a small-berried Tuscan variety named Frantoio, which exhibits a delightful nutty flavour.
Sold exclusively from the Cellar Door, the olives are handpicked, debittered and fermented before bottling with various traditional herbs and spices.

At the Tintilla cellar door, the visitor will not only gain insight into an array of European olives but get an education on the Hunter region and its produce. From season to season, the produce will vary, with Tintilla producing its fine olives and luscious chilli tomato relish, fig jams and local hunter cheese platters.
Tintilla also produces caramelised vinegars and a vincotto, which incorporate unused tasting wines and the juice from pressings in their respective productions. The caramelised vinegar is aged in oak and then exposed to the variations in climate for over five years to concentrate the full, intense flavours before release.
Vincotto is an elixir made of grape must cooked with orange zest, cinnamon and nutmeg. Sweeter and thicker than vinegar, it has subtle overtones of spice and the richness of concentrated grape juice. As a condiment, small slurps are drizzled over roasts, and its versatility extends to dressing salads and fruits.
There is also an orchard from which seasonal jams and relishes are produced, and it is this variety of tastes and produce that result in Tintilla’s essence - a vineyard which has managed to find that perfect blend of food, wine and family.
Not surprisingly, though, Tintilla’s wines are the main attraction at the Estate and were also the inspiration for its name.
Tintilla Estate is for everyone with a love of food and wine, exquisitely reflecting the traditions of the old world with the tastes and flexibility of the new. The warmer months are here, and with them come relaxation, festivities, and lots of sunshine. This is the time of year when lighter, brighter styles of wine come into their own.
Australian summers were made for enjoying wine. Hot days followed by warm evenings dining al fresco, long lazy lunches and barbecues all call for the perfect drop, and although there is no single definition of a perfect summer wine, some varietals tend to suit the warmer weather better than others.
To help you reach for the perfect bottle every time, we've compiled a selection of wines to take you through the season
Think crisp, refreshing white wines—lighter, simpler, fruit and acid-driven dry or slightly off-dry whites, served well chilled. But don't discount the reds - many red wines are also refreshing on a hot day.
Sparkling Wine might very well be the wine world's best answer to summer heat. The hero of a special occasion, a glass of sparkling wine is always appropriate, anywhere, anytime, regardless of the time of year. The wine's temperature and the bubbles themselves make it a refreshing, cooling beverage, and its high acidity makes them ideally suited to summer foods such as ham, salads, chilled soup, soft cheeses, and a variety of seafood.
Pinot Gris, with its tangy, dry, light and fruity flavours, never fails to get a thumbs up from wine drinkers and is fast becoming one of the country's most popular white wines and just perfect with light foods such as pasta, grilled or roast chicken, fish and delicate seafood such as tuna and shrimp.
While Chardonnay is a wonderful wine to be enjoyed all year round, the warmer months are the perfect time to get to know the world's most popular white wine. The Hunter Valley produces rich, ripe Chardonnay wines with beautiful freshness and vitality and excellent when paired with roast chicken, grilled fish, or crayfish on the BBQ.
Brimming with perfumed aromas and spicy flavour characteristics, Gewürztraminer is pure summer in a bottle and one of the most distinctive white wines in the world. With its intense aromas, strong texture and low acidity, this wine is wonderful served with stir-fried pork and pickled plum, crayfish laksa or a fish curry on a bed of aromatic jasmine rice.
With its fresh, tropical fruit characters, un-oaked style and sheer drinkability, Verdelho is very much the crowd-pleaser and is wellmatched when served with a host of spicy Asian cuisines, including Thai, Vietnamese and Malaysian, or enjoyed kicking back by the pool. While it is widely grown throughout Australia, the Hunter Valley consistently produces some of the best examples of this variety, with pristine aromas and flavours that are ideal for early consumption.
Hunter Valley Semillon is the wine to drink this summer with or without food, as a pre-dinner drink or as a refresher at the end of a long, sweltering day. Naturally low in alcohol and almost devoid of residual sugar, Hunter Semillon is the ideal partner for the season's lighter fish and seafood meals. It's a great accompaniment to vegetarian foods, too. When young, it's great with fresh oysters, chilled prawns and cooked white-fleshed fish. With some age it is lovely when served with smoked trout or salmon, roast stuffed chicken, lobster with burnt butter and other flavoursome dishes.
Taking its name from Vitis apiana, "the vine beloved of bees", Fiano wines can range in style from light and fresh to full-bodied and rich. Its love of hot and dry climates has seen it thrive in wine-producing regions such as the Hunter Valley, and it is the perfect summer wine to suit a range of cooked or raw seafood.
Rosé has been taking over wine lists for the past few years and is now the tipple of choice for long lunches. The ensuing flavours range from red fruit and flowers through citrus and melon to celery and rhubarb. Characterised by its light body and crisp finish, Rosé is the ideal wine for summer and perfect when served with seafood such as tuna, barbecued prawns or swordfish.
But don't ignore the reds! A change in the season simply means a shift in wine style – out with the big, rich and powerful, in with the elegant and refreshing. Many red wines are excellent on a hot summer day, and Pinot Noir is the typical go-to warm-weather wine and can be lightly chilled without losing personality and character. Other varieties such as Gamay, Sangiovese, Barbera and Grenache that originated in Mediterranean climates are also perfect for drinking in warm weather.
