for a Farm-to-Table Philosophy WORDS LIANE MORRIS The family behind the region’s most luxurious resort, Tower Lodge, and the neighbouring Hope Estate are driven by a commitment to creating the Hunter Valley's penultimate experience and all it has to offer. The Hope family, along with recently appointed Group Executive Chef Anthony Fullerton, have developed a full range of experiences that include a deeply embedded core philosophy of farm-to-table that is designed to showcase not only the garden produce but the dryaged beef, beer, wine and whiskey that complements the exclusive accommodation offering and the popular concerts that Hope Estate is known for. Originally built in 1999 by Hunter wine legend Len Evans AO OBE and a coterie of his high-profile mates, it was their commitment to quality that saw Tower Lodge win the global luxury lodge category at the World Luxury Hotel Awards in 2010 and then continue to win it four years in a row. In 2013, the property was purchased by Michael and Karen Hope, who converted it into a private residence where they lived for eight years. In 2021, they led a $6 million refurbishment of its exterior and interior spaces, working with Newcastle-based Space Design Architecture and Spicer’s Resorts. In June 2023 the family relaunched the luxury lodge with son Sam Hope looking after the guest experiences and elder son Jonno

supplying the Angus beef from the family’s farm in the upper Hunter for the restaurant. Michael and Karen each bring their own personal style and furnishings to the venture that complete the luxury lodge’s welcoming, ‘at home’ feel. “We’ve created a private gated oasis on 40 acres, smack bang in the middle of Pokolbin – the busiest wine region in Australia,” said Michael. “We’re in the business of fun and have created a luxurious home away from home for our guests that provides the personal experiences that travellers seek. It’s a new style of luxury experiential tourism for the Hunter Valley, delivered in a unique, high-quality, but friendly manner that makes us different. There are luxury hotels all over the world, but if you want a fully immersive, personally tailored Hunter Valley experience, we believe that we can take it to the next level.” The property is centred around a warm terracotta plaza, while a striking stucco tower sets a distinctive Spanish tone to the property. A satellite pool, sauna and gardens offer guests options to leisurely explore the Hunter’s countryside, take advantage of personally guided in-house masterclasses and wine, whiskey and gin tastings, or enjoy frontseat access to a world-class entertainment lineup at the estate. “We have 14 individually styled and generously proportioned suites, some with hot tubs, some with fireplaces, and all have a private balcony or courtyard, and no two are the same. The library and lounge are


beautiful, and the wine cellar has been converted into a private dining room. Our antiques include a c1550 four-poster bed from Rajasthan. The bathrooms are quite simply the ultimate sanctuary,” said Michael. “We curate our guest experiences, which might include in-room treatments, learning from our Chef Anthony about the dry aging beef process, gin masterclasses, and wine, beer or whiskey tastings. In fact, our distillery has just opened, and every guest at Tower Lodge now

receives a complimentary whiskey-tasting experience in the distillery. We’ve found that people like learning things in a non-threatening environment – it’s fun and interesting and makes their visit with us memorable. We hope to have guests return regularly as they would to their own country home.” Set under soaring wood ceilings, the restaurant and its adjoining lounge are the venue for breakfast and long lunches, sunset drinks and canapes, followed by an a la carte dining menu that’s designed either for sharing or more formal dining. Guests and visitors can enjoy lunch and dinner at the lodge. Group Executive Chef Anthony Fullerton and Michael Hope share a passion for true farm-to-table philosophy. Both grew up on farms in the country, Anthony at Lake Wanaka in New Zealand and Michael in Young NSW. Their similar background has created a shared vision and a commitment that sees Anthony fully involved in the farming of the cattle. The beef's journey from conception to life on the farm takes the highest priority. Anthony has introduced a dry-aging facility onsite and aims to raise different breeds of beef and lamb for diversity. He is keen to build a house-made charcuterie line and has plans for a smokehouse. This approach has seen Anthony, classically trained in the French tradition, win multiple awards, including the Australian Hotels Association Australian Chef of the Year in 2022 for the Bull & Bell Steakhouse in Griffith, which came in #92 in the World's 101 Best Steak Restaurants in 2023. He is committed to sourcing all his produce within a 300-kilometre radius, working hard to develop relationships with local farmers and producers and is heavily focused on the dry aging process of the beef. “It’s a labour of love,” said Anthony. “Once the cattle have reached a certain weight on a grass-fed diet, they are brought to the pastures adjacent to Hope Estate for a 120-150 day grain-based feed up. House specialties such as Impanato (crumbed pork cutlet, topped with rocket, tomatoes and parmesan cheese), Vitello Limone (veal scaloppine and potato in a lemon, caper and leek sauce) and the scampi served butterflied and baked then topped with a lemon, garlic and butter sauce have become firm favourites amongst both locals and visitors. “We knew these dishes would work well in Wine Country and recognised that others weren’t really using veal so much or scampi. VINTAGE 2024 In winemaking terms, 'vintage' is picking grapes (harvesting) and creating the finished product. It is known as 'the crush' in some parts of the world. The Hunter Valley is the first wine region in Australia to begin vintage and the first to finish. January and February are when fruit harvesting typically occurs, and at this time of the year, the winemakers and growers work closely together to determine the optimum time to pick the fruit to ensure the best wine quality.

By all accounts, Hunter winemakers and vignerons are extremely optimistic about the 2024 vintage, with the new year off to an early start with some winemakers harvesting grapes in the first week of January. But as with all Hunter winemakers at this time of the year, nobody wants to come across overly optimistic with so much depending on the weather over the next few weeks. In the lead-up to December, Spring provided terrific growing conditions, with late November rainfalls delivering a welcome break from the intense heat and a dry start to December. The last few weeks in December saw just over 90mm of rain, providing a much-needed soak to the vines - creating the perfect growing conditions for vintage 2024. Semillon is one of the first varieties to be picked, followed by Chardonnay and Verdelho. The red varieties are generally harvested after the whites – which can occur from the first week in February. In a region that has notoriously wet vintages, very high temperatures, such as the 40-degree temperatures that can occur at this time of the year, can place too much stress on the vines, causing the vines to shut down and stop accumulating sugar and ripening the fruit. In addition, sunburnt grapes can have a terrible impact on the juice – making it taste bitter, like burnt sugar or toffee. To avoid this, winemakers and vignerons let the leaf canopy grow longer on the vines to give the grapes increased shade protection from the hot afternoon sun and even spraying the vines with a type of ‘sunscreen’. While a few days of rain often do not necessarily pose a problem, a sustained and heavy downfall could be dangerous to the crop. Direct rain can cause the vine to take in a lot of water, making all the cells turgid, including the grapes - which can burst. Hail, on the other hand, could destroy the whole crop in less than an hour.

The Garden Cellars The Complete Tasting Experience

Just one look at the exterior of The Garden Cellars at Hunter Valley Gardens Shopping Village speaks volumes to its history – it’s one of the oldest cellar door complexes in the Hunter Valley.

But while the buildings that once housed tastings for Hungerford Hill still showcase a wide range of Hunter Valley reds and whites, its current tenant - The Garden Cellars - now offers a far more extensive and diverse range of Hunter Valley vodkas, gins, liqueurs, wines and beers. After the previous business closed, it was re-opened in 2011 by local businessman Peter Clarke, who was keen to make the most of what he saw as a prime opportunity within the bustling tourist precinct. With a background in accounting and law/economics and having been self-employed in a variety of successful enterprises selling everything from surfboards and yachts to fibreglass roofing, Peter moved to the Hunter Valley from Sydney in the late 1990s, where he diversified his interests even further to include chocolates and premium spirits.

However, with a lifelong interest in wine, beer and spirits, The Garden Cellars was a perfect fit for Peter. After taking the reins of the struggling retail liquor outlet, Peter saw the need to diversify the offering to a more mainstream range and includes an ever-evolving lineup of local craft beers and premium quality spirits to provide better value and suit the customers' changing tastes. Being in the heart of one of Australia’s oldest winemaking regions, it’s little wonder that Peter remains committed to supporting plenty of locally made products. “We currently have many Hunter Valley wines from different local producers, and we are increasing our range of local beers as much as possible. “We have added local craft beers and ciders from local breweries that include Ironbark Hill, Maltnhops, Hope Estate and Dusty Miner to our range and stock an extensive range of Small Mouth liqueurs, vodka and gin, which continue to be very successful products for us.” The Garden Cellars have also stayed true to the site’s cellar door heritage; as well as having their own Garden Cellars wine label, they act as a key distribution point for many Hunter wine brands that include Audrey Wilkinson, Blueberry Hill, Monkey Place, Leogate, Drayton’s and Vales Wines. Much like vineyard-based cellar doors, The Garden Cellars has daily tastings, however, their much broader stock range means they can offer so much more than your average vineyard experience. “The combination of wine, beer and spirits tastings gives our customers a different experience to other tasting options in the Hunter Valley,” Peter said. “Our informative tastings allow the customers to connect with the products. It also allows us to understand the tastes of our customers, which are always evolving. Wines to Enjoy… all Summer Long WORDS QUENTIN VON ESSEN It’s the start of a new year, and we still have a bit more of the warmer weather to enjoy, so make sure you are sipping lighter wines that pair well with seasonal foods and dishes. Australian summers were made for enjoying wine… Whether it be sun-drenched beach picnics, hot days followed by warm, balmy evenings, garden parties, long lazy alfresco lunches and barbecues, there is a range of white, red and sparkling wines perfect for every occasion, and although there is no single definition of a perfect summer wine, some varietals tend to suit the warmer weather better than others. There are no hard and fast rules when it comes to wine - so try new varietals and broaden your horizons - or should that be your palate? Think crisp, refreshing white wines—lighter, simpler, fruit and acid-driven dry or slightly off-dry whites, served well chilled. And if you’re thinking that summer is all about white wine, well, you’d be wrong, as many red wines are also excellent on a hot day. To help you choose the perfect bottle every time, we’ve compiled a selection of wines to take you through the season. Sparkling Wine might very well be the wine world’s best answer to summer heat. The hero of a special occasion, a glass of Sparkling Wine is always appropriate, anywhere, anytime, regardless of the time of year. The wine’s temperature and the bubbles themselves make it a refreshing, cooling beverage, and its high acidity makes it ideally suited to summer foods such as ham, salads, chilled soup, soft cheeses, and a variety of seafood. With or without food, as a pre-dinner drink or as a refresher at the end of a long day, Hunter Valley Semillon is the wine to drink every summer and is the ideal partner for the season's lighter fish and seafood meals. It's a great accompaniment to vegetarian foods, too. When young, it's great with fresh oysters, cold cooked prawns and simply cooked white-fleshed fish. With age, it is beautiful when served with smoked trout or salmon, roast stuffed chicken, lobster with burnt butter and other flavoursome dishes. Chardonnay is one of the most delicious wines you can enjoy in summer. The Hunter Valley produces rich, ripe Chardonnays with

beautiful freshness and vitality that are wonderful paired with a cheeseboard, roast chicken, grilled fish, or crayfish on the BBQ. Pinot Gris, with its tangy, dry, light, and fruity flavours, never fails to get a thumbs up from wine drinkers and is fast becoming one of the country’s most popular white wines and just perfect with light foods such as pasta, grilled or roast chicken, fish and delicate seafood such as tuna and shrimp. As a full-bodied white wine, Viognier is pure summer in a bottle. It’s also a fabulous food wine that goes with everything from Northern African or spicy Asian cuisine to light meats such as pork and veal, rich shellfish dishes such as seared scallops and grilled lobster, and sweet root vegetables. It’s also perfectly at home with a cheese plate. With its fresh, tropical fruit characters, un-oaked style and sheer drinkability, Verdelho is very much the crowd-pleaser and is wellmatched when served with a host of spicy Asian cuisines, including Thai, Vietnamese and Malaysian, or simply enjoyed kicking back by the pool. While it is widely grown throughout Australia, the Hunter Valley consistently produces some of the best examples of this variety with pristine aromas and flavours and is ideal for early consumption. Gewurztraminer is highly praised for its flowery aroma, elegant character, and breezy taste. This fabulous summer wine pairs perfectly with the grilled foods and spicy dishes we enjoy in the warmer weather. Rosé has been taking over wine lists for the past few years and is now the tipple of choice for long lunches. The ensuing flavours range from red fruit and flowers through citrus and melon to celery and rhubarb. With its light body and crisp finish, Rosé is the ideal wine for summer and perfect when served with seafood such as tuna, barbecued prawns or swordfish. And then there are the reds! A change in the season simply means a shift in wine style – out with the big, rich and powerful, in with the elegant and refreshing. Many red wines are excellent on a hot summer day, and Pinot Noir is the typical go-to warm-weather wine and can be lightly chilled without losing personality and character. Other varieties, such as Gamay, Sangiovese and Grenache, which originated in Mediterranean climates, are also perfect for drinking in warm weather.

Semillon Sauvignon Blanc

Light straw in hue. This wine has hints of cut grass notes to blend with a citrus lift. TASTING The Semillon gives a fresh citrus palate whilst the Sauvignon Blanc lends a more herbaceous mid palate. The sugar dosage lifts both the citrus fruit and the grassy notes and gives a sweetness that makes the wine fresh and fruity.
