FROM THE EDITORS With the exception of the occasional cold snap (the one that reminds us not to put our winter clothes away just yet), Spring is well and truly upon us and it’s a great time of the year to get outside for a meal. There’s something about sipping wine and enjoying beautiful food in the great outdoors that makes it extra special. Perhaps it’s the spring fragrances that fill the air? Or is it the stunning backdrop of budding vines and mountain ranges that makes the Hunter Valley the very best Al Fresco dining experience in Australia (well we think so anyway!) Find out for yourself this month. Al Fresco dining isn’t the only hot thing to do in Wine Country in October. It’s time to look to the skies for the annual Hot Air Balloon Fiesta. There really is something almost magical about a sea of brightly coloured hot air balloons floating through the sky at dawn, whether you’re viewing it from below or on board a balloon as part of the spectacular. I was lucky enough to grab a seat on a flight for the Fiesta a while back and couldn’t recommend it highly enough as one to add (and then cross off) your bucket list. Visitors can delight in hundreds of thousands of budding blooms and learn a bit more about how to grow and care for their own roses. “Pop-Up” dining experiences have been popular in the capital cities for some time and this month sees the arrival of the Hunter Valleys first “Pop-Up @ Harkham” at Harkham Wines in Pokolbin. Serving up lashings of flavour, fresh food and live music alongside preservative-free, handpicked wines says that this could be the start of something big. Winners are grinners in October – especially the winners at the recent Hunter Valley Wine Show. Chief Judge PJ Charteris commented on the winning entries, saying the wines “included lots of brightness, fine acidity and fruit lift that has produced classic Hunter White styles. The Shiraz classes of entry have set a new benchmark for the Hunter.” Check out the Grinners (sorry Winners!) from page 24. Finally, this is our annual Al Fresco Issue – so it’s compulsory that you find yourself a sunny spot, put your feet up and read it outdoors!

The flavourful Imperial Stout beer has been brewed with wheat, rye and pecans providing an intense nutty aroma. The pronounced flavours of coffee and cocoa are complemented by a rich blend vanilla, oak and bourbon. It is these wonderful blend of flavours that makes a great imperial stout, loaded with roasted notes and malt complexity. BALLOON FIESTA

There is something magical about a sea of bright coloured hot air balloons floating through the sky, which is why Balloon Fiesta’s have become popular events all around the world from France, to Switzerland, New Mexico, California, New York, New Zealand, Canberra and here in the Hunter Valley. This month Balloon Aloft will once again host the annual Hunter Valley Balloon Fiesta. Twenty hot air balloonists from around the country will take to the skies in a beautiful display of colour on the weekend of 17 and 18 October. Joining them will be local pilot and current Women’s World Hot Air Ballooning Champion Nicola Scaife. Nicola, who is married to event organiser Matthew Scaife of Balloon Aloft, said the company, of whom she is a pilot for, was staging the event for the fifth time. “Prior to our first Fiesta, an event such as this had never been staged before over the Hunter Valley. It really is a breathtaking experience to be on board one of the many balloons as they float together at dawn over the vineyards. We are looking forward to the opportunity to do it all again,” she said. Matthew Scaife, who has more than 22 years flying hot air balloons and is the Australian National Ballooning Champion, said the company had been overwhelmed by attendance at the Fiesta since its inaugural event in 2011 when 130 passengers took the opportunity to be part of history. “It was a breathtaking experience to be on board one of the 20 balloons as they floated over the vineyards together. After the success of previous years, it is our intention to continue to stage the Fiesta each year, weather permitting of course,” he said. With beautiful weather conditions usually experienced in the Valley during springtime, those taking part in this year’s event are expecting to take in some spectacular views. Balloon Aloft is hoping to have over 100 ballooning enthusiasts take part as passengers on board one of the 20 balloons flying in the Fiesta. There are limited flight vouchers available so for those people interested in taking part they are encouraged to book as soon as possible to avoid disappointment.

Hot Air Balloon FACTS Almost a century before the Wright brothers were even born, hot air balloons were carrying people through the air! Here are a few hot air balloon facts you may not have known: ● Hot Air Balloons were invented in France in the 1700’s ● A sheep, a duck and a rooster were the first passengers aboard a hot air balloon. They survived the very first hot air balloon flight, which lasted 8 minutes. ● The longest hot air balloon flight ever recorded was piloted by Richard Branson. The flight originated in Japan and touched ground in Northern Canada. It was also the fastest recorded flight, flying across the skies at 394 kilometres per hour ● The tradition of enjoying Champagne after a hot air balloon flight originated when French aristocracy learned farmers didn’t appreciate rich people setting balloons down on their land crushing their crops. The aristocrats offered the farmers Champagne to smooth things over and a tradition was born! ● In the US Civil War, President Abraham Lincoln established the Balloon Corps consisting of seven balloons, which were used to spy on enemy movements from over 20 kilometres away. The Balloon Corps disbanded in 1863, as it turns out that giant balloons make good targets to shoot at during combat. ● Imagine floating thousands of feet above the earth with nothing between you and the ground but glass. This is what passengers experienced when Christian Brown debuted his glass-bottomed hot air balloon at the 2010 Bristol International Balloon Fiesta. Brown told the British press the flight was “terrifying” and trial flights had ended with passengers shrieking and screaming in fear. Sound like fun?

Al fresco!

"Al fresco"– now there is a word that creates an inner smile… With its roots deep in the fertile soils of Italy, al fresco literally means "in the cool air" in Italian. It’s a style of dining that originated as a way of gathering communities together and which the Italians have become famous for. For me, it conjures up images of a setting somewhere in the hills of Tuscany, rustic tables groaning under the weight of a feast of cheese, breads, local wines and olive oil drizzled dishes, overlooking the sundrenched olive groves to the hills beyond. Eating "al fresco" has been a traditional form of dining in European countries for centuries - particularly in the warmer summer months. The practice slowly made its way to America and other parts of the world when rooftops and sidewalk cafes began to appear in the mid-20th century. Today it is a style of dining enjoyed all over the world, with most restaurants and cafes in temperate climates such as Australia offering both indoor and outdoor dining options. Al fresco dining is simply "eating outdoors" and is a style of dining that is casual and often party-like in its atmosphere. There is also something about eating outdoors that makes the conversation flow more naturally and everything taste extra delicious.

It adds a lively and enjoyable dimension to dining and gets you outside into the fresh, open air, encouraging a good appetite and appreciation for the slower pace of life. The idea of dining outside also seems to bring out the child in us – making the meal feel less formal, more playful and even exciting. The beauty of al fresco dining is, of course, the opportunity it gives diners to take in the beauty of their surroundings. It’s therefore little wonder that in the picture perfect setting of the Hunter Valley, with its rolling hills, bird-filled dams, mountain backdrop and seemingly endless vineyard vistas, that al fresco dining has established such a strong following. You would have to travel far to find a more ideal setting. With spring temperatures sitting in the early 20s, now is the perfect time to soak up the sun, or revel in the balmy night air, at one of the many al fresco options spread throughout the Hunter Valley. A regular visitor to the tapas dens of Spain and Italy, local restaurant owner Matt Dillow understands the appeal of dining outdoors. Al fresco dining options are an essential feature of his three Hunter venues – The Deck Café at Gartelmann Wines, The Verandah Restaurant located at Calais Estate and Twine Restaurant at Wynwood Estate. Each venue is superbly designed to allow diners to make the most of the exceptional views while enjoying everything from delicious cafestyle food at The Deck, to tempting tapas at The Verandah and modern Australian cuisine with a twist at Twine. “Let’s face it, if I was in Tuscany, I wouldn’t want to be sitting inside four walls; I would want to be outside, enjoying the views'', he says.


Matt is, of course, not the only restaurateur in the Hunter making the most of the appeal of eating outdoors. Located on one of the most beautiful properties in the Hunter Valley and also tapping into the European roots of the al fresco experience is RidgeView Restaurant, with its renowned Cypriot Mezze menu – a sumptuous banquet designed to be enjoyed with matching Estate wines over several hours, whilst taking in the magnificent views. Similarly, the tempting flavours of the sun-drenched Mediterranean regions have also infused the rustic fare on offer at the popular and centrally located Cellar Restaurant. With its quaint outdoor dining area seating up to 40 people, dining at the Cellar Restaurant is the perfect option in the warmer months. A local favourite dining venue is the historically significant Circa 1876. Having recently introduced a new menu and dining format, and now offering two, three and five-course tasting menus, executive chef Trent Barrett is no less focussed on the importance of the al fresco experience. “Here at Circa 1876 you can dine in view of the gardens and see where your food came from just beyond your plate’’ he said. Further up the road at Peppers Convent and also under the direction of Trent Webber is Restaurant Eighty Eight. Here you can eat on the terrace overlooking the gardens with seating for up to 36 people in a refined and intimate setting. All the food at Eighty Eight is organically grown in the garden or sustainably farmed. Another favourite amongst locals and visitors alike is Oishii. A Japanese and Thai restaurant located at Roche Estate and near Tempus Two Winery, where diners can choose to sit outside on the covered terrace overlooking the vines and architecturally designed amphitheatre.

Clearly we are spoilt for choice when it comes to restaurants in the Hunter Valley, but when dining al fresco, Restaurant Cuvee at Peterson House is hard to beat. It is the epitome of casual elegance with its large outdoor deck overlooking the vineyards and cottage gardens. Restaurant Cuvee is the natural choice for a quick bite, a leisurely breakfast or to catch up with friends over a long lunch. Of course, the choice of excellent dining venues in the Hunter does not start and end here. With over 45 great restaurants and cafés to choose from, no matter where you are in the Hunter Valley, there is always somewhere to stop and soak up the sun as you indulge the local fare.

OKTOBERFEST! Oktoberfest is the world’s largest beer festival, held annually in Munich, Bavaria - Germany over 16 days from mid-September to the first weekend in October. Each year over 6 million people from all over the world dress in their Lederhosen and Dirndl to join the celebrations. Record quantities of beer are consumed each year at Oktoberfest, with a litre of beer the only serving size available in most tents or beer halls, known as a “Mass” in Bavaria. A whopping 6.4 million litres of beer was consumed during the 2014 event, with a larger quantity expected to be consumed at this year’s festival. Although recognised as a beer festival, visitors can also enjoy a range of entertainment including amusement rides, market stalls and a wide variety of traditional foods that include schweinshaxe (roasted ham hock), würstl (sausages) and knödel (potato or bread dumplings). Oktoberfest is an important part of the Bavarian culture, having been held since 1810. The popularity of the event has spread with Oktoberfest celebrations now held throughout the world – including here in the Hunter Valley .

Gold medal wines came from a broad spread of regions, including the Hunter Valley, Canberra District, Hilltops, South Coast, Mudgee, Orange, Southern Highlands and Riverina. Whilst Shiraz, Chardonnay and Semillon classes were strong, the judges were particularly impressed with the quality of wines across the board, thanks to a couple of excellent NSW vintages. A fresh and exciting new style of dining in the Hunter Whilst not an entirely new concept, "pop up" restaurants are catching on with Australian diners who are really starting to get behind this exciting style of dining, which involves fun and sophisticated food being served in unique and often secret venues. As the name suggests, pop up restaurants are eateries that pop up from nowhere. It’s a fun alternative to traditional dining out, but pop up restaurants are not just a creative way to revolutionise dining - it’s also a great way for restaurant owners and chefs to reinvent their business and reconnect with the diners, as opposed to being tucked away at the back of the restaurant.

A Meal

for the Warmer Seasons While seafood is a meal to be enjoyed all year around – Spring and Summer are the perfect seasons to enjoy the bounty of the ocean, with the warmer evenings inviting us to spend more time dining outside. Good-quality seafood, whether bought or caught, deserves a little effort where the matching of wines is concerned. As a general rule, the more delicately flavoured the fish dish is, the more subtle the wine should be. Pairing wine with seafood isn't a difficult task. When thinking in terms of weight and substance, delicate raw fish and light, shellfish go best with equally delicate, light white wines. Similarly, a piece of grilled swordfish or salmon will go better with a richer, more substantial white. The general view is that white wine should be served with fish and red wine with red meat. While there is some validity to that belief, wine drinkers should not limit themselves to any single category. At the end of the day, it is the type of seafood that will determine the best match for the wine glass.

Here are some examples to assist with the choice: Semillon is one of the best-kept secrets of the wine world and also the perfect partner for seafood. A zesty young Semillon is an ideal match to delicately flavoured dishes such as raw and lightly cooked shellfish - especially those with Asian flavours, oysters, fresh crab, clams and sashimi. A rich and complex aged Semillon is more suited to fully flavoured dishes, such as grilled fish (especially salmon) or lobster. Shellfish such as clams, mussels, scallops, as well as crab and lobster call for light whites and sparkling wines. Sparkling wines and oysters are a classic combination. Verdelho is also an ideal wine to accompany shellfish. If the dish is spicy, consider an off-dry Gewürztraminer. When it comes to lean, simply cooked white fish, the perfect wines to reach for are Chenin Blanc, Pinot Grigio and Sauvignon Blanc. Flounder, sea bass, cod, snapper, lobster, shrimp, clams, crab, raw oysters, mussels all do well with these wines. Similarly, light, slightly sweet Riesling pairs well with scallops, clams, grilled prawns, calamari, trout, or baked oysters. For the meatier fish such as tuna or swordfish, look to match it with a white wine that has a bit more body such as a Viognier or even a Chardonnay. An un-oaked Chardonnay is especially well paired with creamy seafood chowders fresh cod or, trout, grilled or poached salmon, raw oysters, mussels and even lobster. Rosé is another category that pairs well with seafood, especially when paired with a thicker meatier fish such as tuna or swordfish or when adding some spice to the dish. When it comes to salmon (especially smoked salmon), tuna or swordfish, it pays to look beyond the white varieties and consider a light to medium bodied Pinot Noir or Merlot. The light body and delicate flavours of these wines will not overpower the fish and the fish are both meaty enough to match the heavier red wine.

2015 Estate Vermentino

Gold Medal – Hunter Valley Wine Show 2015 This wine displays a deep purple colour with aromas of dark plum fruits and mixed savoury spices with a coffee bean lift. On the palate, this wine is generous with ripe plum fruits and mixed Christmas pudding spices. Cloves and cinnamon with some coffee bean add to the complexity and generosity of this wine. The tannins have a presence which gives the wine purpose. They will soften with careful cellaring and the wine will evolve with cigar and leathery spices adding complexity.

Following straight on from the 2011 Shiraz, as there were no 2012 Brokenwood Hunter Valley reds, this wine has lifted fresh red fruit and spice characters. The colour still a vibrant deep red. Lovely savoury, red cherry flavours and fine grained tannin from the perfectly ripe fruit and French Oak. The oak takes a background seat due to the use of puncheons and mostly older oak. This a fine Hunter Valley Shiraz.

The 2015 Brokenwood Semillon was a smaller production than usual and was harvested by hand after a very dry winter and uncharacteristically wet December. The cool year has resulted in grassier/hay fruit characters. The colour is perfect, lots of green tinges. There are citrus notes to the aromas as well. Lighter, fresh lime and lemongrass flavours on release as a youngster. Great acidity and the 10.5% alcohol is perfect for summer drinking.

In 2008, the Agnew family made the decision to re-commence winemaking at the historic Audrey Wilkinson Vineyard for the first time in over 50 years. Audrey Wilkinson’s legacy lives in their winemaking today, with many of the wines sourced from the original vineyard, under the watchful eye of Chief Winemaker Jeff Byrne. The Best Other Red Trophy was awarded to the 2014 Audrey Wilkinson Winemaker’s Tempranillo. This wine has been produced from the best parcel of Tempranillo grapes from the older vines of the Audrey Wilkinson vineyard, resulting in a wine that displays a dark red, almost black colour with vibrant purple hues. The bouquet features lifted floral, violets, red fruits, white chocolate and spice aromas. This wine has a palate of plush mulberry and cherry fruits, with an intense tannin structure and cedar notes. For only $38 a bottle, this wine can be enjoyed now or cellared for up to 7 years.

The grapes for this wine were hand picked from the historic 50+ year old Shiraz vines on the Poole’s Rock ‘Post Office’ vineyard. Audrey Wilkinson Unveils 150th Anniversary Crest 2016 will mark the 150th Anniversary for Audrey Wilkinson, so to commemorate this milestone, the Wilkinson family crest has been incorporated into the latest labels. The Wilkinsons were pioneers of the Australian winemaking industry as one of the first families to plant vines in the Pokolbin area. In 1866, the Wilkinson family acquired the present site of the Audrey Wilkinson Vineyard, and went on to enjoy great

Fortunately, the history of Audrey Wilkinson and his family is well preserved through photos and diaries, which can be viewed in the Museum at the Audrey Wilkinson Cellar Door in Pokolbin. These historical artefacts and original wine bottles inspired Audrey Wilkinson to incorporate the family crest, which appeared on the original wine labels, onto the latest wine labels to pay tribute to the Wilkinson’s legacy. The official 150th Anniversary celebrations will kick off on the 10th of October with a sold-out black-tie Budburst celebration dinner for wine club members at the Cellar Door, and additional events planned throughout 2016 to mark the special occasion. The special-edition labels featuring the family crest hit the shelves in September with their popular Moscato, with all other products to receive the new label by the beginning of 2016.

citing lemon, green apple and blossoms. In contrast, Pinot Gris tends to be more full-bodied, richer, spicier, and more viscous in texture. They also tend to have greater cellaring and ageing potential. The names Pinot Grigio and Pinot Gris mean ''Grey Pinot'' in Italian and French respectively. ''Pinot'' refers to the characteristic pine cone shaped bunch of this group of varieties. ''Gris'', meaning grey in French, refers to the colour of the Pinot Gris grapes. As a result, wines made from Pinot Gris often have a slight coppery hue. The grape is said to have originated from the Burgundy region of France where it is mostly cultivated in Alsace and known as Pinot Gris, while, in Italy it is recognised as Pinot Grigio. Although French in origin, it is really the Italians that brought the variety to popularity and global recognition. Today Pinot Gris / Pinot Grigio is planted all over the world in almost every wine-growing region. For the most part, these countries are making the more fashionable Pinot Grigio style, which is typically easydrinking.

One Grape Two different personalities There is often much confusion over this white wine which is named in deference to two regions in Europe. Pinot Gris and Pinot Grigio are in fact, the exact same grape variety and believed to be a mutation of Pinot Noir. Although they are the same grape, the two names have over time come to infer two different styles of wine. Immensely popular, the Italian style Pinot Grigio wines deliver a lighter bodied, crisp, dry and more refreshing style. These characteristics are often complemented by aroma notes

Although Pinot Gris was first introduced into Australia as part of the James Busby Collection in 1832, it is only in the last 20 years that it has made its rapid entry into the Australian wine scene and attracted some serious interest. Pinot Gris is fast becoming an increasingly popular wine with the variety now being grown in most Australian wine regions. In fact, if one considered projected grape intake figures, it would not be surprising if, in the future, Pinot Gris became as popular as Riesling or Sauvignon Blanc. When it comes to food, Pinot Gris with it's zesty and refreshing acidity pairs well with fresh vegetables, raw fish and lighter meals. Fish and shellfish are classic pairing partners with Pinot Gris. Try with sushi, scallops, sea bass, perch, trout, snapper, mussels, clams or oysters. It's also great with chicken and turkey as well as cured or spiced meats made from pork and duck. Australian Pinot Gris can stand up to richer - creamier dishes because of their body and often heightened alcohol level. Try not to go too spicy with your seasonings.

Head judge Keith Tulloch stated that his panel of judges were extremely impressed with the quality of wines this year and made particular mention of the strong 2014 vintage Shiraz and the ongoing resurgence of Hunter Valley Chardonnay. Saddlers Creek’s 2009 Semillon took out two major awards - Best White Wine of Show and also the prestigious Karl Stockhausen trophy. Thomas Wines won the award for Best Red Wine of Show for its 2013 Shiraz. RidgeView Wines was also very successful taking home three awards for their 2007 Shiraz, 2007 Cabernet Sauvignon and 2006 Botrytis Semillon.

Peter Lane Chief Winemaker Wynwood & Capercaillie With over 22 years experience in the wine industry in the Hunter Valley Peter Lane has worked with some of the leading winemakers at Lindeman’s, Tyrrell’s and McWilliams. Born and raised in the lower Hunter Valley encouraged Peter's interests in science, viticulture and agriculture. After deciding at a young age he wanted to become a winemaker, Peter went on to complete a Bachelor Applied Science (Agriculture), Bachelor Applied Science (Wine Science) and later on a Graduate Certificate in Business Administration. His first full time job in the wine industry was as a trainee chemist for Mount Pleasant where he spent 6 years, working with many dedicated people and developed a passion for Hunter Shiraz and Semillon. He then moved on to Southcorp where he was based at Tulloch wines in the early 1990’s. Here Peter saw a different side to winemaking and the styles being made. In 2003, Peter was approached by Tyrrell's to join them as an Assistant Winemaker, once again returning to a family owned vineyard winery steeped in tradition.

In 2011, when Winston Wines purchased the renowned Capercaillie Wine Co. in Lovedale and the old Saxonvale Wines property on Oakey Creek Rd - renaming it Wynwood Estate, Peter was presented with the opportunity to work on some of the oldest vineyards in the Hunter plus other regions as winemaker across both labels. When Peter is not busy making beautiful Hunter Valley wines he enjoys watching cricket and relaxing with a beer.
