Christmas is upon us once again, and as we go to print, reality strikes home that we are just three weeks away from Christmas Day and soon after that, another year will have passed into the pages of history. But with Christmas and New Years Eve comes much to celebrate, including another fabulous Vintage – which everyone is waiting for with bated breath. We also see the return of the annual Christmas Lights Spectacular. Now in its 12th year, the lights have been switched on for all to enjoy and will run until January 26th – bringing families together to celebrate the magic of Christmas in one space with millions of lights evoking the spirit of Christmas. For those who have never been, it is a truly magical experience with each year seemingly outdoing the last with more lights and even more fabulous displays. As the event set-up manager at Hunter Valley Gardens, David Wells is part of the creative team and leader of the hard-working muscle behind Hunter Valley Gardens Christmas Lights Spectacular. He took time out of his busy schedule this month to speak to us about the logistics behind the largest Christmas Lights display in the Southern Hemisphere. Famous for its wines, the Hunter Valley has a growing reputation for producing some wonderful examples of

sparkling wine. Whatever the occasion, we are reaching for the 'bubbly' like never before. Take the time to have a look at our 'Sparkling Dozen' on page 26 and prepare yourself for the sound of popping corks over the festive season. Over the centuries, beer has meant many things to many people, but when it comes time to choosing a drink to mark a special occasion, beer is not something that immediately comes to mind. Bringing Beauty Out of Timber WORDS Michelle Meehan A passion for native timbers and the skill to transform them into something both beautiful and practical has seen Ross Fyfe carve out a new career for himself during the past six years. The former Civil Engineer and Project Manager has been running Wood-U-Like for more than half a decade, crafting bespoke pieces of timber furniture for his clients, and handmade homewares to sell at the markets. Now operating as a full-time business, the former Lane Cove man moved Wood-U-Like to Belmont South at the beginning of 2018 and has been showing his wares at the Handmade in the Hunter Market since August. Ross said his love of working with wood began a long time before he took up the tools on a professional basis. “I remember doing woodworking in primary school and ever since then I have had an interest in wood,” he said. “I started making furniture professionally approximately seven years ago but had made a few pieces for our home prior to that. “The best aspect of woodworking is bringing the beauty of the timber out for all to see. Australian timbers have some of the most interesting grain patterns and colours of any timbers and bringing that out in a sympathetic design, and finishing treatment is very satisfying. “I try to use Australian native timbers the most or recycled and/or plantation timbers. I am conscious of the impact of using exotic timbers from overseas where sometimes the governments are less interested in environmental issues than the money.” With a preference for using traditional techniques, each product can take Ross a fair length of time to create, but he believes the result is worth all the effort. “Dining tables can take anywhere up to a couple of weeks to make depending on the complexity of the design,” he said. “I have recently completed a couple of blanket boxes for a client, and they take longer due to the number of hand-cut joints that need to

be made. I try not to use nails or screws in the framing of the furniture preferring instead traditional wood jointing and connecting techniques. “A burl bowl may take a day, and chopping boards are generally a couple of hours or so. “Most of the products I make are bespoke pieces of furniture which I design in consultation with the client. Frequently the client has seen a product and would like something similar, so my task is extracting that information and providing a design suitable for fabrication. “The other pieces I make to sell at the market are generally made from pieces of interesting timbers I have picked up along the way. “I try to create a design that highlights the beauty of the timber I am using. Wood-U-Like has a motto ‘nature provides the beauty, we provide the design’, and I like to think that that is what we do.” You can check out some of Ross’s handiwork at this month’s Handmade in the Hunter Market, which will be held at Kevin Sobels Wines on December 1, 2, 8, 9, 15, 27, 28 and 29. The markets operate from 9am–3pm on Saturday dates and 9am–2pm on Sundays.

It's Time for The Christmas Lights Spectacular! WORDS Michelle Meehan David Wells starts putting up his Christmas lights in August each year. While it may seem a tad early to be getting into the festive spirit, too much time is almost never enough when your display contains more than two million lights. As the event set-up manager at Hunter Valley Gardens, David is part of the creative team and leader of the hard-working muscle behind the largest Christmas Lights display in the Southern Hemisphere. The Christmas Lights Spectacular takes about three months to be physically set up by David and his team, plus the other dedicated Garden workers which total 25 people. However, when you take the pre-planning into account, including sourcing new additions, tagging and testing all the lights and ensuring everything complies with strict safety standards, as well as the packdown at the end of the season, organising the Christmas Lights is almost a year-round job. “We start in August, usually the second or third week in August, we start setting up the string lights and add in the trees. Then as we get closer to the event, we start putting out some of the other displays, the larger displays,” David said. “When we get to October, that's when nearly everything comes out; then we look at doing all of the powering up. “There are about 12 people in my team that help with the physical set-up, I just mostly manage and organise them, and I worked out that for our set-up we basically do about 6500 man hours. “Packing up is a lot quicker. We usually pack up within six weeks, which is about half the time because with setting up it's a lot more detailed than putting strings in trees and putting displays out. When we're packing up, it’s a lot less time consuming so usually by the first or second week in March we'll have everything packed away.” David has worked at Hunter Valley Gardens for around 18 years and has been involved with setting up the lights since the idea was first dreamed up 12 years ago. A lot has changed over that time, with the display growing from a far more modest version to one that now encompasses more than two million lights and 16 major displays, spread over 5 hectares of the world-renowned gardens. Each year the event grows a little bigger, with more lights and new features designed to enhance what is already a truly magical atmosphere. David is responsible for planning where every single light goes, from the tiniest string lights to the towering 12m, 9m and 6m high 'mega trees' that are truly a sight to behold. “The team and I organise where everything goes,” he said. “There are certain things that stay in the same spot, that are designed for certain areas, for example, the 12 Days of Christmas display stays in the border garden because it's basically designed for that space, while there are a few other areas that stay the same because of the size of the displays. (Continued) “Then we have new stuff each year that we need to put out and build, and there are some lights that fail that we take out and replace with newer displays. “But with all of that, it just comes down to pre-organising to have a look at where we need lights, looking at the best opportunity and the best viewing area for each display.” David also works with lighting manufacturers to create customdesigned displays for Hunter Valley Gardens, such as the giant world globe, which spans 4m in diametre and is the centrepiece of the spectacular Around the World display. “There isn’t a lights catalogue that you can go through and pick everything from. They’ll have pictures of certain lights and certain designs that they've built for people in different parts of either Australia or over the world, but then there are also specific displays that we want custom made. “If there's a design or concept we come up with, we can take it to the lighting companies and say, ‘We’re looking at this, can you make it?’ “We've had some different things over the years, like the globe for our Around the World display, where we basically just said to them this is what we’re after, and they've made it for us.” David said the 2018 display is the biggest and best yet, with all the traditional favourites including the giant teddy, the Fairy Garden and Santa’s Workshop, as well as a host of new additions that help the display feel fresh and new, especially for those who love to return year after year. New lights include a magnificent 5m-tall bauble perched in between the amphitheatre and the formal garden, as well as a large rocking horse and a selection of giant stars. Hot air balloons and parachutes hang from the branches of the trees, while oversized rainbows and a magical unicorn and carriage add a colourful, fairy-tale atmosphere to the display.
Having overseen the lights for more than a decade, David has a few favourites among the displays, but he said the best part of his job was seeing the looks on the visitors’ faces. “Probably my personal favourite would be the 12 Days of Christmas display in the Border Garden. It’s choreographed to music, so it lights up in time,” he said. “There’s also Candyland, you're walking through Candyland, and there are lights everywhere you look, different candies, bonbons, liquorice all-sorts. And then you’ve got your Princess scene, which is a favourite, we've got a carriage, we've got the castle, we've got a giant slipper, a giant ring.

Of course, there’s more to the Christmas Lights Spectacular than just millions of twinkling lights, with a variety of live entertainment and a selection of other activities providing fun for the whole family and a carnival-like atmosphere. Feel the wind whip through your hair as you fly through the air 12m above the ground on the thrilling swing chair, or speed down the colourful lanes on the incredible super slide, which stands 12m high and is a massive 35m long. There’s also two inflatable zones for even more action-packed fun, with three jumping castles for toddlers and three more obstacle courses for older kids. For those looking for something slightly more sedate, the giant 25m high Ferris wheel will provide the best view of the gardens, while the traditional Venetian carousel, designed especially for Hunter Valley Gardens, will provide a bit of old-fashioned fun. A selection of tasty food and beverage stalls will also be on hand for those who work up an appetite exploring the lights. The Christmas Lights Spectacular was officially switched on at the start of November and will run through until January 26, 2019. The lights open at 5.30pm each day (apart from Christmas Day), with tickets available for the display alone or as dual day/night pass, which also gives you access to explore the fabulous floral displays of the garden between 9am and 4pm. Passes are valid for one day and onenight entry, and both must be used within a seven-day period. Tokens for individual rides are $6 each, while unlimited ride wristbands are $15. The rides are open during the Christmas Lights Spectacular from 5.30pm – 9.45pm daily.

Create the Perfect Christmas Cheese Board! Cheese is the ultimate entertaining food, but with so many varieties and flavours to choose from, how do you select the perfect cheese for the perfect cheeseboard? For a well-balanced cheese board, try to keep it simple with one soft cheese, one semi-hard cheese as well as a hard cheese. The French have a tradition of serving only odd numbers of cheeses: three, five or seven. If you don’t know the preferences of your dinner guests, offer cheeses that range from mild to strong so that you are able to cater to different tastes. Also, when you arrange the cheese on your platter or cheese board, ensure that the cheeses are arranged in a clockwise direction, from the mildest to the strongest, to make it easy for guests to remember. If you want to offer cheese at the end of the Christmas meal, choose a lovely piece of farmhouse Cheddar or Stilton and serve with a glass of Port. Pair with walnuts, raisins and Port-infused roasted pears. Alternatively, if you would prefer to provide a generous selection of cheeses, create a board to suit and serve it before the dessert.
need to be paired with wine that is high in acidity. When it comes to the white wines, Chardonnay is a good bet, as is a Sparkling White Wine and Pinot Gris. A Semillon Sauvignon Blanc or a Sauvignon Blanc is fantastic, and a nice Riesling or a Gewurztraminer will be good. If you must do a red wine with these cheeses, try a Merlot or a Pinot Noir. The next cheese should be a mild cheese such as Mozzarella, Monterey Jack or a mild Cheddar. These cheeses have some flavour to them and go well with a variety of wines due to their texture and mild flavour. The best wines to serve with these cheeses are full-bodied white wines such as Chardonnay, Sauvignon Blanc, Pinot Grigio and Viognier. If you'd like to match a red wine, make sure you stick to the lighter type of red wines because you don't want the red wine to overpower the cheese. Follow up with a medium cheese such as Cheddar, Colby, Edam or Gouda. Here a dry white Riesling or even a Pinot Gris is a good match, as well as light and moderate red wines such as Merlot, Pinot Noir, and even Shiraz. For the bold, include a more pungent cheese - Blue Cheese, Parmesan or a mature aged Cheddar. These cheeses have very distinct and intense flavours and demand a full, tannic red, such as Cabernet Sauvignon, Cabernet Merlot or Shiraz that will stand up to a strong flavoured cheese. Port is the classic accompaniment to most cheese and goes particularly well with strongly flavoured ones. The journey continues with a Smoked Cheese. The salty, bacon taste of smoked cheese is so distinctive that it is tough to find wine that can live up to it, without altering the flavour of the wine. An Australian Shiraz would be the most preferred match here. A sweet dessert wine (Sauternes) will also withstand the smoky taste. Finally, the blue! Try Danish Blue, Stilton or Gorgonzola. These cheeses should always be tasted at the end as its big mineral bite can overpower other flavours. A wonderful ripe Stilton where the blue is marbled through the pate imbues a range of taste profiles, from sharp and sweet to nutty and buttery.

They not only look decorative, but seasonal fruits enhance the flavours of the cheese and are a palate cleanser – try apples, pears, grapes, fresh figs, or even dried raisins, apricots or dates. Sparkles Call it what you like – Sparkling Wine, Prosecco, Cava or Champagne – there's no sweeter music to one’s ears than the sound of the pop of a cork from a bottle of bubbles! For centuries, Champagne or Sparkling Wine has been the drink of choice for celebrations, and as we roll into the festive season, you can be sure that we will soon all be hearing the “popping” of corks as we get together with loved ones (and that crazy uncle that everyone has!) to celebrate Christmas and the coming of the new year. What’s in a name? Champagne is a regionally protected name and so refers only to wine produced in the Champagne region of France. Champagne can also only be produced in one way - in a bottle using natural fermentation known as the Traditional Method (or Méthode Traditionnelle), and using only three grape varieties – Chardonnay, Pinot Noir, and Pinot Meunier. Sparkling wines produced in other regions of France, as well as other countries around the world, are often referred to by their local name or region, such as Espumante from Portugal and Asti from Italy. Where do the bubbles come from? Sparkling wine is simply wine containing significant levels of carbon dioxide which, in turn, makes it ‘fizzy’. The carbon dioxide may result from natural fermentation – either in a bottle, as with the Traditional Method or in a large tank designed to withstand the pressures involved (as in the Charmat Process). It can also be injected into the wine. What grapes are used? In Australia, most sparkling wine is produced from Chardonnay and Pinot Noir and is usually white or rosé, but an Australian speciality is the Sparkling Shiraz – a sparkling red wine produced from Shiraz grapes. Young examples are usually refreshing, rich, fruity and juicy with a touch of sweetness. Older examples are

typically rich and lush in style, and some high-quality bottles are suitable for cellaring and ageing. The sweetness of sparkling wine can range from very dry 'brut' styles to sweeter 'doux' varieties. Like all wines, there are tips for the correct way in which to consume Sparkling wines and Champagnes: • Sparkling wine should be chilled before drinking but leaving it in the fridge for more than a week before consumption can affect quality. It’s best stored out of the fridge, away from light, and in a cool place with a consistent temperature • A perfectly chilled sparkling wine is something to savour. Between 7 and 10 degrees is recommended – but it really does come down to personal taste. • Choose your glassware wisely – the wrong glass can alter the aroma and the number of bubbles. Flute and Coupe are the traditional styles. • Don’t overfill the glass – one-third of the glass is best to maintain the chill Whether you’re bringing a bottle to a party or leaving one under the tree, a bottle of bubbles is a gift that will please even the most discerning of recipients. A Unique Cellar Door
For a jockey, winning a race is all about the timing. Making sure you don’t miss the jump from the gates, knowing when to hold the horse back, sensing when to make your run. Timing is also a key element of success for a winemaker. Knowing when to harvest your crop, assessing when to take the juice off the skins, understanding how to age the wine for the best outcome. Former jockey turned winemaker David Fromberg certainly knows a thing or two about timing. As a jockey struggling to keep his weight under the 47kg limit, he knew the time had come to find a new career. As a winemaker passionate about creating wines that are designed to stay, not sprint, he knows how to pass the time while he waits. But the wait is finally over for David, who earlier this year opened a cellar door for his Running Horse Wines label – almost two decades after he first planted vines on his family’s 56-acre property at Broke. “I’ve always loved horses really,” he said. “I grew up in Maroubra, but I always raised horses. My father has owned this place (at Broke) since ’88, and I used to have my pet horses up here, I used to always come up here on weekends or any chance I had … I was a bit more country orientated. “I didn’t think I could be a jockey because I was a bit taller than the average and then I jumped on the scales, and I was 47 kilo, so I thought ‘I will, I’ll have a go.’ “My apprenticeship went from ’93 to ’97, and when I finished my apprenticeship, I went overseas for three years. When I came back I had maybe ten rides and rode three winners, but maintaining the weight (under 47kg) got the better of me and I decided to build the vineyard (on my father’s property). “We had the land here, and I decided to build a vineyard, that was the naiveté of it. That was in 2000. And now years later, I’ve finally built a cellar door too.

“I wasn't going to borrow money to build it, so I had to keep chipping away to get the money. And then in the meantime, I also made all the vintages that I’ve been making.” Now open to the public, Running Horse Wines is located in the picturesque surrounds of the Broke Fordwich region, overlooking the iconic Yellow Rock escarpment. With such a beautiful landscape around him, David knew his cellar door had to be something special to make the most of the views. Designed by his friend David Kaunitz from Kaunitz Yeung Architecture, the complex has been constructed using six shipping containers that have been stacked purposefully, but with a seemingly haphazard appearance, to elevate the cellar door above the level of the vineyard. The design makes the most of the tapestry of views surrounding the complex, with the cellar door orientated to showcase the distant mountains. Timber, glass, copper and steel feature prominently within the interior design of the complex, with a mass display of wine bottles sporting Running Horse Wines’ distinctive spiral label creating an eyecatching feature along one wall. The true centrepiece of the space, however, is the gleaming glass-topped bar, which incorporates a series of light panels that help to showcase the colour and clarity of the wine being tasted. What’s most striking about Running Horse Wines, however, is what’s in the bottles. David is one of the few vignerons in the region specifically producing aged wines, with his range including varieties of Semillon, Verdelho, Rose and Shiraz. The wines are produced using fruit from his vines and made by Pokolbin-based contract winemaker Nick Patterson. “You can go through hundreds of cellar doors and never get to look at a range of wines so different,” David said. “You get to do vertical tastings; you get to look at wines that are 12-years-old that are still drinking fantastic but have real bottle aged characters coming through. Semillons that are 13 years old that still look like they’re six years old, or Verdelhos that are the same, they just age fantastically well.” David said the 2005, 2006 and 2011 Shiraz were particularly good right now, offering a classic, spicy Hunter bouquet that complements the smooth palate of cherries and subtle mint, with silky tannins and hints of chocolate and vanilla from 18 months maturation in new French Oak.

Flourishing Vineyard Estate a True Gem! Kelman Vineyard is a destination like no other. A boutique winery, five-star accommodation provider and unique residential community, Kelman Estate is the perfect place to visit for a day, linger for a weekend or stay for a lifetime. Established almost 20 years ago, Kelman Vineyard consists of around 100 acres nestled in a quiet corner of Pokolbin near Mount View. At the heart of the estate is the flourishing vineyard, which now covers 23 acres, growing classic Hunter varietals of Shiraz, Semillon and Chardonnay, plus Tempranillo and Muscat. Blackberries, cherries, plums and wonderful tannin and acid structure will provide many years of drinking pleasure from this wine for those with patience. ►
Kelman’s Semillon is an explosion of citrus fruits – lemon and lime – with white flowers on the bouquet. Citrus flavours dominate the palate with an excellent line of acid giving additional length to this classic Hunter white. A match made in heaven for oysters and other seafood! This wine won a Bronze Medal at the Hunter Valley Boutique Wine Show. The 2017 Reserve Chardonnay, which won a Bronze Medal at the Hunter Valley Boutique Winemakers Show and also at the James Halliday Australian Chardonnay Challenge (rated #4 out of 32 Hunter Valley entries) and was awarded 90 points by Halliday, is a bright lemon colour with a hint of green. Handpicked and matured for eight months in quality French oak, it shows stone fruits and melon on the palate with fine flinty matchstick aromas. This wine has wonderful length and a textured mouthfeel. A silver medal-winning Sparkling Chardonnay in the Blanc de Blanc Methode Traditionelle style and a stunning Tempranillo are continuing the estate’s rich tradition of producing awardwinning wines. Kelman is also a unique community. The charming interaction of residential and farming is unique in Australia. The owners of these houses and cottages form a close community that own the wine operation and the infrastructure that makes up Kelman Vineyard. FESTIVE BUBBLES! Beer! It’s been part of the human experience since the dawn of civilisation – when man ceased to live as a nomadic hunter-gatherer and settled down to live off the land and cultivate grains. That was approximately 10,000 years ago! Over the centuries, beer has meant many things to many people. In times of cheer it has been the ingredient of celebrations and in darker times the source of comfort and hope when all was thought lost. It’s delicious, nutritious, refreshing, intoxicating, dependable and even portable! Surely there has been no better time to be a lover of beer – a connoisseur. Yet, when it comes time to choosing a drink to mark a special occasion, beer is not something that immediately comes to mind. Instead, we almost always reach for the Champagne. If not the bubbles, then it’s a wine or spirit. But this festive season, why not surprise your family and friends with a beer to celebrate the occasion? As the brewing industry continues to explore new grounds, there’s a wealth of choice suited to many such events. For Keith Grice – Head Brewer at award-winning Hunter Beer Company in Nulkaba in the Hunter Valley, it’s likely to be a beer where the brewer has ‘’gone the extra mile’’. Perhaps chief among them is the Christmas Pudding Beer (8% alc.) – the 9th annual release of this beer and suitable for any festive occasion. The result is a dark ale brewed with cinnamon, nutmeg, allspice, vanilla, raisins, sultanas, apricot, prunes and figs with rich malt flavours and warming alcohol that has a touch of oak and a hint of whiskey. Christmas in a bottle! For over ten years, and as the first microbrewery in the Hunter, the Hunter Beer Company has been brewing a unique range of handcrafted beers onsite at their premises in Nulkaba, with all beers brewed from 100% natural ingredients and no preservatives used. Alongside their seasonal releases are a wide selection of multiaward-winning beers – from the bold American style Pale Ale, the dark German styled Bock, the ever- popular full-strength Hunter Lager - through to the refreshing Kolsch, the pale yet light flavoured Belgian Witbier and the deliciously crisp Ginger Beer. “What you see in craft beer is a huge amount of personality and character. We’re not trying to appeal to a mass market. Instead, we are trying new things – new tastes, flavours and new ingredients. This shows through in the beer… and that’s why people are loving it,” says Keith.

In addition to the regular beers, currently on tap are several seasonal and recently released beers that are ideal for Summer and any festive occasion: • Ginger & Citrus (4.5% alc.) - a great flavour combination that makes for a very refreshing summer drink that’s not very beer-like. • The Simple IPA (6.5% alc.) - a light bodied beer with grapefruit, pine and stone fruit flavours - an uncomplicated beer and perfect for drinking in warmer weather. • Summer Pale (4. 2% alc.) - a very light coloured and hazy beer. The hop character is spritzy on the nose, lemony citrus and tropical sweetness, dry mouthfeel with a little residual resin and just superb for the summer. The Brewers are not idle over December and in January will be releasing a range of new seasonal beers to try: • Helles Lager (4.5% alc.) - a light, refreshing, crisp German-style lager • American Session Stout (4.2% alc.) – a lower alcohol, dark beer with roast and chocolate flavours with a lighter body alongside classic American hops that add citrus and pine. This beer promises to deliver a flavour explosion. • Fine & Dandy Sour Candy (3.2% alc.) – a passionfruit infused tart flavoured beer that is easy drinking and refreshing and just perfect for those mid- January hot days and warm nights. • Saison (6% alc.) – a farmhouse style of beer which was originally brewed to quench the thirst of hard-working farmers. The addition of fruit and spices adds a surprising vibrancy to the beer.
