FROM THE EDITORS If you thought we might be focusing on a few of our favourite things this month, you wouldn’t be wrong! Topping the list are diamonds (a girl's best friend!) What is it about these sparkly little gems that make us so starry-eyed – and where can you find the rock you’re dreaming about in the Hunter Valley? You’ll find out in this issue. Then there’s roses – and it’s certainly time to stop and smell them this month as Hunter Valley Gardens launches into the annual Rose Spectacular around the middle of this month. Experience the incredible sensory explosion of colour and fragrance as hundreds of thousands of roses blossom on over 35,000 bushes throughout the Gardens. Of course, wine gets a look in too with the discovery of a very special Hunter Semillon, and an in-depth look at the Tempranillo variety. We also find out about how the smaller boutique wineries are crushing the competition at a number of wine shows aimed at providing a stage for smaller winemakers to shine on. Our food focus this month is about the slow food movement which has

attracted the attention of some of our favourite celebrity chefs like Maggie Beer, Jaime Oliver and Kylie Kwong. Seasonal produce is at the core of slow food and who better to share a few delicious recipes than the Golden Door Elysia Health Retreat (so you can be sure they’re healthy too!) There’s a raft of entertainment throughout Wine Country this month – from the return of Opera in the Vineyards to Midnight Oil, Sculpture in the Vineyards to Melbourne Cup celebrations – it’s all happening! The 2nd Annual Pokolbin Pride returns from October 20-22 with a 3-day celebration of LGBTI talent. The highlight of the weekend is undoubtedly the Pokolbin Pride party to be held on the Saturday night at Tamburlaine Organic Wines. We’d also be remiss if we didn’t wish the beautiful ‘mural’ town of Kurri Kurri a Happy 115th birthday – a community event in the towns Rotary Park will mark the occasion with live entertainment, food and drink stalls and an evening outdoor movie screening. Smell the Roses! Everything seems to be coming up roses at Hunter Valley Gardens this month, as the annual Rose Spectacular is on again from 14th October to 12th November. Established in 1902, Kurri Kurri was one of a string of small town centres that popped up to support the thriving coal industry that had taken off in the South Maitland Coalfields – the richest coal deposit in the Southern Hemisphere. The first planned Crown town in NSW, Kurri Kurri took its name from a local Aboriginal word, which has a meaning similar to “the beginning” or “the first”. Kurri Kurri has flourished and is now a key town in the area. The town will celebrate its 115th birthday on Saturday 21st October with a free community festival in Rotary Park, jam-packed with entertainment for the whole family. Festival Coordinator Carol Doherty said, “this is now the 7th year that our Community Festival has been held as part of the Hunter Expressway completion. I am hoping that the community gets behind the towns 115th birthday celebrations in 2017 with the Festival event on the 21st and our Dinner Dance on the 27th of October”. The festival will include over 40 food, drink and market stalls, arts and crafts, face painting, children’s rides as well as on stage entertainment commencing at 11am. There will be entertainment from local schools and professional entertainers, with X Factor Finalists Brothers 3 taking to stage from 5pm. The celebrations will culminate with a movie screening of the family favourite “Secret Life of Pets” in the park from dusk. ON SHOW: Elemental Elemental is a collaborative art exhibition by artists Lisa McArthurEdwards, Lindsay Cameron, Therese Gabriel Wilkins, Emilia Krumm and Kate Landsberry, collectively known as the 'Five Strings'. The five women have been creating art together as ‘Five Strings’ for over two years. They all have their own long-term and diverse practices, but came together after recognising the power of collaboration. The Elemental exhibition at Cessnock Regional Art Gallery on show until 22nd October features artworks that have been inspired by nature and pieces found from nature. The spectacular line-up includes two of the mostloved Opera stars, Australian soprano Cheryl Barker and popular baritone Teddy Tahu Rhodes, who will delight you with their breathtaking voices and charismatic stage presence. Cheryl Barker studied with Dame Joan Hammond at the Victorian College of the Arts and began her career as a member of the opera chorus at the Victoria State Opera at the age of 19. She made her first solo appearance at that house as Blondchen in Mozart's Die Entführung aus dem Serail at the age of 23. Her first major critical success came in 1990 at her debut at the Sydney Opera House as Mimì in Puccini's La Bohème, directed by Baz Luhrmann. She has had an active international career since the late 1980’s, particularly noted for her performances of Madama Butterfly, singing this role in England, Belgium, Germany, Netherlands, USA, Wales, Taipei and Australia. Barker has also been a regular performer with Opera Australia, where her roles have included Countess Almaviva in The Marriage of Figaro, Cio-Cio San, Desdemona in Otello, Emilia Marty in The Makropulos Affair, Lauretta in Gianni Schicchi, Marie/Mariette in Die tote Stadt and the title roles in Arabella, Manon Lescaut, Salome and Suor Angelica. Born in Christchurch, Teddy Tahu Rhodes’ musical potential was not identified until his final year of secondary school, when he was selected for the New Zealand Youth Choir. In 1991, Rhodes won the Mobil Song Quest, the major competition of its type in New Zealand, securing funding to study at the Guildhall School of Music and Drama in London. In 1998, he made his international debut in an acclaimed performance of Dandini in La Cenerentola for Opera Australia. Rhodes then went on to sing in several world and Australian premiere performances such as The End of the Affair (Bendrix) and Dead Man

MIDNIGHT OIL Legendary rockers and agitators, Midnight Oil are about to embark on their first world tour in 15 years, which will include performing a sold out show at Hope Estate on Saturday 21st October, supported by Birds of Tokyo and Ash Grunwald. Midnight Oil is an iconic part of Australian music history. From the northern beaches of Sydney to the streets of Manhattan, for the past four decades, Midnight Oil have stopped traffic, inflamed passions, inspired fans, and broken new ground. Rob Hirst (drums, vocals) and Jim Moginie (guitar, keys and vocals) began making music together at school in 1972 when they formed the band Farm. The band changed their name to Midnight Oil after Peter Garrett joined the band in 1975 and Martin Rotsey (guitar) came on board the following year. Founding bass player, Andrew “Bear” James, was replaced by Peter “Giffo” Gifford from 1979 until 1987 when Bones Hillman joined the band. During their early years, the Australian pub rock scene was at its peak and Midnight Oil gigged endlessly to forge a fierce bond with their devoted audiences through jagged Ozrock classics like “Back On The Borderline”, “Bus To Bondi” and “Don’t Wanna Be The One”. It was during this time that the band made it clear that they wrote their own rules; refusing to appear on popular TV shows like Countdown and shunning all the ‘music biz’ norms. They also became known for their support of environmental and social justice causes, which set the tone for everything that followed. In 1982, Midnight Oil’s fourth album “10, 9, 8, 7, 6, 5, 4, 3, 2, 1” turned everything on its head. They deconstructed their sound and reassembled it into anthems like “US Forces” and “Power and the Passion”. Their powerful lyrics showed the world that they were activists that refused to be controlled by geography, government, corporations or societies expectations. The album was a huge success in Australia, staying in the charts for more than 200 weeks. Midnight Oil had their global breakthrough with their “Diesel and Dust” album, which included hit singles “The Dead Heart”, “Put Down That Weapon”, “Dreamworld”, and “Beds Are Burning”. The band toured internationally through ‘87 and ’88 driving the album to huge critical and commercial success. It ultimately sold more than 6 million copies and earned them a Grammy nomination although the band declined to attend the ceremony to be part of a political event at home.

Among numerous other honours, “Beds Are Burning” is included in the U.S. Rock ‘n’ Roll Hall of Fame as one of the “500 Songs That Shaped Rock ‘n’ Roll. The outstanding “Diesel & Dust” was recently listed at #1 in the definitive book “100 Best Australian Albums”. 1990’s “Blue Sky Mining” was another globally successful album, charting top 5 in many parts of Europe and top 20 in the U.S. Back home it won the band five ARIA Awards and was certified five times platinum. In 2002, Peter Garrett announced that he was leaving the band to pursue a full-time political career, which saw him elected in 2004 and serve as cabinet minister in various portfolios. Over the next decade, Midnight Oil only regrouped for two iconic stadium appearances for charity (and their related small warm up gigs); ‘WaveAid’ in 2005 and ‘Sound Relief’ in 2009. Then in May 2016, they made headlines with a surprise announcement via Facebook that they would be “getting back together for some gigs next year”. In February this year, the band announced that they would be embarking on “The Great Circle 2017” World Tour. It is Midnight Oil's biggest tour since classic 80's and early 90's albums like "Diesel & Dust" and "Blue Sky Mining" sold over 10 million copies around the world. The world tour kicked off in mid-April with an intimate pub gig in Sydney, before the band honed their live show with over 30 gigs around the world, with all 14 North American shows quickly selling out, as well their shows at London’s Hammersmith Apollo and the iconic Olympia Theatre in Paris. This month, Midnight Oil return home for 18 special homecoming concerts. Given the band’s deep connections with central Australia, the local leg will kick off in Alice Springs and Darwin before looping clockwise around the country before “The Great Circle” finally ends right back where it all began in Sydney.

Looking back at the various food trends that have hit our tables in recent years, there has been a rising interest in the ‘slow food’ movement both in restaurants and at home. Celebrity chefs such as Maggie Beer, Kylie Kwong, Matt Golinski and Jamie Oliver (UK), as well as restaurateurs in Australia and around the world have become advocates for ‘Slow Food.’ So, what is Slow Food? In short, Slow Food is the opposite of fast food. It is a movement towards good, clean and fair food for all. Those who advocate for Slow Food believe that the food we eat should taste good, it should be produced in a clean way that does not harm the environment, animal welfare or our health, and that food producers should receive fair compensation for their work. How can you get involved in the Slow Food Movement? • Know exactly where your food is coming from by purchasing from local vendors at a farmer’s market or by checking the labels on products in the supermarket to find those produced locally • Shop for organic, non-GMO foods, to ensure you are eating clean food • Eat less meat and more vegetables, fruits and grains, as commercial meat production can be harsh on the environment • Cook at home regularly

• Grow your own vegetables at home • Avoid fast food and prepackaged foods, as these are high in additives, preservatives and fat. • If you do eat out, dine at restaurants that focus on local, clean food • Make meals a social event - The Slow Food Movement focuses on sharing meals with others to encourage conversation and connection. Fresh, seasonal produce is at the very core of the Slow Food Movement: picking everything at its peak, so it not only tastes better but is also cheaper and more nutritious (as fresh fruit and vegetables start to lose nutrients as soon as they are picked). Chicken and Avocado Salad with Smokey Potato Wedges Recipe: Serves 6 Ingredients 600g chicken tenderloins (or chicken breast cut into 2cm wide strips) Fresh herbs, such as thyme and rosemary chopped finely 100ml Dijon mustard Croutons: 2 garlic cloves, crushed 2 tbs finely chopped rosemary 1 tbs lemon juice Sea salt and black pepper, to taste 2 cups whole grain gluten free bread, cut into small cubes Smoky potato wedges: 3 desiree or kipfler potatoes, cut into wedges 1 tbs smoked paprika Salad: 6 poached free-range eggs 1 avocado, sliced 1 Spanish onion, thinly sliced 2 cos lettuce, shredded Method: To make the croutons, preheat oven to 200⁰C and line a baking tray with baking paper. Put garlic, rosemary, lemon juice, sea salt and pepper in a large bowl and combine until well mixed. Add cubes of bread and toss to coat. Place croutons on the lined tray and bake for 15 minutes or until golden. Stir croutons frequently while baking. Reduce oven temperature to 180⁰C. Coat chicken in mustard then sprinkle with the herbs and bake for 8-10 minutes until cooked. To make the potatoes wedges, boil or steam potato wedges for approximately 10 minutes until just tender. Cool. Place on a lined baking tray, sprinkle with smoked paprika and bake for 15 minutes. Divide salad ingredients between plates and arrange chicken, potato wedges and poached egg around and sprinkle croutons over the top. Chef’s tip: For a vegetarian option use 300g firm tofu, cut into small batons. Sprinkle 3 tablespoons of tamari over tofu strips making sure to cover tofu with tamari. Place tofu on a baking tray lined with baking paper. Bake in hot oven, approximately 200⁰C for 15 minutes or until firm then sprinkle over salad.

Recipe: Makes 16 Ingredients ½ cup almonds (any type is fine, skin on or off, blanched or not) 1 cup Medjool dates Finely grated zest and juice of 2 limes 6 tbs shredded coconut 1 tsp maca powder (optional – available from health food shops) 2 tbs ground linseed, for coating Method: Place the almonds in a food processor and process until finely chopped. Add remaining ingredients, (except linseeds) and process until combined and paste-like. Roll mixture into golf ball size balls and coat in the ground linseed. It is preferable to chill the balls for 30 minutes, although they can be eaten immediately. Store in an airtight container in the fridge for 1-2 days or in the freezer. These freeze well. There will be three main events across October 20-22, including a chilled-out Bubbles and Beats at Peterson House on Friday from 7.30pm11.30pm, and the relaxed Recovery Party from 12pm-4pm on Sunday at Ivanhoe Wines. Saturday night will be the highlight of the weekend, with a massive Pokolbin Pride party at Tamburlaine Organic Wines from 6pm to midnight featuring one of the hottest entertainers on the national club scene, Newcastle-born DJ Mason Andrews, as well as one of Australia’s most sought-after live signing drag queens Prada Clutch, who is sure to add plenty of glitz and glamour to the night with her fabulous act, Prada’s Priscillas. For those looking to slow the pace down a notch, there will also be a Rainbow Families Lunch held at Nanna Kerr’s Kitchen from 12pm to 3pm on all three days, providing the perfect space to enjoy some good food and great company among family and friends. “We’ve got a huge outdoor dining area that we’ll be turning into a family picnic space and tickets for that have already started selling very positively,” Jimmy said. “It was one of the biggest pieces of feedback from the previous year… that there was a very strong, connected local rainbow family network that actually just wanted space to come out and do something kind of relaxed, where same-sex parents could bring their children. “We’ve got that happening on all three days and I think that’s going to be a very colourful celebration of alternative families, that’s going to be really positive particularly in the current environment.”

Community markets at Drayton’s Family Wines and a LGBTI art expo at Tamburlaine will round out the festival program, ensuring there is something for everyone. Jimmy said the event has been embraced by the Hunter vineyard business community, while ACON Hunter and Aurizon have come on board as sponsors for 2017. “We’ve now got our core partners in the Valley in terms of Drayton’s, Tamburlaine, Peterson House, Ivanhoe and Macquariedale, along with Nanna Kerr’s Kitchen,” he said.

“From the business community we’ve had zero negative response so far, if anything the opposite, we are kind of overwhelmed by the number of people who want to be involved – but we need to grow the festival first. “It’s our job now to drive foot traffic so other businesses can take part in years to come.” Prada's Priscillas

1991. If ever anyone needed proof of the amazing ageing potential of Hunter Semillon, this is it. The sceptics can now move on. What is so fascinating about this story is that the finding of these bottles came about by accident. “We were building a new warehouse structure at the main site in Griffith – the original McWilliams cellar door site, and the staff were in the process of clearing some space in the Directors store and storage facility when purely by chance they came across these cases of wine” said Tristan Jones, Mount Pleasant Wines Cellar Door Manager. “We thought we would give them a try and what we found was truly amazing.” “The 1986 vintage was considered a great vintage, and it is incredible to see how these wines have held up. They are truly superb wines.”

They have beautifully developed flavours of honey and toast with a wonderful lime freshness, which is just remarkable to see in a 31-year-old wine.

The Elizabeth range are single vineyard wines, originally released as a 5-year-old wine. Back then they would have been available at the cellar door for about $8 or $9 each. Now 31 years later they are going for $49 each. When asked why the price was so reasonable, Tristan explained that they could have inflated the price, but that they wanted wine lovers to experience a very aged Hunter Valley Semillon and appreciate its ageing ability. “I am not aware of any other winery anywhere releasing a 31-year-old white wine”, said Tristan. Scholarship Honours

Industry Icon Trevor Drayton was a fifth-generation winemaker and a member of one of Australia’s pioneering wine families. His brilliant career was cut short in 2008 when he lost his life in an industrial accident during harvest. In 2009, a group of Trevor’s friends and associates decided that his memory should be honoured by the industry to which he had contributed so much. They established a scholarship programme open to the next generation aspiring to a career in the wine and Kim Williams hospitality industry. The Trevor Drayton Scholarship, funded by the Trevor Drayton Foundation and granted by the Hunter TAFE Foundation, comprises awards in culinary, hospitality, and winemaking. The scholarships, valued at $2500 each, seek to discover promising young talent in the region and showcase the Hunter and Central Coast’s vibrant tourism and hospitality industry. By providing tailored financial and practical support, through the purchase of resources, experiences and opportunities, it is hoped that it will assist the scholarship recipients to further their careers and achieve the same level of excellence as Trevor. Local restaurateur Scott Webster remains a driving force behind the fundraising and scholarship scheme established to honour the memory of his good friend.

“By partnering with the Hunter TAFE Foundation, we are able to support the career development of students and young industry professionals who have their skills founded in the quality training that TAFE NSW provides right here in the Hunter.” Kim Williams was the 2017 Trevor Drayton Scholarship winemaking recipient and had initially enrolled in the Diploma of Viticulture at TAFE NSW Kurri Kurri with a keen interest in agriculture and desire to learn more about wine and the science behind the industry. “During my course, I had chosen the Rutherglen region for a research topic. The scholarship enabled me to travel to Rutherglen during vintage, a world-renowned region for fortified wines, so to actually be there gaining industry experience first-hand was amazing,” said Ms Williams. “When I received the scholarship, it was unbelievable. To have access to the finances to undertake professional development is great, but it is the confidence that the scholarship has given me that is most valuable,” Ms Williams said. The scholarship is open to all current and past TAFE NSW students who have completed training within the past five years in hospitality, culinary skills or winemaking. CRUSHING THE COMPETITION In the Australian winemaking industry, the smaller producers are often overshadowed by the larger commercial producers, especially in wine shows and competitions. However, there are a number of wine shows that have been established to provide a stage for smaller winemakers to compete against their peers locally, across the state and throughout Australia and New Zealand.

AUSTRALIAN AND NEW ZEALAND BOUTIQUE WINE SHOW The Australian and New Zealand Wine Show was established in 1996 and is open to Australian and New Zealand boutique wine companies. To enter a wine company must be independently owned (not owned by a large commercial entity) and their maximum tonnage must be 250 tonnes, to keep the show truly ‘boutique’. The 2017 Australian and New Zealand Boutique Wine Show was held in August and was judged by Huon Hooke (Chairman), Toni Paterson MW, Gary Baldwin, Peter Leske, Nick Butler, Andrew Thomas, Mike De Iuliis, Celene Rousseau and Andrea Pritzker MW. They judged 873 entries and awarded 544 medals in the 17 classes. NSW SMALL WINEMAKERS WINESHOW The NSW Small Winemakers Show celebrated its 26th year of competition this year with 515 entries received from 89 small producers that crush a maximum of 500 tonnes annually. Sixteen trophies and 223 medals were awarded at the 2017 Wineshow in August, with Hunter Valley producers picking up four trophies, one top gold and four gold medals. The Hunter Valley Boutique Winemaker’s Show started in 1989 with just eleven wineries. It has now grown to between 65 and 80 vineyards each year showcasing wine made from grapes grown in the Hunter Valley by boutique winemakers. Of the 316 wines entered into the 29th Hunter Boutique Winemakers Show in September, a total of 149 medals were awarded, consisting of 17 trophy gold, 12 gold, 32 silver and 88 bronze. Along with the Karl Stockhausen independently judged Classic Hunter White Wine Trophy, this year saw the introduction of a new trophy, the Dr Ray Healey independently judged Classic Hunter Red Wine Trophy. The 2017 judging panel consisted of Peter Hall, Mark Richardson, Nick Paterson, Adrian Sparkes, Brian Currie, Xanthe Hatcher, Chairman of Judges Keith Tulloch and Associate Judge Jessica McLeish. There is no denying the quality of the wines produced by Ridgeview Wines after they dominated this year’s show winning Best White Wine of Show for their 2009 Semillon, Karl Stockhausen Trophy for their 2014 Chardonnay, three trophy golds, two gold, one silver and seven bronze medals. What is it about sparkly, glittery and dazzling diamonds that makes us dream of owning one, two, or a dozen?

All diamonds fall within a range from ‘D’ (colourless) to ‘Z’ (coloured yellow). The higher or closer a diamond is to having no colour (D), the more valuable it becomes. This is because the light refractions reflect off the white diamond and create a truly dazzling and sparkling stone. Diamonds can also be found in many different colours, known as ‘fancy’ colours. These colours include yellow, brown, pink and blue, and these diamonds are particularly rare and valuable.

However, only a small percentage of diamonds mined are considered suitable for jewellery and most are only around the size of a crumb, which is why large diamonds are so expensive. Buying diamonds can be a little overwhelming, especially if it is a significant piece like an engagement or wedding ring. However, with a better understanding of the traditional units of measure for diamonds – the 4 C’s: Cut, Colour, Clarity and Carat – it can make shopping for diamonds a little less stressful and ensures you get the best quality and value.

Cut

Cut is the most important of the 4 C’s. A diamond’s cut refers to the premise positioning, shape and angle of a diamond’s facets, which determine how much a diamond sparkles. When a diamond is cut with the proper proportions, light is returned out of the top of the diamond (referred to as the table). If it is cut too shallow, light leaks out of the bottom; too deep and it escapes out of the side. Even if a diamond has a perfect clarity and colour grade, if it has a poor cut, it may appear dull. A diamond’s cut grade ranges from Excellent, Very Good, Good, Fair and Poor. To maximise your budget, choose the highest diamond cut grade your budget allows.

Most diamonds have little imperfections called inclusions, and the size or quantity of these determines the clarity grading of the diamond. The fewer and less visible inclusions, the higher the clarity grade and value. Diamond clarity is often the least important of the 4 C’s as most inclusions are so small that they don’t visibly affect the diamond's beauty. Inclusions vary in standards on the spectrum ranging from FL (flawless), SI1 to I3. It is extremely rare for a diamond to be flawless (known as FL) and is the highest level on the spectrum. SI1 is in the middle of the spectrum, and it is recommended when buying a diamond that you should not purchase lower than this standard. I3 is the lowest as it includes the most inclusions and is least clear.

Carat

Carat is the most misunderstood of the 4 Cs as it refers to a diamond's weight, not its physical size, as commonly believed. One carat is 0.2 grams and can be further divided into 100 points (this is the method used to determine the lower carat stones). As a diamond increases in weight, it also increases in volume in every direction. So, some of the increase or decrease in diamond weight will be seen in the diameter, and some will be in

When it comes to food, Tempranillo wines are perhaps one of the most food-friendly wines around. Spanish-style dishes are the obvious food pairing such as tapas style dishes - chorizo sausage, olives, cured ham, goats cheese, pork, grilled or roasted entrees. Vegetable casseroles and grilled or roast lamb are also the ideal meals to accompany these wines.

Pokolbin Estate - 2015 ‘Phoenix’ Shiraz Tempranillo

Tempranillo WINE Tempranillo (from the Spanish Temprano, meaning early) is a premium grape variety originating in the Rioja region of Spain, where it is considered the “backbone” of the wines of the Rioja and the Ribera del Duero regions in Northern and Central Spain. In these regions, it is often blended with varieties such as Graciano, Grenache and to a lesser extent Cabernet Sauvignon. Tempranillo wine is now being made in many wine regions throughout Australia - including the Hunter Valley and is said to be challenging Sangiovese as the up-and-coming red wine varietal in Australia. Although often considered to be a “relative newcomer to Australia”, the variety has in fact been in Australia for a long time, with records of it being in the Rutherglen collection first brought to Australia in 1908. It also may well have been among the vines brought here by James Busby in 1831 but was not widely planted. Although it is difficult to identify when the first plantings took place, it remains highly likely that they took place here in the Hunter Valley after the introduction of new selections from Davis University in the late 1960’s. During the 1990’s, Tempranillo started experiencing a resurgence in wine production with growers in Australia planting significant quantities of vines. In recent years and based on a percentage basis, Tempranillo is growing in popularity far more rapidly than any other variety. What makes this variety so exciting is that it is an easy drinking, medium to full-bodied wine with lower acidity and full fruit flavours that match well with a wide range of foods. The wine itself, is ruby red in colour, while the aroma and flavours can have characteristics of plum, cherry, strawberry and herb mixed with an earthiness. As Tempranillo is low in both acidity and sugar content, in Australia, it is seldom bottled as a single varietal and commonly blended with Grenache and Shiraz (Syrah).

With its Intense crimson red colour and strong purple touches, this popular Shiraz Tempranillo is a distinctive soft, silky, fruit-driven red with a bouquet of plum, raspberry, blackcurrant and cherry. The Pheonix Shiraz Tempranillo is made from 50% Shiraz and 50% Tempranillo and aged in French oak for 15 months. This wine was released to commemorate the unfortunate fire that gutted the Pokolbin Estate cellar door in 2011. The Phoenix represents rebirth and rising from the ashes. Ernest Hill - 2015 'Andrew Watson' Tempranillo This wonderful Spanish varietal, which is most known for its use in the famous Rjoca wines, ripens early in the Hunter and results in a medium-bodied wine with excellent cellaring potential. This wine comes from the smallest block on the vineyard (1 acre in size), which was planted back in 2006. Only 330 cases were produced. Description: Ripe cherry and raspberry flavours with a hint of liquorice, and underlying savoury characters. Food Match: Chorizo and white bean casserole. Cellaring: Drink now to 5 years. RRP: $30
