The Hunter Valley Gardens spans over sixty acres and includes 10 stunning feature gardens and eight kilometres of walking paths. So where do you start? It is hard to imagine a better starting point than the Formal Garden. Wollombi Classic Film Festival Classic films have an ability to evoke all kinds of raw emotions. The films may be old, but the excitement will be fresh as the Wollombi Classic Film Festival returns from 24th to 26th February, to pay homage to the timeless films from the 60’s to the 90’s that left their mark on the cinematic landscape.
On the Saturday, there will be an 11am screening of the historical Australian drifter classic Sunday Too Far Away, then at 3pm the fantastic 80’s thriller Gorky Park featuring an all-star cast including William Hurt, Lee Marvin, Joanna Pacula, Brian Dennehy and Ian Bannen. At 8pm, there will be a screening of the iconic film The Hustler, a tale of redemption starring Paul Newman as pool room hustler Fast Eddie Felsen, it is sure to be another great night under the stars. The final day of the festival starts with some serious laughs at The Big Lebowski screening at St Michael’s Church at 11am. Arguably one of the Coen brother’s best films, The Big Lebowski is hands down one of the best films to come out of Hollywood in the 90’s. Then the best has been saved until last, with a screening of the gangster classic Bonnie & Clyde, featuring the roguish Warren Beatty and the stunning Faye Dunaway, at 2pm to conclude the festival. Create a Venue Like no Other
Michael Hope describes himself as ‘just a country boy from Young.’ He is a pharmacist by trade and along with wife, Karen, built up a prosperous chain of pharmacies in rural NSW and Sydney throughout the 80’s and 90’s before deciding to make the big move out of Sydney, giving up his pharmacy career to do something he loved – make wine. Hope Estate was established in 1994 with a vineyard in Broke, but the current Hope Estate site wasn’t purchased until 2006, after the sale of the original Broke vineyards.
today has the capacity to hold close to 20,000 concert-goers, making it largest venue in the Hunter Valley. The first show at Hope Estate was Eric Clapton in March 2009, which sold 11,000 tickets. Since then, the Hope Estate stage has been graced by some the world’s biggest acts including The Rolling Stones, Elton John, Fleetwood Mac, The Eagles, Rod Stewart, Dolly Parton and many more. Hope Estate is now considered one of Australia’s premier winery concert destinations and was recently awarded Venue of the Year at the 2016 Australian Entertainment ‘Mo’ Awards. This year’s concert season at Hope Estate continues to deliver some of the finest musical talents with James Taylor, Bruce Springsteen and the E Street Band, Suzi Quatro all set to hit the stage this month. Last time Bruce Springsteen played at Hope Estate, he treated audiences to a collection of songs from throughout his career during shows that lasted a marathon three hours. More than forty years after breaking into the music scene, Bruce Springsteen and the E Street Band were named the top touring act of 2016, selling close to 2 million tickets in 2016 alone – proof that their appeal has never diminished. Not surprisingly, general admission and reserved seating tickets to the Hope Estate show sold out in minutes, however, limited packages including premium food and wine tickets are still available to this once in a lifetime event. A week later, the grounds of Hope Estate will be rocking once again when American glam-rock singer-songwriter Suzi Quatro brings her Leather Forever Encore Tour to the Hunter Valley on February 25. With a career spanning over 50 years, Australian fans have adored Quatro, and it seems the feeling is mutual, as she returns for her 31st national tour. “Well, what can I say, eh! Australia. You’re in my bones, you’re in my blood, I was born to entertain, I had to come back, I missed you too much,” she said. Joining Quatro will be Andy Scott from The Sweet (guitar and vocals) and Don Powell from Slade (drums), while an eight-piece band will help her perform all her hits for the second half of the show, in her leather jumpsuit, of course!

And while summer may be over, things are just heating up at Hope Estate as Hot Dub Wine Machine comes to town on March 18. Following the success of the inaugural event in the lush surrounds of the Serafino Winery in McLaren Vale in 2016, the concept has now extended to take in gigs in Australia’s premier wine regions, including the Hunter Valley.

Headliner Hot Dub Time Machine is the world’s first time-travelling dance party taking audiences on a journey through pop music history. So you’ve found the love of your life and picked what you hope will be the ring of her dreams – now all you need to do is pop the question. But it seems there’s far more to it than just going down on bended knee when the time feels right.
There are a few things to consider when planning your wine country proposal, especially if you’re looking to take advantage of our gorgeous scenery and pop the question in the great outdoors. While we are known for our moderate, almost Mediterranean climate, the Hunter Valley can also feel the heat, especially in January and February when the average maximum temperature climbs up to around 30 degrees. This may rule out a lunch time picnic proposal for grooms who don’t need any additional reasons for having sweaty palms. But with the average minimums in the vineyards falling to just 18 degrees, it does ensure we have the perfect climate for an early morning or twilight engagement.
Marriage proposals are big business these days, with companies popping up everywhere to help would-be grooms go that extra mile with allinclusive packages. From a sunset movie screening that puts all your memorable moments - and his proposal - up on the big screen to a private dinner at the aquarium dished up with an underwater declaration of love revealed by a pair of divers at the crucial moment, it’s all about creating what will hopefully be an unforgettable experience. While many of these companies cater solely for capital city couples, hopeless romantics in the Hunter have plenty of options to choose from locally that will ensure their marriage proposal is truly something to remember.

Aside from making sure you’ve chosen a ring she’ll love - not to mention the right size - make sure the setting you choose for the moment is also a perfect fit. If she loves sipping Shiraz or a glass of Chardonnay, don’t book her in for a tour of a craft beer brewery with a view of popping the question among the fermentation tanks.

There’s nothing quite like giving a gift that has been handmade and no local market does this better than Handmade in the Hunter Markets held at Kevin Sobels Wines, where you are guaranteed that all goods are locally produced and handmade by some of the Hunter's cottage industries. Among the regular stallholders is Purple Wave Card Creations, the creative output of Japanese-born artisan Nami Byrnes. Now an Aberglasslyn local, Nami creates a range of paper products including handmade greeting cards, albums and gorgeously intricate paper flower bouquets, indulging in the love of craft she has had since she was a child. “As long as I can remember, I've always been making something out of papers. When we moved to Australia from Japan, one of my friends saw my cards and suggested I try and sell them at the markets,” she said. Nami spends hours painstakingly ensuring her creations are just right, working on customised orders or taking inspiration from the world around her. “I spend hours creating new designs, looking for matching papers and embellishments, and putting it all together. Also, I like making interactive cards and albums with pull out tabs to reveal hidden messages or tabs to turn pages and so on,” she said. “It is rewarding when the customers see my work and give me really nice comments. I was overwhelmed to receive a card from a recipient of my personalised card, she told me how she loved the card! I was over the moon!” With Valentine’s Day fast approaching, Nami has just the thing for lovers seeking that special something for their partners. “I have an interactive card called slider card when you pull the tab a heart pops up from the other end. That’s a cute Valentine’s Day card. Or my paper flowers are a good gift to show your love, which doesn’t die!”

This wine displays a bright red colour with a vibrant purple hue and aromas of raspberry and cherry. The generous palate is long and complex, beautifully balanced between layers of ripe red berry fruits and a refined tannin structure combined with subtle French oak characters.
This is a contemporary style of sparkling wine with a clean mineral fresh nose with hints of lemon, grapefruit and light toastiness. The palate shows sherbet and lime characters with a creamy almost nutty complexity and mouth feel.

The year has only just started but already the weeks seem shorter, meetings feel longer, work more demanding, traffic heavier and everyone seems to be even more impatient and distracted than ever before. Everyone, it seems, has an opinion. The global marketing consulting firms to the restaurant and supermarket chain industries have their ideas (more ethnic-inspired dishes), as do some of the leading local chefs, who predict diners will continue to gravitate toward value and sustainable foods. It’s also suggested that kale will be replaced by a yet-to-be-named superfood, which could be seaweed, Swiss chard or cauliflower. Never-the-less, they all agree on at least one thing – and that is that we will be going back to foods and techniques grounded in tradition (a hearty stew is always in fashion), while continuing to “explore global cuisines” (what is carbonade flamande, anyway? Oh yes, a Belgian hearty stew). Continuing their runs from 2016 will be coconut everything, seaweed and native foods. Menus will soon be full of evidence of Asia’s continuing influence on our culinary landscape, authentic Mexican cuisine, charcuterie, a growing respect for vegetables, craft beers and cocktails, more flavours of granola, more uses of ancient grains, and creative ways to use fresh turmeric root in cooking (given the excitement over its purported health-inducing powers). Trends that could take off this year include an improved transparency in food labelling, minimising or re-purposing food waste, sustainable seafood (a focus on “green” fisheries), savoury desserts (from parsnip and white chocolate cream to Stilton and apricot cheesecake) and an increased number of restaurants serving all day breakfast. Cereal mashups are expected to up there with main dishes, especially for breakfast. The inclusion of oatmeal and grains to our favourite nonsweet dishes will be one of 2017’s most surprising improvements. So, don’t be surprised when you see yogurt meringues and fresh berries along with meat. There will also be enthusiasm surrounding new choices for pastas made from grains other than wheat (lentils, chickpeas), smoked foods, bone broths and the “discovery” of African herbs and spices that include berbere, fenugreek, harissa and peri-peri.
Look for more plant-focused restaurant menus (eggplant szechuan-style with peppers and mushrooms, roasted balsamic veggies with polenta) and vegetarian comfort foods such as avocado fries, sweet potato wedges and zucchini hash browns. While it never went away, fermented foods are back on the menu. Fermented and pickled foods such as kimchi, kefir, kombucha, sauerkraut and miso have been around for years in Asian grocers and continental delicatessens, and are increasingly being used in restaurant kitchens and are also making their way onto the shelves of specialty stores. Restaurants like Zaih’s at Emma’s Cottage Vineyard in Lovedale are serving up some delicious dishes incorporating cured meats and pickled and fermented food that include Mortadella with pickled peppers, Wagyu Tartare with fermented chilli and cured yolk and Lamb Backstrap with preserved lemon and artichoke. Insects anyone? Chefs like Heston Blumenthal have been advocating eating insects for some time now, but the concept has never quite taken off (wonder why?). (Continued on next page) ►

(Continued) However as the topic of sustainability gains momentum, the idea of reducing our intake of traditional protein sources like red meat is becoming more and more acceptable. Add to this the fact that insects are now also available in a powder “flour” like form, which can be used in pancakes for instance – which makes it that much more tolerable, even appetising. According to many chefs, Jackfruit will be our new favourite meat substitute this year. It's a good source of protein, potassium, calcium, and iron. The seeds can be roasted and eaten, or ground into flour. We have also never really lost our fascination with Middle Eastern dishes. But there is so much more to the fragrant and smoky seduction of the Middle East and chefs are taking note and starting to make more use of Middle Eastern spices and rices. Of course, grazing continues to be the “in thing” this year, with more and more restaurants featuring small plates on their menus. These are meant for the table for a few people to pass and share. This trend takes its cue from traditional Spanish tapas, where guests can sit leisurely and graze from many different dishes at once. RidgeView Restaurant (Mediterranean and Middle Eastern share plates/mezedhes) and the Verandah Restaurant with their tapas dishes are popular restaurants featuring small plate options in their menus. Comfort foods will always be with us — mashed potatoes, french fries, roast or fried chicken, ice-cream, pizza, cheese burgers, tuna melts and grilled cheese. Those things will never die, nor should they. ■

Method 1. Preheat the oven to 150⁰c and grease and line a rectangular baking tray.

Experience the unique tastes of coastal Spain right here in Wine Country by learning how to make one of the tastiest and most flavoursome dishes in the world - the popular Spanish dish known as ‘Paella’. The word paella has several different origins – the most romantic of them suggests that the dish was first prepared by a lover for his fiancée and the word is a collaboration of “para ella” (meaning “for her” in Spanish). The home of paella is Valencia in Spain and is said to be the perfect mixture of Spanish and Arabic culture. From humble beginnings, paella was the food of farmers and those working the land. It was traditionally cooked in a giant pan over a wood fire and served as a lunch time meal using locally sourced ingredients to add flavour. The basis for a good paella is white rice, green vegetables and sofrito (a sauce consisting of garlic, onion, paprika, peppers and tomatoes cooked in olive oil) - after that it's up to the creative talents of the cook. As with all dishes created in rural townships, the consistency, ingredients and especially the taste varies from village to village, and even household to household. Some say true “Paella Valencia” must be cooked outside over a fire made of orange branches, dished up with a boxwood spoon and eaten only at midday. The one thing we do know is that traditionally paella is made on a Sunday and because women need a day off from cooking it is usually made by the men.
Paella Classes This year take part in a hands-on paella cooking class and learn how to cook authentic Spanish paella, tasty Spanish churros and of course sangria from local paella expert - Matt Dillow. Matt is the owner and head chef of The Verandah Restaurant in Pokolbin, a tapas-style restaurant strongly influenced by Matt's frequent visits to Spain. Paella fits the “sharing” nature of tapas-style dining, as it is cooked over the stove and often eaten straight from the pan - the perfect communal dish. On the menu at the cooking classes is Spanish Iberico Jamon with fresh baked Spanish bread, Spanish paella served with sangria (deadly but delicious Spanish wine punch) and Churros - a Spanish-style donut, with chocolate dipping sauce. Classes are held on Sundays - March 5th, April 23rd, June 4th, 11th, 18th, 25th and August 6th with classes starting at 9am and finishing at 12.30pm. The Perfect Summer Wine Served chilled, Rosé can be a refreshing accompaniment to a variety of warm weather meals, and it tops the charts for food-friendly versatility. For a Rosé, colour is essential - it's a major aspect of its appeal. It is impossible to define the "correct" colour of Rosé wine, which can range from pale pink to light red. The vast range of colours depends on the grape used and richness of the grape's phenolic compounds and wine making techniques used, including the length of time the grape skins have been in contact with the grape juice. The origins of Rosé winemaking can be traced back to ancient Greece, when much of the red wine produced was pale red. By mid-100 B.C, the Romans had popularised darker red wines in Europe, but Rosé wine remained popular in parts of France - most notably, Provincia Romana, which is today's Provence region and the surrounding Mediterranean area. Historically, Rosé wine practically disappeared in the nineteenth century and in the first half of the 20th century. Red wine was reserved for peasants and workers, while Rosé became the wine of choice for the middle class in the 1960’s.

The Boarding House Dam Circuit is an easy relaxed walk that starts and finishes at the Boarding House Dam picnic area. Take your time to explore the rock formations along the creek before reaching the 110-metrelong moss covered rock wall. The trail follows the moss wall to its end and then follows a track through the cool, enchanting rainforest.
One of the most recommended walks in Watagans, travels through dense rainforest passes interesting features such as red cedar trees and large Illawarra flame trees, before leading to a breath-taking amphitheatre of rock featuring a spectacular waterfall. The best time to view the falls is after heavy rain as this is when they come alive and really put on a show.
Starting from the Pines Picnic Area, the Abbotts Falls Walking Track starts in dry forest and winds its way downhill through moist gullies of bluegum and rainforest, to Abbotts Falls Lookout before climbing out again into the drier forests around the Pines Picnic Area. It is recommended that walkers also take the side trip from the Pines Picnic Area to the dammed pool by Dora Creek to see the deep Aboriginal carved axe-grinding grooves on damp rock shelves.

On March 4 you can learn how to cook fresh bread with duck liver parfait, followed by duck confit with a chestnut potato puree and brandy glazed apples. Finish off with a decadent soft centred chocolate souffle - yum! If the Spanish Paella takes your fancy, learn exactly what makes this dish so tasty, followed by Spanish churros and of course Sangria (March 5).
