FROM THE EDITORS There’s something about red wine that conjures images of winter... sitting in front of a raging fire, glass in hand with a roast in the oven… It really is a lovely time of the year in the Hunter Valley— which isn't traditionally known as a winter destination, but is fast gaining a reputation as an ideal “cold weather” retreat. As we near the end of what seems to have been a relatively mild winter, this month we celebrate the red wines of the Hunter Valley in our BIG RED issue, and take a look at some of the classic red varieties that the Hunter Valley is renowned for.

When doing the rounds of the wineries, it’s difficult not to notice the everpresent cellar door pooch and the warm welcome that follows from the moment you arrive. They all have their own personalities and talents, and this month we meet a few of them and find out what makes them tick (no pun intended!) There’s some new kids on the Wine Country block – from restaurants to tours to cellar doors – they’re all making an impact on the local scene by providing great new services for visitors. Amongst them are newbie vignerons Martin and Olivia Pukanic,

Kokedama, literally translated from Japanese, means “Moss Ball” and is actually a form of bonsai. The plant is grown to a small size, and then transplanted inside a bundled ball of specialised moss. The festivals most popular event, the Lantern Parade, will be held again at dusk on the Saturday. Everyone has the chance to join in the fun and light up the evening! As Sydney’s Taronga Zoo turns 100 this year, the theme is “Animals, Taronga Zoo style”. Workshops will be held every Sunday in August on the green next to Wollombi Real Estate from 10am to 1pm, with everything you need provided (with a small charge to cover costs). Epicure Café Local favourite, Epicure Café is owned and operated by Andreas Burri and his partner Norma, who both share a passion for food. With indoor and outdoor seating options and views over a picturesque dam, which is often active with birdlife, Epicure is the perfect place to relax and enjoy a delicious breakfast, a cup of coffee or an informal lunch after a morning of wine tasting. Dark Horse Vineyard Having opened just a few months ago, Dark Horse Vineyard on Wilderness Road in Lovedale, is already forging a reputation for setting high standards and quality, which is reflected in the new and stylishly renovated cellar door. Apart from wine, the cellar door has a wonderful range of homewares and gifts. Owned by Martin and Olivia Pukanic, Dark Horse Vineyard comprises of five acres of Semillon and two acres of Chardonnay, which were first planted sometime in the 1960's. It is also home to some of the Hunters oldest Chardonnay and has consistently produced premium Semillon. The wines are small batch, hand-picked, single vineyard wines and exclusively Hunter Valley. Darkhorse is open Friday to Sunday.

Zaih’s Café Located on Lovedale Road in Lovedale, Zaih’s Café was a long held dream of owners Michael Robinson and partner Alana, who share a passion for all things food, wine and coffee. Zaih’s Café opened in February this year, with the philosophy of providing customers with the best coffee, café and bistro-style breakfast and brunch with a focus on quality and consistency at an affordable price. With an impeccable career as a chef and a reputation for culinary excellence, Michael trained at The A terrine dish Bathers Pavilion in Balmoral and from Zaih's Café worked at renowned restaurants La Trompette in London and also Ortolan in Los Angeles. Home to some of the oldest vines and biggest names in Australian wine, the Hunter Valley is a mecca for lovers of quality wines renowned for their thoroughly unique and distinctive style and aging ability.
led winemakers to use it to improve the depth of blended red wines, without sacrificing the fruit quality of the primary variety (e.g. Shiraz). Some producers use the variety for sparkling reds, and it is also used successfully for port-style wines.

Because this variety is especially resistant to fungal diseases Chambourcin is a variety that succeeds wonderfully in the Hunter Valley climate and is also most at home in the more humid regions of Coastal NSW and Queensland who all experience wet summers.
SHIRAZ
Australia's favourite red variety Shiraz is by far Australia's most important red variety and is tremendously flexible in its ability to adapt to virtually any combination of climate and soil. The Shiraz grape is said to originate from the RhĂ´ne wine-growing area of France but is now grown throughout the world and used primarily to produce powerful red wines, which can be both varietal or blended. Shiraz is the Hunter's premium red variety and the most widely planted grape variety in Australia currently representing 40% of the total red grape crush and constitutes one fifth of all wine grape production in Australia. The typical young Hunter Valley Shiraz is a medium bodied wine showing red and dark berries, spices and a great deal of tannin. However, its real character is seen in wines with longevity. With age, the wines become far more complex, full bodied, yet smooth and richly flavoured with some earthy tones. Food Match: Shiraz is a good match with veal dishes, steak (especially peppery steaks), kangaroo, roast duck, Indian and Middles Eastern dishes, chocolate and smoked cheese
CHAMBOURCIN
Unique in so many ways Chambourcin is a relatively new purple skinned French-American hybrid grape that produces deep-coloured light to medium bodied wines with a full aromatic flavour, and no unpleasant hybrid flavours. It can be made into a dry style or one with a moderate residual sugar level, giving it a pleasant sweetness. In Australia, the grape did not show up until the late 1970's, and is now a widely used variety with an intense dark colour that has now also

Chambourcin wines are big and fruity with a lot of raspberries, plums, prunes and even cranberries on the palate. It is not as heavy or robust as Shiraz or Cabernet Sauvignon, which can make it quite attractive to people who generally don't like red wine. Chambourcin wines also respond well to being oaked, a treatment which can produce vanilla or mocha flavours in the wine. Food Match: When it comes to food, Chambourcin is a very versatile wine that will pair well with lighter meats, pork, lamb, sausage, poultry, pasta, cheeses and chocolate (or desserts made from the chocolate).
PINOT NOIR
The most romantic of wines Pinot Noir wines have been one of the strongest performing wines over the last three to four years and considered by some to be the next “wine fashion� - with plantings of pinot in Australia increasing from 4200ha in 2006 to 4800ha in 2012. With its origins in France, the Pinot Noir grape is a light skinned, aromatic grape and one of the oldest grape varieties to be cultivated for the purpose of making wine. While widely considered to produce some of the finest wines in the world, it is just as well recognised for being a difficult variety to cultivate. Pinot Noir is very sensitive to wind, frost, cropping levels and soil types and requires optimum growing conditions made up of warm days followed by cool evenings. Pinot Noir is also highly reflective of its terroir (more so than other black grape varieties), with different wine growing regions often producing very different wines which makes vineyard site selection an important factor.

Described as "the most romantic of wines� due to its sensuous and gratifying perfume, the wine tends to be light to medium in body with a broad range of textures and flavours, including a variety of complex aromas reminiscent of black or red cherry, raspberry, currant and blackberry. Food Match: When it comes to food pairings, Pinot Noir goes well with a wide variety of foods but is best suited to simple, rich foods. Dishes that best demonstrate the delicacy and texture of this wine are grilled fish such as salmon or swordfish, roast beef, roast lamb, game bird and duck.
MERLOT
The most pleasurable wine experience Merlot originates from Bordeaux in France, where it is often used to produce some of the world's most famous and most expensive wines. In Australia, it is considered to be one of the most important red grape varieties - coming in 3rd after Shiraz and Cabernet Sauvignon. Merlot is renowned for its wonderfully fruity, well rounded, even fleshy character and is grown in just about every wine growing region of Australia. The summer heat of the Hunter is considered to provide the ideal growing conditions for this versatile grape variety. In recent years, Hunter Valley Merlot has experienced a surge in popularity and is often considered to be more robust and fleshy than other well regarded varieties with a rich bouquet providing one of the most pleasurable wine experiences. Food Match: One of the best qualities about Merlot is its ability to match well with many different types of food from roasted meats to Italian-style tomato based pasta dishes or even salads. The agile, sweet fruit characters of some Merlots are best to match with roasted poultry, steak and game meats, slightly sweet meats such as ham or Mediterranean vegetables that complement the variety. For cheese, pate or game, try a Cabernet Merlot blend, where you can enjoy all the supple sweet fruit characters of Merlot, enhanced with some acidity and tannin from the Cabernet. Light bodied Merlots can go well with shellfish like prawns or scallops. Equally, it is a fine wine to enjoy on its own.
CABERNET SAUVIGNON
Cabernet Sauvignon wines can be medium to full bodied, typically leafy with ripe cassis like flavours, well-structured and elegant and powerfully aromatic. The bouquet can be rich with fruity notes of black cherries and currants, herby notes of peppers and olives and spicy notes of ginger. Typically, this wine features naturally high levels of tannin but barrel aging allows for slow oxidation to reduce these levels and infuses the wine with its flavours. Food Match: Cabernet Sauvignon has a tendency to overwhelm most foods, so it is best paired with rich, creamy dishes that will neutralise the tannins and bring forward the flavour of the wine. It also pairs well with grilled or roasted red meats such as lamb, beef or wild game. It also goes well with duck, roast chicken or a meaty fish like tuna and a variety of cheeses such as cheddar, mozzarella and brie.
SANGIOVESE
The pride of Tuscany Sangiovese is the most-planted red grape in Italy and is the most important grape variety used in the production of Tuscany's greatest red wines. This star amongst Italian wine grape varieties is now making its mark in Australia, where it has become increasingly popular over the last few decades. The variety also has a reputation for being adaptable to many types of vineyard soils and as such, is considered suitable for cultivation in a number of Australian wine regions - such as the Hunter Valley, where it is fast gaining popularity, although vineyard area remains small. The variety produces elegant medium-bodied wines with powerful aromas and with moderate to high natural acidity. The characteristic flavours are cherries, tomatoes, herbs, spices and tea-like flavours. Australian Sangiovese wines tend to be a little fruitier, with riper flavours and higher alcohol. Food Match: Like all Italian wines, Sangiovese is extremely food-friendly and works well with dishes containing tomatoes or acidic tomato sauces. White beans, mushrooms, and grilled red meat are also excellent partners with Sangiovese wines. Lighter styles of Sangiovese pair well with fish, especially grilled or roasted. Sangiovese also goes well with chicken, pork, pastas, stews and well-aged cheeses.

When doing the rounds of the Hunter Valley wineries it’s hard not to notice the ever present cellar door pooch and the warm welcome that follows from the moment you arrive. Winemakers love dogs and wherever wine is made, you’re likely to find the faithful dog hanging around, providing companionship in the vineyard and at the winery. They romp among the vines, greet the guests, chase balls and even snack on grapes. They have become as much a part of the winery experience as tasting wine. Five years ago, Martin and Olivia Pukanic realised they were spending more time in the Hunter Valley than their home in Sydney so made the decision to move here permanently. When searching for a property to house their beloved horses in the Hunter Valley, they realised they could combine their love of wine and horses by purchasing and running a vineyard. While for some this may seem like a daunting endeavour, Martin and Olivia were no strangers to the challenges of the hospitality industry, having previously owned a nightclub and a restaurant in Sydney. The gruelling search for the perfect property resulted in the purchase of the renamed Dark Horse Vineyard on Wilderness Road in Lovedale. After extensive renovations, Dark Horse Vineyard is now home to the first equestrian-inspired Cellar Door in the Hunter Valley with the exterior resembling a traditional American-style barn. When stepping inside you could be forgiven for thinking you were entering someone’s home. There is a sitting area complete with comfortable lounges and antique leather arm chairs, as well as bookcases lining the wall full of carefully selected luxury equestrian inspired homewares, gifts and accessories from stockists such as Villa Maison and One World, that are available for purchase. This month we sat down with Olivia to find out about their inspiration for Dark Horse Vineyard and what we can expect from them now and in the future... What was the inspiration behind the name Dark Horse Vineyard? James Halliday named the property one of his top ten "darkhorse wineries" under the previous name, Noonji Estate, and our horses live on the vineyard and are dark coloured, so it just seemed like the perfect fit. Tell us about the wine you make at Dark Horse Vineyard? Our wine maker is Damien Stevens and his wife Jodie Belleville of Hart & Hunter. We make small batch wines (approximately only 1300 bottles of each wine) from premium sites in the Hunter Valley. Our Semillon vineyard is around half a century old and unirrigated, as is our Chardonnay. We hand pick all our wines, and go for quality over quantity. We strive to showcase what the Hunter Valley does best with elegant wines specialising in Semillon, Chardonnay and Shiraz.

Our wines are all showcased in custom ‘black’ bottles to go with the ‘dark’ theme. The black protects the wine from sunlight and also look very glamourous. We have also created a Doni and Doll off dry Semillon named after our Warmblood horses. Doni and Doll are real life sweethearts and as this wine is sweeter in style, it was only right to name it after them. Which of your wines is your favourite and why? Our 2016 Unbridled Semillon, however we have just released a ‘Wild’ Semillon (fermented with natural yeast) which we have done with a leopard print label which may be my new favourite! What are the challenges you have encountered owning and running a vineyard? Martin and I like to do everything ourselves which can be a problem as there are only so many hours in a day. What has been the highlight so far? When people tell me how much they enjoyed the tasting! For me, it’s all about the experience, so when I know someone has really loved our wines it is always a highlight. What has surprised you most about being a member of the Hunter Valley wine community? How supportive everybody is! When we first moved from Sydney we couldn’t believe how giving people were of information. What future plans do you have in store for Dark Horse Vineyard? On the wine front, we have decided to do a Chardonnay next year in a Custom Croatian Oak Barrel in honour to our Croatian heritage. We are also about to launch our ‘EqWine’ club. This will be limited to a small group of members and will be very different to other wine club memberships. Keep an eye on our website for all the details. We have lots of exciting plans for our Vineyard including luxury ‘barnstyle’ accommodation with private pools, all done in the same Equestrian theme as our Cellar Door. We will also be creating a large wood-fired bakery housed in an American-style barn. We are hoping to create a relaxed, casual atmosphere but still done in a stylish way. While Martin and Olivia Pukanic may be newcomers to the Hunter Valley wine scene, all signs are pointing to them being, dare we say it, a dark horse in the industry and a force to be reckoned with.

Beer is one of the world's oldest prepared beverages, and can be found in the written history of ancient Iraq and also Egypt, where it was loved and consumed by Pharaohs and peasants alike. Enjoy a Glass of Wine with IN your meal! BY DI VON ESSEN
In our house, the cook is always rewarded with a treat – a glass of wine while cooking (this ensures we always get to eat!). In addition to this vital role, wine has three primary uses in the kitchen ‐ as a marinade, a cooking liquid and as flavouring for a finished dish. Cooking with wine brings additional flavour to the food being prepared and is used to intensify and enhance the flavour and aroma of food. Think of flavouring a recipe with wine in the same way you would by adding a spice or herb. The flavours tend to mellow the longer you cook the wine in the dish. For best results, wine should not be added to a dish just before serving as the wine needs to simmer with the food, or sauce, to combine with the flavours. When the wine is heated, the alcohol and the sulphates found in wine are cooked off, leaving only an aroma and light taste. For a long time, cooks believed that undrinkable wine, or wine they would usually dispose of, should be added to the saucepan. The reality is you can cook with all types of wine, regardless of the variety or price range, however, there is a single most important rule when it comes to cooking with wine - only cook with wines that you would drink. If you do not like the taste of a wine, you can be assured that you will not like the dish you choose to use it in. Also, refrain from using ''cooking wines'' as they tend to be cheap, salty and often include additional spices or herbs that do little to enhance your recipe. That is not to say you need to use expensive wines. A simple, good quality wine, that you enjoy, will provide the same flavour to a dish as a premium wine ‐ so save the premium wine to serve with the meal. A common question is what colour wine to use ‐ red or white.
Red wines tend to bring colour, clarity and a distinctly dry characteristic to the foods they are added to and are perfect with red meat dishes and for flavouring red sauces with red meat. For example, a robust red wine would be ideal for hearty stews with lots of heavy root vegetables. Try to avoid using very tannic and oaky reds like Cabernet Sauvignon, as the oak and tannins concentrate in the cooking process creating a very strong flavour, which could overpower your dish. If you are just starting out, don't over complicate it, keep a young bold red such as a Merlot in readiness for that favourite spaghetti bolognese and always be prepared to experiment by using different wines in your cooking ‐ that extra splash or two of wine is sure to make your favourite recipe a winner at the dinner table! As you would expect, wine in food is a staple on many a menu around the Hunter Valley – after all, you are in a wine region – so there’s no shortage in supply! One of the best things about High Tea is the undeniable feeling of luxury – not to mention justifying a meal comprised of mainly cakes. It is particularly popular on Mother’s Day, for baby showers, bridal showers, birthdays or just an enjoyable way to spend quality time with friends and family.
Elegant, decadent and immersed in tradition, the high tea experience hasn’t changed over time and lucky for us you no longer need to be a Duke or Duchess to enjoy the privilege of high tea. This hasn’t always been the case however, as the custom of high tea was once an essential daily undertaking. The history of high tea originates back to the 19th century when it was normal for society to only eat two meals a day: breakfast in the morning and dinner served at 8pm. The idea of eating more than twice a day first started when Anna Russell, the 7th Duchess of Belford famously complained of “having that sinking feeling” during late afternoon. Her solution was to have a pot of tea with a light sandwich and small cakes served mid-afternoon and she would have her friends join her to exchange stories and share news. The popularity of the ritual soon started to spread and became so popular among the affluent classes that it became one of the mainstays of the British way of life.

Since opening its doors for the first time earlier this year, the wine regions newest restaurant - Hunters Quarter (HQ) has quickly become the Hunter Valley’s latest taste sensation. Attracted by the lifestyle, wine and food offered by the region, owner and head chef Brian Duncan, his wife Jen and their young children decided on a “tree change” and made the move to the Hunter Valley, where in January this year they opened Hunters Quarter at Cockfighters Ghost vineyard in Pokolbin. Born in Sydney and inspired by his grandmother, who was a great cook, Brian has wanted to be a chef since he was 10 years old. For Brian, it’s all about the food and the experience and he tends to shun the limelight, preferring instead to let his food do the talking. It defines who he is. Describing his style as Modern European, Brian brings a wealth of welltravelled experience in fine dining to the Hunter’s dining scene, having worked at the Dorchester Hotel (three Michelin stars) and Claridges Hotel (one Michelin Star) in Mayfair in London. Brian was also the executive chef at Level 41 and The Establishment - two of Sydney’s most iconic dining venues. He even cooked for Russian President Vladimir Putin during the 2014 Winter Olympics. Brian’s philosophy on food is simple – fresh flavours through wonderful, local and seasonal produce handled with techniques that enable the finished product to shine in both balance of flavour and texture.

The restaurant itself is elegant and stylishly furnished with floor to ceiling windows providing loads of natural light and a wonderful view of the dam and vineyards located just a few metres away. The vibe is relaxed and welcoming and the dining space has an almost rustic look to it, with a polished cement floor, timber tables, high ceilings and large drop pendant lighting. With a distinct style of dining in mind, Brian did not want to simply be another fine dining restaurant. Instead, he wanted to merge his years of experience and technical expertise with a more casual execution of regional produce and let the flavours do the talking. And talk they do, with menu options that include Hiramasa Kingfish Supreme with mussels, tomato and basil broth; Duck Prosciutto with baby leaves, white peach, marinated fetta and 15-year-old balsamic; Spice Crusted Lamb Rack, ragout of barley, caramelized onion and slow roasted lamb shoulder and Seared King Prawns with scallop dumplings in a shellfish broth which is supposedly Brian’s signature dish and just superb.

to a Magnificent Hunter Breakfast
Breakfast may be the most important meal of the day but not all are created equal. This month, we do the rounds to identify some of the most appealing early morning offerings.
The Deck Café in Lovedale serves up some of the best coffee and most appealing breakfasts in the region. There’s the regular “Big Brekky” favourite, but for those aiming for something altogether different try the Gypsy Ham and Mozzarella Croquettes with poached egg, herb roasted field mushroom, sautéed spinach and "MP" smoky BBQ sauce. Also on the menu is the House Made Fluffy Pancakes with a choice of delicious toppings and my favourite, the Avocado Vego Delight consisting of grilled sourdough, smashed avocado, roasted mushroom, vine ripened tomato, grilled haloumi and herb oil. Pokolbin’s Restaurant Cuvee is not only home to premium sparkling wines but is also renowned for serving up unforgettable breakfasts that include the restaurant specialty the “Bubbly Breakfast”. But there’s more! For those trying to avoid the traditional bacon and eggs with the works, try the delicious Corn Fritters drizzled with Peterson House balsamic and topped with avocado salsa and crème fraiche with your choice of salmon or bacon. Then there’s the option of Dukkah Eggs, consisting of two fried eggs sprinkled with house made dukkah on thick cut toast with fresh lime, spinach, Binnorie Dairy feta topped with tomato chutney and caramelised balsamic. RidgeView Restaurant on Sweetwater Road in Pokolbin is the perfect place for those who love to relax and unwind in a magnificent setting while experiencing delicious, casual dining. Along with the ever popular RidgeView Country Breakfast, there are many other tasty delights to choose from, including a few new takes on old favourites. Up there is the Breakfast Bruschetta with fresh tomato, avocado, bacon chunks, fresh herbs, snow pea tendrils and alfalfa on a toasted sourdough with a light olive oil and balsamic vinegar dressing. Just delicious! You can also choose to add a poached egg. Also on offer are fluffy pancakes with a choice of berry compote and thick cream with maple syrup or whipped butter. Alternatively create your own omelette by choosing from a long list of delicious toppings.
