As we go to print, Winter has well and truly arrived in the Hunter Valley. We can finally stoke the open fires and bunker in with our favourite red – or possibly a sweet dessert wine (liquid dessert? Yes, please!). There is no better season to top off a meal with a dessert tipple. From elegant Semillon to opulent, aged Muscat, Australia's dessert and fortified wines have a long and distinguished history. They are considered some of the most unique wines in the world, and nothing beats a glass of something sweet and sticky beside the fire on a cold winter night. Look out for our top picks on page 29. Of course, Winter in Wine Country is the perfect time to don the puffer jacket and get out and about, but there’s so much to see and do (and taste) that it can be a bit overwhelming! IT’S A WILD LIFE IN THE HUNTER VALLEY

If you're on the hunt for an adventurous family day out with close-up interactive animal action, we've discovered just the place! Perhaps the Hunter Valley's best-kept secret, Hunter Valley Wildlife Park boasts some of the tallest and most fierce exotic African animal experiences. The friendly rainbow lorikeets put on an unbelievable show in their walk-through enclosure, perching themselves on your arms and shoulders to claim their stake of the food. Brilliantly Blissful Gifts Making homemade bath products began as a much-needed calming and creative outlet for Alisha Hannah. But it wasn't long before repeat requests for her lovingly created gifts saw the hobby evolve into a fullyfledged business under the banner of The Bliss Cartel. "I made these products to be creative and give me a bit of 'me-time'. When I had my children, I suffered from horrible post-natal depression and used creative outlets as a way to calm my mind and relax," says Alisha. "All my products are feminine, vintage-inspired, and their main aim is to make the purchaser feel relaxed and indulgent." The indulgent Bliss Cartel range includes everything from bath soaks and heat packs to body scrubs and facemasks, with each product handmade in what Alisha says is a labour of love.

"If I'm looking to develop a new product, I think of things I'd like to try personally and then tweak them so they are unique. My favourite product is my Lavender Eye Pillows. I have many around my house!" she said. "They are surprisingly versatile. I have a few that live in my freezer and are used for headaches, kids' temperatures and even as ice packs! And I have others that I heat and use as heat packs. "The lavender fragrance in them adds that extra bit of indulgence and relaxation. "Each product I make is a labour of love. I spend a lot of time perfecting recipes, creating labels, choosing fragrance combinations, cutting and measuring fabric, and choosing designs to make my products perfect. If I love them, then I know my customers will too!" In The Hunter’s Cultural Kitchen! WORDS LIANE MORRIS Oaks Cypress Lakes Resort is undeniably one of Australia’s premier resort and golfing destinations, located in a breathtaking idyllic natural setting in the heart of the Hunter Valley wine country. The PGA 18-hole championship golf course features stunning panoramic views of the vineyards and surrounding Brokenback mountain range from every tee and green, and it has won Best Australian Golf Hotel Resort in both 2018 and 2019. As if this wasn’t enough to draw the visitors and the locals alike, the food and beverage options at this world-class facility are undergoing a quiet transformation that aims to be a significant drawcard for foodies, families, locals and international visitors. As with most businesses, the covid pandemic provided the team at Cypress Lakes an opportunity to rethink the food and beverage offering and how it is delivered. Michael Fantuz, Director of Food and Beverage at Cypress Lakes, began working at the resort just before the second lockdown. “We took a good look at the new world order and decided to rethink things, to try a different approach. We want to give our guests more than they expect from us. So we’re offering a cleaner, more family-oriented approach to the leisure market and a more outdoor, festival-like approach to the corporate conferencing market. We’re using balconies, lawns, pool areas and all our outdoor spaces over our 60 acres to help eliminate the stress due to the threat of covid in enclosed spaces.” Aiding Michael with this new approach is Daniel Quitto, Executive Chef at the resort. Daniel started at Cypress Lakes in February of

this year after finishing up at Nick & Nora’s at Parramatta, part of the Speakeasy Group under Sven Almenning and Greg Sanderson. Previously Daniel worked at the Hilton Hotel, Sydney, the Harbour View Hotel, The Rocks, and the hatted restaurant Mosaic at the Westin Hotel, Sydney. He also won awards for his designer cake business, Cake Evolution, and was part of the executive chef team that catered to the Pan Pacific Games in Vanuatu. At the Pan Pacific Games, Daniel had the experience of cooking for the athletes for over a month and being in charge of a 30-person team of cooks, chefs and kitchen hands. His broad experience makes him ideal for heading up a facility that includes several dining offerings and large-capacity conferencing and events. Real estate prices drove Daniel and his young family out of Sydney. The Hunter Valley was where he and his wife were married, and they had always felt drawn to the region. He was confident he would secure a new role in the valley and was keen for his kids to enjoy a more country-style upbringing. So they bought a new home in Cessnock, and before they even moved, he had landed the role at Cypress Lakes. He loves that there are no traffic lights on his way to work these days and is excited about the challenges in his new role. “When I was a kid, eating out was a big deal. These days though, food is very accessible, the options are endless, and people know what’s good – they have high standards. We want to take a leadership role in how good food can be, providing healthier options, utilising local produce and ensuring that even with our most casual dining experience, it’s still of the finest standard possible.”


“When it comes to being a successful chef, it’s not just about the food, but the culture that is in the kitchen. Without a supportive team that feels valued, a kitchen cannot thrive. I am energised to see the future possibilities with my team at Cypress Lakes, and it’s important to me to empower them. Our team is not only extremely talented, but they are also from a very wide range of multicultural backgrounds. I encourage them to share their food influences through our specials, and in fact, Chef Vinnie (Vinura de Silva, Executive Sous Chef) at our fine dining restaurant, Oak & Vine, takes that one step further. Vinnie’s food is influenced by his native Sri Lankan background, offset by his refined French technique and flavours. No one else is doing this in the valley, and it’s exciting – it pushes the envelope.”

Chef Vinura de Silva began his hospitality journey at the Hilton Colombo as his work placement during his studies at the Sri Lanka Institute of Tourism and Hotel Management at the age of 17. What followed was ten years of 5-star, global experience in Bahrain with the Rotana chain of hotels, Kandima in the Maldives, Bannisters in Port Stephens and then finally, to Oaks Cypress Lakes in 2019. Vinnie is proud to be working with Sri-Lankan influences and providing new experiences for diners. “At first, I added a few Sri-Lankan dishes to the menu and began to notice that diners were really enjoying them”, he said. “Daniel was keen for me to expand the concept, utilising Sri-Lankan flavours with my classical French training. We take it to another level, and diners seem to enjoy it. I would love to have as many people as possible come and try the dishes that mean something so special to me, and to see that spice doesn’t necessarily mean ‘hot’ but simply well-balanced flavour profiles.” Recently the team were put to the test with a significant corporate event that catered to 700 people per day for five weeks, all staying in the accommodation and eating all meals at a cost of almost $5 million. There was a focus on health and wellness coupled with indulgence and fun. Special dietary considerations for such a large group were an exercise in logistics for the kitchen staff. Luckily for Oaks Cypress Lakes Resort, the neighbouring Elysia Wellness Retreat, purchased by the Oaks Group two and a half years ago and previously known as the Golden Door Health Retreat, is now also part of the Oaks Resorts family and Chef Corryne Parkhill, Executive Chef at Elysia, is part of Daniel’s team. They worked together on the project, and it has inspired them to make healthier options more available on all the menus at Cypress Lakes, delivering a little bit of the Elysia wellness experience to all their guests and visitors. (Continued) Chef Corryne is passionate about healthy food and the difference it can make in people’s lives. She works with a nutritionist to ensure that every meal offered at Elysia is personalised for the health needs of their guests. The menu is predominately vegetarian, with some chicken and fish showcasing wholefood. Corryne manages the dietary requirements of individuals with a giant blackboard and an enormous knowledge base of what each type of diet should contain. Corryne grew up on the Central Coast and Lake Macquarie. Her grandmother was a baker, and her mother was a chef. Her mother is now working as her restaurant supervisor at Elysia! Corryne was heavily influenced by the women in her life. “I remember visits to farms to source produce, and my mum was always focused on health and wellbeing, so it’s ingrained in me,” said Corryne. “As a mum, I am super passionate about healthy food for kids and using psychology and fun to encourage them in good habits. I love that I’m always learning as our knowledge of health evolves. Our approach at Elysia is personalised and holistic, and I’m excited to be working with Daniel to deliver some of these healthy wholefood offerings to Cypress Lakes.”

Stomachs lined and taste buds awakened, it's time to tune up your wine-tasting palette and sniff-swirl and savour Wine Country. The first stop is McDonald's Rd (just around the corner from Hunter Valley Gardens) at Tamburlaine Organic Wines. It's Australia's largest certified organic wine producer, where you can choose from an extensive range of red and white wines, sparkling and fortified from their Hunter Valley and Orange Vineyards. For a tasting that will satisfy every taste bud, turn right out of Tamburlaine and head back to the big roundabout, where you will turn right onto Broke Road. A little further up on the left-hand side, you'll find a winery, brewery and distillery – all in one at Hope Estate – which is also host to the Hunter Valley's famed Concert Season (the big stage is a bit of a giveaway!). Here you can taste a range of estate-grown varietal wines, a whole lot of hoppy ales, distinctively recognisable by their black cans and amp design and a small batch distillery producing premium Australian grain spirits.

Top off your tasting a short distance down Broke Road at Hungerford Hill. Guided by highly accomplished and award-winning winemaker Bryan Currie, the Hungerford team consistently produces wines of character and interest that focus on the Hunter Valley and NSW's cool-climate regions, including Hilltops and Tumbarumba. Small Mouth is a small family-run distillery specialising in handcrafted, quality spirits, including shimmering vodkas and gins using only premium and organic ingredients. The vodka boasts a full flavour with a long, smooth finish. But that's not all you'll find in their tasting rooms at Hunter Valley Gardens.

Small Mouth Vodka has been online for years, but since the tasting room in Pokolbin was opened early in 2019, the team has been working hard to expand the range available for tasting and purchase. "Since the tasting rooms opened, we have grown our range and now have a whole fleet of gins, vodkas and liqueurs to offer customers," said co-Manager Jaydan Addis. Small Mouth comprises an enthusiastic team of family members, including Paul Addis, the co-owner and head distiller, who has been distilling for eight years. Melloney Addis, Kaitlyn Addis and co-Managers Jaydan Addis and Mia Thompson all work in-store conducting tastings and sales. Mia and Jaydan also work on the online side of the business as well. "Small Mouth is a hand-crafted, premium spirit that is organic and vegan friendly. Our produce is distilled in traditional copper pot stills and uses freshly captured rainwater. In addition, we add edible glitter to our products so you can shimmer on the inside just like you do on the outside!" says Jaydan. Jaydan adds that he and the team have been surprised by the range of customers that walk through the doors, with everyone from freshfaced 18-year-olds to 92-year-old connoisseurs lining up to taste! "For us, this is evidence that we are on the right track. We aim to create a premium and innovative product that can be used to make even simple cocktails unique and delicious. We're dedicated to providing a product that excites all ages," said Jaydan. Small Mouth offers gins, vodkas, and liqueurs, ranging from 45%, 40%, and 20%. From elegant Semillon to opulent, aged Muscat, Australia’s dessert and fortified wines have a long and distinguished history, and are considered to be some of the most unique wines in the world. Until the mid-1960s, dessert and fortified styles were the most popular wines in Australia. These days table wines lead the charge, but those sweetly decadent wines are still highly sought after. Made in regions across the country, Australia’s dessert and fortified wines vary in style but never fail to impress. Fermented in the same manner as conventional white wines, dessert wines tend to be intensely flavoured, deeply gold in colour with bouquets of dried apricots, a rich sweet flavour and a sharp acid finish. Affectionately known as ‘stickies,’ these sweet wines are a sensational accompaniment to fruit desserts. Alternatively, they can stand alone as a replacement for dessert at the end of a meal. Dessert and fortified wines range from elegant Riesling and Semillon dessert wines to silky Topaque (made from the Muscadelle grape), spiced Tawny Port and luscious fruit cake tasting Muscat. They’re generally high in sugar and alcohol, making them sweet and sticky. Fortified wines such as Sherry, Port, and Madeira are made by adding alcohol (brandy spirits) during fermentation. This kills the yeasts that convert sugar to alcohol, leaving the wine very sweet and increasing the alcohol level to between 15 and 20%. Generally, the earlier the spirit is added, the sweeter the resulting wines. After fortification, the wine is left to mature in oak barrels, maturing into complex, aromatic wines with an immense concentration of flavour and colour. Some of Australia’s most impressive, fortified wines are aged in barrels for up to 100 years or more, giving them an intense richness that’s hard to forget.

Dessert and fortified wines are a perfect after-dinner treat, either on their own or with a dessert, chocolate, dried nuts or strong cheeses. And nothing beats a glass of something sweet and sticky beside the fire on a cold winter night.
