FROM THE EDITORS What a busy month March is! As the temperatures become more comfortable and the evenings perfect for outdoor living, it’s no surprise that concerts, markets, annual special events and festivals are aplenty throughout the month. You’ll find out all about the huge variety of events taking place this month right here between the covers of our March Community issue. On the concert front, we welcome Brian Adams, Baby Animals, Superjesus, Hoodoo Gurus, Violent Femmes and Sunnyboys to the picturesque Bimbadgen stage for two spectacular a day on the green concerts. When it comes to Festivals, March is the month to enjoy some local festivals. The Bulga Beats festival showcases the local Broke community with a music, markets and arts festival run over two days and promising to provide entertainment for all ages while supporting sustainable local industries and businesses - it looks set to be a great day out! Attracting over 15K visitors on an annual basis, the Maitland Taste: Food Wine & Music Festival is sure to tickle the tastebuds again this year. An all age’s event with a focus on showcasing locally grown produce, local chefs and market stalls, live entertainment including music and cooking demonstrations will be as abundant as the food and wine tastings throughout the weekend.

The Kurri Kurri Nostalgia Festival has become as synonymous with the historic town as the beautiful murals that adorn the buildings and public spaces. Celebrate the swinging 50’s and 60’s through rock n’ roll, fashion, dancing, vintage cars and retro gear across two days of fun-filled activities for all ages. Markets are aplenty this month – with markets being held in Maitland, Broke and right here in Wine Country. Congratulations to Handmade in the Hunter Markets who will celebrate 5 years in the Hunter Valley next month with four markets in March followed by a birthday extravaganza market in April. Of course, we would be remiss not to mention that it is Easter and a certain fluffy friend will be bouncing his way through the area delivering delightful chocolatey delicacies to kids big and small! Take your Teddy along to the Teddy Bears Picnic or take the kids along to the Giant Easter Egg Hunt at Hunter Valley Gardens – a firm favourite with locals and visitors alike. Easter Long Weekend Fun at Hunter Valley Gardens

During the Easter Long Weekend, there will be fun for the whole family at Hunter Valley Gardens as they host a fantastic program of activities, entertainment and prizes, as well as an appearance by the infamous Easter Bunny. This annual event is now in its 10th year and will be held from Friday 25th March until Monday 28th March 2016 with the Giant Easter Egg Hunt taking place on Saturday and Sunday. The Giant Easter Egg Hunt is a favourite of the Easter Weekend activities, as children participate in the search for thousands of brightly coloured plastic eggs throughout the Storybook Garden. Every child that participates receives a gift of Easter chocolate at the completion of the hunt. The Giant Easter Egg Hunt runs every 45 minutes from 10am until 2.30pm. Make sure you keep an eye out for the Mega Chocolate Egg that will be hidden somewhere in the Gardens to win a Family Annual Pass for two adults and two children worth $295. There will only be one Mega Egg hidden each day, so be sure to arrive early! Handmade in the Hunter Markets allows locals and visitors to discover the variety and quality of goods grown, made and crafted by Hunter Valley artisans. We took time out to have a chat with Karen Rowe – founder and coordinator of Handmade in the Hunter Markets to find out the secrets behind the market's success and what they have in store for the 5th birthday celebrations.

Over the past 5 years that you have been running Handmade in the Hunter Markets, what have been some of the highlights?

One of the highlights for me is how much the local community has adopted us as “their” market. When I am out and about, they refer to me as the “market lady” and then talk about their mum, aunt, or niece who is a stallholder or about what one of their guests said. Another highlight is the growth of the idea of buying locally made/grown products. I can’t take credit for this phenomena but it certainly has been interesting to watch restaurants developing gardens, honey hives, sourcing local providers and shops displaying and selling locally made products (some of which are market stallholders). Five years ago, when we first started, this definitely wasn’t happening. Also, Handmade in the Hunter Markets' reputation for high quality, handmade work saw the entire market being invited to be the featured event on Cockle Bay Wharf’s “Hunter by the Harbour” last October. We were the first market Darling Harbour ever allowed to operate on their foreshore. That was definitely a highlight for us!

What do you think has made Handmade in the Hunter Markets so successful over the past 5 years?

The support of stallholders has definitely contributed to our success. Handmade in the Hunter Markets started with a huge 6 stalls on that first day and I am happy to say 3 of those stall holders are still with us. Another 5 stallholders that started within 4 weeks of that first market are still with us today as well. What is even more remarkable is that several of these have missed less than 3 markets in 5 years. So I am deeply grateful to all of them for their loyalty and commitment and making Handmade in the Hunter Markets what it is today.

What special birthday celebrations can visitors expect at the 5th birthday market on Saturday 16th April?

This birthday is particularly special. We held our first market on Saturday, 16th April 2011 and our 5th birthday falls this year on Saturday, 16th April. So it’s 5 years to the day! We have always celebrated our birthdays by handing out free slices of birthday cake and this year will be no exception. It will also be our biggest market ever. As well, all of the stallholders have been invited to come to be part of the celebrations. Some of the stallholders will be giving presents to random people throughout the day. It’s our birthday, but it really is about giving back. We wanted the entire day to be one where we supported and promoted some of the members of the local community. Pokolbin Rural Fire Brigade will be bringing their fire trucks and kids can climb up and explore the trucks, as well as donning hats and gear to “fight” a makebelieve fire. They will also have giveaways and a raffle/fundraising on the day. Balloon Aloft, Sutton Estate Electric Bikes, Hunter Valley Classic Carriages and Hunter Valley Cookies have also agreed to join us as well, so keep an eye on our Facebook page for all the details.

Peter Curtis - also fondly known as the ''Cheese-man'', grew up in a small country town in central Victoria before embarking on an 18-month national service stint which included time in Malaysia. On completing his national service, Peter then decided on a career as a physical education teacher in Melbourne which he did for four years while also pursuing a side interest renovating and selling real estate. It was this interest in real estate that brought him into contact with future life partner Rosalia (Rose) Lambert who was working in the real estate industry.

With a desire to move into the country after their child Riley was born, Peter accepted a job offer from a friend who owned the highly regarded Milawa Cheese Company - a small, speciality cheese-making factory The Hunter Valley is abundant with locally produced gourmet foods to located in North East Victoria's wine region. From Rock to Choc: Peter Carpenter Peter has been the chocolate maker at his family business - The Hunter Valley Chocolate Company for almost 18 years but being a chocolatier was not the career he initially set for himself. Growing up in the bush around Roma in Queensland and on the beaches of the Gold Coast, Peter's first passion was photography. He studied art and photography at Griffith University in Brisbane for 3 years and worked as a cadet photographer with the Gold Coast Bulletin for 2 years. His first role as a photo journalist was with the Queensland Country Life Newspaper before deciding to travel to London in 1989 where he lived for the next 8 years. In London, Peter worked in a variety of pubs before taking on the role of Area Manager for Samuel Smith Brewery where he was responsible for managing a number of their pubs. Peter’s passion for photography continued unabated and he continued to chase work as a freelance photographer in his spare time (when he wasn't playing cricket). Much of his work came from the sport and music industries and Peter would often be busy doing photo shoots of live bands that include The Prodigy, British funk band Jamiroquai, the American rock band Marilyn Manson, Jethro Tull and The Rolling Stones. Peter eventually opened up his own studio, where he worked for a number of years. By 1997, the move into the digital era proved to be far too expensive for many photographers who had invested heavily in film photography. Believing that his skills as a professional photographer were becoming obsolete, Peter made the decision to return to Australia – a move that coincided with his parent’s decision to set up a chocolate business in the Hunter Valley. Peter was invited to get involved in the business and after completing a chocolatiers course at the William Angliss Institute in Melbourne started manufacturing chocolate. The move from rock photography to chocolate making proved to be a positive one for Peter who can be observed busily making the range of chocolate for all three outlets through a large viewing window at the factory outlet Twenty-3-Twenty on Broke Road in Pokolbin.

After 4 years at the Milawa Cheese Company, Peter and Rose decided to move to the Hunter Valley to start their own boutique speciality cheese factory and retail outlet - The Hunter Valley Cheese Company. Peter recalls that in the 1990's the cheese industry in NSW was all about cheddar cheese with little knowledge and experience of the softer cheese varieties which Peter was able to introduce from his experience in Victoria. Since then Peter has seen a significant change in the industry which has in many ways mirrored the evolution of the wine industry with the constant change in people tastes and preferences - largely driven by an improved knowledge and awareness of cheese. When asked about his favourite cheese to make and eat - Peter automatically points to the smear ripened cheese which he refers to as ''the cheese makers cheese" due to the degree of difficulty in making it and getting the texture just right and also being a most flavoursome cheese. His second favourite being the washed rind cheese. Today, the Hunter Valley Cheese Factory and tasting room is one of the most visited destinations in Hunter Valley Wine Country where local, interstate and overseas visitors come to sample their full range of hand-made cheese along with a comprehensive range of local produce and cheese accompaniments.

For decades the Hunter Valley has been Sydney’s playground, a place to enjoy a weekend away in the country with family and friends, all washed down with a glass of local Shiraz, Semillon, Verdelho or Chardonnay. It’s so popular that outside of Sydney city, the Hunter Valley receives more visitors than any other place in Australia. Being the largest and oldest wine region in the country you can be forgiven for thinking that Hunter Valley wine country starts and ends in Pokolbin. The reality is that there are several other wine growing areas within the Hunter Valley that are distinctively different and unique in their own way.

After a full day of wine tasting and nibbling on gourmet produce, Sabor in the Hunter Dessert Bar is the perfect pit stop for those who have an urge for a decent coffee and the desire to indulge in decadent cakes and pastries. Located on Lovedale’s Wilderness Road, owners Fernando and Renata Antao have turned their love of cooking into the full Dessert Bar experience with a menu that has grown to include over 50 different desserts, each one created individually (no slices here!). With its rich history, culture and so much to see and do - there's a lot to love about Lovedale. As one of the oldest wine producing regions of the Hunter Valley, the history of Lovedale dates back to the 1800s when local wheat, dairy and general produce farmers turned their hand to grape growing. At this time there were significant land grants along Black Creek and while the area was particularly suitable for vineyards, it was also favoured for its proximity to the 'Old North Road' to Windsor. For those wanting to get away from it all, and with a choice of selfcontained and luxury boutique accommodation and a wine and food trail consisting of 12 cellar doors and 10 restaurants, Lovedale offers couples the perfect weekend away and the ideal opportunity to experience some of the best wine and food the Hunter has to offer. Geoff + Barb Brown

Barb & Geoff Brown Owners Ascella Pure Wines It may be very different from the routine of working within a University faculty and a world away from the harsh conditions of the Arctic, but Barbara (Barb) and Geoff Brown are loving their life running their successful organic vineyard in Milbrodale known as Ascella Pure Wines. A Canadian national by birth, Barb grew up in Vancouver, Canada while Geoff grew up in Wagga in NSW, before graduating from Sydney University in Engineering followed by a Doctorate of Engineering at the University of British Columbia. Geoff then worked in manufacturing, and went on to do consulting work for the military and large corporations building large scale mobile power generation systems. Barb has had an equally interesting career working at the University of British Columbia, before heading off to Canada’s far Arctic North where she worked with indigenous communities – assisting them to build sustainable communities, improve their health and education and take better advantage of employment and business opportunities in the oil and gas and mining development in the region. Barb and Geoff met in 1968 at the University of British Columbia and they were married in 1972. They have one son ‘Doug’ who is following in his parents footsteps and currently completing his Doctorate of Chemistry in Calgary, Canada. In 2005, the adventurous couple decided on a complete lifestyle change and made the move to Australia where they planned to explore organic farming. Being passionate advocates of sustainable principles and pure wine, they purchased a certified organic vineyard in Milbrodale just 10 minutes from Broke and immediately set about turning the estate into a sustainable organic farm and producing high quality, award-winning wines. Today, with 32 hectares under vine, Ascella Pure Wines may well be the country’s largest family-run organic vineyard – producing wines made from organically grown grapes and without any added sulphites. Not a bad achievement for a couple who learned the ins and outs of viticulture mostly on the job. “We decided on the Hunter Valley and the Broke – Fordwich region because is it the oldest and most historic wine region in Australia and produces world class, award winning wines. It is also conveniently located to the largest market, and has good access for the regular trips to Canada and elsewhere," said Barb.

Taste chemical free wine at Ascella Barb and Geoff are committed to the regions tourism and in making the world a better and safer place to live – free from the hazards of chemicals. Apart from the challenges involved in running a large organic vineyard the couple is also active in the Bulga-Milbrodale community’s fight against the expansion of open cut coal mining and in trying to protect the Hunter from Coal Seam Gas. It’s been part of the human experience since the dawn of civilisation – when man ceased to live as a nomadic hunter gatherer and settled down to live off the land and cultivate grains. The entire My Kitchen Rules table (if not all of Australia) collectively gasped when Jessica boldly declared that she didn’t eat chocolate only two short weeks ago. Is this possible? We think not! This regular feature is supposed to be food five ways and we visit only five restaurants to taste their offering – but when it comes to chocolate – we really can’t limit it to five can we? A firm favourite of restaurant patrons all over the world, you would be hard-pushed to locate a dining establishment which doesn’t include a chocolate delight on their menu. The same is true right here in the Hunter Valley – where choosing only five deliciously chocolatey treats is like asking a mother to name her favourite child! So here are our picks – loads of chocolate served in five different ways because after all – variety is the spice of life (and maybe even Jessica would enjoy one of these treats!)

MATCHING WINE & CHOCOLATE It’s often said that chocolate is the confectionery match to wine, perhaps because the process of making chocolate is very similar to the process of making wine (both cocoa beans and wine are fermented using the same type of yeast). So it’s little wonder that so many wine lovers are also lovers of chocolate. Unfortunately, these similarities also make pairing the two together somewhat complicated as both occupy the same place on your palette. As with food, when pairing wines with chocolate, match lighterflavoured chocolates with lighter-bodied wines, and more intense-flavoured chocolates with more full-bodied wines. The lighter the chocolate - and the airier your dessert (think mousse) - the easier your task is. Try a Muscat or an off-dry sparkling Rosé. Here’s a great tip from www.matchingfoodandwine.com - think of the fruits that would match the chocolate you are serving and it’ll give you a clue as to which wines you should be serving. So, if you’re chocolate is dark – think cherries and head for a sweet red dessert wine or a late bottled vintage port.

Andrew Wright Chef { and proprietor } of The Cellar Restaurant Andrew Wright’s love of food began as a young boy when he helped his mother in the kitchen. He grew up in London and worked at the local Italian restaurant after school and weekends. Summer holidays were spent travelling around Europe with his family, in particular rural France where he loved to taste the local delicacies. Completing his apprenticeship in 1983, Andrew worked at various London hotels and restaurants and in 1994 was Head Chef at the House of Lords. In 1995 he ran a private dining room for the directors of J Walter Thompson in Mayfair, London, before migrating to Australia in 1996. Andrew was Sous Chef at the Nikko Hotel, Darling Harbour – Sydney before moving to the Hunter Valley in 1997, where he was Head Chef at Roberts Restaurant. From there, Pipette at Cypress Lakes, then Seasons Restaurant for Hunter Valley Gardens where he was also involved with the kitchen set up at Harrigans Irish Pub. In 2003, Andrew and his wife Janet became part owners of The Cellar Restaurant and then full owners in 2005. Between the two of them they have created a world class restaurant with a long established record of

Andrew is passionate about sourcing the freshest and best quality local ingredients for his ever-changing modern Australian, but Mediterranean inspired menu. He is dedicated to creating a menu that reflects what is in season and also paying tribute to the region by using locally sourced produce wherever possible. “The quality of the produce is the most important aspect of any good meal,” says Andrew. “The Cellar Restaurant’s menu format allows guests to choose from a generous range of quality steaks, poultry and other meats to whole fish and seafood." Chardonnay first arrived in Australia in 1832 as part of the James Busby collection, however, it wasn’t until the 1970’s that Chardonnay came into vogue in Australia when tastes evolved from heavy reds. In fact it was the Hunter Valley that led the way with Tyrrell’s 1971 Vat 47 Chardonnay initiating Australia’s love affair with this variety. The result was that Chardonnay sales boomed in the 80’s and 90’s. Such was the demand for Australian Chardonnay that the area of Chardonnay vines increased more than fivefold during the decade so that in 1990, Chardonnay became Australia’s most planted white wine grape variety.

Of all the white wines, Chardonnay is very responsive to the winemakers craft - broadening the style possibilities and enabling the winemaker to create a wine in a particularly style that he or she considered desirable. This was definitely the case when the market was dominated by the broader, buttery and toastier styles of wines that also had strong secondary characters. These wines were big, rich and full-bodied with most not lasting more than a few years. You can have too much of a good thing though, and this peak in popularity in the late 1980's and early 1990's gave way to a change in tastes. The market turned to red wine and Chardonnay consumers became disenfranchised by the buttery taste and high level of oak used in these wines. Chardonnay sales declined as consumer tastes turned towards lighter wines such as Pinot Grigio and the crisp cool-climate Sauvignon Blancs. In recent years, Chardonnay has made a comeback with styles that are not as heavy as in the past, but instead lighter, more elegant, a little more subtle and of course have a little less oak. The Chardonnay grape itself also contributes to the wine's popularity. Made from green-skinned grapes, Chardonnay is a relatively ‘lowmaintenance’ vine that adapts well to a variety of climates, resulting in fairly high yields worldwide.

2014 The Cuillin Chardonnay This wine was produced from the 35-year-old Capercaillie 21 Row Chardonnay vineyards in Lovedale. It was made using traditional juice clarification techniques and completed fermentation in French oak hogsheads, 30% of which were new. Extended lees contact, ‘batonnage’ and a partial secondary fermentation occurred during the eight months of oak maturation. This style of Chardonnay hasn’t been produced since the 2007 vintage, as Capercaillie Wines and winemaker Peter Lane only release a Cuillin Chardonnay on exceptional vintages.

TASTING NOTES Traditional winemaking techniques have resulted in an expressive wine displaying citrus, peach and melon characters. These primary characters are supported by subtle oak and buttery nuances resulting from the small amount of malolactic activity. Supple rounded acid gives the wine length and persistence.
