Now in its ninth year, the switch will be flicked on Friday, November 6th for a treat that will run right through to Australia Day in January and includes five new illuminating displays along with all of our favourites.

An outdoor visual treat of a different kind is now in full swing – it’s the Hunter Valley’s largest sculpture festival – Sculpture in the Vineyards. This remarkable exhibition transforms the beautiful Wollombi Valley into a series of sculpture parks with over 100 large scale and site specific works of art on view.
We also take a tour around the whole of the Hunter Valley. As Australia’s premium wine region (and also the oldest) the area covers some real hot spots that have become known for their historical significance, glorious vistas or food and wine tasting.
Our concert season has launched with a month full of spectacular concerts at three different venues. Neil Diamond, Fleetwood Mac and Paul Kelly will all grace our stages this month – take in a concert (or three) and find out for yourself why the Hunter Valley has earned the reputation of providing the ultimate outdoor entertainment experience. This month we hop on the food trail and find out the 5 best spots to savour delectable duck! Each location provides a unique twist on a foodie favourite and of course, we also have the wines to match!
With “Food and Wine” in mind we talk to Chef Mert Tansu of Harvest Restaurant (Hope Estate) about how his passion for cooking was ignited as a youngster cooking up a storm with his grandmother in her humble kitchen in Turkey. Mert also shares with us his delectable recipe for Soft Shell Crab with Chilli Jam. Finally, we explore the delicate, aromatic delights of Gewurztraminer. While this is not a common variety in the Hunter Valley, it’s well worth the effort to explore wine country in search of a bottle.

Neil Diamond in the Hunter as part of his World Tour 2015. Neil Diamond returns to the Hunter Valley as part of his World Tour 2015 where he will be performing at Roche Estate on November 7 with fresh material from his latest album Melody Road (which enjoyed a topten debut in Australia) along with a long list of much-loved hits going back decades. Diamond, whose hits include Sweet Caroline, September Morn and America, is one of the best-selling musical artists of all time, having sold over 125 million records worldwide and is also considered one of the most successful adult contemporary artists of all time. Among his accolades include his induction into the Rock & Roll Hall of Fame in 2011. Known for his own unique brand of soft rock and roll and folk/country music, Diamond is also known for tracks like Song Sung Blue, Cracklin’ Rosie, Solitary Man, Hello Again, Forever in Blue Jeans, and who could forget the Barbra Streisand duet You Don’t Bring Me Flowers.

Not just recognised as an incredible singer and musician, Diamond is also one of the world’s most admired songwriters. Having written a string of classic hits over the last 53 years - including the Monkee’s I’m a Believer, his efforts earned him a spot in the Songwriters Hall of Fame in 1984.
Also no stranger to the Hunter Valley, the legendary Fleetwood Mac return to Australia with their On With The Show World Tour – making this their first series of concert dates in Australia since 2009’s sold-out Unleashed Tour. Touring as a five-piece for the first time since 1998, one of music’s most enduring groups of all time, Fleetwood Mac, are performing at Hope Estate on the 14th and 15th of November. All five original band members are back together, with Christine McVie rejoining band mates Mick Fleetwood, John McVie, Lindsey Buckingham and Stevie Nicks after a 16-year absence. The news of Fleetwood Mac’s return is particularly welcomed by Australian fans after the band were unfortunately forced to cancel their sold-out 2013 dates. The On With The Show Tour will see Fleetwood Mac on stage for close to two and a half hours, showcasing hits and classic songs from their career that spans more than four decades and global album sales in excess of 100 million, including songs such as The Chain, Dreams, Second Hand News, Rhiannon, Sara, Gold Dust Woman, Tusk, Looking Out for Love, Don’t Stop, Go Your Own Way…and the list goes on - and on.

Paul Kelly Presents The Merri Soul Sessions. With very special guest Lucinda Williams; Kasey Chambers and also introducing Marlon Williams. During his much-acclaimed, always-innovative career, we’ve come to expect Paul Kelly to push his musical boundaries. And so it was with his most recent album and tour, Paul Kelly Presents The Merri Soul Sessions. After sell-out shows nationally earlier this year – and rejoicing in the notion that you can never have too much of a good thing – Paul is reprising this hugely entertaining project for A Day on the Green – hosted by Bimbadgen Wines on November 28. Such an exceptionable concert experience needs company of the highest order and that we have, with the tour’s very special guest, the wonderful Lucinda Williams, returning to Australia for the first time since 2012. The three time Grammy award-winning singer/songwriter Lucinda Williams was named "America’s best songwriter" by Time Magazine in 2002, and has released 11 acclaimed studio albums, from 1988’s breakthrough "Lucinda Williams", to the landmark "Car Wheels On A Gravel Road" in 1998 to last year’s double-album offering "Down Where the Spirit Meets The Bone". In case you missed it the first time around, The Merri Soul Sessions is a unique concert experience with 10 musicians and performers led by Paul with lead vocalists Dan Sultan, Clairy Browne, Kira Puru, Vika Bull and Linda Bull joining for an electrifying soul revue. All six vocalists perform songs from the album ‘Paul Kelly Presents The Merri Soul Sessions’ along with a dose of Paul Kelly hits. The shows were described as "joyous" and "vibrant", with the singers "having the time of their lives on stage". Kasey Chambers, who has toured with Lucinda in the US and is one of her biggest fans, is delighted to be part of this very special tour. Her seventh solo album "Bittersweet" reaffirmed her reputation as one of our best story-tellers. Working with guest musicians Bernard Fanning and ironically Paul Kelly’s nephew Dan Kelly (guitars), it won Album and Single of the Year (for ‘Bittersweet’) at the 2015 Tamworth Country Music Awards and Country Album of the Year at last year’s ARIA’s, amongst many other accolades. New Zealand born singer/songwriter Marlon Williams who now calls Melbourne home is going somewhere good real fast. His self-titled debut album, released in April, showcases his amazing much-talked about voice, whilst his live shows have won rave reviews. He’s been described as having "the voice of an angel" and as "the impossible love child of Elvis, Roy Orbison and Townes Van Zandt". This A Day on the Green tour offers music lovers something undeniably very special. Miss it at your peril!

Duck is a dish that rarely fails to delight the palate – it’s juicy, “gamey” and perhaps the most flavourful of all poultry meat. Although Duck meat is relatively high in fat and cholesterol (especially if you eat the skin), its also an excellent source of protein, niacin, phosphorus, riboflavin, iron, zinc, vitamin B-6 and thiamine and smaller amounts of vitamin B-12, folate and magnesium. It’s also a dish that, for whatever reason, even the very best at-home cooks are nervous about preparing. This is despite duck meat being more readily available at your local supermarket than ever before (check out the range of Luv-A-Duck products). Given that we don’t cook duck meat that much at home it can be a fabulous treat when eating out. So this month we trekked around the glorious Hunter Valley, taste-buds in hand to discover some duckydelights that are on offer. Here are 5 of the best…

Best Wine matches for Duck Duck meat invites a wine companion that is lighter bodied, slightly fruity, with good acidity and some earthiness to it. There’s one wine that’s invariably recommended as a pairing for duck and that is Pinot Noir but of course duck, like any other meat, can be cooked in different ways (as we’ve just seen). So choose a wine partner that combines well not just with the flavour of the meat itself but also with the method used to cook the meat. Other great matches include a late harvest Reisling, Gewurztraminer, Pinot Gris and Shiraz (for something different try a Sparkling Shiraz). Enjoy!

GRAPE GROWTH CYCLE
Voices from the Vineyard Let's Hear it for the Grape! The annual growth cycle of the grape (and grapevine) in the vineyard commence each year with budburst taking place in Spring and culminates in leaf fall in Autumn, followed by Winter dormancy. From a winemaker's perspective, each step in the process plays a critical role in the development of the grape, which is the responsibility of the viticulturist and vineyard manager. These responsibilities include monitoring and controlling pests and diseases, fertilising, irrigation, canopy management, monitoring of fruit development, deciding when to harvest and pruning post-harvest. Viticulturists are therefore intimately involved with winemakers, as vineyard management and the resulting grape characteristics provide the basis from which winemaking can begin. With Budburst (September) and a period of rapid shoot growth behind us (October) the grapevine enters the stage known as "flowering", which typically takes place in November when flower clusters start to bloom and seed formation begins. This process of "flowering" takes place when average daily temperatures stay between 15–20°c with small flower clusters appearing on the tips of the young shoots. After a while, the flowers start to grow in size with individual flowers then becoming evident. Pollination and fertilisation of the grapevine now takes place resulting in a grape berry, containing up to 4 seeds. This is also a time of "fruit set" when the berries start to develop on the vines. Come December - the start of Summer and bunches of grapes are now very obvious on the vine, although green and hard with very little sugar and high in organic acids. The viticulturists and vineyard managers are predominantly concerned with vine and fruit protection - protecting the grapes from birds and insects. This is the period when vÊraison, or berry colouration and softening, typically begins and the grower starts to estimate the total amount of fruit for the current vintage. The winemaker then uses this information to calculate how much tank and barrel space will be needed once the grapes are harvested.

FLOWERING is the stage where formation of the grapes begin.
In January, the grapes are filling out as they ripen and develop full colour. Sugars are gradually building and viticulturists start to taste and monitor the grapes for sugar content and acid level in preparation for harvest. This is the time when harvest and crush equipment are tested for problems and pickers employed. New barrels are soaked in preparation for the new harvest. The period January to February is when harvesting of the fruit typically occurs with the winemaker and vineyard manager working closely to determine the optimum time to pick the fruit to ensure the best wine quality. Here in the Hunter Valley, due to our warmer conditions, vintage can commence very early in January. Semillon is the first variety to be picked as it is low alcohol (between 10.5% and 11.5% alcohol). Harvesting may continue into March for late picked wine varieties and depending on the temperatures and how the vintage year developed, over the summer period.

Mert Tansu Harvest Restaurant Mert Tansu has been with Hope Estate since late 2012 and re-launched Harvest Restaurant in January 2013.
Executive Chef at the prestigious City Club of Buckhead, in 2010 he re-joined the Chateau Elan family in the Hunter Valley.
Born in Ankara, Turkey, Mert’s passion for cooking began in the humble kitchen of his grandmother. At a very young age he learned to appreciate the value of fresh ingredients picking fruit and harvesting vegetables from his grandmother's garden and then working together to create family feasts.
Chef Mert believes that continuing education and professional development is paramount to the success of any Chef. So far while in Australia, he has completed courses at the Culinary Institute of America in New York, fulfilled a stage at Quay in Sydney and honed his talent of food and wine matching through hosting local winemaker’s dinners.
Working alongside his mentor in a very modest kitchen, he began experiencing the rich complex flavours that he would come to appreciate so much more with the realisation that there was no combi oven or sous vide. While completing his Bachelor's degree in Hotel and Restaurant Management at Baskent University in Turkey, Mert delved into the culinary world in the kitchen of a local winery. During this time, he earned certificates in Oenology and Old World Wines. As his passion for food and wine grew he spread his wings to join the culinary team at Chateau Elan Winery & Resort in Braselton, Georgia, USA. Working under award-winning chefs, Mert quickly excelled through the seven restaurants and premier catering services of this world-renowned resort. Mert left Chateau Elan in 2007 to work in some of the elite kitchens of Atlanta, including the Four Seasons and Villa Christina. Leaving behind his role as

8 red chillies, seeded and roughly chopped 4 red capsicum, seeded and roughly chopped 100 grams grated palm sugar 50 ml fish sauce 25 ml red wine vinegar 1 cup oil 50 grams peeled, chopped ginger 4 soft shell crab weighing from 120 to 150 grams each 1 cup all-purpose flour 2 cups cold sparkling water 1 tbsp corn flour 1 lt vegetable oil for frying
Method • Heat 1 cup of oil in a heavy bottom pan. Add chopped chillies, capsicum, and ginger. Fry until the capsicum softens and add grated palm sugar. Once that dissolves add the fish sauce and red wine vinegar. • Using a stick blender, puree. Keep warm for service. • Combine all-purpose flour, sparkling water and corn flour to make a tempura batter. Mix just enough to combine. Do not overmix. • Heat up litre of blended oil in a heavy bottom pot until it reach 180 Celsius using fryer thermometer. Dip the soft shell crabs into the tempura batter and let the excess batter drain. • Fry one at a time until it floats and is golden brown for about 4 minutes each. • Retrieve from the oil, season with salt and serve with chilli jam and a glass of fresh, fruit driven Rosé.
Chef Mert’s Tip: Make sure you use vegetable oil like peanut or canola for frying. Olive oil burns at low temperature so it won’t achieve the crispness you need.

LET IT BREATHE!
The term “breathing” refers to the process of aerating the wine – exposing it to the air by decanting it. The aeration process stimulates the wine to soften any tannins and release the wine’s bouquet and flavour, making the wine taste less astringent and more complex than it would have tasted right out of the bottle.
Which Wines Need to Breathe? Typically red wines benefit most from breathing before serving, however, there are select whites and some dessert wines that will also improve with as little as 15-20 minutes of aeration time. As a general rule, most tannic, young red wines soften up with one hour of aeration. That is not to say you cannot drink it as soon as it is opened, but for best results aeration is recommended. Mature wines (8+ years) are another story altogether as they gain most from aeration. The older and more delicate the wine is, the faster it will deteriorate after being exposed to air. This is because if it has been under cork it may have been breathing – albeit slowly, for years.
How to Let Your Wine Breathe Simply uncorking a bottle of wine and allowing it to sit for a while to aerate is futile, as there is not enough surface area at the top of the bottle to permit adequate amounts of air to make contact with the wine. If you really want to aerate your wine, pour the wine into a decanter or any glass container large enough to hold the contents of an entire bottle of wine. The increased surface area is the key to allowing more air to make contact with your wine. Alternatively, pour some of the wine into large wine glasses at least ten minutes before you plan to drink it. Once decanted, give it a vigorous swirl or two to ensure all the aromas open up. There are also numerous aerator pourers on the market considered a “quick fix” as they aerate (some also filter) and slow down the wine as it being poured. Once considered merely a gimmick, experts now believe they work just as effectively as a decanted bottle of wine and also provide a much faster alternative to decanting, with the option of pouring a single glass without having to pour the whole bottle into a decanter. Wines, Vines and ALL that ROT When a vineyard full of rotting grapes can be a good thing! ‘’Botrytis’’ is a word commonly found on the labels of many sweet dessert style wines, however many people remain unclear as to what it actually means or represents. For years, winemakers have struggled to prevent the development of mould in their vineyards such as powdery mildew and also Botrytis cinerea - a weather driven microscopic fungus or mould that if left untended can destroy an entire vineyard. But in the making of some wines, Botrytis cinerea (Noble Rot) is actually encouraged in the vineyard. Botrytis cinerea gives rise to two different kinds of infections on grapes. The first, grey rot, is the result of consistently wet or humid conditions, and typically results in the loss of the affected bunches. The second, noble rot occurs when drier conditions follow wetter, and can result in distinctive sweet dessert wines. Grapes typically become infected with Botrytis when they are ripe. High humidity or prolonged rain together with cool or mild temperatures result in persistent moisture on berry surfaces and promotes infection and disease development. It first attacks the skin and then the pulp of grapes, causing the skin to perforate and the pulp to lose its water. In short, Botrytis infects grapes on the vine, dehydrating and then rotting them. If the Botrytis affected grapes are then exposed to drier conditions and become partially raisined, this form of infection brought about by the partial drying process is then known as Noble Rot. These grapes, when picked at a certain point during infestation, can produce particularly fine and concentrated sweet wines. On the other hand, if the weather stays wet, the grape skins can split, exposing them to bacteria. The worst case scenario is that Botrytis progresses into grey rot (or bunch rot) - which bears nothing but rotten fruit and can destroy an entire vineyard. So there’s the twist… while Botrytis may be the enemy of dry table wines, white or red, it is also the essential driver for the making of sweet

table wines – by intensifying the sweetness level and adding flavour complexity. In fact the world’s greatest sweet wines and wines such as such as Sauternes from Bordeaux and Spätlese level German Rieslings are all made from Noble Rot. You may be familiar with De Bortoli Noble One Botrytis Semillon - arguably Australia’s most famous dessert wine. Varieties such as Semillon and Riesling tend to make up the majority of botrytised wines due to the fact that that botrytis prefers thin skinned, tightly bunched varieties. Semillon and Riesling fit into both of these categories. What then separates the great botrytis wines from the rest is complexity of flavour and a fresh, acid finish. Sommeliers often use the words “honey,” “beeswax” and “ginger” to describe the flavours that botrytis adds to wine. This could be because Noble Rot wines often have higher levels of a special aroma compound called phenylacetaldehyde – a compound that is also commonly found in buckwheat and milk chocolate. Arguably the most famous incarnation of botrytised wine comes from the French district of Sauterne where it is based on Semillon with Sauvignon Blanc and small amounts of Muscadelle. In Australia, most botrytis wine comes from the Riverina region or from the Hunter Valley. WINE VARIETY
Gewürztraminer has the dubious dual distinction of being the easiest grape variety to recognise but the most difficult to spell and was first introduced to Australia in 1832. It has since been reintroduced by more recent plantings. Once described as the "Chardonnay of the 1970's", Gewürztraminer is a variety that is not widely grown in Australia as it generally thrives in a cooler climate. However, some producers in the Hunter Valley that include Capercaillie, Ernest Hill and Briar Ridge (to name a few) are known to produce some outstanding examples of this variety. These wines range from the crisp, fruity and dry style to the lavish, honeyed sweet styles or late-harvest, wines. In Australia this variety is also known as Traminer, especially in the warmer regions where it is most commonly used as a blending companion for Riesling. It is a very delicate grape that is not generally blended with anything else except Riesling (some readers may well recall the Rosemount 'Traminer Riesling' of the 80's). While it may be that Gewürztraminer is one of the most pungent wine varietals, easy to recognize by its heady, aromatic scent, its versatility and high natural sugar content means it can be made into a wine with a bone-dry finish through to semi-sweet or sweet wine styles.

Gewürztraminer is the signature variety of Alsace in North-eastern France, but is also widely planted in other wine regions in France and in many other countries throughout Central and Eastern Europe. While the French Alsace region is most famous for this grape, the history of Gewürztraminer began in the German-speaking Tyrolean Alps of Italy.
The wines are highly perfumed and quite full-bodied, more so than other white wines. The bouquet is intense and complex, offering an explosion of exotic fruits such as lychee, passionfruit, pineapple and mango characters with rose petal, gardenia, honeysuckle and even spicy (gingerbread, peppermint, cloves and pepper) aromas. In fact the name Gewurztraminer literally translates as “spicy Traminer”. When it comes to food, its aromatic flavours means that Gewürztraminer pairs beautifully with rich, fatty dishes like pork and goose or ripe cheeses, as well as with the exotic spices of Moroccan, Indian, and Far Eastern cuisines. Located in the Mount View region of the Hunter Valley, Briar Ridge is one of the leading producers of iconic Hunter Valley wines and has been awarded numerous accolades on both the national and international Wine Show Circuit. The 2014 vintage was one of the earliest on record in the Hunter and one of the most exciting years with near perfect dry conditions right up to the end of harvest. This Gew端rztraminer from Briar Ridge was grown on well-drained, calcium rich loamy in a vineyard facing south and east allowing for slower ripening, bright fruit with good natural acidity. The grapes were picked late after ripening to allow for some dehydration and flavour concentration - allowing for a true late harvest style to be made.
