Most people know Pokolbin as the heart of Hunter Valley Wine Country. But some might not realise that a distinct section of the southern part of the valley, nestled at the foothills of the Brokenback Range, has its own unique identity: the Parish of Pokolbin. Rooted in history, the group of wineries, restaurants and accommodators aim to preserve the wine-making history of the Parish and to use the combined power of the individual businesses to promote the Parish as a premier tourist destination. This month we P.O.P into the Parish to see what it has to offer visitors. There is a definite vein of history interwoven through this issue, and the Winemakers Museum at Audrey Wilkinson is a great place to learn all about the industry and the area. Planted in 1866 and originally named ‘Oakdale’, this was the first vineyard in the Parish of Pokolbin, and a glance through the family album in the museum gives great insight to the birth of Australias oldest wine region.
Also part of the unique P.O.P history is The Convent. Once home to the Brigidine order of nuns in Coonamble about 600km from the Hunter Valley, the main building was meticulously reconstructed and carefully curated with lavish décor right here in the Hunter Valley where it is now a firm favourite and multi-award winning venue. Our annual concert season kicks off this month with Tim McGraw at Hope Estate over the long weekend, followed by FKA at the same venue later in the month. If you love a spot of Jazz, then you’ll be pleased to hear that Jazz in the Vineyards is back this year, with a very special headline act just announced. Read more on page 26. When you’re selecting something from a table of party snacks, double dipping is the ultimate offence. That is, of course, unless you’re indulging in a spot of “Double Dippin” – a mouth-watering selection of healthy homemade dips being whipped up in the Hunter Valley. The cheekily-named condiments are the creation of Angie Miller, a local woman using her love of cooking to create tasty treats without the associated guilt. “I love to cook and try new and interesting foods hence I came up with the idea of making healthy dips that everyone can enjoy without the guilt of eating something that we shouldn’t,” Angie said. Perfect for that family barbecue or catch-up with friends, Angie’s dips not only taste good and are good for you, they’re also created to cater for people with food intolerances who otherwise might miss out.

“Chickpea is used as a healthier alternative, and some homegrown ingredients make for a fabulous dip for a snack when entertaining guests, or as a sandwich spread.” While the business is still relatively new, Angie has already created five amazing flavours including spinach and parmesan, cheese and onion, Mexican, roasted red capsicum with horseradish cream, and bacon.

When I think about a new flavour to add to my product line, I ask myself ‘What would most people be happy to taste if given the opportunity?’, then I whip it up, and my neighbours become the taste testers.
“My latest creation is a chocolate dipping sauce for fruit that is gluten-free and vegan-friendly, making it a win-win for everyone. “My daughter came up with the idea for this one as we wanted a chocolate sauce, but made in a healthy way, so we came up with the recipe together.” Ange sells her gourmet line of dips exclusively through the Handmade in the Hunter Markets and said while Double Dippin is in its infancy, she is enjoying building up her business through friendly, fun face-to-face interactions at the market. Most people know Pokolbin as the heart of Hunter Valley Wine Country. But some might not realise that a distinct section of the southern part of the valley, nestled at the foothills of the Brokenback Range, has its own unique identity: the Parish of Pokolbin. Officially established in the 1880's, the Parish is the oldest wine region in Australia, encompassing some of the region’s best sites for viticulture. Unsurprisingly, it’s home to many of the area’s most popular places to wine, dine, shop, stay and play – and back in 2010, several such destinations came together to form the Parish of Pokolbin group. “The group was formed by a small number of Parish pioneers, including Draytons, Tullochs, McWilliams, Tinklers and Stevens, with a couple of relative newcomers including Ernest Hill and McLeish,” explains Ross Wilson, Secretary of the Parish of Pokolbin group and owner of Ernest Hill Wines. “It now comprises in excess of 50 members with varying businesses including wineries, accommodation, restaurants and activities.” Building on the area’s solid foundation of history, heritage and unique character, the group’s primary aim is to contribute towards the future of Hunter Valley Wine Country. Through partnership and promotion, members of the Parish collectively focus on producing outstanding wines and memorable experiences for visitors. “The main focus is to preserve the wine-making history of the Parish and to use the combined power of the individual businesses to promote the Parish as a premier tourist destination. We are focussed on preserving the integrity of the area as a wine-producing area and a rural tourist destination,” Ross says. “We also have a keen interest in improving the infrastructure of the area and work closely with the council on infrastructure matters.” Ross has been with the group since its inception back in 2010. Managed by a small committee headed by Chairman John Drayton of Drayton’s Family Wines, the group has always placed the area’s historical significance at the forefront of its operations. That rich history of grape-growing and wine-making is what gives the Parish and its businesses a sense of pride and unique identity. “Being a newcomer to the area, after discussions with the pioneers, I understood their disquiet about the lack of recognition for the Parish and that something should be done to restore this historical area to prominence,” Ross says. “The Parish is the oldest precinct of the oldest commercial wine-producing area in Australia. This proud history, coupled with the enthusiasm of the people in the area, make it a great asset for the Hunter Valley wine district.”
Along with its top-shelf wineries and cellar doors, the Parish of Pokolbin is home to a range of food destinations, from Hatted fine dining establishments through to more casual (yet equally delicious) café fare. There are also plenty of accommodation offerings, from the cosy to the downright luxurious, and a bevvy of activities and experiences for those who want to make the most of their Wine Country visit. The Parish has also begun branching out into community events such as the End2End Festival. Spread around four venues throughout Pokolbin, End2End combines wineries, gourmet food, live music and all the best elements of the area into one colossal spring day. The second End2End Festival was held this September, following the success of the inaugural event in 2018. “It was bigger and better this year, and we look forward to it becoming a permanent premier event for promoting the Parish and the valley,” Ross says. (The next End2End has already been booked in for September 19th, 2020 – keep an eye out for early bird tickets in the coming months.)

Turning right into Marrowbone Road and just further up the road you will find Kelman Vineyard and Saddlers Creek Wines, both wellestablished boutique vineyards nestled in a quieter corner of the Parish of Pokolbin below Mount View and renowned for providing a superbly relaxing personal wine experience and for the quality of their wines. Back up on McDonalds Road, Tamburlaine Organic Wines is well worth a visit for both regular wine lovers and fans of organic fare. This unique winery’s award-winning range includes organic, vegan-friendly, low-sulphur and no-added-sulphur products. Leading the way in contemporary organic wine production in the Hunter, Tamburlaine’s process is focused around sustainable production and the long-term
health of their vineyard and soil. The rustic cellar door showcases all its best products, while a behind-the-scenes winery and vineyard tour gives visitors an inside look at the beautiful venue and its environmentally focused winemaking processes. Tamburlaine is also home to various special events, long lunches and scenic weddings. Those seeking something sweet to top off their wine tastings should venture up to Broke Road for a stop at the famous Sabor Dessert Bar. Escarpment Group operations manager Raphael Guillien encourages guests to explore the cellar doors, attractions and scenery of the surrounding area by car or in-house bicycle before retreating to Circa 1876 to savour true farm-to-table contemporary Australian cuisine. “Our executive chef Trent Barrett creates delicious seasonal dishes from fresh regional produce, including what you see growing in our organic kitchen garden next to the restaurant,” said Guillien. “Barrett combines traditional and new techniques while staying true to the produce. He has a passion for using seasonal produce, especially our amazing Australian natives that are widely underused.” The ‘hatted’ restaurant recently added to its long list of awards with two prestigious Restaurants & Catering Industry Association Australia (R&CA) honours – the NSW Regional Contemporary Australian Restaurant (formal) and best NSW Regional Restaurant Caterer. The Convent last year also took out the 2018 Regional Superior Hotel of the Year at the Tourism Accommodation Australia Awards for Excellence and was a finalist in the same category at the Australian Hotels Association for Excellence. Located in an 1800's slab cottage, Circa 1876 is open for lunch and dinner Friday to Tuesday. The Drayton Family
It has been over one hundred and sixty years since the first Drayton arrived in the Hunter Valley and decided to call it home. That Drayton was Joseph Drayton. Joseph was born in 1825 at Lincolnshire in England when at the age of twenty-seven set sail for Australia with his wife, Anna, and their two small boys. Tragically Joseph lost a son, a newborn daughter and his wife during the voyage. In 1853 he and his son Frederick journeyed to Lochinvar and after several years decided to move to Pokolbin where Joseph acquired 80 acres of land and built the 'Bellevue' homestead. In the late 1850's, Joseph turned from growing grain to plant his first vines in the rich loam soil of Bellevue. Joseph went on to marry again and had another eight children. Today, the family enterprise, originally started by Joseph more than 165 years ago is in the hands of Max Drayton and his two sons John, and Greg who embrace modern winemaking techniques and equipment to produce wines of great quality from the 55 hectares of vines. In particular, the Old Flat vineyards of Shiraz and Semillon which were both planted in the 1890's. These 55 hectares with Chardonnay, Semillon, Traminer, Verdelho, Cabernet Sauvignon, Cabernet Franc, Merlot and Shiraz, produce 500 tonnes of fruit. As one of just a few of the original pioneering wine companies that is still family-owned and operated, the Drayton family is very proud of its history over six generations and the part it has played in the
development of the Hunter Valley wine industry and also as a tourist destination. SABOR DESSERT BAR For those who love the sweeter things in life, there’s no better place to go than a dessert bar focused solely on creating a range of more than 50 delicious desserts. What was once a distant and audacious dream for Fernando and Renata Antao turned into reality in 2011 when they moved to the Hunter Valley and opened the first Sabor Dessert Bar in Lovedale in August of that year. Fernando whose parents originated from Portugal and Renata who was born in Brazil but moved to Australia at a very young age spent many years visiting the Hunter Valley and dreamed of opening a dessert bar in the area. After two years of searching for the right location, the couple eventually purchased the old Monahan Estate property in Lovedale. They lovingly renovated the tasting room to become a stylish dessert bar from where they sold a range of individually crafted desserts paired with local wines. This includes the famous and much awarded Sabor Portuguese Chocolate Mousse, which comes from an old Antao family recipe that Fernando’s grandmother started making over 75 years ago. It is still made using the same method and ingredients. Over the years the range of desserts grew to what it is today, a mouth-watering selection of over 50 different desserts, that include decadent cakes, pastries, hand-made chocolates, Portuguese tarts and gourmet ice-cream – each one created individually as nothing is served by the slice.
“Our inspiration for the desserts comes from many places, whether it be my Portuguese background or Renata's Brazilian heritage or from our yearly trips to Bali where we find both inspiration there and the desire to try new combinations of shapes and flavours,” said Fernando. The popularity and demand for their desserts soon resulted in Renata and Fernando having to open a larger dessert bar at the beautiful Lambloch Estate on Broke Road in Pokolbin – a 20-acre property adjoining the historic Lake’s Folly. 2016 Prince of Thieves Premium Reserve Cabernet Sauvignon – RRP $85 A rich well-made Cabernet that is only produced in exceptional years. The previous release was in 2010. The fruit is grown on 50 year old vines that are low yielding but produce incredible quality fruit. TASTING This wine has a full palate with a rich tannin finish. The 2019 KPMG Sydney Royal Wine Show recently announced its results, and amongst the great wines highlighted with awards was the 2013 McGuigan Bin 9000 Semillon, which received the 2019 NSW Department of Primary Industries James Busby Perpetual Trophy for Best NSW Wine. This is an extremely impressive title to hold as the James Busby Perpetual Trophy is awarded to the wine from NSW that has achieved the highest total medal score in NSW-based wine shows over the previous 12 months. To be eligible, the wine must have received a gold medal at a regional wine show as well as at the Sydney Royal Wine Show, and have received a bronze, silver or gold medal at the NSW Wine Awards. “Our 2013 McGuigan Bin 9000 Semillon has put in an outstanding performance at the 2019 wine shows, winning eight trophies at Australia’s four leading wine competitions this year already,” said Neil McGuigan, Chief Winemaker at McGuigan Wines. “To also be recognised with the James Busby Perpetual Trophy is a truly great honour. It is a privilege to follow in the footsteps of the man considered to be the 'father' of the Australian wine industry, and we are incredibly proud to represent the Hunter Valley on the global stage.”

As one of the oldest winemaking regions in Australia, the Hunter Valley is rich in the history of the industry. While a trip to the region’s countless cellar doors will give you a literal taste of its winemaking traditions if you want to sample more of the Hunter’s heritage make sure you pay a visit to the winemaking museum at the Audrey Wilkinson vineyard in Pokolbin. Planted in 1866 and originally named ‘Oakdale’, it was the first vineyard in the Parish of Pokolbin. The vineyard site itself was selected by Audrey’s father, Frederick Wilkinson, who had trained for several years in Burgundy and Alsace. The north-facing natural amphitheatre, where the current Audrey Wilkinson Vineyard sits, was one of the site’s key attractions in Frederick’s eyes. However, it was a surprise element that proved to be the site’s most successful feature. Unknown to the Wilkinson family at the time, the site sits on eight different soil types, introducing unparalleled natural variation in growing conditions and allowing for a multiple of varieties to be grown. Audrey Wilkinson was 15 years old when he assumed the daunting role of running the family vineyard following the death of his father. While Frederick had garnered a rare body of winemaking knowledge from his time spent in France, which he put into practice by producing still table wines in the European style at a time when most other Australia winemakers were just producing fortified wines, Audrey famously relied on his incredible sense of smell, as well as his amazing knowledge of the land he had inherited, to help him produce some of Australia’s finest wines. These days the Audrey Wilkinson Vineyard is owned by the Agnew family, and General Manager James Agnew said that when his family took on the vineyard, they also inherited the Wilkinson family photo album, which documented the Wilkinsons at work and play from

the late 1800's through to the early 1900's. This gave them the perfect opportunity to showcase the rich history of one of the pioneering families of the Australian wine industry. “These were the pinnacle years for the Wilkinson family in the Hunter Valley, and yet it was striking how little was known about the Wilkinsons in the modern era,” he said. “They were truly the forgotten pioneers of the Australian wine industry, let alone the Hunter Valley. “At the same time, there was standing history in the form of the reconstructed Old Winery, which now forms half the cellar door, which also contained the historic cement fermentation vats. “Our founding Chairman, Brian Agnew, saw this as a story too good not to be told and so set about engaging some of Australia’s best historians and museum curators to research and develop a museum to be housed in the Old Winery, which celebrates the achievements of the Wilkinsons and the Hunter Valley wine industry more broadly.” Among the key attractions of the winemaking museum are the heritage awarded open cement vats, a cutting edge improvement in winemaking technology that Audrey helped to develop in the early 1900's. “Today, one of the hot alternative ‘emerging’ winemaking methods is to use concrete fermentation vessels once more,” James said. “Yet on 12 November 1902 (a date very conveniently scratched into the wet cement of one of the vats), Audrey Wilkinson was at the bleeding edge of winemaking technology when he oversaw the installation of a number of these cement vats – a vast improvement from the notoriously fickle wooden fermentation vessels used up to that point. “The great benefit derived from using these cement vessels was the moderation of temperature during fermentation. When grape juice is fermenting, the temperature of the liquid can rise to close to 40°C, which can sometimes bring about unwanted aromas and flavours in the finished wine. “The cement vats help moderate these temperature spikes and were critical in producing fine, dry table wines styles as was the goal for the Wilkinson clan.” The museum is free to visit and provides a unique insight into the winemaking practices of the past, housing one of the best displays of antique cooperage tools in the country, as well as the heritage awarded cement vats and some of the fabulous old photographs from the Wilkinson family album.
