FROM THE EDITORS Much like fashion, food and music, wine styles can define an era. So, what are we drinking now that is so different from 10 years ago and what will this year bring to our palettes? From Dry Rosé to Orange Wines and Young Reds, in this issue, we round up the wine styles that will define 2018. Organic wines are also a major focus for this year and beyond, and this month we shine the spotlight on our local organic wine producers. For some, the words ‘sustainability’ or ‘organic’ may just be buzz-words – but for these producers, it’s a way of life and holds major benefits for the environment and us as consumers. Building a successful artisan market is not an easy task, but this month Karen Rowe of Hand made in the Hunter Markets will celebrate her 7th year in the business. A lover of creating herself, the last seven years have been more like a labour of love, but for visitors to the Hunter Valley, the markets are a must-visit destination to pick up that prized piece to remember your stay.

And of course who could forget The Gum Ball 2018! It’s now one of the most loved and highly anticipated music festivals on the Hunter’s event calendar and this month we spoke to the event's founder, Matt Johnston who tells us that all he really set out to do was host a small music festival in his parents’ front yard. Another annual Hunter event that is a great family day out and well worth a visit is the Tocal Field Days. Attracting around 30,000 visitors and over 400 exhibitors each year, it’s the regions premium agricultural event and a great way to introduce city kids to country life with a genuine rural experience.

The 13th annual A Little Bit of Italy in Broke festival will once again bring the essence of Italian hospitality to Broke Fordwich on Saturday 7th and Sunday 8th April. Stretching across 11 venues, the festival brings with it a weekend full of fun, laughter and hospitality. Relaxation and indulgence are yours for the taking, with plenty to see, do, eat and drink. Dark Horse Vineyard in Lovedale will host the inaugural Polo in the Vines event on Saturday, 7th April. It will be the newest addition to the popular Urban Polo series which stages seven events annually, including ‘Polo by the Sea’ and ‘Polo in the City’, the latter of which has been running for 13 years and is the world’s largest national polo series of any kind. Like many popular contemporary sports, over time substantial changes have been implemented to make them more appealing to spectators, such as the removal of technical rules in favour of a faster and more exciting spectacle. Urban Polo has followed this tradition of sporting innovation by developing a variation of polo which is both as exciting to watch as it is to play. It’s defining features include a significantly smaller field (approximately 140m rather than 300m long), which brings the game closer to the spectators, and improves player reflexes as the smaller field means they are usually closely marked by the opponent. To account for the smaller field, and maximise spectator safety, the ball size has been increased by approximately 10% and made from a lighter, but solid, plastic composite. This ball poses minimum risk compared to a hard, traditional ball and flies a shorter distance, yet maintains a true trajectory while allowing for an experienced Urban Polo player to curve the ball. Following this success, Brahimi took the reigns of Bilson’s at Circular Quay and then the prestigious Bennelong restaurant at the Sydney Opera House, which was renamed Guillaume at Bennelong. Under his direction, both restaurants were awarded Three Hats from the Good Food Guide, joining the ranks of the few elite Sydney restaurants to earn this accolade each year. In 2016 Brahimi launched Bistro Guillaume Sydney. Inspired by the most popular neighbourhood bistros of Paris, it offers a menu abundant with French classics that celebrate Australian produce. Held in the Dark Horse Barn, VIP ticket holders will enjoy an amazing six-course meal prepared by Brahimi and his team, matched with Hunter Valley wines presented by local sommeliers. It’s on again – so toss off your shoes, roll up your pants and join in the fun of the Cessnock Stomp Festival. In its third year, the Ben Ean Cessnock Stomp Festival will again deliver the very best our region has to offer in a one-day festival right in the heart of Cessnock, on Vincent Street. On Sunday 8th April from 10am to 4pm, the streets of Cessnock come alive with over 10,000 people enjoying great wine, beer and food, as well as market stalls, fashion parades, entertainment and of course, a grape stomping competition! OF The Gum Ball’s Major Drawcard WORDS Michelle Meehan It’s one of the most loved and highly anticipated music festivals on the Hunter’s event calendar. But when Matt Johnston put together the first edition of The Gum Ball in 2005, all he really set out to do was host a small music festival in his parents’ front yard. It took six months to organise and saw about 200 people roll up to see a bunch of bands do their thing in the bushland surrounds of the Johnston family property at Belford, which is now known as Dashville. Fast forward 13 years and The Gum Ball has evolved into one of the hottest tickets in town - a three-day gig that regularly attracts more than 1500 music lovers of all ages to see a mix of emerging and established Australian and international bands. The 2018 festival will take place on April 27-29, with 27 bands and musicians on a truly diverse line-up, headlined by the hugely popular Melbourne-based hip-hop artist Remi and supported by everyone from The Bamboos and Butterfingers to French Canadian outfit Les Hôtesses d'Hilaire in their first tour to Australia. The diversity of the music on offer is certainly one of the real attractions of The Gum Ball according to Johnston, with the line-up mixing musical genres and styles from rock and soul, through to hip-hop, country and everything in between. “I think people sort of see it as a bit of a discovery for new music, I think that’s one of the reasons (they like coming to Gum Ball),” he said.

“I guess it’s hard to be on the pulse of new music these days, so a lot of people I know treat Gum Ball as their big discovery, they’ll meet 30 new bands each year, so I think that’s probably a big (attraction) for sure. “It’s a daunting task putting together the line-up for Gum Ball, always has been and I guess we’re always proud of what we achieve at the end, but it’s definitely a rollercoaster. “There are always bands that you have got on your target list, and there are still bands that I have been trying to get for the past ten years that I haven't been able to get. “We’ve definitely achieved a lot of great acts like You Am I and Hoodoo Gurus, lots of these bands that we thought I couldn’t wait to the day that we get those guys and convince them to come along. “With this line-up this year there’s Screamfeeder and even Hat Fitz and Cara, they’re artists that we’ve been trying to get onto the Gum Ball since the very first festival. Hat Fitz was booked to play the very first Gum Ball back in 2005, and I actually changed the date, and he couldn’t make the new date, and this is the first time he’s ever been. (Continued ►)

(continued) “It’s a very daunting thing selecting a line-up for Gum Ball. But because I love music, and I love different types of music, every single one of those bands has passed the test for me I guess in some form, and I think it all goes together into a pretty good mix of music over a weekend.” With BYO arrangements and on-site camping, the Gum Ball is a lot more laid back than your average music festival, but Johnston said that is another major element of its appeal. “People really enjoy it, it’s nice and simple, no unnecessary rules,” he said. “It’s also pretty accessible for families to come along too, there’s a lot of parents that bribe their kids during school holidays that they have to be good or they won’t get to go to Gum Ball.

I think (it works) because it is a fairly simple concept. We have lots of great music, and we have a bit more of an exclusive festival feel. For people that have probably been to a lot of festivals or haven’t been to one in a long time, Gum Ball’s a good comfortable option. We're sort of unique in what we provide."

The wine itself is made using white wine grapes, however, instead of following the standard process where the grapes skins are discarded once the juice has been extracted, winemakers leave the two together for an extended period. While it’s unlikely orange wine will ever replace white or red as a mainstay of any wine producer, it’s clear the amber-coloured drop will be on the menu for a few more years to come.

DRY ROSÉ The world has fallen hopelessly in love with Rosé, with imports from France booming as well as local sales of this quintessential summer wine Today, there is a new surge in the popularity, and the number of Rosés on the market continues to grow, seemingly unabated. In fact, the demand for traditional dry Rosé is so widespread that across France, Rosé outsells white wine and outside of France, rosé is experiencing a rebirth.

This rise of ‘alternative’ varieties in Australia is becoming an increasingly important topic for the country’s winemakers which has been largely driven by an increased awareness that the ‘traditional’ varieties planted in Australia – Cabernet Sauvignon, Shiraz and Chardonnay, don’t always suit the sites or regions they currently occupy. A growing number of Hunter Valley Wineries have adopted some alternative varieties that include Grenache, Tempranillo, Sangiovese, Durif, Nebbiolo, Barbera, Tannat, Petit Verdot and Chambourcin amongst the reds and Vermentino, Savignin, Fiano, Pinot Gris/ Grigio and Viognier amongst the whites – and with fantastic results. Over the next few years, you can expect many of these wines to become increasingly known and popular with wine drinkers and close the gap on some of the mainstream varieties. These newbies add another dimension to our wine drinking enjoyment, giving the consumer a touch of the exotic, new tastes and also provoking debate. YOUNG LIGHTER REDS Long gone are the days when you needed to cellar red wine for years before it was ready to be drunk. Now we want our reds medium-bodied, full of freshness and fruit - wines made from grapes such as Gamay, Pinot Noir, Cabernet Franc and lighter interpretations of the traditionally fullerbodied varieties like Shiraz. Pinot Noir is one of the fastest growing varieties in the red wine category in Australia.

VERMOUTH One of the most exciting wine trends in 2018 is the growing number of producers making Vermouth - an aromatised, fortified wine flavoured with various herbs, roots, bark, flowers and other botanicals and now also one of the hippest - and most sought-after mixers behind the bar. Vermouth gives winemakers enormous creative freedom, and us the consumer, a whole new range of flavours, to experiment with and enjoy.

VARIETAL REVIVAL The landscape of Australian wines has changed significantly over the past decade with wine lovers eagerly searching for something new, and increasingly drinking wines made from alternative grape varietals, in particular the Italian and Spanish varieties that tend to suit Australia’s warmer climate regions. While the varieties of Negroamaro, Barbera, Montepulciano, Fiano, Nero d’Avola, Nebbiolo and even Grenache are hardly unknown varieties in Australia, the term “alternative variety” encapsulates those varieties that stand outside the mainstream and are not widely planted.

GROOVIN' THE MOO Fifteen years ago, two friends from Newcastle came up with the idea for a music event that focussed on local community involvement, affordability and of course fun! As the idea grew it gained momentum and with the support from their neighbourhood, Groovin’ the Moo was born. The inaugural event was held in 2005 at Gloucester and saw 1,400 people stream through the gates to see the Screaming Jets, Killing Heidi, Evermore, Grinspoon and a bunch of local Newcastle bands. Now in it’s 13th year, Groovin’ the Moo is now Australia’s biggest regional touring festival. The event, which sells out each year, is returning to Maitland Showground on Saturday, April 28th, with their hottest line up to date. This year’s line-up includes Alex Lahey, Amity Affliction, Baker Boy, Ball Park Music, Mall Rat, Vera Blue, Winston Surfshirt, Ocean Alley, Dean Lewis, Sampa the Great, Tkay Maidza, Flight Facilities and Australian music veterans Paul Kelly and Grinspoon. The international guests also joining the line-up include UK powerhouse Royal Blood, Duke Dumont, Lady Leshurr, Claptone and Portugal. The Man. In addition to providing a line-up of fantastic musical acts, Groovin’ the Moo strives to showcase and support communities and regions that are often those less travelled. Dining at Oishii is like few other restaurant experiences, and it is easy to see why Oishii has become a highly recommended and favourite dining destination amongst locals and visitors. Located within the Roche Estate complex on Broke Rd in Pokolbin and overlooking the architecturally designed amphitheatre and vines, Oishii provides a conveniently located, relaxed and affordable dining alternative with dishes designed to please every palate. The menu at Oishii is a combination of two Asian cultures - Thai and Japanese and includes traditional Thai favourites such as Thai fish cakes, stir-fried vegetables, chicken cashew nuts, green curry chicken and other fragrant Thai curries right through to Japanese dishes that include assorted sushi and sashimi selections, teppanyaki and teriyaki. There are also a variety of vegetarian dishes. We decided on the chicken satay, and assorted sushi and nori rolls for the entree as well as the miso soup which proved to be a perfect accompaniment to the Japanese dishes. We then made a selection of three Thai dishes all served with steamed rice for main courses. Our first selection was the yellow lamb curry from the specials board. This dish was superbly presented, and the lamb was deliciously tender with just a hint of ginger and crushed garlic. (Continued ►)

(continued) The sweet and sour chicken - looking colourful and healthy, was served with cucumber, tomatoes and shiitake mushrooms and with a tangy and extremely delicious sweet and sour sauce. Our last dish was our favourite and a very traditional Thai meal - the Panang duck curry and as I later discovered a very popular dish amongst Oishii's patrons. It came served with juicy and generous slices of skinless duck sitting within a deep-flavoured Panang curry sauce, and after the first taste it was easy to see why this dish was such a favourite – it was delicious and left us wanting more. The dishes are perfect for sharing and ideal for families or groups of friends. The setting is minimalist and with a Thai-themed dining room. Diners also have the option of dining outside on the terrace overlooking the vines - a perfect setting for those warmer days and evenings. If someone told you that filling a cow’s horn with manure and planting it at a certain phase of the moon would help produce healthier grapes and vines, you could be forgiven for thinking they had gone nuts. Weird, it may sound, but this is one of the fundamental steps in biodynamics, a form of organic viticulture embraced by hundreds of wineries throughout the world, which originated in Europe more than 90 years ago. Dramatic changes to our planet have changed the way we think about those components we typically take for granted - the water we drink, the food we eat, the air we breathe and the way we treat the land that makes this all possible. To some, the words ‘’sustainability� and ‘’organic’’ may come across as soft and fuzzy buzzwords – and are often misused, but grape growers are grabbing onto it, with many winemakers and viticulturists making a move towards more sustainable farming methods and gaining a better understanding of biodynamic and organic farming and winemaking. While it may have started out as a cottage industry in the 1970s, organic winemaking in Australia has gained significant popularity to the point where there is now a rising number of organic farmers in the Australian wine industry. At the same time, a growing proportion of

skilled and business-savvy wine-makers have embraced innovative production processes and cutting-edge technology to produce critically acclaimed, award-winning and commercially successful organic wines. Organic wine is wine made from grapes grown in accordance with principles of organic farming, and like organic foods, is produced without the use of artificial chemical fertilisers, pesticides, fungicides and herbicides. It is said that there are an estimated 2000 organic wine producers globally, with more than 900 of these organic producers based in France alone. Bio-dynamic farming often referred to as ''an advanced method of organic farming'', is all of the above but goes further by introducing the principles established in 1924 by Austrian philosopher Rudolf Steiner. Steiner advocated a system that emphasises manure and compost and an astrological approach to planting and harvesting based on the phases of the moon and the stars. Decisions such as when to spray the preparations, when to weed and when to pick should all be made according to a calendar that details the phases of the moon and stars. Practically speaking, biodynamic wine is made from grapes grown on land where the environment as a whole (not just the vines) plays a role in the process. For instance, other crops and even animals are used in the farming mix to make the land healthier, sustainable and more fertile. In other words, rather than focus on the health of individual plants, Steiner’s system teaches that good health requires that the entire ecosystem in which the plant is growing be thriving. This includes the other

plants, the soil, the animals and even the humans who are working the land. So, is all this nonsense? Not so, according to the ever-increasing number of wine producers in Australia and internationally who have embraced biodynamics. Choosing an environmentally sustainable approach to viticulture is obviously to be applauded in these times of climate change. However, talk to biodynamic producers, and you’ll find that superior wine quality and environmental protection is the number one motivation for adopting biodynamic methods. (Continued ►)

“That may not be important for all our wine consumers, but it is important to us,” Mark said. Today, the 52-year-old winery has an enviable reputation in the Australian market with one of the largest wine clubs in Australia and is recognised as being one of the largest certified organic wineries in the Southern Hemisphere - based on 100 percent organic and biodynamic farming and turning out in excess of 80,000 cases a year. Ross and Derice McDonald started Macquariedale Organic Wines back in the early 1990s as an escape out of the Sydney corporate world and in 2005 became the first certified organic/biodynamic vineyard in the Hunter Valley. Ross believes that growing their wines biodynamically makes for more authentic wines with an inherent sense of place.

(continued) To become a certified biodynamic producer, a farm needs first to be certified organic, and then if biodynamic principles are added to the farming program, the term biodynamic can apply. It's hard to get an accurate number of just how many wine producers are employing biodynamic principles. It’s a method of cultivation that is rapidly catching on among wine producers and therefore a very rapidly changing picture. In addition, besides those already certified as biodynamic, there are also those who are experimenting with part of their production. Here in the Hunter Valley Tamburlaine Organic Wines, Krinklewood Biodynamic Vineyard, Ascella Organic Wines and Macquariedale Organic Wines are the most recognised organic and biodynamic wine producers in the region. As a group, they have a deep commitment to the environment and together they share a passion to make wines that capture the unique flavours of the Hunter Valley and are reflective of the local terroir. Since their biodynamic beginnings in the 1990s, Mark and Lou Davidson of Tamburlaine Organic Wines have seen a noticeable difference in the health of their vineyards and quality of the fruit. Tamburlaine has never lost its enthusiasm, nor its preparedness to tread the path less travelled. But, by far the biggest departure Tamburlaine has taken from the norm is its progressive and rigorous testing on what it now describes as “contemporary” organics. Mark Davidson, Managing Director, says that holistic vineyard management has worked in even the most testing of Hunter vintages. ”And heaven knows there have been plenty of those in the last 12 years,” he adds. In the winery, new technologies have been embraced along with certified organic wine production. Mark says the combination is brilliant for the wine. Tamburlaine is consistent in its principles. It has addressed the inherent waste issues in wineries, particularly in electricity use, and achieved carbon neutrality.

Located in the Broke-Fordwich region of the Hunter Valley, Ascella Organic Wines is possibly Australia’s largest family-run organic vineyard. Owners Barb and Geoff Brown have been using biodynamic principles since 2005, and their conviction in its effectiveness is unwavering. Geoff, who is responsible for all things organic in the vineyard, said that there was strong growth in the organic sector with the demand for organic wine increasing both locally and overseas and that further growth was expected in the coming years. “’A growing number of wine lovers are seeking out organicallycertified options,” he said. “Organic wine is viewed as a quality product and is fast becoming an essential choice in some of the better restaurants and retailers. “‘The interest in biodynamics is growing nationally and locally, and we would love to see more biodynamic vineyards in the Hunter Valley.” Rod Windrim and his late wife Suzanne, first came to the Hunter Valley in 1977, planting their first vineyard in Pokolbin before moving on to establish Krinklewood Biodynamic Vineyard in Broke. By 2007, Krinklewood became fully accredited as organic and biodynamic. “Biodynamics allows us to create wines with a clean taste and with greater fruit intensity," said Rod. "As biodynamic farmers, we are in search of quality, not quantity of wine, with any intervention in the winemaking process kept to a minimum to allow for the best expression of our place – our terroir," The 20-hectare vineyard occupies less than a third of the whole property, and as you take a tour around the estate, you can see how the whole farm is one living organism, not just one crop, with each element working together to find the balance that’s required to work without the interference of chemicals. They’ve got sheep, geese, chickens, ducks, peacocks, Wessex Saddleback pigs and cattle that graze amongst the vines to weed and fertilise the soil. There are fish in the dam, bees, a veggie garden, an orchard and an olive grove - and they are all just a wonderful part of the cycle. The obvious question, of course, is what is better - organic or nonorganic wines? Well, as with just about everything, the proof is in the tasting, so next time you’re looking for a new wine to try, why not put biodynamics to the test and see if you can taste the difference. ■

Lighter than the previous vintage, but classic, elegant and engaging to a tee. TASTING This is a fresh and racy vintage for Spider Run white. MACQUARIEDALE ORGANIC WINES 2016 Thomas Shiraz The 2016 Thomas Shiraz was fermented in open fermenters and hand plunged 4 times per day. The wine was fermented to dryness using only natural yeast from the vineyard, and was pressed out gently in a basket press. No animal fining agents were used, and the wine was bottled after 12 months in aged oak puncheons. TASTING This Shiraz exhibits a savoury red berry flavour with a distinctive white pepper component on the back palate. The finish is clean with complex soft tannins. Flickerfest, now in its 27th year, is an annual short film festival that kicks off at Bondi Beach in January and then travels the country. For the second time, Flickerfest is coming to the Hunter Valley as part of the Around Hermitage’s Wine, Food and Film Festival. Held at Peter Drayton’s Ironbark Hill Winery and Brewhouse, the event will screen approximately seven films that are up to 20 minutes each in length. Get in early to grab a bite to eat and enjoy some great local wines before sitting back to watch the sunset over the vineyards before the films start. Tickets are available for film only, or you can purchase a Wine, Food and Film ticket that includes entry to watch the films plus tastings of three local wines, a platter of food (e.g. pizza or cheese) and a souvenir wine glass.
