live entertainment and, of course, a grape stomping competition. These days a trip to the Hunter Valley is all about wine (of course), but for a growing number of visitors it’s also about the experience, and that includes all sorts of tasting opportunities. Each and every Saturday, our local Hunter Distillery serves up over 5,000 test tubes (yes, test tubes) for tasters to enjoy their ever-growing range of vodkas, gins and liqueurs – certainly a different way to taste – and all adding to the experience. In this issue, we speak with Hunter Distillery’s Neil Langdon about this growing trend. It would be remiss of us not to mention that this month we also celebrate Easter – and chocoholics of the Hunter are rejoicing! Whether it be enjoying the tasty treats Hunter Valley Chocolates has on offer (see page 29), or enjoying one of the many Easter Egg hunts that are planned – we hope you have a safe and enjoyable Easter break.

“These runs are also a safe way for participants, especially women, to exercise en masse.”
GRAPEST 5K! Exercise, laughter, entertainment and wine tasting all-in-one fun-filled day… does it get any better than that?
The Grapest 5k Run is a new series of wine-tasting fun runs, the likes of which has never been seen in the Southern Hemisphere! The event combines fitness with taking a tipple, with participants required to put in the hard yards before they get their red and white rewards. Director for event organiser Centaur Outdoor Events, Peter Manning said “Themed fun runs are offering runners a fresh, exciting and fun alternative to the local 5km fun run scene, and something perceived as more ‘do-able’ than the more physically challenging obstacle mud race or triathlon-style adventure race.
thb 6 | APRIL 2017
Consisting of two sections, the Grapest 5k Run starts with runners sprinting, jogging or moving at whatever pace they choose, through scenic vineyard surrounds for either 5 or 10 kilometres. Then there is the 1km Wine Walk, stopping at wine-tasting stations along the way, sampling some of the best wines the country has to offer. But the fun doesn’t stop there, there is then an after party with live entertainment by ‘Hurricane Fall’, one of Australia’s most exciting up-andcoming country rock bands. But if you are not keen on the first section, and more interested in wandering, sipping and learning about wines, that is also an option (albeit the less fun option!).
Three of Lovedale’s most loved wineries, Domaine de Binet, Adina Vineyard and Tatler Wines will be co-hosting the Hunter Valley event. Winemaker and Director of Domaine de Binet, Daniel Binet said “Domaine de Binet is very excited to be providing the venue for this unique event. We think the wine tasting stations as you near the finish line are going to be the highlight for many, where participants will be able to enjoy our unique varietals. It will be a great opportunity for us to de-mystify the world of wine in a fun and engaging way, and the entertainment and activities afterwards are going to make this a mustdo event for visitors and the local community.” Whether you’re a running enthusiast, a lover of fine wines, or just love a great night out, the Grapest 5k Run has something for everyone. GET INTO THE Spirit At Hunter Distillery! WORDS MICHELLE MEEHAN
It’s a familiar sight on a Saturday in wine country – groups of people crowded around a long, gleaming bar eagerly awaiting a taste of the establishment’s prizewinning products.
Cellar door manager Neil Langdon said since opening four-and-a-half years ago, the cellar door’s original bar space has been more than doubled to cope with the numbers of tourists and locals alike who stop by for a tasting – and even that still isn’t big enough sometimes!
But if you roll up to the cellar door on top of the hill at 1686 Broke Road, Pokolbin, it won’t be one of the Hunter Valley’s famous Semillons or “It started off with just that one bar to service people, then we ended up Shiraz being poured into your glass, but a sip of a spirit that’s wowing with a couple of portable bars and just before Christmas 2015 we got both customers and connoisseurs at home and abroad. these purpose-built bus group bars put in which doubles capacity and we still run out of room on the average Saturday trying to get people in The cellar door belongs to Hunter Distillery, a locally owned and here,” he said. operated business producing a range of top shelf vodkas, liqueurs, schnapps and gins. “We do our tasting in little test tubes and there’s eight products that we

“What I find here is with walk-in customers, your 18 to say mid-20s normally go for the liqueurs and schnapps, because they’re low alcohol and they’re sweet. Then as the person gets a bit older that’s where their palate becomes more defined and they go for the higher spirits, the vodkas and the gins,” Mr Langdon said.
“The popularity is across the board; male or female doesn’t make any difference, and all different age groups, we’ve had people in here in their 90's tasting, and actually buying.” “There’s a lot you can do with them and there’s all different times you can have them. MEET THE MAKER A Sticky Passion! WORDS MICHELLE MEEHAN David Morgan always loved art, having studied the techniques and dabbled in drawing and painting all his life. Around 15 or 20 years ago he “fell into” the art of decoupage, challenging himself to decorate a blanket box for his daughter after she spied a rather expensive version she liked on a family trip to Berrima. But it wasn’t until he retired from a lifetime in banking that the Nelson Bay man found a way to turn his passion for creating into a thriving little business. “I have had an interest in painting since a very early age. On a family visit to Berrima, my daughter saw a decoupaged blanket box, and I said, ‘I could make that!’ “With no experience in decoupaging, I purchased two large blanket boxes (having two daughters). “Luckily my wife and I spent a weekend in the Blue Mountains, and we came across Glenbrook Art and Craft. Jane Moore, the owner, said ‘Noone starts on a blanket box,' and suggested I sit in on a lesson, so for two years I travelled to Glenbrook, Saturday mornings, learning the craft, and completing two blanket boxes.

“Last year we were over the moon when the festival sold out so early,” Dashville promoter Matt Johnston said. “A lot of people know how hard we’ve worked to achieve our goals. To still be here 13 years on, and to not be sweating on an outcome, is a dream come true, to say the least!” With an impressive roster of international and Australian acts, from Regurgitator and Tripod to Kim Churchill, Gareth Liddiard, The Peep Tempel and Mick Thomas of Weddings, Parties, Anything - The Gum Ball shapes as a real musical feast for discerning listeners. A new addition to the sights of The Gum Ball in 2017 is the arrival of the Shark in a Bus, a travelling museum that contains Frankie, a five metre Great White Shark. The 1957 Leyland Royal Tiger bus contains many impressive specimens like Frankie and is sure to mesmerise and educate the many young music lovers that attend The Gum Ball each year. There’ll be lots of fun things for the kids to do at The Gum Ball this year, from meeting Hamish the friendly llama to puppet shows and learning circus skills. There is also a kids crèche available for parents that would like to drop off the little ones for an evening and let their hair down.
A Shark in a Bus, Hamish the Llama, Yoga and a STELLAR LINEUP!
The Gumball '17 Following its sell-out success in 2016, The Gum Ball has already sold over 75 percent of its tickets for this year’s event. The small team behind the annual boutique music festival are again humbled by the support from the community.
For the young adults, the very popular silent disco returns, which runs from midnight until 3am both nights of the festival. Live music runs from 4pm until midnight on Friday, April 21, from 8am on Saturday, April 22 until midnight and until midday on Sunday, April 23. This year there is also a special bonus Sunday evening of entertainment, with limited tickets still available. The private property Dashville hosted the first Gum Ball back in 2005, and it has evolved to become a stunning outdoor venue and campground. Run by organiser Matt ‘Magpie’ Johnston, Dashville hosts a range of special events, including no less than three other smaller annual boutique music festivals across the year, such as Dashville Skyline - Cosmic Country Weekender, to Thrashville - punk and metal festival - and then the cheeky winter blast PigSty in July. Over 400 acts have graced the Dashville stage, with big names such as King Gizzard and the Lizard Wizard, The Preatures, Hoodoo Gurus, You Am I, ►

“After 13 years of hosting festivals and events on our family property, we've learned what works and learned from our mistakes,” Johnston said. “Our Dashville fans are more than loyal, and we like to honour that respect by treating them as our extended family. We put together events that we know we would like if we were going to someone else's festival – a chilled vibe, affordable drinks, places to hang out, no idiots and awesome bands. Dashville is all these things.” Part of The Gum Ball’s appeal lies in its BYO alcohol aspect. Punters can bring their own food and alcohol to the festival if they behave responsibly and don’t bring glass. Punters can also enjoy morning yoga and bush walks. Like all Dashville events, The Gum Ball features an array of exquisite cuisine from all around the world, supplied by the region’s best food vendors. Gum Ball attendees can enjoy mouth-watering pizza, bao, slow-cooked meats, Korean BBQ, delicious burgers, Dutch pancakes, healthy snacks and juices, plus a range of gluten-free, vegetarian and vegan options. Newcastle’s Sprocket will also have their coffee truck in attendance. Straight after The Gum Ball, the Dashville crew will dive straight into its third instalment of the Dashville Skyline Festival, a three-day Country Cosmic Weekender. The event focuses on alt-country, folk, bluegrass, Americana, and psychedelia, and has proven a popular festival on the national calendar. It returns this year on the October long weekend, from Friday, September 29 to Sunday, October 1. Mark it in your diary! For more information on The Gum Ball, head to www.dashville.com.au. ■

The team in the kitchen is led by head chef Adam Frey, who previously worked at The Winery in Surry Hills before completing stints at Pokolbin’s Restaurant Eighty-Eight, Circa 1876 and Cupitt’s Kitchen in Ulladulla. Adam is supported by two former apprentices Aaron and Shaun, both of whom he first met while at Circa 1876, as well as the kitchen’s newest addition, Kyle, a qualified pastry chef who is sure to be serving up an array of sweet treats and savoury delights now he’s armed with the rolling pin. Jimmy said Adam’s classical training, discipline and creativity allow Nanna Kerr’s to take family favourites and traditional flavour combinations to a new level.
Pay a Visit to Nanna’s Today! WORDS MICHELLE MEEHAN Growing up, Nanna’s kitchen always seemed “open,” serving up home cooked treats and hearty meals whenever we stopped by. Now the Hunter’s very own “Nanna” – Nanna Kerr’s Kitchen – will keep the fires burning day and night after deciding to extend their hours to trade seven days a week.
They use predominantly organic and locally-sourced ingredients, favouring Hunter Natural’s free range beef and lamb; Little Hill Farm in Mount Vincent for their supply of eggs and chickens; Organic Feast in Maitland for fruit and veggies and Farmer’s Table in Lovedale for herbs and leaves. Both themes are continued in their recently expanded wine list, which includes Baringbah (their onsite label), organic winemakers Macquariedale, Krinklewood and Tamburlaine, and Hunter selections from Domaine de Binet, Ballabourneen, Cockfighter’s Ghost, Pooles Rock and Audrey Wilkinson. “Our commitment to organic also means there is a lot of crossover to the vegan, vegetarian, coeliac and paleo community - in fact, anyone looking for a healthy dining choice,” Jimmy said. “There are always at least seven vegan choices on the menu and many more vegetarian options.
“When we do pack things full of cream, butter and sugar - after all it is Nan’s place - we are using organic whenever we can and avoiding It is a labour of love for its hands-on owners Jimmy and Matty Kerr, who anything processed or artificial in everything that we do. wanted to create a restaurant with a family feel; a place filled with love, “We already grow our own lemons, oranges, pomegranates, kumquats that is indulgent when it needs to be and healthy when it wants to be. and grapefruit and mulberries, which feature in the restaurant and our range of organic jams and chutneys and over the next 12 months we are Since opening Nanna Kerr’s Kitchen in 2015, the couple has seen their committed to developing our own kitchen garden and hopefully chooks dream flourish in its picturesque vineyard setting, becoming a firm and pigs as well.” favourite among locals and tourists alike. Jimmy said the increasing number of overseas tourists and ‘grey nomads’ visiting the Hunter, and the growing population of retirees choosing to call the Hunter home had created a “strong demand” for all-day and night eateries in the region.
Aside from their regular breakfast, lunch and dinner service, Nanna Kerr’s also hosts a Winemaker’s Dinner on the first Saturday of every month, offering canapés, five courses with matched wines and commentary from a local winemaker, for $129 per person.
The Pokolbin café and restaurant offers relaxed fine dining from 8am to 10pm, with a menu that can be described as “country elegance with a twist.”

Around The World (without leaving Wine Country!)
WORDS MICHELLE MEEHAN
Many people dream of travelling to far-flung lands for the chance to savour a taste of a different language, history, culture and, most tantalisingly, cuisine.
Located on the award-winning Calais Estate, the tapas-style menu features Mediterranean classics with a twist, through to imaginative new creations.
But you don’t have to clock up the frequent flyer miles to take your tastebuds on a trip around the world, with a host of multicultural menus on offer right here in the Hunter Valley.
A duck liver parfait, accompanied by cornichons, caramelised onion and house made sourdough is one of the signature dishes on Matt’s menu, while his soft-centred chocolate soufflé with Baileys and almond ice-cream is a perennial favourite, having been on offer at The Verandah Restaurant since they first opened 10 years ago.
Your international itinerary begins close to home with the flavours of the Orient, dished up at the region’s only winery-based Asian eatery, Oishii Japanese and Thai Restaurant. Located at Tempus Two, it offers regional and traditionally-inspired dishes prepared by an expert team of Asian chefs. The restaurant is owned and operated by Bo Lorchaiwet, who arrived in Newcastle from Phuket, Thailand in 1992 to visit her sister and instantly fell in love with the area. Drawing on her own cultural background and her love of Asian cuisine, Bo created an authentic menu featuring everything from teppanyaki and gyoza to pad Thai and green chicken curry, which in true Asian style, are perfect for sharing with family and friends. Oishii’s signatures dishes would undoubtedly be their expertly cut and prepared sushi and sashimi selection, which uses a variety of raw seafood sourced from the Sydney Fish Market. Restaurant manager Patrick Boonsoong said preparing freshly cooked food that is served quickly and is reasonably priced has been a “winning formula” for the restaurant during the past 10 years. He acknowledged that while showcasing and pairing these intriguing tastes with Australian wine had been a big challenge initially, the combinations are now appreciated by many wine lovers who live in or visit the region. A trip to The Verandah Restaurant at Pokolbin will add a Mediterranean stamp to your gastronomical passport, with Matt Dillow’s menu inspired by his family’s Maltese background. “It’s the food and flavours I love to eat, so it is enjoyable cooking with and showcasing a love of Mediterranean flavours,” he said.
thb 18 | APRIL 2017
But the Sydney-born chef loves to continually try new things, with his egg yolk ravioli with ricotta and cavolo nero (a loose-leafed Italian cabbage) becoming a feature at recent events. “Ravioli is a traditional rich pasta that uses more than the usual amount of egg yolk in the pasta. In the 14th Century it was a signature of wealth if your pasta was a richer yellow colour,” Matt said. “The egg yolk in the centre of the ravioli is a difficult one to master as the yolk needs to be runny, but the pasta needs to be cooked to perfection. “It is a delicate process but a fun challenge and a fantastic result.” A more extensive taste of Italy can be found at Il Cacciatore Restaurant at Hermitage Lodge, which is owned by Mark and Noreen Gottaas. Specialising in cuisine from Northern Italy, which includes regions such as Tuscany, Emilia-Romagna, Lombardy, Liguria and Veneto, the restaurant reflects the Gottaas’ philosophy of food - fresh and uncomplicated while at the same time highlighting that there is more to Italian cuisine than just pizza and pasta. “The (Northern Italy) region is home to the world famous white truffle, parmesan cheese, Parma ham, balsamic vinegar and the finest olive oils in the world,” Noreen said. “Tuscany, with its green rolling hills, olive groves and grapevines, features a cuisine that is quite rustic, with an accent on fresh vegetables, beans, fresh tomato and garlic. “In the Lombardy region, the cuisine features salami and other fine meats, polenta and risotto. The coastal regions, such as Liguria and Veneto rely heavily on the sea for their ingredients. The Liguria region is where pesto originated.
“The Emilia-Romana region is the richest gastronomic region in Italy. The city of Parma is the focus of the region, resulting in a cuisine featuring an abundance of parmesan cheese, Parma ham, Bolognese sauce and rich, dark balsamic vinegars.”
Oishii Japanese & Thai Restaurant
With so many traditional recipes on offer, it’s hard to go past the restaurant’s signature dish – the gnocchi. “Our delicious housemade potato gnocchi is featured on each of our seasonal menus,” Noreen said. “Although our cuisine is Northern Italian inspired, we often modify traditional recipes to better cater to Australian tastes. An example is our gnocchi, which we pan fry … this not only heats the gnocchi but adds texture and a toasty flavour.” And if you want to take a taste of Italy home with you, Il Cacciatore also hosts gnocchi-making classes, which allow participants to make their own gnocchi, as well as watch demonstrations on how the gnocchi can be featured in dishes easily prepared for family and friends. Sharing with others is also on the menu at RidgeView Restaurant, which will take tastebud travellers on another Mediterranean-inspired adventure with their Greek and Cypriot food. “The dishes that we serve are typical to those areas and are large portions to share called mezzedes,” executive chef Donna Hollis said. “We use special cooking techniques, with our meats cooked on our Cypriot grills, which are big skewers and smaller skewers of meat like lamb and chicken cooked over hot coals to give a slow-cooked, smoky flavour when finished.
The Verandah Restaurant
“I would say the serving sizes are unique and also the flavours that we use are typically common in those areas. We use a lot of lemon, oregano, garlic, paprika amongst a wide variety of fresh herbs that are sourced from our onsite garden.
Seared beef fillet at RidgeView Restaurant
“The Greeks and Cypriot culture is generally very family-orientated, and our style of dining is set up to reflect the sharing of dishes with family and friends, and certainly no one leaves hungry!” RidgeView Restaurant is known for its souvla and souvlaki, cooked over the hot coals on the Cypriot grills, as well as the halloumi with caramelised pears, pistachios and fresh oregano topped with fresh radicchio. ►

“Some of our recipes are very traditional and have been passed on by both Greek and Cypriot guests that have dined here, others on our menu have a local twist to them to keep things interesting especially for those who are used to this type of cuisine,” she said. “We want to do the food and the culture justice and only use the freshest local meats and fruit and veg on our menu. “We also have our own onsite garden that supplies us with plenty of fresh herbs, fruits and vegetables that we purposely grow for our menu and special in-season dinners and of course our popular Ocean to Paddock seven-course degustation dinner that is held in June every year.” Round out your European taste odyssey with a trip to the French countryside alongside the man credited with introducing French food to the Hunter. Bistro Molines at Tallavera Grove in Mount View is the creation of one of the most respected names in Australia’s food scene, Robert Molines. The European-trained chef moved to the Hunter Valley with his wife Sally in 1973 and has operated several renowned restaurants over the years before setting up Bistro Molines in 2008. The one chef hat rated traditional French bistro is clearly influenced by his childhood in Algeria and France, with a menu that doesn’t stray far from his roots as he dishes up traditional favourites from his native Provence. Committed to using locally sourced, in-season produce, including herbs and vegetables from their kitchen garden and eggs from their own chickens, Bistro Molines is known for its rustic French fare. On the menu is everything from the house made linguini tossed with diamond clams, garlic, chilli, preserved lemon and butter sauce, to his civet of farmed rabbit with Dijon mustard, green olives and caramelised baby carrots. Regardless of whether you want a taste of the Orient or a mouthful of Mediterranean flavours, it’s clear you don’t have to travel halfway around the world to sample some of the world’s best cuisine. ■

JOHN
FARNHAM As far as Australians are concerned, on stage and on record, John Farnham is without challenge Australia’s most successful solo artists. With a career spanning over 50 years, Farnham’s popularity has never diminished, still needing to stage arena-sized concerts to satisfy the demand. As an 18-year-old, Farnham’s career took off with the release of the novelty single ‘Sadie the Cleaning Lady,' which became the biggestselling single in Australia at that time. Farnham then went on to release a long string of pop hits between 1967 and 1973, including the local hit versions of Three Dog Night’s ‘One,' B.J. Thomas’ ‘Raindrops Keep Falling on My Head’ and ‘Rock Me Baby.' In 1980, changing from “Johnny” to the more mature John Farnham, he set about resurrecting his career. Two years later, Farnham joined the Little River Band as lead singer – replacing Glenn Shorrock who was the singer of all the band’s hits. Farnham left the band at the end of 1985 and began work on a new make-or-break solo album. The release of the single ‘You’re the Voice’ restored Farnham to number one for the first time in 17 years – it sold a million copies in Europe and reached the Top Ten in England. In 1986, his ‘Whispering Jack’ album soared to the number one position for 18 weeks, became the biggestselling album in Australian history and the first album to sell over a million copies in Australia alone. A consummate singer and performer
John Farnham
since 1986, Farnham has been Australia’s number one attraction, with successive big-selling albums and sold-out concert tours. On Saturday April 8th, John Farnham will be headlining Hope Rocks at Hope Estate. He is excited to return to the Wine Country’ biggest concert venue saying, “I have not performed at Hope Estate for some time now, and I am so looking forward to being there again on April 8th. This will be the last show on my current regional tour and [I] could not wish for a better venue to play”. Joining Farnham for this special once only experience will be Jon Stevens who rose to fame with Noiseworks and also boasts a long and successful solo career, the resurgent Shannon Noll and the ever popular The Black Sorrows. Making Wine
SUSTAINABLY! Sustainability is not just another 21st-century marketing buzzword – it is a fast-rising consciousness to meet the needs of the present without compromising the needs of future generations. People are changing the way they consume the things they want and the choices they make, and organic and bio-dynamic ways of making wine are simply a part of this developing consciousness.
“The day the consumer demands a more natural product, the winemakers will be obliged to take up the methods of their ancestors” – Jean-Baptiste Chaudet. Pandora’s Box has been opened, as few subjects in the wine world are more hotly debated than the topic of biodynamic and organic wines.
Tamburlaine Organic Wines
Organic wine is made from grapes grown with the principles of organic farming and like organic foods, is produced without the use of artificial chemical fertilisers, pesticides, fungicides and herbicides. Bio-dynamic farming often referred to as “advanced organic farming”, goes further by introducing the principles established in 1924 by Austrian philosopher Rudolf Steiner. He advocated a system that emphasises manure and compost - and an astrological approach to planting and harvesting based on the phases of the moon and the stars. ►

(continued) In practical terms, bio-dynamic farming focuses on having healthy, nutrient rich soils and a well-balanced environment to allow the plant to effectively channel and utilise everything it needs to grow. Practices include the use of specific herb and mineral preparations to enhance the vitality of plants, soils, composts and livestock. Manual or mechanical weed control, nontoxic pest management, and sustainable animal husbandry are also employed. Here in the Hunter Valley Tamburlaine Organic Wines, Macquariedale, Krinklewood Biodynamic Vineyard and Ascella Organic Wines are the most recognised organic and bio-dynamic wine producers in the Hunter. As a group, they have a deep commitment to the environment, health and wellbeing and together they share a passion for making wines that capture the unique flavours of the Hunter Valley and are reflective of the local terroir. Some people might perceive biodynamics to be a bit whacky, but anything that we don’t yet fully understand or have the knowledge to fully explain is often seen as whacky. It’s the grape growers that are spending long hours observing what is happening in the vineyards who are best qualified to judge, and the rate at which more and more of them are converting to organic principles is quite convincing! Mark Davidson, Chief Winemaker and Managing Director of Tamburlaine Organic Wines in Pokolbin and Australia’s largest producer of organic wines, is one of those who brought some hard-nosed business sense to what had long been regarded as a hippie pursuit. First established in 1966, Mark has maintained a pioneering vision and turned Tamburlaine into Australia’s largest organic wine producer with a 5- star “outstanding” rating by James Halliday. Tamburlaine has organic and bio-dynamic vineyards in the Hunter Valley and the Orange Highlands of NSW. Its 93-hectare Orange property has also integrated bio-dynamic methods into its organic management
system and is now one of the largest certified organic vineyards in the Southern Hemisphere. At Tamburlaine, all organic waste – plant material, grape skins, office paper, food scraps, manure and leaves – is composted and used to fertilise vines, dramatically reducing the amount of waste heading to landfill. In place of pesticides, sheep are used to keep weeds and grass under control underneath vines. For Mark, the shift to organic vineyard management and a more sustainable business model has had a massive effect on the way Tamburlaine operates – leading to a 740-tonne reduction of carbon dioxide pumped into the atmosphere each year and significant energy cost savings.

RIVERPINES VINEYARD 203 THOMPSONS RD MILBRODALE, NSW 2330
Geoff Brown, who is responsible for all things organic in the vineyard, said that there was strong growth in the organic sector with the demand for organic wine increasing both locally and overseas and that further growth was expected in the coming years. “A growing numbers of wine lovers are seeking out organically-certified options," said Geoff. "Organic wine is viewed as a quality product and is fast becoming an essential choice in some of the better restaurants and retailers in Australia.” You can enjoy their great tasting award-winning wines at their cellar door on Thompsons Road in Milbrodale seven days a week between 10am and 5pm. Vineyard tours can also be arranged. With the growing interest in organics and biodynamics, it makes absolute sense - if not marketing sense, to follow the sustainable path. It's a route that also leads to wines that celebrate vintage variation and deliver more flavour, have more character and rejoice in their unique personality. ■ Geoff and Barb Brown from Ascella Organic Wines
"It’s the right thing to do and such a rewarding way to manage a vineyard," says Mark Davidson. Ascella Organic Wines in Broke Fordwich is another vineyard that champions sustainability and was amongst some of the first vineyards in the region to do so. Today, with 32 hectares under vine, Ascella Organic Wines may well be the country’s largest family-run organic vineyard – producing wines made from organically grown grapes and without any added sulphites.
The Biodynamic Calendar In reality, there’s not really anything new behind the theory of biodynamics. If you think about it, mankind has relied on understanding and using the cosmos for sowing and planting in conjunction with the practice of soil fertility since the time of the ancient Greeks and Egyptians. With biodynamics in the vineyard, all the various tasks, from planting, pruning, to harvesting, are regulated by a special biodynamic calendar – dividing the days into four categories: Root, Fruit, Flower and Leaf Days. So in practice: • Fruit Days: Are best days for harvesting grapes • Root Days: This is the time for pruning • Flower Days: No activity should take part in the vineyard on these days • Leaf Days: Perfect days for irrigation

more with many believing that the wines are at their best around ten years after vintage. Today, Semillon is also in demand with Australian wine drinkers as an important ingredient in the popular wine style, “Sem-Sav” - Semillon blended with Sauvignon Blanc. Drinkers appreciate the refreshing aroma of the Sauvignon Blanc on top of the weight and ballast of the Semillon. When it comes to food, this wine is well matched with grilled fish, smoked salmon, soft-shell crab, creamy pasta, lemon based sauces, shellfish or oysters and most other seafood as well as semi-hard cheese. You will never be sorry if you have a couple of bottles of both young and aged Semillon handy for a seafood luncheon.
McLEISH ESTATE - Best of the bunch McLeish Estate in Pokolbin has repeatedly asserted its position as one of the most highly acclaimed boutique producers in Australia. With over 30 trophies, 50 gold and a total of 124 awards, McLeish Estate can comfortably claim to be the most awarded boutique Semillon producer in Australia – creating a range of single vineyard Semillon’s that have gained acclaim and recognition throughout the world. Possessing a seemingly endless passion and a continual pursuit of excellence, this boutique Hunter Valley winery has been successfully producing premium wines from their 44-acre vineyard in Pokolbin for the past 32 years, where owners Robert (Bob) and Maryanne McLeish have overseen all aspects of the family business with the help of their daughter, Jessica.
HUNTER VALLEY
Semillon... IN A LEAGUE OF ITS' OWN
Semillon is one of those grapes like Riesling and Chenin Blanc that tend to be far more appreciated by true wine lovers than the average wine drinker. This is a wine that, although underrated in much of the world, can produce arguably far more interesting, subtle and long-lived dry white wines than many others – especially Sauvignon Blanc, with which it is often blended.
With gun winemaker Andrew Thomas as their winemaker, McLeish Estate are widely recognised for producing an amazing range of single vineyard Semillon's that regularly win both national and international awards. With a wine that has become a true champion wine of the world, the much-decorated Cellar Reserve 2007 Semillon was awarded the World’s Best Semillon at the 2012 and 2013 London International Wine Challenge and also took home three trophies at the 2013 Sydney International Wine Competition. Proof that the 2007 Semillon was no "one off" success story, in 2014, the McLeish Estate Semillon went on to receive four trophies at the Sydney Royal Wine Show, as well as trophies at the Sydney International Wine Competition and the Australian Boutique Wine Awards.
In 2016, the Cellar Reserve 2007 Semillon continued to excel on the world stage, being awarded an unprecedented three trophies for Best NSW Semillon, Best Australian Semillon and Best International Semillon, at the 2016 London International Wine Semillon’s homeland is undoubtedly southwest France, not just Bordeaux Challenge - considered to be one of the but also the many surrounding wine regions such as Bergerac. Eggs have been associated with the Christian celebration of Easter since the early days of the church and used to symbolise new life through the resurrection of Jesus. Dyed or decorated hen and duck eggs were displayed or given as gifts since the earliest times, while egg-shaped toys were manufactured in the 17th and 18th centuries and given to children at Easter. Chocolate Easter eggs first appeared in France and Germany in the early 19th century. However, it wasn’t until the Dutch invented a press for separating cocoa butter from the cocoa bean in 1828 and the Cadbury brothers introduced the use of a pure cocoa in 1866 that the production of Easter eggs started to take hold.
THE FINEST CHOCOLATE... Is Right on Our Doorstep for Easter (and beyond!) WORDS MICHELLE MEEHAN Chocoholics of the Hunter rejoice – Easter is nearly upon us! While for Christians it is the holiest time in the Church calendar, for many people, Easter is simply a time to celebrate being with family and friends – and the chance to indulge in a chocolate egg or two!
Today there are literally hundreds of different eggs and novelty-shaped Easter chocolates to choose from. However, for those looking for something truly indulgent this Easter, there’s nothing better than the smooth, delicious taste of a handcrafted chocolate treat.
The Hunter Valley Chocolate Company has been creating the finest chocolate products since 1999. The destination of choice for those looking to indulge in something truly unique, the artisan chocolate makers lovingly craft their wares using only the highest quality Belgian or Swiss couverture chocolate, together with Australian dried fruits and nuts and distilled pure fruit oil infusions. Owner Jo Clarke said what started out as a simple idea to set up a small chocolate shop in Hunter wine country has grown into a booming business venture that now includes three stores and 40 staff. ►

Easter is undoubtedly their busiest time of year, as more and more people seek out something finer than the mass produced eggs lining the shelves of their local supermarket. “The difference begins with the chocolate that is used for the product,” Jo said. “The major commercial companies extract a high quantity of the cocoa butter from the raw material before they use it, but it is the cocoa butter that actually gives chocolate its richness, smoothness and overall taste sensation. “We are very conscious about using a quality Swiss or Belgium couverture as the base of what goes into our melting tanks because it is like any recipe that is prepared by a chef - the best end result comes from using top quality ingredients. “People’s tastes have changed over the last 15 to 20 years, people appreciate the better quality, and we are proud of our products and the reputation we have earned.” That reputation has developed on the back of Hunter Valley Chocolate Company’s amazing array of handcrafted products, which are available seven days a week online as well as in-store at their “Twenty-3-Twenty” Chocolate and Fudge Factory on Broke Road and their retail outlets at Hunter Valley Gardens and Peterson’s House. There’s sure to be something to cater to every taste bud, with dark, milk and white buttons and blocks a staple of the range. Those looking for a chocolate-coated treat can choose from a selection of nuts including the ever-popular almonds and macadamias, as well as ginger, liquorice, honeycomb and orange peel. Pure fruit oils are used to create mouth-watering chocolate infusions, with flavours such as raspberry, lime, mint and orange, as well as the newest addition to their line – musk.
famous chilli chocolate range – was inspired by request from a pair of Scandinavian tourists around 16 years ago. When it comes to Easter, though, Hunter Valley Chocolate Company branches out to include a few sensational seasonal lines. “We’ve got a selection of moulds to make the bunnies and the duckies and the hollow eggs people love,” Jo said. “We also do candy-coated eggs and freckled eggs, which were very popular last year, and for something more novel, we use a real egg shell with chocolate piped into it via a tiny hole. The kids can crack the egg shell, peel it off and find a solid chocolate egg underneath.
“Easter is our biggest time of the year, and with this one being in the middle of April with the cooler weather, and in the school holidays, it should make for a good weekend.” For more information about the Jo said their most popular product at the moment would have to be their Hunter Valley Chocolate Company visit www.hvchocolate.com.au ■ salted caramel chocolates, while their previous top seller – their
