A special exhibition at Singleton Arts and Cultural Centre will transport visitors to some of the most remote Aboriginal sites in the Hunter Valley without having to leave the four walls of the gallery.
Spirit of Place, based on the book of the same name by Wonnarua elder Warren Taggart in collaboration with Carol Carter and Allan Chawner, features photographs of cave shelters, rock engravings and landmarks of significant cultural importance alongside a selection of cultural objects from Uncle Warren's personal collection.
The exhibition will open on Saturday 24 June, at 2pm with a special smoking ceremony conducted by Uncle Warren. The main gallery will house the display until 3 September
Uncle Warren said his love for the mountains drew from his connection to the ancestors and elders whose stories lived on through the remnants of art, rock engraving and stone arrangements.
"The book was put together to show people what is hidden in the area surrounding Singleton, and the whole idea of the exhibition is to allow people to experience the spiritual connection of sacred sites without having to physically disturb them," he said.
Mayor of Singleton, Cr Sue Moore, said the exhibition embodied the purpose of the Arts and Cultural Centre to reflect the identity of the local community and place.
"This is an extraordinary representation of just how important this place has been to people long before we came to know it as Singleton," she said.
"This exhibition is a wonderful demonstration of the culture and heritage that is central to our community and for visitors to our region and offers the opportunity to share local cultural stories with visitors— adding a significantly spiritual experience to their itinerary.
"I hope people will take this opportunity to experience thousands of years of settlement and reflect on everything that makes our area unique."

Winter has come! And for families all across the Hunter, this means just one thing - Snow Time in the Garden! This year's event promises to be the biggest and best yet, with rides and entertainment galore over four weeks from 24 June until 23 July
There's no need to travel all the way to the NSW snowfields when Snow Time in the Garden is available on our doorstep, and nothing could be more beautiful than playing in the snow on one of our wintery sunny days with the children in your life. Every year since 2011 (excluding 2020), Hunter Valley Gardens has created the coolest family event, bringing the snow to our region and all the fun activities associated with this freezing, powdery delight.
The snowmaking machine will pump out finer, more realistic snow in greater amounts than ever before, with snow that's almost as good as the real thing – and heaps of it! This awesome annual event offers families a wonderful way to celebrate the frostiest season of all and enjoy amazing icy activities under sunny winter skies and surrounded by beautiful gardens.

Pick up your skating session passes, grab your skates and get skating! Made with real ice, the ice skating rink is great fun. The extended Ice Rink with an allocated junior section gives skaters loads of room to glide around like a pro. With sessions lasting for 20 minutes and opening at 10am every day, the rink can hold more than 200 skaters at a time, but skating sessions can only be reserved on the day at the ticket booth outside the Ice-Skating marquee. If you don't want to miss out, get there early and book in to avoid disappointment. Skating aids (Bobby Seals) will be available for hire for $6 each and ONLY for children six years and under. An adult must accompany children under five on the ice.

The speedy Swing Chair will spin you around 11 metres off the ground. Feel the wind in your hair and revel in the carnival atmosphere. This beautiful traditional Venetian Carousel was built in Italy to the design of the Hunter Valley Gardens staff. Katherine Cheetham has been sewing since she was a girl. Now a new generation of girls and boys – from babies to teens – are wearing her handiwork thanks to her flourishing part-time business, 4Kali
The Thornton mother-of-two has been creating clothes for her range and selling them at the Handmade in the Hunter Markets for the past fourteen years.
She pursues her hobby in her spare time, when not working part-time in the cosmetics section at Big W and says she gets so much enjoyment out of both making each item and seeing the reactions from customers who fall in love with her creations.
"I have always been interested in sewing. My mum was a great sewer herself and got me started while I was in high school. I also love knitting and crocheting clothes," said Katherine.
"I started 4Kali almost fifteen years ago. I make baby clothes and kid's clothes, sizes 0000-14, crochet jackets, crochet rugs, dolls clothes, baby toys and lots of bibs.
"I have been a stallholder at Handmade in the Hunter since I started 4Kali, and I love it. I meet different people every time there is a market, and I love seeing the joy they get when they see a design they like."
While her own children, Matthew, 27, and Kali, 21, may be too old to wear her designs, Katherine's daughter will always maintain a link to her mother's clothing line, lending not only her name but her opinions to the creative process.
"I named the business after my daughter Kali since she helps pick designs and fabrics," Katherine said.
"The fabric inspires me. When I see a particular piece of fabric, I know exactly what I'm going to make out of it, and if I love a piece of fabric, I will wait until I find the perfect pattern for it.
"I love all the baby rompers; they are so tiny and cute. The prints I have coming up in our Winter collection are gorgeous – the overalls with the Kookaburra are a big fave."

Oishii Japanese Thai Restaurant, located in the Roche Estate complex on Broke Road in Pokolbin, is the only Asian restaurant in a winery in the Hunter Valley and, quite possibly, Australia. One of the only restaurants in the area open for lunch and dinner seven days a week, it is popular with locals and visitors and has been a favourite of Hunter Valley diners since 2002.
The story begins when Bo Lorchaiwet migrated to Australia from Thailand in 1992 and opened a restaurant on Darby Street in Newcastle in 1994. One year later, a 14-year-old Patrick Boonsong arrived to help his mum run her restaurant. The family ran restaurants in several locations, including Newcastle, Hamilton, Nelson Bay, Terrigal, and Swansea. Patrick’s uncle was a big fan of Japanese cuisine and encouraged the family to open Japanese restaurants as well as their Thai restaurants.

“Most of the chefs at Japanese restaurants tend to be Thai,” said Patrick.
“In Thailand, there is a great diversity of cuisine, and our chefs learn a broad range of styles as a result. We think that Thai chefs make better Japanese food! Not so bland.”
It was Lisa McGuigan who had the great idea to offer cellar door visitors something a little different in the Hunter Valley. A regular customer at the Newcastle restaurant run by Patrick and his mum, she invited the family to open Oishii in what was then the Tempus Two Winery.
“When we first opened in 2002, it was on a dirt road and very dusty. We stayed open seven days per week even back then. Often there were only two or three tables at night, and we wondered if we had done the right thing. Within two years, we knew it was going to be successful.”
The space overlooks the architecturally designed amphitheatre and
vines at Roche Estate. It’s conveniently located, relaxed and offers an affordable dining alternative with dishes designed to please every palate. The menu has changed very little since the restaurant opened, with current chef Jantee Dangsopa having been at the helm of the kitchen since 2008.
Oishii is well known for its signature dishes, including Teppan Yaki Beef, Panang Duck Curry, Gyoza, Massaman Beef Curry and the freshly made vegetarian Spring Rolls, which are nothing like the mass-produced ones usually served at most Asian restaurants. The dishes are perfect for sharing and ideal for families or groups of friends. The interiors are minimalist, with a Thai-themed dining room, but there’s also the option of dining outside on the terrace overlooking the vines – ideal in the winter sunshine.
According to Patrick, 30% of his customers identify as being gluten intolerant or coeliac.
“More and more people are demanding gluten-free, and we’ve worked hard to produce a menu that delivers maximum flavour without gluten. A lot of the sauces that are used in Asian cooking contain gluten. We have had to create our own special sauces in-house to be able to give people what they need. Most of our signature dishes are gluten-free.”
Patrick puts Oishii’s success down to consistency – both in flavour and service. Open from 11.30am and closing at 9.30pm every day, the restaurant only briefly closes between lunch and dinner, meaning that if time slipped away from you at a cellar door, chances are you can still get lunch at Oishii.
“When everyone else is closed, we are open. The taxi drivers know this, the locals know this, and when visitors are surprised that many of the restaurants may be closed, especially early in the week, they can come to us, and we will serve them up a delicious Thai or Japanese meal. We have two teams that work here and take it in turns to ensure we have that guaranteed seven-days-a-week opening.”

In 1985, when Mark and a small group of friends and family purchased Tamburlaine, few winemakers advocated organics, and they were considered 'odd bods' or 'hippies'. As a result, they didn't have access to the technology or substitutes available to organic farmers today.
When Tamburlaine started its journey toward organic practices, it did so cautiously and quietly because Mark didn't want the brand to be
negatively affected. He was told that it was impossible to do and that there was no prestige in the practice within Australia (unlike in Europe, where some of the world's most prestigious and expensive wines are unashamedly organic). Through a lengthy research and development process, Tamburlaine gradually moved into certified organic status.
Nowadays, Tamburlaine's production has grown to be five times what it was in the 90s, and the market for their wines has also evolved, with consumers now wanting to know the provenance of their food and wine and details of the supply chain from which it comes. There is a growing demand for ethical, organic, and sustainable products that consumers can trust.
As a result, Tamburlaine is committed to using naturally derived products in the vineyard and winery, composting winery waste (grape stems etc.) which they spread on the vineyards to increase organic matter, reducing energy use thanks to solar panels on the warehouse roof, as well as recycling water.
A recent initiative at Tamburlaine enables customers who visit the cellar door to offset the carbon emissions from their orders by selecting to contribute 5c per bottle with any purchase. This contribution will be invested in accredited carbon abatement projects, further contributing to Tamburlaine's sustainable legacy.
"We want to affiliate our brand with community groups, people and causes that add positivity to the world. We want to work with people who are motivated toward positive action, and we actively seek them out to support them and affiliate our brand, " said Mark.

The cafe provides a fantastic breakfast menu and premium Vittoria coffee. Slip in your first wine tasting for the day at Gartelmann Wines, also located on-site.
Stop in at Binnorie Dairy on your way down Lovedale Rd to your next destination and pick up some cheese and cured meats for later, or why not grab a takeaway picnic box for a tasty lunch in the sunshine at your next destination?
SIP, TASTE & SAVOUR WINE COUNTRY
Stomachs lined and taste buds awakened, it's time to tune up your wine-tasting palate with a stop at Hungerford Hill at the start of Broke Rd. Guided by highly accomplished and award-winning winemaker Bryan Currie, the Hungerford team consistently produce wines of character and interest that focus on the Hunter Valley and NSW's cool-climate regions, including Hilltops and Tumbarumba.
On leaving Hungerford Hill, head across the road to experience one of life's perfect indulgences. In Hunter Valley, the Hunter Valley Chocolate Company is one of the most addictive attractions around. If you love all things chocolate, you'll love their exquisite range of chocolate and fudge, so take the time to visit their two retail outlets in Pokolbin at 2320 Broke Road and Peterson House.
Continuing your efforts to explore some of the region's finest wines, the next stop is Tamburlaine Organic Wines. Located on McDonalds Rd, Pokolbin, Tamburlaine is Australia's largest certified organic wine producer, where you can choose from an extensive range of red and
white wines, sparkling and fortified from their Hunter Valley and Orange Vineyards.
After a morning of wine tasting, continue to spoil the senses with a trip to the spectacular Hunter Valley Gardens to experience a beautiful display of sight, colour and fragrance from the ten feature gardens. Discover the Formal Garden – the largest of its type in Australia, the magnificent Rose Garden with its lavish array of colour and perfume, or the Oriental Garden, surrounded by natural Australian granite and winding streams full of spectacular water lilies and irises. Until 23 July, you can also enjoy the snow-filled slopes at Snow Time in the Garden.
Time for some tasting of a different kind! Before leaving the gates of Hunter Valley Gardens, stop at the local shopping village to visit Small Mouth Vodka. Here you'll find a small family-run distillery specialising in hand-crafted, quality spirits, including shimmering vodkas and gins using only premium and organic ingredients. You're sure to leave shimmering on the inside!
While you're there, pop next door to The Garden Cellars and browse their range of premium wines, the most extensive range of local craft beers in the Hunter Valley and a fantastic range of gin, vodka, liqueurs and other spirits.
ROUND OFF THE DAY WITH A SPOT OF FINE DINING
Where there is great wine, great food usually follows, and the Hunter Valley is considered one of the finest, most authentic culinary destinations in Australia. Hunters Quarter (at Pooles Rock Vineyard), The Cellar Restaurant (at Hunter Valley Gardens Shopping Village) and Pescara Italian Restaurant at Hermitage Lodge are all highly recommended. For something more casual, consider local favourite Oishii Japanese Thai Restaurant, who also offer takeaway if you're too exhausted to dine in!
DAY TWO
Soar above the vineyards, indulge in a dessert, go horse-riding, shop a bit (or a lot), visit another distillery, go wine tasting and warm up by the fireplace.
FOR THE ADVENTUROUS
Book an early morning hot air balloon ride with Balloon Aloft for an iconic Wine Country treat. Taking off at sunrise, ascend into the sky and float gently along with the breeze, taking in views of the picturesque wine regions of Pokolbin, Lovedale, Rothbury or Broke – from just above the treetops or at heights of 2000 feet or more.

If shopping is more your thing, the ultimate Wine Country shopping experience is a trip to Hunter Valley Gardens Shopping Village, located en route to the world-famous gardens. Here you will find a variety of galleries, fashion stores, homewares (check out Australian Alpaca Barn), gift shops and other boutique specialty shops to choose from and just when you feel you need a break, there is a tempting choice of cafes available.
INDULGE A LITTLE
After an arduous day of adventure, Sabor in the Hunter Dessert Bar (2342 Broke Road) is a sweet diversion for those who love to indulge in decadent cakes and pastries or have a soft spot for the rich flavours of the cocoa bean. Sabor has over 50 desserts on the menu, as well as local wines, dessert wines, ports and liqueurs to match the flavours of your dessert perfectly.
Get back into the spirit of things and continue along Broke Rd to the Hunter Distillery (1686 Broke Rd), where, with so many flavours of liqueur to choose from, there is always something new to try from their range of top-shelf spirits that include gin, vodka, liqueurs and schnapps.
GETTING BACK TO THE WINE
If you're here for the wine, our wine-tasting itinerary for day two is a boutique experience starting at Kelman Vineyard on Oakey Creek Road. Kelman focuses on classic Hunter varietals, a well-established boutique vineyard in a quiet corner of the Parish of Pokolbin below Mount View.
Just cross the road, you'll find Saddler's Creek Wines. Established in 1990 by two friends with a passion for fine wine and a serious love of horses, the Halliday-rated 5-Star Winery specialises in crafting premium quality wines.
The Hunter is certainly not short of an adventure or two, and it won't be long until you are planning a return to see how the region evolves in spring.

Wine & Dine Hunter Valley publishers Di and Quentin von Essen are passionate about the region and all that it has to offer.
"As lovers of good food and great wine, we were regular visitors to the Hunter Valley for over 16 years before we made the big move from Sydney," said Quentin.
"We opened a guesthouse and discovered that over breakfast every morning, we would be questioned by our guests about where they could find whatever they were looking for - where is the best sparkling, what restaurants are nearby, which cellar doors are worth visiting. With a background in publishing, it didn't take us long to recognise the need for a comprehensive guide to answer all these questions because there was nothing like that to make it easy for visitors.
"We were also inspired by the passion and commitment of each business we encountered toward ensuring visitors had a wonderful experience. As we got to know the local business owners, we could see how difficult it was to differentiate themselves with so many cellar doors and restaurants in the market."
What followed was a desire to provide a truly effective and affordable marketing tool for local businesses to be able to tell their story and attract customers.
"We weren't necessarily trying to attract more visitors to the Hunter Valley – but when they were here (or when they were planning their trip), we wanted to make it easier for them to get around and find those unique experiences that they might otherwise have missed," said Di.
"We decided to put a dedicated focus on the Hunter Valley's restaurants, cellar doors, gourmet produce, chefs and winemakers and assist people in finding and experiencing the best wine and food experiences the Hunter Valley has to offer while at the same time promoting each of the wine-producing areas of Pokolbin, Lovedale, Mount View, Broke Fordwich and Wollombi along with the history of each area.
"The navigable, interactive wine and food trails make planning your trip fun and simple and give visitors the confidence that they're getting the best out of the destination."
With over 1.5 million visitors to the Hunter Valley every year to explore the rich bounty of food, wine, gourmet produce, craft beers, ciders, distilled spirits and other specialty beverages on offer, Wine & Dine Hunter Valley has become an essential planning tool and marketing resource for the region.
