Can you hear those sleigh bells jingling? Presented by Newcastle Permanent, Cessnock City Council’s CAROLS IN THE PARK returns on Friday, 1 December, at Cessnock Sportsground, with country music star and resident Tara Naysmith returning to the Carols stage as host. Santa’s Little Helpers – a 14-piece big band comprised of talented musicians from across the Hunter – are also back for another year of musical magic under the guidance of Musical Director Greg Paterson. Wandin Estate provides a magical escape from the hustle and bustle of life. Winning awards for its wines, it’s also one of the most highly regarded and awarded wedding venues in the Hunter region, with a reputation for delivering outstanding events – the kind that makes dreams come true. Add a stunning landscape and luxury accommodation for up to 42 people, and it really is the one-stop shop that will exceed the expectations of everyone - from day visitors looking for a wine tasting to couples or families wanting a special lunch
celebration to corporate event planners needing the full multi-day experience for their teams. Heading into wine country from Lovedale, it’s the first stop off the freeway and can easily be the last! Wandin Estate began 50 years ago this year, previously named Millstone Vineyard when local potter and winemaker Peter Dobinson planted the first vines in 1973. The 120-acre estate changed hands in 1990 when James Davern and his wife Philippa purchased the property and renamed it after the fictional town from a television series he produced in the 80s. The television program was called A Country Practice, and the town that Wandin Estate is named after was Wandin Valley. The series attracted 8 to 10 million viewers weekly and was also popular internationally. They set out to create a tourist destination on the

estate that included accommodation, a cellar door, winery, and dedicated function spaces. Perhaps most visionary of all was the development of the Cricketer’s Pavilion and Oval, which was a replica of the famous home of cricket, Lord’s in England, and has since become one of the most sought-after wedding and event spaces in the region. The property would change hands again before current owners Linda and Lipton Tsoi took over in 2016 with a vision to refresh the brand and strengthen customer service delivery. The COVID period presented the usual challenges for the estate in regard to visitation and staffing shortages, but with that now behind them, the scene is set for renewal, spurred on by passionate staff led by General Manager Leona Emeny. Emeny is a hospitality specialist with experience at hotels and resort groups Avani and Stamford and wine labels Levantine Hill Estate, Giant Steps Wines and Penfolds. “We’ve spent the past 12 months bedding down a deeper level of customer service across the estate,” says Emeny. “We want our guest experience to be virtually one-on-one interactions from gate to gate. We’ve reinstated local discounts in the restaurant, Wandin Kitchen, to encourage our local Lovedalians to return regularly. We are the perfect location for date nights, and we’ve been reaching out to the bus tour groups to increase mid-week patronage. There’s a new wine club membership with more events and club packs available and a new wedding package launching in midNovember.” Emeny is well supported by her team, which includes Cellar Door
Manager Matt Perry and Head Chef Tim Richardson. Perry is a local who has spent ten years working in restaurants and cellar doors throughout the Hunter Valley, most notably Ivanhoe Wines and Amanda’s on the Edge. He has been at Wandin Estate for just over a year. Richardson was Sous Chef to the previous Executive Chef, John Rutherford and took over as Head Chef a couple of years ago. He has been at the estate for seven years and was at Hunter Resort before that. He is passionate about locally sourced produce, supported by his own kitchen garden on the estate, providing staples such as rocket, spinach, chilli, and garnishes. The vincotto is made in-house, as is gnocchi and all the breads. “If Tim has a speciality, it’s probably his pork belly. It is crispy every time, and I don’t know how he does it,” says Emeny. “He won’t tell me how. It’s included on many of our wedding menus, and to see it so consistently crispy and delicious is astounding. Patrons at Wandin Kitchen also love the Tasting Plate. The Bridie’s Block Shiraz vines are 50 years old this year and go into the Reserve wines. Semillon is sourced from the Hunter Valley, but the winery also sources Sauvignon Blanc from Orange. The winemaker is Liz Silkman, three times Hunter Valley Winemaker of the Year, and the philosophy behind the winemaking practices is that of minimal intervention, with the fruit as the hero. “Our wines are a true representation of what Mother Nature delivers,” says Emeny.

“Each vintage faces a different environment, and you can taste that in the wines. For example, the 2019 Estate Shiraz is rich, deep and bold, and that’s because we had a hot, dry year that year, but the 2021 Estate Shiraz is light and floral because it was a wet year. “We do a beautiful Reserve Fortified Malbec that is a unique and wonderful dessert wine, very light in style with sweet flavours of blackcurrant and vibrant raspberry. You won’t get that anywhere else. It’s used in our Wandin Affogato dessert in the restaurant and is a customer favourite that I highly recommend.” With such beautiful food and wine available, it is no wonder that the estate has won multiple awards over many years as the wedding venue
of choice for those in the know. The wedding packages have recently been updated and will be launched in mid-November. The new package will include a fourth ceremony location on Vineyard Hill with a mountain range background. The other three locations are Eucalypt Grove by the cricket oval, on the timber pontoon overlooking the dam or for a more rustic atmosphere, The Barn, which offers breath-taking views with an ambience of oak barrels and chandelier. “We’ve also created a new space for smaller events; the Barrel Room under the Cellar Door is ideal for cocktail parties, catering for up to 40 to 50 guests. It can be a bit more casual and relaxed and is often used the night before a wedding when guests have arrived to stay and don’t want to have a huge night. They can get together, enjoy a BBQ and a few drinks and then wander off to their luxury accommodation. Of course, these spaces are not just suitable for weddings but are ideal for corporate
groups or large family celebrations of any kind. We’ve had school formals, club Christmas events, gala dinners, you name it, and we can make it happen.” The Cricketers Pavilion is a dedicated function centre with a separate kitchen that can cater for 120 guests banquet style or 150 cocktail style. It features beautiful glass sliding doors with expansive views over the vineyards and the adjacent cricket pitch. Creating Quality… CAEL’S GATE WINES WORDS LIANE MORRIS | IMAGES ELFES IMAGES For discerning wine lovers, the historic Broke-Fordwich wine region offers spectacular views of the Brokenback Mountains and a growing number of cellar doors worth exploring. The family-owned Cael’s Gate Wines cellar door is one of the most recent additions, and with wines that are already winning international awards, this is one winery worth the scenic drive. Chris and Reyna Chew are the owners of Cael’s Gate, and their journey into wine began in earnest in 2016 when Chris made his first batch of wine in his Sydney garage. Chris has a background in Financial Services IT, has a passion for wine and collected it for investment purposes. Reyna is a Canadian-born paramedic, and their love affair with the Hunter Valley began when they married here 17 years ago. Ever since, they’ve been looking for the right property to purchase. “It was during COVID in 2021 that we finally found our dream property,” said Chris.
“We knew it instantly – as soon as we saw the timber slab construction and unique architecture nestled in the bush and set on 14 acres, we were sold.” “We love the history of the Broke area,” agreed Reyna. “It’s one of the earliest wine-growing regions in the country; you can still see convict-built roads and heritage villages and topographically, it's different. Our property includes about seven acres of ecologically protected flora and fauna.” When it comes to winemaking, it’s all about the quality of the grapes with minimal intervention. “I was fascinated with the idea of what makes great wine,” said Chris. “I began by tinkering in my garage, volunteering on vintages and learning as much as possible from other winemakers. By 2018, I was winning gold medals at the 2019 annual Asia International Wine Competition in Hong Kong and the China Wine & Spirits Awards for the 2018 Handpicked Shiraz. Since then, we've received a number of awards for our wines both locally and abroad, including bronze for our 2022 Hunter Valley Shiraz at the Hunter Valley Boutique Wine Show in October. “We’re excited by the future and have planted one acre of Tempranillo grapes. We don’t plan on growing a lot of our own fruit, though, because there are so many great viticulturists, and we’ve developed wonderful partnerships that provide us with high quality grapes from the Hunter Valley, Mudgee, Orange and the Riverina that go to producing our ranges of Cabernet Sauvignon, Shiraz, Semillon and Rosé. We focus on low-yielding vines to optimise quality and produce small batch, handcrafted boutique wines.” There are plans to erect sustainable and innovative pod-style accommodations to give guests a luxurious experience blurring the lines between structure and nature. Visitors can relax by the stone-tiled fireplace in winter or soak up the sunshine on the wrap-around deck with mountain and vineyard views. The family are often on hand to share the stories behind the wines, and there are cheese platters and ploughman’s lunches available to enjoy with your wine selections. “We want the public to come on the journey of Cael’s Gate with us,” said Reyna. “There are several different spaces to enjoy tastings already, but we have lots planned. It’s a heavenly place we’ve got, and we’re excited to share it with our visitors.”

There was much to celebrate when the winners of the recent Hunter Valley Boutique Winemakers Show were announced on 20 October. Described by the judges as a terrific and highly contested show, there were a total of 318 entries from 49 different wine producers with 180 wines awarded medals. The panel of judges, led by Winemaker Show Chairman Neil McGuigan, were very impressed with the quality of the traditional

varieties of Semillon, Chardonnay, Shiraz, and Verdelho, as well as some of the newer varietal plantings. When it comes to differentiating and judging one wine amongst all others, McGuigan, who has 45 years of industry experience, believes that it is all about the excellence of wine quality and balance. McGuigan, who has also been Show Chairman for the past five years, said Hunter Valley Shiraz, Semillon and Chardonnay all stood out and scored high, which was expected as that's what the Hunter Valley is known for, but what pleased him most was the performance of some of
the newer varieties such as the Italian varieties of Vermentino, Barbera, Montepulciano, Fiano, Pecorino, the Austrian grape Gruner Veltliner and the Portuguese varieties of Arinto and Touriga Nacional. “These new varieties are essential to the Hunter as we need to continue to evolve as a region and produce wines that excite the consumers so that we continue to be a ‘must-visit’ destination. I think we should celebrate the fact that these new varieties can viticulturally flourish in the area and produce high-quality examples of that variety. We certainly do live in a unique wine-producing region,” said McGuigan in his Chairman of Judges wrap-up. The Hunter Valley Boutique Winemaker’s Show started in 1989 with eleven wineries as a competition to evaluate wine made from grapes grown in the Hunter Valley by boutique winemakers and provide an opportunity for small winemakers to show the consumer just how great their wines are. In those early days, the only participants were those vineyards that grew and crushed 100 tonnes. Today, those entering must not produce more than 350 tonnes a year, and the wine fermented in a winery whose total crush does not exceed 350 tonnes. Thomas Wines, Colvin, and Gartelmann Wines emerged as the big winners from a hotly contested show with Andrew Thomas, who earlier this year was named Hunter Valley Winemaker of the Year, taking home five trophies, including the Most Successful Exhibitor Trophy. RidgeView, Mercer and Gartelmann picked up three trophies each, with Gartelmann also being awarded the highly prized Best Red Wine of Show Trophy for the 2018 Wilhelm Shiraz. Colvin, a small vineyard of just over 5 hectares in Pokolbin, received the Karl Stockhausen Trophy for Best White Wine of Show with the 2013 De Beyers Vineyard Semillon. Matt Dillow, renowned chef, restauranteur, and owner of Gartelmann Wines, was understandably thrilled with the win. “We were on cloud nine when we won the award,” said Matt. “We recently won Best NSW Wine at the Sydney Royal Show for our 2018 Diedrich Shiraz, so we are thrilled to win another trophy, this time

with the 2018 Wilhelm Shiraz. It’s great for the brand and a wonderful acknowledgment of everyone's hard work”. For the local wine industry, wine lovers and visitors to the region, it is pleasing to see consistency amongst the classic Hunter varietals, but even more so, the performance of some of the newer varieties, which shows that these new and exciting varieties are flourishing in the Hunter Valley and that local winemakers are focused on catering to a broader range of tastes for consumers.

New Executive Chef Launches Home-Grown Menu Boutique luxury property Tower Lodge, set amongst the vineyards and gumtrees of Hunter Valley Wine Country, has welcomed esteemed chef Anthony Fullerton to the team as Hope Estate Group Chef. Family-owned and operated, Tower Lodge sits alongside a raft of premium hospitality and entertainment venues owned by the Hope family across the Hunter. It includes Hope Estate just across the road with its estate-grown wines, cellar door, distillery, craft brewery, and concert amphitheatre. At Tower Lodge and the broader Hope hospitality portfolio, Anthony plans to step it up a notch, using the Hope family’s own beef from their Barrington Valley farm in the Upper Hunter, which is then brought to the pastures adjacent to Hope Estate for a 40-day grain-based feed up. The grains are used from the other operations onsite, the brewery, winery and soon-to-open distillery, creating a sustainable production approach across the Hope outlets. Anthony’s topline approach is one of ‘farm to table’, where the beef's journey from conception to life on the farm takes the highest priority. Anthony is keen to introduce a dry-aging facility onsite and to try raising different breeds of beef and lamb for diversity. He is keen to build a house-made charcuterie line and has plans for a smokehouse. Accustomed to making friends with local suppliers and supporting the community, Anthony already has his sights on building relationships with the smaller producers in the Hunter Valley food bowl, including farmers of fresh vegetables, herbs and microgreens, mushrooms and garlic. For the Tower Lodge restaurant, Chef Anthony Fullerton intends to let the premium local and regional ingredients – including estate-grown greens and meats – speak for themselves. “With the Hunter’s rich and diverse food bowl delivering such a wide variety of premium produce, we are all about celebrating the products themselves – we let the food do the talking and add sauces and salts, as well as side dishes, to allow the hero produce to shine,” Mr Fullerton said. “At Tower Lodge restaurant, we prefer to offer shared plates to dedicate each course to a whole cut of meat, fish or lamb, and it creates both a real sense of conviviality and a spirit of generosity,” he said. HVMag: Tell us a bit about yourself. How did you get into woodworking and running a market stall? You pronounce my name yarn (Jan), and I’m married to an amazing woman, Anna. We live in Warners Bay with two Leonbergers (Henry and Lucy). I’ve been in sales most of my working life, which is handy when running a market stall. I never thought I would make this my full-time job, as I only got into woodworking to give it a go and see if I could make some cool stuff. I make a range of different items, everything from timber earrings to bottle openers, spoons, butter knives, bowls, resin eggs and vases. I also make wombats! (Editors note: a Leonberger is a giant fluffy dog!) What is the story behind your wombat carvings? My mother-in-law knew I liked wombats and sent me a picture of a carving she had seen. I hadn’t started carving at that stage, so I thought I would give it a go and put my own spin on it. The response was overwhelming, especially after I donated a couple for fundraisers to ACT Wildlife after the bushfires. They took some photos with a wombat that one of the carers was looking after, ‘Wilbur’, and I started getting orders from all over the world. I mostly use camphor laurel as the colours and figures in the wood are amazing, and I get a lot of it from a sawmill up north that works with Landcare, clearing farmers' properties and planting native trees. It has been a fantastic learning curve, with a few visits to the ER, but it’s one I’m happy to have found, and it’s one I am sticking with!
