Mar–Apr Goodbye Summer, Hello Autumn! Perhaps Wine Country's most Instagramable season of the year – Autumn is undoubtedly our favourite. The rains have transformed our vistas from monochrome to a vibrant green, and the long rows of vines will soon change from deep emerald to shades of red, orange and purple before the leaves gracefully fall for the Winter months. Finally, the days are getting shorter, the temperatures are starting to chill out, and we're all enjoying glorious sunny days with cooler nights. And with the busy Vintage period over, March is less frantic, more relaxed and the perfect time to get out and enjoy everything the Hunter Valley has to offer. From 2 April, our terrain will revert to a time 300 million years ago when the environment was both harsh and spectacular. Dinosaurs, dragons and giant creepy crawlies will invade Hunter Valley Gardens - roaring, buzzing, moving, swarming and crawling both day and night to scare and delight kids and their families throughout April. Experience the deep rumbling and fiery light shows of the region's eruptive past at this year's Mega-Creature, or for a truly terrifying

inosaurs, dragons and giant creepy crawlies are invading the Hunter Valley Gardens - roaring, buzzing, moving, swarming and crawling both day and night to scare and delight kids and their families during the April school holidays. So if you’ve ever wondered what it was like to live in the age of the dinosaurs, or your family includes at least one aspiring dinosaur expert, now is your chance to experience it first-hand. With over 14 hectares of immaculate gardens and manicured lawns, Hunter Valley Gardens has planned the perfect activities to get your family outdoors and enjoying the fresh air these holidays.

The annual Mega Creatures display runs for four weeks from 2 April through until 1 May and is more interactive and atmospheric than ever before, with 30 new creatures joining this year’s display, incredible giant animatronics and the Mega Creatures Night Safari for those that are brave enough to venture into the gardens in the darkness of night! This astonishing display set within the beauty of the magnificent gardens will delight the whole family, appeals to all ages and is an ideal holiday outing for locals or visitors to the Hunter region. Now in its seventh year, this annual event delights with over 100 animatronic and static mega creatures that transport the garden visitors to the age of the dinosaurs and the landscapes of mythical dragons, giant insects and spooky spiders. Every year the team at Hunter Valley Gardens strive to create even better displays and experiences for their visitors so that they can continue to come and enjoy a fresh adventure with no two years ever being the same. “This year we spent a lot of time creating atmosphere. The idea for the Night Safari came to us one night when the gardens were closed and our crew were still on site. The animatronics are on motion sensors, and occasionally something would set them off. The roars and sounds of the dinosaurs in the dark amongst the bushes was eery, scary and delightful all at the same time,” said Event Manager Amanda Andrews. “We knew our visitors would love that experience, so we’ve created the ideal night-time safari using a lot of tech, AV and lighting to build the atmosphere.”

The gardens are divided into zones, and visitors journey through them along the pathway, taking in Dino Land, Dino Hatchery, Dino Adventureland, Fossil Find, Insect Invasion, Dragon Den, Spider Alley, and the Enchanted Garden. In Dino Land you’ll find two giant walking T-Rex (because they’re everyone’s favourite), a 7-metre Shunosaurus, a Carnotaurus, Raptors, Triceratops, a Dilophosaurus, an Ornitholestes family, a flying Pterosaur, a giant Brachiosaurus and the Woolly Mammoths and Sabre-Toothed Tigers will bring a blast of the Ice Age to the Hunter Valley. This year there is an opportunity to get up close and personal with a walking T-Rex for photo opportunities that are sure to delight dino crazy kids. The Dino Hatchery is another place that’s ideal for family photos, with a mega nest full of baby dinosaurs and eggs that visitors can sit in! This year’s Fossil Find includes massive dinosaur skeletons that you can walk past and get right up close to – ideal for young dinosaur fossil hunters. And Dino Adventureland is a soft play area for the youngest of the visitors where they can dig for fossils and create their own dinosaur land. The Dragon Den in the Sunken Garden will have you thinking you’ve stepped into a fantasy land and comprises a giant volcano next to the waterfall. The volcano erupts with lava and is particularly spectacular at night. There are mythical flying dragons and Naga, the giant water serpent that brings the whole scene to vivid life. It’s not all about dinosaurs, though. Insect Invasion sees swarms of giant bees, wasps and frogs while the Enchanted Garden includes giant praying mantis, grasshoppers, a bean worm, caterpillars, glowing sunflowers and mushrooms and even a talking tree. Spider Alley is only for those brave enough to venture into a giant spiderweb with creeping, crawling, moving spiders to freak you out. For Night Safari visitors, you’ll hear them coming for you in the dark! But the fun doesn’t stop there. Don’t miss the Dino Egg Hunt with the chance to win a family pass to this year’s Christmas Lights Spectacular, and in the second week of the holidays, ERTH’s Dinosaur Petting Zoo will be there with baby dinosaur puppets for the young ones to get really excited by. For all the little thrill seekers, the Hunter Valley Gardens famous rides will be operating throughout the event, including the Superslide, Swing Chair, Carousel, Ferris Wheel and Tea Cup Rides. This year you can even form teams and be ranked. During the day, the Amazing Jono will perform every Saturday and Sunday. At night there will be African Drumming Sessions on Saturdays and Fire Performers every Sunday night. Over the Easter long weekend, this year sees the return of the annual family favourite, the Giant Easter Egg Hunt, which had to be cancelled due to covid last year. There are thousands of colourful easter eggs to collect, and at the end of the hunt, every child receives a gift of Easter chocolate. There are hunts every hour between 11am and 2pm from 15 – 17 April. The Australian Alpaca Barn is a family-owned business that was initially established to sell and promote Australian alpaca products made from alpaca fibre grown in Australia and manufactured by the strategic partners of the Australian Alpaca Fleece Limited. Since then, both the business and the industry as a whole have grown exponentially, with the store now also specialising in the quality alpaca products made from alpaca fibre grown and manufactured not only in Australia but also from New Zealand and Peru. The owners of the Australian Alpaca Barn (Marion and Michael Jack) run their own herd of alpaca in the beautiful Torryburn area of the Hunter as well as sourcing wool from other farms in the Hunter region. Their farm, Jacamar Alpacas, started with a small herd of only ten alpacas in 1997, but since then, the herd has grown to almost 100. The couple has also aligned themselves with the top manufacturers of alpaca products in Peru, allowing them to offer discerning shoppers a comprehensive and international range of alpaca products made from the distinctive Peruvian alpaca fibre. The Australian Alpaca Barn has stores located in the Blue Mountains and the Southern Highlands. When Winmark Wines added a gallery to their already well-known sculpture gardens and gorgeous Cellar Door in 2021, it was to connect visitors to art, nature and wine. HUNTER VALLEY CHEFS COOKING THEIR WAY TO LONDON Three aspiring young local chefs cook their way one step closer to London in the preliminary finals of the Brett Graham Scholarship, after a cook-off between six preliminary finalists earlier this month. The Hunter Culinary Association, in conjunction with TAFE NSW, host this prestigious annual event, now in its 18th year. The eventual winner will work under leading Australian chef Brett Graham in his highly acclaimed London based restaurant – The Ledbury. The Brett Graham Scholarship, now in its 18th year, aims to recognise and nurture one of the Hunter Region’s most talented young chefs. The three young Apprentices proceeding to the final cook-off are Ian Tintero of The George Tavern, Jahri Etteridge from Yellowtail, and Jayden Dann from EXP Restaurant (pictured left to right above). Meet The Lusbys INTERVIEW MICHELLE MEEHAN

Twenty-nine years after vascular surgeon Robert Lusby planted the first seed of a dream to establish his own vineyard, Tintilla Estate is still thriving amongst the picturesque surrounds of Pokolbin. Celebrating its 29th anniversary in 2022, Tintilla Estate is well known for producing a range of distinctive, individual and award-winning wines and olive products. This month we've gone behind the scenes with Robert's son James (both pictured above) to harvest the rich history behind this awardwinning family business. YHV: Tell me a little about the history of Tintilla Estate. James Lusby: Tintilla started in 1993. We cleared the land, put in the dams, prepared the soil and planted the vineyard ourselves. My parents always had an interest in wine, and while living in California, I could see the potential of a small, dedicated boutique winery. They chose the name Tintilla, a word used by the 17th-century writer Samuel Pepys in his diary, interchangeably with Claret to refer to red wine. We planted mainly red wines on our hillside block, so the name seemed appropriate.

YHV: Which members of your family are involved, and what are their roles? Every member of our family is involved to some extent. My dad helps out with mainly viticultural things while my mum is active in the cellar door. I am the winemaker and manage the viticulture as well; my youngest brother John works in the cellar door, does the books and generally helps both in the winery and vineyard, my sister Justine helps with marketing, organising our presentation and also cellar door sales as does my brother Edward. Both Justine and Edward are part-time, having other jobs in Sydney. Can you describe Tintilla for anyone that has never visited before? We have a picturesque site surrounded by native trees and lined by olive trees. You look over the vines from the cellar door, down a gentle slope with various blocks with the vines orientated for best drainage and sunlight exposure. A large dam at the bottom of the hill leads to the creek bed soil where our Semillon is planted.

I believe the olive trees were planted before the vines - what made you choose to grow olives? We have over 500 olive trees planted in parts of the property that were not so suitable for grapes. We chose mainly eating varieties, although many are dual purpose. Manzanillo, Sevillano, Frantoio, Verdale and jumbo Kalamata are the main varieties. We cure and pickle them on the property and sell them in the cellar door. We also have an orchard from which we produce seasonal jams and relishes. When were your grapevines planted, and what varieties do you grow? Are your wines produced only from the grapes grown on the estate? Yes, we are a single vineyard producer, with Shiraz on the hill slope, Merlot at the top of the hill, Sangiovese also on a hilly nob, Semillon and Cabernet Sauvignon are planted on the creek bed flat. We grow the grapes and make the wine with passion!

Tell us a little about your background as a winemaker - when did your interest in it begin? Most of my training was done on the job, working under, and learning from an outstanding winemaker, although I also did a TAFE diploma in viticulture with wine science. I have worked in the USA at a winery called Colombia Crest in Washington state. I came up from being a vineyard manager to winemaking, which I think gives you a much better understanding of the grapes and leads you into making better wines. What is your philosophy when it comes to making wine? Doing the viticulture ourselves and ensuring high quality, we let the fruit speak for itself - not too much interference but striving for excellence. (Continued next page) F

We do between 40-60 tonne of our fruit and an additional 20-40 tonne of contract winemaking here at Tintilla Estate. We produce Semillon, Chardonnay, Shiraz, Merlot, Cab Sav and Sangiovese. We were the first to plant Sangiovese in the Hunter Valley. With these varieties, we make dry table wines, blends, sweet wine, sparkling, Rosé and fortified (Ports), something for everyone we hope. It's a fortunate person who can pursue a personal passion and work in a profession they are passionate about. But for ex-jockey turned winemaker David Fromberg, being able to follow and work with his two passions – training racehorses and winemaking is as good as it gets. As a winemaker passionate about creating wines, David opened his cellar door for his Running Horse Wines label in 2018 - almost two decades after he first planted vines on his family's 56-acre property at Broke. Running Horse Wines is located within the picturesque surrounds of the Broke Fordwich region. It has been created to allow visitors to appreciate fine wines while taking in the beautiful and expansive views and really is something special. Designed by his friend and architect David Kaunitz, the cellar door has been constructed using six elevated shipping containers that have been artfully repurposed with extensive use of glass to open them up to the surrounding landscape overlooking the iconic Yellow Rock Escarpment. The design makes the most of the tapestry of views surrounding the complex, with the cellar door orientated to showcase the distant mountains. Massive sandstone boulders seem to anchor the weathered steel buildings into the natural environment. The interior is equally as impressive with timber, glass, copper and steel featuring prominently, with a mass display of wine bottles creating an eye-catching feature along one wall. The true centrepiece of the space, however, is the gleaming glass-topped bar, which incorporates a series of light panels that help to showcase the colour and clarity of the wine being tasted. What's most impressive about Running Horse Wines, however, is what’s in the bottles. David is one of the few vignerons in the region specifically producing aged wines, with his range including varieties of Semillon, Verdelho, Rose and Shiraz. "With Australia making "drink now" wines of exceptional quality, the finer and more impressive aged wines have taken a back seat," says David. (Continued next page) F

The Significance of Signature Wines WORDS QUENTIN VON ESSEN The Hunter Valley is the country's oldest and premier wine region, where the pleasures of eating and drinking wine are celebrated daily. This beautiful area has been built on more than 185 years of passion and dedication to the craft, resulting in the production of many world-class wines and, in particular, some of the world's best and most distinctive styles of Semillon and Shiraz, which are the hallmark of this region. The most recognised of these is Hunter Valley Semillon – the Hunter Valley's flagship variety providing a truly outstanding example of this wine in terms of quality and taste and with a style that has not been replicated anywhere else in the world. As a cellaring wine, it is one of the most outstanding whites in the world and can live for a good 20 years, often much longer. Other varieties grown include Shiraz, Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay and Verdelho, which have all produced great Hunter wines. The region is also home to a talented list of winemakers who are at the forefront of innovative and new varieties, including Pinot Grigio, Viognier, Gewurztraminer, Chambourcin, Sangiovese and Barbera, amongst others. Of the more than 140 cellar doors making up the various Hunter Valley wine trails, you would be hard-pressed to find one that did not include a Semillon or Shiraz amongst their flagship or most awarded wines. So, what makes a flagship wine? It's a very subjective category with different winemakers or vignerons providing very different responses on what they consider to be the makings of a flagship wine. The term "signature" or "flagship" wine does not have a specific definition within the wine industry, so no hard and fast rules dictate how a winery chooses their flagship wine or even if they have one. If a winery does have a flagship wine, it could be based on their most awarded wine; a winemaker's favourite wine they produced or one that the winemaker believes best represents the style they’re trying to achieve.

At the end of the day, the common theme amongst winemakers is that these are not wines made from a desire to have a flagship wine or to aspire to icon status. Instead, these are wines of exceptional quality – wines that reflect the characteristics specific to the winemaker's vineyard and reflects the typical style of the person who has made it. In addition, it is a wine that embodies the grape varietal and region in which it was grown. The benefit of having a flagship wine is that it enables consumers to recall, differentiate and recognise the winery. It doesn't have to be based on a grape variety, but instead could be a blend, a wine style, such as sparkling or Rosé, or even a unique winemaking technique. This principle also applies to wine-growing regions worldwide, with some wine regions receiving global recognition for producing excellent wines amongst certain varieties. For France (Burgundy), it's Pinot Noir and Chardonnay; for Italy (and in particular Tuscany), it's Sangiovese; in Southern Italy, it's Taurasi; in South Africa, it's Chenin Blanc and the unique variety of Pinotage; in Argentina it's Malbec; for Chile its Cabernet Sauvignon; for New Zealand, it's Sauvignon Blanc; for Portugal (Madeira) it's Verdelho, and for the major Spanish wine regions it's Tempranillo. Closer to home, the flagship variety for the Hunter Valley is its worldfamous Semillon which wine critic Jancis Robinson once described as "Australia's wine gift to the world" and Shiraz. For the Swan Valley, it's Verdelho, and South Australia's Clare Valley is better known for its Riesling. In the Yarra Valley and the Tamar Valley in Tasmania, the flagship variety is Chardonnay and Pinot Noir. The Barossa Valley is primarily known for its red wine, particularly Shiraz, and for the Margaret River, it's Cabernet Sauvignon. These flagship varieties serve to attract consumers to a wine region or a particular winery and to experience all the other varieties and everything else on offer in the area – wines that are of exceptional quality, that are emblematic of the region, terroir, winemaker, and grape.

Savannah Estate Wines are produced from small select parcels of premium fruit grown in renowned viticulture regions throughout Australia. The Denman Chardonnay combines everything it means to be a Chardonnay with the balance of the fruit and oak. This wine can be aged however Savannah says “why wait?” TASTING Wonderfully lifted, floral, ripe and generous. The upfront aromas are of citrus blossom and ripe green melon. There are also spiced aromas of cinnamon and clove with hints of freshly made custard and vanilla. The palate is ripe, fresh, complex and clean. The upfront fruit flavours are of nectarine, white peach, and ripe figs. The mid palate is broad with a bready, slightly cheesy complexity. Very dark, almost blackberry juice in colour with magenta and purple hues. Ripe and juicy with lifted fruit aromas of stewed black fruits. This is supported by herbaceous nuances of rosemary and dried basil. There are also hints of vanilla bean and a waft of freshly roasted coffee. TASTING Full bodied, layered, complex and long. The upfront fruit flavours are of ripe and juicy blood plum and mulberry. The mid palate is multi layered with biscuit like flavour, a slight herbal flavour of fresh lavender and hints of aniseed. The late Maurice O'Shea planted the Lovedale vineyard in 1946 with incredible foresight, recognising that the unique structure of the land and the surrounding environment would deliver the tightness and acidity for world-class Semillon. Aroma - intense citrus and lemongrass combine with bottle age characters of lanolin and toast. The 2021 season was the drought- breaking vintage with enough rain to test any vineyard management skills here in the Hunter Valley.
