There’s something about Spring that warms the heart. Buds are bursting, the sweet smell of jasmine and other blossoms fill the air and everything is coming back to life after a frosty Winter – kind of feels like ‘love is in the air.’ It’s somewhat fitting then that this month’s cover story is a visit to a beautiful historic property in Wollombi that has blossomed into one of Wine Country’s most popular and unique wedding venues. It’s been a labour of love for the owners of The Woodhouse Wollombi, but not one without the rewards that come from happy couples tying the knot at a property they’ve created from the ground up. Read more on page 12. This month we also chat to Tamburlaine Winemaker Conor Brasier about picking the perfect wine. While having a little background knowledge is helpful, it seems that knowledge of your own palette is essentially the true judge of all wines. Pick up some handy hints on page 22.

This month we caught up with Chefs Gary Schofield and Vanessa Blake to find out how things are going at The Cellar Restaurant, which they have co-owned for just over a year now. You’ll find our “Chef’s Chat” on page 25. With the warmer weather, you may well be contemplating ditching the reds in favour of whites. Don’t do it before you’ve devoured our Spring Sips Worth Savouring in this issue – and then – don’t do it at all! Perhaps a chilled Sangiovese alongside your Pinot Grigio is exactly what you need in this transition season of roller-coaster temperatures and tastes.

W

hen you work in the wedding industry, you’re bound to hear stories of love at first sight.

So it seems fitting that was precisely how Gabrielle Dal Bon and her partner Chris Browning felt when they came across the picture-perfect Wollombi property they have transformed into one of the premier wedding venues in the Hunter Valley. Sitting near the eastern boundary of Yengo National Park, with the splendour of the World Heritage-listed wilderness right on its doorstep, historic Redwood Park is a stunning 100-acre property featuring natural bushland, expansive park-like grounds, a large tranquil lake and a renovated 140-year-old barn converted into self-contained accommodation. “We have owned the property for 16 years and are the fourth owners since 1880,” Gabrielle said. “We were first attracted to the property because of its location in the Lower Hunter and proximity to Wollombi which is an easy drive from Sydney and was still relatively undiscovered at the time.

“Secondly, it was the natural beauty of the property that initially caught our attention. After looking at several properties in the area in 2004, the moment we saw this property, we just knew it was the one for us. “The 100-acre property has 40 acres of manicured grounds and rolling lawns, bordered by Wollombi Brook, which provides endless Summer entertainment for our son Oscar and his friends. “The centrepiece of the property is, without doubt, the large lake flanked by a cantilevered pavilion over the water and the beautiful sculptures we have managed to acquire over the years from some leading artists.” While it had potential to be a fantastic family home and a prime source of income thanks to The Barnstay accommodation, the idea of capitalising on Redwood Park’s natural beauty and built assets to create the perfect self-contained wedding venue wasn’t even on the radar when the couple purchased the property in 2004. Further renovations to the barn and an extensive landscaping project saw the couple transform the property into an even more magnificent destination, and it was this labour of love that unexpectedly set them on the path to becoming one of the Hunter’s finest wedding venues. “Weddings were the furthest thing from our minds when we bought the property… they happened quite by accident,” Gabrielle said. “After having spent six years designing the gardens and planting thousands of trees, we were approached to host a marquee wedding which was subsequently covered by White Magazine. This led to more opportunities and started an entirely new business for us taking us to where we are today. “We are very much a family operated business and proud of that fact. The property has been a labour of love, and it’s been a real team effort to have achieved what we have in the past 16 years. “The landscape has undergone quite a transformation over that time, with over 6000 trees planted and everyone – Chris, both sets of parents, (Continued next page) F

(Continued) our son Oscar and I, have all played an important part, and continue to do so. “It has not been the easiest path, but it has been very rewarding, and nothing is more satisfying than to show couples through the venue and know that they want to get married at a property we created. All that hard works melts away and puts a smile on our faces.” While the marquee weddings were beautiful, the family decided to step things up a notch by creating a bespoke wedding and event space that would provide happy couples with even more choice and versatility when it came to planning their dream celebration. “The Woodhouse was completed on August 19, 2018, and was the culmination of a vision to build something truly unique in the Hunter Valley,” Gabrielle said. “The Hunter Valley has so much to offer, and we felt that despite there being so many amazing venues, there was something still missing. “That missing piece was something genuinely stunning that still offered the flexibility that couples value, which was frankly not available at many venues, where it can be quite restrictive. “The building design was a collaboration between myself and an architect friend and the vision was always very clear – to build a building that would pay homage to the humble shed but translate that into something more modern and timeless. “It was also essential to use natural elements such as beautiful Australian hardwood and to preserve and reuse bridge timbers from our local Williams bridge, which we rescued when the bridge was torn down and are now the centrepiece of our outdoor undercover dance floor. “With the completion of The Woodhouse in 2018, we morphed from doing marquee, DIY weddings to full-service weddings. It completely changed our business model and target market. “Following the launch of The Woodhouse, we knew it would be inevitable that we would need to seek outside help at some stage. “That occurred this year when we hired our first Event Manager, Michelle Horner. She has been a breath of fresh air and a real asset for our couples. “Michelle comes from event management at the Hilton Hotel so is well qualified to deliver outstanding customer service, advice and guidance to couples of The Woodhouse.” The Woodhouse is a true masterpiece with a rustic but refined European elegance, from the striking geometric lines of its architecture

to the sleek, high-pitched Colorbond roofline and the stunning golden tones of its timber-clad exterior. Exposed timber beams have been used as a feature of the covered outdoor dance floor as well as in the main event space inside, providing a beautiful natural texture that adds to the country-style authenticity of the building, while the soaring 7m-high ceilings and 4m-tall windows add drama and grandeur with plenty of natural light. Every detail has been well thought out, from the Robert Gordon black pottery plate ware, the custom-made 3.6m steel window behind the freestanding fireplace and the bespoke bar to the outdoor firepit with integrated lounge seating and the extensive courtyard. The fully licensed venue uses in-house caterers Fennel & Co. It can accommodate up to 150 people for either sit down or canape-style weddings or events, which are individually designed to suit every couple following the venue’s mantra – ‘your day, your way’. Hosting weddings on site since 2010, Gabrielle said it was impossible to single out any one event as her ‘favourite’. “It is hard to single out any one particular wedding as each wedding is memorable, but what is and continues to be memorable is seeing how each couple approaches their wedding in their own unique way,” she said. “This reinforces and rings true to us, our ‘your day, your way’ philosophy.

We are not a cookie-cutter venue that offers little choice for couples to make it their own. We pride ourselves on our flexibility and service, guiding every couple along the way to ensure they are not overwhelmed. H

ungerford Hill is one of the Hunter Valley's great stories. Nestled in the heart of the wine region, they have grown over the past 53 years to incorporate the award-winning Sweetwater vineyard as well as the famous Dalwood vineyard, which is considered the birthplace of Australian wine and the country's oldest continually operating vineyard. Winemaker, Bryan Currie, has brought a vast amount of experience and vision to the winery since his tenure began in 2016. Nominated for several awards, including Winemaker of the Year, Bryan has gone from a rising star to a winemaker of international renown, cutting his teeth at vineyards across the country and overseas until he found his home at Hungerford Hill. Bryan was responsible for introducing the first commercial Australian plantings of four Southern Italian red varieties to the Riverina region, but here in the Hunter, he's working with wines that are distinctly different. “They [the wines] are softer and slightly lighter-bodied with a very pretty fruit character,” says Bryan. “The whites and reds are more like the traditional Hunter River Burgundy-style wines. “That said, the Hunter is known around the world for its Semillon and Shiraz. Our cellar door serves up some of the best (in my humble opinion) – as well as a healthy dose of local knowledge, thanks to our wonderful staff,” he said. “They're more than happy to point visitors in the right direction and with Christmas approaching, they know precisely how to put a smile on the faces of your nearest and dearest, whether it's with a Sparkling Shiraz or one of our Christmas hampers packed with local artisanal goods and Hungerford Hill wine. FUTURE at

WANDIN This month we chatted with Manda Duffy of Wandin about her (relatively) new role at one of the Hunters most scenic and historic estates.

Please tell us about your role at Wandin. How long have you called the Hunter Valley home and what brought you here? I have worked in the wine industry for 28 years and in the Hunter Valley for just over 20 years. I first came to the Hunter with a PR role with the RAAF and started studying Wine Marketing and working in Cellar Doors – which is how I discovered my love for the industry. After nearly a decade at Tamburlaine, my partner and I moved to Queensland for seven years with our baby to be closer to my mum. In 2009 we returned to the Hunter so that I could take on a role alongside Neil McGuigans’ team at Australian Vintage and to majorly grow their Direct to Consumer business. In 2020, I took on the challenge of General Management at Wandin Estate, which I had known for years from when the Davern Family were transforming the property into much of what people enjoy now. One of the oldest Estates in Lovedale, Wandin is still adored by locals and somewhat of a hidden gem. What are the changes you have implemented and the vision for future Wandin? Agree, I’m not sure how it’s been hidden being just off Lovedale Road and the first vineyard off the Hunter Expressway, but it is! When you drive through those big sandstone and iron gates and gaze down to the first of many water views, it is blissful and very calming. The entrance road dotted with kangaroos and birdlife takes you up to the high point on the property which provides the most amazing views back over the valley right across to the Brokenback ranges. Wandin has indeed taken a few different directions in the past; more recently, the focus was mainly weddings. However, when COVID hit, two months after I took up the role, it quickly became apparent that there were other vital operations on the site that needed some attention.

Once the place was cleaned from top to bottom during the lockdown, it was the brand's opportunity to focus on the wines, the way the wines and accommodation were presented and of course, the awesome food. Wandin Kitchen rose to the challenge, and I think I can safely say, is enjoyed by all who visit. John Rutherford, Exec Chef and Tim Richardson do an incredible job with all the menus; however, the Friday and Saturday night degustation’s are my favourites. It’s an authentic space run by a team who love the Hunter and appreciate that every customer has chosen, the place they call home, as their tourism destination. Will weddings still feature moving forward? Weddings are still a significant channel but not the only one. That said, just before shut down, Erin Kemmis and the Wandin Weddings team won the Hunter Newcastle Brides Choice Awards for the fourth year in a row. The wine industry doesn’t have many women driving the industry. You’ve been in it for a while and is that changing at your level? Yes and no. We have a fair proportion of women at that middle management level across winemaking through to sales and marketing. I guess at the GM or National role level, probably not enough. The industry has changed rapidly over the last 30 years, and I am hopeful more balance will come, my team is currently 12, and the split is 50/50. Tell us a bit about the Wandin range of wines. What are your plans for the next 12 months? Our range extends from all the varieties the Hunter does well. Like many, we look to the colder regions of NSW for a splash of Sauvignon Blanc to add to some local Semillon – it’s such a simple, easy drink and no oak. We grow some lovely Chardonnay, Shiraz, Cabernet Sauvignon and Malbec, these all have a place in our ranges and vary in ‘drink soon’ styles versus ‘worth keeping in the dark’, like our medal-winning Reserve Shiraz. Rosé is a must-have in my view, and ours is always a small batch produced from one of the Shiraz vineyards. I have big plans for our Cellar Door and Wandin Membership, and so far I am very proud of the remarkable turnaround, led by Kurt Nilon and his team. We have so many plans for the next 12 months, and I can’t wait to get into the new year where we kick off with the 2021 vintage which is looking terrific at the moment with the grounds cared for by long term team member Greg Hardy. Thanks for taking time out to share a bit about your journey so far at Wandin with our readers. It’s been lovely to share my aspirations for Wandin and hope to see you as our guest soon. I should also mention that our Wombat population is growing... great to have Fatso back in wine country!

To Picking the Perfect Wine

With Tamburlaine Winemaker CONOR BRASIER

Tamburlaine Organic Wines is one of Australia’s largest producers of organic wines with vineyards in the Hunter Valley and Orange regions of New South Wales. Named after Christopher Marlowe's famous play and character Tamburlaine the Great, the team at Tamburlaine work to lead the way with their contemporary organics vision, successfully producing award-winning organic, veganfriendly, low sulphur and no added sulphur wines. According to Tamburlaine’s Winemaker Conor Brasier, an essential skill in choosing the perfect wine is not only having a little background knowledge but also knowing your own palate – which is the true judge of every wine. But how do you choose a wine without the luxury of being able to sample each and every wine at a cellar door? Here are Conor’s tips. BE ADVENTUROUS… Conor’s best advice to wine lovers when trying to choose a wine is to “be adventurous.” “Try something a bit different,” Conor says. “The climate in Orange creates beautiful wines from the lesser-known Bordeaux varieties such as Malbec and Cabernet Franc. My favourite wine at the moment would be our 2020 Wine Lovers Rosé. It’s delicate, floral,

and crisp. It pairs perfectly to a sunny afternoon on the deck with some cheese and charcuterie.” STAY INFORMED… According to Conor, modern wine consumers are increasingly aware. The popularity of Tamburlaine’s vegan-friendly and low/no sulphur wines is evident. “Vegan wines are wines made without the use of any of the traditional animal-based fining agents such as milk and egg whites,” said Conor. “We still fine our wines to ensure that they are as good as we can make them, but we use plant-based additives that are derived from the proteins of peas and mushrooms. “Simply put – ‘no sulphur’ wines have had no sulphur added anywhere in the processing from grape to bottle. “Low sulphur wines are our wines that are made with the minimal level of sulphur additions to ensure the wine is in the best condition possible when it reaches the customer. “The advantage of these styles of wines is to open up the opportunity of enjoying our wines to as many people as possible, regardless of intolerances and allergies.” THINK HOLISTIC… Tamburlaine’s contemporary organics (or contemporary organic principles) are an interpretation of traditional organic tenets, according to Conor. “Along with fulfilling the requirements of our organic certification body (ACO), we employ a company-wide ethos we call contemporary organics,” said Conor. “It is our holistic approach to the entire life-cycle of wine from the vineyard to the glass of the consumer.


When referencing biodegradability and environmental consciousness in relation to wine, Tamburlaine ensures that all the products used can be reused, recycled, or repurposed as efficiently as possible. “For example, we are composting all of the grape waste products from the winery and spreading them in the vineyards. We also partner with responsible waste management companies to ensure our glass and cardboard waste is being processed properly,” said Conor. KNOW YOUR STYLE… “Like anything in life, from art to coffee, there are millions of different ways to make wines,” according to Conor. “The changes you make in the ageing, processing, and harvesting stages all affect the final product. “We tend to go for a delicate touch in our wine styles at Tamburlaine. We pick fruit with lower sugar levels, leading to less alcohol. We use larger format oak vessels for ageing to impart a more elegant oak structure in the wine and we bottle younger and fresher. “All of these elements contribute to making our “house style” which you can see as a fingerprint through all of our wines.” UNDERSTAND THE NOTES… Rather than getting weighed down by trying to interpret obscure terms, Conor said tasting notes should be viewed as the winemaker’s guide to what they want you to be looking for in the wine. “Wine tasting is all about palate memory and the flavour/smell association,” Conor clarified. “Everyone tastes things slightly differently and then processes that taste to associate it with the closest base point that the particular person has. “Wine descriptors are only as limited as the experience and vocabulary of the person. I like tasting with chefs as they have very highly developed palates, but their frame of reference and the associations they draw are vastly different to my own.”

TAKE IN THE TERROIR… There is nothing better than being able to taste a wine whilst taking in the beauty of the landscape from which it has evolved. “Terroir is a French term that encapsulates all of the growing conditions surrounding a wine – from soil to temperate and rain,” said Conor. “The two main regions Tamburlaine sources fruit from are vastly different in terms of terroir. The Hunter is warmer and more maritime with warm days and nights during the ripening period. “Orange is high altitude and inland, giving it excellent sunlight hours for ripening without the extremes of heat during the days and much cooler nights that result in excellent ripening conditions.” CHOOSE QUALITY… Conor’s final tip to choosing a great wine is… “drink less and drink better”. “In wine, like anything, you get what you pay for,” he said. “Buy direct or from independent retailers. Diversity in producers is key to keeping Australian wine as some of the best in the world.” Cheers!

H

unter Valley Wine Country is full of great places to eat, but none has been such a long term favourite of both locals and tourist as The Cellar Restaurant. This month we caught up with Chefs Vanessa Blake and Gary Schofield to find out a little bit more about why it’s such a popular spot.

Hi Vanessa and Gary. You are relatively new to Hunter Valley Wine Country. How long have you been here now and how long have you owned The Cellar Restaurant? We have been here for just over a year now and took the restaurant over in September last year. What is your background in hospitality, and what do you love most about the industry? We are both chefs and have been for all of our working lives. What we love about the industry is that no two days are the same, and food trends are changing all the time. Also, the different people we get to meet and work with every day mean we never get bored. Who else is involved in the restaurant, what are their backgrounds/roles? Apart from ourselves, we have a mix of seasoned professionals both in the kitchen and also working ‘front of house’. We like to encourage young people coming into the industry, so we also try to employ people who are finding their feet in hospitality. What motivated you to get into the restaurant business/ hospitality industry, and what keeps you turning up every day? We were looking at getting out of Sydney, and the Hunter Valley was the perfect choice for us because of its long-standing traditions, but ever-changing dynamic. Learning about ourselves, the business and our community keep us turning up every day – we’ve had great support from locals since we moved to the Hunter.

We at Running Horse Wines have been ageing our entire range of wines and have amassed an impressive, unique and true age worthy wine list that will take you on an adventurous ride to an unprecedented tasting experience. Describe The Cellar Restaurant’s ambience/style – what are your specialities, and where are you located? Is there a reason you are located here? What is the best thing about your location? We have a relaxed and casual ambience in the restaurant, and we are located at the entrance to Hunter Valley Gardens (Shopping Village), off Broke Rd. The best thing about our location is all the different people that pass through and the reasons they are visiting.

Can you tell us in more detail about your menu? Is it seasonal? What are your most popular items, and why? The Cellar Restaurant has a reputation for quality food and service – everything we put on our menu is made in-house, fresh and where possible locally sourced. F

We have seen a change to our clientele since reopening after COVID closures in that some of our guests have never been to the Hunter Valley, and many have not visited for a long time.

Yes – our menu is seasonal; we like to prepare our menu with twists and surprises for our customers and our most popular items change per week per menu – so it’s a bit difficult to put the finger on that one as its literally different every week. What do you think sets The Cellar Restaurant apart from other restaurants in the Hunter Valley? I think The Cellar is good for both summer and winter dining. The courtyard is great for summer, and our open fire keeps it cosy in the winter. Also - we are central to most places, so this is an excellent advantage for the restaurant because it’s easy for diners to find and it's close to most major accommodation. Who is your “usual” diner/guest? Are you seeing any trends or a change in the type of customer you attract? We have many different guests that come through – families, couples, tourists, business people.

What other changes has COVID-19 had on the way you operate? Have these changes impacted you positively in any way? We have had to be a lot smarter in how we operate due to the restrictions, and mindful of keeping our guests and staff in a safe environment. COVID has been positive for us not only from our workload increasing but also the satisfaction of knowing that we can play our part by giving customers a relaxed and safe environment to dine in. Do you have a mission or a vision for the restaurant moving forward? What are your plans for the future? Do you see any key trends in your industry that you are working towards? Our mission is always to keep improving and learning with our small team and to always maintain our reputation for quality food and service. We would love to expand our team, knowledge, acumen, and who knows, if things progress in the right direction, perhaps there’s the possibility of a second restaurant with a difference! With the current changes, we have all just experienced, our biggest priority now is to maintain stability and grow from there. P

Worth Savouring

Spring – the season that wakes us up and stimulates our senses, delivering freshness and vitality and gets us back to enjoying the great outdoors. The French define a proper Spring wine as Vin de Soif – refreshing and thirst-quenching. Selecting the right Spring wine is about weight – not colour and should have a crisp level of acidity, they are generally light in alcohol and body. Think crisp, refreshing white wines – lighter, fruit and acid-driven dry or slightly off-dry whites served well chilled. These are wines that are compatible with salads, shellfish, seafood, pasta, fresh cheese, antipasto and white meats. With the warmer weather, you may well be contemplating ditching the reds in favour of whites. Don’t! Many red wines have qualities that work well in the warmer weather, lighter, with lower alcohol levels, higher acidity and subtle tannins. Chilled red wines can be excellent on a sunny day. Many Australian Pinot Noirs can be lightly chilled without losing personality and character, and varieties such as Sangiovese and Grenache that originated in Mediterranean climates, are just perfect for drinking in warmer weather. What better way to welcome in the revitalising season of Spring than with a gorgeous wine and to help you reach for the perfect bottle every time, we’ve compiled a selection of wines to get you through the season. With or without food, Hunter Valley Semillon is the wine to drink this spring. Naturally low in alcohol and almost devoid of residual sugar, Hunter Semillon is the ideal partner for the season's lighter fish and seafood meals. When young, it's great with fresh oysters, cooked prawns and white-fleshed fish. With some age, it is wonderful when served with smoked trout or salmon, roast chicken, lobster with burnt butter and other flavoursome dishes. F

(Continued) Australian Verdelho, with its fresh, tropical fruit characters is very much the crowd-pleaser and perfect when served with spicy Asian cuisines including Thai, Vietnamese and Malaysian dishes, or simply enjoyed on its own on a warm day. While it is widely grown throughout Australia, the Hunter Valley consistently produce some of the best examples of this variety. Chardonnay – the diva of differences. While Chardonnay makes for great drinking all year round, the warmer months are the perfect time to really get to know the world’s most cultivated grape which is superb paired with shellfish such as crab and prawns, grilled fish, chicken dishes, pasta and risotto. As a tangy, dry white wine that is perfectly light and fresh with fruity flavours such as pear, apple and melon, Pinot Gris or Pinot Grigio is a warmer weather wine through and through and can be paired with a variety of food with ease. A glass of Sparkling Shiraz is always appropriate, regardless of the time of year (or time of day). Not only is it a perfect option for the festive season, but it is a great food wine which pairs beautifully with assorted breakfast dishes (such as classic bacon and eggs, strawberries and cream pancakes), Chinese roasted duck and traditional Christmas menu items like ham and turkey, but its generous fruit flavours can also pair nicely with dark chocolate mousse. RosÊ is a spring and summer staple and is undeniably the first choice for many wine lovers when the weather starts to warm up, and it can be

found everywhere – especially when seafood such as tuna or swordfish is on the menu. This wine is also the perfect partner to barbecued prawns, Moreton Bay bugs and eggplant skewers. Spring just isn’t complete without at least one bottle of Pinot Noir which is without a doubt, the first go-to red wine on a warm day and superb with duck, mushrooms, cured meats and charcuterie as well as seafood. Made for warmer, balmy afternoons in Italy accompanied with freshly baked bread topped with sun-ripened tomatoes, fresh basil, and olive oil, Sangiovese is ideal for chilling and perfect for warm Australian spring weather. 2020 Hunter Valley Rosé (Shiraz Cabernet) – $30 This Rosé is predominantly made from early harvested Shiraz and Cabernet Sauvignon grapes from Iron Gate Estate's home vineyard. The grapes were allowed a traditional short skin-contact time before being gently pressed, and then the clear juice was cool fermented over a few weeks. TASTING A light blush-pink in colour, with aromas of rose bud, redcurrant and fruit pastille and possessing a delicious and savoury cranberry palate, this wine is perfect for any occasion. FOOD MATCH Delicious on its own as an aperitif or it will complement salads, cold meats, tapas, seafood, poultry and pork dishes. CELLARING Drink now to 1 year (Best enjoyed while its fresh).

Thélème Wines – Black Creek Farm 2018 Semillon – $31

Thélème Wines' Semillon grapes grow on the lower end of the property near the creek where the soil is light, sandy and rich. TASTING The Semillon is made using a stainless steel VAT (no oak) and develops those nice citrus and lemon flavours in the nose and the palate. This is a young Semillon with a pale robe and is very crispy and sharp in the palate with a nice acidity. FOOD MATCH The 2018 Thélème Semillon can be enjoyed on its own, or as a pre-lunch drink. It is also a perfect accompaniment to seafood such as oysters. CELLARING This wine will age beautifully for 10+ years. As an aged Semillon, it will become smoother in the palate and will provide deeper and complex sensations.

Mistletoe Wines

2019 Home Vineyard Semillon – $24 Another high-quality off-dry Semillon from the Mistletoe Home Vineyard. The fruit is hand-harvested from low cropped 25-yearold vines, and cold-fermented without any oak influence. TASTING Fermentation was halted at 7 grams per litre residual sweetness and the wine was bottled early to retain the crisp acidity and lemony grapefruit characters typical of this vineyard. FOOD MATCH An ideal luncheon wine, and perfect with freshly shucked oysters or cooked prawns. CELLARING Drink now or cellar with confidence to 2028.
